Celebrating one of our finest There’s nothing like chatting to a six-time Olympic medallist to put your life in a rather harsh perspective. At 32, Dame Lisa Carrington has achieved more than most of us will in a lifetime, and she’s nowhere near done yet. In this issue we catch up with her during a brief break in training as she strives for her next goals. It’s been an incredible couple of years for Carrington, which saw her earn the title of the country’s most successful Olympian, in addition to a raft of accolades, and get married. Turn to page 14 to find out what motivates this incredible athlete and her dedication to meet any obstacles put in front of her. Closer to home, it’s been a challenging time for many as the pandemic lingers on. We have plenty more happening in the cooler months as our Taupō Winter Festival approaches and a myriad of other events can again take place across the district. Plenty of other sports start again soon too, including basketball, hot on the heels of our Events Centre hosting three pre-season National Basketball League (NBL) games. Beautiful Whakatāne Kia ora koutou, We were absolutely thrilled to recently be crowned supreme winner of New Zealand’s most beautiful town or city at the 2021 Keep New Zealand Beautiful Awards. COVID-19 delayed the event and shrunk the gala dinner ceremony, but nothing could dull the delight of being acknowledged for all the hard work our council, Iwi and community groups contribute, to not only keep Whakatāne beautiful, but also to regenerate our diverse environment for the benefit of future generations. The supreme towns and cities award winner is chosen from all entries and is the judges’ top pick from an already outstanding set of finalists. Here’s what the judges had to say about Whakatāne: “This is always a very hard award to judge and this year was no exception. The towns and cities submissions were of an extremely high standard, and the virtual tours provided great insight into the amazing environmental initiatives that have taken place.” “Biodiversity is a huge focal point for those in Whakatāne. The community underwent a tree audit and created tree policies so that people have a better understanding of the value of trees and how their lifespan impacts us. They have also closed the gaps in understanding between rural areas and the township, bringing a tighter cohesion to environmental efforts. ame Lisa Carrington is pure power. Often called the Usain Bolt of kayaking, on the water she is known for being able to tap into her incredible strength, balance and focus to beat her opponents. Last year, Carrington became New Zealand’s most successful Olympian when she won three gold medals at the Tokyo Olympics — in the K1 200m, K1 500m and K2 500m (with Caitlin Regal). The haul increased her Olympic tally to a staggering six medals (five gold and one bronze). In this year’s New Year Honours, Carrington received a damehood for her services to canoe racing, and in February she was named sportswoman of the year and won the supreme award at the Halberg Awards.

Personally, Carrington has also been flying high. In March she married her long-time partner Michael Buck in a beachside ceremony in Ōhope. Sharing the news on social media, Carrington described it as the “best day ever”. So what’s next for Carrington, who at 32 has achieved more than most of us do in a lifetime. We sat down with
her to find out how she’s adapted to life after the Olympics, next goals and her passions off the water.
How has your return home since the Olympics been? It’s been busy. After returning from Tokyo I left MIQ and stepped straight into Auckland’s lockdown but that time at home saw my husband and I get our place ready to put on the market. We moved into our new home a couple of months ago and it’s been enjoyable getting set up. We also got married in March which was amazing.
How do you return to normal life after becoming NZ’s greatest Olympian?

What personal and professional goals are you now focusing on? I’m looking ahead to Paris 2024; training to qualify and getting better is now in full swing.
You’re an inspiration to young girls — what message do you most hope to give them? It’s important to find ways to enjoy what you are doing. The work won’t always be easy – if our goals are big then there will be hard work that goes in. Making that hard work enjoyable is vital.
We’ve had so many things to keep us busy – slotting back into daily life hasn’t been hard at all. It was so great to get back to Ōhope over summer once the Auckland border reopened – I missed it so much.
Congratulations on your marriage! How has married life been so far? Wonderful, thanks. We’re hoping to honeymoon later this year.
Highlights of your career todate? There have been so many, all of them special for different reasons. My Olympic campaigns are obviously up there. I’m very lucky to have such a brilliant team – sharing the wins with them makes the journey even more meaningful.
What do you love about kayaking? The fact you can always get better at it. I try to improve in some way, shape or form each day. Also I love

