S

ilver Dollar City’s An Old Time Christmas is bigger and brighter than ever this year, presenting the NEW Christmas In Midtown Light Spectacular. Christmas In Midtown presents a towering new experience with new light displays soaring 9 stories high, adding 1.5 million more lights and bringing the park’s total to 6.5 million lights. The festival also features an evening light parade, two Broadway-style original musical productions, a 5-Story Special Effects Christmas Tree with a sound and light show and holiday dining, November 4 – December 30. The largest single lighting expansion in the past 2 decades of the festival, Christmas In Midtown takes holiday lighting to a new level, filling over an acre -- 70,000 square feet -- with 145 miles of LED lights. Huge light tunnels and wreath portals lead into the area, which includes flying angels, running reindeer, moving trains, a tree 90 feet high, musical trees with moving lights, dozens of stars and snowflakes, and a giant turning globe, all created at Silver Dollar City. The light experience begins on the Square

with the 5-Story Special Effects Christmas Tree, a massive tree with over 350,000 colorful LED lights. Beginning at dusk each evening, the tree blazes to the movements of Christmas songs, with up to 100 light changes per second, while lights around the Square flash along. A parade of lights, Rudolph’s Holly Jolly™ Christmas Light Parade, winds through the streets of the City twice each evening. As Grand Marshal, Rudolph leads the evening parade of nine musical, lighted floats, illuminated with 200,000 LED lights. The parade is accompanied by 45 colorful costumed characters, including Bumble the Abominable Snow Monster, 14-foot moose characters, 12-foot tall elves, 10-foot candy canes, penguins, elves and marching wooden soldiers. The festival also features two original musical productions, A Dickens’ Christmas Carol and It’s a Wonderful Life. A Dickens’ Christmas Carol is an adaptation of the famous Dickens classic, with revolving sets, flying spirits, pyrotechnic special effects and a cast of 15, accompanied by a live band. Milano Reindeer Cookies INGREDIENTS

1 tsp. powdered sugar

15 pretzels

1 can store-bought vanilla frosting

1/4 c. marshmallow Fluff 15 Milano Cookies

30 brown mini M&Ms 15 red M&Ms (full size)

DIRECTIONS 1. Cut pretzels in half down the center. Dip edges of each pretzel half in Marshmallow Fluff, then press onto the top of each Milano cookie. Dab a little powdered sugar on top of the Fluff, so it doesn’t stick. 2. Flip the Milano cookies over, placing them on a parchment-lined baking sheet or tray. 3. Place frosting in a piping bag with a No. 3-sized round piping tip—or use a resealable plastic bag with a corner snipped off—to draw three circles on each cookie: two for the eyes, and one at the bottom for the nose. Press a mini M&M into the center of each melted white chocolate circle, forming the reindeer’s eyes. 4. Top the final blob of icing on each cookie with a red M&M, “M” side down.

Snowball Cookies INGREDIENTS

pinch of salt

1 c. all-purpose flour

1 tsp. vanilla extract

1 1/2 c. walnuts, finely chopped

1/2 c. softened butter, chopped

1/4 c. sugar

2 c. powdered sugar

DIRECTIONS 1. Preheat oven to 350°F and line a large cookie sheet with parchment. In a large bowl, mix flour, walnuts, sugar, salt, and vanilla. Add butter and, using your hands, combine everything until mixture resembles a coarse meal. 2. Form dough into small balls and place on prepared cookie sheet. Bake 15 minutes. 3. When they’re still warm but cool enough to touch, roll cookies in powdered sugar. Set aside on a rack to cool completely. When cool, dust again in powdered sugar. 18

Christmas Sugar Cookies INGREDIENTS

2 sticks butter, softened

3 c. all-purpose flour, plus more for surface

1 c. sugar 1 large egg

1 tsp. baking powder

1 tsp. vanilla

1/2 tsp. kosher salt

1 tbsp. milk

DIRECTIONS 1. In a large bowl, whisk together flour, baking powder, and salt and set aside. 2. Beat butter and sugar until fluffy and pale in color. Add egg, milk, and vanilla and beat until combined, then add flour mixture gradually until totally combined. 3. Shape into a disk and wrap in plastic. Refrigerate 1 hour. 4. When ready to roll, preheat oven to 350º. Lightly flour a clean work surface and roll out dough until 1/8” thick. Cut out shapes and transfer to parchment-lined baking sheets. Freeze 10 minutes (so your shapes hold while baking!). 5. Bake until edges are lightly golden, 8 to 10 minutes. 6. Transfer to a cooling rack. 7. Once cool, frost.

Milk & Cookie Shots 1 tube chocolate chip cookie dough 1 c. semisweet chocolate chips

2 tbsp. coconut oil (or butter) 1 part Baileys Irish Cream 1 part milk

DIRECTIONS 1. Preheat oven to 350 degrees F. Grease the cups of a muffin tin, then fill each one with a small ball of cookie dough, pressing down gently to form a well. Bake for 10-12 minutes, or until the cookies are lightly golden. 2. As soon as they’re out, use a shot glass to gently press down the center of each cookie. Set tray aside to cool for at least 20 minutes. 3. In a microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 25-second intervals, stirring in between, until chips are fully melted. Line each cookie dough cup with the melted chocolate, place on a baking sheet or platter, and refrigerate until the chocolate has hardened, about 15 minutes. 4. In a shaker filled with ice, combine equal parts Baileys Irish Cream and milk. Shake, then pour into each cookie shot glass. November/December 2017 | Missouri Magazine |

