It was the second time artist Kate MacKenzie won the coveted award, making her one of the country’s most successful designers at the spectacular international art show. As WOW designers prepare to take to the stage for this year’s event, we catch up with Hawke’s Bay-based MacKenzie, to find out how the wins have impacted her career and what she plans to do next.

Snow much fun in the sun!

Kia ora koutou, We’re approaching the end of winter and wow the Taupō District has put on a show!

We recently held the Malcolm Flowers Insurances Taupō Winter Festival, which runs each year during the school holidays. Taupō was buzzing with visitors and locals attending all sorts of free and ticketed events, and with the help of the cold crisp sunny winter days, it was a sold-out event again this year. I highly recommend you plan a visit when the Taupō Winter Festival is on – there is something for everyone, young and old alike!

Beautifully depicting the Taupō District, our newly upgraded airport terminal is now officially open, and we have seen a great influx of national and international visitors arriving for their winter holidays.

With the fabulous news the ski fields are open again this year, our accommodation and hospitality providers have been flat tack with all the gnarly skiers and snowboarders making their way to the mountain. Now’s a great time to check out who does the best post-ski hot chocolate in the district!

Not far from the ski field is an amazing new sports facility, Te Mataapuna, which is now officially open at Tūrangitukua park in Tūrangi. Managed by Te Mataapuna Sports Collective, the facility has already been attracting great crowds watching some top sports being played.

It was great to see people from all over the Taupō District get together to celebrate Matariki in our beautiful new heart of our town Te Ātea with storytelling, waiata and a fabulous kapa haka performance.

The Taupō District has had a very enjoyable winter, but we are certainly looking forward to the warmth and longer days of spring!

Greetings and warm wishes! Rotorua is blooming with life, and we're thrilled to embark on a fresh journey towards becoming a top tourism destination once again. Our Council's renewed vision will help deliver a revitalised inner city and safer community through our upcoming Long-Term Plan.

July was a significant time for us as we proudly hosted the national Matariki ceremony right here in Rotorua. And what better place to share these important cultural traditions. Broadcast from our special mountain, Ngongotahā, the event reached people all across New Zealand, reminding us that our newest national holiday is for everyone. The star Matariki and her children do not choose who they shine on. They shine on us all. This national spotlight showcased our beautiful city, culture and environment, which we hope will inspire visitors to come and experience all that Rotorua has to offer. And there are plenty of reasons to visit us during the vibrant spring and summer seasons.

In September, we welcome back the Aronui Indigenous Arts Festival, a celebration of cultural expression featuring theatre, writer talks, live music, and the ARONUI Māori Market. Additionally, on November 10, we'll be hosting the inaugural Legend of the Peaks off-road running festival, offering competitors a chance to experience the best of our stunning forests, accompanied by music and food at the festival site.

As the summer months roll in, join us at the BBQ & Blues Festival on our Village Green from November 24 to 26.

Diwali represents victory of light over darkness, good over evil and knowledge over ignorance.

The festival gets its name from the row (avali) of clay lamps (deepa) Indians light outside their homes to symbolise the inner light that protects us from spiritual darkness.

What is Diwali?

Every region in India has distinctive traditions for celebrating Diwali but the meaning behind the festival is the same everywhere - the triumph of good (light) over evil (darkness) and the renewal of life. Diwali is a time for religious rituals, for families to come together and it is also considered an auspicious time to start new business ventures.

During the five-day festival in India, there are different ceremonies each day, with the third day being the main event. On Diwali night people offer prayers to Lakshmi, the goddess of wealth, and Ganesh, the god representing good fortune and wisdom for the coming year. Offerings to the gods and lamps placed outside homes are arranged to attract their attention so they provide prosperity to the family for the year ahead.

India’s biggest holiday of the year, Diwali is the Hindu festival of lights and it also enjoyed by non-Hindu communities around the world, including in New Zealand. –

When is Diwali?

The date of Diwali changes each year - it is always celebrated in October or November on the darkest day of the lunar month. This year in New Zealand, Diwali is on Sunday November 12.

How is Diwali celebrated?

The weeks leading up to Diwali are traditionally a time when people clean and redecorate their homes, buy new clothes and jewellery and exchange gifts such as dried fruits and nuts. During this time there are food festivals, parties and feasts as the excitement builds towards the main Diwali celebration on the third day.

On this day, families gather for prayer and as the sun sets, they place many clay lamps around the house. This is followed by a lavish dinner and fireworks.

