An Interview with M iss M issou r i 2018

KatelynLewis "Service is my favorite point of the crown" What a pleasure it was getting to interview Miss America 2018 Katelyn Lewis and getting to know her. Katelyn is absolutely beautiful inside and out. When you meet Katelyn you will automatically feel like you have known her your whole life. Katelyn has empowered so many people throughout her reign as Miss Missouri. She is a light for so many generations and empowers them to be their best. It is a pleasure to introduce Miss Missouri 2018 Katelyn Lewis. M issou r i M agazin e: Please tell us about yourself.

Kat elyn: I am 23 years old, born and raised in Lake St. Louis, Missouri. My dad is a Captain for American Airlines and my mom is a former TWA flight attendant. I have two younger siblings, Karlee age 20 and Cade age 16. I am currently a senior at Missouri Baptist University majoring in Accounting with a minor in Business.

M issou r i M agazin e: What do you like to do in your free time? Kat elyn: In my free time I love to catch up on Greys Anatomy and relax with family and friends. $5 movie Tuesday is just about my favorite thing Before I became Miss Missouri I went to a movie every Tuesday and I cannot wait to get back into that! I also love Hot Yoga it is a hobby I have actually picked up this year as Miss Missouri and I plan to keep it in my life.

M issou r i M agazin e: What?s next for you, where would you like to go in your career? Kat elyn: I will be graduating this spring with an accounting degree from Missouri Baptist University. After passing the CPA I think I would really enjoy a career in Forensic Accounting.

M issou r i M agazin e: What inspired you to compete in your first pageant?


Kat elyn : One of my greatest passions is singing and I love any opportunity to perform. A family friend knew this and suggested I compete in the Miss Missouri Organization because talent is one phase of the competition. With her help, I competed and won my first title as Miss Mid Missouri.

M issou r i M agazin e: Tell us about the Miss Missouri competition. Kat elyn : The Miss Missouri Competition is designed to showcase a young woman?s

M issou r i M agazin e: What evening gown did you choose for the Miss Missouri competition? Kat elyn: I chose a navy strapless evening gown for the Miss Missouri competition. The bottom of my dress was covered in feathers and created movement as I walked the stage.

best self. The Miss America Mission statement states the point of the organization is to: Prepare great women for the world and Prepare the world for great women. This is accomplished by a series of phases of competition. The phases include a 10-minute private interview with the judges, a 1:30 talent of the candidates choice, an evening wear showcase, and an onstage interview.

M issou r i M agazin e: What was your interview question for Miss Missouri? Kat leyn: My favorite interview question that I was asked by the judges was ? What really is the job of Miss Missouri? no one had asked me that questions before and I have really stayed true to my answer all year. I said the job of Miss Missouri was to empower oneself so that you can empower all of those around you. Being a light in someone?s life is so important to me. I was really glad the judges got to see the real Katelyn through that answer.

M issou r i M agazin e: Where is your favorite place in Missouri? Kat elyn : This is a tough question because our state has so many beautiful and unique places. Some of my favorite spots include: Johnson?s Shut Ins State Park in Reynolds County, the Current River in the Ozarks and

M issou r i M agzin e: What does it mean to you to represent Miss Missouri? Kat elyn: Representing Missouri has been a dream come true and I feel very blessed and grateful for the opportunity. Some


days I still wake up shocked that I get to live my dream.

M issou r i M agazin e: How has participating in Miss Missouri changed your life? Kat elyn : As Miss Missouri I have been given so many wonderful opportunities to perform and present my platform throughout our state, which has allowed me to meet so many amazing people. I have also seen first hand the great work that Children?s Miracle Network, our official platform partner, does in local hospitals. Being a small part of this and the sweet friendships that I have made with CMN patients and their families are memories that I will forever cherish.

M issou r i M agazin e: What appearances did you make during your reign as Miss Missouri? Kat elyn : To date, I have traveled over 42,000 miles across Missouri presenting my platform, Your Digital Compass, to students elementary age to college level. I have attended numerous charity events such as Cowboys for Kiddos, Mexico Toy Drive, CMN Golf Tournament, Miracle Treat Day, Cardinal Glennon, Cooking with Crowns, and Albert Pujois All-Star Foundation. I really enjoyed performing in Branson for the Yakov Smirnoff show, Branson Magic Show and I recently portrayed a Bond girl while performing the song, Skyfall, for Wings of Hope Trivia Night.

