ania Leles, ex model turned jewellery designer, has beauty in her DNA. While growing up in West Africa (coincidentally, where some of the world's largest diamond and gold mines are located), she knew that a 'big desk job' was not for her. By 24 she was a model, walking for YSL one minute and being photographed by acclaimed fashion photographer Ellen von Unwerth the next. She lived on Madison Avenue and 66th Street, above the Bulgari store, and – like Holly Golightly in Breakfast at Tiffany's – would pop in every day 'just to have a look'. And the rest is history – albeit one with serious studying, hard work and some heavyweight mentors. After Vania graduated, Laurence and Francois Graff – of Graff fame – took her under their wing. “I was always in awe of Graff, as it was the only company with big gem stones that excited me,” she says. (Looking out of the window of Vanleles' New Bond Street salon, I can see the Graff store where Vania worked, and can’t help but feel her ascension from underling to Bond Street big-hitter was written in the stars.) After Graff, Vania worked for De Beers, and then Sotherby’s added further strings to her professional bow. By 2011, she was ready to go it alone and Vanleles was born. Effervescent, warm, and lively, Vania draws you in as quickly as her designs do. “All girls grow up wanting to be a princess, but I wanted to be a butterfly as I loved them so much back then,” she says, referring to the Damien Hirst-style butterfly art, reflecting both her self belief and her love for nature and colour. “When I'm designing, I’m constantly thinking of the woman that will wear it and the story it will tell about her. A woman’s jewellery box represents the milestones in her life; from her ears being pierced and her first watch, to engagement, marriage and babies.” You cannot hide from the emotion that Vanleles pieces evoke – from their beautiful design (it should be noted that Vania only works with stones that have been ethically sourced), to what they will end up meaning to you. Perhaps it’s Vania’s love for people, combined with her skills, that enables her to create detailed works of art, be it a showstopping cuff or a delicate pearl bow earring. Almost like a fortune teller, she is able to read your jewellery desires and deliver accordingly.

on't hold back when investing in a cape – it should be as extravagant as possible. Look for fur trims, embellishment, embroidery, gilded buttons, ribbon detailing… The length is crucial; short, film noir styles are out. Instead, ensure yours rests just above or below the knee – far more flattering. Valentino, Gucci and Fendi make the best (obviously), choosing plush fabrics (velvet, cashmere, satin, skins), as well as Renaissance design references. Always wear with a clutch; bag straps and chains can cause a myriad of problems. You've be warned…

A Meet Andrew Coxon, President of De Beers Institute of Diamonds. What this man doesn't know about diamonds isn't worth knowing…

s a boy Andrew Coxon, the President of De Beers Institute of Diamonds, loved to collect stones on the beach. No surprise then that by 18 he was working for De Beers, scouring the globe for the world's most perfect diamonds. 40 years on, Coxon's enthusiasm for stones (albeit of a very different kind) has not waned. He curated the Millennium Jewel Collection – a group of 11 rare blue diamonds selected to mark the millennium. (One of the largest, at 10 carats, sold for a recordbreaking £22.5million!) He has advised on the lighting of the Crown Jewels, and personally delivered a diamond to a buyer in the South of France via plane, helicopter and yacht. He is De Beers' James Bond! But what is knowledge and experience without passion? As the man himself says, “Diamonds are where science and poetry meet.” What a diamond is (its grading in terms of cut, colour, clarity and carat), and how it looks to the naked eye are important but very different matters. For this reason Coxon founded the De Beers Institute of Diamonds in 2001, ensuring only the most beautiful are selected and sold at De Beers. “When choosing your diamonds, trust your eye; like choosing a partner, what excites you when you look at it is what counts!” In fact, he is so obsessive about getting your choice of diamond right, and enjoying it ever after, that he's created handbag-sized jewellery wipes so you can 'sparkle on the go'. ALBERT'S GANG From the team behind some of London’s coolest nightclubs comes a members' club that’s as glamorous as it is hard to get in to… which can only mean one thing: it’s going to be huge. Meet Carlo Carello, co-founder of Albert’s. Pretty wannabes and B-listers need not apply... By Astrid Joss

T

here is nothing, and I mean nothing, that get’s past Carlo Carello. Sitting in London’s newest members’ club, situated on the Old Brompton Rd in South Kensington (known as Albertopolis during Prince Albert’s era), I await Mr Carello to grace me with his presence. This, I should add, is tongue-incheek because the man himself is incredibly humble, given his high-profile past running Boujis – arguably one of London’s most successful and famed nightclubs – for over 10 years. (For the uninitiated, Boujis hosted the likes of the Lady Gaga, Leonardo DiCaprio, Will Smith, Cara Delevingne and Rihanna on a regular basis.) As I watch him pivot on one foot, pacing back and forth answering questions from his team members, his choreographed routine seems worthy of one that might be seen in his club. Switching between Italian and English, depending on who he's addressing – business partners, English; staff, Italian – I see a man on a mission. Yet all this while he somehow makes me feel I’m a part of the action, glancing often at me, including me in conversations (“What do you think of this cushion?”), taking me on a tour, arm-in-arm. He’s not just good at what he does, he’s a natural. Indeed, it was him that introduced the famous three-minute rule at Boujis – any bottle of Champagne or vodka must be delivered to a table within three minutes. His theory behind this: “Every guest should be treated like a rock star.” “Albert’s is more luxury than a club,” Carello confirms. The interior boasts a goldleaf ceiling and matching speakers, quirky art dotted around, and fabulously bright and bold wallpaper. And in homage to Albert’s royal namesake, the walls of the stairwell leading