Roadside drug testing to start next year Abby Beswick
R
andom roadside drug testing will come into force from next year, to deter drug-impaired driving. The move follows the passing of the Land Transport (Drug Driving) Amendment legislation. The rollout of roadside testing is set to begin in early 2023 , and is an important step in preventing “unnecessary road trauma,” says Transport Minister Michael Wood. “Driving under the influence of drugs is a major safety issue on our roads, and this legislation shows that our Government is doing something about it.”
More than 100 people were killed in crashes in 2020 where a driver was found to have had drugs in their system, according to road crash statistics. Under the new law, police will have the power to conduct random roadside oral fluid testing to detect the most common illegal and prescription drugs used by New Zealand drivers, including THC (the psycho-active ingredient
in cannabis), methamphetamine, benzodiazepines (sedatives), MDMA (ecstasy), opioids, and cocaine. The regime also establishes new blood criminal limits and infringement thresholds for 25 impairing drugs. “These limits and infringement thresholds will determine whether a driver receives an infringement notice or is prosecuted for a criminal offence following an evidential blood test,” says a police spokesperson. Police expect to conduct 33,000 tests in the first year, scaling up to 66,000 tests by year three. Aotearoa Transporting New Zealand chief executive Nick Leggett strongly supports the drug testing regime as a positive step against a growing threat on our roads. “What we’ve seen is this significant rise in drivers of fatal accidents with some form of drugs in their system. It’s now eclipsed alcohol,” he says.

This legislation begins to address those concerns and to raise awareness, which is a win for safety. “If we are able over time to reduce those people with drugs in their system, we would hope to see a corresponding reduction in the road toll,” says Leggett. Over the next 12 months, Te Manatū Waka Ministry of Transport, New Zealand Police and Waka Kotahi will be working together on implementation of the new roadside drug testing regime. This will include developing guidance, processes and training for staff on how to administer oral fluid tests. The legislation complements other Road to Zero action, which includes investing $1.2 billion for road policing over the next three years. The drug driving regime will be reviewed after three years of operation.

The impact of masks on children Abby Beswick
M
asks have been a constant feature in schools during the pandemic. Previously, it was compulsory for all students aged eight years and over to wear a face mask indoors and on school transport. Under the orange traffic light setting, masks are now strongly encouraged at school and still required on school transport for students aged 12 and older.
Mask requirements were set up to protect children and the community from the spread of infection. As 22
COVID-19 lingers on and with common winter viruses making an unwelcome return, no doubt a lot of parents will continue sending their children to school in masks. But many are also asking: how are masks affecting our children? Parents have raised concerns that wearing masks could impair their children’s ability to breathe, affect social and emotional development and cause them anxiety. Does the science back up these claims or is it simply ill-founded panic? And what are the advantages of masking our children?
Benefits of masking There’s no doubt wearing masks reduces the spread of COVID-19. A face mask helps stop the infection spreading when you speak, laugh, cough or sneeze. They are particularly useful in indoor spaces that are poorly ventilated and when physical distancing is hard. Essentially, well-fitted, effective masks filter out some of the virus, making you less likely to breathe it in and get infected, says Alison Leversha, a paediatrician at Starship Hospital. This includes if you have COVID-19 but feel well or have no obvious symptoms. By wearing a mask you’re protecting yourself and

those around you. “It’s a win-win situation, particularly if everyone wears them,” says Leversha.
Finding ways to un-mask Most students have adapted quickly to wearing masks at school, according to feedback from principals around the country. Like most adults though, children don’t enjoy wearing them, so most schools
have found ways to safely minimise the instances where masks are required. Schools have used creative approaches to adapt classrooms and the way they teach, to make schooling as comfortable as possible, says NZ Principals’ Federation president Cherie TaylorPatel. Teachers have looked for opportunities for students to socially distance while working, taught more classes outside and many schools have ‘mask breaks’, allowing students to safely take their mask off for a short time. Some schools have used spaces like the school hall or

While a masked environment can impact these things to some degree, scientific studies have shown this is more pronounced for very young children. For children aged eight and older, the effects are considered to be much smaller. “We communicate in a lot of ways — not just talking,” says Leversha. Facial expressions and body language also play a big part. Studies have shown children can tune into these different communication cues and gestures, when a person’s mouth isn’t visible. While children may miss out on occasional social cues or misinterpret someone’s emotions because of masks, this isn’t likely to have a significant impact on communication, according to studies. In addition, children who wear masks at school are also getting exposed to other mask-free environments where they will learn these skills, for example at home.

