Traveling Unleashed According to a recent travel survey from Skift.com nearly 42 percent of Americans said they didn’t take a single vacation day in 2014. Is it because the city’s largest employer, Sabre Holdings, is a travel company? Or is it the fact we live just minutes from the airport? Whatever it is Southlake Style readers are bucking this national trend. In our annual readership survey, 71 percent of you said you are planning a vacation this year. With a mixed bag of travel plans including everything from theme parks and tropical locales to skiing, we know area families will be thoroughly enjoying themselves during this month’s spring break. And by family, we also mean Fido—as you told us nearly one in every five of your trips would include the family pet. From the eclectic streets of Sante Fe to the pristine sandy beaches of Destin if you know my family, then you know our Golden Retriever Sparky has his bowls packed at all times. Whether he’s in the passenger seat or his very own Westin Heavenly Dog Bed, Sparky has trained us in the art of fetching the right travel plans. If you are thinking of taking a furry friend on your next trip, then we have a few tips for you. For those of us staying closer to home, rest assured spring break is the perfect opportunity to take advantage of the smaller crowds and pleasant weather found at many Dallas and Fort Worth outdoor attractions. Now is the time to hit these touristrial hot spots—like the daily cattle drives down Fort Worth’s Historic Stockyards—before you can cook an egg on the sidewalk, or anything else for that matter. Our list of Spring Flings has plenty of fun ideas you’ve always wanted to do, but never made time for. No matter how, when or where you are traveling I’d like to remind you to do it with Southlake Style. ALL CISD NATIONAL MERIT SEMIFINALISTS NAMED NATIONAL MERIT FINALISTS Update: All 22 National Merit Semifinalists from Carroll ISD have been named National Merit Finalists. This marks a record total for Carroll ISD. In December of last year, another record was set when the original 22 Carroll Senior High School students were named National Merit Semifinalists, and 46 received the honor of being named to the Commended Students list in the 2015 National Merit Scholarship Program. In addition, 14 other students were recognized in the National Hispanic Recognition Program. These individuals were applauded for their successes by CSHS Principal Shawn Duhon. “These 82 students have done a phenomenal job putting Carroll Senior High School on the map.”
WOUNDED WARRIOR SOFTBALL TOURNAMENT PLAYED AT BOB JONES PARK The 3rd Annual Wounded Warrior Softball Tournament took place in late January at Bob Jones Park in Southlake. The national Wounded Warrior Amputee Softball Team travels the world playing abledbodied teams, bringing their special brand of softball, courage and inspiration to every match. The national Wounded Warrior Amputee Softball Team represents some of our nation’s bravest and most determined heroes, soldiers and veterans. These extremely athletic men have sustained severe injuries while serving in the military and through extensive rehabilitation, they have become competitive athletes. Opposing teams have included celebrities, former pro athletes, high school softball and baseball players, high school coaches and teachers and travel softball and baseball teams.

FEBRUARY’S NATIONAL SIGNING DAY BRINGS DRAGON 2014–2015 TOTAL TO 29 As one of the nation’s top high schools, Southlake Carroll’s athletic program speaks for itself, sending many of its athletes to continue their education and athletic prowess at universities across the country. On National Signing Day on Feb. 4, seven more Dragons signed their letters of intent. Family, friends and coaches gathered as these student athletes joined their fellow seniors, 29 in all from the class of 2015, in taking their game and their education to the next level. Head Coach Hal Wasson has a long history in helping his football players achieve their goals to play at the next level with this year being no different. Five football players signed scholarships to continue their football career, with three signing to play at the Division 1A level. “You’re excited for the players, and you’re excited for the families, because it’s really difficult to get a college scholarship,” he says. “Less than three percent get college football scholarships. It’s great for the kids; it’s great for their parents and definitely their teammates.” The following Carroll Senior athletes who signed were: Ryan Agnew, San Diego State, Football; Andy Chelf, Purdue, Football; Tariq Gordon, Lamar University, Football; King Newton, University of Texas at San Antonio, Football; Grant Stewart, Colorado School of the Mines, Football; Paige Johnson, University of Utah, Soccer; and Ricardo Becerra, Bryant University, Soccer.

UNT’S ONE O’CLOCK LAB BAND PERFORMS IN SOUTHLAKE The APEX Arts League invited The One O’Clock Lab Band to perform in concert this past February at White’s Chapel United Methodist Church in Southlake. The One O’Clock Lab Band, under the direction of Jay Saunders, is the premier performing jazz ensemble from the internationally acclaimed University of North Texas’ Jazz Studies Program. “When APEX first invited The One O’Clock to perform in Southlake several years ago, it was with an eye to giving the Northeast Region of Tarrant County an opportunity to hear the incredible jazz talent that lies just down the road from here,” APEX board member Becky Miltenberger says. “As we developed the APEX Jazz Festival into an educationally themed day-long program, we wanted to share with local high schools an opportunity to see first-hand jazz talent with whom they could relate and from whom they could learn through one-on-one teaching and jamming.” Each year, APEX invites one of the strongest high-school jazz orchestras in the Metroplex, the Carroll Jazz Orchestra, to help anchor its educational festival. With the help of David Lown, director of the Carroll Jazz Program, APEX picks two local high-school jazz programs to join Carroll in this festival. This year, the other two high school bands included Naaman Forest Jazz Band and Rowlett High School Jazz Band.
DRAGONS REIGN SUPREME AT UIL SOLO AND ENSEMBLE CONTEST More than 200 members of the Dragon Band participated in the Region 24 UIL Solo and Ensemble Contest in January held at Liberty High School in Frisco. With 210 total entries, at the end of the day Carroll students brought home 124 individual Superior medals for solo work and 81 Superior medals for ensemble performances. From this, 69 student soloists and 18 ensembles were certified to advance to the Texas State Solo and Ensemble Contest (TSSEC) in Austin. That competition is scheduled for May 24 and May 30.

