Welcome Diverse inspiration Even before the first bricks were laid, the stunning homes featured in this issue had very different beginnings. For example, Beryl Krake was attending an auction for a vacant block of land in her neighbourhood when she raised her hand on a whim. Sure enough — just like in a movie script — Beryl found herself signing on the dotted line. This was the catalyst for her and husband Kevin’s contemporary Kialla Lakes home that is packed with wow factor yet has a strong emphasis on a streamlined, lowmaintenance design. Meanwhile, ideas for Leanne and Joe Kodric’s new family home had been simmering away for years as they awoke each day to a bedroom view of their carport. For Jenny Clonan, childhood memories of summer holidays at Nagambie were an emotional drawcard to the town when she and husband Terry decided to build. Coincidentally another couple’s move to Nagambie ticked all the

right boxes: a place near water and family, and the prospect of living in an old building. Hugh and Cathy Lawrence transformed the historic old Colonial Bank building into their home and have recently opened La Galerie de Nagambie in the vacant front room. The gallery is another great reason to visit the picturesque town following the opening of the freeway bypass of the town. We also feature Leanne Hulm’s beautiful garden at Hazel Park. There is plenty to admire and inspire in their expansive, everchanging garden. As the hues of autumn start to transform our region, I’m sure many of you will also be drawn into your gardens. Enjoy! The stacked stone wall cladding infuses a natural element and was chosen because it went with the external paint colour Surfmist, and one of the builders suggested it would also work inside as the fireplace surround.

Paul’s idea – a difference to define the living and dining space. “My young granddaughters call it the catwalk and my concern was people tripping over as they usually have their heads up,” Beryl said. The strip light also reflects in the glass as a reminder to step.

When Paul suggested the window splashback Beryl said: “Paul, behind a cook top, it will get splattered!” His reply: “You have to clean it anyway.” It was designed to be the right height for Beryl to see out. The range hood is concealed by cupboards and there are no handles, which continues the seamless appearance.

Q&A Do you use the sink in the butler’s pantry? “Yes, I do my vegie preparation there and the coffee machine is next to the sink and it keeps the kitchen cleaner,” Beryl said

Kevin occasionally travels to Africa with his job and brings home artefacts. This recessed unit with glass shelves and downlights is the perfect display unit.

During a meeting at Chris’ home, Beryl noticed and liked the concealed pelmet design which discreetly hid the curtain fixings and she asked him: “Can I pinch that idea?” The window furnishings in the study and throughout the home are a soft, white sheer muslin.

The rooms are designed with abundant open space and natural light in mind, and the Tasmanian oak timber floor complements the style. Beryl was conscious of creating a low-maintenance home, especially for their future years. “I liked streamline because it is easy to clean,” she said. Apart from the entrance, LED downlights have been installed throughout to do away with climbing ladders to clean lights and change globes. Beryl laughs. “The LED lights will see us out!”

Q&A

The original idea for the outdoor entertaining area was to install timber decking but changed to tiles, Beryl said, “so we could just hose over and not have to maintain it”.

Why did you choose white for both inside and out?

The rear sliding doors were a deliberate choice as opposed to stacker doors which require a cavity — perfect for dust and spiders and their webs.

“I wanted it white and light everywhere. I’ve lived in houses where colours go out of fashion (like 70s lime green benches) and the kids have bagged me for it,” Beryl said. Internal wall colour: Dulux Peplum, ¼ strength External colour: Dulux Surfmist, ½ strength

“I wanted the base of these doors recessed down to the floor level but for practicality, the tracks have gaps for water to drain away,” Beryl said. In the main bathroom, Beryl chose a regular built-in bath in preference to a freestanding one because “it is difficult to get the mop behind to clean”. “We didn’t want to do a real budget home but you could spend bucketloads of money — we kept it within reason,” Beryl said. “This will be our home — unless it’s a nursing home.” v

“The view from my old bedroom was the carport,” Leanne said. “I knew everything I wanted, and, everything that annoyed me.” And this was the catalyst for the creation of this impressive home. There are so many features which are to be envied: two kitchens, walk-in robes in all bedrooms, two double garages, opulent fittings, and attention to detail.