nless you’ve been living under a rock for the past year, you’ll have heard about Poldark. The incredibly popular BBC adaptation of the novels by Winston Graham is all anyone’s talking about, and especially one thing in particular – the dashing Ross Poldark, aka Aidan Turner, and his astonishing chest. But to be blinded by his pecs – dreamy as they are – is to miss the real star of the show: Captain Poldark’s wife, Demelza, the fiery former servant who wins his heart, played by 24-year-old Eleanor Tomlinson. Watching her in action on those Cornish cliffs, her long auburn mane blowing in the wind, she seems made for the part. But Eleanor admits she had her work cut out when it came to convincing the casting director. A period drama veteran – she previously starred in The White Queen alongside Max Irons and played Georgiana Darcy in the Pride & Prejudice-inspired BBC drama Death Comes To Pemberley – Eleanor was originally earmarked for the role of Elizabeth, Ross’s fragile former flame. “I’ve played the Elizabeth role before, but I really wanted to challenge myself as an actress – I was at the point where I needed to do something that would break me out of being stereotyped,” says Eleanor. “I read the script and completely fell in love with Demelza; for me, she is the lynch pin of the entire series. But the casting director was adamant I was wrong for the role. I’d been in meetings for the role of Elizabeth, so they’d seen me dressed up to the nines, but for the Demelza audition I borrowed my brother’s clothes, didn’t have any make-up on and didn’t brush my hair for two days. I came into the audition in character, I sat in the waiting room in character. And they really liked it!” The viewers clearly liked it, too – 6.7million of them tuned in for the first episode of series two, at the beginning of September. Eleanor admits she had no idea how huge the show would become when they started filming, but puts its success down to the authenticity of the relationship between Ross and Demelza. “They aren’t perfect and I think that’s what people like about them. They can relate to having an argument in the kitchen, shouting and screaming at the one they love.” Thankfully, there’s no shouting and screaming off set – the whole cast are ‘great mates’ and even go on holiday together. “Heida [Reed], who plays Elizabeth, is Icelandic, so we all went to Iceland with her last year. It was fantastic!” Acting is in the Tomlinson genes – both of Eleanor’s parents, Malcolm Tomlinson and Judith Hibbert, are actors, as is her younger brother, Ross. She was only 11 when she

"My parents said, 'This is a brutal industry – the phone is ringing now but it might not be next week. Take every opportunity when it comes'" made up her mind to pursue it as a career. “I remember going to see my dad on set when he was doing The Bill and [actress] Bernie Nolan asked me whether I wanted to be an actress. I said, ‘YES! This is so much fun’, so I badgered my parents into letting me have a go and they set me up with Dad’s agent.” Roles swiftly followed, first in a small TV film called Falling, alongside Penelope Wilton, and then, when she was 12, a part in the Hollywood hit The Illusionist, playing Jessica Biel’s younger self. Since then she’s never gone more than a few months without an acting job, juggling school and on-set tutoring until she was halfway through her A levels and decided to give up education for good. “My parents were incredibly supportive, but they came under quite a lot of criticism for that,” says Eleanor. “But they said, ‘This is a brutal industry –

the phone is ringing now but it might not be next week. Take every opportunity when it comes.’” It turned out to be the first of many pieces of sound advice; she still turns to her parents for help whenever she’s struggling with a scene. Right now she’s busy filming series 3 of Poldark in Cornwall, waking up at 4.30am and finishing around 8.30pm. She spends two hours in hair and make-up every morning – “which is hilarious, considering it’s a ‘no make-up’ look!” – perfecting Demelza’s incredible red mane, which is a three-quarter wig placed under her own hair. It was Eleanor who decided that Demelza should be a redhead and she loves the look so much she’s decided to keep it off set, too. “It looks best with my skin tone, but also we only have 20 weeks off between each series, so dyeing it

a different colour would just make it fall out. And a bald Demelza wouldn’t work as well…” Her next film is Loving Vincent, which tells the story of Vincent Van Gogh’s life, and is the first-ever film to be completely hand-painted, scene by scene. Out early next year, it stars Douglas Booth, Saoirse Ronan and… Aidan Turner. “We come as a package deal now!” Eleanor laughs. When she’s not working, she heads back up to Derbyshire to spend time with her family and her beloved Border Collie, Burt. She’s not on any form of social media – “I want people to know me for my work, not what I had for breakfast” – and, though she lives in London, she’s happiest when she’s out of the city, riding or taking long walks. “I’m definitely a country girl at heart.” No wonder she looks so at home up on those Cornish cliffs.

BLINIS WITH BEETROOT CREMA, SMOKED SALMON, LEMON AND DILL Makes 30 For the blini 75g cornmeal 75g flour ½ tsp baking powder 1 tsp salt 1 tsp sugar 1 egg, lightly beaten 140ml milk 2 tbsp grapeseed oil, for cooking For the beetroot crema 150g cooked beetroot 150g Greek yoghurt 1 tsp ground coriander 1 tsp salt 1 tbsp lemon juice 200g smoked salmon, cut into small pieces 28g pack of dill, leaves picked

1) Place the blackberries, sugar and sage leaves into a small saucepan over a medium heat with a splash of water. Bring to

the boil then reduce and simmer until the mixture has thickened. 2) Push through a fine mesh sieve, allow to cool. If placing in the fridge, make sure to whisk the mixture before adding it to the glasses. 3) Divide the syrup between the glasses, top with Champagne and garnish with blackberries.

1) In a large bowl, whisk together the cornmeal, flour, baking powder, salt and sugar. 2) In a jug, combine the egg and milk. Gradually pour into the dry ingredients, whisking to combine. Place into a piping bag or jug and allow the mixture to rest for 10 minutes. 3) In a pan over a medium heat, heat one tablespoon of grapeseed oil in a pan. Pipe or pour 4cm rounds of batter into the pan, cooking for 2-3 minutes, flipping halfway until golden. Set aside as you prepare the rest. 4) In a small food processor, blitz the beetroot until a puree has formed. Tip into a bowl and combine with the yoghurt, coriander, salt and lemon juice to taste. 5) To assemble, place a teaspoon amount of the beetroot crema onto the cornmeal blini. Top with a piece of smoked salmon and a couple fronds of dill.

CROSTINI W I T H R I C O T TA , H O N E Y, F I G S Makes 15 200g loaf of sourdough bread 3 tbsp good quality extra virgin olive oil 250g fresh ricotta cheese 1 lemon, zested and juice 10 ripe figs, quartered 3 tbsp good quality blossom honey 28g pack fresh basil, leaves torn Sea salt and black pepper, to taste

1) Preheat the grill on high and line a baking tray with foil. Slice the sourdough into 1.5cm pieces and place on the baking tray. Drizzle with 1 tbsp of oil and season with a bit of salt. Place in the oven for 3-5 minutes until golden and crisp, flipping halfway through. 2) In a small bowl, mix together the ricotta with half the lemon zest and juice. Season with salt and pepper and set aside. 3) Arrange the toasts on a platter, top with the ricotta and gently spread. Arrange a couple of fig pieces on top. Drizzle with honey and remaining oil and sprinkle over basil leaves. Serve immediately.

