It became a viral internet sensation on 26 February 2015, when viewers disagreed over whether the dress pictured was coloured blue and black, or white and gold. There were more than 10 million tweets mentioning the dress within a week of it surfacing. While it was eventually proven that the dress was in fact blue and black (though I still have my doubts!), it also lends power to the idea that perception is everything. I’m currently reading It’s Not You, It’s Me, by Camilla Sacre-Dallerup, who was the head judge on Dancing with the Stars NZ and is a bestselling author. She was recently in Christchurch to promote the book. She’s a big believer in ‘reframing’ what we see as negative; seeing something in a new way, in a new context or with a new ‘frame’ around it. ne of four students from Christchurch (two are from Cashmere High and one from Catholic Cathedral College), she will be joining 24 of the most talented young actors from around the country, as members of the Shakespeare Globe Centre New Zealand Young Shakespeare Company. During their two weeks in London, they will watch professional performances and also have 12 rehearsals, taken by a Globe director, of scenes from one of Shakespeare’s plays which they will then perform on the Globe stage in front of an audience. An additional week is spent in Stratford Upon Avon where they will watch more performances and take part in tours of the village where Shakespeare was born. A member of the Court Theatre Youth Company and one of 48 students selected for the SGCNZ National Shakespeare Schools Production (NSSP) in September, Sarah has been able to hone her skills and confidence on the stage. “It was incredible to have the experience of working with nationally and internationally recognised directors at the NSSP, and also so much fun to work with such talented actors and creatives from around New Zealand,” she says. “The experience of playing Lady Macbeth in the Pipitea Marae on the Wellington waterfront then again in the Legislative Council Chamber in Parliament was unforgettable.” Sarah’s mum Samantha says she is thrilled for her daughter, who has grown as a performer (both as a musician and actor), supported by
the opportunities and tutoring at Rangi Ruru. “Rangi has given Sarah the freedom to involve herself in a wide range of activities available in Christchurch and New Zealand, alongside her academic studies. She’s fortunate to have had a lot of high-level music tuition and tutelage in theatre, and has learnt by performance in front of an audience, rather than through a series of exams. It’s given her confidence to take risks, artistically speaking, and really fly,” she says. When asked if this talent and drive runs in the family, Sarah immediately mentions her 74-yearold grandfather who was a bass operatic singer but chose not to pursue it professionally. “He’s amazing,” she says. “He’s been performing in the last few weeks in his hometown in Australia, in a local production of Phantom of the Opera. My mum says she remembers seeing him dressed up as the grandmother in a panto version of Little Red Riding Hood, dancing to the Time Warp. Mum was my age at the time and was ready to be completely embarrassed, but was so proud of him when she saw how talented he was. I love that story,” she says. Sarah will sit her Year 13 scholarship drama examination soon, under the tuition of Peter Rutherford, the Director of Theatre Arts at Rangi, and has already completed her scholarship music exam under Janet Kingsbury, Rangi Ruru’s Director of Music. She heads to the UK in July and until then will be completing her school year, at this stage intending to study Law and Arts at Victoria University for the first half of 2020.

A charitable endeavour By Melinda Collins
Juliette Capaldi’s first love was always photography. Now after a battle with cancer, the local mother of one is turning the lens on a charity project close to her heart. She talks to Metropol about her passion project. My dad gave me a camera when I was 10 or 12, so photography was something that always inspired me,” Juliette says. “Then I went away and did a million other things,” she laughs, “my degree, travelling, working overseas.” A bit over 10 years ago and newly married, she was looking for something to sink her creative teeth into. “My husband said, ‘what do you really want to do?’ and I was like ‘be a photographer’. He said, ‘well just do it, I’ll support you 100 percent’”. And in 2009 Etta Images was born… but the universe had another baby in store for Juliette and her husband Rob. “I got pregnant the first month I started
the business!” she laughs. Juliette had previously been involved with a charity photography project for the Make a Wish Foundation, where the photographers donated their time and the session fee went to Make a Wish. “I think only three of us took it up, but I thought what an amazing way for photographers to be able to raise funds, why not try it myself?” She had been helping with Ronald McDonald House (RMH), cooking meals with a friend so that was a natural fit for a charity. “They’re just so amazing at RMH with what they do; they’re the perfect charity,” she says. So she launched plans for ‘Love

to reschedule a week later and baby waited!” she says. “One person did have to miss out because I was having a mastectomy two days before the shoot, but I was back shooting 10 days later to finish off the book!” It’s not the first time cancer has touched her life. Juliette’s mother’s first husband died of cancer, when the youngest of her five half brothers and sisters was just three months old. Her grandmother died of cancer and, last March, her dad died of cancer – something she still finds painful to talk about. Now she’s moved her focus to a new project – ‘Love and Dads’. This time, the proceeds will support cancer research; same concept, this time with dads. “My best friend is going through breast cancer and a mum at my son’s school is going through it. So to be able to do something for the Breast Cancer Foundation feels really good.” So if you’re wanting something special to make your relationship with any fathers in your life, get in touch. and Mums’ – a project that would see her photograph 75 local mums and create a beautiful coffee table book from the images. She reduced her usual session fee of $99 to just $65 and the entire $65 would be donated to RMH. “I have a strong passion for getting mums in photographs with their children. So often they are behind the camera and often avoid it on purpose, worried about how they look.” But again, the universe threw another curveball. In March this year, the 45-year-old was diagnosed with breast cancer. The cancer was large, she says, but it hadn’t spread to her nodes. It was picked up at her first screening as part of the nationwide programme for women over 45, so it was caught early. “I encourage all women to go. Even if you don’t like it, just go; it’s such an amazing service.” The discovery of a second lump cemented her decision to get the full mastectomy. “I’ve got a boy who is nine, coming up 10, and I just wanted to survive for him,” she says. Miraculously, only one session had to be rescheduled, with a heavily pregnant mum and her daughter, due to the number of tests Juliette had to undergo. “Luckily, we managed

With the races done and dusted, we caught up with the busy mother and entrepreneur to chat all about the hat. How long have you been a milliner? I started professionally seven years ago but I have always been a lover of hats and I made my first hat for myself many years ago. I think a hat/headpiece completes an outfit just like the icing on a cake. What does Seventh and Figg mean? The name came from my travels as a young girl in New York. I was standing there wide-eyed and looked up to see a sign that read ‘Corner of Seventh and Figg Street’ and never forgot it. What inspires your creations? Anything from the materials I source to a beautiful fabric or amazing flowers. I often look at milliner Philip Treacy who has changed the perception of what a hat should look like and given me the confidence to know that any creation is never too much.
How did you feel that morning after the Addington Races and saw yourself on the front page of the paper? For both Michael Stanton (pictured with Susi on the cover) and I, it was a huge thrill and wonderful achievement. Michael and I wanted to push the boundaries of traditional fashion and the response was extremely positive. People love to see something different which is what keeps fashion alive and new. Do you have a few favourite pieces from over the years? It is so hard to choose a favourite as I still love pieces from today and many years ago. I am currently using an all-natural material called jinsin that forms artistic lines that I am loving at the moment. The wonderful thing about most of my hats is they never date – they’re timeless.

