Equipping the Called

Wishing to encourage her young son’s progress on the piano, a mother took her small boy to a Paderewski concert. After they were seated, she spotted a friend in the audience and walked down the aisle to talk. Seizing the opportunity to explore the wonders of the concert hall, the little boy rose and eventually explored his way through a door marked “No Admittance.” When the house lights dimmed and the concert was about to begin, the mother returned to her seat and discovered that her son was missing. Suddenly, the curtains parted and spotlights focused on the impressive Steinway on stage. In horror, the mother saw her little boy sitting at the keys, innocently picking out “Twinkle, Twinkle Little Star.” The great piano master then made his entrance, quickly moved to the piano, and whispered in the boy’s ear, “Don’t quit, keep playing.” Paderewski reached down with his left hand and began filling in a bass part. Soon he reached around to the other side of the child and he added a running obligatio. Together, the old master and the young novice transformed a frightening situation into a wonderfully creative experience. The audience was mesmerized.

This is the way it is with God. What we can accomplish on our own is hardly noteworthy. We try our best, but can't always expect graceful flowing music. With the hand of the Master, our life’s work truly can be beautiful. Next time you set out to accomplish great feats, listen carefully. You can hear the voice of the Master, whispering in your ear, “Don’t quit, keep playing.” Feel His loving arms around you. Know that His strong hands are playing the concerto of your life. Remember, God doesn’t call the equipped, He equips the called.

Magnesium, Please Although we rack our brains trying to find any health benefits associated with a bag of chips, the facts keep coming back to haunt us.

We did, however, find an excuse to pack your diet full of nuts, seeds, and leafy greens. Sorry, we tried!* Magnesium is a must-have at least according to our dietary needs, that is. The human body consists of approximately 20-28 milligrams of magnesium, with 50 percent alone going straight to the skeletal system, The rest is stored in muscle, soft tissue and other bodily fluids. A magnesium deficiency could cause a buildup of problems, including insulin resistance and coronary heart disease. Looks like those thins your mother told you at the dinner table were somewhat plausible. After all, she was right: Drinking milk (which, you guessed it, is high in magnesium) does give you strong bones. One of the major pros in magnesium consumption is the role it plays in the assimilation of calcium into bone and the activation of vitamin D in the kidneys. Magnesium intake has not only been associated with greater bone density, it has been proven to lower the risk of osteopo-

rosis in postmenopausal women. Ditch the straws a milk mustache sounds really good right about now. Your heart beats for magnesium. Helpful in its endeavors to maintain a steady heartbeat and normal blood pressure, magnesium is a must have supplement for a happy heart. Magnesium is not limited to a healthy heart and strong bones, however. Magnesium is also found in 300 different enzymes in your body, including some that help regulate blood sugar. Many people with insulin resistance also experience high levels of magnesium output in their urine, explaining the body’s lack thereof. If you want to avoid type 2 diabetes, magnesium may be crucial. Ask your doctor. How about those green veggies Now? If you’re still crinkling your nose, try these magnesium rich alternatives. Hey, food is food.

LOW-FAT YOGURT All milk product contain magnesium. Last time we checked, this put ice cream on the qualifying list in moderation, of course. BANANAS Potassium and magnesium? That’s a two-forone if we ever saw one. DARK CHOCOLATE See, we told you we were trying! Paired with fresh fruit, we would say this makes for a pretty awesome dessert. AVOCADO One sliced avocado coming right up. You will easily consume 15 percent of your daily recommended serving of magnesium in one sitting or on one sandwich, whichever you choose. FISH Make it a goal to serve this protein once a week. Salmon salad? We think yes.

Caring for Man’s Best Friend

When Man is No Longer Around...

