Ma Richmond and I are busy prepping for the arrival of the Littlest Richmonds for their annual summer holiday at ours. WHen We moVeD in although it was in a great location and of sound construction, it was dark, dated and unloved, with rotten timber window frames throughout. AnD noW replacing the windows and adding a balcony has transformed the exterior and allowed us to make the most of the sea view. while inside we’ve fitted a new kitchen, bathroom and wood flooring and updated the decor. hen we first saw the place, it was dark and drab, with an unappealing interior and rotting window frames, but we weren’t put off,’ says holly. ‘we knew we could change the look and feel of it. and the location – in a quaint Cornish village less than half a mile from the beach – was ideal. we’d enjoyed many family holidays in Cornwall over the years, so finding a spacious, reverse-level property with sea views in such a convenient location seemed like it was meant to be.
Living the high life
IDEA TO STEAL

Most of the homes we’d seen before were tiny cottages, but the barn had been arranged with a large open-plan living room and kitchen upstairs, which we liked the idea of. Having the bedrooms downstairs makes sense, because we spend most of our time up in the living area, where we get to enjoy the views. Structurally, the roof and walls of the stone building were in good condition, but the seaside location meant that the existing timber windows had deteriorated beyond repair. I’m not usually keen on plastic windows, but in this case we had little choice because wooden frames would need to be repainted every year. I managed to source replacement matt uPVC windows and patio doors that have the appearance of painted timber, so it was a good compromise.
Making our mark
Other than replacing the windows, we didn’t do much else to the place until 2012, when we added a new balcony leading off from the kitchen. We created an opening in the thick stone wall to

‘planning a relaxed, mismatched look? use a colour scheme to tie it all together – i went for blue and white’ enable a patio door to be installed. The sun sets on this side of the house and we knew that a sheltered balcony would be lovely in the evenings. At first, I consulted an architect but the balcony he designed would have cost around £100,000 to build. In the end I drew a simpler version myself, and employed a local company to make it in green oak with glass and brushed steel balustrades, for a fraction of the price. We did worry that the new balcony might overshadow the ground floor bedroom windows and cut out some of the light, but we needn’t have been concerned. Plus, we replaced the high-panelled fence with a lower picket design, which gave us more light, too.

Two years later, we decided to give the tired interior of the house a complete makeover. We employed a local builder

remove any handles and give the cabinet a good clean. once it’s dry, sand any flaking paint or varnish using fine grade paper, and wipe away any dust. apply a coat of chalk paint with a small foam roller to give a smoother finish, or use a large brush to add more texture. You will need to use a brush for the detailed areas you can’t reach with a roller.

If the paint is too thick, use water to smooth it out. once dry, apply a second coat. rub any areas that would normally wear over time, such as corners, edges, patterned relief, hinges, handles and knobs, with coarse sandpaper. brush off any dust. add a layer of wax for protection using a lint-free rag, applying in a circular motion. then buff the surface to finish.

We sourced the softwood floorboards through a local timber merchant and had them laid on the first floor, which we finished with a white oil, for a bleached, seaside feel. In the kitchen, I teamed inexpensive cabinets with oak worktops and a pale-blue painted island unit, which was made to order. I found the company online, but it took them absolutely ages

to make the island unit, although the end result is fantastic. Previously the openplan kitchen/living room had felt quite bare and clinical, with painted plasterboard walls, so I introduced timber panelling, running along the entire back wall of the space, and painted it pale blue. It creates a useful display shelf and conceals ugly pipework and wires in the process. I also fitted painted radiator covers. When it came to the family bathroom, we got a builder to move the position of the bathroom door to create more

Why it works

disguise an uneven wall with tongue-and-groove panelling. Panelling up to dado rail height is a popular choice. Fix horizontal battens to the wall to nail your panels onto. You’ll need three battens for dado-height panelling: one at floor level, one level with the top of the panelling, and one mid-way. Secure one panel at a time, using a spirit level to ensure it’s straight. For a neat look, hammer nails in at an angle through the tongue into the batten behind, before adding your next panel so nails are hidden in the grooves. once all your panelling is fitted, neaten the top edge with a length of trim and the bottom edge with a length of new skirting.

space and to strip out an old, damp cupboard to accommodate a new walk-in shower. We discovered an original bread oven concealed in it and turned that into a feature alcove in the shower. The builder also discovered that the existing bathroom floor was laid directly on top of sand, so he had to install a new concrete floor with a damp-proof membrane before we could lay the pretty ceramic floor tiles.