What does 2020 have in store for Seventh and Figg? 2020 for Seventh and Figg will be full of some great opportunities. I will be featuring in a book about creative women in New Zealand. I will continue to work with WORLD, making this my third year with the brand; Francis Hooper has some amazing ideas. I also have clients already making contact for race day 2020! What do you offer your clients that keeps them coming back? I am very fortunate to have the most gorgeous clients. Some have been coming to have hats made with me for many years and once you know your client well enough, you know exactly what their style is and what sort of hat they would like. It’s my responsibility as the milliner to make sure the hat is just perfect for the client’s personality and outfit. What hat tricks can you give our readers to be confident and comfortable when wearing a hat? I think the trick to wearing a hat is that there is a hat for everyone; it just has to be the exact hat for them; something that they, as the wearer, are confident in and which also brings out their personality, whether it’s avant-garde or classic. If you think you are not a hat wearer, then my advice is to start small and grow from there. Also wearing the right hat can grow your confidence enormously. You can have so much fun wearing an amazing hat!

How big is the company now? We have just over 40 staff, but we are constantly expanding so that number will rise. What attracted you to the beauty products industry? I saw a need in the market for a cool, avant garde, niche brand that elevated natural skincare to the next level. In my invitation to women to make a positive health choice by converting to natural skincare from their conventional brand, I wanted to offer them the familiarity of similar textures and levels of hydration. I found the natural brands available at the time didn’t do enough to maximise hydration for my own dry skin. The natural brands that I’d experienced simply weren’t hydrating enough. So I invested a lot of time and care in replicating a velvety texture. But I also wanted to offer them the courage of my convictions. I knew scientific proof of performance would be key in a market starting to fill with natural skincare. How could we stand out from the crowd with so much ‘greenwashed’ marketing? I wanted consumers to be able to see past the hype to the black and white results of our independent, thirdparty scientific investigations – so they could rely on a scientist’s findings and really trust that Antipodes can work to improve your skin’s appearance. The simulated Mars expedition will be an opportunity for Larissa to experience first-hand the challenges of conducting in-situ resource utilisation assessments, as well as other research. “Some of these projects will require me to take on a lot of new information and I hope to learn about the application of a range of fields of science such as geology and human biology in an ‘alien’ setting,” Larissa says. “I also hope to complete some of my own research, possibly in the realm of acoustics engineering which is the field in which I plan to work.” New Zealand has been involved with the Mars Desert Research Station since 2011 according to Haritina, who has been on three similar missions and organised a fourth. Larissa’s simulated Mars mission extends research that Associate Professor Scott and Dr Hughes have been conducting, focusing on construction materials and ecosystem approaches to space habitation. “In order for humans to live viably long-term on the Moon and Mars, we will have to harness local resources to obtain construction materials, water and the nutrients necessary for plant and food production,” Dr Matthew Hughes says. “This is called in-situ resource utilisation, and will be essential for sustainable and resilient colonies in these extreme environments.”

The station, owned and operated by the Mars Society, is a space analogue facility supporting Earth-based research in pursuit of the technology, operations and science required for human space exploration. Set in a Utah desert much like the Mars surface, the station offers opportunities for field studies as they would be conducted during an actual space mission. “I have loved the idea of space exploration and learning about outer space since I was a small child,” Larissa says. “I feel incredibly honoured to have been selected as part of Expedition Boomerang and I’m eager to experience what being an early explorer of the red planet might be like.” She hopes young women and girls feel encouraged to be involved in any line of work they want. “I know that I would have been excited and inspired to see a woman involved in a project like this when I was a child.” The opportunity arose from collaboration between UC academics Associate Professor Allan Scott and Senior Lecturer Dr Matthew Hughes, both from UC’s Civil and Natural Resources Engineering department, and Haritina Mogoșanu, Executive Director of the New Zealand Astrobiology Network and President of the New Zealand Mars Society.

creates a hub for our Christchurch talent to learn and be empowered. I’ve been thinking about this vision for over 10 years, so to have the building that will house this vision is unreal. It will support and allow artists to stay in Christchurch.” Sacha says the move into the new building will mean the academy can continue to grow and expand, but also provide opportunities for already-established musicians and music industry professionals in the city. Currently, four local musicians, KAMANDI, Will McGillivray (Nomad), Georgie Clifford and Sacha herself – all successful artists in their own rights – act as tutors and mentors to students from beginner to advanced levels. “It was important to me to have mentors who are actually performing and releasing music to inspire and share their knowledge and experiences… the highs and the lows,” Sacha says. This practical, focused approach means programmes can be tailored to the individual’s goals. “It’s my hope that SOLE will also be providing a space and income for artists in town. SOLE’s mission is to help guide and get people on a pathway into the music industry, demystifying it and learning about what it takes to sustain a music career.” To help the project come to life, SOLE Music Academy launched a PledgeMe campaign on 18 November to ensure the community has quality rooms, gear and technology available to students. n February, SOLE Music Academy will move to its new premises on the ground floor of the historic Woods Mill Building in Addington, offering specialised vocal and songwriting sessions, production skills and artist development. Sacha Vee knows first-hand the reality and challenges of navigating the music industry, having built a successful career that’s seen her perform across the globe. Following success in New Zealand, the neo-soul singer became a top 10 finalist on The Voice of Holland which was heard by more than four million people in Holland and led to her signing a publishing deal with Downtown Music Benelux and working with Polish hip-hop star O.S.T.R. Their collaboration garnered more than 50 million views and streams and the Fryderyk Hip Hop Album of The Year Award in Poland in 2017. In 2016, Japanese record label Sweet Soul Records released her debut album Luminous worldwide, which made it to no.3 on the NZ Heatseeker charts. It’s this experience that made her want to create a hub that teaches the next generation of artists all the necessary tools, skills and knowledge to achieve their goals. “I wanted to create a service I needed when I was starting out,” Sacha explains. “We’re not trying to sell a dream, we’re very realistic and honest with people. There is so much hard work involved.” Sacha set up SOLE Music Academy two years ago from a single studio located at The Piano, to provide a clear and guided pathway for musicians, songwriters and producers to establish a career in music. As director, she is now creating a community based around the SOLE concept, which stands for a ‘Source of Learning and Empowerment’. “For decades, our local talent has been forced to look further afield for greener pastures,” Sacha says. “SOLE