T

he American Pet Products Association (APPA) estimates that 65 percent of U.S. households own at least one pet. Although we consider our pets as part of our family, the law considers them as personal property. Many states, however, are allowing legally enforceable documents that can guarantee a pet’s continuing care. So far, forty-six states and the District of Columbia have passed statutes specific to pet trusts – and Louisiana is in that number. Prior to the adoption of pet trusts, it wasn’t unusual for a pet owner to bequeath a large sum of money to a trusted relative with the express condition that the relative care for the pet for the remainder of the pet’s life. The relative, of course, would accept the inheritance and agree to care for the pet for the pet’s lifetime. All too often, however, Rover would suffer an untimely demise, and that “trusted” relative would re-

ceive an “unexpected” windfall. Pet trusts have effectively remedied this coincidence. Louisiana law allows you to create a pet trust for the care of one or more animals in existence on the date of the creation of the trust. The trust can be a stand-alone document, inserted into your will, or incorporated into an already existing revocable trust. The trust instrument should designate a trustee and a caregiver for each animal, as well as contingent beneficiaries. The trustee will administer the funds set aside for the animals’ care and well-being, while the caregiver will have physical custody of the animal after your death and will be responsible for the animal’s care. If a caregiver is not designated, or if the designated caregiver is unable or unwilling to serve, the trustee may appoint a caregiver or substitute. The trustee will hold and invest the funds, and disburse funds, as you direct, to the

caregiver for the animal’s care. Any assets remaining in trust following the animal’s death are then disbursed to whomever you designate as the contingent beneficiary. Assets held in a pet trust may be used only for the care of the animal and for compensation and expenses of the trustee and the caregiver, which you specify ahead of time. Louisiana law, does, however, limit the extent to which you can leave assets for your pet’s care. If a court determines that the value of the trust assets “substantially exceeds the amount required to care for each animal and for reasonable compensation and expenses of the trustee and the caregiver” the court may partially terminate the trust, but only as to the excess assets held in trust. Pet trusts are relatively new to Louisiana, so if you are interested in utilizing this new option to provide for the care and well-being of your pet, you should seek the advice of an experienced estate planning specialist.

Sailing Yacht Vacation

An ocean cruise regardless of the destination is great for those that want to relax and unwind. But if you don't like mixing in with the crowd, perhaps you should settle for something more private like a sailing yacht vacation. A sailing yacht vacation is ideal because you are able to personalize it. You can choose to rent one on your own if you know how to sail but for those who don't know anything about sailing, you can get a package that already has a skipper and even a cook for the entire trip. The nice thing about having a crew on board is that they are familiar with the territory so they

can act as your tour guide, plan your itinerary, and prepare your food. You should know that having some extra hands on board will cost you extra but it is worth it. Unlike riding in a big ship, you can charter the whole yacht so you are the only passengers throughout the entire voyage. There are three types to choose from namely the power yachts, the sailing yachts and the multihull yachts. You can charter a sailing vacation just about anywhere since there are a lot of companies that offer their services. Most of these are available in tropical destinations. You can try some at the British Virgin Islands, in Florida,

Caribbean Islands, the South Pacific, the Med and in Asia. A sailing yacht vacation is great because it is more relaxed. You can wake up at any time and take a dip in the ocean before moving on to your next destination. If you don't feel like going anywhere, stay right where you are. But before you charter a yacht, do some research first about the companies that offer this and don't be afraid to ask questions. You will surely find some through the web or in major sailing magazines. You can also ask friends who have gone on sailing yacht vacations in the past to find out if the service was excellent.


After getting the information you need, compare their prices and see what is inclusive in the packages so you know which one is good value for your money. If you enjoyed your sailing yacht vacation, this won't be your last as there will surely be more in the future. You have to remember that before air travel or cars were invented, this was the only means of traveling and these days, more people are getting into it. So what are you waiting for? Seize the opportunity to see the world by sea because it is only a matter of time before you will able to find the right sailing yacht vacation package that fits your budget.

2 Pam’s Tips Rev Up Your Metabolism By: 1) Eating at regular intervals and making sure you eat ENOUGH and ALWAYS eat breakfast.

