Here’s to summer As we head into the holiday season, a shared love of food and togetherness unites us all. It’s that glorious time of year when the delicious smells waft over from the barbecue next door and you hear the echoes of laughter, as we
all enjoy our own family traditions and take a break from the daily grind. Like fish and chips on the beach, the great Kiwi summer road trip is a New Zealand institution. Surrounded by the ocean and home to an abundance of lakes and rivers, you’re never far from the water, and I can’t wait to discover a few new hidden gems when my family and I embark on our roadtrip holiday this year. If you’re planning on making the most of our waterways this summer, head to page 29 for expert tips on keeping your family safe. And we highlight the incredible work by volunteer surf lifeguards around the country - page 30. In this special issue, we also speak to trail-blazing Rotorua Mayor, Tania Tapsell (p14). One of the youngest Mayors in NZ, Tapsell is also the country’s only known Mayor to give birth while holding office, and the first Maori woman appointed to the role in Rotorua. She discusses the highs and lows of her first year in office and aspirations for her beloved city. For the foodies, chef Olivia shares some exciting ways to add creativity and flavour to your salads. Enjoying the sunshine and all the Taupō District has to offer The sun is out, the sky is blue, and the Taupō District is ready to put on a show! We can’t wait to see the population swell over the summer months. Not only is it great for our local businesses but it’s a wonderful time for people to get out on the lake, hang out on the lakefront, grab an ice cream, or sit in one of our fabulous local eateries. Our local communities have certainly been preparing for an influx of visitors over the next few months. There are so many choices and ways to get out and about to visit some of the wonderful holiday spots in our district. We’ve got so many hot events coming up! Securing Supercars 2024 Taupō SuperSprint has been such an awesome achievement, not only for our district but for the wider Waikato and Bay of Plenty Regions. We are delighted to be able to welcome Supercars fans from near and afar to enjoy this amazing weekend.

A much-anticipated institution in Taupō, the Summer Concert, is back in January and the lineup once again looks amazing this time around. I hope to see you all there bopping away to your favourite tunes. Remember to slip, slop, slap and wrap! We recently held the 2023 Mayoral Community Awards, celebrating an abundance of special groups and individuals in the Taupō District who make a huge contribution to their community and those in it. The awards were a time to formally recognise some of those wonderful people who work behind the scenes, doing unpaid voluntary work over long periods of time to improve community wellbeing. The response for nominations was overwhelming and I was delighted that people took the time to recognise those individuals who really are the backbone of our community. As you can see, the Taupō District is the place to be this summer. We can’t wait to share our award-winning beautiful spaces with everyone and look forward to seeing you here!

On 10-11 February, the UCI BMX Racing World Cup, proudly sponsored by Rotorua Lakes Council, will be taking place at Waipa. This World Cup will bring the world's best BMX racers to our city and will be a key event leading up to the 2024 Olympic Games in Paris. For endurance fanatics, the Tarawera Ultramarathon on 1718 February is not to be missed. We have a fantastic course that showcases the best of our stunning natural landscapes. In 2024 we’ll also be celebrating Crankworx 10th Anniversary. This iconic mountain biking festival puts the adventurous spirit of Rotorua on a world stage. We’re privileged to have hosted this event for 10 years and look forward to many more. We hope you get to enjoy all that’s on offer in Rotorua. A flourishing small Taupō business– ‘Forage’ - owes its existence to the first covid lockdown, an exotic looking mushroom and a dynamic young couple up for a challenge. Three years ago Ben Thomas and partner Hattie Maclennan, then in their mid-20s, never dreamt they would be living in Taupō producing highly valued phoenix oyster mushrooms in commercial quantities for wholesale and retail markets around the North Island. When covid struck in 2020, the couple left Auckland and headed to Waimarama in Hawkes Bay. Hattie was able to work remotely for her Auckland recruiting agency employer. Ben had left a job in project management and “with a mind going crazy and a lot of spare time” wondered how he was going to achieve a long-held goal of owning his own business by the time he turned 30. When he came across information about a high returning speciality wood-based mushroom his interest was piqued. The mushrooms are rich in vitamins and minerals with cholesterol lowering and other health benefits and are prized by chefs for their culinary value. Ben understood the science behind the growing, thanks to a degree
in Applied Science and Design for Technology. He ordered a “grow at home” oyster mushroom kit and became fascinated at how quickly and easily the mushrooms grew, with no fertiliser or added chemicals. After further research the couple decided to start their own commercial venture. Ben had grown up in Taupō, and its central location and an absence of growers within a 200-kilometre radios made it a logical base for the business. In November 2021 the couple purchased a four-hectare bare block just north of Taupō. Over the next 14 months despite on-going issues and delays due to covid, they gained resource consents and completed earthworks and landscaping. They also relocated a 600 square metre shed to house the business and a small transportable home on to the site. “It was a massive learning curve. We had a huge to-do list and wondered multiple times if we’d bitten off more than we could chew,” says Ben. The shed was completed in March 2023 and the couple started
production the same month. Marketing was done through social media, word of mouth and door knocking at restaurants around the area. National distributor, Bid Food, supplies wholesale and selected North Island retail outlets and production and demand have already surpassed 18-month projections. Grow Your Own Your Own mushroom kits are also available on-line from www.theforage.co.nz and from selected retail outlets. The couple employ a full-time staff member along with a handful of casual workers who help process and package the delicacies. Ben continues to multi-task as grower, researcher, marketer, designer, salesman and floor sweeper and Hattie looks after administration and invoicing. The name ‘Forage’ came about during a brain-storming session with friends over a couple of wines. Ben says ‘Forage’ stood out as “something nostalgic and back to nature” – and leaves them open to explore other growing opportunities. Watch this space!...

