nother eventful year is coming to a close and it is time for stock-taking. Though it has gone through many difficult phases, overall tourism industry is in a better position at the end of the year. According to the latest data released by United Nations World Tourism Organization (UNWTO), the number of international tourist arrivals (overnight visitors) in 2015 increased by 4.6% to reach a total of 1,186 million worldwide. It is 52 million more than the previous year. It was the sixth consecutive year of aboveaverage growth in international tourism following the 2009 global economic crisis. International arrivals in South Asia also increased by 4%, driven by the subregion’s top destination India (+5%). The UNWTO report says the tourism flows were influenced by three major factors in 2015: The unusually strong exchange rate fluctuations, the decline in the price of oil and other commodities, and increased global concern about safety and security. The report also showed that majority of international travel takes place within the travellers’ own regions, with about four out of five arrivals worldwide originating in the same region. Source markets for international tourism have traditionally been concentrated largely in the advanced economies of Europe, the Americas and Asia and the Pacific. However, the report points out, with rising levels of disposable income many emerging economies have also shown fast growth over recent years, especially in the markets of Asia, Central and Eastern Europe, the Middle East, Africa and Latin America. UNWTO’s long-term forecast report, Tourism Towards 2030, has predicted that international tourist arrivals worldwide would increase by 3.3% a year between 2010 and 2030 to reach 1.8 billion by 2030. The trend visible in 2016 indicates that forecast is on track. Let us hope the coming year would bring more good news. We wish all our readers and well-wishers a merry Christmas and a Happy New Year.

Paradise on Earth
Kumarakom on the banks of Lake Vembanad is a mystic beauty and the charm it offers is plenty. A quick stroll is never enough at this paradise
W
hen India’s former Prime Minister Atal Behari Vajpayee chose to spend his year end holidays in 2000 at Kerala, Kumarakom located at Kottayam district was his choice. Residing on the banks of Vembanad Lake at a resort, he wrote: “...Nature’s silent beauty
provides a perfect setting here for contemplation...” In another occasion he describes Vembanad Lake as the ‘sea-sized lake’. No more proof required that he was in love with this wonderful destination of Kerala. He stayed for almost one week at Kumarakom undergoing Ayurvedic rejuvenation treatment,
relaxation massage and meditative rides on the kettu- vallams (houseboats) on the vast Vembanad lake. A ‘rejuvenated PM’ returned to his office after his holidays at Kumarakom. For Keralities, Kumarakom needs no introduction. This paradise on earth has always turned people spellbound at her beauty. The vast expanse of Vembanad lake, blue skies, daily chorus of people on the banks of the lake, coconut trees swaying in the wind, fishermen on their country boat and occasional houseboats are things you always see at Kumarakom yet feeling never enough. It is estimated that each year more than seven million tourists visit Kerala. For majority of tourists, Kumarakom is a must visit. In years, it has evolved as a hub for backwater tourism in the state. Kumarakom is also known through out the world as a setting to Arundhati Roy’s Booker Prize-winning novel ‘The God of Small Things’. The location to the novel is Aymanam, described in beautiful detail in the
6
novel lies about 10 km from Kumarakom and about eight km from Kottayam. The quixotic beauty of the place as described in the novel is not merely the product of a highly imaginative mind. With Lake Vembanad bordering its western side and the River Meenachil flowing through it, the village has been abundantly blessed with Nature’s bounty. Rice fields cover two-thirds of the village. As in any Kuttanad village, the paddy fields lie below sea-level. Part of Kuttanad, the rice bowl of Kerala, Kumarakom earlier thrived on with the vast paddy cultivation. Lime-shell collection, fishing etc were other major occupations in the past. Even today there are people who still do this things for a living here although they have reduced in numbers. Kumarakom owes much to Alfred George Baker, who reclaimed the wonderland from the wetlands of Lake Vembanad. Baker was a native of England and in time Kumarakom become the adopted land for him. He left some acres of reclaimed land to grow

mangroves and then left it untouched which gradually became a haven for local and migratory birds. Today it is known as Kumarakom Bird Sanctuary. The house where Baker lived today is a part of Taj Garden Retreat, the first modern tourist resort in Kumarakom and they have retained most of the building in its rustic beauty. Vembanadu lake and Kol Wetland Region of it was declared as a Ramsar site of international importance in 2002 owing to its importance of wetlands as the life-support systems on earth. From sustaining a variety of flora and fauna, preventing floods and droughts, the role played by wetlands is very important. The four rivers which create Lake Vembanad are Meenachil, Manimala, Pampa and Achankoil.
