Meet Philly’s brew queen

Italian-born immigrant grew up in land of grapes, but has transformed Philly’s beer scene Founded city’s Dock Street Brewing back in 1985 You might call Rosemarie Certo the Ben Franklin of beer making. Or at the least, the Betsy Ross of craft brewing.

Certo opened her first brewpub, on the corner of 18th and Cherry streets, with a simple idea: Let’s make some good American beer and sell it. That was in 1985. Today, her company, Dock Street Brewing, is a Philadelphia institution and bastion for beer lovers. The small brewpub in Center City has moved to 50th and Baltimore in West Philadelphia, but the philosophy remains the same.

“When we opened in 1985, our corporate mission was to elevate the status of beer because up until then beer was relegated to sawdust on the floor and chicken wings,” Certo said. “And now we’ve raised the level of beer and brought it to a noble beverage.”

Certo is a self-made American success story in its truest definition. She was born in Sicily, then moved to Philadelphia when she was 10. She is a philosophy and humanities major who had no prior experience running a business.

Certo simply started home brewing with hope that someone would like it and buy it.

“It came from an innocent idea, you can’t buy good American beer so let’s make it and then we sell it,” Certo said. “If we knew what we were getting into, we probably would have been too scared or

At first glance, Certo doesn’t look like your stereotypical brewmaster. Ask her how old she is and she just smiles.

“No lady will tell you that,” Certo said. “Our consulting brewer once told me that a woman who will tell her age will tell anything.”

And Certo’s delicate accent does little to solve that mystery. Still, it’s hard to imagine how an Italian immigrant acquired a taste for suds growing up in Sicily. Yet that’s exactly where it took root, in the grape and olive fields.

“As a child, I learned how to do things with my hands,” she said. “You grow grapes when you make wine, and that was all part of my makeup when I came to America.”

recent project is a collaboration with the Four Seasons.

Certo said the world-class hotel actually approached her with the idea. After she said yes, the Four Seasons sent their top chefs to Dock Street to meet with her brewers and figure out how they

could make a “really special beer.” The result has been “A Beer Four All Seasons.”

The line has produced three seasonal brews already: Truffled Old Ale, Caliente

Golden Ale and Bubbly Wit. The beers are poured exclusively at the Four Seasons’ Swann Lounge. They will debut their fourth one at next month’s Philly Beer Week.

“None of these beers have ever been done before,” Certo said. “We’re going to be releasing the fourth seasonal in June for Philly Beer Week, and that’s going to be with a Verbena herb and sour cherry.” METRO/MG

The same day legislation to extend the city’s concession agreement for bicycle rentals in Fairmount Park was introduced, City Council President Darrell Clarke said Thursday that the governing body is also looking into another model of bike sharing citywide.

While bikes can currently be rented in Philadelphia through isolated companies, primarily at certain tourist locations like Fairmount Park, Clarke said he’s interested in investigating a more comprehensive citywide system of point-to-point bike shares.

“They are primarily recreational right now, but bike shares could act as a transit situation,” he said. “If people could rent a bike near their home, ride it to work and leave it at a bike station near their job, it might be more advantageous.”

It’s not the first time Council has considered the issue – in 2008, they passed a resolution sponsored by Councilwoman Blondell Reynolds Brown requesting the Deputy Mayor of Transportation and Utilities to conduct a feasibility study for what they called “public use bicycle stations” for the entire city.

The results of the study, released in 2010, found there was a robust market for the service in Philadelphia and suggested starting off with 1,750 bicycles in a 15-mile area stretching from Center City to parts of North, South and West Philadelphia.

But with a projected $4.4 million per year price tag, the project fell by the wayside as the city had to make difficult financial decisions during the economic downturn. Similar challenges remain for the city.

Philly still lags behind other cities Philadelphia lags behind other U.S. cities when it comes to bike sharing.

Boston, New York City, Baltimore and Washington are all expected to have point-to-point systems in place by this summer, according to nonprofit Bike Share Philadelphia, which says members have sent more than 2,000 letters to Nutter since 2008 advocating for a similar program here. Silicon Valley startup Pinterest raised $100 million from a group led by Japanese online retailer Rakuten Inc., valuing the company at about $1.5 billion and underscoring the huge investor appetite for social-networking companies.

Pinterest, an online scrapbook where users can “pin” images and follow others, has grown from less than 1 million users in May 2011 to about 20 million in April, according to IT research house comScore.