I sourced all of the fixtures and fittings for the barn myself as I run my own shop in Totnes, Holly Keeling Interiors (hollykeeling.co.uk). I love hunting out furnishings and vintage items online and from markets and auctions. I had quite a tight budget for this property, which is why we did the work over time, spending more on fixtures that we wouldn’t be able to easily change later, and compromising on furniture and decor bits that we can easily switch up in the future. It’s amazing how different the barn feels now and having the balcony has really changed the way we use the space.’

omething I learnt very early on in our property search is that I’m a go-with-your-heart kind of girl,’ says Natasha. ‘After making the decision to buy, eight years into mine and my boyfriend Ryan’s relationship, I got a little swept up in the romance of it all, imagining how our lives would look in each house we viewed, and made the mistake of becoming too attached to every one. And sure enough, it never panned out quite how I saw it happening in my head. Until we found what we both felt sure was “the one” and came to an agreement with the seller. Sadly, after we’d spent three months waiting, the seller dropped out, leaving us exhausted, fed up and – even more annoyingly – in the peak of the house price increase.

We’d had our eye on our ideal area for months, as both of our parents live within walking distance, but we’d been priced out and our previous experiences had left a sour taste in my mouth. I didn’t like the area or the road, and the all-magnolia decor gave me a headache. Weeks and many more viewings later, though, I had a change of heart. It became clear that, despite how much I’d disliked it, it was the most promising property we’d

Choose a light but sturdy branch, allow it to dry out and strip using a wallpaper scraper, then sand off any remaining bark. Line up heavy-duty hooks on the ceiling towards each end of the branch, marking the position, ideally above a joist. Fix the hooks and, using garden twine or rope, line up with the ceiling hooks and loop around each end of the branch, or tie them on securely. Display planters, vases, faux or real leaves, feathers and hanging decorations by looping string over the top of the branch and tying a knot to secure.

From beige to bright
Of all the colours on the spectrum, beige is probably my least favourite. Unluckily, it was also the one colour that featured in every room of the house – even the washing machine had a beige rim! Redecorating and adding some much-needed vibrancy was top of my to-do list, but we’d all but blown our budget buying the house, which meant in order to rid it of the magnolia quickly we’d need to get creative. Thankfully, I’m quite savvy when it comes to low-cost decor updates, so we weren’t short on ideas. In the kitchen, we painted over the tired tiles and cupboard doors for a fast fix, and gave grubby laminate flooring elsewhere a whitewash, which made the rooms instantly brighter. The modest dimensions meant that most rooms

fter being so excited to get the keys on moving day and begin our new life in our new home, i cried with disappointment when we finally walked through the front door,’ says Laura. ‘Seeing the house stripped of the previous owner’s furnishings, with its damp bathroom, skirting hanging off the walls and silverfish in the kitchen floor, my bubble burst and i started to realise the full extent of the work needed – it was so much more than i’d ever anticipated it would be. Before moving here we'd spent a full year renovating a flat on the other side of town from the foundations up, reinstating period features along the way. However, when we actually starting living there, it didn't pan out as we'd imagined, as there was so much noise from the family living in the flat above us. It was heart-breaking to leave after we had put in so much hard work, but we agreed we couldn’t cope with noisy neighbours so we sold up and bought the cheapest house we could afford in the area: this place. It didn’t have quite the same footprint as our flat did, but it didn’t have the sound of footsteps overhead either, so it was a compromise we decided we were happy to make.
The renovation
Despite its flaws, the house was habitable. It had been partially modernised on the ground floor with walls removed between the kitchen, dining and living room so it was all just one big open space. The kitchen area was very small (6sq m) and the bathroom was downstairs, just off the kitchen. But the house did have a lot going for it, and the big plus was that it still had original fireplaces in