Joe’s tips •

Another side-effect from the family of five having lived in a small home was that Leanne dreamed big — and the result is a whopping 58 squares under roofline. Their home design is a combination of three display homes, which Leanne put together on a piece of A4 paper and showed Bruce Mactier Building Designers and declared, “This is what I like.” “And then when you sit down with the builder, more things come,” Joe said.

Don’t close your mind to what’s available.

We hadn’t built before and the amount of time we spent with builder John Simpson was phenomenal.

They lived with the plans on the kitchen bench for five months. “We were constantly looking at the plans without any purpose, but would notice things,” Joe said. “Sometimes your ideas can be expensive, not practical, and there are better alternatives.” They intended to completely line the ceiling in the outdoor room with timber, but Simpson and Rickard Builders suggested an alternative solution which added an original element to the design and was cheaper. >>> 23

<<< 19 They acknowledge they blew the budget, but, as Joe said, “We knew certain things would cost more.” Leanne developed her decor ideas and brought order to her new home by working closely with an interior designer. “I knew what I liked, and she was helpful in that I could source designer material at trade prices,” Leanne said. To complete the transformation, most of the furnishings are new to match the contemporary style and Leanne recalls a difference of opinion with the interior designer on the choice of the dining table. “She was adamant about this one and I wasn’t, but she was right,” Leanne said. v

Balancing act

One of the standard ways to hang artworks is to measure the length of the image and find the halfway point, then hang the piece with the centre at eye level. It doesn’t matter if the next picture is twice as big, if you match the centre lines, this will give the wall art visual balance and consistency. Precision is the key here, so make sure you take the time to get it right. “It has to be exact, you will be able to tell pretty quickly if it is even a little bit out and it won’t look right,” Elise said.

Mix and match

A great way to fill a feature wall is to use a salon-hang approach. This style can be visually dramatic and inspires creativity in the home, with large and small pieces mixed together. “The way that this works really nicely is when you have really different pieces and you have all different sizes,” Elise said. “Simply choose an arrangement you think looks good, but don’t worry about lining up the central point.” Mismatched frames, varying dimensions and a relaxed approach to placing the artwork all lend themselves to this haphazard method.

If you have a vibrant piece that gives off an energetic feeling, it is best to place it in an area of the home where you want to cultivate that feeling. “Some pieces of art will resonate in a particular way and they will make you feel a certain way,” Elise said. “You might not want a piece that is really energetic in a place of rest, such as the bedroom.” Remember you need to stand back from a lot of works to truly appreciate them, so make sure the room allows space to do this.

On the hanger

The best way to hang a heavy piece of artwork that is more than 50 cm is to place a ‘D’ ring on it. Over time a wire hanger will distort the frame causing it to warp and it will always hang to one side. It may take a bit more time to put it up with the rings, but ultimately it will pay off because once you have put it up, it won’t move. If you are renting and can’t hang art permanently on the wall, self-adhesive hanging tabs can be a great solution. Elise said another option she used in her own home was to prop pieces on bookshelves — no hanger required.

Practical tips: •

Make sure the work is not in direct sunlight, particularly work on paper, because it will fade quickly in strong light.

Steam is another factor to consider when hanging artwork, so be aware of this when selecting pieces for the bathroom.

If you are framing photos yourself, ensure the picture does not touch the glass. Any moisture will make it bond to the glass, and it will peel if you try to remove it. Using a mount can help avoid this.

If you are unsure about a wall arrangement, trace the size of the image on to craft paper, and then cut it out. Have fun trying out different arrangements on the wall, using painter’s tape to stick them up, without the stress of placing holes in the wall.

Save yourself the frustration of a crooked painting — use a spirit level to ensure it is right the first time.

If you don’t want to hang your artwork, consider investing in an easel.

