7 Know-how If you’re not buying your dining table and chairs as a set, coordinate separate pieces so that they work as well as they look together. he dilemma is real. as an obsessive houseplant collector, how does one enjoy an anxiety-free summer holiday at the height of the growing season? given the fact that you are currently watering a windowsill of herbs, pots of flowering orchids, delicious monsters, a fiddleleaf fig and an army of ferns, a two-week absence could seal their fate - and not in a good way. Fear not. There are numerous quick and easy ways to ensure your houseplants survive temporary abandonment. and the best thing is, it only takes a few minutes to do before you rush out the door to catch your plane. The simplest method is to place your pot plants together in a sink or bath lined with capillary matting or a couple of thick, wet towels. capillary matting is an absorbent, felt-like fabric which you drape at one end into a basin of water. It absorbs water, which means plants can draw up moisture when they need it, helping you avoid the deathly consequences of over- and underwatering. drench your plants just before you leave. Then, close your blinds to protect them from direct sunlight. If you’re concerned your sunloving specimens won’t survive in low-light conditions, don’t be. during the short space of time you’re away, water stress has a bigger impact on the health of your plant than a spell with lower light levels. Plants in pots that are too big to move are less likely to dry out. Follow the steps above – generous watering and closed blinds – and if you can fit a shallow saucer underneath the base, fill it with water before you leave. Plants most at risk include thin-leafed varieties such as herbs and ferns, those in small pots – their modest volume of soil will dry out a lot quicker than those in larger pots, as well as plants in porous or unglazed terracotta or cement containers. grouping these plants tightly together will further reduce water loss by creating a humid microclimate, as plant leaves trap water vapour from one another. once a communal room used by the greeks as ancient spas, the modern bathroom has become more private: a place to unwind in a sudsy bath and reflect on your day. Budget and space permitting, a master suite should capture the conviviality of roman baths, but also be a place in which to luxuriate and regenerate. The dressing room/bathroom suite should be as large as the bedroom. Make it inviting, because bathing and dressing should be pleasurable. {1} Find a balance between openness and privacy. For example, showers and toilets should be behind doors. {2} usually, the main bathroom is used by two people, so create individual nooks that include basins and vanities. Let natural light filter in through translucent glass or louvre shutters that can be adjusted depending on privacy requirements. {3} Private courtyards that bathrooms look onto enhance privacy and provide a pleasing outlook. Consider adding an outside bath or shower. There is nothing more enchanting than a moonlit soak. {4} Make wet areas distinct from dressing areas with different floor finishes: tiles in wet areas, and plush carpets in dressing rooms that feel cosy underfoot. While guest bathrooms can be fanciful expressions of colour, this does not apply to main bathrooms. Choosing calming textures and soft whites as the dominant colour advertises sparkling cleanliness. Mirrors must serve different functions: small, well-lit mirrors highlight while full-length mirrors offer a top-to-toe reflection. When it comes to dressing-room storage, closed cupboards make

for an uncluttered aesthetic and keep clothes protected from dust and other undesirables such as fish moths. open shelves break the monotony of endless cupboards and serve as display units for attractive accessories. {5} Custom design dressing rooms to individual needs. a general rule of thumb is to make cupboards with shelves for clothing shallower than those for hanging (45cm for folded clothes, and 60cm for hanging). Women typically need more full-length hanging space (do allow for some in men’s wardrobes to accommodate coats). stacked cupboard rails optimise space. shoe storage either has to be shallow (one pair of shoes deep) or angled so that you can see the second row behind the first row. You must be able to adjust the height of the racks to accommodate boots and be able to pull the ones on the lower level out for easier access. a dressing-room island replaces the old-fashioned dressing table. It provides a play on height from a wall of full-length cupboards and serves as a display surface for decorative items such as perfume bottles and flowers. house an electronic hub in the dressing room for alarm panels and charging stations. Keep these sleep interrupters out of bedrooms. endless Fascination

A

lmost every moment of my life, I am thinking about plants. They are the building blocks of my existence. I even dream about plants and plant-related subjects, all of which influence my work as a garden designer. Plants inform my relationships, provide a focus for my work, lull me to sleep, and even sometimes wake me up at night.

Beauty was always important in my family in all art forms. I decided early on that biology, particularly the biology of plants, was the most orderly and beautiful of them all. This, together with the outdoor freedom of my central african childhood, sealed the deal for my future career. Plants quietly stole me away.

