One of the city’s most passionate campaigners, hospitality kingpin Darryll Park is putting his money where his mouth is, moving into the central city where he co-owns Fat Eddie’s, Original Sin and Kong.

You are moving into the CBD. What has attracted you to inner city living? Christchurch provides an opportunity for lifestyle balance that is second-tonone. Moving into the CBD will provide my wife and me a quality of lifestyle where we will be able to connect with a diverse array of art and culture, theatre, live music and an abundance of eatingout options. The central city also offers ample opportunities for enjoyment of the outdoors, especially the newly created Avon River Promenade and Hagley Park. As a central city business owner, what is your vision for the inner city? Diversity is the key to a full and vibrant inner city in the face of a changing environment following the earthquakes. We need to create a vibrant inner city by firstly ensuring that the cost of living and running business is affordable. We need to create a safe inner city, particularly for our locals and tourists, who are out exploring the city after dark. Providing the right type of residential dwellings in the right locations, which people are prepared to buy, must be a priority. The offerings from the arts, culture, entertainment, shopping and hospitality must be unique to the inner city and either meet or exceed expectations. You are standing for Mayor. How does your extensive business experience prepare you for that role? I have a strong business and governance background, which has brought me into contact with many aspects of the services provided by the Christchurch City Council. I believe the council needs to start thinking and operating like a business with far greater transparency and accountability. How does an ideal weekend look for the Park family? My life has been seven day working weeks, with Sunday also involving having to work around our lifestyle property – another reason for moving into town. What’s your favourite holiday destination – local and overseas and why? My local favourite is the Marlborough Sounds, water lifestyle. Overseas is the Middle East (where I met my wife), along with Hawaii where we had our honeymoon.

etropol caught up with Darryll about his vision for the central city and why he’s so passionate about Christchurch. You could live anywhere, but you’ve chosen to invest heavily in Christchurch. What do you love about our slice of southern paradise?
I’m an outdoor person, so I love the space and the ability to enjoy different pursuits within easy reach of Christchurch; the uniqueness of Cantabrians and, in particular, how we come together and support each other during times of adversity; and yes, I’m a ‘Red and Black’ man – through and through.
You’re an extremely successful businessman. What are some of your proudest achievements? Getting married, having a family and seeing my son and daughter grow into two fine young adults, as well as impacting positively on staff and management in my 30 years of business management. oday, in 2019, there are 41,000 people experiencing homelessness in New Zealand. It’s a staggering statistic, but that tally is being challenged and dealt to on a daily basis with the help of an orange van equipped with showers, washing machines, six orange chairs and amazing people with big hearts – people like Eddie Uini of the New Zealand operation, Orange Sky. A former social worker, Eddie previously helped South Auckland’s homeless wash their clothes by partnering with a laundromat in Manurewa. He managed to fundraise almost $50,000 personally for this project, before joining Orange Sky as their sole New Zealand employee and operator, committed to delivering “the best laundry service New Zealand has ever seen”. The three-pronged service provides a safe place to access showers, a clean change of clothes and genuine conversations. “The first things out of our van are six orange chairs for people to sit and talk. Awesome friendships have been forged on those chairs,” Eddie says. Orange Sky was founded in Australia in 2014 by two 20-year-old friends, Nic Marchesi and Lucas Patchett, who installed a couple of washing machines and dryers in the back of their old van and visited parks around Brisbane to
wash and dry clothes for free; they saw it not only as a way to improve hygiene standards, but as a way to restore dignity to people doing it tough. The rising number of homeless people in New Zealand prompted Australia to reach out to their friends across the Tasman and, in October 2018, the New Zealand branch of Orange Sky was launched in Auckland. With a team of 1,600 volunteers and a fleet of 28 vans containing mobile showers and laundry facilities, they help wash more than eight tonnes of laundry per week – for free. To date, they’ve now washed over 4,700 kilograms of washing, provided 1,686 showers, and had around 2,500 hours of non-judgemental conversation with the homeless of Auckland in 13 locations. Eddie says a huge reality check for him was the day he found himself washing the clothes of a guy who was in his class at school. “Things can go badly wrong for people for any number of reasons. It made me realise you can’t take anything for granted.” Wellington is next in the sights of Orange Sky, and Eddie recently met with our Christchurch City Mission and heard some heartbreaking statistics. He says that ideally, and depending on fundraising efforts, he hopes to see Orange Sky operating in Christchurch soon. “Kiwis have big hearts and are known for their generosity and supporting
their community. We would love for people to continue to support Orange Sky’s mission through simple things like sharing our stories, donating and, most importantly, participating in genuine and non-judgmental conversations with our friends on the street.” Visit www.orangesky.org.nz.

