Chris Wirt thrives on creativity at Pearl's Place and Pantry
A Pearl of a Place
When Chris Wirt thinks about his current role as the general manager and bar manager at Pearl’s Place in Manchester, he can’t help but believe he was in the right place at the right time.
On the heels of the COVID-19 pandemic, Wirt said Man chester’s year-round population has nearly doubled. Like Wirt, many of them welcome greater dining diversity and epicurean adventures. So when Pearl’s Place and Pantry, a

“It’s been going fantastic, honestly,” Wirt said.
Rather than shy away from a restaurant and bar experi ence that goes against the grain of more traditional Vermont tendencies, Manchester residents and visitors really enjoy it.
When Wirt moved to Vermont from the northern New Jersey area seven years ago, he recalled that restaurant and bar diversity was lacking in town. But as Manchester’s population grew, things changed pretty dramatically under
the watchful eye of Mount Equinox.
Chris was no stranger to the Green Mountain State. He recalled that he spent a number of summers in the Brattleboro area as a boy and always enjoyed coming to Vermont to go hiking and skiing. “If every time you have time off and that’s where you are going, maybe you should go there full time,” Chris reasoned. He was 32 years old when he decided to leave his former career in management where he was a buyer for an outdoor company that specialized in camping gear. He also worked in marketing in the
chards and other herbs and vegetables, he is also incorporating those homegrown items into the restaurant’s menu and as drink garnishes.
Chris provides his homegrown berries, peppers and tomatillos for the chefs and uses them in the drinks served at Pearl’s Place. Additionally, he makes fruit juices, hot sauces, and jams that are used in some of the restaurant’s spirits.
This summer he made a pink tea with homegrown mint and chamomile, straw berries and courants from his farm.
Before he became the GM and bar manager at Pearl’s Place, Chris paid his dues in the Manchester area tending bar for six years. After working at the Copper Grouse of the Taconic Hotel, Chris helped open the Union Underground in Man chester before becoming bar manager at the Dorset Field, a golf and tennis club.
The ownership group had plans in the works to open Pearl’s Place and after working at the Dorset Inn for a half a year, Chris was named its GM and bar Manager when Pearl’s opened in May.
Their collective research told them a Southern-style restaurant would be a big
hit in Manchester, which includes Robert Todd Lincoln’s Hildene and the Equinox Hotel. It was right on the money.
Chris said he and his staff found themselves working at a fever pitch from the first day they opened their doors. When asked how Pearl’s Place got its name, Chris said the restaurant’s owner, Lauren Bryant, always loved the name and felt it was a great Southern-sound ing moniker. This inspired her to bring a Southern-style restaurant to the Green Mountains. Pearl’s Place also includes a painting of a southern lady with a string of pearls around her neck.
“There is a big pearl necklace hanging on a giant bull in the bar area, and peo ple get a kick out of it,” Chris said.
Slammer made with Southern Cormfort whiskey and Sloe Gin, and the Mint Con ditioned Mojito that infuses rum, lime juice and fresh mint from Chris’s garden.
“When I knew I was going to come on board and manage this restaurant, I did a ton of research about Southern classic cocktails,” Chris said. “I did some experimenting at home and combined different ingredients to create unique spirits with little twists. I think we have done a really good job.”
Chris rotates different drinks depending on the season, often incorporating his homegrown fruits, herbs and vegetables.
The restaurant can accommodate up to 100 people inside with outdoor seat ing for another 60 people, Chris added.
For Vermonters who love Country mu sic, they are in luck, because it is playing all the time. Chris said the atmosphere at Pearl’s is casual and lively. The outdoor area has a stone patio and a gravel picnic area for families to play outdoor games like giant Jenga and cornhole.
At Pearl’s Place, patrons can order all things Southern including appetizers like pickle fries and Bayou Deviled Eggs, Smoked barbecue brisket, southern fried chicken and shrimp and grits topped off with a slice of bourbon pecan pie.
The cocktails that Chris and his staff serve are just as eclectic for palettes that love their southern brand.
Spirits like the Dixie Sazernac and the Cartel Margarita complement in-house creations like the Pearlicious that uses Deep Eddy’s Peach Vodka, the Savannah
Chris said they will rotate different drinks depending on the season. They will surely add a good old-fashioned Mint Julip to coincide with Kentucky Derby Day next spring. In the meantime, Chris said they will create some special concoctions that will cater to skiers at Stratton Moun tain Resort and Bromley Ski Resorts, as well as the snowmobilers this winter. Chris said Pearl’s Place is located right along the route that skiers and snowboarders take to get to and from the mountain resort. They are also located right off the snow mobile trail network in town. There will be plenty of hot spirits for the après-ski crowd, Chris added.
As the general manager and bar man ager, Chris doesn’t always tend bar. But he still welcomes the chance to pitch in and practice his craft. Behind the bar at Pearl’s Place, Chris is in the right place at the right time.