SOUTHLAKE RESIDENT AND REALTOR FINISHES SECOND IN NASA RACE For the past five years, Southlake resident and realtor Thomas Michael has been participating in National Auto Sport Association (NASA) high-performance driving events. Michael said NASA provides opportunities for anyone from a beginner simply wanting to drive at well-known race tracks across the country to experienced racers looking to turn pro. “In fact, many of today’s pro racers came up through the ranks in groups like this,” Michael says. “I campaign my car in the NASA Pro Racing GTS Race Series. My car was custom built for me by Midnight Oil Motorsports in San Diego and based on a BMW M3 chassis.” Texas Track Works in Fort Worth now maintains, improves, sponsors and provides track support for Michael. Michael runs the full NASA Texas schedule, which includes a stop in Oklahoma, starts in January with the season opener in Houston and ends in November. “Among the goals I set for myself for this season were to be as competitive as possible and land a podium finish in the top three. I was fortunate to finish second in the Houston opener, so now of course, I would love to be able to land a first place finish as well as multiple podium finishes.”

ADULT FLAG FOOTBALL PROGRAM TO BE OFFERED IN SOUTHLAKE The City of Southlake is now offering Adult 8-on-8 Flag Football. The season will run from April 11 through May 25 and games will be played Saturdays at North Park and Bob Jones Park. Players must 16 years of age or older at the start of season. The cost is $330 per team, and rosters can include up to 20 players. Flags, game balls, officiating and score keeping will be provided. We caught up with Southlake’s Communications and Marketing Manager Megan Phillips to find out what residents have to look forward to. “Recreation sports within the community are good for residents, because they provide a sense of unity and allow for socialization. We hope that participants will get an opportunity to utilize some of the great facilities that the city has to offer, such as North Park and Bob Jones. We also hope that by offering a variety of athletic programs we can help citizens stay active and continue to promote overall health and wellness within the community.”

SOUTHLAKE FIRE DEPARTMENT RECEIVES GRANT FOR LEAK DETECTORS The Southlake Fire Department received a $4,500 grant from Helping Heroes, a program sponsored by Koch Pipeline Company and Flint Hills Resources. According to deputy chief Wade Carroll, the department was notified of the grant

through a letter from Koch Pipeline. “We are always extremely happy about qualifying and being selected for grants of any kind,” Carroll said. “Grants allow the fire department to meet process improvement goals with less impact on the city of Southlake’s general fund.” The grant was utilized to purchase four flammable gas detectors, which will supplement the department’s current four gas atmospheric monitors by providing them a means of locating the “leak source.” In 2012, Flint Hills Resources and Koch Pipeline Company began the Helping Heroes program. This program provides support for the training, education, equipment and emergency notification needs of our local fire departments and emergency responders. Since starting the program three years ago, more than $340,000 has been provided to departments in Texas.

o two patients are alike, and the board-certified, fellowship trained physicians at Advanced Spine & Orthopedics treat each injury with a unique approach that gives patients the specialized care they deserve. “Every patient is different, and therefore every procedure and surgery I perform is unique to that individual,” says Orthopedic Surgeon Dr. Scott Hrnack of Advanced Spine & Orthopedics. “It takes a customized approach.” And believe it or not—Dr. Hrnack says it’s very similar to gymnastics. “When you enter a new arena, the equipment, such as the pommel horse and bars, are unique in their own way—you have to learn how to approach them.” As a former competitive gymnast, Dr. Hrnack takes a personal approach to sports medicine. He understands first-hand what it means to be an elite athlete. Dr. Hrnack attended J.J. Pearce High School in Richardson, where he competed in gymnastics. Upon graduation, he received an athletic scholarship to Syracuse University where he excelled both academically and as a gymnast. He received numerous awards at the local, state and national levels, including earning a spot on the Team 2000 USA National Gymnastics squad in 1996. “I didn’t just have Olympic aspirations,” he says. “I was training for the Olympics.” During the middle of his junior year Dr. Hrnack suffered a serious shoulder injury that required surgery, and although it did not keep him from continuing competitive gymnastics, there were some setbacks. It was at the end of his junior year of college that Dr. Hrnack decided he wanted to pursue a career in medicine, specifically orthopedic surgery. “In college I volunteered for various organizations and causes in addition to my studies and gymnastics. On Sundays I coached cheerleaders. Deciding to pursue medicine after gymnastics seemed like the next logical way to help people.” Dr. Hrnack received his MD from the University of Texas at Houston and completed his orthopedic residencies at Tulane, Vanderbilt and Texas Tech Universities. His fellowship training is in Arthroscopic Procedures & Sports Management. Now a board-certified orthopedic surgeon specializing in knee pain, shoulder pain and sports medicine, Dr. Hrnack attributes his success as an orthopedic surgeon to his substantial background in athletics— specifically his award-winning era as a gymnast. “An athlete is not just a Friday night football player—it can be a 65-year-old golfer,” Dr. Hrnack says. “Both have orthopedic needs, and that’s where we come in. No matter what sport they are involved in— from jogging to gymnastics—our goal is to get them back to what they love doing.”

GRANITE PROPERTIES ANNOUNCES NEW OFFICE PROJECT IN SOUTHLAKE TOWN SQUARE Granite Properties announced plans to develop a new 7-story, 160,733-square-foot, Class-A office project at Southlake Town Square. The new office project, Granite Place, will be located on Highway 114 just east of North Carroll Boulevard next to the Southlake Hilton Town Square. The property is designed to include an attached parking garage, on-site

