s my blindfold is removed i n the foyer of Steven Soderbergh’s office—he’s
notoriously wary of journalists—I try to remember the list of things his low-powered publicist insisted I not ask him about: his life, his work, his appearance, and (crucially) his upcoming VicePresidential run. Waiting for his arrival, I use my smartphone to peruse the pdf I was sent entitled RULES OF ENGAGEMENT, which details the do’s and don’ts (mostly don’ts) of interviewing Dr. Soderbergh (Pratt, 2010). The takeaway is this: don’t look him in the eye, and only talk about Singani 63. The following is an unedited transcript of our conversation.
TAS: Dr. Soderbergh, thank you for— SS: Actually, my friends call me “Milord”. TAS: Oh…well. “Milord”, I didn’t—

I knew this was a mistake. “Advertorial”. What does that even mean? TAS: Well, if you’re going to sell— SS: Eyes! TAS: (looks down) But if you’re going to sell a product, particularly a spirit,
and make yourself the face of that product, you need to expl— SS: I don’t need you to tell me what I need to do. I know what I need to do, and what I need to do is to get my teeth cleaned every four months because I build up plaque very easily. TAS: I see. But the point I’m trying to make is that it’s virtually impossible to— SS: “Impossible”? You’re going to tell me what’s impossible? Okay, first of all, that’s impossible. Or should I borrow your phrase, “virtually” impossible, which is a weak-kneed hedge of a statement. (long pause) TAS: How did you discover Singani 63? SS: I didn’t discover it, man, it’s been around since the 16th century! That’s more years than you have brain cells! Some Spanish missionaries or monks or something brought these white muscat grapes from Alexandria and planted them in the Andes so they could party on the road. And now you’re here. TAS: Let me rephrase— SS: Please do! TAS: How did you find out about Singani 63? SS: At the start up party for Che—my unappreciated masterpiece about the most photogenic revolutionary of the 20th century—my Bolivian casting director, Rodrigo Bellott, gave me a bottle. TAS: What did you like about it? SS: That’s a very personal question. Next. TAS: Can you describe its qualities? SS: Can you outrun a cheetah? TAS: No. I don’t think so. No. SS: Then you realize how inane your question is. TAS: What does it taste like? SS: Like something I want to drink! Ye gods! Why would I spend six years and my own money importing something I didn’t like to drink? TAS: I was trying to give people an idea of what to expect— SS: They should expect something exceptional, unless they think becoming invisible isn’t exceptional. This isn’t some swill peddled by a billion-dollar corporation and fronted by a paid-for
celebrity in the hopes of making a profit off an unsuspecting public—this is a unique spirit brought to the United States of America in order to line my pockets with cash from discerning, adventurous souls with a penchant for the truly authentic. It’s important people understand that distinction. TAS: Right. Talk about the Domain of Origin and Geographical Indication designation.

The trick, according to Suntory’s mixologists, is to give it a single stir from the bottom. Over-stirring causes the drink to lose its fizz. According to Nielsen Holdings, the Japanese whisky category in the U.S. grew 38 percent in volume sales in 2018, and Beam Suntory’s Japanese whiskies — Yamazaki, Hibiki, Hakushu and Toki — are the top share leaders, representing 70 percent of the category’s sales. “We are extremely fortunate that the demand for Japanese whisky is consistently increasing every year with all the accolades that we are honored to be awarded,” House of Suntory Spirits Brand Manager Marilyn Chen says. “We also recognize that there is significant interest from consumers of other whisky categories such as bourbon, Scotch, Canadian and Irish to discover new whisky offerings, and as the only major spirits company that boasts portfolios from every major global whisky category, we certainly offer something for everybody.” While enthusiasts have long known of the heritage associated with offerings from Britain and North America, many are also helping to spread the word of Japan’s long and respected whisky traditions. The House of Suntory led the way, initially, acting as pioneers in its burgeoning industry during the early part of the last century. In 1923, Shinjiro Torii, Suntory’s founder, created the first malt whisky distillery in Japan. His vision was then passed on to his son, Keizo Saji. Now, Shingo Torii, Shinjiro’s grandson, is the third master blender of the house. Japanese whisky is known for being subtle, refined and complex. For those new to the category, the brand team at Suntory recommends trying Suntory Whisky Toki as a highball — an artful blend of whisky and premium soda water over a generous serving of ice. It’s a simple and refreshing way to drink whisky and is how whisky is commonly enjoyed in Japan today.