Tuia 250 heads to Whakaraupō Local hapū Ngāti Wheke, based at Rāpaki, is hosting the Tuia 250 commemorations in Whakaraupō/Lyttelton Harbour 6-10 December.

his is as far south as the Tuia 250 flotilla will travel, marking 250 years since the first encounters between Māori and Europeans and celebrating the voyaging traditions of Aotearoa.
As part of the event, three waka hourua or double-hulled sailing canoes, including one that has sailed from Tahiti, will be hosted at Te Ana Marina in Lyttelton on the weekend
of 7-8 December and there will be speakers, a stardome, entertainment and a market with food and craft stalls. On the Saturday the public can ‘hop on a waka’. This is a great
opportunity for everyone in the community to see these amazing vessels that have sailed across the Pacific (as far as Easter Island) and meet the sailors that have navigated them and to enjoy the wonderful new marina. Not satisfied with two years of working and travelling, I decided to spend a further 12 months in Ireland before settling in Vancouver for four years after that. After seven wonderful years, I was homesick for New Zealand and decided to make my way back home for good. Why did you want to join the House of Travel Christchurch City team? Having already working with House of Travel in the North Island, I finally decided to come back home to Christchurch and House of Travel Christchurch City really appealed to me. The variety in our work with plenty of opportunities to take on a different role from
leisure to corporate, HOT Events and New Zealand Olympic Travel means there’s no chance of our job becoming boring – it’s the travel industry after all! The number of awards, the store has won over the years also shows the consistency in what we deliver, whether it be from the support staff, accounts team, management or frontline staff. Everyone contributes to the store’s success including the most recent award received for top travel retail outlet in the country which everyone is proud of. Where is your favourite place to travel? I have a few countries I really love for different reasons so it’s hard to pick one. When people ask me this question my first place is Turkey. A few years ago, I was there for ANZAC Day; we slept under the stars to be there for the dawn service with Judy Bailey being the MC. The whole experience is something I’ll never forget. After the dawn service the Kiwi’s had our own service; being a smaller group it was very emotional and touched everyone in a big way that remains
with me to this day. The other main reason I love Turkey is how diverse the country is with so much on offer from the hustle and bustle of Istanbul, to the beautiful coasts and sailing opportunities, to the amazing natural scenery of the Pamukkale Terraces and “fairy chimneys” of Cappadocia – a hot air balloon there is a must! What is on your bucket list for 2020? Africa has always been on my bucket list and with airfares being as cheap as they ever have for Africa, there’s no excuse for me not to go! The big national parks and wildlife appeal as well as some off the beaten countries there where tourism is in the early development stages. There aren’t too many places left where people haven’t explored; but certain parts of Africa remain untouched which is part of the fascination I have for the continent. Exciting Times at Elmswood It’s thrilling times ahead for Elmswood Retirement Village as they finally move into the first phase of a makeover renovation, starting with their classic villas and the serviced units wing within the main building.

When she was selected, Keren travelled to the UK to spend four days with Frankie and five other lash artists from America, Australia, South Africa and Canada. “It was great,” Keren says. “Frankie loves passing on information and skills, so people learn how to apply the lashes in the correct way. In order to earn the qualification, you must demonstrate you can apply lashes safely; it is a specialist career.” Now Keren’s back in North Canterbury and she hopes to soon start travelling the country, teaching the new techniques and knowledge she’s learnt to fellow lash artists in New Zealand. To provide for the rapidly evolving technological advances and interest in Magnetic Resonance Imaging (MRI), Pacific Radiology has purchased its fifth MRI scanner for Canterbury, the top of the line Siemens 3T Magnetom Vida, now installed at Forté Health on Peterborough Street.

RI scans are minimally invasive and very safe; they do not use radiation and there is no exposure to x-rays. MRIs image soft tissue structures in the body – for instance, the brain, eyes, heart and ligaments around joints such as shoulders.
Stephen Kingston Smith has been working as an MRI tech with PRG for more than 11 years. He was involved in researching the purchase of the new machine and was impressed with the latest advancements the Vida has to offer. “The patient has a much

more comfortable experience,” Stephen says. “The opening on this scanner is wider, which improves the experience for the claustrophobic patient.” Stephen was also impressed with the scanner software and computer advancements. The new Bio Matrix capability of this scanner uses artificial intelligence (AI), which autodetects motion and results in some fantastically clear images. “It can scan a bigger range and has sensors which help image clarity in the case of patient movement and respiration. Scan times are also quicker on this machine,” Stephen says. The new generation of MRI scanners produces much better
soft tissue contrast in shorter scan times and is being used to scan the abdomen and pelvis with exquisite detail. MRI is now being used routinely to screen for prostate cancer, small bowel disease and breast cancer, to mention a few. Pacific Radiology radiologists and neuroimaging specialists are excited by the continuing growth and advancement in MRI. Gareth Leeper, charge MRI technologist at Pacific Radiology, says, “The new scanner at Forté is producing the best pictures we have ever seen of the nerves right down to the hands and feet, and we have seen an increase in the number of referrals for imaging of the leg and arm nerves in patients with chronic pain syndrome.” Pacific Radiology has built a team of talented medical professionals who have a wealth of knowledge trained extensively in MRI. The new MRI scanner at Forté will help address the growing demand for MRI scans. JACKFRUIT PAD THAI When cooked up young (not ripe) and seasoned right, jackfruit tastes like sweet and savoury, perfectly pulled pork or tender and juicy shredded chicken. From tacos to enchiladas and salads, jackfruit has become a go-to ingredient. Prep time: 60 minutes Cook time: 20 minutes Featuring: Chilli Lime Jackfruit
INGREDIENTS 12-ounce package rice noodles 2 tablespoons peanut or vegetable oil 4 cloves garlic, minced 5 green onions, sliced 1 10.6-ounce package Upton’s Naturals Chilli Lime Carnitas Jackfruit 1 cup fresh bean sprouts
Sauce 2 tablespoons tamarind concentrate Juice of 2 limes 1/3 cup soy sauce 1/3 cup brown sugar 3-4 teaspoons chili sauce, to taste Garnish 1/2 cup chopped peanuts 1/3 cup sliced green onions Lime slices
METHOD Soak noodles in a large bowl of hot water for 30 minutes to one hour, or until the noodles are softened. Mix together all of the sauce ingredients in a small bowl. Heat the peanut oil in a large wok or skillet and stir fry the noodles for two minutes. Add the garlic, green onions, and jackfruit, then stir in the sauce. Cook for another four to five minutes, adding the bean sprouts in the last minute. Plate the Pad Thai and garnish with chopped peanuts, sliced green onions, and lime slices.