Each region has its favourite dishes during the festival. Savoury snacks could include samosa, bhajis (a fritter made from spicy vegetables) and aloo tikki (potato patties). The main meals might feature meat curries such as tikka masala or vegetarian dishes. Sweet treats are the stars of Diwali. Family favourites include gulab jamun

(syrup dumplings), cardamom kheer (rice pudding) and nankhatai (shortbread-like biscuit). Sweets are typically made with dairy products as this has religious significance and are offered to the gods and guests.

In New Zealand, Diwali festivals are held in most regions. These include dancing, music and food stalls.

The Rise of Football

With the hugely successful FIFA Women’s World Cup just behind us, football in NZ is expected to become more popular than ever before. The high profile of football here and overseas, accessibility to the game, and investment at young levels are just some of the reasons the sport is finding favour among kids.

From strength to strength

According to the New Zealand Secondary School Sports Council’s 2022 census, 20,464 high school students played football at high school level, making it the fifth most popular code in Aotearoa at that level. This puts football ahead of sports like hockey, athletics, cricket, and rowing for the same period.

If you have a high school-aged child, there’s a good chance you spend your winter Saturday mornings on the side of a football field, cheering them on. Popularity of the beautiful game is on the rise in New Zealand, as it becomes the sport of choice among a growing number of young people.

Netball remains the most popular high school sport overall, with 25,933 participants, followed by basketball (25,595), rugby (24,625) and volleyball (23,391), taking up the other top spots ahead of football.

Internationally, football remains one of the most popular sports in the world, with an estimated 3.5 billion fans and 250 million players across 200 countries - led by Brazil, Germany, Italy, Argentina and France. Whether you’re a casual spectator, a player or yet to be converted, this exciting sport has gained a huge following.

Impact of the World Cup

With the FIFA Women’s World Cup recently drawing to a close, it’s too soon to know the full impact this international event will have on football here, but it will undoubtedly be positive. Crowds of fans flocked to stadiums around NZ to watch the biggest women’s sporting event in the world, which historically featured 32 teams.

The Government invested about $55 million in the event and surrounding activity, including $19 million for upgrades to 32 stadiums and training sites earmarked for the tournament. The upgrades will be an ongoing legacy for the communities and all sporting codes that use the facilities.

Another $10 million was invested in initiatives off the back of the event, including school holiday programmes for girls, all of which are expected to have lasting benefits to the game.

The biggest impact however, may be the inspiration the World Cup provided to young fans and players. The quality of football seen during the tournament is something the country has never seen before and is likely to cause an explosion of interest in women’s football.

Investing in young players

Ricki Herbert knows more than most about the benefits of football to young players. Herbert runs a football academy that provides coaching to kids at all levels from ages four to 17. Coming from a supportive, sporting family, Herbert took up football aged four and at 62 he remains just as passionate about the game he loves and which has given him so much.

Herbert is a former NZ and international professional footballer, who played 84 games for NZ, including the 1982 World Cup in Spain. He went on to become head coach for the undefeated 2010 World Cup team in South Africa. Since then he has coached for a number of professional clubs.

In 2013 he started the Ricki Herbert Football Academy to give back to the game by offering opportunities to young players. “I wanted to present something like that and have something that had some real depth and meaning.”

The academy is now across several parts of the country, including branches in Auckland, the Kapiti Coast, Whakatane, Cambridge, Matamata, Taupo, Taumarunui, Warkworth and Wellington.

Reaching areas that don’t have the mainstream opportunities found in larger centres has been a big part of their focus, says Herbert. “I’ve been very keen to be reaching out because there’s going to be talent - there’s always talent in those surrounding areas.”

A girl who recently took part in a development programme in Taumaunui showed huge potential. She’s since moved to give her better access to the game, and is playing in an under 14 team in Cambridge. Another young player, Liberato Cacace, who trained with the academy showed technical talent early on and always had a “burning passion” for football. He went on to play for Wellington Phoenix and now plays for the All Whites.

The academy isn’t just for elite players - there’s something for all kids who want to learn to play football. Most importantly, Herbert wants the kids to enjoy the game and have fun. “That’s a priority for me, that they go away with a smile on their face.”For those who do want to advance their football careers, the academy provides mentorship from professional coaches, opportunities to develop their talent and support to find a path that best suits their ability and goals.

Growing demand

Demand is always strong for their programmes, but recently numbers have increased even more than usual, says Herbert. ‘‘We just sense that the game in general is being seen favourably by parents and more children are coming through. For us we’ve certainly had growth.”