Responsible Tourism at Kumarakom
Kumarakom is one of the destinations selected by State Government along with Wayanad, Kovalam and Thekkady as pilot destinations to implement the Responsible Tourism initiative. It aims to approach tourism as an industry which contributes to the growth of social and economical side of society while minimising
the negative impacts on the environment. Kumarakom has come up with many innovative projects and initiatives which ensure the active participation of local bodies, industries, communities and Kudumbasree units to meet all the goals envisaged in Responsible Tourism. Initiated in March 2008, the Responsible Tourism

in Kumarakom saw an active participation of local bodies and the self-help groups. The project was hailed as a success as it assured the villagers that tourism can give them a livelihood. As a part of it, vegetable cultivation by the locals was the first initiative. The locally produced, fresh and organic vegetables had many takers

including luxury resorts of Kumarakom. Later farmers and self help groups were encouraged to produce for commercial supply of fish, chicken, egg and other agricultural produce. Microenterprises producing paper bags, eco-friendly bags with non-woven fabric and paper, processed food, local snacks, rice powder and handicrafts were areas it developed further. A cultural group called Suvarna, involving the housewives of the locality, was formed to perform traditional dance forms like Thiruvathira, Kolkali and Vattakkali for the tourists. Handicraft and painting units were encouraged. A children’s shinkari melam group was also formed. Kumarakom won the National Tourism Award for Best Responsible Tourism Project for the year 20082009. RT initiatives were also developed into waste disposal using ecofriendly ways like biogas or vermicompost plants and reduction of plastic bags usage at the destination. Bicycle Tourism is another attempt under Responsible Tourism initiative to lessen the impact of tourism on environment. For tourists who wish to experience an authentic 8
village life experience at Kumarakom there is a new possibility. Under the new initiative a Village Life Experience package has been introduced. A half-day tour package, it includes a ride through the canals in a country boat enabling tourists to catch the everyday village life on the banks. Ever tried fishing with the traditional bow and arrow method. You have a chance under this package to do this. A few suggestions to include in your Kumarakom Itinerary:
Kumarakom Bird Sanctuary The sanctuary is also known as the Vembanad Bird Sanctuary. In 14 acres, it is the first scientifically formed and preserved bird sanctuary in India. The presence of almost 180 species of bird has been recorded here. The presence of insects and fishes contribute much to the abundant avian life here. Water fowl, cuckoo, heron, egret, owl, water hen, wood pecker, sky lark, crane and parrots are found through out the year here. Water birds found in abundance include Northern Pintail Ducks, Little Cormorants, Whiskered Terns, Lesser Whistling Teals, Pond Herons, Purple Herons, Indian Shangs, Purple Moorhens, Cattle Egrets and the Cotton, Common and Gargarey Teals. The migratory birds spotted here include even birds from the Himalayas and Siberia. They include Siberian cranes, various
species of herons, darters, bitterns, Brahminy kites, Marsh Harriers, teals, larks and flycatchers. The Steppe Eagle, Booted Eagle, Black-tailed Godwit and the Rufous-backed Shrike. Kumarakom Bird Sanctuary is the favourite place for many Ornithologists during June to August. To help them, Kerala Tourism Development Corporation has set up a resort with a bird watching tower. Projects are in pipeline to set up more bird watching towers with one exclusive watch tower for research inside the sanctuary.
Pathiramanal For tourists who visit Kumarakom, Pathiramanal is a destination which they could include in their itinerary. An island, Pathiramanal can be accessed only by a boat. In the past there were residents in the island. But they were replaced to adjoining places many years back and now the place is home to a wide number of migratory birds. Some rare plant species are also found in this island. With the recently introduced government project- Pathiramanal Biodiversity Conservation and Responsible Eco Tourism Development Project, the area is undergoing vast changes with a management plan for the lake, conservation of mangroves and other plant species, cleaning the island and enhancing its biodiversity.