20-Minute Beginner HIIT Workout Perform each exercise for 45-seconds, take a 15-second rest, and move to the next exercise. Completing all five exercises is equal to one round. Perform 4 rounds.

2) Resistance Training - even body weight controlled exercises like we show cased - to increase muscle mass.

1. Squats: Stand tall, keeping your chest up and core braced. Squat down as far as you can. Drive back up through your heels to return to the top position and repeat. Keep each rep smooth and controlled and don’t bounce at the bottom. For extra assistance, use a chair for added support. Remember to keep your feet under your hips and your body weight on your heels. 2. Push-ups: Get into position with your feet together and hands underneath your shoulders. Brace your core so your body is straight from head to heels. Bend your elbows to lower your chest, then press back up powerfully. If you can’t complete a traditional push-up, place your hands on a stable chair or plyo box instead of the floor. Or, try doing push-ups with your knees resting on the ground.

3. Rope Climb: Stand tall with your head up. Then raise your left hand and right leg. Bring them back down and raise your opposite hand and leg to mimic climbing up a rope as quickly as possible. Always raise your hands and legs as high as possible and focus on doing as many reps as possible for the full 45 seconds.

I cannot stress diet enough. Make sure you are getting plenty of protein and fiber daily.

4. Tricep Dips: Place your hands on a chair or a low table, with your back to the chair. Put your legs straight out while balancing on your palms. Bending your elbows and lower as far down as you can. Push back up until your elbows are nearly straight but do not lock them out. Engage that core! 5. Side Lunges: Stand tall, take one step sideways, and push your hips back while lowering your body until one of your knees is bent at a right angle and you feel a slight stretch in your groin. Push off your foot to reverse the movement to the start, then go straight into the next side lunge on the opposite side. Alternate with each rep. Keeping your eyes focused on one thing will help with balance.

Although most of these tips are common sense and well known, consistency is key to achieving and maintaining results.


Slidell Group Sends Love Overseas

Eleven years ago, four PTA moms discovered a need. They thought of the boost in spirit a package could deliver to military members overseas, so they went to work and became the Slidell Ladies for Liberty. Annette Hall, Libby Guidry, Kay DeLuca and Debbie Miller had worked together in the PTAs for each of their children’s schools from Cypress Cove Elementary to Northshore High School. When their children tossed their caps in the air in 2006, they knew their volunteering time wasn’t done yet. They also knew they wanted to stick together. After all, they had learned how to work together and use each of their strengths to achieve a common goal. So, in August 2006, Annette opened her home to her friends, a bunch of boxes and all the goodies they could gather. In that first Packing Day, the women split the cost of shipping, which was $9.95 a box at the time. As the years passed, their group grew and grew. Annette recalls with a smile the many months she hauled her living room furniture out into the yard to make room for the packing process. “And, it never rained!” she remembers. Thanks to The Southern District—Lutheran Church Missouri Synod, Annette’s furniture eventually got a break. The group began packing at the church’s center off Airport Road in Slidell in December 2011. On April 19, the Ladies packed their 20,000th box. Annette said they have shipped packages to more than 2,100 local men and women, many of whom would never have received anything while overseas. She said they have heard repeatedly how the recipients share the goodies with others in their units.

While the group began to simply send some love and cheer each month, it has grown to something much larger than the founders imagined in that small living room. The group boasts more than 100 dedicated volunteers— including women, men and children. And, the Slidell Ladies for Liberty do more than pack and send boxes of goodies or toiletries each month. They show up to welcome home returning service members. They attend funerals to honor fallen heroes. They attend community events throughout the month to share their mission and allow citizens— adults and kids alike—to write letters or color pictures to include in the packages. And, they raise funds and gather donations for the boxes. The Ladies couldn’t continue without community support through financial donations to cover shipping—which now runs $17.35 a box—and donations of supplies to send. They welcome items such as packs of crackers, cookies and drink mixes; jars of peanut butter and Vienna sausages; local favorites such as Zapps chips and pralines; and other necessities like toiletries, books, magazines, DVDs, notecards, pens and playing cards. And, they always welcome new volunteers to their monthly Packing Days, typically on the third Wednesday morning.