At first, I collected and painted plants. I loved drawing maps to which I would add trees or flowers,

as I had seen done on historical maps. When my life had to change as a result of an accident, I realised I wanted a career that involved creating beauty with plants. I trained as a horticulturist. studying at what was then the durban corporation gave me an excellent grounding. I learned about everything from trees to golf courses, and from nursery production to natural areas. I became aware of the precarious balance in which nature exists, and how much damage we do to the planet daily. at times, I feel this as physical pain.

From plants, came other interlinked passions: birds,

butterflies, wildlife, food, geology, history, architecture and art. and the understanding that none of it can exist without plants.

hen I was growing up in Manchester in the northwest of England, which is by all accounts a very grey city, my mother stood out like a peacock,’ begins Matthew Williamson. ‘She dressed in vibrant colours, combining her garments in unusual ways. Many people considered her an eccentric. When she entered a room, everyone gravitated towards her. It is harnessing that power over people that made me dedicate myself to fashion.’ So it was that the boy from Manchester, who at six years old painted his bedroom in lavender and silver, would go on to become one of the top names on the British runway – that is, until three years ago. Exhausted by the shows, the capricious critics and the ephemeral trends, he decided to close the fashion chapter of his eponymous label, focusing instead on what he now recognises as his true vocation: interior design. 66

‘It was at that breaking point that a friend, concerned, gave me the keys to her house in Palma to disconnect. It was summer in Mallorca, and when I arrived I was greeted by a marblefloored mansion – it was all way too grand for me, nevermind the tumult of tourists that flooded the streets outside. That was not what I needed,’ says Matthew. ‘So, I asked the driver to show me the island. He studied me carefully for a minute – and took me to Deià.’ Upon arrival in the historic town, wedged between mountain and sea, its earth-toned homes peeking out between olive and orange groves, Matthew found the quieter, friendlier reprieve he had been looking for. He promptly asked the driver to stop the car – and Deià is where he stayed. His home is, similarly, discreetly tucked away, accessed via a blink-and-you’ll-miss-it path that leads you to the front door of the typically Mallorcan abode. True to the island’s vernacular, there are straw-shaded verandahs, a pool executed with masonry walls and a profusion of wrought iron and sun-bleached wood. The interiors, however, go completely off-piste, as visitors crossing the threshold see

a kaleidoscope of exotic colour and animal print – Matthew’s design forte. ‘I always worked with tones, textures and volumes, the only difference is that I now do it in an interior space and not on skin,’ he says. He is currently wielding a paintbrush, customising the wallpaper that covers his living-room walls. It is the ‘almudaina’ print from his Deya collection for osborne & Little, the brand that gave him his first break in interiors back in 2013. It coexists effortlessly with a sofa from British upholstery company Duresta (which he also designed), candles and his acrylic artworks. The overall effect is completely on-brand for Matthew: sophisticated, opulent and, as he likes to say, gypsy. ‘Mallorca has allowed me to see everything from a fresh perspective, and to start over,’ he says. ‘It has made people bet on me again, but this time as an interior designer.’ He’s referring to his most recent work, both in Deià: nama Bar, which is dripping in electric blue and feather motifs, and suite 67 of the Belmond La residencia hotel. ‘Then there’s my other adventure, the shop in Palma that I opened in collaboration with local architecture and design studio Bconnected,’ he says. ‘along with my designs are pieces that fascinate me. ‘s

omething unexpected hits you when you’re in this apartment,’ says businessmanturned-full-time-artist-and-photographer Barry Salzman. He’s right. After stepping away from the buzzing streets of Clifton, the sudden quiet in his apartment is disarming. The energy that usually informs this popular coastline all but evaporates, making way for a more contemplative and serene atmosphere – Barry cherishes this, having worked in the corporate world abroad for over 30 years. ‘My apartment in New York enabled me to experience what was beyond its walls. When I am here though,’ he says, ‘it’s the exact opposite. This apartment wants to keep me contained. The joy and pleasure of living comes from being inside.’ It struck him the first time he saw the apartment, which at that stage wasn’t for sale. Seeing its potential, he made an offer the previous owners accepted. ‘I don’t like using the word “fate”,’ says Barry, ‘but it feels that way.’ While minor elements were updated during the short renovation period, there was very little work done to the three-bedroom apartment, which was once two separate units. ‘The renovation project was really about finishes,’ he says. ‘The floors, ceilings and joinery were all redone but, architecturally, everything is the same as it was. The layout worked so well that I didn’t want

