reedom’s just another word for nothing left to lose... so goes Janis Joplin’s song, “Me and Bobby McGee.� The freedoms we use to have meant something, but not today! With big government’s unending regulations we no longer enjoy by Richard T. Matz the freedoms of yesterday, and small businesses cannot survive in today’s climate. Both political parties are to blame — but more so the Democrats as they are proponents of more rules, regulations and bureaucracies that stifle all businesses both large and small. We need to deregulate the regulators so more and more small businesses (the backbone of economic growth) can again thrive and rekindle the jobs we’ve lost during the last 40 years. I am a classic example of a small businessman that had to shut down four small businesses (a Mexican restaurant, a small grocery market a deli and pizza shop) because of ridiculous rules and regulations that were imposed on me by the San Diego County Building Department. After a disastrous fire burned down my businesses, I wanted to rebuild — but after six years of fighting the county and a loss of more than $80,000 in fees, I could no longer afford to fight

How in the world could the most powerful nation in the world, the United States, lose our steel, automotive and thousands of manufacturing jobs to countries like Japan, Korea, China and Mexico? The answers are quite simple! Large companies and corporations whose only concerns are the bottom line were tired of the rules, regulations, unions and 35 percent tax rate imposed upon them by our government. Even the dumbest of small business owners understands the difference between paying $8 per hour versus $15, $25, $50 or even $100 per hour that the unions demanded from the automotive industry. This killed Detroit and all the other automotive industrial towns. What we have here is a FAILURE TO COMMUNICATE with all politicians that have lined their own pockets and failed their constituents wishes. This is why we have “Angry Americans� in every large and small town across the United States! This next election for the presidency is one of the most vital elections America will ever face. We must decide whether we will remain the greatest country in this world. We have two choices (maybe not the best we’ve ever had). Nonetheless we can vote for Hillary Clinton (the politician) and continue the failed policies of the Obama Administration, or roll the dice and take a chance on (the non-politician) Donald Trump. n Sundays, the Food Network is bringing an epic battle on wheels for foodie fans. Host Tyler Florence is back with “The Great Food Truck Race.� Six family teams who have never been part of the food truck revolution are taking the wheel racing toward the $50,000 grand prize. The competitors include a Chicago police officer, Jersey Show reality star Vinny Guadagnino and many more. If you’re looking for San Diego/San Francisco representation, you can expect to see twin brothers Michael Kalish and Charlie Kalish along with family Bryce Adams. From the California Sun Belt to Catalina Island these competitors will take on challenge after challenge to see who can bring it through the stress and we all get the opportunity to see their culinary skills. Jeri Jacquin: We are going to jump right in. What made you both decide to participate in “The Great Food Truck Race?�

Charlie Kalish: We participated because it was a family food truck race and it was just a great opportunity for Michael and me to step away from it all. We work together and are business partners so we could just be brothers and have some fun. I think we underestimated how stressful, crazy and wild the show would be. We brought our college buddy Bryce to join us and he’s pretty much family. He stepped in
to help out. The idea was that this would just be a family road trip and we would test out working on a truck together to decide if that was something we might want to do in the future. JJ: You said it was stressful, how was that for two brothers to be in such a confined space? Michael Kalish: We are still here and alive so that’s good [laughing]. I think in
those kinds of situations you either disintegrate or pull together as a team. Win or lose I am proud of how Bryce, Charlie and I worked together. I think we did amazingly well bringing it all together. JJ: Tell me about the creativity that it takes now to have a food truck because they are so popular. The first choice from an assortby Howard Hian was ment of amazing appetizers, but tucked away on the list was their homemade churro for dessert (don’t miss it!). Choosing from an array of imaginative tacos was the hardest part of the meal. Catania, also in La Jolla, was named one of Zagat’s hottest new restaurants. The $50 dinner menu is designed for sharing, featuring coastal Italian specialties. Choices included two appetizers, one pasta or pizza and two desserts.