When Ner ve Endings Cause Foot Pain Most foot pain comes from damage to the tissues of the foot from excessive mechanical stress and strain. The pain is a result of the nerves sensing the damage to the tissues that they innervate. Sometimes the pain has nothing to do with the mechanical forces and resulting tissue damage. There are conditions that affect the nerves, and just send the painful signals to the brain, despite no damage to the tissues that these nerves innervate. Neuropathy is one form of nerve damage that can commonly cause this type of pain in the feet and legs.

There are different forms of neuropathy. Most affect the tips of the nerve endings furthest from the spine first. This means the toes and fronts of the feet are affected first. The condition classically affect both feet equally. The tops and bottoms of the feet are commonly affected together. Diabetes mainly causes these types of neuropathies. The longer the patient has diabetes and the higher the blood sugar averages, the more likely the patient is to get this condition. These neuropathy problems can have many other causes. We see them as an inherited condition that shows up later in life. Some drugs such as chemotherapy can cause the problem. There are many other causes. Frequently no cause is identified despite full testing and evaluation. Treatment of the problem usually addresses mainly the pain. Several medicines can offer relief. Most of the effective medicines for this are also used as antidepressant and anti-seizure medicines. The problem has nothing to do with depression or seizures, but they affect the nerves in a way that is beneficial for this problem. Less aggressive measures exist also. Special topical creams can also offer benefit. The most effective ones are prescription only. Other treatments such as infrared light, electrical stimulation and surgical options exist. If you sense that your foot pain is coming from this condition, it is important to have it evaluated. It often can have a component of nerve damage that lessons the ability to feel touch in the feet. This decreased ability to feel is often not perceived by the patient. If the sense of touch is not intact in the feet, the patient may not be able to detect a problem, such as wounds, unless they are seen. In some cases, these types of injuries trigger a patient to seek an evaluation as they recognize the injury occurs without being able to sense something happened. This type of disassociation with feeling lets patients know something is wrong. If this happens to you, or you feel like you have lost feeling or touch, schedule an appointment with your podiatrist to evaluate the issues. Keep comfortable and be safe. Have your feet evaluated if you suspect a problem.

Pinsky, MD Dr. Pinsky completed his medical training and Urology residency at Tulane, and currently practices at Ochsner Medical Center Northshore Specialty Clinic in Slidell at 1850 Gause Boulevard, Suite 101. In addition to BPH, other clinical interests include robotic surgery for prostate and kidney cancer and obstructed kidneys, management of kidney stones, evaluation of blood in the urine, vasectomies, men’s health issues and erectile dysfunction.

Management of Enlarged Prostates As prostates enlarge with aging, their growth can lead to bothersome urinary symptoms. Symptoms such as difficulty passing urine, weakening or stopping and starting of urinary stream, and waking up at night multiple times to urinate are very common as a result of prostatic enlargement, and can affect quality of life. Benign prostatic hyperplasia (BPH), or enlarged prostate, affects up to 10% of men in their 40's, and 70% or more of men over 70. Many men have been told they have an enlarged prostate but are not sure of what it means, and what might happen as a result. Multiple medications and procedures are available to help manage bothersome urinary symptoms related to enlarged prostates. The first step is to see a urologist, who will take a detailed history, asking about many of the symptoms listed above and more, as well as perfor m a thorough exam including a rectal exam to estimate

