to mind as you enter the delightful menswear boutique, Richard Allen Clothing, on Middleburg's main shopping thoroughfare, Washington Street.

Crossing the threshold, you may experience the sensation of having been transported to another time and place. Not because the exquisite attire on display is “Olde Worlde.” To the contrary, the shirts, trousers, suits, belts and ties are latest styles from all over the globe and of the highest quality. It is that custom-fit specialty nature, artfully placed and augmented by service from a bygone age

that conjures up images of London’s Savile Row. Together with the staff ’s authentic welcome, whether you’re there to buy or browse, the shop imparts warmth and comfort to the customer. Originating with its owner, Rick Bechtold, who steers his ship with an authoritative air of calm confidence, the superior customer service extends to his capable assistants, Justin and Perry. Rick did not always operate a high-end men’s clothing store. He has a fascinating and varied background which includes a 15-year career working with none other than the late, great Mr. Arnold Palmer, one of the world’s finest golfers ever to grace the links. Rick seriously considered a career as a professional golfer, but the clothing business was always his first calling. One look at this dapper and impeccably turned out gent, and it is clear that tailoring to a discerning clientele was his natural métier. His is an inspiring American story, be-

ginning as a sales rep selling ties and belts in 1972, and four years later being recruited by Hathaway Shirts and Christian Dior as its account sales manager. Rick knew Palmer from the time he was just a 14-year old aspiring golfing professional; in 1988, Rick received a call from the great man himself asking if he would relocate to Florida to work for him selling his line of eponymous golf-wear and equipment. That led many years later to Ritz Carlton engaging him as their retail manager for its Golf Club and Spa in Jupiter, Florida. Still living in Florida, a chance conversation with a Ritz Carlton colleague alerted Rick to a new development in Virginia which the company would manage called Creighton Farms, and he jumped at the opportunity to relocate to Loudoun County to oversee the Creighton Farms construction and then manage its membership and retail growth. he day dawned bright and lovely for our photo shoot for this month’s cover. We had two stunning venues with multiple locations to capture, along with three gracious gentlemen who left their kitchens behind to have a little fun! Executive Chef Ryan Arensdorf of Salamander Resort & Spa (Cover Right) was first to host us upon their lovely grounds. Ryan, and all of our participants, were dressed by Mark Metzger of Highcliffe Clothiers and wore an Oxxford Sport Coat, Highcliffe Shirt, Seaward & Stearn Tie, Levi’s Jeans and Alden Shoes. “People don’t often recognize me out of my work clothes,” Ryan said. “It’s fun to dress up and joke around with a couple of guys in the industry, pick each other’s brains, and just have a good time together.” Executive Chef Anthony Nelson of Field & Main Restaurant (Cover Middle), felt at ease in his custom designed suit by Highcliffe Clothiers. He enjoyed the camaraderie as well, and being able to “speak the same language.” Full of good humor, he kept the conversation lively with never a dull moment. We were all

amazed to learn that Ryan and Anthony grew up about two hours apart, Ryan in Colby, Kansas, and Anthony in Yuma, Colorado. What a small world! Rounding out our grouping was Executive Chef Eric Smith of Goodstone Inn & Restaurant, where our cover shot was taken. Eric carried off his look of a Hickey Freeman Sport Coat, Highcliffe Shirt, Lee Allison Tie, Levi’s Jeans and Rancourt & Company shoes to a tee. He felt that the “opportunity to grow closer and build their network was especially nice,” as they spend a lot of time perfecting their craft. We hope you enjoy this extra picture from the day. Clothing | From page 4 Richard Allen Clothing was launched in 2012. Richard Allen Clothing prides itself on the fact that it tailors fine clothing in a way few others can claim to do. The store maintains individual customer dossiers containing their detailed measurements, as well as their likes and dislikes in style and fit, allowing them to create impeccably tailored customized items following a quick customer drop-in or a phone call from a spouse or loved one wishing to order a special surprise gift. There exists a philosophy here of education, educating its customers as opposed to selling to them, which has resulted in repeat and referral sales being the predominant driver of business for this five-year-old establishment. The company recently developed its own label of high quality clothing, positioned as an opening price point for its line of brands. The store was a natural development from Duchessa, Middleburg’s iconic ladies fashion shop opened in 2008 by Rick’s lovely wife, Robin Cavanagh. Duchessa stocks beautiful clothing primarily designed and manufactured in North America but with a special focus on garments made in the USA. Duchessa was the result of a strategic plan by Robin and Rick who had decided to relocate from Palm Beach, Florida, at the height of the recession. As Rick recalled, “I was convinced that we needed to move my wife’s business close to Washington D.C.,” where he believed the economy would be more resilient and recover more quickly. Robin’s extensive fashion background spans three decades, steeped in international design, and as a retail business owner and operator. She spent a number of years working for the French haute couture fashion house of Charles Jourdan, followed by a long venture in menswear. The first luxury menswear store opened in the early 90s on Chicago’s famed Michigan Avenue. As corporations introduced a casual dress environment, Robin saw the opportunity to expand and include the influences of ladies apparel and to serve the spouses of her gentleman shoppers. The ladies apparel collections were added in 2006. At that time Robin’s home base and operations were located in Palm Beach County, Florida, until their move north nearly 10 years ago. While Rick got underway at Creighton Farms, Robin stayed behind until her retail lease ended, using that time to plan her next steps. After deciding to make the historic, animal and community-friendly town of Middleburg their home, Robin opened her ladies apparel store in the hopes of establishing a business that would allow them to “enjoy a lovely life in this beautiful community.” Just weeks after opening the business and greeting each person who had crossed her threshold, Robin put a sign on the door Clothing | Page 7

She embraced the historic American community and chose to change her merchandising philosophy to support North American apparel designers with factories located in the United States and Canada. “It has been rewarding to see our customers’ support of our designer collections as they too want to champion North American manufacturers and products,” said Robin. Robin considers it an honor and a privilege to be a part of her customers’ lives. “I am grateful that I’ve been welcomed and can do what I love, love, love!” she said. And, she is proud that Duchessa’s is the single largest independent retailer in North America of four of the finest labels found in her shop. Assisting her clients in building their wardrobes over time, built upon style not trends, with fresh and invigorating collections that arrive weekly, is something that never goes out of fashion. She delights in imparting her wisdom and work ethic to her store manager Denae Russeil and her assistants, all of whom have adopted her com-

mitment to personal service and lifetime customer relationships. Style, quality and service are a daily practice and performed by all who are employed by Duchessa. When asked if it has been difficult as a husband-and-wife team working so closely together, Robin laughed and said, “It’s actually a relief and a blessing that I never have to explain why something else comes first. They donate clothes that have remained unsold for a certain length of time to persons in need, and they quietly sponsor local charitable events. Robin was acknowledged for her contributions to the community by Visit Loudoun as its Humanitarian of the Year for 2010. THE VIRGINIA GRAPE PAIRING FOOD & WINE

