A ‘rebirth’ in Nashua Rob Parsons breathes new life into Sky
By Amanda Andrews
Last summer, the Sky Meadow Country Club in Nashua was finishing up its final round of renovations — a three-year project that had the venue winning accolades even before completion.
The private 18-hole championship golf course and membership-based club went through a metamorphosis that started with a conversation about the struggles of running a business during COVID.
“I lived next door to the former owner, the Callahan family. Ed Callahan was a great friend of mine,” recalls Rob Parsons, developer and present owner of the Sky Meadow Country Club. “Their father, who primarily developed the club, bought it in 1993, and (the pandemic) was a tough
a fresh piece of clay was really interesting. A lot of it’s been just lucky timing with the rebirth of golf and the outdoors.”
That rebirth was spawned when people started to flock to outdoor activities during the pandemic. As Parsons recalled, “We learned to live outdoors again because we yearned for it. People migrated away from cities, away from the offices and cubicles, and now they want to be doing anything but that.”
Keeping that vision at the forefront of his mind, Parsons moved ahead to add value back into the property by bringing in a team of individuals that could make it happen.
Along with his team — business partner Dana Georges, chief financial officer Alan Burt, head of landscaping Brian Sadoski, director of sales and banquets Lynn McGowan, director of golf Rich Ingraham, director of food and beverage Felix Albano, and many others — Parsons went to work enhancing the new facility’s amenities.
time for everyone because the club needed a lot (of work). At some level, they thought I’d be a good next custodian of the property.”
From there, Parsons developed a vision for the property that has breathed new life into the hillsides of Nashua, with views of the White Mountains in the distance and the Boston skyline to the south. Namely over the past couple of years, Parsons and his team revamped the entire country club space, including the lobby, event venue, restaurant, lounge areas, bar and entertainment zones, a pool, pickleball courts, plus a new 5,500-square-foot barn to house golf carts.
“I wanted to make sure that my passion didn’t blur my vision,” Parsons said. “To get the opportunity to mold it like
‘The best experience’
At the epicenter of the renovations is Prime, an award-winning steakhouse and sushi restaurant.
“I just wanted to give the best experience to the members,” Parsons said.
“The crew that I brought in was two gentlemen from Del Frisco’s (a steakhouse in New York), who basically knew the steak business really well and built me a kitchen that would accommodate a top-notch steakhouse.”
“I’m trying to bring New York to Nashua, rather than having to go to New York from Nashua, without the pretentiousness,” said Albano, who’s also general manager of Prime. “When people walk in here, I have two goals: One is to make them feel welcome coming into a country club that’s private, and the second thing is to never have them go to Boston for a fine-dining experience.”
Prime, in operation since November 2022, has already won three accolades for 2023: a Wine Spectator Award of Excellence, a Dir na Awarded Restaurant and an Open Table’s Diners’ Choice Award.
Also in the works is an open-theater sushi area where the sushi chef can interact with patrons. Down on the ground level, Parsons is close to completing another entertainment area that will include an open-theater kitchen featuring hand-tossed brick oven pizzas, as well as a poker/card room, two bowling lanes, three golf simulators, shuffleboard

tables, plus a 360-degree halo to help golfers perfect their swing.
“I wanted to develop something that could be fun. We wanted to have some comfort food, but at the same time, it’s really an experience that will hopefully bring the yearround membership with (golf and bowling) leagues to keep everyone together,” Parsons said.
The various entertainment areas around the country club are offered with a recreation membership package for those who don’t golf but want to experience the exclusive amenities that come with a private country club.
Parsons gave an example of how one family can have the golfer on the green while their partner and/or kids spend an afternoon in the pool, down at the pickleball courts, or enjoying custom cocktails and high-quality food on the patio.
“It’s a very big family, with a family atmosphere,” Parsons said. “The members are very generous. It makes it so much easier to hire, because it’s a lucrative place to work.”