prostate size and make sure there are no abnormalities. First line therapy for symptoms related to BPH, or enlarged prostate, is often an alpha blocker (tamsulosin, for example) - a medication to help the flow of urine get out of the bladder past the obstructing prostate tissue blocking the urinary channel. In some cases, a second medication (a 5-alpha-reductase inhibitor such as finasteride or dutasteride) can be added to help shrink the prostate. Patients who do not respond to medical management have many minimally invasive surgical or procedural options as well. The gold standard is a transurethral resection of the prostate (TURP), performed with a camera to unblock the urinary channel and resect the obstructing prostate tissue from within the urinary channel or urethra. This, and other surgical options, are not only for men who have failed medical management, but also men who

have complications of BPH such as urinary retention (the inability to pass urine), bladder stones and kidney damage resulting from the inability to empty the bladder. Differentiating symptoms of enlarged prostates from other urologic conditions is often complex, and a variety of in-office testing and diagnostic procedures can help your urologist diagnose and manage your BPH in efforts to control your urinary symptoms. It is important for a man with any bothersome urinary symptoms to know they are not alone, as BPH affects a significant portion of men as noted above, so consult with your physician or make an appointment for urologic evaluation. Wyeth considered himself an abstract painter. He was quoted in Life Magazine in 1965 as saying, “My people, my objects breathe in a different way: there's another core… When you really begin to peer into something, a simple object, and realize the profound meaning of that thing—if you have an emotion about it, there's no end.” As much as this applies to the painting, it could be describing this novel. There's far more depth to Christina than the painting reveals. Born on a remote farm in the small, coastal town of Cushing, Maine, Christina was born with Charcot-Marie-Tooth (CMT), a debilitating, hereditary disorder that damages the nerves in the arms and legs. One of the members of our book club, has CMT, so we ladies are a little more informed about this rare disorder than most of the general public. There are an estimated 1 in every 2,500 people in the United States who

Hauntingly beautiful, Wyeth’s Christina’s World was the first print I hung on my wall as a newlywed forty years ago. Naturally, I was eager to read this novel, but I found myself disappointed by its slow start and wondered if I would finish. I stayed with it and was rewarded with a spellbinding story of human suffering and tenacity. If you love the painting as I do, you will enjoy learning some of the backstory.

have this disease. It's an extremely frustrating disease because of how debilitating it can be. While there have been advances, there is still no cure, and for Christina, it's a life sentence. While Christina may seem destined for a small life, Baker Kline creates a rich, vibrant character who has a complex relationship to her family, her true love, and her neighbors, the Wyeths. What I especially loved about the story and the prose is that it’s as captivating and surreal as the painting itself. When the Andrew Wyeth in the novel invites Christina to see the painting, she says, “Later he told me that he'd been afraid to show me the painting. He thought I wouldn't like the way he portrayed me: dragging myself across the field, my legs twisted behind. The arid moonscape of wheatgrass and Timothy. That dilapidated house in the distance, looming up like a secret that won’t stay hidden.” Simply beautiful!

I was fortunate enough to be visiting the National Art Gallery in 2014 when Wyeth’s paintings were being exhibited, and like it has to many people, Christina’s World spoke to me. I believe Kline’s novel captures exactly what it said.

This novel presents the back story for a very famous and intriguing painting, Christina’s World by Andrew Wyeth. The enigmatic subject of the painting comes to life in the pages of this novel. Not particularly likeable, Christina is a product of a time and place, and we gain an understanding of her world.