There are so many draw-cards to football, says Herbert. It engages the whole body, has transferable skills, it’s easy for parents to access, there’s progression of levels and talent and opportunities to connect with other children. “The one thing about the sport is it probably sits reasonably prominently in the majority of countries around the world. Because it is such a global sport it has that attraction to keep driving numbers.”

The future of football

Here in NZ financial investment and development of players at younger levels is “crucially important” in providing opportunities for children to learn and grow in the sport, says Herbert. That can range from giving

kids the chance to kick a football around in an organised space with positive people, to more meaningful opportunities for kids who want to be challenged further. Football NZ’s new Fantails programme, aimed at attracting new female players aged 4-12, is one example of the way football is evolving and invesment in the next generation.

Herbert hopes NZ continues to produce and nurture talented players. “Geographically where we

are, I think there’s always going to be that drive for players to go offshore at some point to further be educated and be challenged.” Our focus should be to grow the talent we have, drive aspiration, and continue to lift the bar, as we’re doing. Seeing the success of our best players will continue to motivate the younger ones, says Herbert. “We’re here to help the next generation.” There’s no doubt, the future of football looks bright.

THESE TWO GREAT RIDES HAVE IT ALL

Spring is an ideal time to seek out new experiences. Head west across the North Island, and you will find some of the top Great Rides in New Zealand. The two-day Timber Trail and the one-to-six-day Mountains to Sea Trail are connected at their heart by the multiple headwaters of the Whanganui River. Both trails are rich in Māori culture, history, ecology, and of course, adventures.

The Timber Trail

In the centre of the island lies the ancient forest of Pureora. The forest is home to the top-rated Timber Trail, a Grade 2-3 adventure suitable for most cyclists with sound skills and fitness. It spans ancient verdant forests teeming with native birds such as kākā, kokako, and kererū, and winds down through the technically amazing Ellis Burnard tramway, over magnificent suspension bridges and around the engineering marvel that is the Ongarue spiral.

Saved from logging in the 1980s, this magnificent mix of virgin and regenerating forest is home to a twoday ride stretching 84 kilometres, aided by the comfort of three unique styles of mid-ride accommodation and hosting. After all, there is nothing better than relaxing with a bevvie and home cooked meal by the fire on a clear night.

Mountains to Sea Ngā Ara Tūhono

Heading further south will bring you to the Mountains to Sea Ngā Ara Tūhono Great Ride. These trails are a network of connected pathways, navigating the journey of the Whanganui River from Tūroa on Mount Ruapehu all the way to North Mole on the Tasman Sea. Ride the historic Ohakune Old Coach Road, traverse Fishers Track, and the Marton Sash and Door at National Park - perfect for a half-day out. Explore the connecting trails to the Bridge to Nowhere through the Mangapurua Valley, followed by a jetboat trip down the magnificent Awa.

Experience a unique slice of living history down the Whanganui River Road. Ride individual sections or connect a full adventure as you travel through to Whanganui, UNESCO City of Design. The city is home to some of New Zealand’s earliest cycling history and is now complemented by a thriving artisan community. Anew look café has opened its doors at Taupō Airport, bringing a taste of something special to travellers. Lil Something is the new venture from the team behind the buzz-worthy Spa Thermal Park coffee kiosk of the same name. Taupō is home to several craft brewers, each passionately embracing the unique terroir and crafting award-winning lagers, ales, fruit beers and even meads. We caught up with two of Taupo’s brewers to find out more about the delicious beers they make, and what sets the area apart as a hub for craft beer enthusiasts.

BREWING WITH A KIWI TOUCH

New Zealand’s craft beer scene is now world-renowned. Popular craft beers from all over New Zealand can be found on shelves and in fridges from Singapore to the United Kingdom, and visitors to our shores are increasingly visiting specifically for beer-related tourism as well as spending more on beer while they’re here. Kiwi brewers boast an innovative, dynamic attitude to craft beer brewing that sets them apart on the world stage, incorporating an exciting mix of local flavours and quality raw ingredients. One of the most characteristic traits of New Zealand craft beer in past years has been its emphasis on the experimental. Strong flavours, higher strengths, and flavourful Kiwi hops often defined what consumers expected from their craft beers. However, while innovations and experiments are always brewing, the current times are seeing a shift back to basics. Elissa Cooper, one

half of the couple behind Lakeman Brewing Co., says they’re witnessing a swing back to more traditional beers in these tougher economic times.