Missouri Magazine | November/December 2017

Tell us about your experience with the Miss High School America Organization. When I heard about the Jr High School America pageant I just knew it was the system for me! There is no talent competition like some other pageants, and I didn’t want the added stress of working on a talent. I also liked that there was a big focus on community service, as I spend a lot of my time playing piano for patients at Phelps County Regional Medical Center in Rolla and at the St James Veterans Home. What does it mean to you to represent young women across the state? It’s an honor to represent Missouri and it’s important for me to be a role model to girls across the state. I work hard to make people feel comfortable when I meet them. I think of the pageant queens that I admire: Sophia DominguezHeithoff, Dallas Ezard, Jenn Davis, Bayleigh Dayton, Christina Stratton, and Lacey Haskell. I followed them on social media and when I met them in person they were so nice, supportive, and encouraging. My director CJ and my sister queens Holly and Danielle are three ladies that I look up to and have taught me so much about who I want to be as I grow up and I hope that I can do that for girls across Missouri. How has participating in Miss Missouri Junior High, High School, Collegiate America changed your life? The biggest impact is that I’m not afraid to walk up to someone and introduce myself and ask questions. It’s not always easy but I can do it and that’s a huge improvement. I remember a few years ago being too shy to tell a lady sitting next to me that I thought her baby was cute. Whenever I feel shy or intimidated I remind myself of how far I’ve come. One of the funniest things that happened while wearing my crown and sash was during a visit to Ross Elementary School. A class of kindergarteners saw me and yelled, “Happy Birthday” and “I saw you on TV.” What appearances do you plan to make or have you made as Miss Missouri Junior High, High School, Collegiate America? I’ve visited elementary classrooms and promoted the anti-

bullying platform B.R.A.V.E that stands for Building Respect And Values for Everyone. I read the book Stand Tall Molly Lou Melon and I share my story of how I was bullied and what helped me when I felt all alone. I also handed out pencils that say ‘Be BRAVE’ so students have a reminder of the message after I leave the classroom. One of the most memorable visits was being able to participate in a second grade Egg Drop Science experiment. The students designed a way to keep the egg from cracking and I stood on a picnic table and dropped them to the ground. The students were so excited to see if their egg made it through the fall. And most of them did, so I was impressed with their designs! What kind of legacy would you like to leave behind? I hope that the students I visited are encouraged to choose kindness and I would be very happy if I discouraged anyone from bullying others. When I was crowned Miss Missouri Jr High I set the goal that I wanted to visit every veterans home in the state and I’m proud that I was able to accomplish that goal. I have met some of the kindest veterans that encourage me to keep playing the piano. I’ve learned a lot from the veterans I’ve visited and I’m proud of the care that our veterans receive in Missouri. I hope people are encouraged to find ways to volunteer in their communities and choose to be kind to others. What advice can you give teens who are intimidated by all the glam on social media and struggle with self confidence? I get it, it’s hard not to compare yourself to others but I remind myself that people are showing the highlights of their life online. For pageants, I have my hair and make-up applied by a professional so that makes a huge difference. Sometimes it takes a lot of selfies to get a good one but I prefer to post pictures of me doing things with my friends. I add a filter to almost all my photos unless they’re professional photos and I’ve learned how to take a good picture. If you look at some of my first Instagram pictures you’ll see what I mean. I would remind people that your confidence shouldn’t come from the number of likes you receive or how great you look in an edited photo, you should find your confidence in trying to be your best you and having positive thoughts about yourself.

Tell us about your experience with the Miss High School America Organization. MHSA is an amazing organization that has brought me so many friendships and opportunities! I am actually best friends with Katie Schaaf, who won nationals! I also developed a life long sister hood with my sister queens, Holly and Abilene. They are two of the sweetest people I have ever met! Also being able to represent Missouri at nationals was a dream come true and I am very pleased with my Top 10 placement. What was your favorite interview question from the national pageant? “What is something you have done with the BRAVE platform that is different from everyone else?” With this question I was able to show my creativity through the BRAVE Monkey I created to give children a physical representation of what they are doing to help others. What does it mean to you to represent young women across the state? Throughout my reign I enjoyed knowing that I was a role model to other young women across the state of Missouri and being able to show them what pageants have done for me and what pageants could do for them as well!

Tell us about your journey to Miss Missouri Junior High, High School, Collegiate America? My journey consisted of a lot of interview preparation. This helped me to have more confidence in the interview room and make sure that the judges knew all of the important details about me when I walked out of the room. What was the most challenging aspect of the Miss Missouri Junior High, High School, Collegiate America competition? Interview was definitely the most challenging. Previously I had never competed in a panel interview, so it was a new experience that also made me a little nervous! What does your crown mean to you? My crown is more than just a rhinestone object on my head. My crown makes me an advocate for the BRAVE platform, and I loved spreading the word of BRAVE throughout my reign. What kind of legacy would you like to leave behind? I have a personal platform of “It’s Okay To Tell: Sexual Abuse Victim Advocacy” and I want to let all victims know that telling their story will ultimately help them heal and potentially help other future victims as well.

How has participating in Miss Missouri Junior High, High School, Collegiate America changed your life? Competing in pageants has always built up my confidence and the Miss Missouri High School America system did this as well. This organization gave me more confidence in myself and in God’s plan for my life as well.

