M
ost retailers cite customer service as an important element in their day-to-day operations. To Bob Molinario, it’s more than a motivational slogan. Molinario is the store manager at the Hannaford Supermarket in Bradford, and oversees the daily operations there and at the state liquor agency inside. Tucked in between the customer service area and the front-end pharmacy, the agency recently celebrated its first year of operation, making it the fourth Hannaford in Vermont with a liquor store. “Organizationally, we’re only a year old, but we’re behaving much older than that,” Molinario says of how the store has adapted to its new addition. “I was fortunate – when I worked in the Burlington area, we had a liquor store in the Williston market.” Molinario, who grew up in the Barre area, played a key role in bringing the liquor agency to the 35,000-square-foot grocery Written by Bill Burke Photos by Matthew Thorsen 4 | 802spirits.com u s e pt e m b e r 2017

store. The Hannaford itself opened in June of 2013. Molinario then learned that a shop in Bradford that was previously the local liquor outlet would be departing, so he began working through the corporate office to inherit that status. After a quick remodel to make space, the agency opened on June 29 of 2016. “I would say the differentiator for us, as it affects the agency itself, is we get to bring Hannaford’s expectation of customer service levels to it,” he says. “Not that other agencies don’t have good customer service, because they do, but we add to it, along with the same customer service level that you’d find in any other department in our store. “There’s a huge focus on that. We bring our retail knowledge to that area – there’s always great availability and we work hard to make sure we don’t fall short of anyone’s expectations.” And while he may oversee daily operations, Molinario – who has been a store manager for eight of his 27 years in retail – is quick to dole out credit to the team that works the store each day. “I have one full-time person who owns the department as such,” he says. “She’s been killing it.” Jody Minor, he says, does all the ordering, maintains inventory levels and ensures that customers either find what they’re looking for, or are provided with appropriate recommendations for whatever event they may be shopping for. “She’s a quick study,” Molinario says of Minor. “We all know that customer service comes first, but then she’s great at suggesting items to customers. They all do a really good job, but Jody does a great job pointing out new items. I think the state is happy with our growth trajectory.”

The manager’s wine and spirits background is strictly self-taught. However, that focus has come in handy over the past year that the agency has been open. The shelves are stocked with a wide range of products, and workers have found that locally-produced spirits tend to draw customers to the aisles. “I’m a Barr Hill fan,” Molinario says of Hardwick-based Caledonia Spirits’ well-known gin. “The Tom Cat Gin is pretty spectacular. I’m not a huge drinker, but I do like mixing it up. I’ve tried most all of the Vermont offerings in there. That WhistlePig is something else. We just got the WhistlePig FarmStock. Our clientele is very supportive of the local stuff.” In the end, though, it all comes back to customer service – a mantra, of sorts, among the workers who report to the Bradford supermarket daily. “Our greatest growth engine is the relationships we have with our licensees,” he says. “We feel we’ve raised the bar when it comes to catering to their needs, letting them call-in orders and making sure we have it ready for them when they get there. Time is valuable, and we want to make it as simple as possible even for large orders.” Always drink in moderation.

t’s a typical Tuesday night at the Creamery Restaurant in Danville, and Ami Wright is mixing drinks for a crowd of regulars. In fact, she started building the cocktails before the group even walked through the door. Catching a glimpse of patrons pulling up to the well-known spot was all the information the longtime bartender needed. It’s a skill that comes with experience. “You know everybody’s car, so when you see them drive in you know what they’re going to have,” she says. Wright first stepped behind the bar more than 20 years ago to supplement her office job and because “paying the rent and buying clothes is fun,” she says, tongue planted firmly in cheek.