Houseboat rides Most of the tourists at Kumarakom will definitely try a cruise in the Vembanad lake in the houseboats. It is the perfect way to enjoy the beauty of the place. Various cruises are available for tourists and most often people chose the evening cruise so as to enjoy the beauty of sunset in the lake. Interested tourists can even try a hand in fishing. Or if you like can visit a
local toddy shop and enjoy the wide variety of cuisine offered there.
Ayurvedic treatments
There is no better place like Kerala for tourists to get rejuvenated with Kerala’s age old system of medicine –Ayurveda. It is a science of holistic living and longevity and not just a treatment but a way of living. Almost all the resorts and healthcare centres offer different packages of Ayurvedic treatment. Besides there are Ayurvedic spas and massage centres. These work to renew the body’s balance by eliminating the toxins that are byproducts of an incorrect lifestyle. Tourists generally go for a standard oil massage which removes the aches in the muscles, relaxes the body and mind, and makes the skin glow. Monsoon season is the most preferred time for Ayurvedic rejuvenation treatments. The monsoon packages usually include head, face and body massages with herbal oils and a medicated steam bath. The Ayurvedic centres usually have therapy rooms and steam bath facilities, as well as Yoga and meditation centres. Some also have an area for recreational activities. Qualified Ayurvedic doctors and masseurs, both men and women, are employed at all Ayurvedic spas at Kumarakom.
Boat Race
Kumarakom is also known for its boat races. Snake Boat races around Onam time have got many admirers. Snake boats of different sizes and shapes participate in the event. There are even boats which will have around 50 oarsmen. Usually the venue for the boat race for The Sree Narayana Ever Rolling Trophy is the big canal in the centre near the market. The trophy is in remembrance to the arrival of Sree Narayana Guru who arrived at Kumarakom in 1903.

S
now skiing, snowboarding, sledding and ice skating are only part of the winter sports scene in the United States. From the Alaskan frontier to the woods of New England to Pennsylvania’s beloved Pocono Mountains, the USA also shows its offbeat side through less familiar snow activities. Here are three experiences for tourists to try out at USA Winter. Just don’t forget to pack warm clothes and a sense of adventure.
Dog Sledding in Alaska and Maine It’s been Alaska’s official sport since 1972, but dog sledding, also known as mushing, has been part of the region’s culture for centuries. Mushing involves riding on a sled that is pulled by a group of powerful dogs. One of the most popular places to try dog sledding is Alyeska Resort in Girdwood, located about 65kms outside of Anchorage, Alaska’s biggest city (population: 301,010). The resort partners with different tour operators to offer dog sled tours. Check 14
with the resort concierge about options, times and prices. On the East Coast, Mahoosuc Guide Service in Newry, Maine, located 20kms from the Sunday River ski resort in the western part of the state, offers multiday dog-sledding excursions through the Mahoosuc Mountains and the area near Umbagog Lake, which straddles the Maine-New Hampshire border. Two- or three-day tours include campfire-cooked meals and use of cross-country skiing, snowshoeing and winter camping equipment. The nearest airport is in Portland, Maine, about 120kms from Newry.
Snowkiting in New England Snowkiting is exactly what it sounds like: You’re pulled across the snow by a kite. However, the kite looks more like a small parachute and functions like a sail. Put on your helmet and strap into a harness that’s connected to a kite. The wind will propel you across snow and ice — and even into the air. You can go extremely fast.
Experienced snowkiters can reach speeds of up to 100kms per hour. New England lakes, which often freeze over during winter, are some of the best places to try the sport. Current hot spots include Lake Winnipesaukee and Chocorua Lake in New Hampshire, Moosehead Lake in Maine and Lake Champlain in Vermont. If you’re new to snowkiting, it’s best to learn from experts. Hardwater Kiting in North Conway, New Hampshire, offers snowkiting lessons, safety guidance and equipment. The members of the staff are certified snowkiting instructors who are familiar with northern New England backcountry. North Conway is in rural New Hampshire, 220kms from Boston, Massachusetts, and 74kms from Lake Winnipesaukee.