I

n the 1970s, it was Julia Child who first introduced America to the idea of pairing food and wine. In those days, however, supermarket wine walls consisted primarily of jug wines which sat alongside Boones Farm, MD 20/20 and other similar winelike products. Most wannabe wine drinkers lacked sophistication, but more importantly, they had little access to quality wine. In the 40-plus years since Child brought the concept of food and wine into our living rooms, the American palate has matured along with access to fine wine in nearly every restaurant and grocery store. One might say that the choices offered in such establishments can be overwhelming with even the smallest shops or eateries offering tens or hundreds of wines. Higher-end restaurants likely employ a sommelier or a similarly educated wine steward to make recommendations. In less upscale establishments or when cooking at home, you might not always have access to an expert. It is a fortunate aspect of the digital age that we can now gain insights online. Resources range from a quick-reference pairing chart on

winefolly.com to much more comprehensive pairing advice on matchingfoodandwine.com. TWO SIMPLE RULES Rule 1: If you like the pairing, that’s all that matters. Authoritative wine snobs may beg to differ, but the only real consideration is your personal preference. Rule 2: Refer to Rule 1… Keeping the simple two-rule system in mind, make an effort to engage in some experimentation. There are many wines and even more pairing options. Try to explore them and avoid getting hung up on a single wine until you have “dated around” just a bit. Sometimes we just don’t know what we don’t know, and broad experience can help close that gap. In addition, the more wine we taste, the more our tastes tend to evolve. Just try to keep an open mind. CONVENTIONAL WISDOM Conventional wisdom has long dictated that red wine pairs well with red meat, and white wines are best served with fish and poultry. We can roll with that as a basic

rule of thumb, but as is often the case with sweeping generalizations, it doesn’t hold up in every situation. What happens when you are dining out and your friends have ordered entrees that include beef, fish and veggie options? Well, you can always order by the glass (which is seldom the most economical route) or consider a compromise. In such situations, I typically look for a lighter-bodied red like a Pinot Noir from any geographic region or a Cabernet Franc from Virginia or France’s Loire Valley. This may not work perfectly for everything, and it may make some experts cringe, but it gets us close enough. Furthermore, the red wine/white wine rule applies exclusively to meat dishes. Lighter, non-meat entrees can work well with lighter-bodied reds, a white wine or a dry-style rosé. A FEW BASIC GUIDELINES Even wine drinkers who claim to dislike red wine will find that their anti-red stance will soften when food is added to the Pairing | Page 10

The thing that people find most disconcerting about reds is the tannin in the “finish” (on the back of the tongue) that seems to suck all the moisture out of your mouth. This is typically an aspect of very young wines. A little age can soften the tannic structure and make these wines more approachable. I typically like a red that is at least four years old, but lighter-bodied reds do not necessarily require this much age. You might also find that opening a younger wine in advance of the meal and letting it sit (breath) for a while will help the wine to “open up” and reduce those mouth-drying tannins. A bit of acidity in a white wine is what lends it to pairing, but overly acidic wines can trigger a strong pucker response and be extremely off putting. At the same time, whites that are too sweet or fruity can be what we call “flabby” and don’t pair well either. Try a wine that contains fruit (and maybe just a little sweetness) and has some acidity. You will taste the sweetness on the tip of your tongue, fruit toward the middle and acidity at the back. White wines that contain both fruit and acidity are considered “balanced” and work very well with food. Generally speaking, sweet wines don’t pair well. Having said that, a certain amount of sweetness is desirable and holds up well

when paired with something spicy. So you might consider a sweeter wine with many Asian cuisines or even Mexican food. RECOMMENDED PAIRINGS WITH LOCAL WINES I reached out to a few local winemakers and asked them to suggest a pairing with one of their favorite wines. Here is what they said: Arterra Wines chardonnay with grilled salmon seasoned with fresh thyme on top of a bed of fresh romaine and arugula fermented zucchini, chopped red pepper shredded carrots, olive oil, and chives — Jason Murray and Sandy Gray-Murray of Arterra Wines in Delaplane feel that “the roundness of our native yeast chardonnay helps bring out the subtlety of flavor combinations in this dish.” They went on to explain that the “chardonnay emphasizes fruit rather than barrel, so this delicate dish is not overpowered by this wine.” Casanel Estate carménère with Mediterranean-spiced grilled rack of lamb — Katie DeSouza of Casanel Vineyards near Leesburg likes their carménère with grilled rack of lamb because of the “acidity along with the bright, red fruits like raspberry and black cherry, finishing with traces of smoky toast and spice.” This, she believes, works well with the “highly spiced and seasoned [lamb].”

Zephaniah Farm Vineyard chambourcin with chocolate pudding — While many experts insist that chocolate does not pair well with wine, it goes remarkably well with fruity reds. Bonnie Hatch from Zephaniah Farm Vineyard near Leesburg suggested a fairly unconventional pairing of their estate chambourcin and chocolate pudding. Hatch pointed out “chocolate is not something people think about pairing with chambourcin.” In spite of that, she went on say, “They frequently serve it at family meetings and after dinner.” Hatch makes her chocolate pudding with 59 percent chocolate and tops it with homemade whipped cream and strips of crystalized ginger. These are just three of a limitless number of pairing options with local wines. Whether the wine is from Virginia or elsewhere in the world, don’t be afraid to experiment and discover your own favorite pairings. ELLA RUE “Anything is Possible”

T

he girls from Middleburg have “it” in the nicest way possible. Warmth, passion, sincerity and business savvy have Krista and Alexa Johnson, otherwise known as the sisters behind Ella Rue, poised to achieve the dreams first fostered here in their beloved hometown. Sandy Johnson and her beautiful daughters moved to Middleburg when the girls were ages 6 and 4 respectively, embracing the intimacy of the town and the different pace like a well-fitted glove. Making a cozy home on Marshall Street, Alexa began kindergarten and Krista entered second grade at Middleburg Elementary. Their Mom encouraged them to follow their interests while requiring them to participate in community service, ensuring that Krista and Alexa would develop a healthy work ethic and appreciation for the opportunities that life would present. Ballet, Girl Scouts, soccer, and being altar girls at Trinity Episcopal Church created a happy rhythm to their days. They developed a love of horses and were able to have a trainer and ride at a nearby friend’s farm.