HERBED FILET MIGNON Serves 6-8 600g piece of centre cut beef tenderloin 2 tbsp olive oil 2 tsp salt 2 tsp black pepper 1 tbsp butter 3 tbsp Dijon mustard 1 garlic clove, finely chopped 50g parsley, finely chopped 50g coriander, finely chopped 1 tbsp rosemary leaves, finely chopped 1 tbsp thyme leaves, finely chopped 1 tbsp olive oil

FRISEE SALAD WITH CRISPY LARDONS, POACHED EGG & CHIVE Serves 6 1 tbsp vinegar 6 eggs, at room temperature 4 tbsp olive oil 150g pancetta, cut into small strips 1 shallot, finely chopped 1 tbsp Dijon mustard 3 tbsp red wine vinegar 1 tsp salt 1 tsp black pepper 2 heads of frisee lettuce, washed and torn into large pieces 50g walnuts, roughly chopped ¼ cup chives, finely chopped

1) In a large sauté pan over a medium heat, add one tablespoon of olive oil and

pancetta. Cook for 4-6 minutes, stirring until crisp and golden. Remove with a slotted spoon and set aside. Remove and discard some of the fat, leaving a little in the pan. 2) In the same pan, add the walnuts and toast over a medium heat for 4 minutes, stirring until golden, remove and set aside. 3) In a small bowl, whisk together the shallot, mustard, red wine vinegar, salt, pepper and remaining olive oil. 4) Place a pot of water with vinegar over a high heat and bring to the boil. Reduce the heat to a simmer and stir with a spoon to create a vortex. Crack

the eggs into small bowls and tip one by one into the middle of the water. Cook for 3-4 minutes then remove with a slotted spoon. 5) In a large bowl, dress the lettuce with half the dressing. Divide among the plates and top with the pancetta and an egg. Drizzle over remaining dressing and garnish with walnuts and chives.

1) Remove the meat from the fridge 30 minutes before you're ready to cook. Preheat the oven to 180˚C. Rub one tablespoon of oil over the beef and season well with salt and pepper. In a large ovenproof pan over a medium heat, add the remaining tablespoon of olive oil and add the beef to the pan, searing all sides for about 8 minutes (2 minutes per side). Add the butter to the pan halfway through, and carefully use a spoon to baste the beef with the butter. 2) Place the beef into the oven and cook for 8-10 minutes until the internal temperature reads 48˚C for medium rare. Remove and allow the beef to rest while you prepare the rub. 3) In a small bowl, combine the garlic and fresh herbs. Add oil to bind together, and season to taste. Place the fresh herb mix on a large baking tray. Brush the mustard over the beef and gently roll the beef into the herb mix. 4) Thinly slice the beef and arrange on a platter.

C H O C O L AT E M O U S S E P O T S W I T H C A R A M E L C R E A M Makes 8-10 250g dark chocolate, roughly chopped 115g unsalted butter 1 tsp sea salt 100g sugar 3 eggs, yolks and whites separated 400ml double cream 50g sugar 60ml double cream 2 tbsp butter, softened 30g 200g crème fraîche

and half the sugar, whisking for 4-6 minutes until pale, light and doubled in volume. Set aside. 3) In a separate bowl, with an electric whisk, whisk the egg whites until frothy then gradually add the sugar until the egg whites are stable and create peaks. 4) Using the electric whisk again, whisk the cream until medium to stiff peaks appear. 5) Add the melted chocolate mixture to the egg yolk mixture, folding gently until combined. Then add the egg white mixture, again folding very gently until combined, careful to not knock out too much air. Finally add the cream and fold through. Divide the mixture into 8-10 ramekins

1) In a heatproof bowl, combine the chocolate and butter. Place over a pan of simmering water and gently stir with a spatula until completely melted. Remove from the heat, stir through the salt and set aside. 2) Meanwhile, with an electric whisk, combine the egg yolks

P O TAT O DAUPHINOISE Serves 6 5 medium-sized floury potatoes 1 tbsp butter 1 tbsp olive oil 1 fennel bulb, finely sliced 2 garlic cloves, crushed 400ml double cream 200ml whole milk Salt and pepper, to taste

1) In a large sauté pan over a medium heat, add the olive oil, along with the sliced fennel. Cook for 15-20 minutes until nicely caramelized and golden. Add the garlic halfway through the cooking time. Season with salt and pepper to taste. 2) Meanwhile, peel and thinly slice the potatoes into rounds. Place into a large bowl and stir through the cream. Season with salt and pepper. 3) Add the cooked fennel to the potato mixture and stir to combine. Tip into an ovenproof baking dish and cook for 30-35 minutes until golden.

or bowls and set in the fridge. 6) While the pots set, place the sugar in a non-stick sauté pan over a medium heat. Swirl the pan as the sugar begins to melt, do not stir or the sugar will crystalise. Once it has completely melted and has turned a nice amber colour, remove from the heat and add the cream. Whisk until the mixture has come together, then whisk in the butter. Tip into a bowl to cool completely at room temperature. 7) In a bowl, mix together the crème fraîche and caramel. Chill until ready to use and allow to come to room temperature before serving dollops on top of the mousse.

F R E N C H F LU T E D A P P L E TA RT Serves 8-10 For the pastry 125g butter, cold and diced 90g icing sugar 140g plain flour 1 tsp salt 3 egg yolks, at room temperature For the filling 5 cooking apples, like Bramley ½ cup caster sugar 1 lemon, juiced 600g apples, peeled, cored and sliced into ½ cm slices 2 tbsp butter 80g sugar 1 tsp ground cinnamon 2 tbsp icing sugar, to garnish

1) To make the pastry, combine the flour, sugar and salt in a large bowl. Add the butter and, using your hands, crumble it into the flour until it resembles pea-sized crumbs. Add the egg yolks and bring the mixture together until it forms a dough. Be careful not to knead it too much. Flatten in to a disc and wrap in cling film. Place in the fridge for at least one hour. 2) Meanwhile, peel and chop the cooking apples. Place in a saucepan over a medium heat and sprinkle over the sugar. Add two tablespoons of water and bring to the boil. Reduce the heat and simmer, stirring

occasionally until the mixture has thickened and the apples are very soft. Gently mash some of the apples with a fork if needed. Chill completely. 3) Preheat the oven to 200˚C. On a lightly floured surface, roll out the pastry until it is ½ cm thick. Gently lift and place into a 20cm fluted tart tin. Trim away the excess and place the tart shell in the fridge for 30 minutes. 4) Prick the base of the shell with a fork. Line with parchment paper and add baking beans. Bake the shell for 18-20 minutes until golden on the edges. Remove from the oven, reduce the heat to 180˚C, remove the

baking beans and paper, place back into the oven and continue to bake for another 6-8 minutes until golden and crisp. Remove and allow to cool slightly. 5) Evenly spread 300g of the apple sauce on to the base of the tart. Arrange the apple slices in a concentric circle beginning from the outside and finishing in the centre. Melt the remaining tablespoon of butter and brush over the apples. Bake in the oven at 180˚C for 30 minutes until golden and softened but not mushy. 6) Allow the tart to cool almost completely before dusting with icing sugar and serving.

