The chicken and the eagle Once upon a time, there was a large mountainside, where an eagle’s nest rested. The eagle’s nest contained four large eagle eggs. One day an earthquake rocked the mountain causing one of the eggs to roll down the mountain, to a chicken farm, located in the valley below. The chickens knew that they must protect and care for the eagle’s egg, so an old hen volunteered to nurture and raise the large egg. One day, the egg hatched and a beautiful eagle was born. Sadly, however, the eagle was raised to be a chicken. Soon, the eagle believed he was nothing more than a chicken. The eagle loved his home and family, but his spirit cried out for more. While playing a game on the farm one day, the eagle looked to the skies above and noticed a group of mighty eagles soaring in the skies. “Oh,” the eagle cried, “I wish I could soar like those birds.” The chickens roared with laughter, “You cannot soar with those birds. You are a chicken and chickens

Walnuts for your health

A recent study concludes that eating walnuts may cut the risk of developing type II diabetes in women. Beginning in 1999, the diets of 138,000 women were tracked. Those who consumed eight ounces, (seven walnuts make up one ounce), of walnuts per month cut their risk by 24 percent. Walnuts high omega-3 and 6 content may contribute to their diabetes busting affect.

Polycystic Ovarian Syndrome (PCOS) Polycystic Ovarian Syndrome (PCOS) PCOS is an endocrine condition that affects approximately one in 15 women. PCOS sufferers experience an imbalance of hormones. Although doctors are still not sure what initially triggers the hor monal system, excessive insulin, heredity and low-grade inflammation are thought to play a role. Symptoms can start as young as 8 years old or as late as post-menopause. When hormones are out of balance, multiple body systems are disrupted, leading to numbers side effects.

Cardiac Arrest Cardiac Arrest is a deadly condition that occurs when the heart suddenly stops beating. Up until recently, it was believed to strike without warning, but a new study in the Annals of Internal Medicine has revealed that cardiac arrest may have a warning signs after all. About half of the patients who suffered cardiac arrest experienced symptoms such as chest pain, shortness of breath, nausea, abdominal or back pain beforehand. The patients who responded to the early symptoms had better outcomes than those who didn’t. The hake away?Make note of the potential pre-arrest signs, and seek help as soon as possible if you suspect you might be experiencing a heart attack.

It seems that green is all over the place today. We’re hearing about green jobs, green energy, and green shoots in the economy. We’re encouraged to “go green” to save our world’s valuable resources. I did a little research1 about green living before I wrote this article, and here are some tips I discovered:

Danger:Triclosan!

Triclosan is found in a number of deodorants, toothpastes, cosmetics and “antibacterial” plastics (cutting boards, dishes, etc). Thanks in part to it’s use in a number of products, new antibiotic-resistant strains of E. coli and salmonella are becoming prevalent, and even more alarming is that triclosan is lipophilic, meaning it accumulates in fatty tissues. So theoretically, a whole host of the stuff can build up in your body, particularly detrimental to a developing fetus. What to do? Ditch the antibacterial and opt for plain ol’ soap.

Do you use lots of “antibacterial” soaps, lotions and sprays? Chances are your desire to not catch a cold is causing your endocrine system to suffer. Triclosan is an antimicrobial agent commonly used in antibacterial soaps and detergents. It started out as an effective additive to surgical scrubs, but has now been linked to hormone disruption, specifically interacting with androgen and estrogen hormone receptors, thereby affecting thyroid function.

This is why we always recommend to our clients to purchase owner’s title insurance when buying their homes because under Louisiana law, you really never know what “legal heirs” may still be out there. The above scenario is a perfect example. The best way to protect yourself in this situation is to have a well-drafted Will or Trust that states exactly to whom you wish to leave your estate. Do not let the State of Louisiana make that decision for you by dying intestate. I realize that this may be a very uncomfortable conversation to have with your loved ones now, but addressing this issue during your life is far cheaper and easier than having your family deal with a “stranger” after your death. Ronald Dahl wrote The BFG, short for Big Friendly Giant, in 1982. He dedicated the book to his daughter Olivia who died decades before. While this may seem like an unusual choice for the Between the Wines Book Club, it wasn’t at all. We are mostly grandmothers, and besides, Steven Spielberg had just directed the film adaptation, and it received rave reviews. We had a plan to read the book, discuss it over lunch, and then go see the movie. Yep that was the plan, except we procrastinated, and then had to drive 40 miles to the only theater showing it, only to be told we had the wrong movie app, and sorry, the movie was gone.