Although Sandy worked mainly as a stayat-home mother and raised them with tremendous love and care, she did augment the household income working as an innkeeper for a time and volunteered in the community as well. The girls had enough, but they took notice of the shops and beautiful surroundings of their “idyllic” town. It wasn’t long before their innate curiosity and ingenuity took hold.

In one particular store, an array of adorable Beanie Babies, those collectable stuffed toys by Ty with names and stories to match that became a craze in the 1990s, kept them rapt. The girls offered to help the owner of “Finicky Filly,” Judy Casey, with her store even though they were only 5 and 7. She let them clean her windows or run errands to the Post Office in exchange for their pick of a Beanie Baby. By the time they were in their mid-teens, the relationship had grown to the point that Casey would allow the girls to sell the upscale designer pieces in her store and began taking them on buying trips to New York, Atlanta and elsewhere. Krista and Alexa were learning the tools of the trade that would prepare them for the steps to follow. During their high school years, both girls also worked at Tully Rector under the nurturing eye of Karen Jackson, forming a bond that remains strong today. As Jackson laughingly says, “I’m like another mother; they can’t get away from me!” Their years in Middleburg growing up included a love of Huckleberry’s breakfasts. “They were the best,” says Alexa. “And the Coach Stop,” chimes in Krista. Ella Rue | From page 18 free pizza on Tuesdays, and the girls could walk to school and all over town with no fear for their safety. It was a bit of a protective balloon that no doubt has contributed to their solid belief in the goodness of people. Also, volunteering with seniors, a thriving babysitting service, meeting customers, engaging with people from all walks of life, and then their early travels taught them the exceptional trait of accessibility, the ability to connect with others because they are genuinely interested in people. Quite simply, they care. Eventually, Casey decided it was time to close her fantastically successful store in Middleburg to move to Charleston, South Carolina, to be closer to her children and grandchildren. By this time, Krista and Alexa had fallen in love with the city on prior visits, and they accepted the challenge to move there and work with Casey. From 2002-2006, the girls studied at the College of Charleston and continued to hone their knowledge of the fashion industry. Their “Middleburg Family” rallied behind them by raising funds to help make this move possible. “The whole village supported us, immeasurably enriching our lives,” says Krista.

As wonderful as their time in Charleston had been, a combination of their natural affinity towards and love of fashion prompted the girls to return home to try to move forward in their careers. After working with Jackson at Tully’s again for a brief time, they moved to Washington, D.C., where working in Georgetown gave them new opportunities for growth. Alexa went to work for Middleburg’s The Magic Wardrobe under the direction of Bridget Wilson at the company’s second location in Georgetown. While working there, Wilson introduced Alexa to the importance of quality materials, distinctive fabrics and the

manufacturing side of the business. For more than five years, Alexa managed the D.C. store and helped launch a wholesale line of clothes made in the Philippines to a national and international audience through a series of up to 12 trunk shows a year. Meanwhile, Krista was building her skills in customer service and client relations through her own work in the city’s fashion industry. As sales manager and “problem solver,” Krista had a knack for displaying eclectic pieces to an increasingly sophisticated market. All during this time, Krista and Alexa were aware that one day they wanted something of their own. While still at The Magic Wardrobe, Alexa gave Krista that extra push to give it a go. The great recession had taken place creating a niche market that they were ready to capitalize on. Buyers still wanted the quality and fashion they had become accustomed to, but now they had less to spend on their wardrobes. In the fast world of Washington, D.C., there were plenty of “gently used” items sitting in closets waiting for a second chance. Krista envisioned an upscale consignment shop where she would offer select brand merchandise to an eager clientele, sharing the

Ella Rue | From page 19 proceeds 50-50 with her suppliers. Krista went to the man she called “grandfather,” Lindy, the long-time partner of the girls’ beloved “Mum Mum,” and asked for a $10,000 loan. The girls credit Mum Mum, their maternal grandmother, with teaching them almost everything they have learned about fashion, taste and manners, all with a healthy dose of humor. At the time, it was impossible for new businesses to get a commercial loan from a bank, and yet, the time was right for Ella Rue to be born. Lindy never even hesitated. With $42 left in her bank account, and after long hours painting walls and accumulating the best she could find of 10 designer labels, Krista opened the doors of Ella Rue in a small crowded storefront on P Street. By the end of the night, family and friends mixed with a few curious newcomers had stepped up and replenished her bank account to the tune of $5,000. Within a month, Krista knew she’d be okay. Over the next couple of years, the sisters worked feverishly to grow the business, Krista hands on at the helm, and Alexa using her connections and business acumen to refer business her way. Just as a pretty new space across the street from her original location became available, Krista asked Alexa to join her in the business as a partner. Beginning in 2014, the sisters who had never been too far apart now had a thriving company to take to greater levels together. The new location on P Street continued to build on the business’ early suc-