I
could almost tell you them all too; it’s like this huge computer in my head that would drive anyone else mad, but I love it,” she laughs. It was her dad that was the engineer by trade and, although Annabel had always thought the “clever engineer gene” had missed her, the penny dropped when she was asked recently ‘how do you engineer a recipe?’ Cooking wasn’t a fashionable thing to do when Annabel first started dipping her fingers in the baking bowl, but she discovered an incredible sense of achievement being able to give others pleasure through her baking. “I would feel useful and successful and have a lot of fun,” she says. “And as I went through life subconsciously, without realising it, I was always cooking.” It was ironically food
poisoning rather than the food itself that paved the first step in her career path. During her OE, she got food poisoning in South America and ended up staying in a village in Brazil, renting a room with an Argentinian couple. “All I wanted to do was cook!” she says. “It made me feel anchored and good.” When that couple asked if she could make croissants, she wasn’t going to let the fact that she had never made them before in her life hold her back. Soon, she had her own croissant business! When she eventually found her way back home she started a catering business and writing for The Listener. Not knowing where to go next, she did what all good fan girls do and she wrote to Julia Child, who invited her to America to introduce her to the world of cuisine. She spent the late 80s and early 90s learning
everything she possibly could about cuisine. “I found while travelling that food is the bridge between us all. It can help you discover cultures, ingredients, nature, community, and also this wonderful idea of creativity,” Annabel says. “The idea of a recipe being written down is a reasonably recent invention; in places like India and China, the language of cooking is handed down. People can have nothing and yet make these amazing foods; feeling part of this world is very nourishing.” It’s this travel that formed the basis for her understanding of ‘food families’ and ‘flavour profiles’. “Food is like music; you learn a few chords and before long you can riff. When you understand the different flavour profiles and how they go together, it opens up your world.” What this means is that the core ingredients of a salad may be the same, but it’s the understanding of flavours that enable you to transform those vegetables into a South East Asian salad or a Middle Eastern salad. A lot of what Annabel turns her award-winning hand to these days is driven by ingredients and what’s available – particularly in her own Wanaka garden. It’s 12 minutes from her place to the shop, so if she doesn’t have to go, she won’t, learning instead to be resourceful with what she has. Her Essential cookbooks were written on this basis – the idea of giving people a basic toolkit of basics that can form the basis of just about anything. “I’ve always been interested in helping people to feel empowered and confident with cooking. This isn’t MasterChef;

it’s home. Most people are tired at the end of the day, so dinner doesn’t need to be an enormous amount of work and palaver; it’s about taking something fresh and knowing the easiest way to make it yummy.” She’s an “old hippy at heart”, or, more formally, a founding member of the Sustainability Council, so sustainability is pretty close to her heart. While a key aspect of this role is keeping GMOs out of the food in New Zealand, even the basics of ‘reuse and recycle’ are important. “I’m a big believer in getting things when they’re in season, like tomatoes, and freezing them so I’ve always got it.” She’ll cook spinach in olive oil and freeze handfuls of it so it’s always available as a meal addition. Another top tip is when you get to the end of the week and your salad greens have gone limp, or your rocket has wilted in the hot sun before you’ve made it back to the house, put them in a big bowl of water and ice cubes, and the water will pump the cells up again, bringing them back to life. Treat protein as a treat and have a meatless meal each week, she says. Although most New Zealand meat is freefarmed, so it’s not as bad for the planet, cutting back can certainly make a difference. “I’m a big composter and worm farmer, in the same way we understand our gut microbes are important to keep healthy, the soil is as well, so having compost and creating worm farms is a fantastic thing.” And trying to avoid plastic is a biggie. So why not put a plate over food in the fridge instead? After all, as Annabel says, “If we all just do one little thing…”

talks resilience By Melinda Collins
Ten years ago, during the time of the Global Financial Crisis, Lucy Hone (now Dr Lucy Hone) couldn’t turn on the news or pick up a newspaper without being told we need to be resilient and that the economy needs to be resilient. “I wondered, does anyone actually know what this word means?” she says when we catch up ahead of her TEDxChristchurch talk last month.
A
freelance writer at the time, she decided to work on an article about resilience and what it means. During her research, she stumbled across the University of Pennsylvania in Philadelphia, the home of resilience psychology. She didn’t end up writing the article, but instead enrolled in their long-distance Master’s Degree, before completing her PhD here in New Zealand. “When I got there, the department that trained me had just picked up the contract to train all 1.1 million American soldiers to be as mentally fit as they were physically fit,” Lucy says.

widely recognised as the worst loss to bear, but I was more fortunate than most; I had this training; I had seen this research; I knew there was hope that we could somehow get through, but more than anything, I had these tools to rely on,” Lucy says. Now she’s taking those tools to our schools. Two years ago, Lucy and her colleague Dr Denise Quinlan formed the New Zealand Institute of Wellbeing and Resilience, focusing on working with schools, as well as corporates and community groups, to get them to take a whole-school approach to understanding and building
wellbeing. This time last year they were commissioned to write The Educators’ Guide to Building Whole-school Wellbeing, soon to be published by Taylor and Francis in the UK (Routledge). “Schools come to us all the time and say ‘can you help us out with our wellbeing plans, we want to take it seriously, we fully get how important it is to do so for our staff, our young people, our community too, but we don’t know where to start, we don’t know what to do and we need some help’,” Lucy says. “So that’s the book we’re writing.” However, what makes this

such a critical resource is that the pair have reached out to all their international contacts in the resilience field to ask what works and what doesn’t work. It’s all practical and it’s all straightforward and easy to implement. “Teachers don’t have time to add more things into their already busy curriculum,” Lucy says. “Our whole mission is about getting this science out to as many people as we possibly can. Most public health in terms of mental health has been about the ambulance at the bottom of the cliff. What we’re doing is equipping people with the skills, the ways of thinking
and acting that prevent them from taking those costly falls – costly to individuals, to families, to society. That’s why I’m really excited about the book.” They also head the annual ‘Wellbeing and Education New Zealand Conference’. Formerly called ‘Positive Education New Zealand (PENZ)’, it will be held on 2 and 3 April 2020 at the Christchurch Town Hall. “We’ve got independent schools, Catholic schools and Māori immersion schools, all working alongside each other to collaboratively understand what they can do to support their staff and young peoples’ wellbeing.
“This was an initiative that started with the principals; Linda Tame (Jack Tame’s mum) came to me a couple of years ago and said ‘we keep hearing from the principals that they want to work together in the wellbeing space, because wellbeing goes beyond the school gates and so do the mental health challenges’. “So the school leaders get it, but to make a real difference it has to be a city-wide collaboration. We’re in this incredible community where we have all these schools working together. They used to be competitive, the secondary schools of Christchurch, now
they’re showing the rest of New Zealand that they can work together for the better good and being in that room is just incredible when they’re working alongside each other; the teachers from St Bedes working with the teachers from Christ’s College and Rangi Ruru and Hagley College. “The willingness to work together is critical because you don’t fix complex problems working with one stakeholder. If you want to make transformational change, you have to work together.” Dr Lucy Hone spoke at ‘TEDxChristchurch 2019: Tūrangawaewae’.