– Rotorua’s new Mayor knows there’s plenty of work to do in her beloved city, but even as one of the country’s youngest Mayors, she’s proved she can stand up, speak out and get things done. Tania Tapsell explains why this role means so much to her, her aspirations for Rotorua and why she’s never looked at age as a determination of wisdom or maturity. – What was your childhood like? I grew up in Rotorua and my family have been here for many generations. I come from a humble neighourhood and was raised in a large, hardworking family - I’m the eldest of six children. When did you first become interested in politics? I was in the city’s Youth Council at 14 years old. I wanted to become involved because I had seen a lot of issues in our city and a lot of opportunities, if we had the right advocacy. For example, I saw inequities around the level of 14
council services and care in lower socioeconomic areas like ours. In my ambitious, youthful thinking I became determined to try my best to change it. Youth Council was such a great opportunity to learn more about what council does and it was through that I realised the important work and impact that a council has on the community but I also felt at the time that the decision makers needed to better reflect the community that they represent. That gave me the drive and motivation to stand for council when I was 21 years old.
What did you do when you left school? I left school at age 16. I knew I wanted to get into politics and study business and I had heard about a Diploma in Business at the local tertiary institute, Waiariki Institute of Technology. I was very fortunate that they gave me the chance as a school drop-out to be accepted into the programme. Often I look back at that and I’m very grateful that they took the time to consider me even though I didn’t have the appropriate NCEA qualification, but they could see that I was driven and would be committed. I then completed a Bachelor of Management Studies through the University of Waikato. Tell me about your journey to become Mayor I was elected to the Rotorua District Council at age 21 and went on to become Mayor at age 30. I am one of the youngest Mayors in NZ and the first Māori woman to be appointed Mayor in Rotorua. I think what was crucial in my success in becoming Mayor was I had taken the time to learn the ropes. I spent nine years being a councillor and proving to the community that I was not only capable but I was dedicated. Even though I was only 21 when I came to the table, and a few people had been there longer than I had been alive, I decided that I would work
so hard that nobody could question whether I was capable or deserving of being there. That’s a value and a mentality that’s served myself and the community well in terms of the progress I’ve been able to make as Mayor. What personal qualities serve you well in this role? I’m often asked how I overcame the adversity of being so young when I joined the council. I like to remind people what makes you different is not your weakness, it can be your greatest strength. I also have a strong work ethic. We pull some long hours and I’m often the last person leaving the building. Honesty and transparency have always been important to me and I think it’s great we’re seeing this reflected in the new generation of politicians. My top value that means the most to me has been helping others and that’s a value that I always come back to when I’m having to make hard decisions.