In the Middle Ages, to “Quack” was to “shout out”. Today quacks do not have to “shout out”. The Internet can “shout out” for them. Belle Gibson fi fits ts the mold of the contemporary Internet quack. Her claim was that she had a malignant brain tumor, uterine cancer, liver cancer, blood malignancy and spleen cancer. She claimed that diet and “natural therapy” caused her to be cured. She has written a successful cookbook and has had an app that has had over 300,000 downloads at $3.79 per download. In fact, she was so successful that the Apple Watch was to include this app! Ms. Gibson admits now to this being a hoax. In her own words “none of it’s true” and that she is “just human”. “Just human”, I suppose. But Ms. Gibson also has inhuman greed and avarice. I wonder how many deaths she was responsible for with her false claims. Just remember, when reading the Internet, if it appears to be too good to be true, it is too good to be true. The biggest health threat to women, especially in our community, is heart disease. It is the leading cause of death for women in the United States, and despite an increase in awareness over the past decade, only 54% of women recognize how dangerous heart disease can be, according to the Centers for Disease Control and Prevention (CDC). Although “heart disease” refers to many types of heart conditions, the most common type is coronary artery disease (CAD). CAD decreases blood flow to the heart, increasing the risk of a heart attack. Other types of heart disease can involve the valves in the heart, or heart failure due to the heart not pumping well enough. There are several heart disease risk factors that are similar for both women and

men, such as high blood pressure, obesity, high cholesterol, age and family history. However, when it comes to the development of heart disease in women, there are several risk factors that play key roles in women more so than in men. These risk factors include: diabetes, tobacco use and lack of physical activity. For some women, heart disease symptoms can occur by experiencing sharp pain or discomfort in the chest, and pain or discomfort more commonly in the jaw, neck or back. For other women, however, heart disease may strike silently and not be noticed until a women experiences signs or symptoms of a heart attack, arrhythmia, heart failure or stroke.

I’m so thankful to know everyday that my God literally walks with me because His precious Holy Spirit dwells within me! I can’t overemphasize what this means. The Holy Spirit is a constant reminder of God’s love, His forgiveness, His protection, His strength, His guidance and His desire to reveal to us His wisdom through His Word. You see, Jesus not only wants to save your soul for eternity, He also wants to save your life one day at a time. You might ask, “Save me from what?” Let me give you a few examples: bad decisions in relationships, poor judgment with finances, wasting time on things that don’t matter, getting angry in traffic, being unfaithful in commitments, temptations that could destroy everything you’ve worked to build. You don’t have to be a Super-Jock to participate in GNOSO Events. The games have super-athletic events, but GNOSO serves ALL SENIORS - NOT JUST ATHLETES. We have an event to fit your lifestyle. Regardless of whether you are a Vince Breaux, who can Bench Press 450 pounds (as a 69-year-old) or are a 90+ year-old participant who does Washer Pitch plays Bridge, does Team Dancing or does Track & Field, we have something for you. GNOSO’s goal is to get Seniors off the couch, out of the doctors offices, and into a Healthier way of life. COAST launches new website The St. Tammany Council on Aging, COAST, launched a new and improved website August 25. Executive Director Julie Agan said the redesigned came about in response to requests from the senior population. “The baby boomers are becoming seniors and they are much more techno saavy then the previous generation,” Agan said. “The boomers use the Internet for everything. We wanted

to make it easier for them to get information about COAST.” The website address remains the same: www.COASTseniors.org The new site has an activities calendar for each of COAST’s seven senior centers. There are also maps to the centers and a page that features the lunch menus for the full month. Visitors to the site can also access information regarding services for seniors.