CRUMBED FISH & KUMARA FRIES Hand-harvested from Mission Estate-grown pinot gris and chardonnay vines, Mission Fête is a delicate sparkling wine with aromas of pear, apple and citrus. Ingredients • 250g white fish • 2 eggs (whisked with equal amount of water) • Flour to dust • Panko to crumb • Lemon pepper seasoning • Salt and pepper to season • Oil to fry • 200g kumara

Method Heat oil in a deep fryer or frying pan to 185°C. Put the flour onto a plate. Break the egg into a bowl and beat it an equal amount of water. Place the panko crumbs, lemon pepper seasoning, salt and pepper onto a plate.

Cut fish into 60g pieces, coat each piece in flour and dip into egg mix. Coat fish in panko crumb mix and repeat process twice on each fillet for an extra crispy crumb. To make the kumara fries, slice kumara into strips and fry for five minutes or bake in the oven at 200°C for 2025 minutes or until golden brown. While fries are cooking, carefully place fish into heated oil for around 3-4 minutes until crust is golden brown. Remove excess oil and season with salt and pepper. Serve immediately with kumara fries, tartare sauce and garden salad.

Sustainability at its heart By Melinda Collins
The Fermentist is one of the hottest newbies on the culinary block, with beer at its roots and sustainability at its heart. We caught up with the brewery’s passionate General Manager Simon Taylor about this story of sustainability and making history. Simon, can you tell us a bit about your brewing journey and what attracted you to the industry? When I look back on my passion for brewing it started when I was about 10 years old, making ginger beer in my parent’s garage. I then progressed

to making cider. Ask mum and dad about the many bottle fermented eruptions that sprayed all over the garage! I studied microbiology and plant science at Canterbury University and was employed by Lion Nathan on their graduate programme back in 1990.
What I most enjoy about brewing is that making beer is a craft; it’s hands on; it’s about the best ingredients coming together to make an amazing product. I have never met a brewer who doesn’t love their job and this passion is infused into every beer.
How did the story of The Fermentist start? I was talking with a brewer I have known for many years, Kirsten Taylor, about the great memories we had working at Speights and Canterbury Breweries, both as trainee brewers and then as brewing leaders. We both lamented the loss of Canterbury Brewery during the February Earthquake. We started talking about what type of brewery we would build if we wanted to build one here in Christchurch, and out of that discussion came The Fermentist. We wanted to build a brewery that was future-focused and would be around in Christchurch for a long time. So, we started looking at what we would do differently, not what we would do the same as other breweries we have worked at. Why was sustainability so important to you right from square one? If there is one thing that everyone is starting to think about, it would have to be our future here on earth and the impact our current practices are having on the world around us. The big, scary thing however, is often just where to start making a difference. So, when we started thinking about The Fermentist, we said we must do things differently. We can’t build a brewery that was good just for 2018, we must build a brewery that is good for 2033 or 2043. We are not perfect in any way, shape or form, but we are just trying to do better than we did previously. All our team are on this journey and we all try to do small things better every day. We have made a start and we know we can keep getting better and improving the way we work. What are some of your main ‘green’ initiatives? In the build of the brewery we went straight in with solar electricity and solar hot water. They are easy to do, you just buy the gear. What we started to think about were the
subtle things that can make a difference, so we said we will only buy malt from Gladfields in Dunsandel, we will use hops from the Nelson/Tasman region. In the taproom we will buy as much as we can from Canterbury producers, we will grow produce in our own garden bar. When it came to our team, we wanted people whose values aligned with ours and we wanted to help them build a career. Our brewery car is an Outlander PHEV and we are currently looking at installing an EV charging station. Our menu in the taproom focused on plants as we see them having a lower carbon footprint, especially when we buy local. We have wine on tap and encourage our customers to look at this as a way of reducing glass waste. You have now made history with the country’s first carbon-neutral certified beer – your Kiwi Pale Ale. How much time and effort went into that and how much celebrating came after? People often ask me why we strived for carboNZero certification. If you go out and make a stand on being sustainable, how do you prove it? So, we looked around and a lot of sustainability credentials need lots of explaining, whereas if you can say that we measured our carbon footprint, and it came out at 0.752kg CO2 per litre of beer we make, then we have one number to manage down. The data collection, auditing and certification process took us and Enviro-mark Solutions about 6-7 months, but we were learning. We now have one measurement that, we can manage downwards. For the carbon footprint that we can’t avoid, we have purchased offsets from Hinewai Reserve on Banks Peninsula. This is a journey and we will keep working on reducing our carbon footprint. Kirsten has now moved into a role focused on our sustainability plans and having that dedicated resource will help us get better all the time.

KOREAN STYLE PORK CHOPS
Preparation Time: 15 minutes Cooking Time: 20 minutes Ingredients 400g NZ pork mince ½ tsp salt ½ tsp fish sauce 1 tbsp fresh ginger, grated 2 spring onions, chopped 1 tbsp sweet chilli sauce 1 egg, beaten Small bunch coriander, chopped ½ tsp sesame oil 1 small red chilli

Method Combine all the ingredients together in a large bowl. Divide the mixture into 8 small patties and set aside. In a pan, heat a little oil and cook the pork patties over a medium heat for 6 minutes on each side. Serve with sweet chilli sauce on rice or in a burger.

