Marinated Manchego PREP TIME 10 MINS (PLUS OVERNIGHT MARINATING TIME) COOK TIME 5 MINS SERVES 6-8 AS A SNACK Combine 1 cup (250ml) David Jones Extra Virgin Olive Oil, 6 garlic cloves, 1 thinly sliced orange, 2 thyme sprigs, 1 rosemary sprig and 1 tsp David Jones Chipotle Chilli Flakes in a medium saucepan. Place over medium heat and bring to a simmer. Remove from heat and set aside to cool. Place 300g thinly sliced Quesos de Espana Traditional Manchego in an airtight container and pour over the oil mixture. Seal and refrigerate overnight. Serve at room temperature with crusty bread for dipping.

Honey-Baked Brie PREP TIME 10 MINS COOK TIME 15 MINS SERVES 6-8 AS A SNACK Preheat oven to 200°C

fan-forced. Place a 250g Jean Perrin Fromager Des Clarines Pot in a small ovenproof dish. Drizzle with ¹∕³ cup (115g) David Jones Organic Honey and sprinkle with 3 thyme sprigs. Bake for 10-15 mins or until bubbling and golden brown. Top with coarsely chopped David Jones Roasted Almonds and extra thyme sprigs. Serve with crackers or crusty bread.

Salami Chips PREP TIME 10 MINS COOK TIME 10 MINS SERVES 6-8 AS A SNACK Preheat oven to 180°C fan-forced. Line a baking tray with baking paper. Arrange 1 packet David Jones Fennel and Garlic Salami in a single layer on the lined tray. Finely grate 60g Parmigiano Reggiano and sprinkle a little over each salami slice. Top with a little coarsely chopped thyme. Season to taste. Bake for 8-10 mins or until bubbling and golden brown. Cool to room temperature and serve.

Ricotta filling 1 ²/₃ cups (400g) firm ricotta 1 cup (125g) coarsely grated gruyere or Quicke’s Smoked Cheddar ¼ cup coarsely chopped mint leaves ¼ cup coarsely chopped flat-leaf parsley 1 lemon, rind finely grated 1 egg 2 spring onions, thinly sliced 3 zucchini, thinly sliced crossways

1. Preheat oven to 180°C fan-forced. Line a large baking tray with baking paper. Place 1 pastry sheet on a large piece of baking paper. Brush 1 long edge of the pastry sheet with a little of the eggwash. Overlap pastry edge slightly with the remaining pastry sheet, pressing the join to seal edges and form 1 large pastry sheet. Use a small sharp knife to cut a 40cm diameter pastry disc. Discard leftover pastry or set aside for another use. Transfer pastry disc to the lined tray. Place in the fridge to chill. 2. To make the ricotta filling, place the ricotta, gruyere or cheddar, mint, parsley, lemon rind, egg, spring onion and two-thirds of the zucchini in a large bowl. Gently stir to combine. Season to taste. Spread the mixture evenly over the pastry disc on the lined tray, leaving a 3cm border. 3. Arrange the remaining zucchini over the ricotta filling. Fold the pastry border in to partially enclose filling. Brush pastry edge with eggwash. Drizzle with a little extra virgin olive oil. Bake for 40-45 mins or until pastry is golden brown and filling is set. Cool slightly. 4. Transfer galette to a serving plate. Top with the asparagus, fennel, rocket, mint and parsley. Drizzle with a little extra virgin olive oil. Serve warm or at room temperature with lemon wedges.

Spiced Roast Carrots with Tahini Yoghurt PREP TIME 15 MINS COOK TIME 30 MINS (PLUS COOLING TIME) SERVES 6-8 Preheat oven to 200°C fan-forced. Toss 3 thinly sliced carrots and 2 bunches trimmed Dutch carrots in a roasting pan with 2 tbsp David Jones Australian Extra Virgin Olive Oil, 1 tsp David Jones Ground Cumin, 1 tsp David Jones Ground Coriander and the finely grated rind of ½ an orange and ½ a lemon. Season to taste. Roast for 25-30 mins or until golden brown and just tender. Drizzle with the juice of 1 orange and 1½ tbsp red wine vinegar. Return to oven and roast for a further 5 mins. Stir ¾ cup (210g) natural yoghurt, ¼ cup (70g) tahini, 1 finely chopped garlic clove and the juice of 1 lemon in a small bowl to combine. Season to taste. To serve, spread the tahini yoghurt on a serving platter. Top with the carrot mixture. Drizzle with pan juices. Sprinkle with mint leaves, flat-leaf parsley leaves, toasted sunflower seeds and dukkah.