the bedrooms, and just enough character left in the downstairs rooms. We always knew we would move the bathroom into the third bedroom upstairs, turning the property into a two-bed, but making the layout much more workable for us. So, as soon as we could, we knocked the kitchen through and dug down to put in a new, much-needed concrete floor with damp-proofing (so long, silverfish!). We also installed double doors to make the most of the southwest-facing garden. Then, to give us the option of closing the kitchen off when we wanted to, we chose to reinstate the previously removed wall and sourced an original Victorian glazed door in keeping with the style of the property. Thankfully, we had an amazing builder who was hard-working, tidy and extremely helpful throughout all of the work, which made the process of living without a kitchen for three weeks so much more bearable. Plus,

once you’ve found the right spot, measure out the shape using decorator’s tape, making sure there is an even space either side of the frame in relation to the furniture or wall edges. create a border by using tape to mark out a second smaller shape inside your first. then, paint in between the two strips of tape in your chosen colour. a metallic emulsion will create a striking effect, or try a gloss for a contrasting sheen to matt walls. the inner area of the border can be left the same colour as the wall, or you could paint it a stand-out shade (like Laura has) to complement your art.

Why it works
Personalising the space I’m one of those sensitive people that are really affected by their surroundings, so what the house looked like inside was very important to me. It wouldn’t be an exaggeration to say I'd get quite distressed living in a new build with no personality, so I gave a lot of thought to our decor. I like to think of my style as timeless – muted tones with just a pop of colour and a mix of vintage and modern – so I tried to channel this throughout the house with predominately pastel-painted walls (the bathroom being an exception) and a blend of both new and secondhand furnishings. I also love seeing the history and fabric of the building. I’d have ceiling joists and brick walls on show everywhere if I could! Sadly, that wasn’t

Interior inspiration I get decor ideas from anywhere and everywhere. Lately, more and more of them come from the interiors community on Instagram (where I also share ideas of my own @talking_terrace). The sheer amount of talent on there never ceases to amaze me. I’m not really a trend shopper and love nothing better than a rummage around a junkyard or even the shop at the rubbish tip. Saying that, interiors trends are picked up so quickly by the high street now, just like fashion, so I find I do tend to buy the odd bits and bobs that maybe I wouldn’t have dreamt of buying before. Start with two standard wooden shelves and a set of brackets. cut one of the shelves to around two thirds of its size, or smaller if preferred. Use a tape measure and a pencil to carefully mark out four holes on the smaller shelf, equidistant from the edges. then drill the four holes. Place the smaller shelf on top of the larger shelf and use a pencil to mark where the holes are. Measure halfway between the pencil marks on the left side and drill a hole at the midpoint. repeat on the right side. Fix the brackets and large shelf to the wall. Use two evenly sized pieces of string or rope to hang the smaller shelf. thread the rope from the top hole of the large shelf down through the back hole of the small shelf and then up through the front hole. either knot or wrap wire around the two adjoining lengths to secure. tie the rope at the top. repeat on the other side of the shelf.

Making a home
The house has come a long way since moving day, and I’m proud not only of how much work we’ve done to turn it from a shabby terrace into a home that we enjoy spending time in, but also of how much of the work we’ve managed to successfully do ourselves. We had thought that we'd learnt a lot from renovating our previous flat, but this house threw a whole new set of challenges at us. Old houses are always
like opening a can of worms – once you’ve seen something, whether it’s rotten joists, a bodged chimney breast removal or a bit of dodgy wiring, you can’t un-see it, you have to deal with it. We didn’t skip or smooth over any of the boring, expensive jobs that needed doing, and I think that decision served us well in the long run. That said, our interiors are still evolving. In fact, I think friends and family probably get a bit perplexed by the amount of “subtle” changes that go on! but as long as our little family is happy here, that’s all that matters.’