Preparation Time: 5 minutes Cooking Time: 20 minutes plus 20 minutes to marinate Ingredients 4 NZ pork chops (boneless) or NZ pork steaks 1 tbsp olive oil ¼ cup soy sauce 2 tbsp honey 4 cloves garlic, minced 1 tsp sesame oil 1 tsp ginger, minced 2 tsp sriracha Black pepper to taste

Method Preheat oven to 200°C. Mix together the soy sauce, honey, garlic, ginger, sesame oil and sriracha sauce. Pour over the pork and marinate for 20 minutes.

Heat olive oil in a large skillet. Add pork chops, without marinade and cook for five minutes without turning, or until the pork is nicely browned. Turn the pork over and pour the remaining marinade over them. Cook for another five minutes. Place the skillet into the oven and cook for 10 minutes, until the pork is completely cooked through and the sauce is sticky. For thinner cuts of pork, you may not need to finish cooking them in the oven. Serve with kimchi, white rice and steamed greens. Metropol 5 December, 2019 65

t’s long been said, ‘you are what you eat’ and yet despite this popular saying reflecting the nutritional importance of food, it seems we’ve lost the desire to treat ailments through what we eat. The power of Peruvian superfoods maca and cacao are being brought back to New Zealand through workshops by Seleno Health, run by Sally Huapaya, a native Peruvian of Incan descent, and health educator Dr Corin Storkey. A cruciferous vegetable not unlike radish – which has been cultivated in the high plateaus of the Andes Mountains for at least 2000 years – maca’s root is cooked and utilised as a health supplement which has wide-ranging benefits, from boosting energy and endurance through to reducing anxiety. “Maca is the food of the Gods,” Sally says. “But it’s more than a superfood.”
At a recent workshop at Piko Wholefoods, Sally guided attendees through the ancient Incan traditions surrounding maca, the science behind how they work, how to tell their medicinal potential, and how to use them as medicine to heal and rebuild your body and mind. She was joined by She Universe Director Oonagh Browne who spoke of the health benefits of cacao and the story of its cultivation. Like maca, cacao is very nutrient dense, high in antioxidants like magnesium, which can help reduce stress, potassium and iron. A close collaboration between builder and designer created a home where every space suits the realities of family life. James and Micayela Hunter have three daughters and their new St Albans home passed the ultimate functional test – a birthday sleepover for 10. An architectural designer, James has worked with Daryl Hewitt of DJ Hewitt Builders for 15 years; their common bond being exceptional attention to detail. Light, bright and open plan with a 2.7m stud, cedar fins greet at the front door. Past the wide entrance, office and separate lounge, American Oak fins also form the stairwell and partitioning to a cosy dining area – linking spaces with personality. Doorways were intentionally kept to a minimum for easy-living flow between spaces. Adjacent to the living area and open-plan kitchen with a steel-framed island, a zigzag walkway leads to a private powder room, laundry and three-car garage. It was an engineering design achievement for the 5.5m of timber fins connecting the second floor. The landing sports an extra-wide hallway for siblings to run past each other to the four bedrooms, hobby nook, and fully tiled bathroom.
“Daryl’s passion and enthusiasm for building is contagious, nothing is ever a problem and the quality of workmanship is exceptional!” Micayela says. “I am truly delighted.” “It was a whole-team project - evereryone was so organised. It wasn’t at all stressful, and everything was finished a week ahead of schedule, giving us more time to move in.” She’s enjoying her walk-in wardrobe with a light-filled picture window, and ensuite with a double shower and double sink. The interior consultant, Daryl’s wife Tara, balanced monochromatic tones throughout, and chose a stunning textured-tile backdrop in the kitchen. “In the walk-in pantry she cleverly suggested a window between the bench and the shelves instead of a splashback.” The 356sqm Rockcote-clad and standing seem steel home has PV solar panels, and underfloor heating. LowE glass and larger eaves keep heat out and warmth in, and foundation-ring insulation was another savvy cost-saving investment. “It was an evolving project,” James says. “Too many builds just keep to minimum standard. Everything exceeds minimum here – you have to love what you build!”

We modern-day humans have long harboured a fascination for all things tribal and, thanks to children’s books and Hollywood, our collective imaginations have run riot on the subject.
T
hink of Tarzan swinging across the jungle; the dashing daredevil Lawrence of Arabia striding desert sands; Hepburn and Bogart pitted against the mighty Ulanga River aboard The African Queen and, for pure tribal embracement, nobody did it better than Eartha Kitt, famous for punctuating her songs with cat-like growls while slithering over sofas clad in figurehugging animal prints. In fact, the very word ‘tribal’ immediately conjures thoughts of perfumes, spices, exotic places, and err… seductive faces. Tribal art is often ceremonial or religious in nature and has a global reach across Africa, the Americas, the Middle East, Asia and Oceania, which encompasses Melanesia, Polynesia, Australia and New Zealand. Many artists have been inspired by tribal arts; Pablo Picasso once stated that “primitive sculpture has never been surpassed”. When it comes to home décor, tribal
design and artware has long reigned supreme with its strong patterns and natural elements. In the latter part of the 20th century, tribal interiors tended towards the warm tones, but in the 21st century we’re trending towards the cool monochrome of black and white. At first glance it may appear as a Scandinavian take on tribal, but with an imposing ethnic artwork in dominant position and a few large handcrafted vessels strategically placed, the look is much bolder than the gentle Scandi interior. New homegrown garden festival Five garden designers, nine local schools, a collaboration of 32 community gardens and a range of top chefs, scientists, garden experts and sponsors are already signed-up and excitement is growing ahead of Christchurch’s new homegrown garden festival.

or three days in March 2020, the Christchurch Botanic Gardens will play host to the most innovative, exciting new garden festival on the horticultural calendar – Grow Ō Tautahi. A homegrown garden festival designed specifically for the Garden City, Grow Ō Tautahi is a free community event that draws on the best ideas from the local community, schools, garden designers, scientists, food gatherers and top chefs. Festival Director Sandi MacRae says Grow Ō Tautahi is much more than a flower show – it’s a local event based on the participation of Christchurch people in a variety of activities, displays and entertainment that will appeal to visitors of all ages. “We’ve got fantastic partners who bring creativity and innovation to the