While most children are able to wear masks without any problems, for some children this isn’t possible. Children who have a hearing impairment or autism for example, cannot function when their mouth is covered.

It’s too early to know if there will be any long-term impact on children from wearing masks, but there are unlikely to be, say experts. Ultimately, the benefits outweigh any negatives, says Leversha “Everything is a balance of risk versus benefits, and on balance wearing masks is protective and I have no hesitation in recommending that kids should be doing that.”
Optimising ventilation Along with mask wearing and good hygiene, ventilation is another important factor in a school’s ability 23
standards in enclosed spaces and wearing masks are our best defence, says Leversha. “At the end of the day, masks are one of those layers of protection and they're quite an important layer.”

New Zealand classrooms range from brand new to 150 years old, so ventilation differs vastly from school to school. Using doors and windows for natural ventilation is very effective but isn’t an option in every classroom. The other way to reduce the viral load in the air is to purify it with a machine. Air cleaners are now available to schools, and are a powerful tool for reducing the risk of transmission. The first 500 air cleaners were delivered to schools in March, with a further 4,500 to be delivered to targeted schools in June. The air cleaners will be particularly helpful where classrooms aren’t well ventilated and in colder areas where it’s not practical to have doors and windows open for fresh air flow. Schools will also receive a ventilation self assessment kit with a portable CO2 monitor they can use to help identify areas of concern and the right approaches to improve ventilation.
How can parents help? As we continue to protect our families and communities through the next phase of the pandemic, it’s likely students will continue to be encouraged to wear masks at school 24
for the foreseeable future. So what can parents do to help children feel safe and secure while wearing them? • Normalise mask wearing. We need to create a mask-wearing culture so it becomes something everyone does, says Leversha. In Japan for example, people wear masks every winter to reduce the transmission of viruses and that’s considered culturally normal. At Newmarket School in Auckland, everyone wears masks at school regardless of their age, because that’s the school culture. • Explain how masks protect ourselves and others. Talk to your children about why we’re wearing masks so they understand the reasons behind it, says Leversha. “Wearing masks is a kindness.” • Choose masks that work and fit well. Leversha recommends the N95, KN95 and KN94, which are widely considered the most effective. Earloop buckles can adjust the mask to make sure it fits against the face. The better quality and better fit, the better protection.

Leversha and other experts say there’s no evidence they harm kids developmentally. “As far as we know masks are safe for children.” When considering the pros and cons of wearing a mask versus not wearing a mask, the decision “falls very easily on wearing a mask because it’s safer for the child plus also safer for the people around them,” she says. Face masks help keep kids and communities safe. Teaching our children why we wear masks not only helps them understand the reasons, it normalises mask wearing, which is one of our best defences against COVID-19 and other airborne diseases.

Jewellery that’s making a difference
W
hen Myint Aung launched jewellery business Reca, her aim was to do more than create beautiful, handcrafted products. Building an ethical, sustainable brand that also supports women from developing countries has always been at the heart of everything she does. Two years on, this sustainable jewellery brand continues to pair its values with a dedication to minimalist style. Aung’s commitment to helping others started young. Growing up in Myanmar, from a young age she understood women faced gender inequality. However, Aung was surrounded by strong women in her family who taught her to stand up for what she believed in. “Thats something I feel strongly about. If something is not right I do speak up,” she says. In 2000 Aung came to New Zealand with her parents and siblings as a refugee and was inspired to see the opportunities available for women. “The first thing I saw when I came here was Helen Clark was the Prime Minister - it was pretty amazing.” It was from this passion for seeing women succeed, combined with a love of creativity that Reca was born. The brand specialises in beautiful, minimalist, jewellery including, rings, earrings, necklaces and bracelets, as well as bags. Customised jewellery is also available. Currently, Aung’s favourite piece is a delicate sapphire necklace, but “my mood changes all the time”, she admits. The name Reca, which comes from the word ‘care’, embodies what this small business is about. Every aspect
of the operation has been carefully thought-out to support other women in need and protect the planet. The company takes pride in sourcing materials from ethical businesses they know, and choosing environmentally friendly, recyclable packaging for all of its products. Jewellery is carefully wrapped in reusable cardboard, to reduce the impact on the environment. They also aim to eliminate as much soft plastic as possible from their supply chain, and when this isn’t possible, they recycle as much as they can. Aung employs other refugee women in New Zealand to craft her products. A self-taught jeweller, Aung creates all of the designs for her products and teaches her employees how to make them. She also buys jewellery from organisations in developing countries that pay fair wages to their female workers. Helping others who are vulnerable remains a core focus for Aung. “Seeing women succeed still inspires me to this day and I want other women to feel as empowered as I have.” Something as small as selling a pair of earrings can mean financial independence for the women they buy from, she says. In some instances, Aung’s support has helped generations of women in the same family, into safe houses and on their way to financial independence. “That’s something I am very passionate about - breaking that cycle of being in a violent or bad environment.” Reca’s products are available in selected stores in Auckland and Hamilton and on the website, www.reca.co.nz.

