A
good percentage of store owners and managers may have come from a background in retail. there are likely very few who come from making hand-crafted furniture. but that’s exactly what brent Marcellus was doing just prior to finding himself in the aisles of Yankee Wine and Spirits. As it turns out, his former career was perfect training. “I didn’t necessarily have a strong interest in spirits or liquor beyond the casual indulgence,” says Marcellus, the co-owner and manager of the downtown Montpelier store. “I was actually more interested in furniture making at the time.” the pursuit to make a suitable living as a solo woodworker proved to be a bit of a challenge for the longtime Vermont resident. It was during an easter visit to his brother in upstate New York that his future took a distinct turn from the workbench to the liquor business.

“My father said, ‘if I buy a liquor store, will you run it?’” Marcellus recalls. “I said I would.” His step-father, Scott cameron, then added another detail to the deal: “by the way, you’re not going to just run it, I made you a partner.” coincidentally, Marcellus and his father
acquired the shop from another father/son team: local restaurateur and store owners Paul and William Sykus – also former owners of the Lobster Pot in Montpelier. “When I was given the opportunity to get into an industry as rock-solid as the liquor industry, I couldn’t pass it up,” Marcellus says. “to have to not worry about what it was I was going to be doing over the next year or so was an absolute thrill. It’s as recession-proof as you can get.” Marcellus worked with Sykus for six months before taking over the store four years ago. A few tweaks and additions, and the cameron/ Marcellus team has managed to grow the store 30-40 percent each year. “We’ve put together a comfortable atmosphere,” he says. “It’s a place where people can come in and ask questions, instead of running in and getting out the door as fast as possible.” Part of the store’s key to success is the team’s knowledge of liquor – from how it’s made to the differences between each brand to what it pairs well with. that expertise helps the store’s five workers know what to recommend and to whom. “We have one of the better Scotch selections,” Marcellus says of the store’s specialty. “We are a ‘push’ store, so we get three bottles of everything new to the state’s list. Not all stores are like that. We don’t have to shop

around through the listings to find things like this to put up.” Marcellus says customers have recently shown particularly keen interest in Blanton’s Bourbon, and the rare and hard-to-find Pappy Van Winkle bourbon – something that’s only available through a state-run lottery. The store also works regularly with local producers to offer tastings and informational nights to customers. “If I had to pick one Vermont distiller as a favorite, it would be a toss-up between Barr Hill Gin and Mad Hill Distillers’ Revolution Rye,” Marcellus says. “The Revolution Rye is hands-down one of the best ryes being made in Vermont right now, and the Barr Hill Gin is its own unique, delicious, raw honey gin.

It’s a place where people can come in and ask questions, instead of running in and getting out the door as fast as possible.
“The [Barr Hill] Tom Cat Gin is really growing in popularity like gangbusters this year, too. It attracts a lot of whiskey drinkers who don’t normally drink gin. They get a chance to try it and they see there’s a lot to be interested in.” In addition to long aisles packed with a variety of rums, vodkas, whiskeys, gins and tequilas, the brick-front, bright store – nearly 2,000 square feet right along the downtown’s main thoroughfare – also stocks more than 1,000 bottles of wine. And Marcellus, who spends “as much time as possible” bobbing up and down on Lake Champlain aboard his 1988 Sea Ray Sundancer, enjoys providing customer service for what he terms a “diverse clientele.” “We have our regulars – a really large cross section of the community,” he says. “We’ll have an older crowd, but later in the day we’ll get a lot of younger people. We’ll have legislators or state workers on their lunch hour; There are people on their way home or even fishermen from under the bridge. “Everybody comes here, and everybody is welcome.” Always drink in moderation.

alloween entertaining is all about creating the right mood. A little creativity can go a long way, and with the right mix of cocktails, hors d’oeuvres, desserts and décor, a get together on an early frosty evening can become quite memorable. Is it all about ghouls and frights? Sure – but there’s more to this unofficial kickoff of the holiday season than black cats and witches hats.

Bourbon Pumpkin Pie
Nature’s punchbowl – or, pumpkins, as they’re sometimes known – can double as a useful and attractive part of your Halloween décor. First, choose a large pumpkin – a wide, squat gourd works best. cut off the top quarter of the pumpkin with a serrated knife. Next, scoop out the innards and seeds using your hands or a large spoon. once it’s clean, dry the inside of the pumpkin using paper towels. It’s now ready to fill. We suggest a simple, festive seasonally-themed punch.

cup packed light brown sugar teaspoons pumpkin pie spice teaspoon salt large eggs
1 can (15 ounces) pumpkin puree 1 can (12 ounces) evaporated milk 2 tablespoons bourbon 1 unbaked 9-inch pie crust
Preheat oven to 425 degrees. Whisk together sugar, cinnamon, salt, ginger and cloves in a small bowl and set aside. In a large bowl, whisk the eggs and the pumpkin until combined. Whisk in the sugar-spice mixture until combined, then gradually stir-in the evaporated milk and bourbon until combined. Pour the mixture into the unbaked pie shell. bake for 15 minutes and then reduce the temperature to 350 degrees for an additional 40-50 minutes or until toothpick inserted near center comes out clean. cool on wire rack for two hours, then refrigerate until ready to serve.

fun part of the Halloween season. Through the years they’ve inspired mixologists, who have risen to the challenge with cocktails heavily influenced by these archetypal figures. It’s no surprise, then, that there are a number of tasty sippers who owe their inspiration to the creatures of the night.