What advice can you give teens who are intimidated by all the glam on social media and struggle with self confidence? Be the person you feel confident and comfortable with. God made you in a special way so that you are unique from everyone else! Don’t try to be something you’re not; just embrace what God blessed you with.

What appearances do you plan to make or have you made as Miss Missouri Junior High, High School, Collegiate America? As Miss Missouri High School America I held a local pillow drive. I partnered with the Sharing & Caring Foundation, who donates beds to children in the community who do not have a bed. With this I collected over 100 pillows for these children so they had a new pillow to pair with their new bed.

Anything else you would like to share? The Miss Missouri High School organization is fantastic and I recommend that anyone interested in pageants give it a try! You really do develop a pageant family full of love and support. To whoever wins the title this year, embrace the power of the crown and BE BRAVE!

Missouri Magazine | November/December 2017

Tell us about your experience with the Miss High School America Organization. The Miss High School America Organization has been a blessing in my life. It has brought great friends into my life in my fellow queens, Abilene and Danielle, and my director, CJ. I have also met wonderful people from all over the state and the country. My favorite part of the organization was supporting BRAVE, the pageant’s national platform. BRAVE is an anti-bullying campaign, and I had the opportunity to speak to classrooms all over Missouri about how to stand up to bullying. What does it mean to you to represent young women across the state? It is humbling and rewarding at the same time. I was not only able to meet with several different people throughout Missouri, but I had the opportunity to represent them at the national pageant and share the values of the Show Me State to the rest of the country. How has participating in Miss Missouri Junior High, High School, Collegiate America changed your life? This pageant has not only given me amazing opportunities, but it has also given me some of the best people I have ever met in CJ, Abilene, and Danielle. These girls are smart, determined, and have the biggest hearts I have ever seen. I am so proud of everything that we have accomplished this year, and I know that while I have grown and learned a lot through this system, the real reason it changed my life is because it brought them into my life. What appearances do you plan to make or have you made as Miss Missouri Junior High, High School, Collegiate America? As Miss Missouri Collegiate, I have volunteered with the Salvation Army, Girls on the Run, veterans’ homes, animal shelters, Places for People, and the Colon Cancer Alliance, in addition to working with classrooms to promote BRAVE. Tell us about your journey to Miss Missouri Junior High, High School, Collegiate America? My journey to Miss Collegiate America was a long one! I was a full time college student while also making appearances,

shopping for my competition and appearance wardrobe for nationals, practicing my interview and walking, and searching for sponsors. It was a lot to balance with school work and my student groups, but I had great support in my parents and my director. What was the most challenging aspect of the Miss Missouri Junior High, High School, Collegiate America competition? The most challenging part was to remember to enjoy the experience. Nationals was an event like no other, and I had to remember to take the time to appreciate the moment. Often, we can get too focused on our goals that we forget to appreciate how we got there, who helped us, and who we met along the way. I had to stop and remember how lucky I was to be there and to really take the time to enjoy it rather than just focusing on the competition. What does your crown mean to you? To me, the crown is an opportunity. Whenever I am out and about in my crown and sash, it draws attention. I try to use that attention to bring awareness to the causes that are important to me, such as anti-bullying and mental health. What kind of legacy would you like to leave behind? I hope my legacy is left with the people I have met. I want every person that I interact with to feel better about themselves, their own lives, or what is going on around them because they have met me. I want to make the world a better place. What advice can you give teens who are intimidated by all the glam on social media and struggle with self confidence? Please just be yourself! I know that sounds cliche, but it is so true. Most of what you see on social media is either fake or only shows moments in the best possible staging. Focus on making yourself happy with who you are because you are special and have something incredible to offer to others. Anything else you would like to share? Thank you for taking the time to write about the Miss Missouri Jr. High, High School, and Collegiate America pageant! It is a system that is important to me, and I’m glad I could share it with you.

20 Tips to Avoid Weight Gain During the Holidays The holidays are an exciting time of year. But between the parties, stress and baked goods, it’s also a time when people tend to gain weight.

In fact, between mid-November and midJanuary, adults gain an average of one pound. This may not seem like a lot, but most people don’t lose the weight they gain over the holidays. For this reason, holiday weight gain is one of the biggest contributors to total yearly weight gain for many people. The good news is that weight gain during the holidays is not inevitable. HERE ARE 20 TIPS TO HELP YOU AVOID WEIGHT GAIN DURING THE HOLIDAY SEASON.

1. Be Active With Family and Friends

Sedentary activities, such as sitting on the couch watching sports, are common holiday traditions for many families. Inactivity may contribute to weight gain, especially when lounging around is accompanied by eating excessive amounts of food. Doing some type of physical activity while on holiday with your family may prove to be beneficial for weight control.

28

|

Missouri Magazine | November/December 2017

An activity as simple as a family walk can provide benefits, as it will get your mind off food and allow you to bond with your loved ones. You can also be active during the holidays by signing up for a workplace or community fitness competition or event. Running races are popular options.