Rather than crafting elaborate recipes with a three-hour prep time, the common theme for Hay has always been writing recipes for the home cook. “So they’re simple to follow and made with things that are easily available from the supermarket – not just things you’ll only use once!” “It’s a different approach; we all have limited time, we’re just juggling things like kids’ homework. People are always drawn to the styling as well. I want them to look at a book and their mouth starts to water, then they realise all the ingredients are right there and they can make that! All those hooks have made me fortunate enough to have a long career.” When pressed for her foodie philosophy, it’s ‘simple made special’. “Which doesn’t mean simple things made difficult; it’s about simple foods made amazing!” So how does a day in the life of Donna Hay look these days? “Not as many deadlines, that’s for sure,” she laughs. “No two days are the same, which is great for me. I never have a day planned, which is how I’ve always been, but now I’m spending more time in the kitchen doing recipes – I love it!” She’s about to head up a female chef series in Australia, so she’s been reflecting on dishes that have meant something special to her. There’s certainly been plenty to choose from, so does she pick
favourites or are they all her babies? “It’s been a journey looking back at dishes that sparked something in my career,” she says. “I remember a pasta I did early on; its name has even changed over the years to ‘Studio Pasta’ because I used to cook big bowls of it for the studio. It’s had different incarnations, but it’s simply pasta with red chillies, baby capers, lemon rind, garlic, rocket, cracked black pepper and parmesan. “It has come up so many times in my career and it has meant so much along the way as well, so it’s going to keep going,” she laughs. Talking of keeping on going, Hay is certainly doing that herself. She’s hitting New Zealand in the near future for ‘An Evening with Donna Hay’, where she will be taking attendees on a journey through the highs and lows of her hugely successful career. She’s got the overseas launch of Week Light, which will see her traipsing across the globe from Germany to the Netherlands. Then she’s heading back to her homeland for the AO Chef Series at the Australian Open. There’s another book in the pipelines before a big festival in Bondi. So you can expect to see this name a lot more in the future. But in the meantime, Week Light open on your bench will just have to do.

am so incredibly fortunate to have been able to turn my childhood hobby into a lifelong career,” she says. When we catch up it’s the eve of her new cookbook Week Light (published by HarperCollins) that has hit the street this month, and, even though there have been 27 bestselling cookbooks that have come before it, this one is particularly close to her heart. She’s been serving as editor-in-chief for her bimonthly publication Donna Hay Magazine, which closed in July 2018 after publishing 100 issues across 17 years, so it’s her first opportunity to get back to her core passion and let loose in the kitchen. “I’m really excited about this book,” she says. “After closing the magazine it meant I got to write recipes for myself again and do all the styling. I’m getting back to what makes me happy. The book has been a bit of a personal journey, but it’s also a bit of where I think cooking is heading.” Week Light offers a new, modern way of eating all the different types of veges, she says. “There’s meat thrown in there as well because I’m quite aware there are people who are into eating veges, but have teenage boys that are keen to eat meat,” she laughs. So if you once had a phobia of steamed cabbage, this might just have the inspiration to cook it in exciting new ways. It’s a different approach for the MasterChef generation.

Theatre’s dark comedy Hedwig and the Angry Inch. “I was in male drag as Yitzhak. He was a beautiful, humble, charismatic and patient character.” However, her Christchurch stage debut was in 2015 as part of the musical production That Bloody Woman at The Christchurch Arts Festival, which then went on to be performed up and down the country. “I was super stoked to be involved in such a successful project.” Phoebe, who lives in Linwood with her husband, has just turned 30. “I feel like I have crossed an imaginary threshold. When I graduated, I was crippled with self-doubt and suffered depression.” She decided back then to be a musician instead. With two EPs under her belt, That Bloody Woman came along and thankfully created the opportunity for acting to take centre stage in her life again. This
led on to other ventures such as working with Silo Theatre, The Auckland Philharmonia and The Christchurch Symphony Orchestra. Alongside WORM, Phoebe is currently working on a cabaret act for the 2020 Jazz and Blues Festival with Two Production’s co-artistic director, Holly Chappell-Eason. “Acting is a remedy and illness at the same time,” Phoebe explains. “It helps me to process stuff – it is a double-edged sword.” In this year’s 48-hour film festival, her team Snack To The Future won the national grand final with their film A Familiar Feeling. “We were given the genre ‘gross-out/cringe comedy’. It’s about two people who meet in a bar and discover they have more in common than they think.” A must-see, the film can be watched on www.48hours.co.nz. hoebe Hurst put on her first solo performance of WORM last week, which had an intimate audience squirming with mirth. “It is weird – but it’s a comedy with no linear storyline, designed for the audience to participate and have fun and disconnect from reality for 50 minutes.” She takes the Glitter and Chaos production to Auckland’s Basement theatre next month, opening on 15 October. Where WORM will wriggle to next will be interesting. The Edinburgh Fringe Festival is her goal post. Born for the arts, Phoebe spent two years at Hagley Theatre Company before moving to Wellington and graduating from Toi Whakaari, New Zealand Drama School, in 2011. Now well-seasoned on the Christchurch theatrical scene, she stole the show last May in The Court