In the campaign silly season, faux scandals erupt with the reliability of Old Faithful. And much like the famous Yellowstone geyser, they’re mostly gone with predictable haste.

So it was on Thursday morning, when a front page story by the New York Times set the Internet a-twitter with snark. The article in question, “G.O.P. ‘Super PAC’ Weighs Hard-Line Attack on Obama,” detailed a provocative proposal for billionaire conservative Joe Ricketts to mount a super PAC offensive reiterating links between the president and his former pastor, Rev. Jeremiah Wright.

The proposal — from which Ricketts distanced himself following hours of Web mockery — played on right-wing fears that President Obama was never properly vetted by the media and that untold stories of his youth hold the key to understanding his allegedly radical beliefs. (The ones, presumably, that he hides beneath his disappointingly moderate exterior.)

One of the most damning elements of the report was the suggestion that Ricketts’ Ending Spending Action Fund find an “extremely literate conservative African-American” spokesman, one who can isolate the group from charges of racism while calling attention to the reality of Mr. Obama’s cultivated image as a “metrosexual, black Abe Lincoln.”

“That record was cool some four score and seven years ago!” Something that might be said by “metrosexual, black Abe Lincoln,” maybe.

Twitter and assorted news outlets had a good deal of fun over it all (Call him the Great Manscaper!); Mitt Romney gave a half-throated condemnation of attack ads while taking the opportunity to attack his rival; and Ricketts said he’d spend his $10 million on another attack.

Meanwhile, we learned the lengths to which big-money donors may go to get a Republican in the White House. For billionaires like Ricketts, no price is too high if it can get us to buy into the myth that Obama is a dangerous extremist — so they can swoop into power and unfurl their own very real dangerous, extremist agenda.

Make no mistake: The super PAC era has only just begun.

‘The Dictator’’s uncle MELINDA SUE GORDON

Soon to play the rival to Tony Stark in “Iron Man 3,” Sir Ben Kingsley first takes on Admiral General Aladeen in “The Dictator.”

T

he man who played Ghandi has portrayed many other heavy characters throughout his long career, but a king of comedy, he’s never been. Sir Ben Kingsley is the first to own up to this, but it seems worth giving it a shot in order to work with a man whom he mentions in the same breath as Charlie Chaplin.

“The great ones, like Chaplin and Sacha Baron Cohen — definitely say them in the same breath, definitely — make it look effortless,” he says. “It’s not effortless.”

In the latest film from the man responsible for Ali G, Borat and Bruno, Sir Kingsley portrays the menacing uncle of Admiral General Aladeen (Cohen), the dictator of fictional African nation Wadiya.

Though he’s not dropping the one liners the way Baron Cohen gets to, this English actor brings an air of sophistication to the film, and even to our own interview with him.

With any Sacha Baron Cohen project, the humor comes out of how truthful it is. What’s the most important ‘serious message’ that this film delivers?

I am hoping personally that it will reveal in people perhaps some hidden fears or prejudices. ... [Baron Cohen and his creative team] voice certain phobias, prejudices. … It might cause people to feel resentment, not offense, because Sacha’s character is saying things that, if they said it, they would be arrested or lose their job, but they are capable of saying those things. I think that’s where satire is really valuable.

You got to spend a lot of time holding Baron Cohen’s hand throughout the film. How was that for you?

That is the relationship, you see. I am his uncle, and I know that he’s still a child, so whatever street he has to cross, be it in the U.N. or arriving in New York, or going to a nuclear facility, he’s crossing a

It did not receive a Best Picture Oscar nomination. Why do comedies never get recognized in that category?

I think there’s this misconception that’s completely understandable, that comedy is easy — that we’re basically having fun. I could talk for years trying to dispel this myth, but nobody wants to hear. Sacha was talking to me about the science of comedy — how he numerically grades from 1 to 10, the value of a certain reaction.

Where it is in the film, whether to go for two 7s or cut them and go for a 10 and always to keep poking at the [prejudiced] nerve that I was referring to earlier.

So then would you put this performance on par with playing Ghandi?

My body chemistry changes to the same degree on the word action, no matter what I’m doing. Whether it’s a marathon or a series of sprints, I still have to use the same muscles, so I can’t really differentiate.

We hear you’re going to play “The Mandarin” in “Iron Man 3” — can you confirm that?

Almost — but not quite. I’ll be able to confirm them by the end of this month.