I've always had a real passion for food and the hospitality industry – for me, it’s not just about what we put on a plate but about the whole experience. I am often driven by the fear of failure, which really drives me to continue improving and developing what I do.

I also want to help develop the next generation, by inspiring and building a team that creates an innovative and memorable dining experience, which focuses on pure taste and the finest ingredients, alongside maintaining a passionate and inspired working environment for my team.

How would you describe your general approach to food?

How is Coworth Park inspiring as a place for you as a chef?

My mantra towards food has always been: ‘taste is king and never goes out of fashion’. I have always been an advocate for classical cooking; when I say this, people almost see it as a negative, because it’s not on trend. However, for me cooking is about staying true to classical flavour combinations and elevating them with modern techniques and presentation.

It’s hard not to be inspired by the picturesque parkland. We grow many of our own herbs in the gardens and it allows us to bring an essence of the hotel into every dish that we create.

Just 29 and so many achievements…

I started working in the kitchens of luxury establishments when I was 17 years old, so I learnt how to cook at the highest standard from a young age. I have always worked around inspiring people; I was motivated to be successful from an early age. There is still more I aspire to achieve. What sets you apart from other chefs?

It is a place of great luxury and natural beauty. Will we see this in your menu?

Absolutely, there are a number of dishes that use herbs grown on the estate – for example my caviar tart uses corn flowers and marigolds from the meadow. This is pivotal to my food style of quality ingredients, which shine on the plate.

Describe your food in 3 words…

British, seasonal, flavoursome. What was your biggest career move?

When I joined The Ritz, after I graduated from culinary college. This was the grounding to my career, and where I learnt my trade. However, my move to The Devonshire Arms, in Bolton Abbey, was also important as I grew as a chef and developed my own style, which is what I believe enabled us to achieve 4 AA rosettes in 2015.

How do you motivate your huge team?

In what ways is your role different at Coworth Park from anything you’ve done before?

I see my role at Coworth Park as the perfect blend of what I have done in the past; mixing five-star service with an idyllic location in the countryside. This is what makes Coworth Park the perfect place for me, as I love the countryside and we have a beautiful meadow and an amazing estate, which inspires me daily. At the moment, the colour of the autumn leafs is just fantastic. I oversee all of the food operation, which includes Restaurant Coworth Park and The Barn. We aim to produce the highest standards across all the food outlets, but offering our guests different experiences in each. It is the perfect fit for my style of working, and also my style of food. I have the opportunity to create something very special in our food offering that matches our very special hotel. How will you make your mark at Coworth Park?

We have a brigade of 45 chefs at Coworth Park; our team is what makes us. I couldn’t do anything without the people around me. Kitchens are always a pressured environment to work in, however I believe in leading by example, which is why I’m in the kitchen every day with my team – this way I can see and touch everything that goes on. We have to be well organised and run a tight ship with procedures and processes, like all top kitchens. Working like this is what makes producing the highest standards of food possible. How would you sum up the food offering at Coworth Park and how is it different to other luxury country hotels

Seasonal quality ingredients prepared with great attention to detail – a truly memorable epicurean experience. Emerging designers such as Brazilian-born Lily Gabriella turned heads with highlights from her Czarina and Damali collections, and Sarah Ho London presented a stunning selection, which sat alongside established Italian jewellery houses Roberto Coin and Chimento. No one does romance better than the Italians and whatever the occasion, it’s extremely hard to better Lake Como as a destination. Recently I have discovered the Grand Hotel Tremezzo, which is a shocking confession, as it was the very first purpose built hotel on the lake and dates back to 1910! The hotel is located at the very heart of Lake Como, on the Azaleas Riviera. Here classical elements meet the comforts of modernity and the personal touches from the family who own it. In front of the hotel is a floating swimming pool, which rests on the lake itself. There are also breathtaking views of the lake, the green hills that run down to it and of Bellagio, which is easily accessible by the hotel’s vintage boat. Behind the hotel there are thoughtfully planted gardens, fronds of palm trees interlaced with pine, another swimming pool and a tennis court. If you have the budget, the junior suites are highly recommended with their wonderful views and terraces on which you’ll discover a private Jacuzzi. The restaurants serve local produce and you’ll be spoilt for choice; this is definitely not a place to come if you’re watching your weight – the pastry chef is a sensation! Then there is also the award-winning spa, which is housed in a 17th-century villa. The hotel may be steeped in history but with such friendly service and passionate attention to details, it also has a very long future ahead of it.

The Ritz, London, UK

The Ritz is a star in its own right; it has long been the hotel of preference for leaders of state and royalty, and is so conveniently close to Clarence House and Buckingham Palace, I often wonder if there may even be secret passages running between them, such is the history of the hotel. Fantasy aside, it has to be one of the most beautiful jewel boxes of a hotel in the world. There is something very feminine about the soft pink touches, the gold leaf that is so much in abundance and the elegant Rs adorning the prettiest waste paper bins I’ve ever seen. It is also quintessentially British; tea is served in pretty flowery teapots with matching cups and saucers, and always accompanied by the most mouth-wateringly delicious biscuits, while the restaurant has just been awarded its first Michelin star (chef John Williams OBE at its helm). It’s the timelessness of the hotel that appeals to me, the steady pace of an institution that has seen its fair share of historical events and lived to tell the tale.