A year in review
When I was a child the year used to drag itself slowly through its 12-month cycle, but now, so many decades later, it’s practically breaking speed records! 2019 has been a strong year for highlights and the challenges have felt ever-so-slightly easier – or maybe I’m just finally learning to adapt and modify my response to continued stress. So, with another fast and furious year on the cusp of ending, now is the perfect time to consider its colorful tapestry and think about what I have achieved. It’s true, sometimes you’re so busy with the mechanics of your occupation that the opportunity to reflect on the bigger picture doesn’t present itself, but it’s so worthwhile when you do. So, where did I get it right? In the interests of simplicity, I said ‘yes’ more than ‘no’. ‘Yes’ to requests for help, especially if they delivered on our desire to give back or lift up those members of our community who are vulnerable or in great need. ‘Yes’ was also the answer when asked if I’d speak or present on personal or professional
topics including business culture, resilience, consistent high performance and mentoring. And some of the biggest ‘yeses’ went to incredible people who approached us about the possibility of joining our company in the search for a business that provided inspiration in addition to a rewarding career path. I firmly believe this commitment to getting good people on board, people that embrace our culture and our values, is why we hold the awards for No. 1 Residential Office nationally and internationally for Harcourts and No. 1 Franchise in New Zealand for earnings per consultant. A firm ‘no’ (or two) also made an appearance, however, when I met people considering a real estate career while wanting to avoid accountability, hosting open homes or training – the list went on, unlike my tolerance! I may be old-fashioned, but it will always be a ‘no’ if you front up to an interview in jeans or arrive late, underprepared and over-entitled. So, what else has stood out this year? An active, even marketplace with interest rates at very low levels making first-home owners feel more optimistic than they have for a long time. More and more legislation and an acceptance that the AML (anti-
money laundering) requirements which began last year, whilst inconvenient at times, are here to stay. Landlords have also had to continue incorporating changes in the way their rental properties are presented, maintained and tenanted, and this looks unlikely to abate. Professionally, we have also had the incredible benefit of Chris Kennedy (formerly the CEO for Harcourts NZ) joining us as General Manager. To say this has done a lot to relieve some of the workload and stress that occurs when you are running a dynamic, successful company whilst driving ever-forward is an understatement! As for Christmas, personally, I’ve always loved this time of year. The mother in me will miss our beautiful eldest son and his partner who will spend the season working in the Japanese mountains, but I will have the company and joy that other family and friends have always provided. To those of you that read my monthly column, I wish you a Christmas that makes you feel happy rather than stretched and stressed, and a 2020 full of promise.

A
s this is my last Metropol column of the year, I wanted to take the opportunity to highlight an initiative that is very close to my heart. In my role at The Chamber, I have seen first-hand the great work and outcomes that our many charities provide to those in need in our city. This year I am pleased to lend my voice to the Bayleys Plate Up for a Purpose campaign, which challenges local chief executives to raise $5000 each, culminating in a memorable evening of fun and food at the Town Hall on 29 February. At this event we will join forces with top Canterbury chefs to cater a three-course dinner for 180 people! The funds raised will go towards the Christchurch City Mission’s Back to School programme, which pays $300,000 a year towards the school costs of children from families who struggle with the significant financial outlay at the start of the school year. This gives these kids the resources they need to start the new year and – most importantly – the confidence to fit in with their peers and stay in school, helping to give every child in Canterbury the chance to get the education they need to succeed. The Christchurch City Mission is not alone – there are so many amazing organisations in our community that need our help. As we head into the holiday break, I would encourage all of you to do something (regardless of how small) to help create a positive impact in our community.

hat a wonderful few weeks it has been in Christchurch. We’ve hosted royalty and we’ve revelled in the Canterbury Anniversary events that bring the region together each year. In my mind, there is no better place to be in the spring than Christchurch. It was an honour to welcome the Prince of Wales and the Duchess of Cornwall to Christchurch. I was delighted to host them on a walkabout in Cathedral Square where many people turned out to greet them. During their visit to Christchurch they got to see Tūranga and the Riverside Market – two attractions which have breathed new life into our central city and helped make it a vibrant place where people want to be. The vibrancy of Christchurch was also on show at the New Zealand Cup meetings at Addington and Riccarton raceways and at the New Zealand Agricultural Show. I was thrilled to be able to present the winner’s trophy at Addington to the connections of Cruz Bromac. But the real highlight for me was standing alongside Terrill Charles and Peter Corbett, whose horse Dee And Gee won the Christchurch Casino New Zealand Cup at Riccarton. I had the honour of presenting them with the Trainer’s trophy. Four years ago, Terrill was diagnosed with an aggressive form of brain cancer and given just four and a half months to live. Through sheer determination, support from Peter, and her passion for their horses, she has battled on and defied the odds. Their story was an inspirational note to end Cup and Show Week festivities on.

ot only is our Te Papa Ōtākaro Avon River Precinct project the largest urban transformation ever undertaken in New Zealand, but now it has also been deemed this year’s best, winning the prestigious George Malcolm Award for supreme excellence at the 2019 New Zealand Institute of Landscape Architecture Awards. The Avon River Precinct includes the City Promenade, the Canterbury Earthquake National Memorial, The Terraces, the Victoria Square and Bridge of Remembrance restorations, all the artworks and plantings along the river and the Margaret Mahy Family Playground. We’ll have the remaining elements completed next year. The judges noted, “Te Papa Ōtākaro has emerged as a significant and transformative urban landscape, maximising the opportunity provided by the earthquakes, to develop an exemplary interweaving of urban edge and river. Enhancing the cultural landscape of the city, as well as the ecological and social values, has provided Christchurch with a central core that holds the city together, and re-presents it with a new vision.” The real beauty of the Avon River Precinct, which was also named as one of three finalists for Most Improved River at the 2019 New Zealand River Awards, is that it will only get better with time, as the plants and gardens mature, as more people take the time to walk and enjoy the City Promenade and as more private developments and public projects, like Te Pae, start opening out onto it. Congratulations to our partners on this project: Christchurch City Council, Matapopore Charitable Trust, and the outstanding design teams at LandLAB, Boffa Miskell, WSP-Opus, and Rough & Milne.