“I loved it up here, the water — and we were always in the lake,” Jenny said. Terry, originally from Numurkah, hoped to retire near the water and said “I thought the coast, maybe Bellarine, but Jenny wanted to be here.” The Clonans bought the 480 sq m lake-front block in the Elloura development at Nagambie in March 2010 and Terry recalls “It was just a paddock”. Shepparton builder Chris Barzen was recommended to the couple by friends and to kick-off the design process, the Clonans consulted building designer Paul Ranson. “It took about six months but we weren’t in a hurry,” Terry said. The contemporary two-storey home’s external design is oriented along a strong horizontal-vertical shape and comprises a combination of various materials including: Jasper colour aluminium window trims; Matrix board cladding with a geometric, joint look; steel beam eaves and balcony side slat rail; and rendered lightweight MasterWall polystyrene wall cladding. The four-bedroom home includes open-plan living area with the master bedroom and study upstairs. >>> 39

Jenny said she saw the open-living plan in a display home at Point Cook and knew it was what she wanted. In particular, the oversized Caesarstone kitchen bench. “It is a practical space for appliances and sitting at and doesn’t show dirt or fingertip marks.” Something Jenny can’t get enough of is the slide-out wire drawers in the walk-in pantry — so practical that more are being installed in the broom closet. There is warmth to this home with the use of different materials, textures and personal decorating choices. Australian chestnut timber flooring throughout adds natural beauty, with other design features including a spectacular copper cube tile feature wall with gas fireplace, Caesarstone ledge and Laminex storage cupboards and two unique internal concrete colour block walls with a honed and lacquered finish of three coats as opposed to polished because Terry said “that was a ridiculous amount of money”. Jenny admits it “took a while for her to like them”.

The pond is canopied by willow trees and a miniature toadstool outdoor setting is the first place children head for. “It’s a wonderful shaded spot to sit in the afternoon with a glass of wine watching the ducks in the pond,” Leanne said.

There is no doubt Leanne Hulm has a love of the outdoors. The hours involved in nurturing her property speak volumes. “I grew up on big properties and I just love being in the garden,” Leanne said. “I am pretty much an outdoors person.” Leanne and her partner bought their Kialla property, Hazel Park, 2½ years ago with a vision to create their ideal lifestyle. The property won Leanne over on the first inspection for its land space, garden and beautiful home. “As a partnership it was a property we could grow together with and ride around on the horses,” Leanne said. They built a state-of-the art stable complex, and new white fencing adds a wow factor.

“The previous owners did it well from the get-go, and we have just rebuilt.” Leanne focused on specific areas within the garden to create feature hot spots by incorporating new landscaping and highlighting existing structures. “We would look at areas and try to make it our own feature,” Leanne said. “Where the columns are we added the two contrasting bark chip colours and black to distinguish the walkway.” Clean, neat lines appeal to Leanne, hence the garden edges and crisp paths. The contrast of the red brick home against the green of the garden is visually pleasing.

Autumn is a beautiful time in the garden, with cooler weather seeing many leaves turn into vibrant reds, oranges and yellows.

Plant after good rainfall and while the soil is still warm, so new plants can establish good root growth before it slows in winter. Autumn is also the time to plant winter/spring flowering bulbs, as well as to sow sweet peas, poppies, pansies and other spring bloomers.

Check your lawn and make sure any weeds you sprayed last month are dying. Repeat the treatment if necessary. Autumn is also a good time to aerate the lawn, sow grass seeds and lay turf.

Collect and compost the leaves that fall on the garden, or they will smother plants and lawn.

Milder temperatures and rainfall also make autumn a great time to revitalise gardens for the new season and for next spring. Here are some autumn garden activities including propagating, pruning and planting that will keep your garden thriving: •

Propagate plant cuttings. To take cuttings from hardwood herbs such as rosemary and Australian natives such as grevillea and banksias, remove the lower leaves, dip cuttings into hormone powder and pot in premium potting mix.

Prune hedges and autumn flowering plants.

Plant strawberries to produce fruit in October and November.

Divide evergreen perennials by taking them from the soil, dividing them at the root and re-planting them.