“The consumer knows what they like and trust and is favouring core beers with tried-andtrue styles rather than something too experimental," Cooper says. Lakeman’s signature pilsner, a testament to this sentiment, recently bagged the Supreme Champion Beer title at the New World Beer Awards. It's one of Lakeman's core beers, and it's brewed using an ale yeast, giving it a distinct flavour profile. Cooper and husband James have been brewing for ten years, and now has a team of seven locals looking after their process from start to finish.

DARING TO BE DIFFERENT

Not every brewery is dancing to the same tune. Crafty Trout Brewing Co., another local gem, favours crafting their own unique flavours without following the influence of trends. While known for their porter and two wheat beers –one light and one dark – they also offer seasonal releases. Recent specials include an alcoholic ginger beer and an American pale ale. And for those curious about their next innovation, a uniquely smoky lager is in the works.

But Crafty Trout isn't just about beers. Their ingenuity has led them into crafting hop bath bombs, hop bath salts, and even hop tea bags due to an excess of hops. If that doesn't set them apart, they also boast an all-female team, a rarity in the heavily male-dominated brewing scene of New Zealand. Try their brews on tap in their quirky fishing lodge style eatery, complete with a welcoming Bavarian-style atmosphere. Grab a pizza or a loaded beef schnitzel – great for soaking up a brew or two.

new chef takes the helm at Bistro Lago

One of Taupō’s top dining experiences is set to become even more of a favourite, with Bistro Lago at the Hilton Lake Taupō welcoming a talented new executive chef. Christchurch-born chef Hamish Neale, who has more than 30 years’ experience in international restaurants, now brings his expertise and passion to Bistro Lago. With its cosy fireplace dining and unsurpassed lake views, and chef Neale’s specialty flair, this dining spot is sure to impress for brunch, lunch, or dinner – or even a decadent afternoon tea.

Since joining the Hilton team, Neale has introduced specially curated menus, including the new express lunch and brunch menus, and reinvigorated lunch and dinner offerings. He also plans to introduce even more enticing specials, such as the latest wine and cheese nights in the Hilton’s Cellar Lounge.

The internationally trained chef’s cuisine has been heavily influenced by cultures such as India, Korea, and most recently China. Neale has flexed his culinary muscles as executive chef for high-end venues, most recently at Grand Hyatt Beijing, re-opening the world-famous Made in China restaurant. “After 16 years experiencing the wonders of Asia, I have chosen to return to New Zealand, bringing with me all the influences and flavours that these vibrant food-based cultures have to offer,” says Neale. He describes his cooking style as “very relaxed, with simple techniques that are executed well with good quality seasonal ingredients”. Diners can expect to see this diversity of flavours and cultures well represented in his culinary creations.

a warm, country kitchen feel; a haven tucked away from the hustle and bustle of the busy city. The food he aims to be known for here in Taupō is welcoming and heartwarming, with a home-cooked, nourishing feeling. Neale wants to bring these authentic recipes to life in Bistro Lago, utilising the beautiful, locally sourced ingredients that New Zealand is famous for and sneaking little hints of Asia into the dishes. Paired with the delightful setting at the charmingly historic Hilton, dining here will be a must-do experience for locals and hotel guests alike.

The WOW e�ect

Two-time World of WearableArt Supreme Award Winner and full-time painter, Kate MacKenzie is a multidisciplinary artist based in Hawke’s Bay. She sits down with Abby Beswick to discuss how WOW has impacted her career, what inspires her, and her hopes for the future of art in New Zealand.

How did you become an artist?

As a child I showed the qualities of an artist. I was very curious and creative but back in those days at school it wasn’t really considered a good career choice, so I never really pursued it. That part of me got hidden or pushed down and I think for the first part of my career I made decisions with my head rather than my heart. I went into accountancy.

One day in my mid-30s after I’d had my second child, I said to my hubby, “I feel like I’m maybe in the wrong career.” He brought home the phone number of a lady who did art classes

at night and that’s where it all started. When you discover you really love something, that’s when tenacity kicks in.

What inspires you?

I’m always experimenting with painting, portraiture and other materials. My art is inspired by politics, humanity, what’s happening in the world, technology and how it’s changing the way we think. It’s always about my concerns for the world. I’m one of those people who likes to think there’s always a solution to a problem, so my work is about searching for answers.

You've been very successful at WOW. What has that experience been like?

I’ve entered WOW eight times and have been honoured to win a number of awards, including the Supreme Award twice. My first entry in 2013, titled Hay Daisie, was awarded third place in the Open Section. It was a really big boost for me.