annual fundraiser, where communities come together to raise much-needed funds to support people impacted by cancer.

This year, the national street collection appeal will be held on Friday 26 August. The need to raise awareness and support this Daffodil Day is higher than ever this year after COVID-19 restrictions prevented last year’s street collections from going ahead. “It hit us pretty hard”, says Cancer Society Waikato/Bay of Plenty fundraising events coordinator, Shay Rout. As a result they switched to an online version of Daffodil Day last year so individuals and businesses could still get involved, but it lacked the impact of the usual street appeal. “Daffodil Day isn’t just about fundraising, it’s about connecting with the community,” says Rout. Around 25,000 New Zealanders are diagnosed with cancer every year. Since Daffodil Day began in 1990, the number of New Zealanders diagnosed with cancer each year has more than doubled, and it’s set to double again in the next 25 years.
All of the tools and ideas you need can be found on the Daffodil Day website, ranging from lockdownfriendly ideas to quizzes, yellow morning teas, and decorating your office. Your support makes a huge difference to the lives of others, says Rout. “It’s absolutely incredible to be able to help people going through such a tough journey in their life.”

has returned and couples are ready to celebrate their big day like never before. If the past two years have taught us anything however, it’s that even the best laid plans can go awry. To help ensure their big day goes as smoothly as possible, savvy couples are changing the way they plan their wedding and as a result we’re seeing some new wedding trends emerge. We speak to two experts about wedding trends that are flourishing and get their advice on how to help make your wedding planning a little easier when creating your dream day.
Cakes Kim Forsythe, co-founder of Baked with Love in Taupō, is passionate 36
about creating wedding cakes that look and taste exceptional. She’s seen many of her clients’ weddings impacted by COVID-19 over the past two years, but happily, this is changing as couples are feeling more confident to set their date and start making plans. “We are seeing multiple wedding cake inquiries every week now which is super exciting,” she says. When it comes to trends, couples are opting for smaller weddings, with reduced guest lists that include closest family and friends. Yet the cake remains one of the most important elements of the day. The biggest decision when choosing a cake is the flavour. If it’s going to be served as their dessert, they tend to go for fruity options like lemon curd
and white chocolate or the decadent roasted berries and dark chocolate, says Kim. Clients can choose from an extensive range of flavours including gluten free and vegan options. Fully iced and semi naked cakes are both equally popular this season. White is still the preferred colour along with pinks and rusts, often with some gold texture. To add that personal touch, flowers matching the bridal bouquet are placed on top. If you’re not sure which wedding cake is right for you, Kim ‘s advice is to: “make it big and beautiful”. Style your cake to match the bouquets and table decorations, and place it on a separate table so it’s a centrepiece, says Kim. Most importantly, make sure there’s plenty to go around. Guests are served canapes and grazing platters, rather than a sit-down meal, allowing for more social interaction. Weddings outdoors, under the stars, are also a trend, and have incredible ambience. What sort of results can I expect?
How many treatments are needed, and how far apart are they? Pigmented lesions generally require one to three sessions performed approximately every seven to 28 days, or when all the darkened cells have completely shed. Skin rejuvenation generally requires two to six treatments performed at weekly or fortnightly intervals to achieve the best results in skin texture, pore size and firmness. Improvements can continue to be noted up to three months after the last treatment.
What does Photo Rejuvenation feel like? Each pulse of light usually feels like a hot elastic band snapping on your skin. This is due to the light converting to heat in the targeted lesion. What happens to the pigmented and vascular lesions after the treatment? Vascular lesions such as broken blood vessels will either disappear immediately or appear purplish or grey/black in colour. They will then gradually fade or disappear. Diffused redness will usually appear immediately redder, then gradually fade within two to three weeks.
A 70-90% reduction of pigmentation can generally be expected with visible improvements seen after each treatment. Recommended skin care and strict sun protection helps to maintain results for much longer and continue to improve the skin’s appearance. Using the correct prescribed skin care following your treatment will net better results.
How should we expect the skin to react after the treatment? This varies from person to person, however, some experience a sunburn-like sensation lasting two-to-five hours, with redness and swelling lasting up to several days, or sensitivity to heat felt for two days post-treatment.
Are there any side effects? Side effects are uncommon, but potential complications include prolonged redness and swelling, darker or whiter patches of pigment, or in extremely rare cases, blistering.