M issou r i M agazin e: Tell us about your road to Miss Missouri? Kat elyn : It took my 4 years to achieve the title of Miss Missouri. My first year competing I was Miss Mid-Missouri. I actually placed top 10 at Miss Missouri and I won the new comer award. I was so thankful for the memories I was able to make during Miss Missouri week, that I had to stay



involved in this organization. My second year competing I won the local title of Miss Heartland. I actually did not make it into top 10 that year at Miss Missouri. I was very discouraged but decided I would try just one more time. My third year, I attended Miss Missouri as Miss Heart of the Ozarks. That year was a dream come true for me. I had a wonderful roommate and I loved every second of my time at Miss Missouri. I did place in top 10 and I was certain I wanted to try again, just one more time before I graduated from college. This final time I competed as Miss Fleur de Lis and I finally won the title of Miss Missouri. I was full of shock and excitement with this amazing opportunity and I will never forget this year.

Kat elyn : When I stand before God at the end of my life, I would hope that I would not have a single bit of talent left and could say, I used everything you gave me. M issou r i M agazin e: What was the most challenging aspect of the Miss Missouri? Kat elyn : The title of Miss Missouri is a full-time job. I an under a contract this year and I am expected to be on the job 24/7. That is exhausting, but I only get the opportunity for one year, so I have to give it my all.

M issou r i M agazin e: What does your crown mean to you? Kat elyn : The four points of the Miss Missouri crown stands for success, scholarship, service and style. Service is my favorite point of the crown. I have developed a platform, Your Digital Compass, that I am have been able to present to youth all over the state. Kat elyn : My day never looks the same. I am always jumping from school to school giving presentations or at different events in the evening. However, no matter what my day looks like I always find time for the gym or hot yoga.

M issou r i M agazin e: What kind of legacy would you like to leave behind? Kat elyn : As Miss Missouri, I have tried to engage each day with passion and an


enthusiasm that rubs off on all those around me. I am genuinely interested in serving others and it gives me pleasure seeing others develop their own passions and abilities. There is a wise saying, ?People won?t remember what your said or did, they will remember how you made them feel.?

M issou r i M agazin e: Tell us about your year as Miss Missouri. What are some of your highlights? Kat elyn: I really enjoyed performing in Branson for the Yakov Smirnoff show and participating in the Branson Magic Show. Recently, I portrayed a Bond girl while performing the song, Skyfall, for Wings of Hope Trivia Night, which was a blast.

M issou r i M agazin e: What advice can you give teens who are intimidated by all the glam on social media and struggle with self confidence. Kat elyn: Life is more than just what?s on a screen. So many young people are living for the amount of likes they receive online, but life is so much more than that.

Faces of Missouri Interview with Tiffany Ash| Gold + Gray

Gold + Gray boutique carries a unique and trendy line of women's clothing located at the Lake of the Ozarks. Her story will capture your heart. It is my pleasure to introduce to you, Tiffany Ash, the heart and face behind Gold + Gray. M issou r i M agazin e: Tell us a little bit about you and how you opened your business Gold + Gray. Tif f an y Ash : This is my first year in business and getting to this point in my life has been quite a journey. Let me start at the beginning (well sort of). For 10 years I was married to my high school sweetheart. We had 2 beautiful and amazing children together and were planning our futures (in our early 30?s) when my husband had a tragic accident at work. He fell 3 stories on a jobsite and did not survive the severe trauma to his brain. At 30 years old, I found myself picking up the pieces of a shattered life and a shattered heart and trying to make sense of the chaos that had broken my family. My children were 4 and 7 at the time and for the next several years we endured a deep grieving journey as we battled our way towards healing. It was hard and humbling work and one that often brought me to my knees asking God all those hard questions about WHY, and WHERE WERE YOU, and HOW DO I MOVE FORWARD? But, we did move forward? one baby step at a time. I completed a masters degree in counseling and became a school counselor at a local high school. Counseling teenagers was one of the most rewarding and meaningful things I?ve ever done career wise, but also extremely challenging and trying at times. I loved working with teenagers and often felt like I learned more from them than they did from me. I was so blessed to get to watch them grow and mature, stand alongside them as they wrestled with struggles and hard life questions, and to be inspired daily by their creativity, passion for life, and pure energy! But after 8 years of working so hard in this career, I began to long for more autonomy in my life