What have been some highlights so far? I’m a real people person so one of my favourite parts of the job is being able to use my success as a pathway to help others. Being able to make meaningful and positive change for the community has been a highlight. There’s no doubt our region and country are facing a number of crises but having the ability to plan for and deliver a better future makes this an important job and one of the greatest honours of my life. Some stand-out projects during my time in council include, delivering kerbside recycling, and other environmental projects such as converting the council building to geothermal energy and switching all streetlights to LED. Perhaps the most meaningful change has been reversing the damage caused by emergency housing motels. We had an explosion of crime and social issues as a result of them and through advocacy we’ve significantly reduced the use of motels and as a result have seen our economy boom, back to pre-Covid levels.

You’re one of the only Mayors in NZ history to give birth while in office. How are you enjoying your new role as a mum? I chaired my final council meeting before going on maternity leave and the very next morning I went into hospital to have my daughter so it was very efficient! We gave her a unique name - Kahumoa. It translates to ‘most distinguished cloak’. We’re very in love with her. I took one month off but in all honesty I was doing Zooms and calls after two weeks - the work never really stops. I’m extremely lucky to have such a supportive husband, Kanin, who is taking time off work to be the fulltime carer. He loves spending time with her and being able to care for her and support me in my role as Mayor. I enjoy popping home on my lunch breaks to spend time with them and break up the seriousness of the day. What are your aspirations for Rotorua? It’s such a special place. It’s got one of the most unique natural environments in the world, with 16 lakes, a forest and our beautiful geothermal. People travel from all over the world to visit us and I want us to also be just as proud of our city as a destination as we are of it as our home.
What’s something people might be surprised to know about you? Prior to the pregnancy I had been running with the local athletics club and had just finished a half marathon. It’s a personal goal of mine to put the sneakers back on and complete a full marathon. So I look forward to ticking the boxes of Mayor, mum and a marathon runner. I’m also a huge Harry Potter fan - I love the books and movies and my handbag that I take to meetings is the Harry Potter bag. It’s always funny finding other fans who recognise it!

If ‘variety is the spice of life’, as the old saying goes, a journey from the mountains of the volcanic plateau to the Bay of Plenty’s east coast is a must-do this summer. The road trip from mountains to ocean via Lake Taupō and Rotorua is around four hours by car, taking you from spectacular mountainous terrain past the southern hemisphere’s largest freshwater lake, through active thermal areas and on to glorious golden sand east coast beaches. Allow a minimum of three days to soak up the scenery and sightsee, enjoying memorable adventures along the way.
Based in National Park, Tongariro Crossing Shuttles organises pick-up and drop offs for hikers doing the world renowned Tongariro Alpine Crossing. The trek is rated New Zealand’s top one day hike and one of the best in the world. It is 19.4 km long and takes between six to eight hours, with breathtaking views and some challenging climbs. The volcanic alpine landscape is dominated by Mt Ruapehu, Ngāuruhoe and Tongariro, taking you past spectacular crater lakes, steaming vents, alpine vegetation and old lava flows. Tongariro Crossing Shuttles offers a return 20
service from National Park timed to give customers the flexibility to do the full day long trek at their own pace. The company also caters for visitors wanting to do the Tongariro Northern Circuit, one of New Zealand’s Great Walks or shorter walks in and around Whakapapa Village. Leave the mountains and head to Taupō where a visit is not complete without a lake trip. Chris Jolly Outdoors offers a full range of boat charters and fishing trips for every occasion. Daily 90-minute scenic cruises leave from Taupō harbour at 10.30am, 1.30pm and 5pm motoring around the northern shoreline past Acacia Bay to the renowned Ngātoroirangi Māori carvings that can only be viewed from the lake. A carving of esteemed tohunga (priest), Ngātoroirangi, is sculpted into the cliff-face 14 metres above the lake, along with 26 smaller sculptures down to the lake edge. Learn about the history of Lake Taupō and the carvings and enjoy views over the lake from outdoor viewing platforms and indoor lounges on the roomy 52-foot catamaran, Cruise Cat. Home-made muffins and a hot drink are included in the morning and early afternoon sailings. Guests can watch a trout
being landed on the 1.30pm sailing, and on occasion are treated to smoked trout on crackers. Parasailing in the main bay offers a birds-eye view over the lake to the mountains. Up to three people can be accommodated - sharing the experience of being lifted off the back deck of the parasailing boat to soar through the air above the lake.