2. Be Smart When Snacking

During the holiday season, unhealthy snacks like cookies and other goodies tend to be available for you to take as you please. When treats are easy to access, unnecessary snacking or grazing is more likely to occur. At home, this problem can be solved by keeping treats out of sight. However, that strategy is more difficult to avoid in situations that you cannot control, such as your workplace or a family dinner party. You can overcome these situations by being mindful of your snacking habits. If you find yourself snacking just because there’s food available — and not because you’re hungry — then it’s best to avoid snacking altogether. However, if you are hungry and need a snack, opt for real foods. Fruits, vegetables, nuts and seeds are filling snacks that don’t contain added sugars or unhealthy fats, both of which can lead to weight gain.

It can also be helpful to take a few deep breaths before you start eating. This can induce relaxation and help you keep your full attention on your plate, rather than your to-do list. Several studies show that those who engage in mindful eating practices are less likely to gain weight.

5. Get Plenty of Sleep

Sleep deprivation is quite common during the holidays, and it may cause weight gain. This is because those who do not sleep enough tend to be hungrier, consume more calories and get less physical activity. The reason behind this is that sleep restriction may increase your hunger hormone levels, ultimately leading to higher calorie intake. Additionally, inadequate sleep has been linked to lower metabolism. This is believed to be due to alterations in your circadian rhythm, which is known as the biological clock that regulates many bodily functions.

6. Control Your Stress Levels

3. Watch Your Portion Sizes

Keeping up with the demands of the holidays can be stressful. Those who are stressed commonly have high levels of cortisol, a hormone that’s released in response to stress. Chronically high cortisol levels may cause weight gain, as they have been linked to greater food intake.

To determine an appropriate portion size, read food labels and the recommended serving sizes listed on recipes.

Additionally, a stressful lifestyle may cause more cravings for junk food. For these reasons, it’s important to keep stress levels under control throughout the entire year, but especially during the holidays when you might be plagued with more tasks and surrounded by unhealthy foods. There are plenty of things you can do during the holidays to reduce stress. Some options include exercise, meditation, yoga and deep breathing.

When the holidays arrive, it can be easy to overdo it on your portion sizes. Those who eat larger-thanrecommended portions tend to gain weight more easily than those who don’t. The best way to overcome this is to weigh and measure your food, or eat off smaller plates, which is discussed more below.

If you’re in a situation that leaves you unable to measure portions, use your best judgment to fill your plate with a reasonable amount of food.

4. Practice Mindful Eating

People are often rushed and on the go throughout the holiday season, which frequently leads to multitasking during meals. Studies show that those who eat while they are distracted are more likely to overeat. This is because they are unable to pay attention to their body’s fullness signals. To prevent this from happening, eat mindfully without distractions, including work and electronics. Another way to eat mindfully is to eat slowly and chew your food thoroughly, which will allow you to better recognize your body’s signals of fullness and consume fewer calories.

7. Keep Meals Balanced With Protein

Holiday meals are typically rich in carbs but lack protein. However, it’s important to include some protein with every meal, as it promotes fullness and may be useful for weight maintenance. In fact, eating protein with meals may automatically reduce calorie intake by reducing hunger and appetite. Protein is also beneficial for weight control because it increases your metabolism and levels of appetitereducing hormones. For these weight-management benefits, you should include at least 25–30 grams of protein in each meal. Good sources of protein include meat, poultry, fish and some plant foods like beans and quinoa. Ensure your holiday meals include a serving or two of these foods to reduce the likelihood of overindulgence. November/December 2017 | Missouri Magazine |

8. Focus on Fiber

Additionally, alcohol consumption is often linked to increased appetite and is a risk factor for weight gain. If you’re trying to control your weight, it is best to limit liquid calories during the holidays — and all year long, for that matter.

Unfortunately, many common holiday foods lack adequate amounts of fiber. Do your best to incorporate fiber-rich foods, such as vegetables, fruits, legumes, whole grains, nuts and seeds, into your meals.

13. Use a Smaller Plate

9. Cut Back on Taste Testing

This is based on the fact that people tend to consume larger portions off of large plates, which may lead to overeating. By using the simple trick of choosing a smaller plate, you can control portions and therefore reduce the likelihood of holiday weight gain.

Fiber is another important nutrient that induces fullness. Some studies show that increased dietary fiber can reduce total calorie intake, which may be a method to prevent weight gain over the holidays.

Many people spend a lot of time cooking and baking during the holiday season. Surprisingly, this can lead to weight gain. That’s because along with the cooking and baking comes taste testing, and even small bites of baked goods and holiday dishes can add up in calories. Tasting your dishes can be important, especially if you are cooking for others, but a small bite of less than a teaspoon is probably more than enough. You should also make sure that you aren’t hungry while cooking, as it’s much easier to go overboard on taste testing when your stomach is growling.

10. Bring a Healthy Dish to Share

Holiday parties can be a common setback in the battle against holiday weight gain. In these instances, you often have no control over the food that’s served. The good news is that you can have control. Simply bring your own healthy dish for yourself and to share with others. This way, you can be sure you’ll have something to eat that aligns with your weight goals.

11. Choose Desserts Wisely and Savor Them

Dessert is everywhere during the holiday season. This often leads to excessive sugar consumption, a common cause of weight gain. Instead of eating every treat in sight, it can be helpful to focus on your favorites. Eat the ones you really want and ditch the rest. Another trick is to savor the desserts you do indulge in, which may leave you feeling more satisfied and less likely to overdo dessert. To savor desserts, eat them slowly and mindfully so you can really taste and enjoy them.

12. Limit Liquid Calories

The holidays are a time of year when alcohol, soda and other sweetened beverages seem to be unlimited. These beverages can contribute a significant amount of sugar and empty calories to your diet, which can cause weight gain.