Five common plants that could pose a risk to your cat or dog
P
lants are an easy and affordable way to beautify any space. Adding them to your garden or indoor areas brings life, tranquility and nature into your home. While they may look harmless however, not all plants are safe for our four-legged friends. In fact it may surprise you to find out many of the most popular plants can be toxic to animals, including cats and dogs. If eaten, the effects range from mild irritation to severe illness and in some cases, even death. As pet owners, it’s our job to keep our pets safe, so it helps to be aware of which plants can be toxic to them, before buying any new additions for your home or garden. This way you’ll ensure your pets are kept out of harm’s way. Matt Dunn from Palmers Garden Centre in Rotorua talked us through five common plants that are toxic to pets.
1. Karaka tree This distinctive evergreen tree is common throughout the North and South Islands. The berries, 42
which ripen, turn orange and fall off the tree, can be fatal if eaten by cats or dogs. The kernels in the fruit contain alkaloid karakin, which is extremely toxic to animals. Signs of karaka berry poisoning include, weakness, vomiting and seizures.
2. Daffodil Daffodils are a member of the amaryllidaceae family, and are also commonly known as narcissus, paper white and jonquil. The whole plant, especially the bulb, is poisonous to animals, causing vomiting, diarrhea, convulsions, low blood pressure, tremors and irregular heartbeat.
3. Chrysanthemum These vibrant flowering plants thrive both indoors and outdoors, making them a popular choice for homeowners. They contain pyrethrins, which is used as a natural insecticide and is toxic to animals. All parts of the plant, especially the flowers, are poisonous to dogs and cats if ingested in high enough amounts. However cats tend to be
more sensitive to the toxic effects. Vomiting, diarrhea, drooling, lack of coordination and dermatitis are all signs your pet might have ingested chrysanthemum.
4. Oleander These flowering plants can grow very large and are often used in landscaping to add privacy and for their beauty. Unfortunately, they are toxic to many animals, including cats, dogs, rabbits, horses and goats. All parts of the plant are poisonous and even small amounts can cause illness. Symptoms of oleander poisoning range from drooling and abdominal pain to heart rate abnormalities, and even death.
5. Cyclamen Also known as sowbread, cyclamen are typically grown indoors as a houseplant but some hardy varieties can be grown outdoors in cooler areas. They come in red, pink and white varieties. Cyclamen contain toxic saponins and when any part of the plant, particularly the roots, is eaten by animals it can cause extreme irritation and serious reactions. Symptoms include, drooling, vomiting, diarrhea, seizures and death.

of Polynesian Spa gifted the Crown 20 hectares of land containing several thermal springs. For many years after, iterations of Government-run baths were built to attract overseas tourists seeking spa treatments before Polynesian Spa as we now know it came to be.
A tale of two springs…

ince its establishment in 1972, Polynesian Spa has been an icon of the Rotorua tourism industry and a famous destination to bathe and enjoy the healing properties of geothermal waters. As they celebrate 50 years in operation, we decided to look back at the history of this renowned relaxation spot.
A generous gift… The site that Polynesian Spa now occupies has a long history of geothermal bathing, dating back to pre-European arrival. Local Te Arawa Māori utilised the thermal waters for cooking, washing, and bathing, and in 1880 Ngāti Whakaue
Perhaps the most special part of a visit to Polynesian Spa is the option to bathe in not just one, but two separate geothermally heated mineral water springs. Visitors often take a dip in one before swapping to another and back again. These two springs have a storied past. The first, known in English as Priest Spring and Te Pupūnitanga to local Māori, has slightly acidic water known for relieving tired muscles, aches, and pains. The name Priest Spring comes from the tale of Father Mahoney, a Catholic Priest who journeyed from Tauranga to ‘cure’ his crippling arthritis by bathing in the waters in 1878. The alkaline Rachel Spring, on the other hand, features the antiseptic action of sodium silicate, which nourishes the skin. Historically it was claimed that bathing in these waters would bless the visitor with ageless beauty.
…A world-famous experience Today, Polynesian Spa still celebrates those humble roots, with several protected historic sites around the resort. It has also evolved into a world-famous experience, featuring 28 hot mineral pools fed by the Priest and Rachel springs, spa treatments, day and weekend retreats, health and wellness therapies, and an onsite café and shop.