fitness center, meeting facility and an upscale restaurant. Currently in the design process with Beck Architecture, Granite anticipates the project will be ready for occupancy late 2016. KROGER TOWN & COUNTRY DISCUSSIONS TABLED, HEARING SCHEDULED FOR MARCH 26 After Southlake residents Doug Harsy and Sue Johnson filed an appeal on Jan. 30 to the Southlake zoning board, Southlake City Council decided to table discussions of the proposed Kroger Town & Country development, according to a Fort Worth Star-Telegram article. The new Kroger development is proposed for the southeast quadrant of Dove Road and Hwy 114. According to Gary Huddleston, director of public affairs for Kroger, the proposed store is a completely different floor plan than the current Kroger at 2110 E. Southlake Blvd., as well as the Kroger Marketplace opening in North Richland Hills on March 13. “Kroger and the developer Cencor, who developed the Shops of Southlake, have been working on this store site for quite some time and we have worked with the residents as well as the city,” Huddleston said. “The site is zoned for both retail and commercial use and complies with the high standards of the city of Southlake. The store’s development is based on the input from the residents. Kroger Town & Country would be a different store than any other store we have in the area.” Harsy, who is a part of the group against the development, The Kroger Opposition, said on the contrary, Kroger has not worked with the community. “This project has been around for over a year and we’ve repeatedly tried to provide our input to the developer with what our vision was and particularly the zoning of this particular property,” Harsy said. “They consistently denied our request and stuck to their position that they could do what they want regardless of what the community wants. We were supportive to bring members of the community to bring them that information. This location is not the right fit for a big box Kroger superstore.”
TRADER JOE’S OPENS IN SOUTHLAKE TOWN SQUARE Trader Joe’s, a unique, neighborhood grocery store with foods and beverages from the exotic to the basic, has opened in Southlake Town Square. The 13,500 square feet store is located at 1492 E. Southlake Blvd. and the trading hours will be 8 a.m. to 9 p.m. daily. The store will feature festive décor that mixes traditional Trader Joe’s elements, such as cedar-covered walls and Hawaiian motifs, with local flair that includes art celebrating the neighborhood.

TWO CANDIDATES HAVE FILED FOR SOUTHLAKE’S MAYORAL RACE At press time, two candidates have officially filed their candidacy to run in this May’s mayoral race for the City of Southlake. Mayor Pro Tem Laura Hill and City Council Member Place 2 Carolyn Morris will oppose each other to replace the term limited Mayor John Terrell after six successful years in office. Laura Hill was elected to City Council in 2004 and has served in a variety of capacities: Place 1 (2004-2011) and Place 5 (2013-present). She has also been Mayor Pro Tem (2010-2011 and 2014-present) and Deputy Mayor Pro Tem (2009-2010). She is the founder of Students and Parents Against Risks to our Kids (SPARK) and currently she sits on the Metroport Teen Court Advisory Board. In addition to her work as a city official, Laura is involved in variety of community service organizations. She is a graduate of both the Southlake Citizen’s Academy and the Citizens Emergency Response Team (CERT). Locally, she serves on the Board of Directors for the Chamber of Commerce Executive Board, and she is a cofounder of the Students and Athletes Serving Others (SASO). Carolyn Morris has served on Place 2 of Southlake’s city council since 2009. Prior to that, she served on Place 6 from 2002-2008. She has also been Deputy Mayor Pro Tem (2004-2006) and Mayor Pro Tem (2006-2008). She sits on the Southlake 2030 Committee, and currently works with such groups as the Southlake Parks and Development Corporations and Southlake Arts Council. Nearly 100 companies were nominated for this year’s program, now in its fifth year, and of those 32 were selected. Klyde Warren offers a taste of a big city’s big park This is the stuff “people playing chess in the park” movie scenes are made from, and if you’ve ever wondered how to take part in such fun—so close to home— welcome to Klyde Warren Park. This 5.2-acre deck park is built over the recessed Woodall Rodgers Freeway between Pearl and St. Paul streets in downtown Dallas. Cavanaugh Flight Museum offers warbird rides When’s the last time you visited a museum and they let you take an artifact for a test drive? World’s Only Twice-Daily Cattle Drive Right Here in Fort Worth Take a trip to the Fort Worth Stockyards to see genuine Texas cowhands drive a herd of Texas longhorns down Exchange Avenue in the Stockyards Historic District. And as the name implies, the historic district is the perfect place to step back in time and witness an authentic cattle drive. You know the longhorn is synonymous with Texas legend and lore—there is many a story about great herds of these cattle roaming free across the Lone Star plains in the decades following the Civil War. But what you may not know is the role Fort Worth played in what was soon to be a mass exodus of this majestic creature to the northeast. Although worth only about a dollar a head in Texas, a single longhorn could fetch a price of around $40 in a state such as Kansas. Seeing what this could do for the flailing Texas economy, drovers—as they were called—rounded up the longhorns and began prepping for their cattle drive in Fort Worth where they would gather supplies and begin their journey. The Fort Worth Herd Cattle Drive isn’t just a fancy way to show off Texas longhorn cattle. It’s a living, breathing history lesson about events that took place right in our own back yard more than 100 years ago. Every detail— from the saddles and chaps to the boots and hats—is historically true. The Fort Worth Herd is the world’s only twice-daily cattle drive, and it happens every day at 11:30 a.m. and 4 p.m. You can watch the cattle drive from the sidewalks and restaurants near the visitor center on Exchange Avenue. Let Trail Boss Kristin Jaworski who has served as Fort Worth Herd Trail Boss since 2002 take the guess work out of your planning for you—she’ll determine what weather is or isn’t right for the cattle drive. If it looks like rain, in other words, chances are the Herd won’t be heard or seen.

Family Photos at the Fort Worth Water Gardens An urban park oasis, the Fort Worth Water Gardens can be just the respite you need it to be or the unique attraction you want it to be. Whether you’re looking to add modern architecture to your family photos or just have a desire to visit this 40-year-old, close-to-home attraction, there’s a reason for a skip, hop or jump over to the Water Gardens. Designed by Phillip Johnson, the water gardens include a variety of water features throughout the park including three distinct pools. Surrounded by trees, one area has walls covered in thin sheets of water cascading down to a sunken, quiet meditation pool below. Then there is an aerating pool with illuminated spray fountains. But the active pool is considered the main attraction. With water cascading 38 feet down terraces and steps into a small pool at the bottom, it was built with exploration in mind. The terraced steps are not only perfect for walking among the crashing water, but make for good subject placement when taking photos. The bluebonnets and wildflowers have yet to show face in these parts, and it looks like they won’t in time for those great family photo opportunities. The Fort Worth Water Gardens make the perfect backdrop for family photos, and with most of the tourists away on vacation you’ll practically have the grounds to yourself. Adjacent to the Fort Worth Convention Center is an architectural and engineering wonder that can be enjoyed any time of the year, but why not enjoy it while the crowds are at an all time low, and you’ll feel more like a guest than a tourist.