1/3 ounce apricot brandy 2/3 ounce dry vermouth 2/3 ounce gin 1/3 ounce triple sec 1 maraschino cherry
2 ounces vodka 1 ounce orange liqueur (Cointreau or Grand Marnier) 1 tablespoon lemon juice Club soda
Fill a mixing glass with ice cubes and add all the ingredients. Stir and strain into a chilled cocktail glass. Garnish with a maraschino cherry.
Mix vodka, orange liqueur and lemon juice in an old-fashioned glass that’s half filled with ice. Top off with club soda, stir and serve.

1 ounce Cherry flavored vodka ½ ounce grenadine Cola Ice
Combine the vanilla vodka and crème de menthe in a cocktail shaker with ice. Shake well and strain into a chilled cocktail glass that has been drizzled with chocolate syrup.
Coat the bottom of a rocks glass with grenadine and add ice. Pour in the vodka, top off with the cola and serve. For an additional spooky effect, drop a small piece of dry ice into the glass right before serving.

combine lemon juice and sugar in a glass and mix well. In the same bowl, add the orange juice and one ounce of light rum. Stir well. Fill a 16-ounce cup half full of ice and pour the mixture over it. Using a spoon, float the last three ingredients in order by pouring each over the back of a spoon slowly.

ead east on route 2 far enough and eventually you’ll cross the waters of Lake champlain and find yourself in South Hero. this small town in the Lake champlain Islands chain – home to fewer than 2,000 residents – is where the blue Paddle bistro first opened its doors 10 years ago. In the ensuing decade, the renowned spot has welcomed hungry visitors in a completely unique environment by putting an emphasis on familiarity and personal service and redefining island fare – the island in this case being about 25 minutes northwest of burlington. “What makes the blue Paddle bistro different is that we have a very ‘at home’ feel here,” says bartender/bar Manager Mathew Smith. “our entire spin is that we are unpretentious fine dining. We excel at fine dining and great service.”

that ambience is entirely organic. the building that is now home to the restaurant was once a minister’s residence – and it still has that familiar bearing – but owner Mandy Hotchkiss goes out of her way to make sure the warm, welcoming vibe is maintained. “She’ll greet you at the door, maybe take a picture,” Smith says of the restaurateur. “on any given night she knows 90 percent of the people in here.” entrees range from a coffee-crusted pork tenderloin and crab-stuffed ravioli to pan-roasted duck breast and lobster sauté. the bar menu offers quick – yet painstakingly-prepared items like eponymous Paddle burger (a half-pounder with caramelized onions, bacon and Swiss cheese), Phoebe’s burger (avocado, tomato, onion, spinach, portabella mushroom and brie) or a memorable burrito with black beans, hot peppers and homemade salsa. ½ ounce simple syrup 5 blackberries 3 basil leaves
Muddle the basil leaves and add the gin, St. Germain, lime juice, blackberries and simple syrup. Shake, strain over ice and serve in a rocks glass. Garnish with a basil leaf. Smith says. “there’s also a canoe over the register and a canoe outside with our paddle.” Spot the tile wall with blue mood lighting and you’ve found the bar – and on most nights, Smith.
how did you become a bartender?

“It started as a means of getting through college – Stockton University in New Jersey. once I got through there I was looking to get bigger and better. I started at the olive Garden when I was 18, and then I moved on to a fine dining place in South Jersey. I moved up to Vermont this past March and here I am. My girlfriend got a post-graduate fellowship here, and I commuted up for eight months before it got to be too much.”

What was your first night behind the bar like?
“Seniority means nothing. Your work ethic is what matters. I just hate that stigma where if someone has been there for five years they think they’re the top. I don’t care how long you’ve been there – maybe you have been here for five years, but you might be the laziest of all of us. It’s all about the work ethic.”
“In my case, I was 18, so it was very interesting. I wasn’t old enough to drink, so I asked a lot of questions – kind of flying by the seat of my pants. It was fun, though. I’d watch the other bartenders and ask them what they would do. It was intimidating at first because I didn’t know much, but I’ve always been great with people and at multitasking. there definitely wasn’t a moment when I was bored.”
What do you like most about your job? “What I like most is the people. I like being able to take the knowledge you have and then Always drink in moderation.
“90 percent of the time, the guest has no idea what they’re asking for. It’s funny – someone might come in and say they’re a Scotch or a bourbon connoisseur, but when it comes down to it, they can’t tell the difference between Maker’s Mark and crown royal. For the love of God listen to your bartender.”
What advice would you give aspiring bartenders?
What’s your favorite cocktail to make? “Probably the blackberry basil Gimlet. I use St. Germain and it’s delicious. I call it ‘springtime in a cup.”