POWER OF THE PIXELS They say that money can’t buy happiness, but how about a Samsung 98-inch 8K television instead? Sounds good? Then be prepared to part with around $80,000 for that slice of cutting-edge happiness.

amsung is spearheading the launch of 8K technology in New Zealand with its ultra-premium Q900 QLED 8K range, available in stores now. While many homes are still entering the 4K TV market, the demand for larger screens and an even better quality image is on the rise. 8K resolution actually features four times the pixels of a 4K UHD TV and 16 times more than a full HD TV. The technology for streaming native 8K content isn’t available in New Zealand as yet, but in this fastmoving industry it won’t be long. Japan has already launched an 8K channel for the Rugby World Cup. But that’s not to say your current viewing won’t look any better on an 8K TV, because it does and the difference is bigger than you might think due to huge advances in upscaling AI. Let’s take a look at the theory involved without breaking out too many initialisms and formulas. It’s commonly believed that the best 4K screen is the Sony BVM-X300, a 30-inch 4K mastering monitor that carries 156 pixels per inch, producing an almost flawless 4K image. Now take that same image and put it on a 55-inch 4K TV and the pixel density drops to 81ppi, on a 98-inch TV and it takes a dive to 45ppi. In a nutshell, that 4K image no longer looks like 4K. So as the screen size gets larger we find ourselves needing more pixels per inch to display these ultra-highdefinition images as they are meant to be seen. Our eyes and brain are clever enough so that when they see gaps in information they compensate to make things seem more natural. This is where 8K comes to the fore. To put an 8K TV into perspective, imagine 16 4K TVs in a 4x4 grid, now imagine condensing them all down to the size of one big-screen TV. You are left with a massive pixel density with fewer gaps in the information being displayed. Fewer gaps means our eyes and brains need to do less work and the picture seems more natural to us. Ranging in sizes and price from the 65-inch at $10,999 to the enormous 98-inch at $79,999, the Samsung Q900 QLED 8K range will be the drooling point of any gathering, but needn’t be an eyesore when not in use due to their ability to blend in with the wall they are on or function as a piece of art. Whether they are within your budget or not, head into your nearest Samsung TV stockist and take a look at the wonderment you are missing out on.

ost women would say they have a stubborn pocket of fat that no diet or extreme exercise plan can budge. The Suffragette movement advanced women’s rights even further and their right to comfortable clothing, which included incorporating functionality while still maintaining a sense of personal style. It was definitely the season for change as women moved into factory work and also sought fashion freedom in the form of free-moving trousers, which are now equally a staple of womenswear. So what does the fashion forecast have in store for women’s trousers as we approach the warmer months? This year you can expect to see plenty of leather, flared styles and cropped designs, with white trousers also making a comeback. High waists are still hot and animal print is on-trend again, if it ever really went away. Wider legs in the form of culottes or harem pants are hitting the style consciousness. The voluminous silhouette of these bottoms make them ideal for the warmer months in fabrics such as viscose, silk and chiffon. We can also expect to see breathable fabrics such as ecoluxurious linen, which is both beautiful and durable. The woven texture makes this fabric of choice resistant to stains and easy to care for. Linen’s sustainability properties are also an attractive style perk, while its flax beginnings lend it well to cool and crisp fashion designs for spring and summer. Utility has been the name of the fashion game for a while now, so we can expect to see plenty of beige, khaki, patch pockets, cotton drill and cargo pants. Style tip: Look for easy care options that are machine washable and long lasting. Trousers may be your most worn garments so investing well is always advisable.

You’ve created an amazing community through DediKate. Can you tell us a bit about your journey? After the birth of my third child I found myself out of shape with low self-esteem. It’s ideal for women aged 18-55. What are some of your favourite ways to get ready for summer? Although we are encouraging them to ‘Get Summer-Ready’ through this, I will be teaching them to make changes they can maintain so that they look and feeling amazing for summer and beyond. My tips are to take each day at a time, schedule in your workouts, choose healthy foods you enjoy, eat regularly and drink lots of water! See challenges as part of the process and never give up! How do you stay motivated? Scheduling and not thinking too much is key. Long term you can’t rely on motivation, because sometimes you don’t feel motivated. So schedule it in and don’t give yourself the choice. At the end of the day though, looking and feeling great is what keeps me going. What do you love about what you get to do? I love helping people, creating something that helps people and that they grow to absolutely love too is so rewarding. I love the sense of satisfaction from seeing others achieve through my programme. I also love the variety – I do so many different things from leading the workouts to organising new and exciting challenges. It is lots of fun!