nless you’re a ski bunny or planning to head to the tropics, the winter months are often a time to hunker down and stay close to home, while looking forward to summer holidays ahead. But, as Groundhog Day sets in and the days get shorter, we all crave a change of scene and possibly one that won’t break the bank or use up all that annual leave. Recently crowned supreme winner at the Keep New Zealand Beautiful Awards, Whakatāne has plenty to offer for a short winter break. The bustling town centre has everything you need, from boutique shops to a diverse range of eateries and easy access to spectacular walk and cycleways. A good place to start is at one of Whakatāne’s most historic buildings, brought back to its former glory. The West End Wiggle, Ōhope Beach
If time allows, the breathtaking Ngā Tapuwae o Toi walking trail is a stone'sthrow from the town centre. The trail captures the essence of the Whakatāne District. It includes an historic pā site, unsurpassed coastal views, and diverse native forest, with many rare native bird species, including over 300 wild Kiwi. The full circuit covers 16 kilometres, or the trail can be completed in shorter sections. For a more relaxing, but equally scenic trail, head along the Warren Cole walk and cycleway which follows the Whakatāne River skirting the town. Arts and heritage lovers will enjoy a stop at Te Koputu a Te Whanga a Toi – Whakatāne’s Library and Exhibition Centre. With regular exhibitions and artefacts of Whakatāne’s past, it’s a great option if the weather’s not playing ball.

Cosy Cloud Ceilings Has winter got the kids stuck indoors and climbing up the walls? No problem – let’s channel that energy into the ceiling instead! These super cool cloud ceilings have been going viral on TikTok and are a creative way to make a child’s bedroom or games room cosy during dark winter nights.
The Craft Shack
What you’ll need… • Poster boards – enough to make your entire cloud area • Peel-and-stick LED strip lights (use LED lighting only, for safety reasons)
How to…
Next, take your poster boards and apply them to the ceiling using your chosen method, working outwards from your centre point. Planning where to place, wire and connect your LED strips ahead of time helps. Then, start sticking your strip lights onto the boards.
You’ll need a few hours for this project, so pick a good rainy day. First, decide where your cloud ceiling (or wall!) will go. Mark out the centre of the cloud with a pencil. If you’re placing it around a light fixture, be sure it’s LED and keep the cotton filling away from edges, just in case.
Grab chunks of the filling and lightly coat one side with the adhesive spray. Cover the poster boards with the filling to make the cloud effect. Avoid sticking the filling directly on the LED strips, but place just around them to diffuse the light. Lastly, turn on your lights, and enjoy the view!
• Spray adhesive – 1-4 cans, depending on size of your cloud • Cotton toy stuffing • Staples, tape, or adhesive strips safe for your ceiling surface

You can also use a smart bulb with different hue settings to add an extra layer of colour effect.
Safety tip – while LEDs shouldn’t get so hot as to cause a fire hazard, only use your cloud ceiling when you’re in the room. Expert-level: to make a nextlevel cloud ceiling, adding in LED variations with multiple modes, colours or even audio sensors to match music or sounds can make them seem even more realistic. Try a thunderstorm variation with smaller strips of flashing white LEDs between blue, or a faux sunset with undulating red, orange, and purple!
Dark Rocks
Easy peasy pizza
Another fun activity that involves lighting up otherwise wintery nights, these glow-in-thedark rocks can be used as electricity-free nightlights, ornaments, or even glowy pet rocks! Here’s some inspiration and how-to.
Making pizza from scratch is satisfying but takes a lot of time and effort. We’ve solved that problem and made it simple for the kids to get in the kitchen and help. The dough recipe is easy-peasy, and the topping choices are endless.
Grab some glow-in-the-dark paints in different colours, and plain white paint - choose hobby-safe paint from a reputable store. You’ll also need a few paint brushes in different sizes, plus some newspaper to keep things clean underneath while you paint.
How to… 1.
Sift flour and baking powder together in a large bowl