Hear tales about the island’s history – its importance and long connection to the Ngāti Awa people, unsuccessful whaling ventures and rock and sulphur mining. The tour includes a visit to Moutohorā's hot water beach at Ōnepu (Sulphur) Bay where visitors can enjoy a swim and dig beachside pools to relax in the warm geothermal waters. Back on board, enjoy a circumnavigation of the island and a visit to the resident fur seal colony. The tour blends adventure and relaxation with an ecological experience suitable for all ages and family groups.
Head from Taupō to Rotorua and take a quick detour to one of the country’s most innovative adventure parks - Velocity Valley - at Ngongotaha. There’s a range of adventure activities from jet boating, giant sky swing, flying wind tunnel and the only pedal powered monorail track in New Zealand. Activities are suitable for all ages, four-years-old upwards, from novice to experienced adrenaline seekers. Buy a multi ride package and choose what you want to do. 2. Beach safety Even strong swimmers can be caught out by dangers such as rips, waves and unexpected changes in the depth of water. Before leaving home check the Metservice or another similar website for the latest tide times and conditions to help plan your day. At the beach speak to the surf lifeguards about any dangers and familiarise yourself with the swimming area. Remind your kids to stay between the flags as this is the safest place to swim on the beach.
3. Check for hazards Playing in and around lakes, rivers, the ocean and even swimming pools can have dangers, so an awareness of your environment and any potential risks will help keep your family safe.
Check your surroundings before entering the water so you’re aware of any no swimming signs, or hazards such as rocks, fallen trees or floating debris. Water depth is one of the biggest hazards for small children. If you want to jump into the water from a height, check the depth and get a trusted adult to go first.
4. Get swimming lessons The best thing you can do to protect your child from the dangers of water is getting them swimming lessons. Learning how to swim will give your children confidence in the water, teach them formal swimming strokes and equip them with survival skills to instinctively keep themselves safe if needed.
5. Educate your children Make sure your children are aware of the dangers of water. Talk to them about how to keep themselves safe in the water. Explain how to be mindful of others, for example checking no one is nearby before jumping into the water, don’t play games where someone could get hurt or pushed under water and what to do if they see someone in trouble.

Mt Maunganui Surf Lifesaving Club is gearing up for a boomer summer.
O
n the back of success at national events the club is hosting a number of major surf lifesaving tournaments on the main beach this summer. They include the Eastern Region Senior Championships (January 26 -28), Oceans Junior Festival of Surf ( February 22-25) and the 2024 SLSNZ National Championships in March 14-17. The club’s achievements come on the back of three challenging years. Covid impacted hugely on activities in 2020 and 2021, followed by one of the worst summers on record last year in the Bay of Plenty. Mt Maunganui took top honours in the 2023 TSB New Zealand Surf Life Saving championships for the 9th consecutive year. The club also won both the 2022 and 2023 Pool Rescue Championships, making it a clean sweep in the pool and on the beach. Head coach for the past 20 years, John Bryant also won Coach of the Year title at the 2023 National Awards of Excellence at Te Papa in September. The 59-year-old was acknowledged for his “outstanding success” at club level, his work with athletes and officials at other clubs and for developing the sport and fostering a positive lifesaving community.

John says having “awesome kids to coach and a great team of officials and volunteers” keeps the job fun and rewarding even in the toughest of times. “We could have easily lost half our membership during covid, and the work done behind the scenes by everyone was pretty massive.” The job involves long hours and a willingness to take on many roles from manager, physio, health and career advisor to taxi driver. The 46-week annual programme starts in May with a mix of running, swimming, board and ski paddling activities in preparation for SLSNZ national and international events.
Health and safety are key. “The ocean is unpredictable and you have to ensure athletes are put into conditions that they can handle,” says John who joined the St Clair Lifesaving Club in Dunedin in his early teens. John is always on the look-out for new tips and techniques – taking time out on an overseas holiday in September to sit in on a jet ski course in Hossegor in France run by a team from Hawaii. “I love seeing people do well in whatever they are trying to achieve
whether it’s winning an event, setting new personal bests or just learning a new skill for the first time.” Eastern region sport manager Sonia Keepa says the club’s achievements have given everyone a boost. “Our clubs and people like John have worked really hard over the last year to engage with members, retain the and build a positive, resilient culture “Bay of Plenty is a fantastic holiday destination and we’re looking forward to an exciting busy safe summer on the main beach with everyone swimming between the flags,” she says.