Why do a comic book movie?

I loved comics as a kid, not so much as an adult, but I really would love to go back to that world. It won’t be fun. It’ll be a lot of work.

So with all the pregnancy horror stories — both onscreen and off — might Lopez make like her character and consider adoption as an option for her next child?

“It’s funny, because before the movie I never really thought about adoption at all. I just always wanted to have my own baby,” she says. “But after the film and during the making of the film, when I held those two little Ethiopian twins, I fell in love instantly. It really oc-

curred to me: I can see how somebody can do this, how it is so easy to embrace a child who has nothing. It’s really a beautiful, selfless act of love, and it’s something that you go, ‘OK, I understand these feelings, I get this, I know how this happens.’”

Lopez and Diaz talk giving birth “What to Expect When You’re Expecting” — based on the best-selling pregnancy manual — is supposed to be about the highs and lows of having a child, but stars Jennifer Lopez and Cameron Diaz are more interested in the more horrific aspects. “I had a C-section, but my sister gave birth six months later,” Lopez remembers. “She asked me to be in the delivery room with her. Because I had twins and it was recommended for me to have a C-section, there was a part of me that had thought, ‘I didn’t get to do it the way that everybody else does.’ But when I saw my sister pushing that baby out I was

Diaz, who doesn’t have any children of her own, explains that she got a crash course in the gruesome realities at age 25 when her sister gave birth — and it may have shaded her own views on pregnancy. “I was in [the delivery room] and they were doing a C-section,” Diaz remembers. “There was just, like, blood everywhere, my sister’s guts out on a platter — the inside, all of her intestines. It was crazy, dude.” As grisly as that sounds, Diaz insists the other option isn’t that appeal-

ing, either. “The vaginal delivery was crazy,” she says. “No man should ever see it! Never let a man see that.”

Luckily, the film focuses on many other aspects of being pregnant. For Diaz, part of the fun of making “What to Expect When You’re Expecting” was the prosthetic enhancements she got to wear — even if they didn’t stand up to the elements.

“My pregnant breasts were really amazing,” Diaz says with a laugh. “I was like, ‘Wow! Those are awesome!’ But then, when they put them on in the Atlanta heat, I aged about 40 years by the end of two hours.

They were literally hanging down to my hips! They were just drooping down, like they were just melting off my body, and it was really not attractive.”

I go to the produce section and buy everything that looks good. And then I keep a really well stocked pantry. I want people to say, â&#x20AC;&#x153;Iâ&#x20AC;&#x2122;m going to the store to buy what looks good, and then Iâ&#x20AC;&#x2122;m going to come home and thereâ&#x20AC;&#x2122;s a cookbook I can look at thatâ&#x20AC;&#x2122;s going to tell me what to do with the stuff I just bought.â&#x20AC;?

And hopefully Mark Bittman tells you what to do with it.

It goes back 12 years, actually, to the publication of the original â&#x20AC;&#x153;How to Cook Everything,â&#x20AC;? when there were three complaints. One â&#x20AC;&#x201D; which is very amusing â&#x20AC;&#x201D; is it doesnâ&#x20AC;&#x2122;t have a recipe for chicken pot pie. Then the more serious complaints were that it was overwhelming â&#x20AC;&#x201D; and some beginners did not like it. They picked it up and they said, â&#x20AC;&#x153;I donâ&#x20AC;&#x2122;t even know where to start.â&#x20AC;? Those people would come up to me and say, â&#x20AC;&#x153;I donâ&#x20AC;&#x2122;t want to cook everything. I want to cook something.â&#x20AC;? The other complaint was that it didnâ&#x20AC;&#x2122;t have photo-

well the first time. It means you need to be willing to make mistakes, and there’s a level of maturity that indicates. You have to say, “I have to go through a learning curve on this.

Learning curves can be fun. I’m not going to be very good at it — but if I apply myself, after a while I’ll be good at it, and that will be really cool.” And that’s the attitude you need to have.

Tools of the trade What appliances do you recommend for small spaces?

An appliance that I think is worth getting is a food processor, because I think it’s really useful. Blenders are less important, but are nice to

have. I think little gadgets are much more important: a set of three or four really good knives, a good vegetable peeler, a cheap mandolin, a grater, like a microplane, for parmesan. I don’t have much more than that.