to change it.’ It was during the decorating process that Barry could make the space his own. ‘I wanted to use the apartment as a canvas to survey the local contemporary furniture and art scene,’ he says. ‘I wanted to tap into what is happening here in South Africa, so I spent a lot of time researching local designers and artists.’ Virtually everything in the apartment is by the finest designers and artists in South Africa. Among them are pieces by Vogel Design, Laurie Wiid and Dokter and Misses. Save for a self-portrait by Zanele Muholi – and elsewhere in the house another self-portrait by Tony Gum – all the photographs on the walls are by Barry, whose work often deals with difficult and painful subjects. Two such works are on opposite ends of his dining and living rooms; slightly-larger-than-life prints of women who survived the Holocaust at Auschwitz. ‘I want the art in my home, including my work, to be challenging,’ he says, ‘I want it to invoke conversation. I don’t believe important topics should be saved for spaces like schools and museums. The minute we permit ourselves to stop engaging with these issues,’ he adds, ‘we become complicit.’ Barry considers his apartment home in many ways, but also as an exhibition space. It’s the duality that exists in this seaside home-cum-gallery that makes it interesting. Barry’s exhibition, ‘The Other Side of Christmas’, will run until the end of December at the Deepest Darkest gallery in De Waterkant, Cape Town, and will explore life in the United States that exists beyond the veil of its image of equality and opportunity. an giuliano, the rose-coloured sicilian home and verdant garden of Marquis giuseppe Paternò castello di san giuliano, was built in the fifteenth century on land that had been in the family for over 800 years. Today, it is one of sicily’s most exciting gardens, for although mature trees convey a sense of permanence, it is regularly reinvigorated with new ideas and planting schemes. The marquis and his late wife Fiamma Ferragamo (best known as principal designer at her father salvatore Ferragamo’s shoe empire) spent 25 years creating the seven-acre garden. although it continues to evolve, the layout remains true to the original. There is a generous terrace in front of the house, an enviable collection of ornamental trees, a swimming pool and a large succulent and cactus bed at the entrance. In the nineties, the couple commissioned landscape architect olivia di collobiano to transform a walled orchard and a vegetable parterre into a lower garden known as the giardinetto. a first glance across the lawn reveals at least eight different species of palm trees, norfolk Island pines, australian grass trees 80

(Xanthorrhoea australis) and a towering cedar tree. explore a little and you will find dragon trees, nepalese bamboo, a prized collection of african encephalartos and many other treasures. ever since she became head gardener in 2002, rachel Lamb has worked closely with the marquis. he is always excited to discover new plants, so she regularly rethinks planting schemes and introduces new plant varieties. a recent innovation has seen the giardinetto planted with a heady mix of perfumed and colourful varieties that fruit and flower throughout the year. Mediterranean plants thrive in the garden, despite fierce winter winds and searing summer heat, and thanks to a system of raised, stone water tanks and traditional irrigation channels, so does a collection of subtropical and tropical plants. Tropical water plants were among rachel’s new introductions to the garden last year – as well as varieties such as Caladium bicolor (angel Wings or elephant ears), planted in the damper, shadier areas of the giardinetto. she experimented with red and green leaves


in part of the tropical garden known as the ‘equatorial area’, with white-and-green-leaved caladium under the pergola that divides the giardinetto in two. according to rachel, these were a hit with the marquis: ‘he liked their white and marble-green elephant ears so much he wanted carpets of them.’ The marquis also likes to have every room in the house filled with vases of freshly picked flowers from the garden. as such, this year rachel increased the numbers of allium, narcissi, dutch iris and tulip bulbs, as well as adding more roses and asters to ensure a steady supply of fragrant blooms. The marquis’s mother used to grow dahlias in the vegetable garden and now rachel is staging their return with ‘a collection of brightly coloured, dinner-plate varieties’. The sculptural combination of agaves and aloes, spires of cycads and prickly pear requires constant cutting back to preserve the wonderful architecture of the plants, taking expertise and brute strength to work amongst the prickles and spines.