Missouri Magazine | November/December 2017

Dinner parties and potlucks are common occasions during the holiday season. While people often think of these as diet disasters, they don’t have to be if you eat from a smaller plate.

14. Reduce Calories in Recipes

Excessive calorie intake is a primary cause of weight gain during the holidays. However, it doesn’t have to be that way. There are plenty of things you can do to lower the calorie contents of recipes. Here are some ideas on how to reduce calories in baking, cooking and beverages: Baking - Replace butter with applesauce, mashed banana or pumpkin puree. Instead of sugar, use a lower-calorie substitute such as stevia, erythritol or xylitol. Add dried fruit instead of chocolate chips or candies. Flavor recipes with extracts like vanilla, almond and peppermint instead of butter and sugar. Cooking - Flavor dishes with herbs and spices instead of butter. Use cooking methods such as baking, steaming or grilling instead of frying Substitute low-fat or skim milk for heavy cream. Replace cream cheese, sour cream and mayo with Greek yogurt. Beverages - Use club soda or sparkling water in place of sweetened beverages.

Flavor drinks with freshly squeezed lemon or lime rather than sugar. Cinnamon can also add flavor to holiday-themed beverages. In dairy-based drinks, use low-fat or skim milk in place of heavy cream.

15. Weigh Yourself Regularly

Stepping on the scale regularly during the holidays may help prevent weight gain. In some studies, individuals who weigh themselves regularly are able to maintain or lose weight better than those who do not weigh themselves. Do what works best for you when it comes to weighing yourself. Some find it beneficial to check their weight daily, while others are successful weighing themselves once or twice a week.

from scratch instead of a box. That way, you can control what goes in your food and stay on top of your weight.

18. Plan Ahead

All of the suggestions in this article come down to planning ahead if you are watching your weight over the holidays. If you have events that involve food on the calendar, take matters into your own hands. Find out what types of foods will be served and if you need to, bring your own dish. Decide what and how much you will eat ahead of time. It can also be helpful to gather a list of healthy holiday recipes, so you always have a go-to when you need to bring something to a party.

16. Use the Buddy System

19. Skip Seconds

Reach out to friends, family and co-workers to find someone willing to partner with you in your effort to prevent weight gain.

To overcome this, assess your hunger when you finish your first plate. If you’re still hungry, have a little more food. If you’re not, then you’ve probably had enough and can move on to enjoy other aspects of the gathering.

Many people report success with their weight goals when they have a partner to pursue them with. Finding a health buddy who has similar weight goals may be useful over the holidays, as this person can keep you motivated and accountable.

17. Avoid Processed Foods

The hectic holiday season has led to the increased availability of processed holiday convenience foods, such as boxed mashed potatoes and stuffing. While these may be quick and easy, they often contain excess sugar and unhealthy fats that are not good for weight control. To prevent weight gain, opt for whole foods this holiday season. Focus on making meals and baked goods

Holiday meals are often served in a buffet style, with several options to choose from in unlimited amounts. This leads people to serve themselves seconds — and maybe even thirds. The calories from double helpings can add up and contribute to weight gain.

20. Draw the Line

During the holiday season, many people have an “I’ll start tomorrow” mentality, which can end up being a vicious cycle of unhealthy habits. If you are serious about controlling your weight over the holidays, it may be helpful to draw the line, set limits for yourself and stick to your goals regarding food intake. Decide which foods are worth it to you and which ones are not. Know that it’s okay to say no to certain foods and habits that don’t align with your goals. It’s also important to be aware that you might have a slip-up or two. People often abandon their goals after this happens. However, there is no need for this. Simply move on and make a healthier choice the next time you eat.

Best Buys FOR THE NEW YEAR Smart shopping involves making budget-friendly purchases. Never paying full price is a mantra shoppers can follow to help keep their finances in check.

I

n addition to coupons and other discounts, shoppers can usually score deals based on which time of year they shop for particular items. Each year, various consumer resources offer advice on the best time to buy certain items. The beginning of the year is often an ideal time to purchase certain items. Consumers who take advantage of sales offered at the start of the new year can save substantial amounts of money. Now that the holiday season has passed, consumers can begin to find deals on items for themselves. CLOTHING: Post-Christmas sales are booming, and stores are looking to sell what is left of their inventories to make room for spring and summer selections. Even though the weather outside is still cold, sweaters, pants, coats, and more are usually available at a discount come January. It may take some digging through the racks, but there is an excellent chance to discover some great items. ¥ Boats: Wintertime is boat show season, but it is also the offseason for boaters who live in cooler climates. These factors combine to make it easier and less expensive to find a new boat. According to boat-buying retailer Boatline, consumers can probably get one of last years models at a good price. AIR CONDITIONERS: If the warm-weather season was particularly steamy this past year, it might be time to revamp the HVAC system or invest in some new portable units. Bankrate offers that the first few months of the year are prime times to shop for air conditioners. While you may not get the latest model, it is likely you can find a

reliable unit at below-market cost. THEATER TICKETS: January and February are not especially busy seasons for theaters, which means there will be greater opportunity to get discounted seats for many popular shows. LINENS AND BEDDING: John Wannamaker was a retail entrepreneur and had a few department stores in New York and Philadelphia. Wannamakers held the first white sale in 1878, and since then many stores have continued the tradition. January is a great month to buy towels, sheets, bedspreads, and more at a discount. MOTORCYCLES: Riding a motorcycle is a fairweather hobby, and retailers are aware of this. The easy riders of tomorrow might be able to find great deals today. VIDEO GAMES: Those who haven’t purchased their fill of video games for the holidays can benefit from postholiday drops in price. FURNITURE: Many furniture manufacturers begin to churn out new inventory in February, so last seasons items will need to move quickly. Shoppers can often negotiate some good deals now and upgrade their homes decor. WEDDING-RELATED SERVICES: Couples who don’t mind the chilly weather can enjoy steep savings by hosting their weddings in January. Spring and summer are by far the more popular seasons to tie the knot, but reception halls, musical acts, florists, and other vendors may heavily discount their services in winter.