The following year I was incredibly proud when my two-piece entry, Poly Nation, won the Supreme Award. I was inspired by a suitcase I found in a second-hand shop and the garments tell the story of pioneer immigrants coming to NZ.

Last year I was in shock when I won the Supreme Award again, for my entry Wanton Widow. The garment is made from a repurposed china cabinet and antique Singer sewing machine drawers and tells the story of a widowed seamstress in the Victorian Era. I didn’t really know how special she was until I saw her onstage. When they named the winner I felt like it was an out-ofbody experience. But the win is the icing on the cake. I don’t do it to win or get a prize; I do it because I love it. How has WOW impacted your career?

It’s definitely increased my profile. There has been high demand for my paintings and I have been asked to judge more local art competitions, including a public commission. It was also very validating because I think I wanted to prove to myself that it wasn’t a fluke the first time I won the Supreme Award.

What advice do you have for young artists?

Winning awards is great for artists, but it's not the be all and end all. What's more important is the artist stays true to themselves and enjoys what they do. That’s really important because things can get tough. I think creatives need to come back to their core reason of why they’re doing it and that will give them resilience to keep going. It’s also a good idea to have another career to go alongside it. What are your aspirations for art in NZ?

I think there need to be far more art awards. There are very few competitions that we can enter into. I’ve always felt NZ needs to value the arts more. Art is so important for humanity and our wellbeing. I think some people think it’s unnecessary but it speaks to so many people.

A journey to home ownership

These days, first home buyers are faced with saving for larger deposits, tighter lending rules and higher mortgage rates, making the journey to home ownership seem harder than ever.

Despite the affordability pressures, this group of buyers in NZ have maintained their strong market share, reaching a record high of 25% over the first half of 2023, according to latest statistics.

We speak to one couple who managed to turn their dreams of home ownership into reality.

A NEW PRIORITY

Taupo’s Sarah and Brad Davidson are ecstatic to have finally bought a home, and the feelings of security, stability and excitement that come with it. The couple, both in their 30s, started their journey to home ownership two years ago when the owners of their rental told them they were putting the house on the market. While they had been considering buying a home, losing their rental was the trigger for the couple to make it a top priority. “It was something we thought of doing but it was just never a priority for us. It is difficult and it is expensive, but we also had other priorities, like travel,” says Brad.

UPS AND DOWNS

The couple were ready to take the plunge but it wasn’t the right time financially. As they had both recently started jobs that were largely commission-based - Sarah in real estate and Brad as a car salesman - the bank wouldn’t approve a loan until they had built up a history of earnings.

A year later, they found themselves in the same position, when their second rental home went on the market. “Two houses sold from under us - we just didn’t want to be in that situation again. It really prompted us to put things into action,” says Sarah. Now with a history of earnings, the couple were finally approved for a mortgage.

THE SEARCH

The couple set themselves a budget of $600k, hoping to find a house with three bedrooms and a garden in central Taupo. They viewed five properties and it was the last one - a 1960s renovated cottage - that stole their hearts from the start, says Sarah. The 98 sqm home boasts four bedrooms, and a generous garden with established fruit trees. “It’s absolutely beautiful.”

THE RIGHT PRICE

The property was listed with a fixed price of $649k and as there were several interested parties, it was a multi-offer situation. However, on the morning the offers were going to be presented, both other parties pulled out. Ten minutes later, the Davidson’s offer of $630k had been accepted. The couple were able to use their Kiwisaver earnings of just over $100k for the deposit. However, because their combined annual income sits above the $150k threshold, they were disappointed to learn they weren’t eligible for the First Home Grant.

AN INCREDIBLE FEELING

Securing their own home means an end to renting, to having their home sold out from under them, and it’s a new start, say the couple. “Our weekends now are spent dreaming and scheming of what we can do and how we can make it our own. We’re just excited. This is really going to be a forever home for us,” says Sarah.

ADVICE TO OTHERS

The Davidsons advise other first home buyers to have a budget - but leave room for flexibility. “For just a few thousand extra, when we expanded our search just beyond that $600k it opened up so many more properties,” says Brad. It was a small difference in mortgage reayments and well worth it to get the property they really wanted , he says. Having a great team around you, including a mortgage broker and lawyer, can also make a huge difference to the buying experience, say the couple.

Lemon & Pesto Orzo with Pea & Sundried Tomato

There’s something about the combination of lemon and herbs that just embodies spring. This orzo is coated in a sauce featuring a whole lemon for an intense zesty flavour - mellowed out by herbs, peas and a little cream. It tastes great warm or chilled; making it perfect for lunchboxes!