What you’ll need… • 2 cups of plain flour • 2 tsp baking powder • ½ tsp salt • ½ tsp dried oregano • 1 tbsp butter • ¾ - 1 cup milk as needed
Find a few nice, smooth rocks, give them a scrub to clean, and let dry. Paint a base layer of white on first and wait until dry. Then, grab your glow paint and get creative! You can paint the whole top one colour (great for nightlights), make a cool pattern with lines or dots, or paint on cute animal faces to make pet rocks.
4. Roll out on a floured board to chosen thickness 5. Place onto greased pizza baking tray and add your toppings 6.
Bake at 220 C for 15-20 minutes
Toppings: whatever you want! Tomato sauce, tinned spaghetti, bacon, cheese, pineapple, ham, capsicum…
Then just leave your rocks in a light source to charge for a few hours, turn off the lights and enjoy!

Hearty chicken stew ...with a winter mash top

• 200g button mushrooms • 1 heaped tablespoon of plain flour • 1 leftover chicken carcass, plus up to 300g leftover cooked chicken For the mash: • 2-3 parsnips, cut into even chunks • 1 swede, cut into same size chunks as the parsnips (you can add/substitute with kumara too) • 125g tub sour cream • ½ - 1 tbsp horseradish (depending on your flavour preference) • 2 tbsp fresh thyme leaves • butter Butter topping: • • • • •
50g butter 1 small onion, finely chopped 50g breadcrumbs a small handful thyme leaves 25g parmesan, coarsely grated
Prepare the winter mash
In a large pan of boiling salted water, cook your vegetables for about 20 minutes until tender.
I
ntroducing the ultimate winter comfort food dish: a hearty chicken stew, using leftovers from a whole cooked chicken, topped with a rich creamy winter mash and buttery, crispy topping. Making the stock from scratch and using fresh herbs makes this recipe delicious with only a little extra preparation.
Ingredients For the stew: • • • • • • •
4 rashers of bacon olive oil 2 onions 3 large carrots 2 potatoes a few sprigs of fresh thyme 2 fresh bay leaves
Drain well, then mash together with a few knobs of butter, using a masher or food processor until reasonably smooth but still with a bit of texture. Stir in the sour cream, horseradish and thyme and season with salt and pepper. At this stage, you can add milk or cream to get it to your preferred consistency. Put to one side.
Making the chicken stew
You will need one leftover chicken carcass, plus up to 300g leftover cooked chicken. Strip all the meat you can find off the chicken carcass and put aside. Make some stock. Place the carcass and any bones in a large pan. Cover with 1 litre of water, bring to the boil, then simmer for at least 30 minutes, skimming away anything on the surface. Meanwhile, finely slice the bacon (and any leftover chicken skin) and place in a large pan on a medium heat with oil, while you peel and chop the onions, carrots, and potatoes into 2cm pieces. Add the veggies to the pan along with the thyme sprigs and bay leaves. Cook for 10 minutes, stirring regularly. Halve and stir in the mushrooms, along with the leftover chicken and plain flour. Pour the stock through a sieve straight into the pan – you want the stock sitting level with the top of the stew, so top up with a little water, if needed. Let it simmer for 20 minutes, or until thick and delicious. When the time’s up, loosen the stew with a good splash of water if needed, season to perfection, then transfer it to an ovenproof pan and top with your winter mash. Spoon or sprinkle the topping mixture casually over the top of the mash. Scatter with parmesan. Bake in the oven at 180° C for 30 minutes, or until golden and crisp on top.
Prepare the topping
Melt the butter in a frying pan and cook the onion for 5-6 minutes, until gorgeously golden. Mix in the breadcrumbs and stir until brown and a little crisp. Season with salt and pepper and add the thyme, then take the pan off the heat.

Before Jenga was a popular game there was Pick-up Sticks. In this game of physical and mental skill, a bundle of sticks between 8 and 20cm long, is dropped as a loose bunch, onto a table in a random pile. Each player, in turn, tries to remove a stick from the pile without disturbing any of the others. Love getting swung around next to boiling thermal pools but I survived - and @ orakeikorakonz is SO beautiful. The colours are this vibrant throughout the whole walk! Plus it feels like a little adventure getting to take a boat ride over . We went in summer, since we were doing the Tongariro Crossing nearby.