Part of Sky Meadow’s enhanced capabilities includes an increased venue space that can accommodate events for 300 seated people, or up to a capacity of 800 for reception-style events, with an outdoor patio for ceremonies.
The event space is equipped with audio and visual capabilities for weddings, corporate events, holiday parties, proms, showers, bar/bat mitzvahs and more. With Prime next door, there’s a few dining options for event organizers to choose from for their guests, as well.
Each space at Sky Meadow Country Club is retrofitted with furniture made locally in New England — such as the Prime dining room chairs from Pompanoosuc Mills, made in
Vermont, sold in Nashua — with art adorning the walls from artists here at home. A still life from James Aponovich is prominently displayed in the Prime restaurant, with a placard sharing his name. As Parsons said, “I met (Aponovich) years ago, and I was blown away by him. He’s like a hidden talent here. So, I wanted to have a little homage to him.”
Parsons’ attention to detail is what has made Sky Meadow a key part of the Nashua community, a parcel of land that now caters to Nashua’s outdoor entertainment seekers.
“I’ve been pleasantly surprised at how quickly we got this ship on plane,” Parsons said. “It’s an unbelievably unique property. And when you get here, it’s just beautiful.”

Tom Day leaves mark on Gunstock
By Paul Briand
Tom Day’s experience as Gunstock Mountain Resort’s general manager has been a bit out of the norm compared to other bosses. Like others, he had to manage the business through the COVID pandemic, but unlike most others he also had climate change and politics to factor into his decision-making.
As he prepared to retire at the end of the current ski season, Day looked back on his four years at the helm of Gunstock Mountain with pride and self-assurance at how he and his team improved operations at the four-season resort.
By improving the visitor experience to the resort, they also increased profits to Belknap County, which owns the resort and oversees its operations through the Gunstock Mountain Commission.
“When I got here, the senior team was ready to put the pedal to the metal,” said Day.
Day is turning 70. He took over at Gunstock in January 2000. He’d been at Waterville Valley for several years until 2010, working up from lift attendant to director of mountain operations.
After Waterville, he worked outside the ski industry in several executive roles, including chair of the board of Dome Industries and general manager of the Hooksett Welcome Centers.
Upon arriving at Gunstock, his assessment of the resort’s needs wasn’t so much of an overhaul as it was a series of tweaks: improvements to snow-making, improvements on on-time openings, improvements to how equipment rentals are handled.
A lot of what Day imagined to improve the resort were brought on more quickly by the COVID pandemic.
A ‘comfortable experience’
“COVID made us do all the things I wanted to do. COVID forced that to happen — I wanted to limit ticket sales. I wanted to limit discounting. You know, you can sell less tickets and make more money if you’re not giving them away,” said Day.
“We implemented stuff that I would have wanted to do anyways but might have been met with more resistance by the public,” he added.
“Well, all of a sudden, they got used to limited ticket sales, buying tickets online, getting rentals online. I
wanted everything to be online, because then you eliminate all the lines.”
During COVID, pretty much everyone geared up in the parking lot as boot bags weren’t allowed in the lodges. After COVID, boot bags brought to the lodge had to be stored in lockers or with the free bag storage offered by the mountain.
That eliminated clutter in the lodge. He carpeted the big cafeteria upstairs in the main lodge, which eliminated the clatter of ski boots on the hardwood floor, making it less noisy.
“To me, this was an opportunity. The size of this place is just right,” said Day. “We had an opportunity to really change what the experience was. We’re not a big conglomerate. I wanted to be what they weren’t. That was a comfortable experience, clean, well-kept buildings, making sure that you had minimal amount of lines.”
Over the years, overseeing $12 million in improvements to the resort, the user experience and the bottom line were uppermost in Day’s mind.
For instance, he had the tubing park redone — he shortened it and improved the lift to get to the top of the run. While the tube ride was a little shorter, riders got more rides down the hill for their two-hour ticket because of the shorter run and faster lift.
“They were getting their 10 runs in two hours instead of three runs,” he said.