Are You PREPARED to Care For Your Aging Parent? After meeting with your accountant and financial advisor, you may be confident that everything is in order for your retirement, but what if the unexpected happens? What if there is a sudden illness that leads to your parent’s hospitalization or a fall that requires rehabilitation at a nursing home, do you have a plan? At some point, you may be responsible for your elderly parent’s care. If you are not prepared, this can be an overwhelming endeavor, emotionally and financially. Even if you have set aside funds in the event of an emergency, there are many factors to consider when taking on the additional cost of caring for an older loved one. Now more than ever it is important that you ensure that all your parent’s legal and medical documents are in order. Prepare now for the unexpected by utilizing the following check list to plan for the care of your aging parent: Durable Power of Attorney – Should your parent no longer be able to make decisions or become mentally incapacitated, this legal document will designate someone else to take care of his or her affairs. Your parent either designate one person to handle health decisions (the health care proxy) and another for financial decisions (the financial proxy) or have the same person do both. Living Will – Also known as an advance health care directive, a living will is used to indicate choices about end-of-life care. Although discussing end-of-life care is difficult, it is a necessary conversation that should not be avoided. If your parent were to experience an irreversible coma, would he or she want to be kept alive on a ventilator and feeding tube? Will – How current is your parent’s will? Although most people have addressed how they would like their assets distributed, changes occur over time. Make sure that your parent’s will reflect his or her current financial assets (checking/savings accounts) and that there is a directive on how to distribute the items that may not be covered on the will (personal possessions, donations to charitable organizations). Insurance Documents – Do you know where your parent’s health, life and/or long term care insurance documents are located? Take the time to review these important documents annually and make a plan on how the out-of-pocket costs such as deductibles and co-payments will be covered. Other Important Documents – Have your parents show you where their financial accounts are located (including savings, investments, retirement accounts and annuities) and take the time to make sure the beneficiaries are current on each document. Also, ask them to complete the proper authorization forms so that someone can access bank accounts and/or a safe-deposit box in

the event, should both become unable. Health Concerns – Make sure you are familiar with your parent’s medical doctors and that you have as well as a list of what medication are being taken. Also, keep a handy list of updated list of contacts including potential caregivers, including family members, friends, neighbors and health care professionals, should the unexpected occur. Alternative Housing – Take the time to assess whether your parent's current living situation is still working with respect to mobility, cost and maintenance issues. Be proactive in gathering information about assisted living facilities and other long-term care options so that if you are faced with the unexpected, you can make clear and informed choices. By taking these steps before the need arises, you are giving your parents an opportunity to provide input about their preferences and to be involved in the decision making process.

Healthy living is about healthy choices. When food shopping, always opt for the foods that are lower in sugar, sodium and calorie count. In addition, when you opt for whole grains over refined foods containing white flour or rice, you easily increase your intake of important nutrients such as zinc, magnesium and fiber.

This includes their Medicare number and birth date and in some cases even financial accounts. Don’t be fooled. This is a scam to steal your personal information, money and possibly your identity. Here is some information you need to know: • Social Security number absent Medicare cards will be issued to new and existing beneficiaries from April 2018 to December 2019. • Medicare will not phone you asking you for personal information. This includes your Medicare number. Real Life “Rosie the Riveter” Graduates at 97 by Mary Bounds

Receiving a high school diploma at 97 is a bit extraordinary, but then Katherine Summers Martensen is no ordinary gal! Recently called a real-life “Rosie the Riveter,” Martensen is overjoyed after finally receiving her honorary high school diploma. Despite waiting eighty years for her graduation day, this current New Orleans resident donned a cap and gown and officially became a high school graduate on May 2, 2017. With her newly acquired diploma in hand, Martensen can truly attest that good things come to those who wait.