Recently appointed executive chef at Millennium Manuels Ameya Deshmukh is bringing more than a touch of international flair to the dining experience at the Taupō lakeside hotel. Ameya took charge of the kitchen at Millennium Manuels earlier this year. His passion for fine ingredients and international cuisine is reflected in the new breakfast, lunch and dinner menus at Beach 243 and Edgewater restaurant.

After winning a scholarship, Ameya spent his formative years as an apprentice with luxury hotel company, The Oberoi in Jaipur, India. He went on to work in Abu Dhabi and Dubai for Michelin chef Marco Pierre White restaurants in various positions. This was followed by a stint in the Maldives at the Park Hyatt where he oversaw the resort's signature restaurant. He then moved on to work for luxury German hotel company Kempinski in Saudi Arabia and Dubai in senior leadership roles. During covid, Ameya joined a food and beverage retail company overseeing 12 restaurants in the United Arab Emirates as culinary head. He says the decision to relocate to New Zealand with his wife and 15-month-old-daughter, Idaya offers more balance between work and family lifestyle. “It may sound a bit cliched, but living in such a beautiful country with so much fresh produce on offer is an absolute treat for any chef, and I am no different."

Beekeeping - commercial and hobbyist - is on the rise in New Zealand. The number of registered hives has climbed from 500,000 in 2014 to 632,000 in 2023, according to the Ministry for Primary Industries. In particular, it seems more and more Kiwis are taking up this hobby, with 75% of all registered beekeepers in the country owning less than 10 hives. But how easy is it to make your own honey and why is there such a wide interest in it?
The benefits of bees It’s a well known fact that bees are essential to people and the planet. Each year these busy workers pollinate billions of plants and in doing so play a key role in every aspect of the ecosystem. The movement of pollen between plants is necessary for plants to fertilise and reproduce. So without them, many plants we rely on for food would die off. 36
Bees also provide us with honey, which has a huge range of uses, from a natural sweetener, to medicinal uses and beauty treatments, as well as a number of other products including, royal jelly pollen, beeswax, propolis and bee venom.
Threats Bee populations have plummeted around the world in recent years, with pesticides, pollution and habitat loss all contributing to the decline. In NZ, thousands of bee colonies have been lost recently, largely due to varroa mite infestation. This mite was first detected in NZ in 2000 and has since spread throughout the country. These tiny parasites mainly feed and reproduce on bee larvae and pupae, causing weakening of the bees and transmitting viruses. Left untreated, varroa can quickly spread throughout a hive and eventually kill the colony. Beekeepers use a number of effective methods to control and prevent varroa mites in their hives.
How to become a beekeeper If you’re interested in becoming a beekeeper, you’re not alone. Beekeeping is a popular pastime in NZ, with a growing number of people setting up backyard hives and reaping the sweet rewards.
For many people, beekeeping comes from a desire to grow their own food, while others simply want to learn more about these fascinating insects. Whatever your reasons, there’s a lot more to this hobby than simply setting up a hive in your garden. Looking after hives and extracting honey is a complex process that requires education and experience. The best way to get started in beekeeping is to visit a beekeeping club or learn from someone experienced. It’s particularly important to learn about: looking after bees, keeping bees from pests and diseases, food safety and legal requirements. A life with bees Taupo man Chris Giddens has worked in the commercial bee industry for more than a decade and can’t imagine doing anything else. Giddens stumbled into beekeeping at age 16 when he left school. The teenager asked for a job at Tweeddale’s Honey in Taihape - one of the biggest bee companies in NZ. He first got a job in the extraction plant, before moving onto other aspects of the business. Being active, working outside and developing his skills were a big attraction, he says.
Three years later, Giddens moved to Taupo and returned to beekeeping after a brief stint as a truck driver. His passion for beekeeping has continued to grow ever since. “The more I got into it, the more I learnt, the easier it got - looking after the hives, the processes and everything that goes into it. I do love bees.”
Giddens now works as a team leader at Smoking Joe’s Honey where he looks after 1300 hives. He’s also a hobbyist beekeeper, with 60 hives at home, which produce Manuka honey that he sells and gives away to happy family and friends.