Pecan Pie, Anyone?
If pecan pie is one of your favorite desserts on Thanks giving Day, why wait until dessert? The Pecan Pie Mar tini will satisfy your yen and then some.
When Norman Rockwell painted his Thanksgiving masterpiece, “Freedom from Want,” he did not include any pre-Turkey Day cocktails the adults might have enjoyed leading up to the main event. The Satur day Evening Post — which included Rockwell’s painting as a featured illustration — may not have included any cocktail recipes either.
Instead, Rockwell’s painting and the Post focused on the joy and warmth of family and friends gathering around the Thanksgiving Day dinner table — a quintessential American moment that is savored by millions of families nationwide each year since Thanksgiving was proclaimed a national holiday by President Abraham Lincoln.
Depending on when your family prefers to dine on this succulent feast, pre-dinner cocktails are certainly in order with some small plates to placate those growling tummies.
These spirits are full of fall flavors that will complement the roast turkey, cranberry stuffing, mashed potatoes, sweet potato casserole and cranberry sauce on your table. They will also give you and your guests a sweet taste of the Turkey Day desserts that await after the big meal — like pumpkin pie, apple pie and pecan pie to name a few.
So before you toast your blessings, consider adding one of these Turkey Day cocktails to your celebration.
< Pecan Pie Martini
2 ounces heavy cream
1 ounce Irish cream liqueur
1 ounce pecan-flavored vodka
½ ounce vanilla-flavored vodka
1 teaspoon maple syrup for garnish ¼ cup brown sugar for garnish ¼ cup pecans for garnish
Gather all of your ingredients. Measure them out into shot glasses or regular glasses for easy mixing.
Next, add a handful of ice to your shaker. The cup should be about a third full, with enough ice to chill the drink but not water it down.
Cover the shaker cup and mix the drink for about 5 seconds. Pour the martini into a prepared martini glass and serve.
For a seasonal garnish, blend the brown sugar and pecans. Add some maple syrup to a dish and then press down the rim of the martini glass. Dip the glass in the brown sugar mix.
Pumpkin with a Kick
If you prefer to get a vodka fix com bined with pumpkin and cinnamon spice, the Pumpkin Pie Moscow Mule is the perfect pre-Turkey Day dinner cocktail.
Pumpkin Pie Moscow Mule
½ lime
1 tablespoon pumpkin butter 4 ounces ginger beer 1½ ounces vanilla vodka Star anise and/or cinnamon stick for garnish
Add the vanilla vodka, pumpkin butter and lime juice to a cocktail shaker with ice. Shake until it's very cold. Strain the contents of the shaker into a copper mug with ice. (Double strain the drink if you want to minimize any traces of pumpkin butter.) Top everything with the spicy ginger beer, and garnish with star anise or a cinnamon stick.
An Old-Fashioned Treat Bourbon, apple cider and maple syrup were made for each other — especially at Thanksgiving. The Apple Cider Old-Fashioned is easy to make and very pleasing to sip as the aroma of roast turkey fills the room.
< Apple Cider Old-Fashioned
1 teaspoon maple syrup ¼ cup apple cider
3 drops bitters
2 ounces Bourbon or whiskey Apple slice for garnish Orange slice for garnish Cinnamon stick for garnish
In a lowball glass, stir together the apple cider, whiskey, maple syrup and bitters until combined. Add in a large ice cube and top with an apple and orange slice and a cinnamon stick.
Guaranteed to Warm you Right Up
To take off that chill in the air, warm up with a Cinnamon Maple Whiskey Sour. This cocktail blends the fruits and spices that liven up any holiday gathering.
Cinnamon Maple Whiskey Sour
1 ounce fresh lemon juice
2 teaspoons maple syrup
1 pinch ground cinnamon
1½ ounce Bulleit bourbon
Fill a cocktail shaker or mason jar about two-thirds full with ice. Pour in the bourbon, lemon juice, maple syr up and a pinch of ground cinnamon.
Securely fasten the lid and shake well. Pour fresh ice into your cocktail glass and strain the cold whiskey sour mixture into the glass.
Berry Good
Many of us just assume that cranberries should only be consumed with turkey, stuffing, et al. But these wonderful New England berries have many uses, including a holiday season spirit sure to dazzle and delight your guests.
½ lime
1 teaspoon coarse sea salt
4½ ounces cranberry juice
1½ ounces blanco tequila
1 ounce triple sec
Cranberries for garnish Rosemary sprig for garnish
Run a lime wedge around the rim of a glass and dip in salt. Fill the glass with ice. Fill a cocktail shaker with ice and add cranberry juice, tequila, triple sec and the juice of half a lime. Shake to combine. Strain the cocktail over the prepared glass and garnish with fresh cranberries and rosemary sprig.