For those of us without our own English country house, the next best thing is a traditional country hotel, and it’s hard to find somewhere more steeped in decadence than Cliveden. The hotel is a Grade-I stately home with 376 acres of National Trust grounds but despite this, it manages not to be stuffy; the service is very friendly and efficient. Each one of the rooms is named after the personalities who have been part of the hotel's fabulous history (which is vast, although possibly the most prominent is the Profumo scandal of 1961). For magnificent views, book into The Lady Astor Suite. The restaurant and bar are the perfect sets for intrigue with clusters of tables appointed with conspiratorial-seeming chairs and the views over the grounds are vast and impressive. This is a house that has come through its chequered history but has naughtiness in its DNA.

Mandarin Oriental Munich, Munich, Germany

If you want to experience the ultimate Christmas Market, Munich is the place to go. You'll find old-fashioned stalls selling wares from glass baubles to hand-made nutcrackers and traditional biscuits, all best experienced while enjoying a warming mug of glühwein. My favourite hotel in Munich is the Mandarin Oriental, which is conveniently based in the picturesque Old Town, and has recently been refurbished. Here Neo-Biedermeier design is combined with Asian influences such as the Japanese-Peruvian cuisine of chef Nobu Matsuhisa in his new restaurant within the hotel. The Mandarin Oriental really stands out for its service and its friendly acceptance of children. Children are greeted with a welcome gift, and mini slippers and gowns can be provided for them; there are also children’s menus and complimentary bikes and hats should they need some exercise after indulging in all the delicious local cake. Parents will be happy to hear that baby-sitting can be arranged within 24 hours, should they wish to explore the city without the kids, or simply make use of the Turkish steam bath and Finnish sauna at the hotel spa.

Tucked away in a protected nature reserve and a few minutes' walk from a perfect private beach is one of the world’s most tranquil hotels. Amanyara is a haven for the super sophisticated as well as super stars; Victoria’s Secret shoots its swimwear here, and countless celebrities treat it as their Caribbean home. The hotel’s allure is the completely understated luxury of it all. The architecture is perfectly complimented by spectacular lighting and the breathtaking height of the structures adds light and air, while the food and cocktails are delicious. A note of warning, the rum punch is far too easy to drink; it's quite possible to go from “just one” sun-downer, watching the most impossible seascape (you can actually see the curvature of the earth the expanse is so vast), to staying in the very same seats for the rest of the evening and enjoying the divine bar snacks (the sushi is a must). The spa is a perfect sanctuary after a day in the sun and daily complimentary yoga and pilates classes will keep you in shape should you over indulge on that rum punch!

Flowers, flowers, flowers! You can’t have enough flowers at an event. Be brave with your colour and arrangements. It doesn’t always have to be matchy-matchy, so mix it up a bit. Enormous hydrangeas work with tight roses, peonies and foxgloves. You name it. Nature knows no boundaries. I particularly loved it when By Appointment Only Design filled tiny shoes with an array of pastel flowers at Annabel’s or when they wrapped blue and cream hydrangeas around pillars at our home. They are geniuses!

Start the evening on the right note; people so appreciate a good cocktail! Just make sure they are not too strong. I’m a fan of a White Lady (1/3 Cointreau, 1/3 gin, 1/3 fresh lemon juice) or a Bellini, made with Prosecco and fresh peach juice. Delicious!

Your menu is important. Don’t overcomplicate things. It’s better to have a good, simple menu as opposed to a mediocre fussy foam-y mess. Canapés should be generous to make sure people don’t peak too early. A hungry guest is never a good thing.

Ask a good friend to be your wingman as the party approaches. It’s useful to have somebody there on the evening who has been involved in the plans throughout to help with any last-minute placement disasters, outfit malfunctions or organisational catastrophe. I asked my friend Olivia Buckingham to do this for my 30th, and she was totally indispensable. Especially when the stuffed giraffe arrived and calmly dealt with the small issue of it not fitting in the marquee. I suppose above all he/she just keeps you at your calmest.

Lastly...

List the things and people you need photographing before the evening. It’s the worst when you’ve put all that effort in to the organising the event and then it’s over without a trace of evidence. However big or small your party, you want to remember it. You don’t even need a professional photographer. I often ask my sister, Doll, to snap away on her phone at our parties. She doesn’t miss a thing, and one is so grateful afterwards.

Enjoy yourself and RELAX. I know it sounds obvious but your guests can feel it if you’re stressed and running around like a headless chicken. If you’re nervous, a drink will calm you down but also remember the night will be over before you know it, and you don’t want all that hard work and months of planning to be wasted. When I was younger and planning my wedding, I was less relaxed about the little mishaps that happened on the day. I remember minding about what the table number signs looked like. Really!!??? Crazy. Let it go. Just relax and dance the night away.

The garden of

BOTTEGA Bottega Veneta’s Tomas Maier and his band of elite noses have dreamed up an exquisite olfactory experience with the brand’s latest perfume collection of six stunning fragrances, Parco Palladiano. By Astrid Joss

Y

es, I felt very ‘fashion’ darling, strolling through the Bottega headquarters in Vicenza, northeast Italy. Did you know that the Bottega brand isn’t only frightfully fabulous but also, well, really quite pristine? Villa Schroeder-Da Porto – the grand 18th-century palazzo that houses the brand’s workshops – has perfect white floors and walls, as well as immaculately turned out employees, alongside the skilled artisans making those knot clutches and bags we all covet. (I also want it noted that they are all dressed in the most stylish hand-stitched cottons aprons that I have ever seen!) Cue the man behind all this perfection, creative director Tomas Maier. Like so many at the forefront of his industry, he is a genius. A genius with an absolute adoration for architecture, which infiltrates the brand at every level, from its leather goods right through to its latest perfume collection, Parco Palladiano. Thanks to Maier’s creative vision, combined with his blueprint precision, the collection is a perfume connoisseur’s dream. Employing some of the best

perfumers in the land – Daniela Andrier, Michel Almairac, and Alexis Dadier – each scent wants for nothing. Andrier (the German nose behind Gucci Rush, Gucci Envy, Yves Saint Laurent Rive Gauche, Marni Marni, Miu Miu, pretty much every scent Prada has ever launched, and Bottega Veneta Knot), tells me the joy of working for Maier was the fantastic supply of rare and luxury ingredients at her disposal. Dadier (the French nose behind Givenchy’s Ambre Tigre and Thierry Mulgler’s Mirror Mirror), says Maier’s “clear and definite vision of the collection” gave an inspired strength during its creation. What Maier, ultimately, requested from his A-team was six scents, rousing the grandeur and beauty of the Palladian gardens of the Veneto region, each one created to capture the ambience and sensations that this Italian paradise would evoke at different moments of the day. Maier requested that all three perfumers pitch for each of the six fragrances; he then chose his favourite, assigning the best person to each scent. So, what inventive and evocative fragrances did the best noses in the business come up with? Turn the page and step into the Bottega fantasy for yourself…