Leaving school at 17 to help support her family during the Depression, Katherine Summers always intended to finish her education. Yet soon after the Depression, the start of World War II brought Katherine and thousands of other young women into the US work force. The bandana clad image of “Rosie the Riveter” was a successful recruiting icon, prompting women to fill jobs vacated by men in the war effort. In fact, Katherine was one of over 300,000 women who answered the call and began working in America’s aircraft industry in the early 1940’s. Filled with patriotism and pride, young Katherine took a shop course where she was trained to rivet and patch aircraft at Key Field in Meridian, Mississippi. Putting her high school education onhold, Katherine willingly worked for her nation’s cause. “It was everything for the country at that time,” she states. After the war, Katherine married Harold Martensen and settled in Picayune, Mississippi, where they raised a family of four. Living just behind the local high school, she often thought of earning her diploma and recently acknowledged, “It was always on my mind.” Yet Katherine’s main priority was caring for her family, and her education was put on-hold once again. Living happily, and at times vicariously through her four children, she says she felt tremendous pride as each child became a high school graduate. Years turned into decades, and Katherine’s dreams of her own diploma slipped farther away. That is until this spring when everything changed. Martensen’s daughter credits Donna Murrell, Director at Lakeview Shepherd Center, for setting things in motion. Having heard Katherine’s life story, Murrell decided to contact the Picayune School District. Soon a surprise commencement ceremony was being planned, complete with cap and gown, Pomp and Circumstance and an all-important diploma. On May 2nd, Katherine had her long-awaited day, as she was formally presented an honorary high school diploma by Picayune High School Principal, Kent Kirkland and Picayune School District Superintendent, Dean Shaw. Waiting eighty years for her graduation didn’t dim Katherine’s excitement in the least. “I never thought I’d have a diploma; It’s wonderful!” she exclaimed. With family at her side, the moment was a magical answer to a life-long dream. Yet in the midst of flashing cameras and happy tears, the new graduate wasn’t focused entirely on herself. After a life defined by service and sacrifice, she encouraged others to never give up when it comes to accomplishing their goals. “I never dreamed I’d see this day, but I did!” Katherine Summers Martensen is in a class of her own, and for the record, she is one incredible high school graduate.

To Make:

Diced fresh peaches 1 oz peach syrup (such as Monin’s) 2 oz Jack Daniels Tennessee Honey 2 oz ginger ale Ice

Place and scant handful of peaches and peach syrup in the bottom of a highball glass (double quantities if using a 12-oz. mason jar). Using the handle of a wooden spoon, muddle peaches in syrup (smash them up a bit). Fill glass with ice then add Jack Daniels Tennessee Honey and ginger ale. Stir then serve. You can play around with the quantities to suit your taste.

Peach Simple Syrup 1½ cups water 1 cup sugar 4 peaches, pitted and diced (skin on)

Combine water, sugar and peaches in a medium saucepan and bring to a boil. Reduce heat to low and stir until sugar is dissolved. Remove from heat, cover and cool to room temperature. As mixture cools, periodically mash peaches with a wooden spoon to release juices and flavor. Strain syrup using a mesh strainer or cheese cloth, cover and refrigerate until ready to use.

Caribbean Paella

Need a trip to the Islands? This will surely send your taste buds! 4 oz. sliced mushrooms INGREDIENTS 1 medium sweet potato, 1 cup of Jasmine Rice 1 small yellow bell pepper, peeled and cubed sliced 1 cup frozen peas 1 small red bell pepper, ¼ tsp Allspice sliced 1 cinnamon stick 2½ cups chicken stock ½ tsp black pepper ½ tsp saffron threads 3 cloves garlic, minced 4-5 sprigs fresh thyme (stems ¼ tsp paprika removed) 1 bay leaf 1 small red onion sliced Salt to taste 2 scallions chopped 1 lime Coconut oil PREPARATION 1. Combine chicken stock and saffron, bring to a boil and reduce to simmer for 5 minutes. 2. In a large flat skillet combine coconut oil, cinnamon stick and allspice. Heat on low till aromatic 3-4 minutes. Add bay leave and cook for about 30 seconds. Add garlic, scallions and red onions and sauté for 2 minutes. 3. Add bell peppers and sauté 3-5 minutes. 4. Add mushrooms and sweet potato cubes. Stir to combine all ingredients. 5. Season with thyme, black pepper and salt. Add rice and stir to coat rice and combine well. 6. Slowly add 1Prin/3 of stock mixture. Let cook uncovered for 3-5 minutes until liquid is absorbed. Add remaining stock and leave uncovered 5 minutes. Do not stir again. 7. Add peas, cover with foil and steam for 15 minutes. 8. After 15 minutes turn off heat and leave covered for another 10 minutes. 9. Remove foil and squeeze the lime over the top.