and family. I desired to have more ownership in how I spent my time, how much money I earned, and what my message could be to young women. I have always loved fashion (side note : my students even voted me best dressed on several occasions). Making the decision to say good bye to them was one that was heart wrenching? but the super cool thing is how they all cheered me on for pursuing my dream and still do to this day! Thus, Gold+Gray was born and I said good-bye to working in public education and hello to creating a space and place I felt did not exist at the Lake of the Ozarks. In part because of the lessons I learned as a result of losing my husband, Jason, I was willing to take a big risk and pursue a dream that kept nudging at my heart. Life is too short to settle! My message for young women is one of inclusivity and community and it doesn?t just go away because I don?t work in a high school anymore. In fact, it?s gotten louder, clearer, and more real than ever! I want to create a super cool store to shop and an environment of love and support for all women! Tif f an y Ash : Being brave enough to leave a career that provided predictability and much security for a dream of being my own boss, opening a store, and creating a team of women who love, support, and cheer each other on. As a single mom this was a HUGE step for me (preceded by a lot of planning and preparation). Watching my dream become reality is the best feeling! M issou r i M agazin e: DO YOU HAVE A FAVORITE LOCAL CHARITY?

M issou r i M agazin e: WHAT DO YOU LOVE MOST ABOUT LIVING IN MISSOURI? Tif f an y Ash : Wide open spaces? let me explain. I love to travel. I especially love big cities and all the life and creativity that exists there. But coming home to Missouri you?ll always find me thankful for the abundance of nature, fields, trees, lakes, and beauty that we get to live in! YOUR HEALTH | TAKING INITIATIVE


Taking Care of the Basics EATING RIGHT Everyone knows to eat a balanced diet, but it?s still one of the most important factors in good health. Eating lots of fruits, vegetables and whole grains, while avoiding too many rich and heavy foods, can help you have more energy and feel better. A healthy diet can also help stave off conditions like diabetes, heart disease and obesity or help you in controlling those conditions.

EXERCISING Regular exercise can also help you feel better overall, in addition to managing longterm health conditions such as diabetes. Your joints last longer and hurt less if you?re exercising regularly, plus getting outside and working up a sweat is good for your mental health. Find physical activity that you enjoy and can do regularly. This can be high-intensity exercises like running, hiking, kickboxing or weightlifting, or low-intensity exercises like walking, yoga and pilates.

SLEEPING ENOUGH The CDC suggests seven to nine hours of sleep a night for adults. Simply being in bed for that long isn?t sufficient, though; you need good quality sleep at night. If you?re waking up after eight hours of sleep and still feeling tired, waking up multiple times a night or if you snore or gasp for air while you sleep, you?re probably not getting enough deep sleep. Try to go to bed and get up at the same time every day and cultivate other good sleep habits, including reducing screen time right before bed; having a quiet, dark room; keeping screens out of the bedroom; and not eating large meals of drinking caffeine right before you go to bed.

GETTING REGULAR HEALTH CARE See your doctor for an annual physical to get your blood pressure and cholesterol checked and get any tests you may need (such as for mammograms and pap smears for women and prostate exams for men). Make sure you?re up to date on vaccines, and take this chance to talk over any concerns or ask questions. You should see a dentist twice a year and see an eye doctor regularly as well.