t was so freshly painted, so achingly new and polished, that it seemed almost childish, a bit like a doll’s house, with everything so perfect. That is why it didn’t take us very long before we clearly saw that we were going to have to step in, make it warmer, more vivid and bring it back to nature,’ says designer rosário Tello, founding partner at Lisbon-based architecture and interiors studio sa aranha & Vasconcelos about the first time she laid eyes on this newly built cabin in the small town of comporta, Portugal. as such, rosário and her business partner, carmo aranha, began reflecting on what they believed was an absence of genius loci in the 170-square-metre home, comprising three bedrooms, two bathrooms, a living room, kitchen and large terrace. The missing pieces, of course, were easy to spot. as rosário had suspected all along, the atmosphere of space needed to be relaxed – even completely grounded – by a mélange of ethnic objets, fabrics and handmade pieces that carried the scratches and scuffs of age. ‘We wanted to bring it closer to the typical fisherman’s hut common in the area, many of which are now very chic residences,’ she continues. ‘That’s why we introduced the straw, which we used to cover some walls and the roof.’ Following a request from the homeowners, the interior walls were to be kept bone white, with the emphasis instead being placed on contrasting natural textures, and the accompanying colour palette of sandy tones. ‘We gave the space quite a tribal air,’ says rosário. ‘I suppose everything about the project took us there, to this idea of the artisanal, that concept of simple living.’ The duo drew heavily from the design vernacular of north africa, adding chairs from Ivory coast, Berber carpets, lamps made with branches and african artworks, in addition to custom furniture pieces designed by them, such as the sofas in the living room, their armrests filled with beach sand. ‘It is a fun but very practical detail, because it adapts to the arm and at the same time has weight, it is not a pillow,’ says rosário. ‘It is great for those times when you just want to sit back and chat for hours.’ This return to a more pared-back way of life is also echoed in the exteriors, where they have once again replicated the town’s vernacular architecture rather than opting for a glaringly polished approach. The result is at once comfortable and sophisticated (without forgetting the essentials, such as the mosquito nets that protect the porch), leaving the real stars of the show to take centre stage: the ocean views, surrounding rice paddies and seemingly endless time to reflect and relax. n

ne would never guess that anything of the original structure remained,’ says Lauren Bolus of Make architects, reflecting on the remarkable renovation of this Camps Bay house built 30 years ago. ‘The beauty of the site, and the desire to embrace it, drove our intention to establish a design with a deliberate sense of transparency. We also wanted to juxtapose the concepts of heavy versus light in the use of materials.’ The house’s facade was entirely transformed. Previously a conventional affair punctuated by meagre windows, it is now an animated canvas of reflective glass contained within a framework of exposed concrete, I-beams and plastered surfaces in shades of grey. ‘In contrast to the geometry of the facade, the sea-facing north elevation is softly staggered to allow the landscaped garden to creep into the build,’ explains Lauren, who led the commission as principal architect together with the project architect, ruvimbo Moyo-Majapa. re-organising the layout across the two existing floor slabs was directed by a less-is-more approach. The original network of rooms gave way to fewer, larger spaces: two en suite bedrooms occupy the entire street level section and, at ground level, a lounge and guest bedroom front a pool terrace overlooking the garden. a third storey was added to meet the client’s request for a spacious open-plan living area that would maximise the sea and mountain views. ‘We didn’t want to restrict the flow of space or impede the panoramic sea-facing vista, which was rather ambitious given a floor area of 230 square metres. But our engineer stepped up to the challenge and worked out a solution that shunned any internal supports,’ says Lauren. The sense of weightlessness is amplified by a monumental concrete ceiling that floats at an angle on strip windows positioned to frame views of the mountains while concealing neighbouring properties. The hero of this space is the kitchen, which is apt since the couple are talented cooks and passionate entertainers. ‘We chose a rossana kitchen by eurocasa for the beauty of the materials and how they contrast as well as harmonise the space,’ she continues. The textures of glass, wood, burnished brass and stone establish a moody character that is offset beautifully by the lighter shades of the walls, floors and concrete ceiling. Furniture was carefully curated to enhance the contemporary environment. In the openplan living space, a ‘Turned’ table by gregor Jenkins anchors the dining area, while a modular sofa from Minotti zones the lounge. although the clients had an existing collection of modern art, the expansive walls invited more. striking pieces by local artists such as Kilmany Jo-Liversage make a vibrant statement against the neutral palette in the living area, and portraits by dion Cupido lend further gravitas to the entrance stairwell, as they merge with the off-shutter concrete walls. ‘The home is a beautiful melding of architecture and interiors. hile television-presenterturned-celebrity-chef Lorna Maseko had always wanted to write a cookbook, for her, it was all about timing. after she finished two seasons of The hostess with Lorna Maseko, she says the book – which also contains a few of her memoirs – felt like the natural thing to do. ‘Writing my cookbook, celebrate With Lorna Maseko, was quite a reflective period of time for me,’ she says. ‘For many of the recipes, I went back to my childhood. METHOD 1. Blitz breadcrumbs,