Treat pests and diseases, including fungal diseases in roses, snails and caterpillars. v

OLD BANK HOUSES DIFFERENT

kind of treasure Tucked away in Nagambie’s historic Colonial Bank building is a treasure trove of antiques and collectable items with a lifetime of history. La Galerie de Nagambie is a nest for hard-to-find relics, which opened in December last year to celebrate the 140-year anniversary of the building. Within the walls of the property built in 1873 are Marley horses, vintage movie posters, hand-painted Japanese porcelain and a centuries-old ceramic religious font. In 2000, owners Hugh and Cathy Lawrence purchased the building and renovated it into a Victorian-style private residence. With one room at the front of the house left to fix up, they decided a gallery would be the perfect fit for the space. ‘‘We didn’t know exactly what to do with this room, but because it is so impressive and the building is special, we wanted to do something,’’ Cathy said. ‘‘The bypass was also finished and we thought, ‘We have to do something for the town.’ ’’ Blessed with an artistic family and an eye for unique finds, the Lawrences filled the space with charming pieces from yesteryear, from Beswick collie figurines to antique scales and vintage hat pins. ‘‘I can just picture the ladies with the hats putting the lovely hat pins in — these antiques belonged to people,’’ Cathy said. ‘‘The pieces have history, character, and feelings as well.’’ The building has seen a lot of life in its years, from an RSL, to a Colonial doll museum.

In the heart of Nagambie lies an unexpected trove of antique treasures waiting to be discovered.

However, the hallmarks of its origin as a bank still remain; the barred windows, sheet metal on the back of the doors and a large walk-in safe. ‘‘The safe is now our wine cellar,’’ Cathy said. ‘‘There was 70s carpet on the walls when we bought the property, which

There is a lot of thinking about it before I actually go out and make a whole piece of furniture.

If I’ve bought a (red gum) slab, I would probably let it sit for about six months, or as long as it takes for me to figure out what to do with it. Then it will just come to me one day and I’ll start designing it, working out what I’ve got to do with it, and I’ll go from there. What I do with it depends on the shape and size of the piece. Each one is different and you sort of just go off that. I’ve designed a lot of things that I haven’t actually made yet, it is just about finding the time and materials. I will take ideas from other pieces of furniture I have seen, or from what other people have done with similar timber and then I’ll add my own insight. If there is a big crack in the wood you could fill it with fibreglass resin so there will be a clear crack in it and that’ll come up pretty good. That adds a unique touch, and no two pieces are the same. I used to think second-hand wood was gross and I didn’t want to go near it, but I saw a piece made from recycled material that came up really nice. For trade school I made a dining table out of railway sleepers that were 60 to 100 years old — they were pretty banged up, but it is a piece of history. It is interesting to know the timber you are working with could have been used in a wharf or bridge somewhere years ago.

LIFESTYLE GRAPHIC DESIGNER BRENDAN, 27, REKINDLED HIS INTEREST IN WOODWORK AS A WAY TO FURNISH HIS HOME AT A FRACTION OF THE COST.

After I stopped doing woodwork at school, due to it clashing with my science subjects, I decided to continue building furniture in my parents’ carport. I started with just a router, hand saw, drill and dowel gig. I’ve added a lot of tools to my collections since then, which makes everything a bit quicker. The first quality red gum piece I made was a coffee table. I had made other things out of pine wood before that, but this would have been the first piece where you couldn’t tell it was made by a school student. I moved from Moama to Shepparton and I needed some furniture for my house, so I decided to make my own from reclaimed red gum. Although it took a while, I have a set of matching furniture that cost a fraction of what it would to buy in-store. There will always be a market for cheap furniture, but I like the fact that I have one-off pieces that are made with traditional joinery techniques — compared to the screws of the cheap furniture. I look for old timber at clearing sales, which could have been a shed, livestock yard or a fence in a previous life. You can get it machined and dressed to look like fresh timber. When you are making something out of reclaimed timber you need to pay more attention to each piece of timber. Pieces with nail holes or cracks can add character, but you don’t want too many. You need to work them into your design. Say if you are making a table top, you would select the best sides of the timber before joining them together, but sometimes you have to work with what you have.

Two locally produced wines have caught the attention of wine buff Paul Phillips who encourages people to expand their wine repertoire. Pinot gris is emerging as the new sauvignon blanc. The popular dry white wine tends to have more flavour and is slightly fruitier, less acidic with a luscious texture, whereas some sauvignon blanc varieties are overdosed with a passionfruit taste and are sharp and tart on the palate. As for colour, pinot gris is typically a pale yellow with golden hues and, generally speaking, is slightly cheaper than sauvignon blanc. One of the region’s noted wine makers, Sam Plunkett, who has been making wine for about 25 years, has a brand new label called Wine x Sam. In his latest venture, Sam delivers a range of wines including shiraz, cabernet shiraz, pinot gris, riesling and a savagnin (a southern European variety). Sam is a quiet man who lets his wine do the spruiking. I am surprised about the lack of popularity of sparkling red wines which are a cross between a red wine and a bubbly. The sparkling red varieties are a nice summer drink, best served cold to keep the bubbles from going flat, and you don’t lose any of the flavour, whereas chilling a white or red wine shuts out the flavour. Cape Horn Vineyard near Echuca is named after the river bend resembling Cape Horn on the tip of South America and features fruit grown on the banks of the Murray River.