Stagecoaches and simplicity In the early 1970s, Cobb & Co. caused a stir when they opened inside hotels around New Zealand. The affordable menu offered family favourites alongside an immediately endearing stagecoach theme, which proved to be a recipe for success. By the 1980s, the chain had reached an impressive 37 restaurants around the country, including Taupō, each
fitted out with the now-iconic swinging red saloon doors. Birch remembers his sister working in the Taupō restaurant during that time, and being impressed by the modern, well-organised kitchen and use of new technologies to improve service and efficiency. In fact, Cobb & Co. were one of the first restaurants in New Zealand to start using computers, even including a usable floor map of all tables. Business confidence grows post election Abby Beswick
Optimism among local business owners has increased since the election, with owners saying they feel more hopeful about the future following National’s win. The National Party will lead the next Government after gaining 38% of the party vote, and 48 seats in Parliament. Business advocates and owners say there are positive plans for growth in the tourism sector from the new Government. Now it’s a waiting game to see if those election promises are delivered on. Casey Brunsdon, who owns Lil Something café at recently renovated Taupō Airport and a café at Spa Thermal Park, says the new Government signals hope for 40
positive change. Brunsdon has faced a number of challenges through Covid. Things have picked up since New Zealand’s international tourism market reopened, and he expects the new Government will keep building on this. “Personally I’m happy having a party back in power that has a tourism focus,” he says. Incoming Prime Minister Chris Luxon understands business and is focused on driving business forward, says Brunsdon. “He’s pretty clear on what needs to happen and what needs to

change. It’s quite exciting if we can have a plan and actually have people held accountable.” While Brunsdon is feeling more optimistic about the future, there are plenty of areas that need to improve to boost the sector, he says. One key issue he’d like to see addressed is providing landlords with more support, to tackle shortages in the rental market. Taupō has a huge pool of properties listed on websites
The Rotorua Business Chamber has more than 500 members, ranging from small to big businesses in the region. CEO Bryce Heard says prior to the election there was “a good deal of despondency in the business community”. Since the election however, the mood has changed, says Heard. “Already you can see that people are engaging positively, and they seem to have a weight taken off their shoulders.” What owners need now, is the Government’s support so businesses can flourish and drive the economy forward. “That’s a big issue for businesses - to know that Government’s got their back and will help to encourage measures to create wealth.” Wages have moved ahead of income so sensitivity around that is important, and getting the economy back to an equilibrium, says Heard. A positive change in this area would help business owners secure the workforce they need, he says. Owner of Rotorua’s Redwoods Treewalk, Bruce Thomasen is also feeling more optimistic since the election. “I think the tourism industry is in a good space. We
are a high employee industry and we need Government support to really maximise this value and this opportunity. The country is seeing the demand for this part of the world is improving and is there,” he says. Housing availability for rental and purchase and a lack of flight connectivity are key issues for Rotorua, says Thomasen. Flights between Rotorua and AucklandWellington-Christchurch are not back to pre-Covid levels and it can be a challenge getting a flight at the time you need. Thomasen advocates for a jet air service between Rotorua and Christchurch or Rotorua and Queenstown that would better link the central North Island to the
South to provide more options for travellers. “That would be a goal that we would strive for.” Thomasen would also like to see a new approach to sustainable funding for tourism-related infrastructure rather than it being left to ratepayers. One approach used overseas, is a minimal visitor surcharge that’s paid by every visitor to the region as an add-on cost to accommodation and tourist attractions. This way the money is captured locally and spent locally, says Thomasen. “This is not just another tool to raise revenues, this is actually so that you can make some really regenerative and legacy spending for that community.” 41

The man tasked with turning out Taupō Motorsport International Park in pristine condition for the upcoming Repco Supercar Championship series in April (19-21) is no stranger to the world of Supercar racing.