Imagine if you took one of the fall’s tastiest treats like a caramel apple and combined it with caramel-flavored vodka. The end result would surely soothe any sweet tooth prior to gathering around the Thanksgiving table. The Salted Caramel Appletini with Salted Caramel-Infused Vodka is such a cocktail.

Salted Caramel Vodka Makes enough for 4 cocktails
1 ounce salted caramels
8 ounces vodka
Salted Caramel Appletini
2½ ounces apple cider
2 ounces Salted Caramel-Infused Vodka
¼ ounce caramel sauce
Once your vodka is infused (up to 24 hours), add ice to a cocktail shaker. If desired, dip the rim of your martini glasses into caramel sauce. Mea sure the apple cider and salted caramel vodka into the cocktail shaker. Drizzle in the caramel sauce, too, for some extra caramel flavor. Shake vigorously for up to 40 seconds. Pour into the prepared martini glass. You may garnish with apple slices, too.
The wonderful thing about Thanksgiving Day cocktails is there are so many to choose from. Whatever liquid refreshment you select for you and your guests will be a big hit.

It appeared in the March 6, 1943, edition of the Saturday Evening Post. The people pictured were based on his friends, family and neighbors who lived in Arlington, whom he photographed in his studio individually.

Ingredients:
1 part Maker's Mark Bourbon
1–3 tablespoons sugar, to taste
2 dashes Angostura Bitters
3 parts dry hard cider
Garnish: Cherry and orange peel
In a champagne glass, stir together the sugar and the bitters until the sugar dissolves.
Add Maker's Mark. Top with cold cider. Garnish with a cherry and an orange peel.
1800 Café Cristalino
Ingredients:
1½ ounces 1800 Cristalino Tequila
1 ounce espresso or bold cold brew coffee
1 ounce coffee liquor
1 teaspoon vanilla syrup
Garnish: Coffee beans and orange twist
Add all ingredients in a shaker. Shake with ice, strain and garnish with three coffee beans and an orange twist.
Snowfall Spritz
Ingredients:
1 ounce Grainger’s Deluxe Organic Vodka
1 ounce St. Elder Natural Elderflower Liqueur
1 ounce pomegranate juice
4 ounces sparkling wine
Combine all ingredients and serve over ice in a wine glass.
Kraken Hazelnut Coffee
Ingredients:
2 ounces Kraken Black Spiced Rum 94 proof
8 ounces hot coffee
1 ounce hazelnut liquor
Garnish: Whipped Cream
Add all ingredients and stir. Garnish with whipped cream.

1 ounce Bushmills Original Whiskey

Ingredients:
2 ounces Tito’s Handmade Vodka
1 ounce coffee liqueur

1 part Hendrick’s Gin
2 parts cranberry juice

Combine all ingredients in a highball glass filled with cubed ice and lightly stir. Garnish with cucumber slices, mint sprig and cranberries.
Maple Bourbon Crème Mudslide
Ingredients:
2 ounces Vermont Ice Maple Bourbon Crème
1 ounce vodka
1 ounce Kahlua Coffee Liqueur
Combine Maple Bourbon Creme Liquor, vodka and Kahlua in a shaker filled with ice. Shake gently until combined, strain, and serve on ice! You can add additional fresh cream or ice cream if you wish. Garnish with chocolate syrup.

Ingredients:
2 dashes Fee Brothers Aztec Chocolate Bitters
¾ ounce Woods Cider Mill Boiled Cider
½ ounce Fresh Squeezed Lemon Juice
2 ounces No. 14 Bourbon
1½ ounces hot water or hot black tea
Garnish: Orange peel and a cinnamon stick
Heat your water or black tea to a nice simmer. Add cider, lemon juice, and No. 14 Bourbon. Swirl until ingredients blend. Serve in a preheated snifter with orange peel and a cinnamon stick.
Maple Old -Fashioned
Ingredients:
2 parts Knob Creek Smoked Maple Bourbon
2–3 dashes of bitters Small pinch of raw sugar Splash of club soda
Garnish: Orange slice and cherry
In a rocks glass, muddle the sugar and bitters. Add ice to the glass and pour bourbon over it. Top with a splash of club soda, then garnish with the cherry and orange slice.