“We were churning and burning, so we’re making more money because we were getting people up there faster, and they were getting their eight or 10 runs and they were happy.”
Other self-funded improvements included a new maintenance shop, ski shop, lodge renovations, improved dining options and paving the main parking lot.
Gunstock Commission politics
With a private business enterprise, the boss answers to a board of directors. Gunstock Mountain Resort is a public entity, owned by Belknap County, so Day answers to a five-member commission appointed by the county’s delegation, which is made up of members of the NH House of Representatives from Belknap County.
In the summer of 2023, Day and his senior team resigned en masse amidst a tussle with certain elements within the oversight commission that wanted to manage short-term and longer-term projects. That resignation put the ski season in doubt, because of the volume of

work necessary beforehand.
It also came to light that Day made two donations, using Gunstock money, to the reelection campaign of Gov. Chris Sununu, something he had done during his time at Waterville Valley — the difference being that Waterville Valley is not publicly owned.
The attorney general’s office found that Day unintentionally violated state law banning public funds used for electioneering.
Day and his team had the backing of the public and, after a change in the Gunstock Area Commission membership, they returned to their posts. He wasn’t fazed then and he’s not fazed now about the politics that came with the position.
“I’m confident with what I do, and I’m very sure of myself, so I think that helped,” said Day.
“You can’t be intimidated by someone when you know your business and you probably know way better than they do. I’m very enthusiastic and I think that doesn’t hurt when you’re making changes.”
Gunstock’s 10-year plan
There is a 10-year plan to expand the skiable terrain and build a destination hotel on the property. That’ll take some work, according to Day, especially since the county doesn’t own the property proposed for expansion and will likely have to incur some debt to fully build out the plan.
He believes what he believed when he arrived four years ago that continued tweaks will make it better.
“I think what needs to happen here is that we need to keep tuning up what we have before we go somewhere else,” he said, pointing to more snow-making and lift improvements. “What needs to happen is we need to keep tweaking this place and making it that much nicer.”
Day and the team must be doing something right.
The online skiing reservations sell out most Saturdays and Sundays.
For the 2022-23 fiscal year, Gunstock paid the county $351,901.21, the highest return ever. It was $320,000 the prior fiscal year and $220,000 the year before — a total of some $892,000 over a three-year stretch.
By law, the resort turns over 1.75% of its profits to Belknap County. There’s a bill in the Legislature now that seeks to increase that payment to 3%. The fivemember commission opposes the change.
According to the Laconia Daily Citizen account of Commission Chair Doug Lambert’s comments, legislation “should be formed with the intention of fixing a problem or responding to the needs and wishes of the majority of the public being represented. The proposed bill does neither.”
Lambert credits Day with turning Gunstock “into a financially sound operation that has become selfsupporting and able to improve and expand its infrastructure.”
“Tom has led his team in developing innovative ways to create new sources of revenue that augment the flagship ski business to better defend against the ups and downs of a weather-driven industry,” added Lambert.
“His vision for the potential for Gunstock, to be a world-class recreational resort, is evident wherever one looks throughout the property. The energy and enthusiasm that Tom brought in his leadership role is reflected throughout the staff and employees, from top down.”
Day was slated to leave at the end of the ski season, and is on the search committee for his replacement.

Festival highlights outdoor economy
GRANITEER festival brings together outdoor recreationists, employers and brands for a weekend of fun and education
By Amanda Andrews
New Hampshire’s outdoor industry accounts for 3.2% of the state’s overall economy — the nine highest in the U.S. Such statistics only scrape the surface when it comes to how much our state relies on our outdoor recreation for economic prosperity.
The Granite Outdoor Alliance (GOA), officially formed in 2020, has a mission to “advance the outdoor industry forward toward a sustain able and responsible future by focusing on land conservation, eco nomic development, education, and health and wellness.”