SERVES 4

• 25g butter

• 1 large red onion, chopped

• 2 cloves garlic, finely chopped

• 1 large lemon (skin on), chopped

• 1L chicken or vegetable stock

• 250g orzo pasta

• 200g frozen peas, defrosted

• 50g sundried tomatoes, plus 1 tbsp oil from the jar

• ¼ cup cream

• 25g parmesan, finely grated (plus extra to serve)

• 2 tbsp basil pesto (plus extra to serve)

• 1 tsp salt

In a large saucepan, melt butter over medium heat. Add onion and garlic, and cook for 4-5 minutes, stirring occasionally, until starting to brown.

Add lemon and cook for an additional minute. Add ½ cup water, then remove from heat and use a stick blender to blend until almost smooth.

Meanwhile, bring stock to a boil in a large saucepan. Reduce heat to a simmer, and add orzo. Cook for 5 minutes or until al dente. Remove from heat and drain.

Add drained orzo into the pan with the lemon sauce, along with the peas, sundried tomatoes and oil from the jar, parmesan, pesto and salt. Stir through, and heat until the parmesan has melted.

Serve hot, with an additional sprinkle of parmesan and a few dollops of pesto.

Kids’fun

We’re going around the world this spring! First up, we’re celebrating Diwali, the Hindu festival of lights, with some do-it-yourself paper lanterns. Bright, colourful and fun to make, these will be a hit for the whole family. Next, we’ve been inspired by Mexico for our recipe with a tasty, sweet twist on a Mexican food classic - dessert tacos.

D-I-Y Diwali lanterns

What is Diwali? Diwali is India’s biggest holiday of the year. It celebrates the symbolic victory of light over darkness and good over evil. Diwali is celebrated by millions of people all over the world, lighting up their houses with lanterns and decorations, with feasts and music, and family get-togethers. This year, Diwali falls on the 12th of November. Why not get your family together to bring some light into your lives with these easy do-it-yourself lanterns!

What you’ll need:

» Sheets of different coloured paper

» Coloured marker pens

» Glitter glue

» Ruler

» Glue stick

» Scissors

» Battery-operated tea light

How to…

1. Cut one sheet of coloured paper to measure approximately 30cm long by 15cm wide. Set extra paper strip aside.

2. Draw some decorations on with your markers, like pretty flower shapes or cool patterns.

3. Fold paper in half vertically with decorations facing outward.

4. Cut a slit on folded side of paper approximately 5cm in from the outer edge.

5. Repeat step 4 along the full length of folded paper, creating slits approximately 4cm apart.

6. Unfold paper and place horizontally.

7. Cut 2 pieces of a different coloured paper approximately 2.5cm by 30cm wide.

8. Glue the new paper strips to top and bottom edges of your decorated paper.

9. Add glitter glue designs to the new paper strips. Let all glue steps dry for 3 to 4 hours.

10. Glue edges of the coloured paper together, creating lantern shape.

11. Glue on the extra paper strip from step 1 to create the lantern handle.

12. Place battery-operated tea light into your lantern. Turn it on and enjoy!

Dessert tacos

What you’ll need: For the pancake batter

→ 1 cup or 150g self-raising flour

→ 2 tbsp white sugar

→ 1 cup or 250ml milk (or soy/ rice milk)

→ 1 egg, lightly beaten

→ 30g butter, melted (or margarine)

→ 1 teaspoon vanilla extract

→ ½ tsp finely grated lemon zest (optional)

How to…

1. Sift flour and sugar into a medium-large bowl. Make a well in the centre of the dry ingredients.

2. Add the lemon zest, milk, egg and melted butter/margarine and whisk to combine.

3. Heat a large nonstick frying pan over medium heat and grease lightly with butter or oil.

4. For each pancake, place 2 tablespoons of batter into the pan. Keep the pancakes thin, no more than half a centimetre thick, so that they can still be folded into the taco shape once cooked.

5. Cook for 2 minutes or until bubbles form on the surface. Turn and cook for a further 1 to 2 minutes, or until pancakes are cooked through.

6. Remove the pancakes from the pan and place into a taco holder to make the taco shape.

Fill with your choice of fillings, serve, and enjoy…

To make it in the middle of the road at dawn, I had to get up early and drive a considerable distance to wait for the sunrise on a frosty day (you can’t see it in the photo). The adventure appears to be the goal in and of itself, yet every life milestone is really a pit stop. It's good if this stop is for something wonderful!