A similar approach, the Mizuwari, is a typically Japanese way to drink the whisky, according to Japanese-whisky.com. The Mizuwari, which literally means “mixed with water,” is a variation on the Highball: fill a glass with ice, add one part whisky to two parts mineral water. The ice and water cut the alcohol, and yet the drink retains its flavor. Suntory Whisky Toki itself is clear to golden in color, with basil, green apple and honey notes. It offers grapefruit, green grapes, peppermint and thyme on the palate, with a subtly sweet and spicy finish with a hint of vanilla, white pepper and ginger. There’s a reason Japanese whiskies are finding themselves on the top shelf alongside Scotch. Masataka Taketsuru, oftentimes called the father of the Japanese whisky industry, spent time working, studying and honing his craft at the University of Glasgow and at several Scotch distilleries in the 1920s before moving back to Japan to help create the distillery that would become Suntory. In 1934, Taketsuru traveled north to build his first distillery, which would produce Nikka Whisky (short for ‘Nippon Kaju’) six years later. Nikka Whisky now produces, among other whiskies, Taketsuru Pure Malt — its signature spirit that offers gentle malt flavors and a well-balanced fruitiness. The Nikka Coffey Malt Whisky, produced in the world’s first patented continuous still invented by Irishman Aeneas Coffey in 1830, is made from 100 percent malted barley. It’s categorized as a grain whisky, however, since it is not distilled in a pot still. Taketsuru valued the Coffey still, which retains the flavors of the ingredients, and yet also creates a distinctive texture. The result: a whisky with extraordinary flavors and texture — enough to win both Japanese Whisky of the Year and Japanese Single Malt of the Year (Multiple Barrels) in Jim Murray’s Whisky Bible in 2018.

The Perfect Highball, Every Time In late 2017, Suntory introduced the Suntory Toki Highball Machine to the U.S. The machine delivers super-chilled Toki and super-chilled, highly carbonated soda water at the pull of a lever — each time with the ideal proportion of one part Toki to three parts soda water. Machines are located on more than 70 accounts across the U.S. in major cities. Nikka produces its whisky in two distilleries: The Yoichi distillery, in Hokkaido, was built in 1934 in the northern part of Japan and is billed as “the ideal place for Masataka Taketsuru’s whisky-making.” Since Taketsuru learned and mastered his craft in Scotland, he sought out a location that would approximate a similar climate. It’s close to the sea — lending a briny hint to the whisky during maturation — surrounded by mountains on three sides and features a colder climate with the appropriate humidity. The second distillery, Miyagikyo Distillery, was built in 1969 — seen as an opportunity to make whisky different from the whisky crafted at Yoichi, is located in north-central Japan, about four hours north of Tokyo. Step aside, sake. Japanese whisky is ready for its time in the spotlight. Always drink in moderation.

A Lifetime of Achievement
Duncan Holaday Honored for Pioneering Role in Vermont Craft Distilling
W
hen Duncan Holaday began producing craft spirits on his farm in Barnet in the late 1990s, Vermont’s distilling landscape looked substantially different. Most notably, it was rather uncluttered by craft distillers. “I was the only distiller in Vermont for a while,” Holaday says. “There were other guys before, but they were trying to enter the market through an industrial type of production. So my little experiment of making vodka from sap represented a new movement — craft distilling — which is small batch and making everything from scratch.” Since then, the state’s craft distilling scene has grown dramatically — thanks, in part, to Holaday’s vision, guidance and expertise. And now the pioneer has been selected as the American Distilling Institute’s 2019 Lifetime Achievement Award recipient. He was presented with the award in Denver recently. “I thought, ‘are you people crazy?’” Holaday says of learning about the honor. “But I was surprised and proud.” Holaday is renowned for revitalizing craft distilling. He founded Vermont Spirits and was the Master Distiller and Owner of Dunc’s Mill (which was acquired by Brendan and Dan Hughes in 2017 and operates as St. Johnsbury Distillery), consults at a number of distilleries around the state and taught craft distilling at Vermont Tech. He’s just the second person to be given the award, after Master Distiller Hubert Germain-Robin. “There’s been debate about who can be called a ‘master distiller,’” Holaday says. “And in his case there is no doubt about it. I met him and I think he’s wonderful and I’m truly honored to be in that kind of company.” 802 Spirits had a chance to chat with the ADI’s Lifetime Achievement Award recipient recently.
What initially attracted you to distilling? “It was a solution that allowed us to be here on our farm in Vermont. My wife and daughter and I had been living in Asia and I was teaching in Singapore and we all decided at one point, 16 | 802spirits.com u M AY 2019