‘Colour match worktops and flooring to tie your scheme together‘
y old kitchen looked like it belonged in a youth hostel or a student house,’ says Leigh. ‘It was just a bland backdrop of beige and all my lovely chrome and silver accessories looked incredibly drab against it. I love to travel and was faced with the choice of an amazing trip to the Far East or a kitchen makeover. So I decided that if I could keep the budget to under £1,000, I could do both! I was inspired by my fearless mother – there was rarely a week that went by without me returning home from school to find her elbows-deep in a DIY project.
Keeping costs down The cabinets were perfectly sound, but the beech-effect doors were just boring, so I decided I’d try my hand at painting them myself. I researched the paint online, eventually choosing a technical paint specialist. Priming and painting was a lengthy process: I learnt that allowing days between each coat is the key to get the paint to “cure” effectively. I gave the units four coats of paint and left a full 48 hours between each coat. And I’m happy to report they have passed the spilled pasta sauce test!
Doing it myself The biggest challenge was the floor. It’s a laminate that I repurposed from my guest bedroom. It’s not as daunting as it sounds, as it un-clicked and re-clicked very simply, but as I knew I had very little to spare, I drew a scale plan and cut each plank out of paper, giving each a number. I spent a tense weekend on the job but it worked amazingly well. The tiling was an education – I watched some

great YouTube tutorials for hints and tips. The tiles took a very long day to apply and i added the grout using my own, slightly unorthodox method – using a piping bag and squeezing the grout in the cracks. i’ve never seen it done before, but it made light work of a messy job. i did all of the work myself but had to admit defeat with the worktops and got a professional in. With four metre lengths, they would have been impossible for me to lift, let alone install. i also paid a gas engineer to literally unhook the hob and then reinstall it. he was only in the house 10 minutes, but it was £50 well spent.
Learning new skills
To keep costs down, i made sure nothing was wasted. i used an offcut of the worktop vertically to clad the end of the unit, which gives it a chunky, expensive feel. i also used a couple of lengths of the laminate floor to cover the cabinet baseboards. i simply glued them into place and weighted them down with heavy books until they were dry. Due to all these DiY jobs, i’m now the proud owner of a very flashy drill, which made fixing up the brackets and shelves reasonably easy, although i practiced on the wall above the units before the tiles went up. i love open shelving. i went for a single row of shelves instead of wall units because i wanted to display my kitchenware, ingredients and some other favourite things, like my collection of white ceramic jugs. The shelves were made from a length of MDF, plus wooden brackets from ikea, and i then painted all of them to match the cabinets. as a final finishing touch, i painted the end wall above the tiles in a cool blue to give the room a focal point. i really couldn’t be happier with my new kitchen. My mum would be so proud of me!’

Give your kitchen cupboard doors a new lease of life with a fresh lick of paint
Where should I start? You’re less prone to runs and drips if you paint your doors on a flat surface. Lack space or can’t remove them? Just cover the hinges with masking tape, taking care to conceal all the metalwork and paint in situ. Always remove the handles, and put dust sheets or newspaper on the floor.
Do I need to prep them? Yes – no shortcuts! Cleaning is essential to remove kitchen grime. Use a specialist degreaser like Zep Commercial All Purpose Cleaner & Degreaser (£12.99, Screwfix) if needed. Next, key the surface with a light sandpaper – 150-250 grit is fine – to help the paint grip. Wipe dust off with a damp cloth and allow to dry.

How about primer? Primers create a base for paint, and stop knots showing through. Pick a primer suited to the surface you’re painting, or go for a universal primer like Ronseal’s One Coat All-Surface Primer and Undercoat. Wood primer is only for bare, unpainted wood. Some furniture-specific paints don’t require primer – this will be clearly stated on the tin.
What paint should I use? It depends on the door type and your desired finish. On laminates, the safest option is to buy a specialist multipurpose paint designed for wood, melamine and MDF. Any eggshell or interior wood paint will work on wooden or painted kitchen doors. Chalk paints are suitable for kitchen units, but you’ll usually need to seal the top coat with wax or varnish.