As GOA’s director, Tyler Ray focused his efforts on creating an epicenter for outdoor lifestyle brands and businesses to help spur the state’s economy. The result: the GRANITEER festival, being held this year Sept. 14, 2024, that brings together outdoor enthu siasts, employers and others for outdoor recreation education and fun-filled activities.
n Q. What is the Granite Outdoor Alliance?
A. Granite Outdoor Alliance is an outdoor industry association/chamber of commerce for outdoor companies, specifically in New Hampshire. We officially formed in 2020, but, of course, the pandemic really put the outdoors into the national mainstream conversation.
A big part of what Granite Outdoor is, is to fill a gap in the industry. The focus here is on the private sector, both companies as well as nonprofits in the industry. It’s got its tentacles in a lot of other economic segments, so it’s really cross-sector.
We focus on marketing, networking, events, workforce and advocacy. We encourage clean living, sustainable living, sustainable policy.
We live in New Hampshire, the White Mountains, the Seacoast, everything in between. And if we’re not encouraging clean living, sustainable policy, what are we even doing?
Senator Jeanne Shaheen was critical, in 2017, getting the federal regulators to measure and value what this industry even is. And prior to that, it’s very much an outdoor activity. It’s something that you do, and that’s how people perceive the outdoors. And that’s the major obstacle that we’re up against.
Our goal of connecting the outdoors to business is something that really hasn’t been truly done in New Hampshire. And there’s a little bit of a difficulty getting over that fence and to find that tipping point.
But we’re getting closer, and we have a new state director, Janelle Lawton. So, things are happening.
n Q. Tell us about the GRANITEER Festival.
A. We need something that harnesses the momentum that we’re feeling on a daily basis and spread it to others and let people know by driving awareness and visibility through these events. Sustainability and clean living reflect on the supply side of workforce and volunteerism; things that really sustain the state that just don’t get proper notice.
So, GRANITEER is an opportunity to convene not just the brands and the B2B but also the consumer side.
The outdoor industry is unique because the folks that are in the industry, the brands as individuals, they’re also the consumers. So there’s a little bit of a merge happening, and that’s why we’ve taken a different approach to blur the lines, because you play both sides of the fence.
We did a workforce assessment survey last year. We published it and we really found that outdoor companies in New Hampshire have a very difficult time finding qualified applicants with the hard skills and the soft skills necessary to meet the qualifications of those aspiring brands. Meanwhile, they’re hustling. Owners and smaller companies are being challenged with finding those higher-qualified applicants.
So, how do we come up with a compelling way to do our own take on a job fair type of event? Part of that
10 MEETINGS & CONVENTION PLANNER 2024
was, well, let’s put a beer in someone’s hand, right? Let’s let people loosen up here, so they see that there’s this whole side of the outdoor industry that is work related, not just for play. That’s how GRANITEER came about.
We’re telling the nonprofits, ‘Hey, you want to get some more volunteers because you need them? Come here and get your volunteers to sign up.’ To the brands: ‘You looking for more higher qualified applicants? Snag them at your tent.’ Get in the conversation.
There’s such an opportunity and a hunger for it, but it’s reflective of the industry at large. And even greater than that, it’s reflective of a way of life. And that in and of itself is what we are pushing, because people need to realize that’s how they live their life. The outdoor economy is made up of economic activity around outdoor pursuits and two-thirds of the state are active and outdoors and are participating based on recent data. And that says something. So let’s harness that.
What’s more, from an economic development policy perspective, what’s more powerful than an organic way of doing it? This is what people do on a daily basis. So let’s empower that and capitalize on it. It’s pretty exciting, actually. It’s what I call being hidden in plain sight.
And it’s for locals and those from away. It’s a balanced approach. GRANITEER reflects that.
(The event is) in Franconia, classic iconic mountain town, big space to open up. We have a big draw with a large musical stage. J These concerts really help
bring people here. We’ll have a whole number of outdoor activities. We’re developing a marketplace with all of our brands and other non-brands. We’re inclusive; we’re bringing everyone in, and people can bring their gear to be repaired, or sell secondhand apparel. It’s an exciting event — the first of its kind.