Chocolate Hot Cross Buns

For Numurkah Secondary College hospitality teacher Anna Corazza, working with chocolate is like creating a piece of art.

The former chef said keeping the chocolate at the right temperature was the hardest part of the process. ‘‘Melting the chocolate correctly is the most important process,’’ she said. Using good quality chocolate is another key tip for achieving the best result. ‘‘I like to use chocolate with at least 70 per cent cocoa solids for a deeper, richer flavour,’’ Anna said. ‘‘I always buy fair-trade chocolate such as Oxfam or Green and Black’s.’’ Her philosophy for teaching is to inspire and promote an intrinsic motivation for learning about food and connecting that to everyday life. “My food technology teacher Maureen Collins has been a great inspiration to me, and my challenge in teaching is that I can also inspire my students to obtain a career in food or a passion for cookery.”

300 ml milk, warmed 2 x 7 g sachets dry yeast 4 cups plain flour 1 tsp ground cinnamon 90 g butter, chopped 1 cup choc-chips ½ cup sultanas ¼ cup caster sugar

– 1 egg – 150 g dark chocolate, melted Glaze: – ½ cup water – ¼ cup sugar – 1 tsp mixed spice Crosses: – 100 g chocolate buttons

Lightly grease a baking tray and set aside. Place milk in a jug, then sprinkle yeast over milk and set aside for 5 minutes, until foamy. Sift flour and cinnamon together into a large bowl. Rub in butter using fingertips, until mixture resembles breadcrumbs. Stir in choc-chips, sultanas and caster sugar. Whisk egg into milk mixture. Pour over dry ingredients and mix to a soft dough. Turn onto a lightly floured board. Knead for about 10 minutes, until dough is smooth and elastic. Place dough into a lightly greased bowl. Cover with plastic wrap, then a tea towel. Set aside to rise in a warm place for about 45 minutes or until dough has doubled in size. Preheat oven to 220°C. Punch dough with fist to release gas. Knead on a lightly floured surface for a few minutes, until smooth. Divide dough into 16 equal pieces. Knead each piece until smooth. Shape into rounds and place close together on the prepared tray. Cover with a tea towel and stand in a warm place for about 40 minutes, until doubled in size. Bake for 15 minutes. Reduce oven to 180°C, and bake for a further 5 to 10 minutes or until buns sound hollow when tapped. Glaze: Combine all ingredients for glaze in a small saucepan. Bring to the boil on high, stirring constantly, until sugar dissolves. Reduce heat. Simmer for 1-2 minutes without stirring. Brush over hot buns. To melt chocolate for crosses, place buttons in a clean and dry microwavesafe bowl and microwave on low for about 30 seconds at a time. Stir chocolate at first signs of melted buttons. The heat within the bowl is enough to completely melt while stirring. Place melted chocolate in a small snap-lock bag. Snip a small hole in corner and use to pipe crosses onto buns.

Chocolate Tart Serves 8 Preparation time: 30 minutes (plus leave dough overnight)

Handmade Chocolates – 250 g of chocolate buttons, can be dark, milk, white or coloured chocolate

– Thin paint brushes

– Two chocolate mould trays (available from Spotlight)