“I don’t think magnolia has ever been dealt with in such intensity, so I’m extremely proud of this,” declares perfumer Michel Almairac. A rather punchy statement from the French man who created some of the most famous fragrances to date for brands such as Acqua di Parma, Giorgio Armani, Burberry and Chloé. “It is such a delicate flower – the moment you touch it, it turns black, oxidising very quickly in the sun and fading away.” For this reason, he explains, it is best captured first thing in the morning. Almairac goes on to tell me that its deeply sensitive nature means its essence cannot be extracted, so must be re-created through a blend of accords. He chose the woodiness of bark with the dewy wetness of the sweet petals and leathery leaves, resulting in a truly desirable and floral feminine scent, doing this magnificent flower justice.

It is now late morning, the sun is high in the sky, bright and light. The cypress tree, symbolic of the rolling Italian countryside, stands proud and tall in the gardens. “I felt this was an interesting plant to make into a fragrance, as there is a very close link between the tree and Palladium architecture. The shape is similar to the pillars of the villas,” says Alexis Dadier, who was the force behind fragrances II and IV of the collection. This bright, green scent includes juniper berries and sharp pink pepper to reinforce its freshness. “It’s the kind of moment, mid-morning, when you sit down to enjoy your espresso, full of energy for what the day promises,” says Dadier.

Daniela Andrier tells me of an imaginary early afternoon promenade, where you smell the scent of an over-ripe pear fallen from the tree into the herb garden, and crushed underfoot. Together we sit, we smell, we contemplate, there is silence… and calm. The cool mint combined with the sweetness of fruits signals a kind of melancholic childhood memory of late summer, where everything is coming to an end and autumn is on the horizon. “We don’t live in these places any more,” she sighs, referring to the Palladian gardens she dreams this scent is from, “but we can imagine them alive.”

“It’s the end of the day and there is a rich and heady scent coming from clouds of azalea, mixed in with the earthy warmth rising from the ground. At this time of day, the smell of all the garden’s flowers combine to create a scent so fragrant it is almost overwhelming,” says Alexis Dadier. The azalea is rarely used in perfumery but as Dadier says, “It is more of an impressionist vision, an experience, and a moment in time,” that he has created. Combined with vanilla and chestnut, it is creamy and velvety, reminiscent of the sweet warmth of summer.

Andrier returns to take us for an afternoon walk through an aromatic herb garden, filled with laurel, rosemary and sage. “I don’t like doing clichéd fragrances,” she explains, saying that when you unite trends in scents, people follow it like bees to honey, because they are attracted to them based on familiarity. Instead, she wanted to create something highlighting both the garden’s elegance and imperfections, bringing out the emotions of this “majestic place”. The warm woody accords blended with the cool, crisp herbs do just this.

It’s now the end of the day. The most beautiful rose is picked from the garden and taken inside to adorn the house, ready for the evening – allowing the garden to still take centre stage. Here Almairac collaborated with perfumer Mylène Alran to produce the most romantic of all the fragrances. “The rose is sun drenched, having soaked up the warm golden light all day,” says Alran, which gives it its beauty and sets it apart from other rose scents. I rather suspect (and hope) that my fashionable olfactory adventure has achieved exactly what the brilliant Mr Maier wished for – leaving me both enlightened and educated on the true beauty behind the brand. More over, Parco Palladiano is a clever, charming, yet subtle reflection of Bottega’s incredible legacy, which lies not just in the fabulous shop fronts we see dotted around the world’s most fashionable cities, but deep in the heart of the beautiful Italian countryside.

ARTIST Behold the young Saudi designer who was brave enough to venture beyond the safe realms of fashion and in to the sublime. Astrid Joss meets Ashi, and finds herself utterly charmed…

A

fter five attempts, I finally get Mr Ashi on the telephone. The man behind the eponymous label Ashi Studio is a man in demand. And once I get him on the other end of the line, I don't want to hang up. He is an absolute delight. Shy, private, yet so funny and full of thought – like his designs – he is not easily passed by. Already an acclaimed couturier in his thirties, with a staff of 120 in his wake, like any success story, it begs the question, how much luck had a hand in it? Following our chat, it would seem none. With a quiet and calm self belief, Ashi has managed to turn the heads of the biggest names in the industry, including Anna Wintour and Franca Sozzani, Editor-in-Chief of Italian Vogue, with only his raw talent to thank and some (very) heavy workloads. We’re talking 24/7, no-sleep shifts. So, did he always know this was his destiny? "At 11 years old I was secretly asking people to buy Vogue from abroad for me, and skipping school to watch fashion shows on TV," Ashi confesses. A brave move for a young boy from Saudi Arabia who knew that the concept of being a fashion designer was 'taboo'. "I identified with the creations of McQueen, Lacroix and Galliano, and was soon buying fabric and cutting and wearing my own designs. I was a mini shop-a-holic! I was always longing for that next must-have item down at the mall!" Fast forward to his twenties, with a stint at fashion school in Milan and Paris behind him; Ashi graduated from NYU with a marketing degree, then obtained an honours degree from the prestigious ESMOD