ideas for making holiday memories

Counting down to Christmas Day means many different things to people across the globe. Although families likely have several different traditions they anticipate each year, it can be fun to incorporate some new merrymakers into the festivities. Here are some festive ideas to include in the days leading up to Christmas in a special family calendar of fun finds.

1. Annual memento: Have

the kids or adults make one new handmade ornament each year. This way the tree is always evolving, and everyone can track milestones.

2. Cookie day: Devote one

day to making Christmas cookies. Invite friends or family members over. Distribute some cookies to Fire and Police stations.

3. Holiday classic: Spend a

night in and watch a classic Christmas flick you have never 50

|

Missouri Magazine | November/December 2017

seen before. Streaming movie services often put classics and obscure titles into rotation during the holiday season.

4. Christmas concert: Host

a gathering of children where they can sing or perform their favorite tunes for an audience. Take it on the road to a nearby nursing home.

5. Dine out: Take a break from cooking, shopping and hosting and stop into a restaurant you have been meaning to try. Keep it local to support nearby businesses.

6. Adopt a child/family: Volunteer with a

charitable organization that provides for less fortunate families. Answer the Christmas desires of a needy child or family by purchasing an item on their wish lists.

7. See the sights: Pack the children into the

family car to tour nearby areas and look at Christmas lights displays. Bring along cookies and hot chocolate.

8. Trim a tree: Get together with adult friends at a tree-trimming party. Rotate the hosting house each year.

9. Play dress-up: A gentleman can dress up as the man in red and pop into a friends holiday gathering.

10. Wilderness walk: Enjoy the crisp air

and snow and see a local park from a winter perspective.

11. Acts of kindness: Choose any act of

kindness and make it happen this Christmas. It can include feeding the hungry or helping a disabled person shop for the season.

12. Kids’ Secret Santa: Spread the joy of

giving by having the kids choose a sibling or friend’s name from a hat and purchasing or making a gift for that person.

13. Hand out hot chocolate: Make a big

thermos of hot chocolate and give it out to shoppers or workers who have been out in the cold.

14. Read religious stories: Understand the

true meaning of the season by reading Biblical passages.

15. Camp-in: The first night the tree is

decorated, allow the kids to sleep beside it under the glow of Christmas lights.

16. Scavenger hunt: Plan holiday-themed trivia questions and hide small trinkets for children to find.

17. Surprise box: Put a gender and age

nonspecific gift into a box. On Christmas Eve or Christmas Day, the person who finds a hidden gift tag under their chair at dinner gets to open the box.

18. Family portrait: Wear your holiday finery and pose for a portrait that actually will be printed and framed.

Managing

Holiday Stress W e all have a picture of how we want the holidays to be in our head‌the flawless Holiday spread, the perfect Christmas tree, the impeccable holiday party, and the best Hanukkah yet. In our rosy visions of holiday bliss, everyone always gets along and any stress we have been dealing with earlier in the year simply melts away. However, just like the Griswald family in National Lampoon’s Christmas Vacation, very rarely do we get the holiday season we have envisioned in our heads.

While we may want the holidays to be a stress-free zone, most people say that their anxiety actually increases this time of year. You may find yourself feeling stressed about keeping up with all of the holiday activities, financial crunches, work deadlines, or even just anxiety about whether or not this year will live up to your expectations. Keeping stress under control does not have to take a Christmas miracle though! Here are some easy ways to help manage your anxiety this season.

Plan ahead, make a list, and check it twice. A lot of our stress comes from trying to accomplish things last minute. However this normally leaves us in a severe time crunch where we start to feel really overwhelmed. Try to plan out this holiday season a bit more than usual. Be intentional about scheduling your social calendar as well as planning out when you will accomplish your cooking and shopping. If you are an anxious traveler, plan ahead and find ways to help

yourself relax while you are away from home. A more intentional holiday season might even leave you some time to relax by a fire with a nice cup of something hot.

Call a holiday truce. Try to set aside any differences or conflicts with family members until the holidays are over. The Thanksgiving table is not the time or place to try to resolve any conflicts or disagreements. Chances are the rest of your family is feeling the stress of the holidays just like you are. Try to have extra patience with any family conflict or politics talk. Try walking away from the conversation, having a favorite holiday treat, or even finding a friend to talk to.

Everything in moderation. It is easy to overindulge in more ways than one during the holidays. Too much eggnog, holiday treats, or even together time can leave you feeling more drained. It can be tempting to use drinking or food to take the edge off in stressful situations, but this just leaves you feeling more anxious.