– Metal spoon and bowl

To make solid chocolates, finely chop chocolate and place in a heatproof bowl that fits snugly in a saucepan. Half-fill the saucepan with water and bring to a simmer, place the bowl with 2 /3 of the chocolate on top and make sure it doesn’t touch the water or it will overheat and the moisture will make the chocolate harden. Melt chocolate until the temperature reaches 45ºC. Remove bowl and stir in remaining chocolate with a metal spoon until melted and cool down to 27ºC. Place bowl back on simmering water and reheat to 32ºC. Avoid wooden or plastic spoons as they retain moisture that makes chocolate harden. Using a paint brush, paint cavities in the chocolate moulds. If you would like to make a coloured top, paint the cavities with coloured chocolate. Look on the underside of the mould to ensure you have achieved a good even layer

of chocolate with no gaps, and then refrigerate to set. Fill each mould with melted chocolate to the top, ensuring you don’t over-fill. Tap the mould gently to release any air bubbles and then refrigerate to set. Pop out of moulds and place in clear boxes. Variations: Fill chocolates with nuts, caramel, jellies or ganache. When making filled chocolates, paint a layer of chocolate around mould then allow to set in refrigerator. Repeat carefully until there is just enough room for the centre. Add the centre then top with melted chocolate and refrigerate till set. Melting chocolate tips: • Ensure hands are washed and completely dry before beginning preparation. • Make sure all equipment such as bowl, spoons, and paintbrushes are completely clean and dry.

Chocolate and Hazelnut Macarons Makes 30 Preparation time: 15 minutes Note: Exact measurements of ingredients are essential for making macarons. Always calibrate scales before using. To calibrate scales refer to instruction manual for digital scales. Most scales have a calibrate button. – – – –

225 g icing sugar 125 g almond flour 125 g egg white (about 4 eggs) 40 g white sugar

Preheat oven to 150°C. Sift the icing sugar, almond flour and cocoa together. Beat the egg whites until they form nearly stiff peaks, then gradually add the white sugar and continue beating until the sugar has dissolved and the egg whites form stiff peaks. Fold in the almond flour mixture and blend well until the mixture is smooth. Spoon the mixture into piping bag with a round nozzle and push the mixture down to the end. Line a baking tray with a sheet of baking paper, and then pipe about 60 rounds that are 2 cm in diameter. Leave the rounds to dry for about 30 minutes or until the mixture is dry to touch.

– 20 g cocoa powder – 160 g butter – 60 g cream chocolate hazelnut spread Place in oven and bake for 10 to 15 minutes. Leave the macarons to cool on the baking paper. The filling: Beat butter until soft and creamy, and then fold in chocolate hazelnut spread. Pipe the filling onto macarons and press on second macaron, allowing the filling to be pushed to the outside edges. Tips: Use eggs at room temperature and ensure there is no yolk present in the egg white. Ensure all equipment is clean and dry. Foam eggs to stiff peaks and ensure you are able to tip the bowl upside down without egg coming out.

Sweet shortcrust pastry: – 125 g unsalted butter, chopped and softened – 1 egg – 2/3 cup icing sugar – 3 tbsp ground almonds – 1 2/3 cups plain flour

Filling: – 500 g dark couverture chocolate (70 per cent cocoa solids), finely chopped – 200 ml milk – 300 ml cream – 3 eggs

Using an electric mixer, cream the butter with icing sugar and ground almonds in a bowl. Add the egg yolk and mix until it just comes together, then gradually add the flour. (Most shortcrust pastry is made from rubbing butter into flour — creaming butter like in this step is also a form of aeration in baking.) Transfer dough onto a lightly floured surface and shape into a disc. Cover with plastic wrap and place in the fridge overnight for best results. Remove from refrigerator 30 minutes before using. Preheat oven to 180°C. Roll pastry on a lightly floured surface to a 4 mmthick disc, and then use to line a 23 cm tart tin with removable base. Use a sharp knife to trim off excess pastry, then refrigerate for 30 minutes. Line the pastry shell with baking paper then fill with pastry weights and bake for 15 minutes. Remove the weights and bake for a further 5 minutes until the tart shell is dry. Increase the oven temperature to 250°C. Melt the chocolate in a heatproof bowl over a saucepan of simmering water. Place the milk and cream in a small saucepan and bring just to the boil. Break the eggs in a bowl and lightly beat. Pour the milk mixture over the beaten eggs, then strain through a fine mesh sieve into the bowl of melted chocolate. Gently stir the mixture with a wooden spoon or whisk until it is smooth and silky. Switch off the oven. Pour the chocolate mixture into the tart shell, place back in oven and leave for 30 minutes or until the filling has cooked enough to set like custard.
