Spotlight Meet the 100th Force Support Squadron's April Spotlight! Karen Roquid, Karen is our Recreational Specialist at the Bob Hope Community Center. Karen works closely with Armed Air Forces Entertainment, USO, and may more agencies to bring entertainment events to RAF Mildenhall. Planning events for the 100th Force Support Squadron is also one of Karen's biggest roles.

Where do you call home in the states? Originally from Philippines, but Colorado Springs is where we are planning to retire and call home in the states.

What are some of your hobbies? I enjoy running long distance, traveling with my family and trying different cuisine.

How long have you lived in the UK? We moved here last year July 2019.

What do you like about working at the Bob Hope Community Center? Working as an event coordinator is all new to me, I’m just so glad I have the best co-workers who are supportive and patiently trained me with all the process. And plus working with these awesome events for the RAF Mildenhall Community is the best thing I have experience.

What special skills do you have, that most people don't know about you? Love cooking during free time and really good in cocktail mixing.

Peeps Houses! Who says gingerbread houses were just for Christmas! Use graham crackers and icing to make these tiny houses for your Peeps.

YOU WILL NEED Peeps

Graham Crackers

Frosting/Icing

Newspaper or parchment paper

Easter grass

Candy eggs

METHOD Lay out the newspaper or parchment paper. Break the whole graham crackers in half. You'll need 3 whole crackers, broken into 6 halves, for each house. "Glue" the walls to the floor with icing, and set aside. Glue the two halves of the roof together and set aside (prop if necessary). As soon as the walls and roof dry separately (an hour or so), you can glue the roof onto the walls. Let dry and decorate as desired.

Cheesy Ham & Potato Casserole INGREDIENTS 3 tbsp. butter 1 small yellow onion, finely chopped 3 tbsp. all-purpose flour 1 tsp. sweet paprika 1 1/2 c. whole milk 2 c. diced cooked ham Kosher salt Freshly ground black pepper 2 1/2 lb. russet potatoes, peeled and sliced into 1/4"-thick rounds 3 c. shredded cheddar Freshly chopped chives, for serving

DIRECTIONS Preheat oven to 375°. In a medium saucepan, melt butter. Add onions and cook until soft, stirring occasionally, about 4 minutes. Sprinkle flour and paprika over and cook, stirring constantly, 1 minute. While whisking, slowly pour in milk. Bring to a simmer and continue to whisk until thickened, about 3 minutes. Stir in ham and season with salt and pepper. Layer half t h e p o t at o e s i n t h e b o t t o m o f a 3 - q u a r t b a k i n g d i s h a n d s e a s o n with salt and pepper. Spoon half the sauce over and sprinkle with half the cheddar. Repeat with remaining potatoes, sauce, and cheese. Cover dish with foil and bake until potatoes are soft, about 40 minutes. Remove foil and continue to bake until cheese is golden and bubbly, about 25 minutes more.Sprinkle with chives before serving.

Zoe Jean-Charles I am a fourteen-year-old eighth-grader at RAF Lakenheath Middle school. I go to the Mildenhall Youth Center and I am the 2020 Youth of the Year for this base. I enjoy sketching and playing music in my free time.

I am also hoping to make the world better

by fighting ignorance and hate. As a member of the LBGTQ+ community,

I am currently working with my school, to start a GSA.

A GSA safe space for learning about LGBTQ community.

I would like to use this opportunity to help me grow as a leader so that I can further help my community and fellow youth. I also think this would be a great opportunity to learn and better my writing and communication skills so that I can prepare for college and my future endeavors.

Being selected as Youth of the Year was a great accomplishment that I could not have done without the help of many people. Many of my friends, teachers and Teen Center staff encouraged me to try and step out of my comfort zone. I hope to make them proud and become a better person, student and help create a better Youth Center experience for future teens and youths.