General manager of the Taupō International Motorsport Park Martin Collins, has been in the job since December 2021, when the facility was bought by Gold Coast based entrepreneur and motor racer Tony Quinn.
Martin says Supercars is quite simply a “spectacular show” that remains the pinnacle of motorsport in south-east Asia with huge economic benefits for host regions. In his own words “there’s nothing bigger”.
He is down to earth and understated in his approach to meeting deadlines for the major event. But when he starts talking about what makes Supercar events such a big deal in Australia and New Zealand - his eyes light up. It’s hard - even for the initiated like myself – not to get interested.
He should know. After a successful stint in the 1990s as team manager for BMW Motorsport NZ, taking out seven consecutive New Zealand touring car championships, he was approached to set up a New Zealand team, Team Kiwi Racing, to compete in the Australian V8 Supercar championship.
“Everything in Supercars is driven by an utter desire to win that is not just about financial reward.” Martin says while competition is fierce, the camaraderie between teams is unbelievable. “There’s something about working and being around like minded people who are all wanting to win - but at the end of the day are all there for each other when things go bad or someone needs support. “It really just sucks you in on all levels.” “The whole idea was to compete at Bathurst in October 2000. We were thrown in at the deep end, it was a huge learning curve and the enormity of what we had jumped into soon hit us,” he recalls.
After five seasons with Team Kiwi he returned to New Zealand to take up a position with BMW setting up and running a European MINI Challenge series and doing BMW diver training in the off season.
At that time every State had Supercar rounds with as many as 40 cars on the grid and a host of dedicated passionate fans literally born with red (Holden) blood or blue( Ford) blood.
He relocated from Pukekohe to a new base at Hampton Downs, owned by Gold Coast based entrepreneur and racer Tony Quinn, as soon as it opened. A discussion with CEO Josie Spillane led to him taking a position in Taupō – a favourite holiday spot for the family - as operations manager of the Taupo Motorsport Park in December 2021 when Quinn purchased the facility.
He says to this day Supercars remain “next level” for competitors and spectators. “It is an aggressive exciting sport and the personalities are big and attract the fans which is all part of the drama.”

He is also a major shareholder of Supercars team, Triple Eight Racing that featured New Zealand star driver Shane van Gisbergen before his departure to Nascar in November. Martin was promoted to general manager of the Taupo motorsport park in 2022. He says after years in race management and development the job of bringing the facility back to the high standard required by the owner at each of his tracks offers a new challenge.
He lived on-site for five weeks when he started the job and used to walk the track in the evenings. “It has a really good feel and I always thought it was made for great things.”
He says getting the Repco Supercars Championship is icing on the cake and testament to Tony Quinn’s vision for the future of motorsport and the efforts of CEO Josie Spillane to secure the event. Martin and a small team made up initially of a head groundsman, two

ground staff, office manager, and a sales and functions manager were well into work on a development plan when the championship was confirmed in the middle of 2023. In pragmatic fashion he says the work timetable has just accelerated to meet the April deadline. That includes everything from upgrading safety related infrastructure and the track surface to on-going development and maintenance. Martin says the beauty of Taupo’s 3.4 km long international track are the technical sections and one very long back straight that could see Supercars reach speeds in excess of 250 km/hr. He says Tony Quinn sets very high standards for all his motor-racing tracks. Each of the tracks is based on the same model, and the ground staff at Taupo take great pride in keeping the track and surrounds looking pristine. That includes immaculate mowing strips on grass areas adjacent to the track. The work plan is going to schedule and Supercar officials who have made regular visits to the track in recent months have been full of compliments for the way it is presented. Under the contract, Taupo Motorsport Park provides the facility and Supercars run the event looking after everything from grandstands and corporate marquees to port-a loos.
Martin brought the BMW MINI Challenge series to the Taupo international circuit to race as a support category for the first A1GP meeting in 2006. He says the Supercar championship is not dissimilar in terms of audience and Taupo’s proven record hosting A1GP events has been a great selling point. Twenty four privately owned Australian Supercars will be competing in the Taupo event - which will include four to five support racing categories. Martin says although the teams are all Australian owned, kiwi drivers have taken out the championships for the last five seasons and there are a number of young New Zealand upcoming drivers which keeps the trans-Tasman rivalry alive. In the lead up to the Supercars championship there’s plenty of action at the motorsport park over summer with race meetings almost every weekend ranging from motorcycle, cars, and drifting to cruise events.

Nothing says summer like a barbecue, and nobody loves them more than us Kiwis. Ingrained in our DNA, it is the summer staple shared with friends and family all season long. But those long, hot summers can feel even longer when our bit on the side is the classic green salad on repeat. Time for some variety. We’re here to help dress things up this season and elevate your summer barbecue game with some creativity and flavour! Add a little zest to the sun-soaked season with our charred corn salad with feta, sriracha and lime, and try this new take on potato salad – flavoured with chorizo and tomato pesto - it’s sure to add some punch to your plate!