Any tips for success? Take your time – this is no afternoon makeover project. It’s tempting to slap the paint on thickly and quickly but you’ll regret it when the slightest scuff chips a whole chunk of paint off. Allow at least five to seven days to build up the paint in thin layers, lightly sanding and wiping off dust between coats. Allow a minimum of four hours’ drying time for primer, and 24 hours for all other coats. expect to apply at least two coats of colour.

After years of neutral decor, a new home inspired Becky to experiment with colour and pattern in her bathrooms
W
e needed a house with more space,’ says becky. ‘although this place was dated, it was just about liveable and in our budget – not easy to find in London. my husband Jim and I updated the fuse board first of all, and managed with the old water tank heating system. We were planning to start with a new kitchen, but when the shower started to leak on our first weekend here, we decided to put that project on hold and focus on the bathroom. Our bathroom was a good size, but the boxy shower cubicle and hot water tank cupboard encroached into the space. Making the room function better was our priority, and gave us the perfect excuse to update the heating system and install a new combi boiler in the kitchen. We also wanted a bigger walk-in shower, so I began researching showers, looking for a cubicle size and shape that wouldn’t feel bulky. The curved design we chose is perfect as it’s narrow at the back and widest at the front where you need the space most. When the shower tray first went in, it seemed so small, but the cubicle came together once the glass panels had been fitted.

We’d decorated our old flat in shades of grey, knowing neutrals would help us sell it later on. This time, I wanted to play around with colour. When I spotted some teal crackle metro tiles, I surprised myself by making them the focus of the room. I also went for black, star-patterned floor tiles. Choosing the painted grey bathroom suite was easy, as I wanted a traditional scheme to suit the age of the house. We had a rocky journey with the fit-out, which was frustrating because I like

Patterned flooring as well as encaustic, ceramic or cement flooring, try vinyl sheets or tiles, a hard-wearing option that’s softer and warmer underfoot. a ready-made set of patchwork tiles can help create a relaxed but varied pattern guaranteed to work together in colour and style. Play around with layouts of modern, geo or circular shapes to create a unique pattern. a bold design works well in plain hues, whether in white or an accent colour from the tile. If you’re choosing a large-scale pattern on the floor, go for a smaller-scale pattern on the wall, and vice versa. monochromatic shades of grey or black and white will go with vibrant wall colours and match almost any scheme. You don’t have to cover the whole floor with pattern – tile the middle section of the room, just the edges or use them around a washbasin or freestanding bath.

on the window ledge during a course Jim bought for my birthday. next to this, i’ve hung three decorative fish we bought from an artist in Cornwall on the weekend we visited to write our wedding vows, and i fitted the reclaimed scaffolding board shelves to chunky metal brackets. i’m really pleased with the bold colour scheme. We’ve really got into blues now and not only have i painted the joinery on the stairs and landing blue, but i plan to use it in the guest bedroom, too!’

Regular, square-shaped trays take up little space, work well in corners, and suit a wide range of door styles, including pivot or bifold doors. For a more spacious shower, go for a larger, rectangular tray, which can fit in a corner or against one wall with two side panels.
If space is tight, go for either a corner-fitting quadrant tray that has a curved front, which will take up less space than a square design, or a pentangle tray, which is similar but with a flat front. Offset-quadrant or pentangle designs fit into a corner, but are longer on one side to give a little more showering space inside. D-shaped trays are curved and compact and stand flat against one wall.

In bigger bathrooms, a walk-in shower is a more luxurious and spacious option. There are different variations to choose between, from standard rectangular designs that work with straight fixed screens, to P-shaped trays that fit with curved screens and can be leftor right-facing. hen it came to designing the garden, I wanted to combine influences from mine and my partner’s childhoods – I grew up in the South of France and Fernando is from Trinidad,’ says aurélien. ‘There's so much to love about Trinidad, it’s Carnival all-year round and vibrant colour everywhere! I thought we could mix lots of colour with decorative elements from my Mediterranean background, introducing things like mosaic tiles, home-grown herbs and alfresco living!