ntering the most important season in franchise history, the San Diego Chargers opened training camp with a number of questions, both on and off the field, as they prepare to open the 2016 season at Kansas City on Sept. 11. For the second consecutive year Chargers’ players will start their season with uncertainty — will the franchise remain in San Diego or is a partnership with the Rams and a return move to Los Angeles in their future? For the purposes of this story, we will put the stadium issue aside and focus on the team itself as head coach Mike McCoy enters his fourth season sporting a 23-27 record. Will the offensive line stay healthy enough to establish an effective run game and keep quarterback Philip Rivers upright throughout the season? Can running back Melvin Gordon bounce back after a disastrous rookie season? Did General Manager Tom Telesco acquire enough talent to successfully offset the key veterans that are no longer with the team? Will

Army Ranger-turned left tackle says Kaepernick missing ‘big picture’ PITTSBURGH — Pittsburgh Steelers left tackle Alejandro Villanueva, an Army Ranger before starting his NFL career, aligns with Colin Kaepernick’s frustration over racial injustice, but not his forum. The sacrifice of the military is too great to minimize the national anthem, Villanueva said. Kaepernick decided to sit during the playing of the anthem before the San Francisco 49ers’ game against the Green Bay Packers on Aug. 26. Kaepernick says he sat, and will continue to sit, over the oppression of African-Americans. “I don’t know if the most effective way is to sit down during the national anthem with a country that’s providing you freedom, providing you $16 million a year ... when there are black minorities that are dying in Iraq and Afghanistan for less than $20,000 a year,� Villanueva said. “It’s his decision. Obviously he has brought up the issue in a great way. But I think if he encourages other players or other people in the stands to sit down, it’s going to send the wrong message. “He has to be a little more careful and look at the big picture of the things that he’s doing, because as a service member, I have to understand it. But he’s an athlete, he’s got a huge platform, he has to see the impact he has on other people’s lives.� Villanueva, 27, a former rifle platoon leader of the 2nd Battalion, 87th Infantry Regiment, 3rd Brigade Combat Team,
first said he didn’t want to be involved in the Kaepernick discussion when approached at his locker. But when asked about the responsibility of an athlete to stand during the anthem, Villanueva, of SpanAlejandro Villanueva ish descent, said American minorities have more liberties than in other countries, with freedom to speak their mind, largely because of the military fighting for that right. Kaepernick, who is set to make $11.9 million in 2016, told San Francisco-area reporters Sunday that he means no disrespect to the military, but he is sitting down for a cause he feels is right. “I will be the first one to hold hands with Colin Kaepernick and do something about the way minorities are being treated in the United States, the injustice that is happening with police brutality, the justice system, inequalities in pay,� Villanueva said. “You can’t do it by looking away from the people that are trying to protect our freedom and our country.� If a Steelers teammate decided to join Kaepernick in sitting, Villanueva said he’s
not sure how he’d react, but will “stand very proudly� every time the national anthem is played, singing every word of the song because of what those words mean to him. Villanueva said he often tells teammates that though he’s one of the cheapest left tackles in the league ($525,000), living in the U.S. is like “winning three lotteries.� Villanueva, who played at Army and was cut by three NFL teams before latching on with Pittsburgh, stressed that Kaepernick’s cause is worthy, and the topic of race has permeated “every locker room in
the NFL. Everybody’s talking about this.� “We have a lot of different ways of approaching things — through our government, through vote, through donations to platforms who are doing great things,� Villanueva said. “Whenever you include an entire country in one of those protests, I think you might mislead some people who truly wake up every single morning trying to give everything, including their lives, to protect this country. It’s a little bit unfair to group everybody under that category.�

Survival rates improving for combat wounded News By David Vergun Army News Service
WASHINGTON — About 92 percent of soldiers wounded in Iraq and Afghanistan have made it home alive, according to Lt. Gen. Nadja Y. West. That’s the highest percentage in the history of warfare, despite the rising severity of battle injuries from increasingly lethal weapons, said West, surgeon general of the Army and commander of Army Medical Command. The survival rate in Vietnam was around 75 percent, she told her audience. There are a number of reasons for improved survival rates, West said. Soldiers, not just medics, are receiving much better training in lifesaving techniques, and Army medicine has continued to advance, she said. Another reason is that casualties are transported swiftly back to hospitals and receive excellent care en route. Other contributing factors are less obvious, she said, like improved communica-