Watching a double feature—of newly released films of course—while enjoying the stunning views of downtown Fort Worth along the Trinity River is a great, family friendly activity. And we suggest you enjoy an evening such as this during Spring Break at Coyote Drive-In on Panther Island in Fort Worth. Coyote Drive-in was founded in 2011 by four guys from the hospitality business, who envisioned a simple place to escape the chaos and hang out with friends and family and admire the stars shining bright up above. They also felt good food and great prices were a must as well. While there, don’t miss the chance to enjoy the food from the drive-in’s restaurant on your visit. Craft beers, “Canteen Classics” and cotton candy make for a well-rounded concessions menu—we just suggest not all at once. The drive-in is open seven days a week (weather permitting), with general admission starting at $6 for children 4 to 10, and $8 for ages 11 and older. Children 3 and younger are free! And you can’t beat the weather this time of year. Sitting in the running car with the AC cranked up during the summer doesn’t make for the best movie-watching experience. Trying to teach your kids that money doesn’t grow on trees may be a lesson you can bring home by visiting the U.S. Bureau of Printing and Engraving’s Western Currency Facility in Fort Worth, which produces more than half of the nation’s paper currency. Something special to experience March 10-13 is the WCF’s Annual Employee Craft Demonstration event. During this free event, kids will be able to witness Intaglio engraving artisanship at the engraver’s workbench and learn how Intaglio printing plates are “grown” in a nickel solution. They’ll also be able to create their own currency from 9 a.m. to 4 p.m.—for ages 8 to 18—and see how currency was printed circa 1900 at the refurbished spider press. In addition to the Spring Break event, the public tour and visitor center is a great place to learn about U.S. currency. Open Tuesday through Friday from 8:30 a.m. to 5:30 p.m., the tour is perfect for a rainy day. Visitors can see billions of dollars printed below them as they travel down an enclosed walkway suspended above the production floor. After viewing the production room, there are two floors of interactive exhibits and displays showcasing currency history and the intricate art of currency manufacturing. The tour includes a high-definition theater film as well.

Can you tell us a little bit about your Irish heritage? My father was proud of our Irish heritage and made sure all his children—four of us—knew the stories of our background. Our family stereotypes are even humorous. My father was a policeman in Los Angeles. He walked his beat in downtown L.A. during the ’50s. He named all his kids [dual gender] Gaelic names: Kellie, Stacy, Shelton and Shannon. My wife and I continued that tradition. My daughters’ names are Shawn and Riley.
Have you ever traveled to Ireland? My travel to Ireland has been limited to business. However, I plan to rectify that starting this summer.
My great grandfather was a brewer in Ireland. I plan on visiting some breweries and brewpubs in Ireland. I will be searching for some new recipes and hopefully bringing some ancient recipes back to North Texas. Additionally, Shannon Brewing Company plans to start hosting brewery tours to Ireland this year. We will take a limited number of guests to Ireland for a guided tour of some well-known breweries and at least one distillery and [discover] some very well kept secrets.
Where are some great nearby places to experience a traditional Irish atmosphere— or close enough? Trinity Hall (Dallas) has a great atmosphere and Irish music. Staggering Irishman (Dallas) is a fun place with a great selection of Irish beer and whiskey. The Idle Rich Pub (Dallas) is just an authentic Irish pub that’s worth the visit. And Dublin Square in Fort Worth is just fun!
What’s your favorite traditional Irish food? My favorite Irish food has always been corned beef and cabbage. My wife [Mauri] makes the best I have ever tasted with boiled potatoes— fantastic!
How do you plan on spending your St. Patrick’s Day? We will be spending St. Patrick’s Day at our brewery. We plan to have some Irish music, hopefully some Irish dancers and, of course, plenty of our Shannon Irish red. We are also releasing a special beer around Saint Patrick’s: a dry hopped Irish red. This beer is similar to our traditional Irish red. However, we add hops to the secondary tank during fermentation to give the beer an amazing hop aroma—it’s like spring time in a bottle Inquiring minds want to know, and who better to ask than a brewer, what’s the story behind green beer? People who turn beer green should not call themselves brewers. The Shannon Brewery will never serve a green beer. Here is the green beer story—as I understand it. During celebrations in early Ireland, beer could be in short supply. Once the beer reserves had been consumed, those who wanted the celebration to continue would take a pint from the fermenting beer. The not-completely fermented beer is referred to as “green beer.”