F
or a city recovering from a major disaster like the Canterbury earthquakes, all the evidence suggests that simply rebuilding buildings and restarting businesses is not the end of the recovery journey. The lasting impact of the trauma of the disaster and the long, grinding recovery that follows can have lasting mental health impacts on our people. And this is especially true for our young people. I’ve spoken to many parents and teachers who tell me of the real mental health impacts the quakes and their aftermath have had on young people in Christchurch, from anxiety to depression to developmental delays. That’s why I’m so proud of the Government’s Mana Ake programme, which gives every child in Canterbury access to a trained mental health worker through their schools. This policy was actually a personal mission of Prime Minister Jacinda Ardern, and the Government worked closely with the CDHB and their mental health experts in designing its details. So far, 2030 students have received help individually and a further 2070 students have received help in a group. That’s thousands of young people getting the mental health support they need. I’ve personally met with some of these young people and their families and heard them talk about what a huge difference having access to counselling, and being able to learn coping skills, has made in their lives. One mother told me of the total transformation in her son and how it has helped their whole family. The success of this programme shows what we can achieve when we take mental health seriously.

ne of the best parts of my job is getting to meet talented entrepreneurs and helping them succeed. And that’s exactly what the whole team got to do last week at the Pressure Cooker final of FoodStarter 2019 – a national competition looking for the most innovative food and beverage startups in New Zealand. There were five talented startups who made the cut on Wednesday night from a total of 121 entries from all over New Zealand. The judging panel got to taste some seriously delicio7us vegan Kiwi Dip, the creamiest sheep’s milk yoghurt, flavourful vegan pastrami, dainty prebiotic pudding, and the most amazing vegan sausage we have ever had the good fortune to experience. And – you guessed it – the winner was Ananda Simply Wholefoods with their spicy vegan sausage that was simply outstanding. Locally sourced, plant-based, dairy and gluten free was definitely the theme of this year’s competition, nicely summed up by one of the competitors, Paul Seymour, whose presentation began with the statement ‘Veganism is the greatest social revolution in the history of the world!” Ananda now goes on to win the $75,000 FoodStarter business incubation package whose main prize is the holy grail for most food startups – full distribution of their product across the Foodstuffs South Island retail network, courtesy of New World. They’ll also get a full brand review from Strategy Advertising, everything they need to scale to retail production from FoodSouth, and business mentorship and commercialisation how-to from our team at Ministry of Awesome.

s the year draws to a close, I’d like to take this opportunity to acknowledge the agencies and organisations that have contributed to greater Christchurch’s regeneration during 2019. If you are a regular reader, you will know of my ongoing admiration and acknowledgement of the private sector’s significant role in Christchurch’s regeneration. You will also know of my advocacy for a cohesive public sector working in partnership with investors, developers, business owners and others. The Greater Christchurch Regeneration Act 2016 specifies five strategic partners - Christchurch City Council, Environment Canterbury, Te Rūnanga o Ngāi Tahu, Selwyn District Council and Waimakariri District Council. We also work closely with the Department of the Prime Minister and Cabinet (DPMC), ChristchurchNZ and Development Christchurch Ltd (DCL). Our relationships with these two local public sector agencies have been enhanced further this year by co-locating to enhance our collective performance and create a platform for Christchurch’s future development, beyond the limited lifespan of Regenerate Christchurch and the legislation we operate under. This ensures the knowledge we have developed is preserved for future use and supports transferring regeneration leadership responsibilities to permanent, locally based agencies. This transition will build on the progress made so far and ensure Christchurch is well-placed to make the most of future regeneration opportunities. As we approach the official start of summer, on behalf of the Regenerate Christchurch team, have a safe and happy Christmas and New Year, and all the very best for 2020.

Standing gracefully at 60 Cathedral Square (on the corner of Gloucester and Colombo Streets), is Christchurch’s new central library Tūranga. The $92.7 million five-storey building is being hailed as the most modern public library in the southern hemisphere and the largest in the South Island. Architectus won the John Scott Award for Public Architecture for Tūranga, which it designed with Danish practice Schmidt Hammer Lassen Architects and in close cooperation with Matapopore Charitable Trust and Ngāi Tūāhuriri. Also in the public architecture category the jury bestowed a New Zealand Architecture Award on Lakeside Soldiers Memorial Hall in Leeston, Canterbury, designed by Architecture Workshop.

Two very different projects won awards in the Heritage category. Rose Historic Chapel is an early twentieth century Christchurch convent chapel that was extensively damaged in the Canterbury earthquakes and has been painstakingly restored by Dave Pearson Architects. Meanwhile, the Nelson House Alteration by Sharon Jansen Architects is a sensitive reworking of an early 1960s house designed by Ernst Plischke, an Austrian émigré who was a key figure in New Zealand post-war modernist architecture. Chen-Anselmi Units, two townhouses designed by Bull O’Sullivan Architecture in the Christchurch suburb of Sydenham, won an award in the Housing Multi Unit category, and another Christchurch project, Menzies POP!, located in Sumner and designed by Architects’ Creative, received an award in the Housing Alterations and Additions category. ew landmarks are rising in central Christchurch on a satisfyingly regular basis and the latest building to catch our eye will break ground before Christmas. Built by David Magill Builders, this three-story home on the corner of Cranmer Square and Chester Street West will be a milestone on your journey north across the city, planting its roots and taking its place in the 170-year history of Cranmer Square. In fact, we can look forward to a long future association with this home – its foundation comprises piling down to 16 metres, with a raft floor laid on top of that, and a comprehensive structural steel superstructure by Blueprint Consulting Engineers. The striking silhouette created by the semi-rooved deck on the top floor is complemented by the unusual charred cedar cladding. Originally a Japanese technique, the charring is done by Christchurch-based company Chartek. Once sealed the blackened wood weathers, but does not require the maintenance that ordinary cedar does. The owners of the home are current inner-city dwellers who are keen supporters of a thriving centre and love the CBD lifestyle. Architect Kelly Rush of Krush Architecture has designed a clever home where owners and guests can operate independently if they choose. The top floor hosts the master bed, ensuite and wardrobe and opens out to the partly covered deck. The middle floor contains the kitchen, lounge and living area plus another deck, while the ground floor is dedicated to three bedrooms, each with their own bathroom. Director of David Magill Craig Freeman says completing this home will take 12 months, as it’s an interesting design located in a busy area which impacts on access. “This build is right in our ball park – all of our buildings have a degree of difficulty, whether that be design, location, client, or sometimes all three, and we are very comfortable with that.” Craig assumed ownership of the company on the retirement of David Magill in 2016. Dedicated to continuing the values that David instilled in him and the rest of the team, Craig says, “Everyone has
been together for a long time, including our subcontractors. The mission has always been to be well-respected among our peers, and we are so proud that no-one ever has a bad word to say about us.” Craig brings a unique and desirable skill set to his role. In a previous life he served the country in the New Zealand Army. Discipline in all areas is innate to his approach, while communication with people is a real strength. “I can talk with anyone, and zero in on what is important to them.” His training brings an incredibly valuable agility to a project. “We are not stuck in any comfort zone or set routine, so we react quickly and positively to any road block.” Craig places a lot of emphasis on being proactive, rather than reactive. “It buys us a lot of time.” Every job is worked on by in-house carpenters. “It is vital that their trade and craftsmanship is top notch”. The company works with contactors that they have had a relationship with for several years. “I went through my apprenticeship with a lot of the people who are now leading the companies that we work with,” Craig says. David Magill Builders happily runs a gamut of homes from $2 million to first home and retirement homes, with five house and land packages becoming available at Ravenswood for $500k, and an entry-level show home at Ravenswood open next year. “What our clients have in common is that they want well-designed, bespoke and interesting homes but with value for money. They seek top-quality products but not necessarily the designer label on them,” Craig says. “And you shouldn’t have to compromise on your quality, your tradespeople, design or the interest on a modest budget.” Driven by a determination to do a good job and honour all promises made to clients, Craig cannot understand why anyone would take the ‘over-promise under-deliver’ approach. “It’s a lovely home; the best,” she says. “Now that I am here I have been learning to make more decisions and I feel comfortable.” Like any other person in their mid-20s, Anna likes spending time with others and she loves flatting with three of her friends at Hohepa Canterbury’s campus on Barrington Street. Hohepa Canterbury supports 125 people, like Anna, with intellectual disabilities. Hohepa is on a mission to provide more homes for people like Anna to be part of a supportive community and enjoy a life fully lived. Hohepa Canterbury has just launched a campaign to raise $2.2m for two new fit-forpurpose houses, which will provide a home for 12 people with intellectual disabilities, kick-started by a $500,000 donation from the Sutherland Self Help Trust. The trust has been providing financial support to community organisations which support the disabled and disadvantaged since 1962, and it has been a long-term supporter of Hohepa. As a result, one of the two new buildings will be named Sutherland House. Sutherland Self Help Trust Board Chair John Sutherland says the gift has been given after a long history of past support and connection between the organisations, which both began in the 1960s, and through their shared mission of supporting people living with disabilities. “Anytime that I visit Hohepa, it is a joy to do so,” he says. “The calmness, friendliness and