Flour, for dusting Vegetable oil, for frying 12 boneless chicken thighs KIMCHI: 1/2 red cabbage, shredded 1/2 white cabbage, shredded 2T coarse salt 10 carrots, julienned 1 cup rice-wine vinegar 1T ginger, grated 1/2T sesame oil 1T sugar 2T chilli-and-garlic paste BAO BUNS: 5g dry yeast 1T salt 1 cup warm water 3 cups flour 2T sugar 1/2t baking powder 2 1/2T olive oil SRIRACHA MAYONNAISE:

apricot, garlic, thyme, sage, mustard, onion and spinach in a food processor to form stuffing. 2. Fill the cavity of the chicken with the stuffing, lay on a baking tray and drizzle with olive oil. rub the chicken with butter for golden, crispy skin. season with salt, pepper, and sage leaves. roast in the oven for 30 to 45 minutes on a low heat. 3. remove when the skin is golden brown and crispy. serve immediately.

BAO BUN AND INKOMAZIFRIED CHICKEN THIGHS WITH KIMCHI AND SRIRACHA MAYONNAISE serves 4 to 6

BATTER: 1 1/2 cup Inkomazi (buttermilk) 1T garlic powder 1T paprika Salt and pepper

1/2 cup mayonnaise 1/2 cup Sriracha METHOD 1. Mix batter ingredients,

add chicken thighs, refrigerate for at least five hours, longer is possible. 2. To make kimchi, place shredded cabbage into a bowl and cover with salt. set aside for two hours, or until cabbage is soft. 3. Mix remaining ingredients in a bowl. rinse the salt off the cabbage and add to the kimchi mix. Toss ingredients, then store kimchi in a jar. The longer it is left to ferment, the better it tastes. 4. To make bao buns, mix yeast, salt and warm water in a bowl and set aside for 15 minutes. In another bowl, mix flour, sugar and baking powder.

add the yeast mixture to the dry ingredients, then add olive oil and mix to form a dough. Place the dough on a floured surface and knead until smooth. Lightly grease a bowl and place the dough inside it. cover with clingwrap and allow the dough to rest until it doubles in size. 5. remove the dough from the greased bowl and knead for a further 15 minutes on a floured surface. divide the dough into 12 equal parts, then roll each one into an oval shape. Place a skewer in the centre of each dough ball and fold in half. 6. Place the buns on a greased tray and cover with a damp cloth until they

prove again and double in size. 7. Place water in a deep tray and bring to the boil. Place the bao dough on the baking sheet and into a bamboo steamer and steam, about six to eight minutes. remove the chicken from the fridge, dust with flour and deep fry until cooked – it should be crispy and golden brown in appearance. remove from the vegetable oil and place on a paper towel. 8. To make sriracha mayonnaise, mix all ingredients. serve in a ramekin. 9. serve steamed bao buns with crunchy chicken thighs, kimchi and sriracha mayonnaise. Perfect for Friday nights.

GREEN SALAD WITH POACHED EGGS

spice and flour in a bowl. coat chicken evenly with flour and set aside. 2. add barbecue sauce, honey, soya sauce, Worcestershire sauce, gochujang, garlic, ginger, mustard and water to a pot. Bring to a gentle simmer on medium heat, stirring frequently. The sauce must reduce, thicken and become sticky. 3. In a medium-size pot, heat oil, then add flour-coated chicken and fry for roughly three to five minutes, depending on portion sizes. don’t add too much chicken at once because it won’t cook as quickly. Place on a paper towel to remove excess oil. 4. Take the sauce off the heat and add the chicken, ensuring even sauce coverage. 5. remove chicken and place in a bowl. sprinkle with sesame seeds and garnish with spring onion and chopped chilli.