When we first moved in, the garden was an overgrown patch of lawn, invaded with brambles and weeds. We spent days digging it out until we could see how much room we had to play with. It’s a north-facing garden so I spent a lot of time working out where the sun hits at different times of the day. In the morning it’s near the back of the house, so I put an armchair there for a morning coffee spot. In the late afternoon it shines at the back of the garden, so I made a lounging area to enjoy the sun.

‘Put hooks on the back of the shed door to hang gloves, trowels, twine, scissors and bbq tools’ lounging on the daybed under the palm tree with a good book. We couldn’t afford an authentic Moroccan daybed so I made one out of wooden pallets. I created back rests and made the seating pads with thick foam covered with batik fabrics like those traditionally found in Trinidad. I finished the look with a mix of Mediterranean style cushions that I either made with leftover fabric or found on sale.
Pop to the bar! Fernando came up with the idea of customising the shed with a fold-down door on the side to create a bar. ack when we were children, many of us spent hours building dens, turning any spare nook of the house and garden into a hideout. Despite now living in an age of PlayStations and iPads, no digital world can beat the magic created through imaginative play. Encourage little ones to spend time outdoors by creating this garden teepee. It’s made using foraged materials, making it a fun (and free!) project for the summer.
Decorate with trailing ivy

Gather materials Head to the woods or local park and forage four to six good-sized fallen branches. Use secateurs to remove side branches, and wear gardening gloves to avoid splinters. Pick your sPot Find a suitable spot in the garden to build your den. A sheltered area on grass is ideal, but make sure you can still keep an eye on children. make the teePee Gather the branches together at the top, holding them upright. Spread the opposite ends out like legs, to create a teepee shape. Tie the branches together at the top, using twine or string. Starting at the top, begin winding lengths of the ivy down and around the legs of your teepee. Block printing is one of the oldest methods of printmaking on cloth and is a simple and fun way of creating your own fabric designs. Originating in East Asia, traditional blocks are similar to rubber stamps but are usually made from wood and often depict ornate Indianinspired motifs. Getting started is easy! Takes 20min serves 4-6
300g pennette pasta (or other ½tbsp extra small pasta shapes) 1tbsp light olive virgin olive oil 1 onion, peeled and finely oil 190g pack cooking chopped 300g mixed chorizo, sliced Juice of ½ tomatoes, sliced Large handful of rocket lemon Large handful of basil leaves, Small handful of flat-leaf torn parsley, finely chopped

Cook the pasta in a pan of boiling water according to the pack

instructions. Drain, toss in the extra virgin olive oil and set aside. Heat the light olive oil in a frying pan over a medium heat and sauté the onion for 3min or until translucent. Add the chorizo and cook for 3min – turn up the heat slightly to brown. Toss with the pasta, tomatoes, lemon juice and some seasoning, allow to cool slightly, then stir though the rocket and herbs. You can serve this dish at room temperature or cold – add the rocket and herbs just before serving.

CHICKEN CHIMICHANGAS Takes 25min serves 4 1 Knorr Chicken Stock Pot 1tsp chipotle paste 2 boneless, skinless chicken breasts 2tbsp olive oil 2 onions, chopped 1tsp ground coriander 1tsp cumin 2 garlic cloves, crushed 200g (½ can) chopped tomatoes 400g can pinto (or cannellini) beans, drained 4 tortilla wraps 8tbsp tomato salsa 3 spring onions, chopped Fresh coriander, to serve

Put the Stock Pot in a pan with 200ml water, the chipotle paste and chicken, and simmer for 15min. Meanwhile, heat 1tbsp oil, fry the onion with the ground coriander and cumin. Add the garlic, tomatoes and beans, and cook for 5min. Remove the chicken and shred with two forks. Add to the tomato mixture with 100ml of the stock to just moisten the mixture. Brush one side of each tortilla with olive oil. Spoon a quarter of the chicken mixture into the centre of each. Fold in the sides and heat for a few min in a hot sandwich toaster. Serve with salsa, spring onions and fresh coriander.