"I saw Eva Longoria at the Grammys in one of my dresses and I thought, 'OK, wow, This is good!'" School of Fashion in Beirut. After this, a job at Elie Saab, first place on Project Runway Middle East, and an internship at Givenchy Paris under Riccardo Tisci – and this was just the beginning! With a burning passion, he went out on his own at 25, turning his house into an atelier. He put up a picture on Facebook of one of his designs and everything went bang. Hollywood stylists got in touch, as did Middle Eastern princesses who wanted to dress in Ashi couture. "I was watching the Grammys one day and I saw Eva Longoria wearing one my dresses, and I thought, 'OK, wow. This is good!'" Yet Ashi is nothing but humble in the face of his own fashion fairytale. "The turning point for me was when Franca Sozzani called me and requested I go to Milan to see her. A plane ticket was sent, and that was it." Sozzani took him under her wing, introducing him to fashion royalty, and the seed was sown. "I got a big push of encouragement from all of them." Yet it was bitter-sweet, as back in Beirut they were not ready for his rather particular aesthetic. Though Beirut was fast becoming the Middle East’s fashion

capital, Ashi's was a revolution in terms of style and branding, and anything beyond the norm was incomprehensible. "Those in the know understood and appreciated my work and vision, but to those who didn’t… what I did was almost a mystery and I had to push against this." While many would want to run and hide, Ashi ran towards the fight. As he says, in fashion ‘one has to take risks’ and for Mr Ashi his trade is pure art, not to be tampered with. Architectural and theatrical, Ashi’s flamboyant style is most certainly an art form, reminding me of those fabulous outfits that were worn in the Tudor and Elizabethan times when people really knew how to dress. He is known for being fond of white, as it shows up the beautiful embroidery he uses, though in recent collections he has leaned more towards taupes and faint blacks, "as at the end of the day, I’m not a bridal designer". Ironically, it’s his signature stiff structure that he was criticised for in the early days that give his clientele the red-carpet wow factor. "One wrinkle and I can’t stand it!" he muses, "but

it's effective – and I have guests return from weddings saying, 'The wedding was all about me, not the bride!'" Most charmingly he hangs onto his privacy with the same vigour that others chase fame. Indeed, this is the first time he’s agreed to release his own portrait. As he explains, he was private when he was young, chasing a dream that he never envisaged would take him this far, why should anything change? His dresses are the ones in the limelight; the stars of the Ashi movie. They can remain that way. Again he references a part of fashion he feels at odds with – the fact that globalisation and mass media has lead to a toxic obsession with fame. "I admire those old-school couturiers like Christian Dior. In the early days, the focus was on their creations, not the person behind it." One can only agree with his sentiments. The Vidal family – of perfume brand The Merchant of Venice – has created a stunning new fragrance that's as alluring as it is rich in history. Astrid Joss travelled to Shakespeare's Italy and discovered that, thanks to the Vidal heritage, a rose by any other name couldn’t possibly smell as sweet…

enice: exquisite, glorious, enchanting, sensational… and 20 million tourists a year’s idea of perfection. Today, I happen to be one of them. For me, Venice is the ultimate culture fix, as well as the only place in the world where you can feel full of romance without the need of another present. A virtual ‘outdoor museum’ appearing to be miraculously built on water, held together by a labyrinth of canals, where roads and cars are dismissed for gondolas, and you’re always only a bridge away from a stunning Gothic square… a church, a wine bar, a museum, a boutique, or something reminiscent of a scene from Shakespeare. The great American playwright Truman Capote wasn’t wrong when he described it like ‘eating an entire box of chocolate liqueurs all in one go’. It’s deliciously addictive. Would I now shock you to declare that I don't believe that this is the city's true allure? So much

more than beautiful architecture, it dazzles thanks to its history, namely the Venetians themselves. These are the people who designed it in all its breath-taking glory, and then built it from scratch. During the Middle Ages, while the Florentines where known as the great thinkers of Europe, the Venetians were heralded as the ‘doers’. They made things happen, like Venice, with a fantastic supply of creativity and wealth at their disposal. Having been allowed to create its own social and political institutions – making it the most liberal state in Europe – artists and art forms flourished. Indeed, it was here that the art of perfumery was born in Europe. Venetians had an insatiable appetite for all things relating to their appearance; combine this with the fact that their maritime trade routes extended as far as Asia and Africa – enabling locals to acquire exotic raw materials – and the love story between Venetians and beauty products began. No surprise that by the 1500s, the city was the central force in perfumery throughout the world, and the main distributer of perfumes, soaps and rouge.

Fast forward to late July of this year: the sun is setting on the Jewish quarter and I’m clip-clopping around in some very high Jimmy Choos through the back streets with friends on my way to dinner. Just as we think we’re lost, a tall, elegant man appears from nowhere. And cue my real-life Shakespearean moment. It’s the legendary Mr Vidal, whose family has been involved in perfumery for over a century in Venice. I’m introduced by mutual friends and that’s it! It suddenly hits me. He is part of Venice’s original crew! His family basically built Venice. They virtually brought and developed perfume to Europe. He is Venetian royalty. So I do my best to keep calm and carry on clip-clopping along as he

very knowingly guides us to our destination, without breaking sweat. Seeing as the history of perfume was conceived in Venice, it’s rather fortunate for all the perfume lovers out there that the Vidal family has dug deep into its heritage, and recognised the need for a cultural luxury brand to reflect the uniqueness of this spellbinding place, delivering to us The Merchant of Venice. Seductive, fresh and beautiful, nothing expresses the refinement of this more than the brand's Murano Collection, including six different eau de parfums, whose raw ingredients include those that the merchants who sailed the ‘Mude’ trade routes to the Orient and back through Mediterranean seas expertly selected themselves, magically taking us back to the Renaissance era in a heartbeat. My favourite is the new and fabulous Rosa Moceniga fragrance, named after Lucia Mocenigo. The story of its origin is nothing short of romantic – just like the great city itself. Lucia was a Venetian noble lady, who resided in Paris in 1813 to oversee her son’s French education. While there she befriended Joséphine Bonaparte, Napoleon’s wife and a renowned rose ‘obsessive’. Joséphine gifted Lucia with a rare Chinese rose, which eventually made its way back

to Venice to grow and flourish, despite some surrounding drama. (Is it possible for a rose to create drama? Well, yes, this is Italy after all!) In fact, the Mocenigo rose has an entire book written about it, Chasing The Rose by Andrea di Robilant – and now, thanks to The Merchant of Venice, a fragrance too. The sweet-scented fruity aroma of the rose included in the scent – along with fresh Sicilian lime, blackcurrant leaves, magnolia, lotus flower, musk, cedar wood, vanilla and amber crystal – gives a lavish, bright and rich rose essence. As custodians of the history of perfumery, the Vidal family see the The Merchant of Venice as almost a cultural responsibility, merging its rich, colourful and intense Venetian history into a modern day olfactory affair. If this wasn’t enough, they took a further jump by restoring the Mocenigo Palace (Lucia’s family home), and simultaneously launching it as Venice’s Perfume Museum. A multi-sensory experience, visitors can view original instruments, texts, and a curious collection of phials and bottles, including objects dating back 2000 BC. But why all the fuss, at the end of the day, about a fragrance, a brand and even a rose? Why do we all get so excited about scent? Because as anyone will tell you, it makes one ‘feel’, and in feeling, we think. Imagine this delicate little white flower has been swept off to a masked ball, her virginal dress peeled off her shoulders, then naively led into a hedonistic honey pot of writhing bodies and aphrodisiac delicacies. Tempting vanilla, plumes of smoky tea, melting tonka bean and glowing, throbbing amber add an addictive and inviting backdrop that isn’t just kissable, it’s almost edible.