Weight is no one?s favorite topic, but it is an important factor in your health. Being overweight or obese puts people at greater risk of being diagnosed with chronic conditions like diabetes, arthritis and heart disease, it puts greater stress on your joints and can make exercise harder and have an overall greater sense of dissatisfaction with your health. That means maintaining or reaching a healthy weight or reaching a healthy weight. According to the Centers for Disease Control and Prevention, what that number looks like is different for everyone; talk to your doctor to find out what range you should be in, and, as you?re making lifestyle changes, think more about how much energy you have, how your clothes are fitting and how you?re feeling than just the number on the scale. Healthy weight management

will not happen through fad diets or even short-term changes. For most people, it doesn?t mean cutting out certain foods either. If you love cookies, any long-term diet that doesn?t include cookies isn?t likely to be successful for you. Instead, find a lifestyle that includes a mix of healthy eating and regular exercise. The first step is to determine the number of calories you need in a day. The standard 2,000 recommended daily allowance is more than many American adults need. Once you know your calorie count, start planning meals that fit into your intake, provide the nutrients you need and taste good. A healthy diet is full of fruits, vegetables, whole grains and low-fat dairy products; lean meat like poultry and fish, as well as other lean proteins like beans, eggs and nuts; and is low in saturated and trans

fats, cholesterol, salt and added sugars. This necessitates avoiding processed foods, which means more cooking and meal preparation on your part, but there are shortcuts or different methods that will still taste good and be healthy ? use frozen, already sliced or canned fruits and vegetables (just make sure canned fruit is packed in juice, not syrup); substitute brown rice for white rice; and find healthier substitutions for ingredients in your favorite dishes or different ways of cooking, such as sautĂŠing instead of deep frying food. For high-calorie foods like desserts, chips, French fries, cheese and anything with butter, keep them as part of your diet, but cut back how much you eat and how frequently,

INGREDIENTS

1 box vanilla cake mix 1 1/4 c. champagne, divided 1/3 c. vegetable oil 3 large eggs 2 tsp. orange zest, divided 1 c. (2 sticks) butter, softened 4 c. powdered sugar 1 tsp. pure vanilla extract Pinch kosher salt gold sanding sugar Orange wedges, for garnish

Preheat oven to 350° and line two cupcake pans with cupcake liners. In a large bowl, mix cake mix with 1 cup champagne, vegetable oil, eggs, and 1 teaspoon orange zest. Bake according to package directions. Let cool completely before frosting. Meanwhile, make champagne frosting: In a large bowl, using a hand mixer beat butter until light and fluffy. Add 3 cups powdered sugar and beat until no lumps remain. Add remaining 1/4 cup champagne, vanilla, remaining teaspoon orange zest, and a pinch of salt and beat until combined. Add remaining 1 cup powdered sugar and beat until light and fluffy.

Frost cooled cupcakes with an offset and garnish with gold sanding sugar and orange wedges


IN THE KITCHEN| HEALTHY RECIPES

Blueberry Buttermilk Pancakes INGREDIENTS 1 1/2 c. all-purpose flour 3/4 tsp. kosher salt 1 1/2 tsp. baking powder 3/4 tsp. baking soda 1 tbsp. sugar 2 1/4 c. buttermilk 1/2 tsp. pure vanilla extract 4 tbsp. melted unsalted butter, plus more for serving 2 large eggs, beaten 2 c. fresh blueberries, plus more for serving Maple syrup, for serving

DIRECTIONS 1.In a small bowl, mix flour, salt, baking powder and soda, and sugar together with a fork. In a large mixing bowl, combine buttermilk, vanilla, butter, and eggs until well-mixed. Fold in dry ingredients and blueberries until just incorporated. Do not over-mix (batter should be lumpy). 2. Heat griddle or large non-stick skillet over medium-low heat. Add dab of butter and scoop 1/3 cup of batter on griddle. Cook for 2 minutes (bubbles will appear), then flip and cook 1 minute more. Pancakes should be golden brown. 3. Repeat steps for remaining pancakes. Serve with butter, maple syrup, and blueberries

Spinach-ArtichokeManicotti INGREDIENTS 1 (8-oz.) package manicotti 1 (16-oz.) container ricotta 1 package frozen spinach, thawed and drained 1 c. chopped artichoke hearts 2 c. shredded mozzarella, divided Kosher salt Freshly ground black pepper Pinch of crushed red pepper flakes 3 tbsp. butter 2 cloves garlic, minced 2 tbsp. all-purpose flour 1 c. milk 2 c. freshly grated Parmesan Juice of ½ a lemon Freshly chopped parsley, for garnish