The other important thing is this fundamental need to see people in person. We got so used to this Zoom town effect, but at some point, there’s this connectivity. You see that with lots of mentors in the outdoor space, or people just going at it on their own, because they think they figured life out on the internet and, next thing you know, they’re stuck on a cliff calling for rescue. There’s a need to have those connections and those relationships, whether it’s networking for business or networking for friendship, that’s what creates vibrant communities.
There’s a lot of growing to do, whether it’s from the low-hanging fruit of stewardship to understanding how to build our workforce and to support our nonprofits. Because there’s such a big part of the outdoor scene here, that’s really what’s created that way of life. That’s why people are coming here.
GRANITEER is just the tip of the iceberg for what we have in store.

SENSE OF PLACE
Match your events with the right venues for maximum impact
By Mike Cote
Whether it’s a corporate gathering, charity fundraiser or awards gala, a successful event begins with choosing the venue that offers the best fit for the occasion.
Events are an integral part of the business model for Yankee Publishing’s New Hampshire Group, which packs the calendar every year with award, training and networking gatherings associated with its various brands, including NH Business Review, New Hampshire Magazine, New Hampshire Home and 603 Diversity.
For Operations Director Ren Chase, who oversees events organizing, choosing the appropriate venue is a crucial first step.
Over the past year, the company has hosted events at the Grappone Conference Center in Concord, the DoubleTree by Hilton Manchester Downtown, the Manchester Country Club in Bedford, the Bedford Village Inn, Flag Hill Distillery & Winery in Lee and the Venues at the Factory in Manchester, among others.
Chase calls it a tour of the state.
“Basically, what we try to do is vary the locations that we’re using,” said Chase, who joined the company two years ago.
While Yankee Publishing has ongoing relationships with multiple conference spaces, the company is regularly testing new ones, both to refresh long-running events and to build new business relationships. For example, the NH Business Review’s Outstanding Women in Business awards dinner this year was held at the Southern New Hampshire University Banquet Hall, a new venue for the event.
“One location may not necessarily be better than another, but a lot of times it’s nice to not stay with one venue for sake of variety, for seeing what a new space will bring,” Chase said. “It forces you to reconceptualize the event.”
Last year, New Hampshire Magazine’s Best of NH Party, which has been held at various locales over the past two decades, including Northeast Delta Dental Stadium and SNHU Arena in Manchester, moved to Flag Hill Distillery & Winery in Lee, the site once again for this year’s party June 20.
“It gives you something new to promote. Last year we were able to say, ‘Come see it at Flag Hill. It’s our first time. It’s a gorgeous venue. Come check it out,’” Chase said, noting that last year was also the first time since the pandemic that the party returned to a food sampling event rather than a plated meal.
Moving the event to Lee also shifted the event’s geography.
“We did intentionally target the Seacoast a little bit on that because we are a statewide company. Putting it on the Seacoast helps to draw from that market,” Chase said.
“Years ago, before my time, there were events in Nashua. And I wouldn’t be opposed to doing something in the Lakes Region at some point. They’ve got some great venues up there, but it really is about making sure that the people who want to come to your event can come and not have to drive an hour-and-a-half or two hours.”
Among the factors Chase and his team need to consider is whether the venue offers its own catering and

audiovisual equipment.
“A lot of times it’s easiest and simplest to go with somebody who has their on-site caterer there and can do the AV and all of that. But I think we proved with the Venues at the Factory (the venue for the recent New Hampshire Home Magazine Design Awards) that you can do it where it’s more of an event space, and we do have to bring in some of the outside vendors. We love the venue and we can go to a little bit of extra, not extra trouble, but extra work, to bring those caterers and the bar and everything like that in.”
Questions Chase says to consider when planning events include: What do you want it to be, and who is it for? Where do you want to draw from? What are you trying to accomplish?