It was uncertain how they could possibly turn a board game into a movie, and now that we’ve seen it, it’s clear that it can’t be done — very well, at least. Two-plus hours of soulless claptrap and joyless cacophony of twisted metal, AC/DC songs and angry aliens does not a movie make. Here’s a new title: “Shock and Awful.”

If you are going to see this movie, go for the whole thing.

That way by the time the movie gets to the attack, you’ll be so tired of the Hopper Brothers (Taylor Kitsch and Alexander Skarsgard) and the stoic admiral (Liam “Paycheck” Neeson) that you’ll pray the aliens (big lizardeyed creatures in “Iron Man” drag) will make short work of

the bunch of them so you can leave the theater and do something productive with your time.

It’ll give you a sense of purpose, which, otherwise, this movie doesn’t have.

Grade: The problem with big ensemble comedies that weave five stories is that no single tale ever gets involved enough for true engagement. In “What to Expect,” a quintuplet of couples struggles through all the cliched contrivances of childbirth — minus single parenthood, that is.

The frothy comedy placates to the played-out parental mindset with predictable reassurance, making this one baby without any real teeth.

He meets a woman who asks: â&#x20AC;&#x153;Why are you ďŹ ghting?â&#x20AC;?

Heâ&#x20AC;&#x2122;s spent so much time being a king and leading an army, and then he meets this woman who calls him out. Heâ&#x20AC;&#x2122;s a boy, she kind of sees him as a man, she asks, â&#x20AC;&#x153;What are you doing?â&#x20AC;? She makes him question himself. And then he works it out and says, â&#x20AC;&#x153;Yes, I am [doing the right thing].â&#x20AC;?

It gives him a renewed confidence. Sheâ&#x20AC;&#x2122;s willing to be persuaded if he can tell her this is right. But he has to work hard â&#x20AC;&#x201D; sheâ&#x20AC;&#x2122;s not going to make it easy for him.

‘Queen of Disco’ Donna Summer dead at 63 After a battle with cancer, singer Donna Summer passed away Thursday morning at the age of 63.

The singer, who was born LaDonna Gaines in Dorchester, Mass., was known as the “Queen of Disco” because of her string of mega hits in the 1970s, which included “Hot Stuff,” “Love to Love You Baby” and “Last Dance.” In a little more than a year, she charted four No. 1 singles.

Though she reached superstardom and earned most of her five Grammy awards in the disco era, Summer’s success stretched into more contemporary times. She landed No. 1 singles in the ’80s, ’90s, 2000s and

But Garnett knows that a repeat effort of Game 3 will be “the biggest challenge,” and Philly will be out for blood. “[The Sixers] have a lot of young legs, have a lot of individual players that can put up buckets,” Garnett said after Game 3. “And we have to respect that and be ready for that. When you beat a team like this at home you have to expect them coming out with a lot of energy. But we’ll be ready and we’ll have a lot of energy ourselves, so we’ll see what happens.”

McCoy signs through 2017 Andy Reid said they were close. The coach wasn’t lying.

The Eagles signed LeSean McCoy to a five-year contact extension that will keep him in South Philly through the 2017 season. The deal is worth $45 million, with $20.7 guaranteed.

McCoy, 23, set franchise records in 2011 with 17 rushing touchdowns (20 overall). He also appeared in his first Pro Bowl, while finishing as the NFL’s fourth-leading rusher with 1,309 yards. He also set a team record with a 5.2-yard per carry average.

“We are excited to continue this offseason of taking care of our own players,” said Reid in a statement.

Jonathan Vilma is so confident that he is innocent in the Saints’ bounty scandal that is suing Roger Goodell for defamation of character.

The NFL commissioner suspended Vilma for the entire season after an investigation revealed that he was the

leader of the bounty program.

Papelbon to headline Red Sox-Phils rivalry Interleague play. It used to be an almost annual chance for Red Sox fans to invade Citizens Bank Park, with “Youk” chants galore. Those days are long gone.

When Boston comes to town this weekend for a threegame set, the stands will be packed with Phillies fans. The ballpark has sold out 238 straight games, including the postseason. The Sox-Phillies rivalry, while tame, is usually one of the better AL-NL ones.

Adding intrigue is Jonathan Papelbon. The closer swapped teams this offseason, trading in his Red Sox jersey for a Phillies one, after inking a $50 million deal. On Opening Day, Papelbon said that earning his first save in a non-Boston uniform wasn’t weird.

But how about earning one against his former mates?