That first shift, she says, was bewildering and intimidating. A few nights in, however, it all changed. “I was barely 19 and I didn’t really know how to make drinks,” she says. “I was fumbling along, but within a couple of days it turned into fun.” As she became more skilled, she enjoyed it more, and worked at it for several years. But then life – and three kids – intervened, and mixing drinks took a back seat for a time. After a two decade break, and with children now grown, she decided to pick it all up once again. “I came back to it when my kids grew up because it gave me something to do. My husband works long hours, so going home at 4:30 and sitting alone for long hours is boring – so I went back to it.” She’s now been back behind the sticks at The Creamery for nearly six years. Burnt Orange Manhattan 2 ounces Maker’s Mark bourbon ½ ounce sweet vermouth
1 dash bitters ½ sliced singed orange half
Put all ingredients into a shaker, shake and pour over ice (if wanted) and garnish with a burned orange. To burn the orange: Singe it over open flame on the stove. It releases the oils and makes quite a citrus aroma. Wright says. “We do, for dessert, but that’s not our main thing.” This longtime Danville destination has been known as a go-to for great food and outstanding service for more than four decades. Menu items, which change regularly, range from appetizers like tangy chicken wings and spring rolls to shrimp and smoked salmon. Entrees include steak, fresh fish, pasta and even some barbecue – all served in a setting that’s both conversational and intimate. Linen tablecloths and silver give it a comfortably formal feel. At the bar, expect fresh. Fruit is cut daily, Wright uses “the best sour mix,” and smallbatch bloody Mary mix takes precedence over national brands.
What makes The Creamery a special place? “The owner has been the one single owner for more than 40 years. She makes all of our soups homemade every day. She knows everyone who has ever walked through the door and never forgets a face or name, so the owner – Marion is what makes this place special.”
What do you like most about the job? “I like socializing. I like listening to customers and talking to them. In this specific restaurant, all of the customers are locals or are summer pond people so we to know everybody. It’s kind of like ‘Cheers.’ You get to know what people like to drink.” Always drink in moderation.

Share a behind the bar secret. “No. Bartenders and servers are like doctors and lawyers – we’re not allowed to tell secrets. There are no secrets here. We live in the town of Danville, there are no secrets. I don’t think you can get away with anything. “Here’s a tip, though: Pour without measuring but never over-pour. You learn to count. It pays to be good at that. Measuring takes a lot of time. You can save time and money because if you can do that without pouring over, you’re saving money all the way around.”
What’s your favorite cocktail to make and why? “Either a Cosmopolitan or a Manhattan because those are my two favorite drinks. My least favorite cocktail to make is a rum punch or a Long Island Iced Tea. There are too many ingredients, it’s too time consuming and there’s too much shaking.”
At the end of a shift, I… “I think about the customers. Like, how I loved that table that came in in the left hand corner, they were so polite and so funny and so sweet.”

A Brief Guide to an Effortless Outdoor Party First, make it official with an invitation. Three things to include on the invitation are: q When they’ll be eating. Avoid refiring the grill for latecomers with something like “The grill master will be flipping burgers and dogs from 6 to 7 pm. Come hungry!” w Attire. Give guests a sense of what to wear: “Come dressed in your best Hawaiian attire” or “Come casual. Pool will be open. Bring your swimsuit and towels!” e Rain plans. You don’t need a rain date unless it’s a thirty-plus person event. But if you want to clarify, add a note: “Rain or shine.” Or “If it rains, party moves to the game room!” Just be sure that you have room for everyone inside. Make Sure You Have Enough Seats. Don’t have enough patio chairs for guests? Then assess your indoor furniture. The easiest option is to bring dining chairs out for the day. Renting can be a cheap way to go, too. Folding chairs start as low as $2 apiece. Light up the night right. If you’re outside after dark, just hang strings of lights on the deck, fence or tree branches, and add some hurricane lanterns or tea lights to your tables. Keep mosquitoes away. If there’s a light breeze, you may not need to do anything at all. If the air is still, plug in some fans around where people will be gathering. Offer guests bug wipes, which are less messy than sprays. Add music. Don’t crank the speakers. No one will want to stand near them if they’re blaring. Here’s how to determine how much wine or spirits to purchase: Determine the number of guests that will be attending. Take that number and multiply it by the number of hours the party will last. This determines the number of servings. For example, a party of 20 people lasting three hours would require about 60 servings.

The Colors of Fall T
he days are growing shorter and the temperatures are starting to drop, which can mean only one thing: Autumn is almost upon us. Vivid colors will soon explode from every hillside, meadow and mountain as nature paints Vermont with its most colorful palette. Why not toast the arrival of the most vibrant season of the year with an equally brilliant drink? Layered cocktails are as visually pleasing as they are (typically) sweet. Here’s a quick primer on how to create your own layered cocktail.
1. Pour the heaviest liqueur or spirit first – think heavier liquids like Kahlua or cream liqueurs – straight into the center of a shot glass or cordial glass. (The layers will show more readily in a smaller glass.)

2. Pour very slowly – turn a spoon upside down, place it inside the glass just above the first layer of liqueur and pour the next layer across the bottom of the spoon.