Snow tubing in Pennsylvania Snow tubing is a simple and slightly silly way to get down a mountain. It’s also lots of fun. You sit in a tube and let gravity propel you down the mountain. You can find this family-friendly

Antwerp
Antwerp’s brand new attraction – ‘The Port House’ If you are on the look out to explore Antwerp, Belgium here are a few attractions
A
ntwerp’s latest architectural jewel is the Port House. This funky and innovative building, with roots in the past, is the new headquarters of the Antwerp Port Authority that accommodates over 500 employees. The full city panoramic view is the additional cherry on the topping that this attraction flaunts. At the Port House, the port of Antwerp’s past and future come together. The bottom part was once a fire station that was on the port’s outside edge. During renovation, this beautiful station was restored to its former glory. There is no clearer symbol of the immense growth of the port of Antwerp. Together with a striking and contemporary superstructure in the shape of a diamond - a monumental design of the famous architect Zaha Hadid Architects - the building makes up the entire Port House. As such, it is a metaphor for the port of the 21st century: a
port with a rich history that is ready to face the future head-on. Situated in ‘The Eilandje,’ a special Antwerp district on the hinge between the city and the port, this impressive structure has put Antwerp back on the world map for its architectural beauty if nothing else. The best part of this attraction is its guided group tours offering wherein a guide takes you through the history, architectural anecdotes, photographic excellence and so on. Not just that, it is also the new base for extended Indo-Belgian relations.
Other attractions
Antwerp has got a number of superb, unique spots which tourists can visit. One such place is Vlaeykensgang. The secret alley dates back to 1591 and connects Hoogstraat, Oude
Koornmarkt Pelgrimstraat with one another. Once, this alley was home to the poorest people of the city. Now you can find many antiques stores and art galleries and the exclusive restaurant Sir Anthony Van Dyck here. Another place which tourists find quite unique is The Underpass or St Anna’s Tunnel. Opened in 1993, it has got authentic wooden escalators from the time of inauguration and maintained till now. The tunnel and entrance buildings are a piece of living history in the heart of Antwerp and residents as well as tourists love it to the core. Beguinage is a place every tourist to Antwerp doesn’t want to miss. Beguines were devout women who lived in a community without taking religious vows. They were neither laywomen nor nuns. Nestled in the city centre next to the university and the St Catherine’s Church it has got many charming tiny houses with beautiful garden, orchard and pond in the inner courtyard. The
18
cobbled streets resembling 16th century is quiet and perfect to rejuvenate yourself. A little history will be helpful to understand Beguinage more. The first beguinage in Antwerp (1240-1542), Het Hof Sion, was situated to the south of the city, rather far outside the city walls. After the destruction of Het Hof Sion the beguines acquired land within the city walls, where they rebuilt their beguinage in 1545. Despite a difficult period under French and Dutch rule at the end of the eighteenth century and in the early nineteenth century beguines lived here well into the twentieth century. The last Antwerp beguine, Virginia Laeremans, died in 1986. Today the beguinage has a residential function. Initially the houses were built around a square, but as a result of the growing number of beguines an alley was added. The original character and tranquillity of the beguinage have been preserved. The original church was destroyed in 1799; it was replaced by the current St. Catherine’s Church in 1827.

It is the right balance of these masalas that go on to produce those typical aromas and flavours associated with Maharashtrian food,” said Chef Sharad Damodar Mhaske, who has come all the way from Maharashtra for this festival.
“What gives Maharashtrian cuisine a distinct touch are its heavenly flavours drawn from a delicate mix of freshly ground traditional spices and condiments. Instead of the ‘garam masala’ which people generally use in other parts of the country, the preparation of Maharashtrian food
The Maharashtrian Food Festival at Saffron offers vegetarian and non-vegetarian set menus, along with the regular sea food menu to choose from. Foodies have much to explore in terms of the different styles of preparation and use of spices and other ingredients, which make Maharashtrian cuisine truly
unique. For starters, you can have ‘kotambir wadi’, a signature Marathi delicacy of gram flour (‘besan’) and coriander mix, which is steamed and later fried to give that typical flavour. Those with a preference for non-vegetarian food can go for machchi koliwada, a crisp golden-brown fried fish fillet marinated in traditional spices and condiments. With distinct spices and medium of cooking (groundnut and coconut oils), both vegetarian as well as non-vegetarian dishes in Maharashtrian cuisine are equally popular. Bharli vangi, for instance, transforms the ordinary eggplant into a spicy yet flavoursome delicacy with the use of a special stuffing prepared out of groundnuts, sesame seeds and desiccated coconut.