Military households have an opportunity to help ensure that regional planning efforts reflect the transportation needs of all San Diego County residents. The San Diego Association of Governments is inviting about 200,000 households countywide to participate in a study to help transportation planners better understand how, when and why residents travel in the region. SANDAG strongly encourages military households to volunteer so the transportation needs and behaviors of military personnel and families are represented in this study. The results of the study will be used to develop infrastructure projects and programs to better meet regional transportation needs. Military participants will be asked to answer questions through an online survey about their daily travel choices. Ventura plans to take Chris Kyle case to Supreme Court
MINNEAPOLIS — Former Minnesota Gov. Jesse Ventura says he plans to take his defamation fight against the estate of slain Navy SEAL Chris Kyle to the U.S. Supreme Court. In June, the 8th U.S. Circuit Court of Appeals tossed out a $1.8 million verdict awarded to Ventura against Kyle, the author of “American Sniper.� Jesse Ventura An appeals court recently denied Ventura’s request for a rehearing. Ventura, a former SEAL, took issue with Kyle’s claim in his autobiography that he punched Ventura at a California bar in 2006 for making offensive comments about the SEALs. Kyle’s autobiography was the basis for a 2014 film. In an interview with the Star Tribune, Ventura said he and his attorney plan to take the case to the Supreme Court and face a second trial. Corps rewrites Iwo Jima history... again The Marine Corps has again changed its official history by re-identifying the six men who raised a flag on Iwo Jima. Yes, again. We’re talking about the so-called “first flag raising� — a significant military act on Feb. 23, 1945, that is now, unfortunately, relegated to history’s dusty back shelf. Everyone knows about the second flag raising that happened on Iwo Jima that day, because an Associated Press photographer named Joe Rosenthal snapped a photo that became one of the most iconic images in American history. But few people realize that, several hours before that, a group of 40 men climbed Mount Suribachi and raised a smaller American flag — an act that set off a celebration among the thousands of U.S. Marines and sailors battling desperately for control of Iwo Jima. “Everybody was cheering, throwing helmets into the air, ships were blowing their horns,� Charles Neimeyer, director of the Marine Corps History Division, said. To the Marines that day, “the most memorable moment was that first flag raising.� Research by amateur historian Eric Krelle led to the Marine Corps changing the names attached to that second flag raising, the famous one. The Marine Corps continued to research the flag raisings after that announcement. They turned their attention to the first flag raising. And they announced Aug. 24 that, yup, they had the identities of the men who

raised that flag wrong for decades, too. A panel of Marine leaders and historians determined that Louis Charlo and James Michels did not help to raise the first flag, as had been previously believed and recorded in the Marine Corps’ official history of the flag raisings. They did officially recognize two new raisers of the first flag: Private Philip Ward and Navy corpsman John Bradley.

A solid veteran with respected locker room presence, you can bet there will be no more cheap shots on Rivers without retaliation. Key stats: Per Pro Football Focus (PFF), the Chargers offensive line recorded a pass-blocking efficiency of 67.6 (the worst mark in the league) and RT Joe Barksdale was the only O-lineman to play 1,100 or more snaps, but also the only one to earn an above-average grade. The Chargers O-Line experienced 24 line changes throughout the season last year.

Brandon Mebane
It’s been six long seasons since the great Jamal Williams left the Chargers to sign with Denver in 2010. In nose tackle Brandon Mebane the team finally landed Brandon Mebane the prototypical defensive tackle built to stabilize the front seven of a 3-4 defense. While comparisons to Williams would be unfair to Mebane — Williams dominated the position for a decade — what he does bring to the team is the same intangibles on and off the field as Slausson, the man he will battle daily in practice. Entering his 10th NFL season, the 6-foot-1-inch, 311-pound Mebane spent his first nine seasons with the Seahawks after being drafted out of Cal Berkley in the third round of the 2007 NFL Draft. In addition to starting 134 out of 142 games, Mebane brings the experience of starting
nine out of 11 playoff games — another major intangible he brings to a young defensive unit. Key stats: The Chargers rush defense finished last season ranked 27th, allowing a 4.8 yard average and 125.3 yards per game. They were 20th in overall defense and 27th in sacks with 32. Mebane’s career totals (including playoffs) are 386 tackles, 15.5 sacks and a pair of forced fumbles. He was named All-Pro by Sports Illustrated in 2013.