“We are very pleased that the new site will contain links to our Board of Directors’ meeting notices as well as meeting minutes,” Agan added. “We want the public to have easy access to information about the inner workings of the organization.” The St. Tammany Council on Aging is a private, nonprofit corporation which services St. Tammany parish residents age 60 and older. Most services are offered at no costs. Donations are accepted and greatly appreciated. The agency does not discriminate on the basis of race, color, national origin, or handicap status in either employment or service provision.

September 2, 2016 we celebrate 50 Years of marriage!!! Rodney (76) and Gretchen Kay (Willis) (71) Guidry were married on September 2, 1966 in Gretna, La. This will be their golden anniversary. The Guidry’s are the parents of two beautiful daughters, Rachel and Gretchen. They have 3 grandsons Benjamin, Jeremiah and Michael and a great granddaughter Alaina. They have resided in Slidell since 1980 and are very active in their community. The Guidry’s have demonstrated the sanctity of marriage and have been exceptional role models for many young adults.

Senior Sampler September 2016

Chicken Thighs with Creamy Bacon Mushroom Thyme Sauce INGREDIENTS 4 chicken thighs 1 tablespoon vegetable oil Salt and Pepper 1 teaspoon Italian herb seasoning (dried thyme, oregano) Mushroom Sauce 6 oz mushrooms (I prefer baby bellas) 5 slices bacon, cooked, chopped 1 cup heavy cream Salt & pepper to taste 5 sprigs snipped fresh thyme PREPARATION 1. Season both sides of chicken thighs generously with salt, pepper, and Italian herb seasoning. 2. Option 1 – Grill the chicken thighs until nice and brown and cooked completely. Option 2 – Preheat oven to 350°F. Brown chicken in large skillet

for about 5 mins on each side. Transfer thighs, skin side up, to a foil lined baking sheet and bake for about 20 minutes or until chicken is completely cooked through and no longer pink in the center. 3. In the meantime, make the mushroom sauce. Heat vegetable oil in a large deep skillet on medium heat. 4. Add sliced mushrooms (without salting to insure mushrooms get caramelized) and cook on medium heat for about 3 minutes flipping once. Add chopped cooked bacon to the skillet. 5. Add heavy cream, salt and snipped fresh thyme, bring to boil. 6. Stir, then immediately reduce to a simmer and cook for 2 minutes on low heat for flavors to blend and to let sauce reduce a bit. Taste and adjust salt if needed. 7. When chicken is cooked add to the skillet and spoon the sauce and mushrooms on top. 8. Serve with favorite rice blend and a salad.

INGREDIENTS

PREPARATION

cup melted coconut oil cup honey eggs cup mashed ripe bananas (approximately 2 large bananas) cup milk of choice or water teaspoon baking soda teaspoon vanilla extract teaspoon salt teaspoon ground cinnamon, plus more to swirl on top whole wheat flour

1. Preheat oven to 325°F. Spray a 9×5 in. loaf pan with non-stick spray. In a large bowl, whisk the oil and honey together. 2. Add the eggs and whisk well, add the mashed bananas and milk. 3. Add baking soda, vanilla, salt and cinnamon, and whisk to blend. 4. With a large spoon, stir in the flour, just until combined. 5. If you’re adding any additional mix-ins, gently fold them in now. 6. Pour the batter into your greased loaf pan and sprinkle lightly with cinnamon. Bake for 55 to 60 minutes, or until a toothpick inserted into the center comes out clean. Allow bread to cool before slicing, about 20 minutes.

ripe plum or pluot, quartered teaspoon sugar lime, cut in half (2 lime quarters) mint leaves ounces white rum club soda mint sprig PREPARATION

1. Muddle plum or pluot with sugar into a rough pulp. Add lime and mint leaves and muddle lightly. Fill cocktail shaker with ice, add rum, and shake until very cold, about 15 seconds. 2. Pour unstrained into 12-ounce serving glass, top with soda and garnish with mint sprig.