You almost always could find one or the other of the sisters there personally styling their customers, evaluating and sourcing merchandise and making sure that their clients were receiving the utmost in service and discretion. And, the business was getting more challenging. It wasn’t enough to offer runway pieces for special occasions; Krista and Alexa increasingly were being asked to style whole wardrobes for women and their children. They saw the demand for creating a complete collection to suit every need, with seasonal rotation pieces and timeless treasures that would outlast the latest trends. About this time, MGM came courting in November, 2015. They were looking for a truly local family-owned business to join their National Harbor location under construction. With tears in her eyes, Krista told of how it seemed like a sign that MGM sent them that first email on the very day they laid to rest their adored grandfather. He had loved Las Vegas back in the 1960s and 70s, the days of the Golden Nugget and Frank Sinatra. It took them six months to decide, but they felt honored to be offered the

opportunity to join the MGM family and recognized MGM’s commitment to the success of all their partner companies and the region as a whole. Once they accepted, Alexa took the lead in the design of the MGM National Harbor store and merchandising, with a focus on new rather than used items including the private label jewelry line they’ve developed. Taking her inspiration in part from Valentino’s flagship store in Rome, “a place I just love,” Alexa created a sophisticated yet approachable space filled with gorgeous couture, fragrances and accessories. It’s a must-see for every style maven. Brimming with energy, the pair laughed as they talked about the future. They are in the process of designing a clothing line to launch in the spring of 2018 focused on wearable street style with a healthy dose of femininity. Although they recently lost Mum Mum, they feel her presence every day as they work hard to achieve their dreams. Krista and Alexa feel incredibly blessed to have grown up with the love and support of friends and family, and to have “Middleburg in our hearts.” You can’t help but love them back. A graduate of The Culinary Institute of America (CIA), Nelson has worked in Las Vegas, New Orleans and Nashville kitchens. But it was at CIA that he met fellow student Neal Wavra, Field & Main’s owner, where the two developed a friendship—and now a vision for farm-to-table food. Their goal is for Field & Main to be a place where the field meets Main Street, a harkening back to the days where farmers came to town to sell their goods at farmers markets. “So many [restaurants] are farm-to-table, Food | Page 23


Food | From page 22 but they’re not [located] where the farms are,” Nelson said. “I really enjoy being able to showcase the bounty that is here, make it part of people’s everyday lives, and make them more aware of where their food comes from. It’s education. When people are aware, they start to eat healthier.” As a child growing up on a ranch in rural Colorado, Nelson has been on “the other side” of farm life. His experience gave him a deeper understanding of the importance of cultivating relationships with local farmers and provided an interest in food. His mother would often call and ask him to get dinner started while she finished up on the ranch, giving him instructions over the phone. There in his mother’s kitchen he first fell in love with food, both as a craft and as an art. Field & Main’s menu is constantly evolving based on what’s in season. They print new menus each day (“We’re not laminating any menus,” he said), creating a draw for local crowds to return and try new dishes. His desire is for his food to be tasty and accessible— and for guests to experience the unfamiliar in a familiar way. He also oversees Riccordino’s, the take-

out sandwich shop next door. The two places were designed with a symbiotic relationship in mind: Field & Main will use the pork chops, loins and belly, while the rest of the pig will be ground into sausage for Riccordino’s sandwiches. Located in Northwestern Kansas, it is home to the “largest barn in Kansas” and The Prairie Museum of Art and History. But for Ryan Arensdorf, it’s home—and it’s the place he learned to cook. He grew up in the kitchen with his grandmothers, who taught him to make pies, bread, roasts, coq au vin and fried chicken. He loved watching and learning from them, and he soon started making dishes of his own. As he grew older, friends would ask him to come to their houses and cook for them. After graduating from the culinary program at Chicago’s Kendall College, he spent 12 years in the Windy City cooking at top steak-

houses, a French fine-dining establishment and a modern Italian restaurant. His experiences in Chicago shaped him as chef, taught him to cook under pressure and formed his culinary “style.” When the executive chef opportunity opened at Salamander Resort, he visited the property and immediately fell in love. “This [place] is every chef ’s dream!” he said. He thought of his childhood home in Kansas with the big backyard overlooking the water, and it reminded him of Salamander. It didn’t take long before he knew: He was home at Salamander Resort, too. His menu is inspired by his roots and by Salamander itself: the peacefulness of the outdoors, the elegant horses, the honeybees and the culinary garden. The Fried Yohanan Farms Chicken (with a side of buttermilk biscuits and Salamander honey) that appears on the Harrimans Restaurant menu is a tribute to making fried chicken with his grandma. Arensdorf wants his food to be “unpretentious” and “approachable,” much like he is himself. He’s careful not to overcomplicate things, believing that simple is best. “Sometimes you just want to sit down

With three restaurants in Loudoun County—Market Table Bistro, Market Burger, Fries, and Shakes, and his latest Cocina on Market—he’s on a mission to change minds about food. He is deeply passionate about sourcing ingredients from local farms, even including the names of local suppliers on his menus. When Market Table Bistro first opened, he worked with four farmers; now he works with 58 local purveyors. “I get to see products from the seed and the sprout,” he said. “I get tomatoes that come off the vine and have never hit a refrigerator. “The farm-to-table movement is nothing new,” he added. “It’s how I grew up eating. It’s how people have been eating for forever. Before World War II, this is how everybody ate.” He believes there is a growing awareness about what goes into food, or perhaps more importantly, what does not go into food. His goal is to educate guests about the importance of what they’re putting in their mouths. “I can always teach people about history through food,” he said. Lage attended culinary school in Falls Church, going on to work as executive chef at The Lansdowne Resort, The Jefferson Hotel DC, The Oval Room and at Michelin-star restaurants in France. Taught by his mother, his grandmother, and his travels around the world, he tells powerful stories through his food. As the youngest of seven kids, he watched his older siblings move out of the house and get married. But he always looked forward to Sundays, when his siblings would come home. Together with their significant others, the family would sit around the big table and eat the meal their mother had prepared. Sundays taught him the magical way food could bring people together and make them feel loved. He began to see food as a source of comfort and happiness, feelings he masterfully replicates in his restaurants today. www.markettablebistro.com LAWRENCE KOCUREK, HUNTER’S HEAD TAVERN UPPERVILLE, VIRGINIA Lawrence Kocurek likes letting his ingredients speak for themselves. A native of Texas, he grew up hunting, fishing and spending time in his grandparent’s garden. He always found himself drawn to nature, a passion reflected in his affinity for farmland today. A graduate of New York City’s French Culinary Institute (now the International