While the decision not to re-sign All-Pro safety Eric Weddle raised many eyebrows, Telesco didn’t bat an eye when he signed the well-traveled veteran Dwight Dwight Lowery Lowery to replace him. Despite the fact that Weddle was a veteran defensive leader and arguably the best free safety in franchise history, Telesco liked Lowery’s ball-hawking skills and his veteran presence in a young secondary. However, as with Mebane to Williams, expecting Lowery to fill Weddle’s shoes is unfair — Weddle is a five-time All-Pro and a three-time Pro Bowl participant. Drafted in the ninth round by the New York Jets in 2008, Lowery has played for four teams in eight years — New York (2008-10), Jacksonville (2011-13), Atlanta (2014) and Indianapolis (2015). The 5-foot-11-inch, 212-pound free safety has started 73 of 106 games in the NFL,
including six games and one start in the postseason, and he has 399 career tackles (postseason included). Key stats: Despite having started far fewer games in the NFL than Weddle (73 to 142), Lowery and Weddle share some striking similarities in the turnover department. Entering his ninth season, Lowery’s career totals (postseason included) include 16 interceptions (three returned for touchdowns), five sacks, eight forced fumbles, seven fumble recoveries and 60 passes defended. As he begins his 10th season, Weddle’s career totals (postseason included) include 19 interceptions (three returned for touchdowns), 6.5 sacks, five forced fumbles, four fumble recoveries and 71 passes defended.

While the Chargers will likely miss Malcom Floyd’s ability to stretch the field and his height advantage in the red zone, the addition of the speedy, duel-threat Travis Benjamin adds a dimension to the ofTravis Benjamin fense the team hasn’t seen since the great Darren Sproles. On the first day of free agency the Chargers quickly signed the diminutive 5-foot10-inch, 175-pound wide receiver Benjamin to a four-year deal. A former fourth-round pick of the Cleveland Browns, Benjamin is coming off a career-best season in which

he posted 1,302 all-purpose yards, including single-season bests in receptions (68), receiving yards (966) and touchdowns catches (five). Entering his fifth season, Benjamin’s career totals include 109 catches for 1,683 yards (15.4 average) and 10 touchdowns; 68 punt returns for 857 yards (12.6 average) with three touchdowns; 14 rushes for 134 yards (9.6 average), and 18 kickoff returns for 468 yards (26.0 average). Key Stats: In his short career, Benjamin is a three-time AFC Special Teams Player of the Week. His three punt return touchdowns is tied for second-most in Browns history and his 12.6-yard punt return average over the 2012-15 seasons was the highest in the NFL. Benjamin also holds the team records for punt return yards in a game (179) and the longest punt return (93 yards). In another addition to the receiving corps, the Chargers signed veteran receiver James Jones to replace Stevie Johnson who suffered a season-ending knee injury the first week of training camp. Inked to a oneyear deal, the 6-foot1-inch, 200-pound Jones is entering James Jones his 10th season having played eight in Green Bay (2007-13
and 2015) and one with Oakland (2014). Drafted in the third round out of San Jose State in 1987, Jones’ regular-season career totals include 433 receptions, 5,861 yards and 51 touchdowns. For his career, Jones has started 72 of the 136 regular-season games he has appeared in. Key Stats: Jones led the NFL with a career-high 14 touchdown catches for the Packers in 2012. In 2014 and 2015, Jones caught a career-best 73 passes for the Raiders and totaled a career-high 890 yards for the Packers, respectively. He has appeared in a total of 13 postseason games, including six starts, where he caught 35 passes for 491 yards and for touchdowns. He won a Super Bowl ring with the Packers following the 2010 season.
Casey Hayward
Looking to upgrade the secondary, Telesco signed former Packers cornerback Casey Hayward to a three-year contract. Like Benjamin, Hayward was Casey Hayward also signed the first day of free agency and the 26-year-old is expected to challenge Brandon Flowers for the starting cornerback spot opposite Jason Verrett. Ranked 14th-overall on PFF’s top 75 free agent list for 2016, the versatile Hay-
ward was part of a Packers secondary that finished last season ranked sixth in pass defense — the Chargers secondary finished the season ranked 14th (t) with just 11 interceptions. Key Stats: Entering his fifth NFL Season, Hayward has started 20 out of the 51 games he has appeared in. The 5-foot-11inch, 192-pound Hayward had a breakout rookie season in 2012 where he led all rookies with six interceptions and 21 passes defended. Playing both cornerback and nickel for the Packers, he has totaled 168 tackles, 35 passes defended, nine interceptions and one touchdown in his short career. Weighing the additions versus the subtractions on a team that finished last season 4-12, one would say it is a no-brainer that this is a better football team — on paper at least. Aside from safety and seasonending injuries to both Cumberland and Clark, the team appears stronger than the unit that finished at the bottom of the AFC West last season. The Endzone: When determining the success of the free agent additions and subtractions one must take into account the “in-house� free agents that re-sign with their respective team. For the Chargers, Telesco focused mainly on the offensive side of the ball by bringing back TE Antonio Gates and O-Lineman Joe Barksdale, Chris Hairston and Kenny Wiggins. Re-singing Gates and Barksdale was
expected and keeping both Hairston and Wiggins in the fold cannot be underestimated — the versatility they both showed last season was impressive. It’s highly unlikely the injury-bug will bite the O-Line like it has the past two years, but if it does it appears they have the depth to withstand the onslaught.