Having recently received a National Award at the 2019 ADNZ Resene Architectural Design Awards in the Additions and Alterations Category, I thought it timely to share a few thoughts on my approach to altering houses. Often there is already a good amount of dollar value in the existing house, so one needs to be careful and pragmatic about where and how to spend any money on it.
like to explore the ways in which the house is currently working, both aesthetically and functionally. To love what is there avoids a fight to change it into something it is not. A 1950’s bungalow, unless a lot of money is spent, will always look like a 1950’s bungalow. Commonly, a house has been altered in the past and it is first an exercise in restoring logic. Why is there a porch halfway down the corridor when the entrance is now through the living area? Sometimes it is a very simple case of relocating a
couple of doors and internal partitions to make a major difference. The aspiration, once work is complete, should be to have the house feel like it was always meant to be that way. When looking at any new requirements, the house needs to deliver for its occupants, so my first study is where these needs can be accommodated within the building footprint. If possible, major cost can be avoided by redistributing spaces within the house. If there is a need to push out, do it carefully so that it complements the existing house.

The third-generation family owners of a block of shops in Edgeware have completed a full refurbishment of the buildings 60 years after they were constructed by their grandfather, Jim Hobday. The upgrade has restored the retail block to its former glory.

Future-proofed for generations
T
he Hobday family have a long history in the suburb. Jim, who was a well-known and respected local, decided to build the four shops in 1958 on the corner of Edgeware Road and Colombo Street to accommodate his business, Hobdays Cycles. He followed
this up with another building through an alleyway and around the corner on 52 Edgeware Road. Over three decades later, Jim’s daughter Dorothy and son-in-law Ike Gallagher took ownership of the buildings. The couple also owned
Hobdays Lawnmowers, a few doors down on Colombo Street. Despite the original building’s deep foundations that withstood the Canterbury earthquakes, the $400,000 project included full earthquake strengthening, new roofing and joinery, as well a full internal and external upgrade. One of the retail block’s longest standing tenants is St Albans Pharmacy, which has been there since the beginning, followed by Edgeware Paperback
Centre. One of the shops is currently empty. Constructed by Trent Building Solutions, the project was led by MCD Architecture, who worked closely with Dorothy and Ike’s three children. “We wanted to future-proof the buildings for our children and generations to come.” It was Ike’s dearest wish to see the repairs completed in his lifetime, but sadly he passed away just a few days before the official celebration to mark its completion, in September this year.

The not-for-profit was the world’s first accommodation network to become carboNZeroCertTM certified and, with 13 properties, remains the largest. To remain certified, YHA’s managed hostels and National Office must reduce greenhouse gas emissions by 5 percent per year. The organisation has beaten this target for the third straight year, slashing greenhouse gas emissions by almost 8 percent from 2018 to 2019. As well as reducing greenhouse gas emissions, YHA New Zealand offsets its remaining carbon emissions via an accredited carbon offset programme supporting the regrowth of natural forest on the Banks Peninsula. Today the two-storey brick and half-timbered home’s extensive ornate plaster ceilings, Italian marble fireplaces, leadlights, and panelling are proudly in place. “We don’t often get to build these and were delighted that the owner opted to rebuild, to illustrate our skills,” says Steve. he policy gives homeowners 12 months (no later than 14 August 2020) to register their interest. House relevelling company, Precision Solutions, says the time to check levels and foundation issues is now. Contracts manager Charles Porter estimates there may be “thousands of people out there who don’t know they have problems”. “It’s only for a year, and if you think of how many homes have been bought and sold in Christchurch since 2011… There are pockets in Christchurch that sustained more damage
than people realise, and I’m not talking about the east side, that’s pretty obvious. I’m talking about everywhere, including Papanui, Casebrook and Cashmere, where people have purchased houses which have settlement issues and earthquake damage that they are not aware of. When they try to sell, they may be forced to get a builder’s report which will then show up any issues. If you miss this time period to make a claim you could be out tens of thousands of dollars.” The team offers a free initial site visit within the Christchurch area that provides assessment