Peach and Tomato Salad with Burrata PREP TIME 15 MINS SERVES 6-8 Place ¹∕³ cup (80ml) David Jones Australian Extra Virgin Olive Oil, ½ cup mint leaves, ½ cup wild rocket leaves, 1 finely chopped garlic clove and the juice of ½ a lemon in a blender and blend until smooth. Season to taste. Cut 6 ripe tomatoes into wedges. Arrange tomato wedges on a serving platter with 3 sliced peaches, 200g sliced mixed cherry tomatoes and ½ thinly sliced red onion. Top with 3 burrata. Drizzle with a little balsamic vinegar and extra virgin olive oil. Season to taste. Drizzle with the mint dressing. Sprinkle with basil leaves and extra mint leaves to serve.

Broccoli and Kale Caesar Slaw PREP TIME 15 MINS COOK TIME 12 MINS (PLUS COOLING TIME) SERVES 6-8 Preheat oven to 200°C fan-forced. Remove the crusts from ½ loaf sourdough bread. Discard crusts or set aside for another use. Tear bread into bite-sized pieces and place in a roasting pan with 2½ tbsp David Jones Australian Extra Virgin Olive Oil and 1 finely chopped garlic clove. Toss to combine. Season to taste. Bake for 10-12 mins or until golden brown. Set aside to cool. Whisk 1 tbsp white wine vinegar, 2 tsp Dijon mustard, 2 finely chopped anchovies, 1 finely chopped garlic clove and the finely grated rind and juice of 1 lemon in a medium bowl to combine. Add ²/³ cup (160ml) David Jones Australian Extra Virgin Olive Oil and ¼ cup (20g) finely grated parmesan and whisk to combine. Season to taste. Combine ½ bag David Jones Shredded Kale in a large bowl with ¼ small shredded white cabbage and ½ thinly sliced red onion. Shave 1 head of broccoli on a mandolin and add to the kale mixture in the bowl. Drizzle with the mustard dressing to taste. Gently toss to combine. Sprinkle with the garlic croutons and ²/³ cup each of mint leaves and flat-leaf parsley leaves to serve. T I P : Cooled garlic croutons can be stored in an airtight container for up to 1 day.

Prosecco Berry-Cherry Jelly Summer cherries and berries are the festive season’s favourite fruits. We’ve turned them into a wreath-like jelly, spiked with prosecco. Decorate with more cherries and berries and add a little crunch with mini meringues or finely chopped nuts. Serve it with David Jones Ice Cream – we love White Chocolate & Raspberry. You’ll need to start this recipe 1 day ahead, but it can be made up to 3 days ahead.

PROSECCO JELLY

750ml bottle prosecco, such as La Zona King Valley Prosecco 1½ cups (330g) caster sugar 150g pitted cherries 150g strawberries, chopped 100g raspberries Juice of 1 orange Juice of ½ lemon 15 titanium-strength gelatine leaves, softened in cold water for 5 mins 80g pitted cherries, extra 80g sliced strawberries, extra 80g raspberries, extra

PREP TIME 40 MINS (PLUS CHILLING TIME) / COOK TIME 10 MINS / SERVES 8-10 / START THIS RECIPE 1 DAY AHEAD 1. To make the prosecco jelly, combine the prosecco, sugar, cherries, chopped strawberries, raspberries, orange juice, lemon juice and 3 cups (750ml) water in a large saucepan over medium-high heat. Stir to dissolve sugar. Bring to the boil. Reduce heat to medium-low and bring to a simmer. Cook for 6-8 mins or until berries release their juices. Remove from heat. Squeeze excess water from gelatine, then stir into berry mixture to dissolve. Strain through a fine sieve into a 8-cup (2L) fluted cake tin. Refrigerate for 2-2½ hours or until just beginning to set. 2. Gently sprinkle extra cherries, sliced strawberries and raspberries over partially set jelly in the tin – they should sink into the jelly but not drop right to the bottom. Chill for a further 2-3 hours until almost completely set. 3. Combine the milk, sugar and vanilla in a medium saucepan over medium-high heat. Bring to a simmer. Stir to dissolve sugar. Remove from heat. Squeeze excess water from gelatine. Stir gelatine into milk mixture to dissolve. 4. Whisk crème fraîche in a large bowl until smooth. Gradually whisk in milk mixture until smooth and combined. Pour over jelly mixture in the tin. Chill overnight to set. 5. To serve, dip the mould in hot water (don’t let the water touch the jelly). Use your fingers to gently pull jelly away from side of the tin to loosen. Place a chilled serving plate on top of the mould, then carefully invert the plate and mould to turn out jelly. Decorate with the extra cherries and berries and serve with ice cream.