2T olive oil 250g cauliflower noodles 120g kale, chopped 150g fresh asparagus 25g Peppadews, chopped 1 avocado, pitted and sliced 2 eggs 2T vinegar 1/2 cup cashew nuts 1T olive oil 1T lemon juice Salt and pepper METHOD 1. In a saucepan, sauté

cauliflower noodles, kale, asparagus and Peppadews in olive oil over medium heat, about three minutes. 2. Transfer onto a serving plate, arrange the avocado to your liking and set aside. 3. crack each egg into a separate ramekin. In a pot, bring water to the boil, add vinegar and gently stir in one direction. drop each egg into the water gently and cook for four to five minutes. carefully remove with a large spoon and drain excess water. arrange eggs on top of the salad. 4. Lastly, sprinkle with cashew nuts, drizzle with olive oil and lemon juice, season with salt and pepper to taste, and serve.

GIN-AND-TONIC AND MINTGRAPEFRUIT POPSICLES serves 8 to 10

4 cups water 1 cup sugar 250ml gin (Tanqueray Flor de Sevilla is preferable) 1 cup tonic water, flat 1 cup grapefruit juice (keep broken segments of


grapefruit for garnish. Remove skin first.) Handful of mint leaves METHOD 1. dissolve sugar in water

in a pot on a stovetop. 2. allow to cool, using an iced bowl. 3. once cool, add gin, tonic and grapefruit juice to the bowl and stir. 4. Place a segment of grapefruit, and some mint leaves, into each Popsicle mould, pour in the gin mixture and freeze overnight.

Preheat the oven to 180Âşc. 2. Mix one chilli,

garlic, sesame oil, fish sauce, soya sauce, ginger, honey, lime zest and water in a bowl. 3. score the sea bass on both sides, each incision 2cm apart and 1cm deep.

PANNA COTTA: 5 gelatin sheets 600ml cream 600ml milk 3/4 cup caster sugar 2 vanilla pods 60ml Baileys Irish Cream A sprinkle of icing sugar, for caramelising SORBET: 500g caster sugar 700g strawberries (set aside a few for garnish) 700g raspberries (set aside a few for garnish) 50g mint leaves (set aside a few for garnishing) 1 lime, juiced 500ml boiling water

BISCUIT CRUMB: 1 1/2 cups crushed Tennis biscuits 1t ground cinnamon 1/2t nutmeg 1T caster sugar 150ml melted butter

4. Pour half the soya mixture

over the sea bass, and inside its cavity and scores. Make sure the fish is covered with these aromatic, asian ingredients. 5. spray a baking tray with cooking spray and place the sea bass on the tray into the oven, bake for about 20 minutes. 6. Mix rice-wine vinegar, bay leaf, sugar and peppercorns in a small pot and simmer over medium heat, about three minutes, then remove from the heat. 7. allow to cool, then add cucumber ribbons and carrots. set aside for about seven 112

minutes, or until vegetables taste tangy or pickled. 8. In another pot, mix the remaining soya mixture with beer and simmer on medium heat, about three minutes. 9. once cooked, remove the fish from the oven and place on a serving plate. drizzle the soya mixture over it, and garnish with coriander, spring onions, the remaining chilli and lime wedges. 1o. remove cucumber and carrots from the pot, place on the serving plate and garnish with black sesame seeds. serve with vermicelli noodles or sushi rice.

METHOD 1. To make panna cotta,

place gelatin sheets in a bowl with hot water so that they are fully covered. allow to soften. Mix cream, milk and caster sugar in a pot and bring to a gentle simmer. 2. remove excess water from the gelatin and add it to the cream mixture. add Baileys and vanilla and mix until the gelatin has melted. 3. Pour the mixture into ramekins or glasses and allow to cool. To set the mixture, cover with cling wrap and place in the fridge overnight.

4. To make the sorbet,

melt caster sugar in 500ml of boiling water. stir and allow to simmer. Place strawberries, raspberries and a handful of mint in a blender and blend until smooth. remove sugar syrup from heat and leave to cool (you can speed up the process by placing the pot in cold water with ice). once the sugar syrup is cold, gently and slowly pour it into the blender and blend in short intervals. Lastly, add lime juice and continue to blend. 5. Place the sorbet into a square tub and freeze for two hours. You may need to scrape the icy crystals often with a fork. 6. return to the freezer until fully frozen. 7. Mix all ingredients for the biscuit crumb. Place on a baking tray and bake in the oven for six to eight minutes. 8. once crispy, create a crumb using a fork. 9. remove the panna cotta from the fridge and sprinkle with caster sugar. Blowtorch the caster sugar to caramelise it. 10. decorate with the remaining strawberries and raspberries. 11. serve the sorbet with the biscuit crumb and panna cotta. n