Culinary Center), he worked in kitchens in New York and South Florida and was a partner in restaurants in Austin. He and his wife opened Kocurek Family Artisanal Charcuterie and sold their meats at farmers markets. Drawn to farming, he left the world of restaurants and moved his family to Kentucky to work on a duck and goose farm. But it wasn’t long before his roots called to him, and he relocated to Virginia to pursue his current role. As executive chef of both Hunter’s Head Tavern and Gentle Harvest, he works to create continuity between the two businesses. Close to 45 percent of the menu at Hunter’s Head appears in Gentle Harvest’s prepared food cases for people to purchase and enjoy at home. His prep kitchen is at Aryshire Farm in Upperville, the first farm in Virginia to be both certified humane and certified organic. He loves being surrounded by the gardens and orchards, and enjoys walking outside and talking with farm managers. Inspired by Virginia’s farming community, he changes the Hunter’s Head menu monthly. “I’ve always had a love and appreciation for farmers and for farming,” he said. “To work for a restaurant group where you actually have the farm [here] has been great. If you don’t support local farmers, they will either sell or end up doing something else. People say [eating local] is expensive, and it can be, but the tradeoff is your health.” www.huntersheadtavern.com www.gentleharvest.com ERIC SMITH, GOODSTONE INN & RESTAURANT MIDDLEBURG, VIRGINIA Eric Smith never planned on pursuing a career in the culinary arts. If anything, the culinary life chose him. He wasn’t sure what to do with his life, but he started busing tables to make money. Almost immediately, he found himself pulled toward the kitchen. He liked the lifestyle of

chefs and found joy in creating art. He moved to washing dishes and worked his way from the dish pit, to lead cook, to sous chef. While attending culinary school in Falls Church, he simultaneously worked as a sous chef. At just 33 years old, he already has a full resume. He worked as executive chef at Hunter’s Head Inn & Tavern, and as sous chef at Poplar Springs Inn & Spa, where he honed in on butchery skills and made-fromscratch cooking. He was a banquet chef at Salamander Resort and spent time at Goodstone Inn before accepting the position as executive chef. Food is the way he expresses himself and makes art. “One of the beautiful things about food is that it creates memories,” he said. “When diners come in, they’ll remember the experience, and they’ll remember where they were in life at the time [they dined with us]. Cooking is community-driven.” He seeks to create a culture where cooks can learn, express themselves through their food, and shine in their roles. His right-hand man is his sous chef Thomas Layman, whose talent has shaped the kitchen in many ways. Goodstone’s menu changes every few days, based on what’s in season. Smith is dedicated to supporting local agriculture, and he likes keeping his dishes simple. “I want food to be food,” he said. “People overcomplicate things. I like fresh food. I like simple food that is put together in an interesting way. Aldie General Store & Café Builds Community

P

enny and John Gulick dreamed of transforming Aldie’s old general store into a café and shop. John, an architect, owns Aldie’s J. F. Gulick Construction, and his wife Penny has an interior design background, which created the perfect combination for renovating the 110-year-old store. With the store in need of a major overhaul, the Gulicks used their unique talents to breathe life into it and preserve its rustic vibe and country flavor.

by the community. Penny is proud the store can “put Aldie back on the map” and give residents a place to eat, grab a soda and pick up basic items without driving to Middleburg or South Riding. The Gulicks were careful to preserve the integrity of the store during their renovations. The original wood was recycled into benches and counter tops, and the original beams were used on the ceiling as decorative elements. “If people knew the old place, they should come in for the shock value of the transformation alone,” said Penny. “The old store is still here, but repurposed in a different way.” With a help-yourself coffee bar and a slushie machine, the owners have found innovative ways to connect to the community. They carry local produce, make glazed and chocolate dipped doughnuts daily and bake

a variety of cookies. In addition to Loudoun County wines, they sell wines from New Zealand, Australia and France and offer premade charcuterie plates customers can take to wineries. The store is reaching out to the community by hosting events, which kicked off with a steamed crabs and beer-on-tap day in late July. Coming in the fall are Australian barbecue, Mexican Mix-Up and Oktoberfest events. While the kitchen makes favorite American dishes, they also offer popular foods from Australia and South Africa, including traditional Australian meat pies and sausage rolls, South African jerky and roasted Portuguese peri-peri chicken. “We are trying to offer our customers things they [might not] have Commnunity | Page 28

With seating for 40 people, the store is primarily a café, but pulls from its “general store” roots by selling detergent, toilet paper, dry pasta and an assortment of other basic items. The Gulicks love supporting the community and are grateful for the warm reception they’ve received. According to Penny, contributing to local businesses increases tourism and lends itself to the small business cycle: wineries send visitors to the general store, and the general store refers them to the local brewery. Hikers stop in for a bite to eat, and they are encouraged to visit the antique store down the road. “Everyone helps each other out. L

ook up Cindy Pearson on the Middleburg town office website and you’ll find the profile picture of her in a witch costume and make up. It’s an impressive depiction of the Halloween witch, one that she has honed over the years to near perfection. “I am the witch of Middleburg,” she said of her annual Halloween garb with all the authority of someone handing you their business card. Cindy has often taken her costumes, usually, but not always a witch, on the road, too. When her daughter Jill played Volleyball at George Mason University, Cindy sometimes showed up to the games in full regalia. “Yes, it embarrassed her and I loved it.” Come the end of September, Cindy will have more time to visit her grown children, in and out of costume, when she will retire from her 11-year tenure with the Middleburg Town Office as Economic Development Coordinator. “I’m sure I’ll get tired of me in a week, though,” she said about her impending retirement. “My plans are to take care of me, go to the beach and catch up with friends. I can’t wait.” Being born and raised in Middleburg made Cindy a natural for her job with the town, possessing the invaluable historical knowledge from witnessing the many changes in the community – businesses come and gone, children grown and left, an influx of new residents from urban areas. The longtime Middleburg resident welcomes the town’s transformations brought about by changes and growth. “I don’t really look back and miss the way things were,” she said. “I enjoy change, the newness of things and the new energy.” Cindy attended Middleburg Elementary and Loudoun County High School and

frequented the Middleburg Community Center as a teenager. “It was a place to hang out, it’s a shame the children in town don’t have that as an option now.” Her first job out of high school was with the Middleburg accounting firm Yount, Hyde, Barbour, PC., and from there Cindy went to work at The Hill School for 18 years before going to the town office. Over the years the Methodist Church, Windy Hill Foundation and the Middleburg Community Center have all been recipients of Cindy’s volunteer efforts. “When people ask me where I went to college, I tell them I got my degree from the University of Middleburg.” Two of Cindy’s children have stayed

close to home. Son Jamie has worked for Middleburg Bank for 20 years, since he was 16 years old, and is employed in their office in Eastern Loudoun. Jill is a teacher in Fairfax County and the mother of one of Cindy’s three grandchildren. Christie, Cindy’s oldest daughter is a nurse and lives half a continent away in Colorado with the other two grandchildren. Though she plans to travel to see more of her grandchildren and friends in her retirement, as far as what’s first on Cindy’s retirement agenda? “Nothing,” she said. “Coffee in the morning on my deck when I don’t have to rush off to work. I’ll just see what comes from that.” ML