Connect with others in a meaningful way. Make sure that you are having a holiday that is fulfilling and enjoyable for you and not just something where you are going through the motions. Take the pressure off yourself and make realistic expectations about what the season will look like for you. Take a break and refocus yourself when you are overwhelmed, even if that means you leave the party for a minute or two. Find social groups, volunteer opportunities, and traditions that bring you joy and peace. The holidays don’t need to be perfect to be enjoyable.

TURKEY TALK Three must have Turkey Tips you need to know.

TIP #1 How to Take a Turkey’s Temperature

Holiday Apple Salad FOR THE CANDIED PECANS

1/2 c. brown sugar 1/4 tsp. cinnamon 1/4 tsp. kosher salt 2 tbsp. water 1 c. pecans FOR THE SALAD

6 c. mixed greens 2 apples, thinly sliced 1/2 c. crumbled blue cheese 1/2 c. dried cranberries FOR THE DRESSING

2 tbsp. apple cider vinegar 1/2 shallot, finely chopped 1/2 tbsp. Dijon mustard 1/3 c. extra-virgin olive oil 1. Candy pecans: In a skillet over medium heat, combine

brown sugar, cinnamon, salt, and water. Stir, letting sugar dissolve, then add pecans and toss until totally coated. Let simmer 5 minutes until sticky, then remove from heat and let cool on a parchment-lined baking sheet in a single layer. (Pecans you don’t use for the salad can be stored in an airtight container up to 1 week.)

2. Assemble salad: In a large bowl, combine greens,

apples, candied pecans, blue cheese, and dried cranberries. Refrigerate until ready to dress and serve.

3. Make dressing: In a bowl or glass jar, whisk together apple cider vinegar, shallot, dijon, and olive oil. Season with salt and pepper.

Using an instant-read thermometer is the best way to ensure a moist, juicy roast. But where do you put it? The most important thing to remember: Never place the probe too close to the bone or you’ll get an inaccurate reading. The easiest method? Slide the thermometer into the thigh horizontally, just until it touches the bone, then pull it out slightly. Once it registers 165° F in the thigh—the slowestcooking part of the bird—you’ll know that dinner is done.

TIP #2 How to Keep Sliced Turkey Warm and Juicy It happens every year: By the time you’re done carving the bird, the first pieces on the platter have already begun to cool and dry out. Try this: Just before bringing the turkey to the table, drizzle the slices with a little hot chicken broth to warm and moisten the meat.

TIP #3 How to Truss a Turkey Tying a turkey makes it look pretty and prevents the wing tips from burning. Here’s how to do it without getting all tangled up. Step 1: Using kitchen twine, tie the legs together, looping the twine around the legs several times so that they are secure; finish with a knot. Step 2: Twist each wing so that the wing tip tucks under the neck cavity of the bird. You may need to twist with a bit of force. The weight of the bird and the tension of the wing should keep it in place. Step 3: Season and prepare the bird according to the recipe directions.

4. Drizzle salad with dressing and toss to combine. Serve immediately.

the bottom of the roasting pan and carefully put the pan in the oven. Roast until the turkey is light golden brown, about 45 minutes.

7. Reduce the oven temperature to 350°F and continue

roasting, basting with the warm chicken stock every 15 minutes, until an instant-read thermometer inserted in the thigh registers 160°F, about 2 1/2 hours longer.

8. Remove the turkey from the oven, transfer to a large cutting board, and tent loosely with foil. Let rest for 30 minutes before carving.

9. Strain the stock in the bottom of the roasting pan

Herb Roasted Turkey 1 (17-pound) turkey, rinsed well and patted dry 10 tablespoons (1 1/4 sticks) unsalted butter, softened 2 tablespoons finely chopped fresh flat-leaf parsley 1 tablespoon finely chopped fresh sage 1 tablespoon finely chopped fresh rosemary 1 tablespoon finely chopped fresh thyme Kosher salt and freshly ground black pepper 6 cups chicken stock, homemade or store-bought 3 large carrots, cut into 1-inch pieces 3 large stalks celery, cut into 1-inch pieces 2 large onions, quartered

through a strainer lined with cheesecloth or paper towels into a medium saucepan. Discard the solids. Boil the stock until reduced to a sauce consistency. Arrange the turkey on a large platter and drizzle with the reduced stock.

Easy Turkey Stuffing

1/4 cup butter or margarine 1 medium onion, chopped (1/2 cup) 2 medium stalks celery, chopped (1 cup) 2 medium carrots, chopped (1 cup) 8 cups dry bread cubes (about 11 slices bread) 2 tablespoons finely chopped fresh parsley, if desired 2 tablespoons poultry seasoning or dried sage leaves 1 teaspoon salt 1/4 teaspoon pepper About 1/2 cup Progresso™ chicken broth (from 32-oz carton)

a food processor and process until smooth. Season with salt and pepper.

3. Preheat the oven to 450°F. 4. Put 4 cups of the chicken stock in a medium saucepan and keep warm over low heat.

5. Season the cavity of the turkey with salt and pepper and

fill the cavity with half of the carrots, celery, and onions. Rub the entire turkey with the herb butter and season liberally with salt and pepper.

6. Scatter the remaining vegetables on the bottom of a large roasting pan. Fit a rack over the vegetables and put the turkey on top of the rack. Pour the remaining 2 cups stock into

Add onion, celery and carrots; cook, stirring occasionally, until tender.