t’s beginning to all add up—the population increase, the number of new commercial developments bringing in more jobs, and let’s not forget Southlake’s new tourism campaign designed to attract more visitors. And what does it all add up to?—brake lights for miles and miles. The citizens of Southlake have spoken about mobility concerns, and we all know what they said. Even Robert Price, Director of Public Works for the city knows what weighs on the hearts and minds of residents when it comes to traffic. How could he not? That was the biggest message received from the latest Southlake Citizen Survey. Traffic congestion was identified as the No. 1 “gap” issue for the city on the survey, meaning citizens—41 percent—perceived a gap between what the city is doing to fix it. Although this represented a decrease from the 2011 survey numbers (54 percent), according to Price, it is still above the 25 percent threshold the city maintains as its gap standard. “Respondents are frustrated with traffic here in Southlake and getting into and out of the city,” Price says. “Let’s just say it out loud. Traffic here in Southlake, in the surrounding areas and for that matter in many places in Texas, is awful.” And he empathizes with all of us: “I also often experience that same frustration of sitting in traffic waiting for it to move.” Surely, you’ve noticed the subtle changes that have added up to make a difference in Southlake—a streetlight here, a stoplight there, and the latest—a “right turn on red must yield to U-turn” sign elsewhere. In addition to these minor but none-the-less important traffic aides, you’ve seen the addition of roundabouts and center turn lanes over the years. All of these additions and improvements you see carried out on a regular basis are part of Southlake’s Master Mobility Plan, and it is how the “gap” from the citizen’s survey will be narrowed. Construction and mitigation According to Price, traffic congestion is being addressed in terms of construction and mitigation efforts. On the construction side, the city of Southlake’s Public Works department has several projects planned over the next several years that will address capacity 50 • MAR 15
needs—all according to Southlake’s Master Mobility Plan (which can be found on the city’s website). One such project is the FM 1938 roadway expansion project—a partnership between a number of stakeholders. The good news? More stakeholders means more resources. The bad news? More stakeholders means more time needed to make decisions. However, in the case of this project, Phase I decisions were made on time. The 2.2-mile, $15 million project was completed in the fall of 2012, and eased traffic congestion through the creation of a six-lane divided roadway with raised curb medians from SH 114 to just south of Dove Road transitioning to a four-lane roadway with raised curb medians to Randol Mill Road. Phase II is a 1.6 mile, $20.6 million project, set to begin this spring. It includes a four-lane roadway with raised curb medians from Randol Mill Road to FM 1709/Southlake Boulevard. It also includes improvements at the intersection of FM 1938/Davis Boulevard and FM 1709/Southlake Boulevard to provide dual left turn lanes. However, as to be expected, in order to reap the benefits of expansion and progress, you must first experience the growing pains—which means construction woes. But that’s where the mitigation part comes in. The city of Southlake has created a multidepartmental, multi-agency Office of Traffic Management (OTM) that consists of personnel from the city and outside agencies such as TxDOT and CISD to better manage traffic and the information regarding traffic-related issues within and throughout the city. “The OTM is primarily responsible for internal and external communication of anything that could impact traffic and is also responsible for developing and implementing traffic control plans for anything that could adversely impact the flow of traffic in the city,” Price says. “The city hopes to engage with the public through the OTM to form a public-private partnership which improves knowledge of local driving conditions so that all motorists can have a safer and less frustrating driving experience in Southlake.” According to Price, regional growth of the DFW area will undoubtedly impact Southlake, as well. “Because of our location within the greater DFW area, we have a lot of traffic moving through the city, and that’s something that will not change.” SOUTHLAKE STYLE
End of the rope Precinct 3 Tarrant County Commissioner Gary Fickes tells us to blame it on Southlake’s coveted location far from the big-city atmosphere. “Because the jobs are toward the east, the vast majority of traffic that Southlake residents and commuters face comes from the west. In addition, more and more people are moving to the north Fort Worth area, and these individuals travel south to their work.” Fickes says. “And Southlake is the end of the rope so to speak.” The city is a funnel of sorts, and not only do local roadways need overhauls, but highways located within the Northeast Tarrant County region, such as I-35, need decongestion as well. “That is a problem being solved with the North Tarrant Express (NTE) project,” Fickes says. “The NTE is broken into three segments, and although it is going to get worse before it gets better—thanks to construction—there will be progress.” Improvements to the first two segments cost $2.5 billion all together, which included financing, right-of-way acquisition, utility relocations, design, construction, routine and capital maintenance. The improvements were completed in October 2014, nine months ahead of schedule. The remaining third segment has been divided into three separate parts. Currently, only segments 3A and 3B are being addressed. These local and regional projects are, of course, only small pieces of traffic congestion puzzle in northeast Tarrant County and specifically Southlake. But one thing is for certain, the city has a plan in place—the Master Mobility Plan, part of Southlake’s 2030 Plan—to keep vehicle, bike and pedestrian traffic concerns at the forefront and address them in a timely and often scheduled manner. But, as Price suggests, congestion and other traffic woes will never really go away. “Even with the expansion of new roadways, traffic congestion is expected to remain a part of our everyday life here in the Metroplex for many years to come,” Price says. “It is often said, a traffic problem is never really solved, it is just moved down the road.” Southlake’s OTM is continuously updating residents on changes to traffic patterns due to construction or store grand openings, for example. Sometimes the hardest part of leaving is leaving them behind, our Fido and our Whiskers. We often think our pets might be better off traveling with us, rather than staying at home—but maybe that’s not the case.
What about Fluffy? You need to make an informed decision before taking your pet on vacation. Doing otherwise might put your pet in danger—and could turn your trip into something out of a National Lampoon movie… or worse. First, you’ll want consider you furry friend’s health. It’s best to make an appointment with your veterinarian a few weeks—or months, in the case of air travel—before the trip begins. “They need to be in good overall health, not sick in any way—or you wouldn’t want to travel,” says Dr. Steve Ruffner of Golden Triangle Animal Hospital in Southlake. Physical health includes mental health, too—any trip takes the pet out of its familiar environment and that means stress. “We base recommendations regarding travel on the pet’s temperament as well as what works best for the owners of the pet,” says Dr. Susan Boeving at Southlake Animal Crossing veterinary hospital. For example, some animals don’t enjoy traveling. If you have the option, that pet may do better staying home with a pet sitter or finding a boarding facility where the pet is comfortable staying.” If you must take your anxiety-prone pet with you, there are options for treating the nervousness. “If your pet is very anxious with travel, speak with your veterinarian,” says Dr. Boeving. “Anxiety is a medical problem. Behavior modification, training and medication are some options that can help anxiety, but the wrong actions could make the behaviors much worse.” Sedation is also an option. “If the dog is super anxious and wouldn’t settle down, I would prescribe a light sedative,” says Dr. Ruffner. Though sedatives can have dangerous side effects, so let your vet make that decision, and don’t sedate Fido just because you’re anxious about the trip—that’s what airport bars are for. Your vet will consider the type of transportation you’ll be using. If you’re driving to your destination, make sure you know how your pet responds to car travel. Air travel comes with its own rules and restrictions, so definitely make sure you plan far in advance. You’ll want to follow the airline’s guidelines to a tee.
On your way Before you travel with your feline or canine pal, make sure to schedule a follow up with the vet closer to your departure date to get a certificate of health—which are only good for 10 days—and documentation that the pet is up to date on shots. You may not need it, but you should have it anyway. “Medically, be sure your pet is current on all necessary vaccines, deworming or health certificate if required,” says Dr. Boeving. Other things you’ll find out from your vet: Anything you might need to know about your destination, such as local pests that could be a problem for Fluffy or regional outbreaks of diseases that might put her in danger. On the day of travel, don’t feed your pet for six hours before the trip and when traveling, keep the diet consistent to prevent any tummy issues. “The stress of travel has the potential to cause some 54 • MAR 15
unexpected issues with your pet…such as car sickness, vomiting, diarrhea,” says Dr. Boeving. In planning your trip, check ahead with your destination about bringing non-human family members along. “Certainly more and more hotels are catering to those travelers who would like to bring their pets along,” says Karen Dawson, director at Southlake Travel Specialists. “There is a wonderful web site called OfficialPetHotels .com that helps you search for pet-friendly hotels.” During your trip, remember that the most common injury seen from pets during travel involves the pet getting out and escaping or reacting in an unexpected way. “Behaviorally, some pets react differently on trips than in their normal home environment. They may act differently around other people and animals, which can lead to fearful or aggressive reactions that are not normal for that animal. Or the pet may escape and become lost in an unknown environment. Prevention is the best way to minimize these complications,” says Dr. Boeving. If you’re pet isn’t already micro chipped, now might be a good time to do that. And make sure you have a current ID tag on your pet as well. “We can’t expect our animals to be perfect or anticipate what we need from them. Even the best pet in the world with the best training has the potential to act differently during travel,” she says. “ “[You can] try to prevent any potential dangerous situations. Don’t allow your pet to interact with other animals or people until you are confident they are relaxed enough to handle it. Keep your pet confined either on a leash or in a crate so an escape does not happen. SOUTHLAKE STYLE
PET TRAVEL TIPS DRIVING MS. FLUFFY: SEATBELTS AND SAFETY: Dr. Boeving recommends getting a restraining device for your pet while in the car. “I think that if the owner is able to crate, use a seatbelt harness, that would be ideal. We are going to minimize injury by doing that.” These devices keep the pet safe in the case of an accident, though you should always keep the pet in the back seat to prevent injury from airbags. They also prevent the pet from distracting the driver and keep the pet secure when people are exiting and entering the vehicle. “That way if someone does open a door, they’re not going to get out,” says Boeving. “[If you’re not using a crate or seatbelt], make sure the leash is on the pet before someone opens the door.”
Leaving them behind You have several options to choose from should you decide to not bring Fluffy along with you. This, again, is something to discuss with your vet, who will have recommendations. One option is to find a pet sitter. This will allow your four-legged friend to remain in his or her familiar environment, stick to the same diet and most importantly, continue with the normal day-to-day routine—which probably involves sleeping on his or her favorite spot on the couch. However, your pet might get lonely, and you run the risk of the sitter only being able to visit once a day. If you’re hiring a pet sitter, be sure you can trust the company and that you’re comfortable with the frequency of visitation. Dave Shackelford, owner of Elite Suites Pet Resort in Southlake suggests you ask yourself, “Can you really trust the person who’s coming in? Find out if they are bonded…and so on.” Deciding to leave your pet at a boarding facility also requires a little digging. Make sure to visit the facility first, says Shackelford, and take a thorough tour, noting how clean and well maintained it is. Find out if they have adequate staffing on weekends. And another thing to consider, says Shackelford, is whether the dogs have access to the outdoors. “Dogs are trained to not go in the house, so they’ll hold it longer.” Make sure to tell the person or facility watching your pet all of the issues your pet has had, even if they’ve been treated and corrected, says Shackelford, so the staff knows how to best take care of your pet. IN-SIDE SECURITY: If your pet is one of those dogs that must have his head out the car window, Dr. Boeving cautions you to make sure the pet is secure. “Make sure there’s no chance the window is going to go up and get them caught, that they have a leash attached and there’s someone’s there who if they do get a little overzealous can pull them back in. POTTY STOPS: Make sure you exercise your pet and give it a chance to use the bathroom before you leave. But don’t try to iron man the drive all the way to your destination—your pet will need more frequent potty breaks than you. During pit stops, give your pet some room to walk and exercise to help release any pent up energy. Dr. Ruffner warns to make sure the pet is leashed at all times. “Just to make sure that they bring a leash, so that when they stop, they have adequate control of the pet.” Make sure the pet has enough water to drink, but not enough to get full on, and don’t feed the pet until you reach your destination. “The other issue in cars is some of them can get car sick,” warns Dr. Ruffner. FLYING WITH FIDO: FOLLOW THE RULES: If you want to take your pet with you on your plane trip, first consult with your vet to see if your pet is well enough to travel. Then call the airline to find out what kind of rules and conditions they have. Traveling by plane with your pet requires some planning and advance preparation, so start early. MAR 15 • 55
RESERVE YOUR PET’S SPACE: Even if your pet is small enough to be carried on, you’ll still need to speak with the airline before going on your trip. “Most airlines only allow one pet per cabin— inside the plane, under your seat” says Dawson. And those carry-on spots must be reserved. So call ahead.
GET A HEALTH CERTIFICATE: Part of your pre-flight vet check up should also be to get a health certificate— even if the airline doesn’t require it. “It’s simply a document by the vet which says that it’s safe for the pet to travel and won’t infect any other pets,” says Dr. Ruffner. “Even if you were to call an airline, [and they said that you didn’t need it,] the ultimate person who’s going to make that decision is the gate agent, so I tell clients just to be safe, to have a health certificate before they get on the plane.” Health certificates are good for 10 days, so it’s recommended to go in to get one the day before you depart.
CARRY ON CONUNDRUM: If you’re going to carry your pet on the plane consider leashing your pet inside the carrier while going through security. “If you take a pet on a plane, you will have to take them out of their pet carrier, and hand carry them through security—that can be challenging,” says Dawson, who suggests that you might want to fly during times that are less busy, such as during the middle of the week.
CARGO-BOUND PETS: In the case that your pet must be checked into the baggage area, you’ll want to book far ahead in advance, and check the average temperature of the day you’ll be travelling. “If the pet has to go below into the cargo area, the temperature cannot be above 85 degrees on both ends, where you are departing from, and the city you arrive in, or below 45 degrees,” says Dawson. Early and late flights in the summer and flights in the middle of the day during winter will be your best bet. GET THERE EARLY: Most airlines recommend you arrive two hours prior to your trip if you’re bringing pets, though they won’t be able to check the pets more than four hours before the trip. Be sure to exercise your fur baby, and give them the time to go to the bathroom before they get ready to travel.

