Faculty of Technology The Faculty of Technology (abbr. FT), which is part of Tomas Bata University in ZlĂn, produces graduates who are well-prepared for light industries, particularly for the fields of polymer processing and polymer applications. Apart from the manufacturing sphere, they can develop their careers in R&D. The R&D activities conducted by the Faculty of Technology include a wide range of relatively different research areas and directions. Current environmental issues, e.g. waste water treatment, solid waste treatment and microbiological applications in environmental protection, are some of these areas. Footwear production, footwear hygiene and medical aspects of wearing footwear can be considered other traditional areas. New research areas include, for example, the technology of food production, food analysis and food testing. The FT also deals with the application of additives (including phosphate salts and/or hydro-colloids) in foodstuffs, factors influencing the texture profile of food and beverages, antimicrobial agents, and the determination of the metabolites of micro-organisms with positive and/or negative effects on human health. The Faculty produces specialists trained for dealing with issues related to the treatment of industrial waste produced by regional manufacturers, taking into consideration specific problems of the manufacturers, the latest scientific knowledge and also current conditions. The knowledge gained by the Faculty is not only transferred to its students, but it is also used within the development of its business and industry links.

Use of Phosphate Salts in the Food Industry 20 July – 26 July 2013 Application deadline: 31 May 2013 Tuition fee: EUR 330
SUBJECTS COVERED • Phosphate salts – properties and characterisation • Use of phosphates in the meat industry • Use of phosphates in the dairy industry • Use of phosphates in the bakery industry • Antimicrobial effects of phosphates
It is our pleasure to invite you to Summer School 2013 at Tomas Bata University in Zlín. This Summer School programme will be focussed on the issues related to the use of phosphate salts in the food industry. Sodium and/or potassium salts of phosphates and/ or polyphosphates are regularly used in the food industry, namely in the dairy, meat and bakery industries. These salts (aka emulsifying salts) form part of the production process of processed cheese and they can also be found as agents preventing undesirable changes of UHT-treated milk, UHT-treated cream, coffee cream, concentrated milk, etc. In the meat industry, phosphate salts are used for improving the water-binding capacity of meat and for stabilizing the texture and/or organoleptic properties of final products. In the bakery industry, baking powder is an appropriate example to demonstrate the versatile use of phosphates in this area. Apart from the influence of phosphate salts on the texture properties of final products, antibacterial effects of polyphosphates have been observed. This especially applies to the effects observed on selected Gram-positive microorganisms (some strains of genera Staphylococcus, Bacillus and/or Clostridium), evaluated as contaminants in several foodstuffs. During this Summer School programme, lectures dealing with the structure, effects and properties of sodium and/or potassium salts of phosphates and/or polyphosphates will be delivered. The essential component of this programme will be practical demonstrations of the functional properties of the above-mentioned salts in dairy, meat and/or bakery products. Our Summer School programme will be carried out in cooperation with one of the producers of phosphate salts. The commercial mixtures of phosphate salts used in individual industries will be available.