O

pportunity everywhere. That’s what Jamie Gaucher (pronounced Goshay) sees when he looks around Middleburg. As the newly appointed Business and Economic Development Director for the Town of Middleburg, Gaucher’s optimism is in concert with the town council’s objectives and vision. He insists economic growth will be measured and appropriate. “It has to be on the right scale and has to fit the community. No Starbucks. No Home Depot,” he assured. “We all liked Jamie and felt it was a good mesh,” says 20-year veteran mayor Betsy Davis. “He already knew about Middleburg, and we felt like he would bring great new ideas and help us to attract businesses that the town wants and needs.” Before coming to Middleburg, Gaucher was executive director of the Middlebury Business Development Fund in Middlebury, Vermont, a similar community in many ways: historical small town with rural surroundings. The unique characteristics that drew Gaucher to Loudoun County were the lauded school system and Middleburg’s proximity to the urban and cultural center that is Northern Virginia and the District of Columbia. Gaucher and his wife and 9-year-old daughter have settled in Hamilton, Virginia and he is grateful for the 20-minute drive through the county as his daily commute. “I look around and see horses and cows and the beautiful countryside.” Part of Gaucher’s vision is born of his understanding that the greater community of The Plains, Upperville, and Marshall and everything in between are vital contributors to Middleburg’s character and ambiance. Creating more economic diversity while honoring the region’s historical significance and well-established reputation as a thriving horse community only serves to strengthen the appeal to businesses, visitors and residents for the entire area. Businesses that fit the town mission and the desires and needs of the community will be targeted. “Hopefully he will steer the ship finding the businesses that are a good fit,” says Davis. Contemplating the economic and business opportunities incubating in Middleburg, Gaucher paints with a broad brush. Public art, live music, restaurants offering a night life, outdoor seating areas, more diversity in businesses, filling the empty storefronts,

multi-use buildings and a parking garage are all possibilities, as well as a brew pub that is already in the works. Some business developments were already well established or already in the works before Gaucher arrived. Take Salamander Resort & Spa, the 340- acre resort that was both hotly contested and much anticipated. Now, Salamander Resort represents the town’s single biggest client, as in taxpayer, and brings untold dollars to local businesses. The resort has rights to build 49 homes on the property, the building of which could represent the single biggest jump ever in the town’s census. “They are a very important member of our community,” says Gaucher. Though Gaucher has many of his own

ideas for economic growth in Middleburg, he’s talking to the community about their needs and desires before he picks any one path. S

ome time ago, but not too far from here, in the company of a former MFH and another woman who had also been an avid hunter, I was part of a conversation about various sports and games. At some point I mentioned that one of the beauties of fox hunting was its lack of competitiveness, meaning that one did not capture all of the checkers from, or score more points against, your opponent. Evidently, my comments were highly incorrect and ignited a verbal barrage

directed squarely at me. Their aim was quite accurate, and the shock wave from their salvo was palpable. I felt like a hound caught running riot. Nothing vulgar was uttered, but the language was highly tinted, if not colorful. Is it not competitive to be first over the fence when three or five or more of you are racing after hounds and there is only room for one or two to squeeze through the narrowing approach to the jump? Who moves out in front? Who drops back? Who gets there first? Who got tossed? Who is with the hounds at the end? Who got lost? Don’t think

for a moment that it is not competitive. As for points, it seems that there is an obscure and mysterious scoring system that carries over from meet to meet and season to season, with points adding up (or occasionally subtracted) over entire life spans and carried forward within both the individual and collective psyches of everyone involved. It is an imprecise system of scoring, open to many points of view and interpretation, even revision over the years. There is a certain beauty to this, and it has been known to elicit

Hunting | From page 37 colorful language, indeed, as the scores are hashed and rehashed, the final tally (ho) never really being recorded. Competition as a catalyst for extending the palette of colorful hunting jargon was delightfully depicted by the wonderful illustrations of Betty Babcock in the book “Just Hunting” by Harry T. Peters (New York, 1935). Peters actually decried the competitive spirit in hunting, but HE acquiesced that it did give everyone “the chance to bump his best friend and use lots of hunting language.” Unfortunately, Peters’ discretion forbade him from recording any direct quotes, so we are reduced to making reference to our own experiences or using our imagination—and may I suggest not holding back. The great and prolific sporting artist Henry Alken (1785-1851) was a master at playing with the captions to his prints. He would often describe an incident in glowing terms, while the imagery associated with it would depict a disaster. In a scene described as “Breaking Cover” three tyros and their horses are destroying the landscape and breaking down fences. In another entitled “Going at a Swishing Pace,” the rider, having lost his

reins and grasping the pommel, is up with the hounds. However, he should not be trampling them. It is a definite no-no, certain to incur a colorful torrent of abuse—and, most likely, a subtraction from his accumulated score. The riding style could go either way. In contrast to colorful language, “silence is golden,” or supposedly so. In his book, “Fields Elysian” (London: 1983) Simon Blow describes the combativeness between Violet Cripps, considered one of the best and most daring riders of her time, and her sister. They hunted in the “competitive Shires society” from Melton in the 1920s and ‘30s. Their rivalry must have been intense and, as Blow stated, “hunting accentuated it. It was said that they did not speak, even if they fell at the same fence.” One can only guess at the full spectrum of color, had they done so. In an unbridled invective, purportedly written in 1733, with the title of “Essay on Hunting,” the author of which, only being known as “A Country Squire,” colorfully defends the benefits of hunting and rails against those opposed or indifferent to it. “Perhaps there is no greater Demonstration of Degeneracy of the present Age, than the Neglect and Contempt of this Manly Exercise. Those useful Hours that our Fathers employed on