How to Avoid Common Packing Pitfalls You think you know the drill when it comes to buying those airline tickets and heading out the door—throw some clothes and sunscreen in your bag and you are set! But that is clearly not the case. RESEARCH YOUR DESTINATION You’ll want to take into consideration more than just climate—think about your itinerary. Will you be walking a lot? Your need for comfortable shoes might rule out those cute sandals you were thinking about bringing. If you plan to visit cathedrals and chapels in European countries, remember dressing modestly is important—most won’t let you in if you are wearing shorts. DOWNSIZE TOILETRIES The bulky bottles storing your favorite shampoo and conditioner should stay in the shower shelves at home. The Container Store has plenty of travel-sized bottles to hold your favorite soaps and lotions. Or you can be a little adventurous and try the toiletries offered by your hotel or resort. They are often made with local ingredients and do the job just as well. PLAN YOUR OUTFITS You went to the trouble of planning your vacation, shouldn’t the contents of your suitcase get the same attention? Instead of throwing in a pair of pants here or a blouse there, create outfits for each day and night of your trip. Be ready to toss out any duplicate items such as two pair of dark jeans. Some travelers even go as far as to take a photo of each of their outfits for reference! ROLL IT OR FOLD IT Now that everything is all set out and ready to go, how do you go about getting into your bag? Keeping wrinkles at bay is key, so if you have to sit on your suitcase to zip it shut, you might want to rethink your strategy. Experts say the best way to avoid wrinkles is to roll up items that will roll, and fold thicker clothes such as jeans and sweaters.