Fast forward 12 months and I was feeling great – so I decided I needed to share all that I had learned from my own experiences (combined with my university study and work experience) to help others. The only way to effectively do this from where I was living was online. So, I spent five months creating a series of e-books and setting up Kate Ivey Fitness. Fast forward another 12 months and women, just like me, were getting great results on my programmes. So I launched DediKate, an online health and fitness platform. It started very basic, with only Power Sessions, Sculpt It Sessions and recipes, but two years on now has these in live formats as well as Boot Camp Blast, ResistDed, Audio Speed Sessions, running plans, meal plans and more, as well as an app (and of course I still have many more plans for it!). The most amazing thing for me on this journey is getting to know the women on DediKate (even if it is through a screen) and being a part of the DediKate community. Everyone is so supportive and so encouraging. When I explained to one of my members that I hadn’t actually won an award at the Business Awards, just got runner up, she said ‘You are a winner in our eyes’. The support I get from members and the support they give each other means that even though we are mostly working out alone, we are not alone at all!

Relief from headaches & migraines
Most people will experience a headache at some point in their life. Not all headaches are the same as they can range in severity, frequency and cause. Headache disorders may significantly impact a person’s ability to function and reduce their overall quality of life. Correctly differentiating between headaches and types of migraine headache can lead to faster, more effective treatment.
S
o what is the difference between a headache and a migraine? Headaches are unpleasant pains in the head that can cause pressure and aching. The pain can range from mild to severe and they usually occur on both sides of the head. The most common type of headache is a tension headache that can be caused by triggers such as stress, muscle strain and anxiety. Migraine headaches are intense and severe and often have other symptoms in addition to head pain. These additional symptoms include nausea and vomiting, seeing spots or flashing lights, sensitivity to light and/or sound and temporary vision loss. Migraine headaches typically affect only one side of the head, but can be on both sides and some people may experience pain so severe they need to seek emergency care. No matter how long they last, migraines can be exhausting and debilitating. People should consider speaking with a healthcare professional if they experience frequent headaches or migraines that interfere with the way they live their lives. It’s the gut condition that is extremely common and yet talked about behind cupped hands – if it is talked about at all. Metropol caught up with The Gut Foundation Trustee, Professor Richard Gearry to find out more about irritable bowel syndrome (IBS).
ne of the most misunderstood and poorly acknowledged abdominal problems are the functional gastrointestinal disorders such as irritable bowel syndrome (IBS). IBS can come with a range of symptoms including abdominal pain, with changes of bowel habit that can be constipation, diarrhoea, or alternating from one to the other. Other symptoms can include abdominal bloating. Often pain improves after passing a bowel motion. IBS is common, affecting about one fifth of New Zealanders and can range from mild to severe symptoms. The symptoms are often variable from day to day. The cause of IBS is not well understood. People with IBS are more likely to suffer from anxiety and depression and sometimes more than one family member can be affected. General practitioners are experts at diagnosing IBS based on symptoms and some laboratory tests. Symptoms such as bleeding from the bowel, abdominal symptoms that wake one from sleep or significant changes from normal must be discussed with a GP as they may not be typical for IBS. Occasionally patients with atypical symptoms or a significant family history of other diseases may need to be considered for colonoscopy or other tests. The treatment of IBS focuses on managing one of the more complex interactions in the human body. This is the gut-brain axis whereby abdominal symptoms can
be exacerbated by what is happening in the brain. This is made even more complex by the gut bacterial environment (also known as the microbiome). There are more bacterial cells in our bodies than human cells and it has become clear that the way in which these bacteria interact with our gut, in combination with our brain through the gut-brain axis, can have an effect on our health. At present a mainstay for the treatment of IBS is the management of stress and anxiety. Some people with IBS notice that stress can lead to greater symptoms and for these people, relaxation techniques, psychological therapies and hypnotherapy may all help IBS symptoms. Antidepressants may also help, not through their effects on depression but by changing the neurotransmitters in the gut. Diet changes may also lead to improvements in abdominal symptoms. The potential benefits of some diet changes have become more scientifically valid over the last decade. However, the advice of a registered dietitian should be sought when embarking on exclusion diets to ensure that the diet remains balanced. The future of IBS treatment may include controlling the gut microbiome through a range of methods. For now, medical science is not yet able to define a healthy or unhealthy microbiome, but it is likely that future therapies will target the microbiome to improve life for those with IBS. The Gut Foundation is a supporter of research into all gut disorders including IBS.

Business giving back Owning a café was never the plan for Wil and Kim Sze. Wil was finishing his master’s degree, and Kim was pregnant with their first child and going to be a stay-at-home mum. From their loss came a desire to give back. They decided to start a business that would enable them to pass on the kindness they had received and on 1 July, 2019, Flora Café opened. Located in the ground floor of the Manawa building, across from Christchurch Hospital, there’s flamingo wallpaper, plants, Unknown Chapter coffee, homemade food and smiling faces that will welcome you with a warmth that feels like home. They are worth the visit, especially for the oaty caramel slice! In October, Flora Café is donating a portion of their profits to Heartfelt. There will also be a memory wall, so anyone who has lost a child can write their name on a heart to put on the wall. For every heart, an additional $1 will go to Heartfelt.

Forefront of sustainability The Belgian Beer Café Torenhof is one of Christchurch’s best longstanding establishments.