DIRECTIONS Preheat oven to 350°. In a large pot of salted boiling water, cook manicotti until al dente, 5 minutes. Drain and let cool slightly. In a large bowl, combine ricotta, spinach, artichoke hearts, and ½ cup mozzarella. Season with salt, pepper, and a pinch of red pepper flakes. Transfer to a piping bag or large resealable plastic bag and make a cut in the corner of the bag. In a medium skillet over medium heat, melt butter. Add garlic and cook until fragrant. Add flour and whisk until golden and bubbly, 1 minute. Slowly pour in milk and whisk until no lumps remain. Add Parmesan and lemon juice. Season with salt and pepper. Reduce heat and let simmer until slightly thickened, 5 minutes. Spoon about ¼ cup of sauce on bottom of a 9"-x-13" baking dish. Pipe ricotta filling into manicotti, making sure to fill entire noodle and place in pan. Pour remaining sauce over noodles and top with remaining 1½ cups mozzarella. Cover with foil and bake for 20 minutes. Remove foil and bake until cheese is melty, 10 minutes. If you'd like the top to be golden, broil on high for 2 to 3 minutes. Garnish with parsley to serve.

Sunday, May 12 is the official celebration of Mother ?s Day a day that we honor mom and all that she has done for us during the years. If wine is part of the honoring, only the best will do, and I would like to make some suggestions of wines that befit mom?s status as your queen of queens.

Van Du zer 2018 Willam et t e Valley Pin ot Noir Rosé ($20). The Van Duzer 2010 Willamette Valley Pinot Noir Rosé is a dry wine that captures all of the flavor and aroma nuances of the Pinot Noir grape and presents them in the free and open style of a rosé wine. The aroma is blessed with scents of wild flowers, strawberry, and licorice. The flavor is a riot of strawberries and watermelon that follows through to the finish that is very long and clean. This wine a pure delight and can accompany almost everything. If you miss this wine, you will have missed one of the great joys of the wine world. Acr obat Rosé of Pin ot Noir ($15). If the name alone doesn't peak the interest, nothing will. The Acrobat Rosé of Pinot Noir presents an inviting salmon pink color and the aroma of citrus, pomegranates, strawberries and a hint of violets. The flavor stresses summer berries accompanied by a positive and obvious citrus. This wine, as with any rosé wine, should be served slightly chilled, as too much time in the fridge will reduce the flavor and aroma. About fifteen to twenty minutes in the fridge will result in a perfectly chilled wine.

Kin g Est at e Willam et t e Valley M ou n t ain Block s Rosé ($24). The aroma of this wine can be said in two words, pure perfume. The aroma alternates between sun-warmed rose petals and fresh picked strawberries. Black cherry, raspberry, and strawberry flavors share the palate with a vibrant acidity. These same flavors continue on to the bid and obvious finish. It is a very interesting and delightful wine Bar ef oot Cellar s Bu bbly Rosé ($10). There is little question that Barefoot wines are becoming among Americas favorite brands and this wine will help to confirm that. This delightful bubblers? pink color heralds the aromas of strawberry jam and concord grapes. The flavor picks up the

The wine displays a lively, bright, and clear light pomegranate color and a complex aroma of pomegranate, strawberry, pineapple, cherry, fresh peaches and a spicy, slightly peppery taste on the palate. It is very well balanced with a fresh, extraordinarily long, and exceptionally fruity aftertaste. Seek out this wine; it?s a charmer from beginning to end and is a wine that is almost guaranteed to produce smiles, a smile from mom and an accolade for your choice.

J Vin eyar ds Br u t e Rosé ($35). The JVineyards Brute Rosé is a blend of Pinot Noir and Chardonnay that displays a beautiful salmon-pink color and exhibits the aromas of black cherries combined with raspberries and strawberries, inviting the first sip. The fruit flavors of dark cherries, summer berries, peaches and a very noticeable toasted bread-like flavor that weaves in and out of the fruit and dances across the palate ending in a creamy blast of raspberries.

Apot h ic 2016 Rosé ($9). A pure delight of a wine made from the Spanish Tempranillo and the French Grenache. Best served chilled, this dry Rosé displays an inviting pink color and the very obvious flavors and aromas of strawberry and watermelon. The finish is, as it is with most good Rosés is long, memorable and luscious. If a dry rosé is the order of the day, this wine is a great choice.