Texas, the Fort Worth Opera has gained national recognition for its willingness to take risks. They’re flipping opera on its head on March 17 at White’s Chapel United Methodist Church in Southlake to prove that opera is familiar, accessible and most of all, enjoyable. Mixing opera with well-known songs from Broadway musicals and current pop hits, they’re able to capture the attention of audience members who may never have given opera a chance. Attendees will have the chance to offer suggestions for improvisation, as well as learn about voice types, ensemble sizes and how to understand pieces in a foreign language. They know to book their stays months in advance of holidays and special events. From rolling hills to rocky canyons, the views along the Gold Belt Tour are diverse exploring abandoned gold mines and once bustling mining towns—now sleepy tourism attractions. Also known as the Road to Riches, this scenic byway is located in southern Colorado and can be reached on the northern end via U.S. Highway 24 and at the southern end via U.S. Highway 50. Driving the Gold Belt Tour, a Colorado Scenic and Historic Byway, you can retrace travel routes taken by covered wagons through the communities of Florence, Cañon City and Florissant that connect Cripple Creek and the Victor Mining District. Not to miss in Cañon City is the Royal Gorge Bridge and Park. The Royal Gorge Bridge hangs high above the Arkansas River and is the highest suspension bridge in the United States. Won’t you be my neighbor? If you consider your ride more of a motor home rather than an RV, Heritage Motor Coach Resort & Marina might be the perfect place to hitch your vehicle. Dallas-Fort Worth’s dining landscape is dynamic and ever changing. Some of the newer establishments fade away quickly or suffer when the executive chef leaves. Others not only endure, but also thrive over the years and become must-visit stops on the DFW dining map. Gemma has all the traits necessary to become a long-term success due to its simple sophistication. Chef Stephen Rogers and his wife Allison Yoder left the Napa Valley restaurant, Press, where he was executive chef and she the general manager. Chef Rogers, a Dallas native, wanted to bring his brand of cooking back to Texas, and he found a home for his restaurant on trendy Henderson Avenue in Dallas. Gemma’s understated exterior sets the stage for the elegant interior, where wall colors of muted blues contrast with white shelves above the bar. Simple tables with comfortable chairs add a
touch of classic elegance to the atmosphere, as do the patrons—a varied group of University Park residents and young, Uptown professionals. All together, it makes for a relaxing environment to enjoy the meal to come. Yoder oversees the dining room, and we had the opportunity to speak with her for a moment during our visit. One bit of trivia about Yoder, she is a classically trained opera singer and met her husband while attending performing arts school in Pennsylvania. The menu is divided into six sections: raw, salad, appetizer, to share, vegetables and main course. The focus in each section is on fewer items with greater care in ingredient selection and preparation. The theme of simplicity can be seen in Chef Rogers’ less-is-more approach, which translates to beautiful, flavorful and overwhelmingly satisfying dishes We started in the to share section with turkey