We wanted to see if we could come back and make a life here. I had been successful teaching and working in other places, and maybe it was a midlife choice or a midlife crisis — I see it as a choice. I came up with the idea to make vodka from maple sap because I had maple trees. That was the key, and I took
it from there. I learned how to build stills and started a business.”
How did you learn the craft? “Originally I got in touch with a guy online, John Stone, who was a Canadian working in the forestry division. He wrote a book about how to distill using fractionation so as not to kill yourself. I flew out to Ottawa, learned from Please drink responsibly.
him, and made my first little glass still and made my first vodka. I realized my vodka was as good or better as his. We kept in touch until he passed away.”
Which of your spirits has been your favorite? “I think it’s the first idea, which was to make vodka from maple sap. That would have to be my favorite. It’s like having several children. I’ve done four things very successfully. There was that one, and then honey gin and then elderflower rum and maple rum. Of those things, the first thing I made — tapping trees, boiling down the sap, didn’t boil it to syrup, I got it to fermentable bricks, distilled it, refined it and made a beautiful vodka. That idea is what got me started."
How do you prefer to taste spirits? “My favorite way to drink things that are truly craft distilled, and I’ve played around with vodka with beets and other recipes, is to drink it straight and neat so I can taste what it’s really about.”
What was the most rewarding part of your career in Vermont? “I became a teacher about five years ago, and we had people coming from as far away as Puerto Rico and the Galapagos Islands, a few Vermonters and some people from Canada. That, in a way, was the most rewarding thing — getting to work with other people and help them get their projects off the ground, or conversely, helping them learn that this wasn’t what they were going to do. I enjoy teaching and consulting. “What I’m doing now with Dan and Brendan Hughes (at St. Johnsbury Distilling) is ending on a high note. I like the innovation part, figuring out all the things that come together to make a successful distillery.”
What do you see as your legacy in Vermont distilling? “I was one of the first handful of people recognized in the late 20th century as doing craft distilling. I was just trying to make a living on my land, but this thing became a tidal wave. I started getting recognized. In 2004, my maple sap vodka was Rolling Stone’s ‘Hot Hooch of the Year.’ My legacy, I think, is being recognized as being part of that tidal wave way back in the beginning when we had no idea what it was becoming. I’ve been able to make products that are good examples of what’s possible, and being able to teach and consult. My legacy is having been a part of this right from the beginning.” Always drink in moderation.

¼ cup water ¼ cup granulated sugar 8 cups diced seedless watermelon (1 pound) ¼ cup fresh lime juice
Cucumber Cooler
Serves 8
1¾ cups blueberries ¾ cup lightly packed fresh mint leaves, plus 8 sprigs for garnish 1¼ cups silver tequila (1¼ ounces per serving)
In a small saucepan, bring water to a simmer with sugar and stir over moderate heat until sugar is dissolved, about 1 minute; let sugar syrup cool. In a blender, puree watermelon until smooth. Set a fine-mesh strainer over a bowl and strain the watermelon juice, pressing gently on the solids to extract as much juice as possible. Discard pulp. In a large pitcher, combine sugar syrup with lime juice, blueberries and mint leaves. Using a wooden spoon, lightly muddle blueberries and mint. Add watermelon juice and tequila. Refrigerate until chilled, about two hours. Pour into ice-filled glasses. Garnish with the mint sprigs and serve.
1½ ounces gin (or 3 tablespoons) 4-6 cucumber slices ¼ lime, sliced 4 ounces tonic water 6 mint leaves 1 tablespoon sugar (optional) Add mint, lime, gin, sugar (if using) to shaker and muddle. Add cucumber slices to shaker and shake vigorously. Pour mixture over glass filled with ice and top with tonic water.

8 lemon wedges 24 mint leaves, plus 4 mint sprigs, for garnish (optional) 4 strawberries, plus 2 halved strawberries for garnish Ice cubes, plus crushed ice 8 ounces gold or aged rum (1 ounce per serving) 3 ounces fresh lemon juice 2 ounces prepared sugarcane syrup or agave nectar In a cocktail shaker, muddle lemon wedges with whole strawberries and mint leaves. Add ice and rum, lemon juice and sugarcane syrup; shake well. Strain into crushed ice–filled highball glasses. Garnish with berry halves and mint sprigs.
Muddle ginger beer, 3 mint sprigs and bourbon together in a glass until the mint has released its flavor. Fill glass with crushed ice. Garnish with remaining mint.