f you searched for the Red Fox Inn and Tavern on OpenTable, the popular hospitality review site, there’s one phrase that would rise above the rest as the most widely used to describe it: quality service. According to Matilda Reuter, Red Fox Inn & Tavern’s general manager and the third generation of Reuters who have operated one of Middleburg’s longest-standing establishments, that’s exactly the impression she wants customers to take away from their experience. “My family has owned the Red Fox since the 70s, and from the way we treat our staff to the way we welcome our guests, we want everyone to feel like family,” said Reuter, who, fittingly, was expecting the birth of her child the same day Middleburg Life spoke to her for this story. “Since day one, the Red Fox Inn & Tavern has been the cornerstone of the town of Middleburg,” Reuter said. When asked if there was a staff, family or community favorite on the menu, she chuckled, and gave an answer that should have come as no surprise for such a longstanding Middleburg favorite. “We’re the kind of restaurant and in the kind of family community that, if we were to take any dish—and I mean any dish—off the menu, we’d have some very serious problems on our hands,” she said. That includes Matilda’s personal favorite, the crispy duck, which is smothered in Virginia Chutney Company’s spicy plum chutney and served with sesame ginger rice. Other local favorites are the crab cakes, the Duroc pork chop and the steaks, which The Red Fox sources from Amish farms in Pennsylvania where they are able to keep tabs on exactly where, when and from whom their beef is coming. And aside from the excellent culinary offerings and the quaint and lovely inn, Matilda and Jonathan remain steadfast in their mission to create the family atmosphere that has played such an important role in the history

of Red Fox Inn & Tavern, and that extends to the staff. “We have a staff of roughly 50 here at Red Fox, many of whom are family members to one another,” said Matilda. “We have folks who have been working here for 10, 20, 30 and even 38 years, so we are very much a family.” In fact, at the time you’re likely reading this story, the Red Fox staff will have just re-

turned from one of two annual “breaks,” one in the summer, which gives staff an opportunity to rest and recharge their batteries in preparation for the busy fall season, and one in January after the always hectic holidays. harles Henry “Bee” Smith, Jr., 96, died July 24, 2017 of complications from leukemia at his home in Middleburg with his wife, Regina, by his side. Born in Alexandria, he spent much of his life there operating an investment business. He attended Episcopal High School and Washington & Lee University before enlisting in the Army Air Corps during World War II. After the war, he married Babbette Baker and settled in Denver, Colorado. Upon returning to Virginia in 1954, he established several businesses, including an insurance brokerage and property management company. He described himself as a dabbler in real estate, at a time when suburban land was for sale by the acre and not by the square foot. He was a partner in the development of Landmark Center, then the largest suburban shopping center in the Washington, D.C. area. He and his partners acquired the Storm Farm, upon where the first commercial buildings in Tysons Corner were developed by Westgate Corporation, a company in which he was a shareholder.

Throughout his life, he had a commitment to public service. He was president of Alexandria Hospital, and served on the boards of St. Stephens School and St. Agnes School before their merger, and upon the board of Goodwin House. He also served on the vestry and as senior warden at St. Paul’s Episcopal Church in Alexandria. His love of trees and flowers led to service on the board of the American Horticultural Society. His greatest satisfaction came as rector and board member of Norfolk State University, where there is a dormitory bearing his name. He is survived by his second wife of 25 years, Regina Jayne Smith, and by two children, Babette Elise Smith and Charles Henry Smith III (Karen Kostyal), and his grandson William Andrew Smith. His first marriage ended in divorce. A third child, William Wellford Smith, died in 1968.

He was founder and president of Alexandria Cablevision, the city’s first cable television franchise, now Comcast. He served as chairman of First Federal Savings & Loan of Alexandria, and his combined service as a member of the board of Alexandria National Bank and its successor First American Bank A memorial service was held at spanned more than 30 years. A lot of folks like to go to New Market because of the historical significance of the Civil War [because] it was fought over there. There are a lot of meat shops in the surrounding towns, antiques, and a lot of made-in-Virginia items, so a lot of guests will venture over the mountain to visit these ‘maand-pa’ shops that border the park, so that’s very popular.” HIKING: With dozens of scenic hikes that range from easy two-mile excursions to strenuous and rewarding 10-mile treks, the Shenando-

Bobbie Atzhorn, a ranger at Shenandoah National Park, says the most popular hikes are the waterfall hikes and the two highest peaks of the mountain range. “Some of our popular hikes are the Dark Hollow Falls trail in this area and the Rose River Falls trail, which is a loop trail that is four miles in length and goes through sections of congressionally designated wilderness area which 40 percent of our park is,” Atzhorn said. “In the central district, people like to hike up to Mary’s Rock for a nice view that is 360 degrees. They like to hike up to the two highest peaks in the park, Hawksbill being the highest and Stony Man being the second highest.” If handicap-accessible trails are needed, Atzhorn explained that the Limberlost trail, a 1.3-mile hike, is both accommodating and scenic. Stony Man Located on mile 41 of Skyline Drive, Stony Man and Little Stony Man are a perfect easy loop with spectacular views to boot. Stony Man is the second highest peak on Skyline Drive, and with the loop to the summit hitting 1.6 miles, it is an easy hike for the whole family. Hawksbill Claiming the title of the highest peak in the Shenandoah National Park, this threemile loop found at mile 45.6 is an easy yet rewarding hike to enjoy the scenery and snap that perfect photo. Dark Hollow Falls If you are looking for lively waterfalls and lush greenery, look no further than this 1.4mile loop hike at mile 50.7. Rangers claim this trail is a visitor favorite. Limberlost This 1.3-mile loop (mile 43) is handicap accessible, which makes it easy and accommodating for any kind of hiker.