meatballs. The spices in the meatballs gave it a full flavor, and a sweet and tangy tomato sauce (not marinara) and side of toasted crostini complemented the dish. For our main course selections, I chose the braised veal cheeks with a side of the vegetable of the moment, roasted Brussels sprouts. Gemma’s are pan-roasted with bits of savory bacon. As for the meat, braising is a cooking technique that requires preparation, patience and time. The veal cheeks were served up in a cast iron pan on top of house made black pepper spätzle and surrounded by turnips, baby carrots, baby onions and bacon. The veal was moist, tender and rich. I had to keep my dining partner from taking more than her share because of how amazing it was. She chose the pappardelle pasta with braised rabbit. The pasta is made fresh each day, and the sauce was rich and perfectly salty with bits of crisp pancetta mixed with Swiss chard and thyme. To finish our meal, we chose the apple tart topped with butter pecan ice cream. It was decadent. Plan a trip to Dallas soon to take a seat in this very elegant dining destination, but remember, they are only open five days a week—Wednesday through Friday—and you’ll need to make a reservation. Recently opened in the former Planet Burrito location, Bolo Italian Grill, a fast-casual eatery that blends the best of burritos and Italian cuisine, has quickly made its way to the top of the food chain for locals and visitors alike. “Bolo is an exciting, modern idea that blends the best of quickcasual dining with the personalized touches of a custom meal,” Judson Phillips, Bolo owner, says. “We give you everything you want, nothing you don’t.” Created by restaurant veteran Phillips, Bolo Italian Grill caters to cravings for customized flavors with an emphasis on bright, seasonal ingredients hand prepared in a warm, vibrant atmosphere. His one-of-a-kind handheld pasta concept blends the best of Texas with the best of Italy to deliver something original. Every dish can be made gluten-free and every entrée can be “bambinisized” into a kid-friendly portion. “Contemporary lifestyles call for lots of meals eaten outside the home,” Phillips says. “But Bolo’s menu is so customizable, every bite tastes homemade and handmade just the way you like it.” The restaurant has a warm, contemporary and urban feel. With an atmosphere conducive to a night out with the family, Bolo Italian Grill also has you covered if you’d like to indulge in an adult beverage or two—they serve alcohol. The fast-casual restaurant is open seven days a week for lunch and dinner from 11 a.m. to 9 p.m. “The most important thing you’ll notice about the restaurant— other than the great tasting food—is the service,” Phillips says. “Not only will you get great food quickly, but you’ll be treated to the type of service you would expect at any restaurant—quick casual or otherwise.”

Thyme for Change Del Frisco’s Grille updates the menu A menu change-up isn’t always necessary. After all, when it comes to good food—as in the case of Del Frisco’s Grille in Southlake—why mess with award-winning taste? But, as Head Chef Aaron Henschen explains, a restaurant has a responsibility to its patrons to serve not only great food, but food they can feel good about eating. “There’s been a lot of emphasis put on healthy foods and glutenfree menus,” Henschen says. “We wanted to be able to offer those choices to our guests as well.” On its recently updated lunch and dinner menus, Del Frisco’s added new soon-to-be favorites and made updates to your favorite standbys. Chef Henschen says they changed one such item on the menu from fried to roasted (the Simply Roasted Chicken). The new chicken dish is now gluten-free and served with hand-mashed potatoes, asparagus and roasted chicken jus. After hearing about the healthy side of things, I opted to order a salad for my starter course. Although, the cheesesteak eggrolls served with sweet and spicy chili sauce and honey mustard—a new and popular menu item—seemed like the next logical choice. I went for the kale and quinoa salad, made with shaved Brussels sprouts, dried cranberries, shaved manchego cheese, sweet corn, jicama and champagne vinaigrette—and added grilled chicken. Upon arrival, the salad’s size made me immediately think this would be my only course. As a matter of fact, I only ended up eating half. However, as filling as it was, it wasn’t in the least bit heavy. This is a great example of a lunch menu favorite that had a mini makeover. Another addition to their menu and food service are specials served on Tuesday, Wednesday and Thursday, for which the restaurant offers a special meal only available that day on their Daily Dish menu. I dined on Tuesday and had the opportunity to enjoy the fresh, made-from-scratch chicken pot pie. Arriving fresh from the oven and larger than life, the pie literally overcame the serving platter. After piercing the light and flaky piecrust, the aroma of chicken and vegetables filled the air and immediately reminded me of mom’s home cooking. By far, Tuesday is the most popular of days to dine, according to Chef Henschen. As a matter of fact, upon arrival I was told by the wait staff to definitely try the chicken pot pie—and I’m glad I did. Taking your lunch break in Southlake shouldn’t mean you’ll have to sacrifice atmosphere for taste—at Del Frisco’s Grille you can get the salads, gluten-free and healthy fare you’re looking for in a sit-down environment complete with table-service. Another change you should look forward to this spring at the Grille? The patio will be up and running.

orsche purists cringed a dozen years ago when the parents of the 911 gave birth to the Cayenne, a real sport utility vehicle. Oops, they did it again. The all-new Macan S, although smaller, bears a striking resemblance to its four-door sibling. In the land of SUVs, Porsche now has a pair of vehicles that are setting new standards in performance, handling and comfort.. Pronounced ma-CAHN, the name is Indonesian for tiger, a moniker the car earned thanks to its powerful twin-turbo engine and agile frame, which is inspired by the Audi Q5 SUV. Coupled with Porsche’s allwheel drive technology, the Macan is ready to pounce no matter what the terrain with an impressive 0 to 60 mph time of 5.2 seconds. The top model in Porshce’s compact SUV line, the Macan Turbo, can hit a top speed of 164 mph with a 0 to 60 mph of 4.6 seconds. However, this model will set you back more than $72,000— almost 50 percent more than the S version, which has a MSRP of $49,900. Many of the design elements have been lifted from other Porsche sports cars and enhanced for the Macan, giving it a unique look and striking curb appeal. Macan’s designers implemented a
flat and broad profile and wraparound hood giving the vehicle an assertive presence on the road. The profile’s gently sloping roofline gives the SUV a sense of elegance in contrast to the powerful driving dynamics contained within. From the inside, Porsche’s high-quality workmanship prevails as expected. In the cockpit, your eyes are immediately drawn to the standard multi-function sports steering wheel. Based on the 918 Spyder’s system, the SUV’s electromechanical power steering system features the responsiveness of a sportscar. Bluetooth compatibility, infotainment and on-board computer with 4.8-inch color display pair with the ergonomically positioned paddle shifters to ensure competent and focused driving in all conditions.