“I think the most important thing to do with any event is to over-plan,” he said. “It’s going in with a realistic set of expectations, knowing that things are going to go wrong. There’s no 100% perfect event, and you need to be able to sort of roll with the punches.”
That means playing “zone defense” when something goes awry.
“The important thing is being able to pivot and not make it look like something’s gone wrong. Just make a decision and get through that moment,” Chase said. “Make sure the guests are happy and move on with it. There’s plenty of time after the event to go back and do a postmortem and make it better for next time.”

MEETINGS & CONVENTION PLANNER 2015 14 The hotel of choice in Southern New ultra-modern, Four Hilton 248 Newly Renovated Guest 30,000 square DOUBLETREE BY HILTON MANCHESTER DOWNTOWN 700 ELM STREET MANCHESTER, NH 603-625-1000
The seven regions of NH
New Hampshire is made up of seven very different regions, each as exciting as the next. The Seacoast, Dartmouth-Lake Sunapee, Lakes Region, Merrimack Valley, Monadnock Region, White Mountains and Great North Woods are filled with natural beauty, cultural events and classic New England living.
It’s one family vacation idea after another, and the only way to truly appreciate it all is to see it for yourself. Use the list below to learn more about each of New Hampshire’s distinct, yet equally unforgettable, regions.
GREAT NORTH WOODS
Halfway between the Equator and the North Pole, the Great North Woods is at once rugged and inviting. This is where travelers over the centuries have come in search of beauty, adventure and inspiration, while enjoying legendary North Woods hospitality.
Here is where you can go take a hike to watch the sunrise before breakfast, go fly fishing after lunch and get dressed up for an elegant dinner at a grand hotel.
Whatever your passion, from fine dining to snowmobiling to camping under the stars, the Great North Woods is a destination in which to indulge it.
WHITE MOUNTAINS
If one New Hampshire region is synonymous with recreation, it’s the White Mountains. Forty-eight 4,000-foot peaks are found here, along with the highest mountain in the Northeast, 6,288-foot Mt. Washington, but it is the 800,000-acre White Mountain National Forest that truly shapes the region.
LAKES REGION
The Lakes Region: The name alone stirs memories of blissful, sunny days spent on the water, the joy of vacations, boat rides and camp, when everything moved at a slow summer simmer, and you connected with people and places that still resonate with you today.
Summer may be the Lakes Region’s best-known season, but wrap the hillsides in spring green, the blazing colors of fall or a thick blanket of snow, and it is every bit as magical. While there are 273 lakes and ponds in the Lakes Region, one lake dominates them all: Lake Winnipesaukee.
DARTMOUTH-LAKE SUNAPEE
If only one region of New Hampshire could be known as a study in contrasts, it would be the Dartmouth-Lake Sunapee Region. Named for Dartmouth — Hanover’s Ivy League college — and Sunapee — the crystal clear lake, State Park and mountain, all of the same name — the region includes quiet country roads and rolling farmland, pristine lakes, a bustling hub of higher education and medicine, and some of today’s favorite family activities and recreation.
MONADNOCK REGION
For the New England of picture books, you need go no further than the Monadnock Region. Here you’ll find small villages where white clapboard churches and town halls edge manicured town greens.
Rolling fields with neatly planted rows quilt the hillsides, and country roads lined by rock walls invite exploration at a leisurely pace.
MERRIMACK VALLEY
In New Hampshire, where the capital’s name, Concord, is a synonym for harmony, it’s not surprising to find music and the performing visual arts central to life in the city and the entire Merrimack Valley Region. The state’s three largest cities — Concord, Manchester and Nashua — have an especially rich cultural life, with a variety of offerings year-round.
SEACOAST
New Hampshire’s seacoast captures the essence of New England’s oceanfront. In just 18 miles of coastline, there are long, sandy beaches, working ports, offshore islands, surf-stung rocks, and popular resort towns and villages that date back nearly 400 years.
Many visitors begin their tours of New Hampshire along the coast, drawn by the sound and scent of the sea, and intrigued by all the region offers.