Charred corn salad with feta, sriracha and lime Serves 6-8 as a side
Potato & chorizo salad with sundried tomato pesto Serves 6-8, as a side
4 cups frozen corn kernels, defrosted
1kg potatoes, peeled and chopped into 3cm cubes
1 large yellow capsicum, core and seeds removed, diced 1cm
50g Spanish chorizo, halved lengthwise and sliced
1 large spring onion (white and light green part), thinly sliced
1 large stick celery, finely chopped
½ red onion, thinly sliced
10g fresh coriander, finely chopped (plus extra, to garnish)
¼ cup finely chopped parsley, plus extra to garnish
1 tbsp capers, plus extra to garnish
Large handful fresh mint, thinly sliced (plus extra, to garnish)
DRESSING
75g sour cream
2 tbsp extra virgin olive oil
50g mayonnaise
2 tbsp sriracha
1 tbsp lemon zest, plus extra to garnish
Zest and juice of 1 lime (3-4 tbsp juice and 1 tbsp zest)
1 tsp mustard
½ tsp salt
¼ tsp salt
100g feta, crumbled
SUNDRIED TOMATO PESTO

Lay the corn kernels over a clean tea towel and gently pat dry.

Heat 2 tsp oil in a large skillet over high heat. Add corn kernels and cook, stirring every now and then, for 7-8 minutes until nicely charred. Be careful as some kernels will explode. Transfer the charred corn to a bowl and allow to cool completely.

⅓ cup sliced sundried tomatoes, plus ¼ cup oil from the jar
¼ cup finely grated parmesan, plus extra, shaved, to garnish
2 tbsp lemon juice
2 tbsp pine nuts, toasted
4 large basil leaves, torn
When cooled, add the corn to a large bowl along with the capsicum, spring onion, coriander and mint.

In a small jug, whisk together the olive oil, sriracha, lime juice and zest, and salt to combine. Pour over the corn mixture and toss until well combined. Set aside a handful of feta for garnish, and toss the rest through the salad.
Place potatoes in a large saucepan and cover with water. Bring to a boil over high heat, then reduce heat to a simmer and cook for 15 minutes until tender. Drain and allow to cool completely.

Arrange the salad in your serving bowl and crumble over the feta. Sprinkle with fresh chopped coriander and mint. Serve at room temperature or chilled.
Heat a lightly greased frying pan over mediumhigh heat. Add chorizo and cook for 4-5 minutes, stirring often, until crisp. Set aside and allow to cool.

Meanwhile, make the dressing. Whisk together all ingredients until smooth and creamy.

To make the sundried tomato pesto, add sundried tomatoes, sundried tomato oil, parmesan and lemon juice to a food processor and blitz until a chunky paste. Add pine nuts, basil and salt, and pulse until the mixture is almost smooth.

Mix 2 tbsp of the sundried tomato pesto into the dressing.

To assemble, toss cooled potatoes with the cooked chorizo, celery, red onion, parsley, capers and dressing until well combined. Arrange on a serving platter and dollop over the remaining sundried tomato pesto (you may not use it all - save it for another use). Garnish with extra parsley, capers, lemon zest and shaved parmesan. Serve chilled. 49

Tip: If you turn a watermelon upside down, you should find a yellow spot, which is also known as the field or ground spot. A large, yellow spot indicates that it spent more time ripening on the vine and should be sweeter.
A day at the beach If you love building sandcastles at the beach, then try creating your own beach at home! This is a great boredom buster, rain, hail, or shine. Kinetic sand is a funky crossover between slime and playdough, with a grainy texture that doesn’t stick to hands - making it incredibly fun for all ages.

Mix 1 cup of clear washable PVA glue with ½ cup of water, then slowly add in the ½ cup of liquid starch. Stir until the slime starts to thicken and turn viscous. In a separate bowl add 1 cup of sand, plus ¼ cup of corn starch and the fine glitter (optional). To the sand and corn starch, add 1 tablespoon of dishwashing liquid, ¼ cup of water and your choice of food colouring (optional). Mix in until it forms a thick, sandy paste. Add in the remaining ¼ cup of corn starch and mix together. The mixture will form a crumbly texture. Combine a tablespoon of slime into a bowl and ¼ cup of sand mixture.

You don’t need much slime as a little goes a long way. 9. Using your hands, gently mix the sand mixture and slime until you have incorporated the entire sand mixture. 10. Now it’s time to play! Shape, slice, mould or stretch it for unlimited fun
Top Tips: One cup of slime will be more than enough to make several cups of mouldable sand, make multiple batches to create different colours. Store in an air tight container when the playing has finished, simply add extra slime to the sand to rehydrate it if need be.