Using Canterbury and South Island produce from paddock to plate where possible, Torenhof is all about food that is fresh, free-range and supports local businesses. Furthermore, with assistance from its suppliers, the café
has reduced its plastic usage by 85 percent, and switched its consumables to fully recyclable and, where possible, compostable. The team has also undertaken an energy and waste audit with the help of Christchurch City Council and True North Consulting. While this is a very interesting journey, they are always pleased to receive suggestions from their customers on the in-house feedback forms. Ingredients: Pork 500g NZ pork shoulder, cut into 2cm cubes 1 tsp salt ¼ tsp white sugar 1 tsp soy sauce 1 egg white 2 green onions, finely sliced ½ cup cornflour Sauce 1 tbsp vegetable oil 3 celery stalks, sliced 1 green pepper, cubed 1 red onion, cut into wedges 1 cup water ¼ tsp salt ¾ cup white sugar ⅓ cup apple cider vinegar ¼ cup ketchup ½ tsp soy sauce Juice and contents 1 can pineapple chunks (225g) To fry 3 cups vegetable oil To thicken 2 tbsp cornstarch ¼ cup water

Method Place cubed pork in a medium bowl and season with salt, sugar and soy sauce before mixing in egg white and green onions. Cover and place in the fridge for one hour. In a large deep pan or deep-fryer, heat the vegetable oil to 185°C. Remove the pork from the fridge and coat in cornflour. Fry the pork in the hot oil for about 10 minutes – until evenly browned. Drain pork on paper towel and set aside. In a wok over medium heat, heat a little oil and stir in celery, pepper and onion. Cook until the vegetables are tender then remove from heat and set aside. To make the sauce, mix the water, salt, sugar, apple cider vinegar, ketchup and soy sauce in a large saucepan over high heat. Bring to the boil then stir in the cooked pork, vegetable mixture and contents of pineapple can. Bring sauce to a boil before stirring in cornflour and water mixture to thicken. Cook for a further 5-10 minutes until shiny and thick. Serve with steamed rice.

Ingredients 1 cup (280g) hulled tahini 1 cup (220g) raw caster (superfine) sugar ⅓ cup (80ml) maple syrup 2 teaspoons vanilla extract 1 egg 2 cups (280g) wholemeal (whole-wheat) spelt flour ¼ teaspoon bicarbonate of (baking) soda ¼ teaspoon baking powder 200g chopped dark chocolate Method Preheat oven to 160°C. Line two large baking trays with non-stick baking paper. Place the tahini, sugar, maple syrup, vanilla and egg in a large bowl and mix well to combine. Place the flour, bicarbonate of soda and baking powder in a medium bowl and stir to combine. Sift the flour mixture into the tahini mixture and mix well to combine. Add the chocolate and fold to combine. Roll heaped tablespoons of the dough into 24 balls and place on the trays. Flatten the cookies slightly and bake for 12–14 minutes or until light golden. Allow to cool on the trays.

Gin-tastic! Curiosity Gin is rebranding and relaunching with a new logo and bottle, but it hasn’t changed the Genièvre that Cantabrians have come to love so much.

ound in the finest of bars, the logo has been displayed at the distillery at 11 Sandyford Street for the past few months but the new bottles are more modern in design, and will be larger at 700ml. “We went into making gin very quickly with the intention to learn as much as we could about the spirits market as fast as we could,” Curiosity Gin’s Antony Michalik says. “One thing we have learnt is that almost every decision we made about the packaging in the beginning was wrong! They are the same fantastic gins, but now the bottles will look as good as the gins taste!”

Those who have taken the tour will have seen the still assembled in place but not operating. “The new still gives us 10 times the capacity of the previous still and will allow us to start making whisky again at small scale,” Antony says. “Speaking of whisky, we are looking forward to launching our first proper three-yearold single malt in December. It’s been a long wait, but the samples are tasting great and we can’t wait to have a product for whisky lovers to taste and purchase.”

Taking the time to understand their requirements is crucial to producing designs that fulfil a brief. Each project is looked at on its own merits and with an absolutely open mind.” This client-focused approach has resulted in many architectural awards over the years. “We are thrilled to have won this year’s regional architectural design award for ‘Residential New Home over 300m2’. It’s a beachside house on Christchurch’s North Shore and it was designed to harmonise with the clients’ family lifestyle and use of spaces.” On a larger scale, but still very much in accordance with the client’s brief, is another 2019 award winner – the transformation of the former Forsyth Barr office tower into a dynamic luxurious hotel – the new Christchurch Crowne Plaza. “This was definitely a challenging project requiring lateral thinking and all our combined experience to resolve – but the outcome earned us a commercial/ industrial design award.”

I have just painted and restyled my own bedroom for spring. I used Resene Quarter Rice Cake. This is a creamy white; warm and fresh. Great for villas or for someone looking for more than just white. I have accessorised with a soft floral pot plant, new cushions on my bed in Liberty Florian, with piped edge and backing in velvet, and very soft dove grey linen duvet and white sheets. Feminine colour tones and patterns. This summer, florals are in and I was in the mood for ‘soft and pretty’.