Mango Tart with Rum Caramel PREP TIME 30 MINS (PLUS COOLING & CHILLING TIME) / COOK TIME 40 MINS / SERVES 8-10 435g packet Carême Vanilla Bean Sweet Shortcrust Pastry, defrosted 3 cups (750g) mascarpone 150ml milk ½ cup (110g) coconut sugar or brown sugar ¼ cup (60ml) spiced rum 2 tsp vanilla bean paste 6 mangoes, stoned, peeled, thinly sliced lengthways Passionfruit pulp, to serve RUM CARAMEL

1 cup (220g) caster sugar 1/3 cup (80ml) spiced rum, such as Dark Matter Spiced Rum Juice of 1 lime 2 tsp vanilla bean paste

1. Line a 4cm-deep, 23cm-diameter tart tin with the pastry, pressing into the side and base. Trim the edges and prick the base with a fork. Refrigerate for 30 mins. 2. Preheat oven to 180°C fan-forced. Line pastry case with baking paper and pastry weights or rice. Bake for 15-20 mins or until light golden. Remove baking paper and pastry weights or rice. Bake for a further 10-12 mins or until golden brown. Set aside to cool completely. 3. Meanwhile, to make the rum caramel, place sugar and ¼ cup (60ml) water in a saucepan over medium-high heat. Stir to dissolve sugar. Bring to the boil. Cook, without stirring, for 10-12 mins or until it becomes a dark caramel. Remove from heat. Carefully add rum, lime juice, vanilla and ¼ cup (60ml) water to the caramel (mixture might spit). Return to heat. Stir until smooth. Transfer to a heatproof screw-top jar. Seal. Refrigerate until chilled. 4. Whisk mascarpone, milk, sugar, rum and vanilla in a large bowl until soft peaks form (don’t overmix). Spoon the mixture into the cooled pastry case. 5. Transfer tart to a serving platter. Arrange mango slices in concentric circles over the mascarpone mixture. Drizzle with rum caramel. Spoon over passionfruit pulp. Cut into wedges to serve.

Peachy-Keen Punch SERVES 8-10 Combine 1.5L (6 cups) white wine, 1 thinly sliced orange, 1 thinly sliced lime, 4 thyme sprigs, 5 whole cloves and 2 cinnamon quills in a medium saucepan. Place over low heat and cook for 10-12 mins or until fragrant â&#x20AC;&#x201C; do not boil. Discard thyme and cloves. Carefully transfer mixture to a large jug and place in the fridge to chill completely. To serve, add 2 sliced peaches and 1 thinly sliced lime to the wine mixture in the jug. Divide mixture evenly among serving glasses. Serve with crushed ice and decorate with extra thyme sprigs.

Whipped together before your guests arrive, a cocktail made for sharing sets the tone for festive celebrations.

Place 1 cup (220g) caster sugar, 1 tbsp finely grated fresh ginger and 1 cup (250ml) water in a small saucepan over high heat. Stir to dissolve sugar. Bring to the boil. Remove from heat. Add Â˝ bunch mint and set aside to cool completely. Discard mint. (The ginger-mint syrup can be made up to 1 week ahead. Store in an airtight container in the fridge.) Just before serving, place 2 peeled Lebanese cucumbers, 2 thinly sliced limes and 1 tbsp finely grated ginger in the base of a punch bowl and muddle to lightly crush. Add 1 cup (250ml) Never Never Triple Juniper Gin, or Seedlip Garden 108 (21237820, $49.95) and enough ginger-mint syrup to taste. Stir to combine. Top with 750ml chilled tonic water. Add ice cubes to serving glasses. Use a punch ladle to divide cucumber mixture among the glasses. Sprinkle with extra mint sprigs to decorate.