When founder Linda Pilkington was invited to create a bespoke perfume for the luxury department store Selfridges, her goal was to use only her favourite, most exquisite, decadent and wildly expensive ingredients. The result is a rich and spicy gender-free elixir including cardamom, freesia and jasmine, with a rich base of sensual ambergris, sandalwood and cedar wood. This long-lasting composition smells wanton, precious and private, like supple evening skin under a couture gown.

BURN, BABY, BURN Late-night parties, exotic travels, stately homes – scent has the power to transform and transport to evocative realms. And the most indulgent way to imbue scent on cold winter nights is via candlelight. By Jessica Diner

N

ot all of us are so fortunate as to have a crackling log fire for that cosy warmth and ambience we all crave come the colder months. And while the smell of a log hearth is more than pleasing to some, the moodenhancing qualities of candlelight combined with a fine fragrance is just as, if not more, enchanting. It was this mood that the Creative Director of By Appointment Only Perfume, Javier Salvador, set out to capture when he crafted his own collection of candles and home fragrances. A range that would not only provide beautiful ambience, but also fragrances that would jolt the senses, and transport you to another place and time. “As event stylists and florists [By Appointment Only Design], we are conscious of how a space should be scented. This collection was inspired by rooms we have worked in, and the memories evoked in them, as well as our love and passion for flowers,” he explains. The result is nine exquisite candles (£55 each) encased in Italian crystal whiskey glasses, alongside perfume oil diffusers in crystal decanters (£150 for 700ml).

Highlights among these scented showpieces include Great Hall, a smoky, woody scent inspired by the smoldering fire at Great Fosters, an Elizabethan hotel where Javier and the team helped plan a wedding; and Cutting Room, an elegant fragrance filled with gardenia, tuberose and green leaf, evoking the big floral bouquets you smell in the cutting rooms of stately homes. Panelled Hall is a musky scent brightened with lemon and violets, that is nostalgic of long winding halls of great houses. While Drawing Room was inspired by a wedding at Stapleford Park for Middle Eastern clients, where the roses from the arrangements infused with the oud worn by guests. Javier’s personal favourites? “Powder Room – it evokes a special memory for me; it reminds me of my childhood, sitting under my mother’s hairdryer – the old-fashioned kind you used to see in salons – and watching her get ready to go out to a dinner party. I'm also very fond of The Snug and Prayer Room; darker, moodier scents have their place, and these two wrap around you like a hug!” he enthuses. He cycles to work with Buster in tow, because 4x4s are ‘such a middle-class cliche’. What’s that? Yes, he does live in a £2million house. Yes, his girls do attend JAGs. And, yes, he does have his organic veg delivered. What’s your point?

Chiswick? Don’t be deceived, you are not in the countryside; tweed and flat caps are de rigueur in this posh west London suburb – and red chinos are as ubiquitous as the paunchy middleaged men wearing them. W4 humans like their dogs the way they like their cars: high end, high maintenance and high off the ground… like the Range Rover from whence its ginormous head is hanging, the Great Dane is the ultimate suburban status symbol. Who needs windscreen wipers when you have that tongue?

Fulham? Head-turning, pretty and a bit of a show-off, Poodles and their posers, er, owners, can be found peacock-ing up and down the Kings Rd, skinny flat white mocha frappa latte in hand. Wearing a scarf so generous, she can barely peek over the top in her Ray-Ban Gatsbys, Fulham human is perma-tanned (St Moritz and St Tropez – the destinations, darling, not the faux tans), and she is always up for a boozy night out at Embargos. Rah! When you’ve had a long day at the dog parlour, this pair are guaranteed to make you laugh… even if it’s at them and not with them.

Notting Hill? Sleek, shiny and a terrifying size zero, the Notting Hill human loves to co-ord with her Italian Greyhound. Trying hard not to look too privileged, she dresses casually in denim and cashmere but the delicate diamond Chaumet necklace gives her away. With perfectly sun-kissed hair, she and her sandy-coloured four-legged cohort have a spring in their step (well, you would too if your daddy had just bought you and your work-shy siblings a five-storey Stucco).

Shoreditch? Unlike its ultra-cool, beardy human, the pug is the roly-poly everyman of the dog world. With well developed muscles and a penchant for neckerchiefs (a style adopted from his trendy two-legged pal), pugs are the straightman-friendly armpit-dwelling dog that can make even the coolest hipster stop in the street to coo. Everything this chap does makes you say, ‘aah, classic pug!’ – even his screwed up little face is, like, hilares! (Mind you, with his bottom and nose in such close proximity, that offended expression is totally understandable…)

There’s no place quite like it As David Downton, Claridge’s esteemed Artist in Residence famously said, "Claridge’s is Claridge’s, and everywhere else is everywhere else…" And for that very reason, anyone who's anyone wants to stay here. In 1854, Mr and Mrs William Claridge bought the building in the heart of Mayfair. In 1893, new owner Richard d’Oyly Carte (owner of the Savoy) commissioned C.W Stephens to redesign it entirely, and he erected the elegant seven-storey hotel we know and love today. In 1860, Queen Victoria

visited the hotel to see her friend Empress Eugenie of France, and so began the start of its impeccable pedigree of guests. If the walls of Claridge’s could speak, they'd have some pretty amazing stories to tell: from Winston Churchill declaring Suite 212 Yugoslavian territory for a day on the 17th July, 1945, so that the Crown Prince Alexander II could be born on his own country's soil, to Kate Moss’s 30th birthday in the penthouse suite! There is no doubt that its art deco interiors – designed by Oswald Milne in the late 1920s – give the hotel its distinct and luxurious feel. This unapologetically opulent Knightsbridge hotel has cornered the luxury hotel market for pure Italian glamour and style.