was recently invited to contribute to a New Zealand Institute of Architects’ forum on the subject of emerging trends in city living in Christchurch. As one of the speakers, I was pleased to give a talk on co-housing and the work our practice has been doing in this area for the Peterborough Housing Co-operative. We have been privileged to lead the design of this new pocket neighbourhood over the past three years as the project has evolved. The development includes both private homes and shared facilities, clustered around a large central courtyard. The co-housing approach is instinctively attractive because it connects with our ideals of wanting to live well in small communities and of wanting to live more simply and more sustainably. Now more than ever, people really do want greater choice around how they live in the urban environment. Internationally, we are seeing the emergence of a growing array of solutions to answer that consumer trend. For example, ‘Naked Architecture’ offers buyers the ability to buy ‘shell space’ with no pre-imposed layout so that it can then be finished and fitted out to suit personal needs and budget. The idea is that two different potential buyers will likely have two very different sets of lifestyle priorities, so it makes sense to let them decide how they want to configure their own space. Sparking a lot of interest in Australia right now, too, is the Nightingale model. This is an innovative, architect-led approach to apartment development that seeks to prioritise social, environmental and financial sustainability. With profits capped, projects are crowdfunded through an ethical
investment model and transparency around costs and governance – it’s an approach that is proving very popular (each project to date has been completely pre-sold via ballot). Of course, the reason why models like this resonate so well is they offer more control. Future residents have a say on key design decisions, such as how much car parking to include or whether to have any shared facilities. They call the shots on whether to have a swimming pool or communal barbecue area. In my view, any kind of shared, multi-residential arrangement could only succeed if all those buying into it were on the same page, sharing a similar vision. As well, there would need to be clear and effective ground rules in place to minimise any potential misunderstandings or conflicts. Could something like the Nightingale model work in Christchurch? Certainly, I think it offers some exciting potential for those interested in pooling their resources to get the kind of city lifestyle they want within a multi-residential setting. Having held a number of interactive forums on architecture this year, through our ArchiChat Group sessions, I’m aware that many people would certainly welcome more choice in this area of urban housing development. At our next round of ArchiChat in November, we will be seeking to gauge interest in potentially trialling this approach at a Christchurch site. Country’s hottest garden inspo A former Timaru local, Dan Mackay, is featuring in the Auckland Garden DesignFest for the first time this November, however you may recognise him from TVNZ’s HOMEmade. A true creative, Dan is exploding with innovative ideas and the skills to see them through to completion.
What attracted you to garden design? While I am a firm believer that the garden is the most important space in the home, my initial attraction with gardens was when I was in Europe in my heyday, travelling and landscaping. Digging holes was hard work and I decided that I would rather be pointing them out instead. Once I started designing, I realised how much I loved being able to push my creative limits and form wild yet functional spaces.

What do you think makes a good garden or outdoor space? There are three key things that I think make an inspiring outdoor space; firstly, you need a place to relax that will allow you to enjoy your garden. Secondly, a place to play is always at the top of mind in any space I am creating, especially for families. At my own garden and with five kids running around, I tried to create an element of fun in every corner, from a skateboard ramp to swings that can be used for both adults and children. Finally,
including a main garden feature or having something that stands out and is aesthetically pleasing to the eye is important. What are some of the key trends you’re seeing coming through in our outdoor spaces? Ten years ago, almost everyone wanted low maintenance gardens. With the rise of healthy living and organic lifestyles, this has now spread into the garden which has caused a resurgence in favour of gardening. People want to have the space to dig, grow veggies and herbs, and harvest fruit. The art of gardening has definitely become cool again! What are you looking forward to in this year’s Auckland Garden DesignFest? It is exciting to be involved with the Auckland Garden DesignFest for the first time. I am thrilled to be part of an event that so many other talented New Zealand landscape designers are involved with. I can’t wait to see their featured gardens and get some inspiration for myself! I am also looking forward to seeing visitors who come along to my DesignFest featured garden. I love being able to yarn with likeminded garden design enthusiasts who are keen to take home ideas for enhancing their own gardens and outdoors spaces – I will probably talk their ears off!

Growing Vegetables Growing Health By Terra Viva Owner Peter Worsp
Growing your own vegetables is a win-win all round. High in vitamins A and C, antioxidants, minerals and fibre, vegetables protect against heart disease and cancer. The mental health benefits too have been well documented.
T
he 1959 rehab programme for war veterans included working in the garden as part of a physical and mental wellbeing programme. You’ll also find that children growing vegetables are much more likely to eat them. If you’ve grown your own vegetables you know exactly what’s gone into and onto them. Growing vegetables gives you a healthy body and mind, a great sense of satisfaction and a healthy pocket. That convenient back-garden vege patch can save you big bucks, especially at this ‘in between’ season of the year. So here’s a few tips, and always remember: plants were designed to grow – it ain’t rocket science!
Herbs are one of the easiest, even in the smallest patch. Parsley – great in the ground or in containers in full sun/part shade with plenty of water. The secret for basil? Maximum heat and shelter from cold wind. Picking mint? Always cut stalks off right at the base and use only the tip to keep plants clear of rust – mint loves water and is happy in part shade. Coriander is such a useful herb which also loves part shade and is at its best grown from seed in spring and autumn. Sweet rocket transforms an average salad into a culinary masterpiece. As winter veges finish and summer is still a way off, plant pak choi, silverbeet and spinach, which all grow fast
and are happy in the cooler temperatures. Beetroot is delicious and versatile – the young foliage as a microgreen, the small beets roasted or grated, and for preserving at the end of the season. Did you know that any of the beets are good for lowering blood pressure? Soil preparation is the key, so dig down to a spade’s depth and mix in blood and bone, a dusting of lime, and sheep pellets, to provide loose and fertile earthworm-attracting soil. picked it up from Armstrong Prestige and I have to say, I was quite intimidated by the size of it. Its exterior has beautiful lines and I loved the obsidian black (there’s black then there’s black!). Its 500Nm of torque is perfect for towing and 180kW means it’s got plenty of power. The base model starts at $128,200 plus ORC but mine was specced up to $150,450 with 22-inch AMG multi-spoke wheels, paint job, luxury seating and AMG sports package. It looked mean. Formidable is probably a better word than mean. A lot of my female friends wanted the Audi Q7 but quickly changed their minds when they saw this. I found this perplexing, but fact is the ladies liked it; it’s big enough to fit the family in and something with a whole lot of grunt.