Separate the greens at the stems and wash. Drain well and cut away the thick stalk ends. Roll the leaves, a few at a time, into a cigar shape and slice thinly. Mix the greens in a bowl with the shredded cabbage, spring onions, dates, walnuts, apples and parsley. Whisk together the dressing ingredients until emulsified and season with salt and pepper. Pour over the greens and toss until well mixed.

Heat a non-stick frying pan, add the bacon and fry for 8min, until golden and crispy. Push to one side of the pan. Add the hot dogs to the pan and cook for 10min, turning as needed, until warmed through and lightly browned. Cut the rolls down the centre and spread with the tomato salsa. Pop some lettuce into each roll, then add a slice of bacon and hot dog into each one. Sprinkle each hot dog with cherry tomato halves and pickled onion slices. PROSECCO BERRY JELLIES Takes 20min, plus seTTing serves 6 5 gelatine leaves 200g red berries (raspberries and/or redcurrants) 200g purple berries (blackberries and/or blueberries) 50ml pomegranate juice 50ml blackcurrant cordial 25g golden caster sugar 500ml Prosecco

Soak the gelatine leaves in cold water for 5min to soften. Divide the fruit between six glasses – red berries in three glasses, purple berries in the other three. Warm the juice and cordial in two small pans. Add half the sugar to each and stir until dissolved. Remove from heat. Squeeze the excess water from the gelatine, put half into each pan and stir into the juice until dissolved. Cool slightly, then add 250ml of Prosecco to each pan and pour into the glasses. Chill for at least 4hr until set.

Takes 15min, plus marinaTing serves 4 3tbsp extra virgin olive oil 3tbsp runny honey Large handful of oregano leaves, finely chopped Zest and juice of 1 lemon 2 x 225g blocks of halloumi cheese, cut lengthways into thick slices Pitted black olives, tomato slices and red onion slices, to serve

In a wide bowl, mix the oil, honey, oregano, lemon zest and juice until smooth, add the halloumi and set aside to marinate for 15min (or overnight, if you like). Heat a grill or barbecue and grill the halloumi for 3min or until browned and bubbling. Serve with olives, tomatoes and onions, and drizzle over any leftover marinade.

Roughly smash up the meringue nests, so there is a good mix of large and small pieces. Lightly whip the cream. Get four medium sized bowls – one each for the raspberries, cream, meringue and passion fruit pulp. Give everyone a glass and invite them to create their own Eton Mess, adding as much fruit, cream and meringue as they like.

PEA & POTATO CAKES Takes 30min makes 8 750g sweet potatoes 75g petits pois 100g halloumi, diced Zest of 1 lime 75g polenta 1tbsp olive oil Salad and sweet chilli sauce, to serve

Prick the sweet potatoes all over with a fork and microwave for 10min, until cooked through. Remove from the microwave and carefully slice in half to cool. Boil the petits pois for 3min, drain well and gently dab with kitchen towel to dry. Scoop the sweet potato filling into a large bowl. Stir through the peas, diced halloumi, lime zest, 50g polenta and a pinch of black pepper. Shape into eight patties and dust with the remaining polenta. Heat the oil in a large shallow frying pan and cook the patties for 4-5min on each side, until hot and crisp. Serve straight away with salad and sweet chilli sauce.

Slice the top off the loaf of bread and hollow out the inside, reserving the top, leaving just the shell. Spread the inside with the olive oil and season well with black pepper. Layer the salami, tomatoes, red onion, basil, olives and mozzarella to fill the loaf. Fix the top of the loaf back in place and tightly wrap in greaseproof paper, tying it up with string. Place in the fridge for at least 2hr or overnight. Remove and allow to return to room temperature before slicing.