Cedar Run and White Oak circuit For the more intense hiker, this 7.5 or 8.2 mile hike is sure to make you break a sweat as well as enjoy waterfalls and scenery, beginning at mile 45.6. While the hikes are certainly a huge draw for Skyline Drive visitors, the Shenandoah National Park also offers a variety of interests such as bird watching, history and wildlife. “If you’re historically oriented, perhaps you’ll be interested in knowing more of the facts about the Rapidan camp,” Atzhorn said. “If you have a cultural interest in the park, people do tell us that they think this exhibit is fairly done in terms of telling both sides of the story of how the parkland was acquired. Even people who are descendants of people that lived here and had to move feel that there is an element of truth in how the story is told. If you like birds or wildflowers, you might be surprised by the variety and where you can find them.” DRIVING: Coming from Loudoun County and the Washington D.C. area, enter the Shenandoah National Park and start driving on Skyline Drive through the Thornton Gap Entrance Station outside Sperryville or the northern entrance outside Front Royal. Entry for vehicles is $25, and passes last for seven consecutive days. ince its inception four years ago, the Piedmont Fox Hounds Hunter Trials has proven to be a community event that is continually trying to respond to the needs and wants of competitors. This year’s Hunter Trials, to be held Sunday, October 8, 2017 at Mr. and Mrs. Shelby Bonnie’s Salem Farm Show grounds in Upperville promises to be better than ever, with the addition of the Green Hunter and Novice Rider divisions and $1,000 in prize money to be awarded to the winner of the PFH Field Hunter Derby. The competition is open to all equestrians, foxhunters and non-foxhunters alike. In addition to classes in the Grand Prix field on established, undulating turf, horses and riders will vie for honors over impeccable all-weath-

er footing in the Grand Prix ring. This is your chance to seize the opportunity to experience competing in this phenomenal show ring and on the beautiful turf of the Upperville Colt and Horse Show. Barbara Batterton, Katherine Berger, Pam Covington, and Jimmy Hatcher have graciously agreed to serve as the judges this year. “This is an event that is continually trying to assess what competitors want,” said Hunter Trials organizer Barbara Riggs. “Since its inception four years ago, we have evaluated the classes and eliminated those that have not filled and kept what has been popular amongst competitors.” Further responding to competitor feedback, the PFH Hunter Trials has added two new divisions that will be contested in the Grand Prix ring: the Novice Rider Division

and the Green Hunter Division. These divisions offer friendly, inviting smaller courses over hunt type jumps that are ideal for horses and riders who are new to hunting or graduating from the Hilltopper stage to First Field. Warm up classes will be held at two heights and the Low Hunter, Open Hunter, Junior Hunter, and Adult Amateur Hunter divisions will each have two over fences and one under saddle class. For those folks who enjoy the thrill of the chase from the second field, the Hilltopper classes will again be offered. A panel of two judges will use the open numerical system to score competitors in the Classic Hunter Round (first round) on performance, hunter pace, jumping style, quality and substance, and movement. In the Handy Round (second round), judges will be looking for brilliance of pace and handiness. High option fences will be offered in both rounds and horse and rider combinations will receive bonus points for tackling the bigger fences. Local individuals, families, farms and businesses are once again sponsoring a multitude of prizes and services. Middleburg Real Estate is the sponsor of the popular hospitality tent, stocked with food and beverage for all competitors

and spectators. The Division Champions and High Score Award riders and horses will receive various prizes, such as leather halters and embroidered summer dress sheets. Their love of good food and enthusiasm for their new endeavor is palpable. “Food was always foundational in both of our lives,” said Roberta, “and we love that we are now able to do this.” When the Lyons and their now 2-yearold daughter, Amoret, moved to Middleburg from Capitol Hill two years ago, they felt that Middleburg was a great location from which to launch their new venture and facilitate the frequent trips they would be making to Italy and other overseas destinations. “We thought about Santa Fe,” said Atticus. “We really loved Santa Fe, but it just wasn’t

practical with all of our travel to Italy and elsewhere in Europe.” Roberta, a native of Liguria, Italy, was “very nearly born in my mother’s restaurant,” she said. She went on to open her own Italian eatery at the age of 22. She subsequently earned a doctorate in urban planning, wrote a book (“Mobile City”) on the subject of remote work camps, and founded IMARK, a global business consultancy with offices in Washington, D.C., and McLean, Virginia. Atticus is a former investment banker and, as he describes himself, a “serial Gourmet | Page 64

Forever Gourmet’s global perspective is bolstered by a team of individuals “brimming with passion about food.” The Lyons employ an advance team of “foodologists” to seek out new and creative products from around the world. Also on the team are what the couple refer to as “tastemakers.” “We have partnered with a global group of chefs, event planners and specialty food connoisseurs,” said Roberta. Locally, a series of events is planned for Market Salamander, with the first having occurred in May and subsequent events going through September. Gentle Harvest in Marshall, Virginia, invited the couple to host a demo of their products. “We sold out,” said Roberta, “and we hope to be going back again soon.” Greenhill Farm Store carries a number of Forever Gourmet products, and plans include an event similar to the one at Gentle Harvest as well as a dinner in the new barrel room sometime this fall. The couple is busy partnering with gourmet food stores around the country. They recently closed distribution agreements with

Houston’s Central Market, The Cheese Shop in Williamsburg, Virginia, and the Todd English Food Hall across from Central Park in New York City—where they spent two days using their products to demonstrate how to create a great picnic basket. “Forever Gourmet wants to become the leading destination for people interested in exceptional culinary experiences from around the world that would otherwise be inaccessible,” said Roberta. “Our goal is to be daring and imaginative.” Additional plans for Forever Gourmet include a quarterly product catalog and events and parties with food world celebrities. Back to School Success E veryone wants their child to have a positive and successful school year. Let’s leave as little to chance as possible by encouraging healthy habits that are proven to work. Research shows that a healthy diet contributes to improved academic performance. Try to limit or eliminate simple carbohydrates, fast foods and fried foods and replace those options with healthier ones when possible for your children. Making it a family effort will provide benefits for everyone and model better eating for life. Have cut up vegetables, fruit, unprocessed nuts and other “ready to eat” options available for snacking. Don’t forget to limit sodas and other “sugary” drinks; encourage drinking adequate fluids that rehydrate without caffeine or artificial ingredients. Children who exercise and who are fit perform better academically than children who are sedentary or significantly overweight. In addition to improved academics, children who engage in sports have higher self-esteem,

do better socially and have fewer behavioral problems. Contrary to popular belief, athletes also are more likely to finish high school than non-athletes. Research shows that children between 8 and 18 years of age spend over 7 hours daily engaging in some sort of screen and/or media time activities. This fact is alarming given that several studies have found that limiting screen and media time improves academics and sleep and decreases behavioral and social problems. Excessive screen time also is associated with increases in ADHD, obesity and emotional and learning struggles. Nearly 25% of children will experience sleep problems at some point during childhood, and children with sleep problems have lower academic performance. While each child is unique, sleep experts recommend that children between 3 and 6 years of age should get 10-12 hours of sleep per night, children between the ages of 7 and 12 years of age should get 10-11 hours of sleep per night, and children between 12 and 18 years of age