The biggest aspect of the new Jimny, one which got plenty of eyes on stalks when out and about, is just how funky and different the new car looks from anything else on the road. Our test car was lime green and featured the $500 two-tone black roof colour option. The Jimny’s dinky styling mimics great off-road icons of the past including the Willys Jeep and the original Toyota Landcruiser FJ40, while still looking clean cut and modern at the same time. Inside there is a real feeling of rugged simplicity. You sit rather upright and you feel very cocooned by your surroundings. In the rear you have a choice between rear seat passengers, or a cavernous boot – sadly you can’t have both. Fold the rear seats flat and you can get a decent amount of whatever in the rear. The Jimny also features a number of toys. These include sat nav, climate control, Bluetooth, cruise control, hill descent, Apple Car Play and Android Auto. There is no reversing camera or parking sensors, but the Jimny is so small, you would need to be pretty committed to reversing into something. The Jimny is epic fun around town, but on the open road, it would have been nice to have a sixth gear for cruising. Mind you, long drives is not what the Jimny is about; it’s about going where soft roaders fear to tread, and on this front, the Jimny is dazzling. Weighing in at 1095kg, the Jimny sports a fairly substantial 210mm of ground clearance, which in fourwheel drive low, means you bound around like a barfly after four pints. The Jimny is never flummoxed by any form of terrain. Rock or sand, it doesn’t matter, you just eat it up in comfort while covering a tonne of ground. The first Suzuki Jimny for two decades is nothing short of stunning. It won’t be for everyone, but for someone wanting an absurdly fun way of climbing every mountain and fording every stream, the Jimny is peerless, and a bit of a bargain.

The line-up this year consisted of something for everyone. Lovers of American iron were well catered for. Stand-outs like a 1970 Plymouth Road Runner, 1970 Ford Mustang BOSS 302, and modified 396CI 1969 Chevrolet Camaro SS certainly got plenty of stares. Plus, a Corvette engine-swapped 1957 Chevrolet Bel-Air Convertible was certainly a talking point. Classics from Europe included a much-loved rare Alfa Romeo Giulietta Spider, Bentley R Type, Porsche 356 and Lancia Stratos replica built from scratch. Japan’s fastest toys were also in attendance. Fans of the Nissan
Skyline R32, R34 and R35 GTR had eyes on stalks as these JDM legends sat proudly in line. However, the biggest drawcard for the motoring masses was the sheer amount of late model supercars. A Novitec tuned McLaren 720S, Ford GT, Mercedes AMG GT, Lamborghini Gallardo, Aston Martin V12 Vantage S and Porsche 911 GT3 RS were just a
few of the sheer amount which turned up. “Our car show exhibits a wide variety of cars from muscle cars, American, Japanese cars, to classics, supercars and sports cars. We want to ensure that there is at least one car that suits someone’s tastes,” Jonathan says. With great coffee and nibbles on hand, The Christchurch Car
Show, despite the rain, was a great success and well worth braving the elements for. Plus, when the time came for the cars to leave, the torrent of symphonic engine bliss was unreal. “We hope to make The Christchurch Car Show an annual event and continue to grow the event in every way possible,” Jonathan says. We couldn’t agree more.

What exactly is it? The ZL1, like the regular 2SS Camaro, is part of HSV’s plan to re-inject HSV dealers with the unbridled power and savagery it has become famous for. Each ZL1 is shipped from the GM’s factory to HSV in Australia, where they are given a proper right-hand drive conversion before arriving here. Prices for this monster are $173,990 for the entry-level six-speed manual, and $175,990 for GM’s slick 10-speed automatic. Under the bonnet If you “pop the hood”, you find one of the most powerful production engines on sale in NZ today – the LT4 6.2L Supercharged V8. The numbers are insane; 477kW, 900Nm of torque, and zero to the national limit in four seconds. Sure, you will be doing 15.3L per 100km but that is not why you bought one, is it? Outside The ZL1 weighs in at 1800kg and sits at 4.8 metres long. Muscular haunches, wide Continental rubber housing aggressive 20-inch alloys, and those blasting exhaust tips, makes the ZL1 into an eclectic mix of beauty and the beast. Plus, in white with black tinted glass, our test car could have been an Imperial Stormtrooper with a spoiler. Inside Getting comfortable in the ZL1’s hip-hugging Recaro sports seats is easy. You sit quite low in the ZL1 and the suede rim sports steering wheel
feels good in your mitts. The ZL1 gets plenty of onboard kit including a Head Up Display with G Meter, Apple CarPlay/Android Auto, Dual Zone Climate Control, reversing camera, front and rear parking sensors, Blind Spot Monitoring, satellite navigation, auto headlights and a heated steering wheel. On the road At cruising speed in regular Touring mode, the ZL1 is amazingly compliant. There isn’t much rear three-quarter vision, but you will be spending most of your time looking ahead. Once you leave city limits, the fun begins. Change to Sport mode, that Supercharged V8 booms and crackles like a far-off battlefield and you charge forward, hanging on for dear life. Change up to Track mode and you really need to be awake. You have got to constantly ask yourself if the road, weather or traffic conditions are perfect before you give it the beans – the ZL1 commands respect and will quite happily humble those drivers who try and take liberties with it. That said, whether charging along arrow-straight asphalt or eating up miles of bendy bitumen, the ZL1 is a full-on rip-roaring automotive adrenaline pump. Verdict All in all, the Chevrolet Camaro ZL1 is one of the most exciting cars we have ever had the pleasure to experience. Oh, and there is still some tread left on the tyres.