to get people interested in what you are creating, tell me about that for you both? Charlie: Michael and I are cheese experts and our product is grilled cheese. It was a big empty canvass for us to play around with what we could do with cheese. Michael: Cheese is an amazing thing. It can have so many different textures and flavors so a big part of grilled cheese sandwiches is what it looks like. Presentation is really important and this plays directly to all our strengths. Charlie and I are brand ambassadors for Meiomi Wines so we do cheese parings on a pretty regular basis. We are always thinking what would be tantalizing to our customers so it was a real natural fit for us. Charlie: Going into â&#x20AC;&#x153;The Great Food Truck Raceâ&#x20AC;? we watched some previous seasons and see when they travel places 12 4FQU
they tend to have local ingredients. We were confident that depending on where we went and what kind of ingredients popped up, we could find the right cheese or the right combination of ingredients to bring those flavors and textures together. JJ: Are you both surprised that you can do so much with a grilled cheese sandwich and that people respond to it? Charlie: Iâ&#x20AC;&#x2122;m not surprised because a grilled cheese sandwich is a food of comfort and convenience. It is something that you can slap together right away for your kids or for yourself quickly. For us that meant that grilled cheese were familiar and approachable. People know grilled cheese and will come for those. We have seen deep fried Twinkies or deep fried Oreos and those are things people find comfort in. There is a little bit of flare in the deep fried and they will go for it. I feel that an elegant or gourmet grilled cheese is very much those in an interesting way.
Michael: You can really spin a grilled and in the moment it is very excited actucheese in any direction. All you need is ally. I felt like we had a really great time. Michael: Yep, I would do it again if I bread and cheese and whatever the ingredients are you want to make sure it all had the chance. You learn a lot about yourcomes together in a great way. coming up with. Michael: It makes us better as a team. When we went surfing as kids one would paddle out and the other would give the thumbs up while one stayed on the beach to reach 911 [laughing]. Charlie: We had a blast growing up with a lot of laughs. I think what makes us good competitors is that our parents instilled in us a great sense of humor. Michael: Plus both our parents are very hard workers so I think we get that work ethic from them. Bryce, his dad was a professional baseball player, and he is a competitive man. see it all from episode one. JJ: Finally guys, one of you lives in San Francisco and the other in San Diego, how does that work for your business together? Charlie: A majority of our business is remote and allows us to work with clients that way. Michael and I even though we live apart we communicate through multiple platforms at any given hour of the day. We are constantly sharing information. Where technology is today we are able to work that far apart and still feel close. Being on the same time zone really helps as well. Michael: Charlie and I are consultants in the food industry all across the United States and some in Australia. The BITE San Diego outing took three hours and, interestingly, half the group had been on their other tours.