2. In large bowl, mix bread cubes, parsley, poultry

seasoning, salt and pepper. Add broth and butter-onion mixture, stirring until desired moistness (stuffing will become a little more moist during roasting because it will absorb juices from turkey).

3. Use to stuff 1 (14- to 18-lb) turkey. After stuffing turkey,

place any remaining stuffing in 1- or 2-quart casserole that has been sprayed with cooking spray; cover and refrigerate. Bake stuffing in casserole with turkey for last 35 to 40 minutes of roasting time or until thoroughly heated.

Casie (Renyer) and Cade Post of Branson, Missouri met while working at Westgate. Casie was looking for a new job but decided to stick around long enough to get to know Cade better before switching jobs. Cade’s dad also worked with them and was on the sidelines trying to set the couple up. Soon the happy couple began to date and then started talking about an engagement. Casie’s sister gave the couple free tickets for the nature trail at Top of the Rocks. With the help of Casie’s sister, Cade started planning the proposal! Cade proposed while standing in front of one of the beautiful Top of the Rocks’ waterfalls. Cade had Casie’s sister ride on a golf cart far enough behind them so Casie couldn’t see her. With her sister in hiding waiting to capture the moment on camera, Casie said, YES! On November 26, 2016, the happy couple tied the knot at Brookside Church. Casie’s favorite part of their wedding day was when Cade said his vows to her. Another highlight for her was when Cade included Casie’s daughter in the vows by giving her a ring to show his commitment to the entire family. As of that day, Casie’s daughter calls Cade, Daddy! The couple enjoyed a beautiful honeymoon in Ireland.

Made by hand in the heartland. by Jazmin Decker

Printing photos to capture the memories of family outings, memorable vacations, or lifelong friendships has been the ultimate way to acquire long lasting memories ever since the seventeenth century. Mpix, a premium photo lab located in Pittsburg, Kansas, is known for creating photographic stationary and goods printed with top-of-the-line paper and exceptional color. This past week I had the opportunity to test out the printing company for myself and I must admit, I was quite impressed! When exploring the website, the very first step to sharing photographs and creating photo goods is to sign up and create a free account. After creating the account, the website opens to various choices of photo gifts, photo books, wall art, and prints to choose from and customize to best suit whatever the occasion may be. Mpix provides a variety of options to choose from, whether that be trading cards, magazine covers, calendars, mounted frames, photo albums, keychains, memory boxes, etc.! To get started with ordering your prints, you must first upload whatever photos you would like to possibly use and put them into an album on the website. Once you add photos from your desktop or from a source of social media, make sure to click upload and all your selected photos will be located

in the album on the website for the rest of the time. I ultimately uploaded as many pictures as I wanted to in order to dabble and experiment with the different photo gifts that I later decided to order. Because I’m moving into an apartment soon and need a little assistance with decorating, I personally chose to order a large dry erase calendar to help me stay organized and on track while away at college as well as a few photo magnets to add a little personality to the fridge in the new apartment. Navigating the website was incredibly easy to use and everything was so organized that I could find exactly what I wanted to create in such a short amount of time. The admirable quality about Mpix is that they make sure to include all the information about the product that is needed to make the best and most detailed decision as possible. When I went to order the dry erase board, for example, the company made sure to include which size I wanted to choose from, the material the board was made from, what the entire gift includes, which type of style I wanted the board to be in, and finally the processing time to create the entire gift. With all this information included, I knew exactly what product I was bound to receive and about how long it would take to receive it all.

69

Along with the multiple photo gifts that I chose to purchase for myself and for others, I thought it would be a great idea to create a framed print for the apartment to remember the incredible family and friends that I have in my life. Framing prints online is a lot more difficult than in stores because a variety of choices must be made during the creation of the product. With that being said, it was very easy to navigate the framed photo prints tab and create the gift that I will cherish for a lifetime. Mpix allows you to choose from three professional quality photographic papers with one of the sixteen frame finishes. Starting at 3.5x5 going all the way up to a 20x30 print, Mpix allows you to create a high quality framed print with whatever color or finish you would like your frame to be in all for a very reasonable and affordable price. The problem multiple customers and I have when printing out photographs in this large of a size is that the final print is either pixilated or has a green tint to it. The quality of the prints at Mpix stays true to the photo you initially upload on the website and arrive looking just as beautiful as they did when they were taken. Besides the website being extremely easy to navigate, the number one quality that sets Mpix above the rest is their exceptionally fast processing

70

and shipping times. Many orders ship in 24 hours after the order has been uploaded, while strictly print orders can be shipped out all in the same day! When shipping your orders out, you can choose between Economy (10+ days shipping), Standard (2-5 days shipping), or Expedited (1 business day shipping). The delivery date of my prints and gifts was spot on and packaged perfectly to where the items weren’t damaged or lost in the process of traveling to my house. The items that I had ordered by Mpix turned out in perfect condition and were in even better quality than I had hoped or expected. As a photographer, I tend to take multiple pictures to capture every memory that I possibly can. With the help of Mpix, I am now able to have material prints that I can cherish for a lifetime. Mpix provided exceptional service and high-quality prints that will allow me to preserve my past for many years to come. If I have the opportunity to endorse this company again in the near future, I definitely will take advantage of their wonderful products and create many more memorable items. Mpix is the go-to source for any prints if you’re looking for commendable service and expeditious shipping time. Like Mpix says, “preserve your past. Trust us, you’ll be glad you did”.