InterContinental Bali Resort enhances its Raw Food Menu
B
lessed by an endless stretch of white sand beach overlooking the tranquil waters of Jimbaran Bay, InterContinental Bali Resort for its guests and customers has enhanced its raw food menu. Considering the increasing number of people turning to raw food diets in order to achieve optimum health and many others recognising the wellness benefits of consuming raw foods for at least part of the time, InterContinental Bali Resort, has incorporated a range of raw food dishes into the menus of both Jimbaran Gardens and Bella Cucina. The aim is to provide guests with the option of fresh, local, sun-ripened fruits and vegetables, and delicious unprocessed foods, which provide the body with the best nourishment that nature has to offer. While the raw food selections are available for any of our guests to enjoy, the menus have also been designed to complement InterContinental Bali Resort’s yoga and wellness programmes. The principle of raw food is simply a return to food in its wild or unrefined state – the food we were meant to eat. Raw foodism is a diet of primarily unheated food, fermented food, or food that has been cooked to a temperature of less than 46 degrees C. Below this temperature, the nutrients are not destroyed. Raw food is alive and full of enzymes, vitamins and minerals. Besides being uncooked, it is also unprocessed and often organic. A raw food regime embraces fresh, whole, living, plant-based
22
foods: typically raw fruits and vegetables, leafy greens, and raw grains, seeds, nuts and legume sprouts, which are consumed in their natural state. Non-vegan and non-vegetarian raw foods include raw fish, unpasteurised dairy products such as raw milk, raw meat, raw eggs, and raw honey. Applying heat to foods provides no nutritional benefit, but raw foods supply premium nutrition, and are brimming with the vital life force that our bodies need for highly efficient digestion, for a well-functioning immune system, for energy and stamina, weight loss, beauty, mental clarity and focus, emotional balance and spiritual connection. An important key to excellent health is excellent digestion. The human body requires enzymes to digest food. Sprouted nuts, seeds, and grains are living foods, which are easier to digest because the availability of the enzymes is increased, enhancing the vitality and the power of the food by making all of the nutrients readily available and easier to assimilate. Raw foods also have a big impact on the acid and alkaline balance in our bodies. Diseases develop more easily within the body when acidity rises, which in turn challenges the immune system. The body can become overly acidic due to environmental pollutants, stress, processed and refined foods, lack of nutrients, and mineral-
deficient water. Cooked foods create even more acidity in the body, but on the other hand, raw foods neutralise acid and help alkalise the body. When the body is in an alkaline state, it is better able both to absorb nutrients and to expel toxins more efficiently. By integrating a proper raw diet with other healthful living practices, we are less likely to develop weight control problems or chronic or short-term illnesses. No man-made vitamin tablet or other supplement can compare with nature’s handiwork. At Bella Cucina, the Chef’s focus is on nutritious satisfaction – physically and mentally. Above all, he aspires to create scrumptious delights that are a pleasure to eat, such as ‘Zucchini Lasagna’ filled with hazelnut cheese and raw plum tomato marinara; as well as ‘Caesar Salad Raw Food Style’ comprising Bedugul romaine lettuce heart tossed with raw Caesar dressing, cashew flakes and nori seaweed; and ‘Raw Vegetable Fettuccini Marinara’ with mixed crunchy Bedugul carrot, zucchini, asparagus,
cherry tomatoes and raw pine nut cream sauce. The Chef is also getting back to nature at Jimbaran Gardens by utilising fresh, colourful ingredients created around the art and science of feeling great. Dishes here include the ‘Warm Coconut Noodle Wrap’ stuffed with shimeji mushrooms and champignons, scented with ginger and served with cilantro teriyaki sauce. Alternatively, the naturally nourishing ‘Nuts and Seed Raw Pizza’ is layered with raw tomato coulis, cashew cheese, avocado, and raw Bedugul baby vegetable shavings; while the ‘Warm Pumpkin Noodle Roll’ introduces caponata, baby spinach and raw capsicum dressing. A deliciously different dessert, available at both restaurants, is the ‘Raw Chocolate Mousse,’ which is served with mango and mint compote at Jimbaran Gardens, or with balsamic marinated Bedugul strawberries on an almond biscuit at Bella Cucina. So what are you waiting for? Try these raw delicacies and recapture your health.
