The lake was constructed between 1954-1958 on the White River by the U.S. Army Corps of Engineers. The lake is one of the popular draws for the nearby town of Branson, Missouri. There are several marinas along the lake while Table Rock State Park is located on the east side, both north and south of Table Rock Dam. The Missouri Department of Conservation operates a fish hatchery, which is used to stock trout in Lake Taneycomo through Table Rock Lake as well. The cold water let out from the dam creates the perfect trout fishing environment in Lake Taneycomo. Table Rock State Park provides public access to the lake with facilities that include a boat launch and full-service marina, a cafe, a boat rental and scuba dive shop, a campground with full RV hookups and a yurt, fishing access, swimming access, picnic areas, an amphitheater, hiking and mountain bike trails, and a dump station.

Br i d al In the last issue of Missouri Magazine we highlighted ?Bridal Cave? a wonderful family entertainment attraction at the Lake of the Ozarks. Since our interview Bridal Cave has announced a milestone event. That event is the celebration of their 70th Anniversary it took place on Saturday, April 14, 2018. Since it is not every day that a business celebrates 70 years in business, we felt is deserved a second article revisiting those 70 years. April 14, 1948 was the day the Bridal Cave Development Company, Incorporated was founded. It was also the same day that work began excavation to open a wild cave to public access.

This was no small task since this involved painstaking work installing wooden walkways and expanding the entrance to the cave. There were also roads to build and the construction of buildings, not to mention the electrical work that was necessary to light the cave for the tours. But finally six month later on October 16, 1948 Bridal Cave officially began offering tours to the public. When work began on the cave two separate crews embarked on two separated projects. The first was a crew that was given the task to build a road for public access to the cave from old Hwy. 5. This crew was also responsible for building parking lots and installing power lines. Many people are surprised to learn the first structure built on the grounds was a dock. With no access to the cave from

Old Hwy. 5 the only way to reach the cave was by water. The dock allowed the second crew to simultaneously begin excavating the cave entrance. Without that initial boat dock, they wouldn't have been able to get to work each morning. With no power lines run to the cave the initial work had to be performed by the light of lanterns. The excavation crew was responsible for hand digging an entrance from the original entrance which measured 18x36?. They also had to build wooden walkways and installing electrical lighting inside the cave. This was significant for the time. Offering guided tours with electrical lighting made Bridal Cave one of the first in the nation to offer such a feature. With the opening of the cave in October 1948, it didn?t take long for the word to get out about this amazing underground attraction at the Lake of the Ozarks. Within no time inquiries were coming in asking for weddings to take place at Bridal Cave. This was a bit of a surprise to the original owners. While the name of the cave had been inspired by it?s rich native American folk lore?s and stories written about weddings taking place inside the cave? there never were any plans to host weddings in the cave when it first opened.
Celebrating 70 years in business
After continual requests poured in the cave hosted its first wedding June 1, 1949. Mr. & Mrs. Basil Cole from Sedalia MO were the first couple to exchange vows in the newly opened cave. Since then nearly 4,000 couples from around the world have said ?I do? in the stalactite adorned underground chapel. 1 tbsp. olive oil 1 medium onion, chopped 2 garlic cloves, minced pinch red pepper flakes 1 lb. ground beef kosher salt Freshly ground black pepper 2 tbsp. tomato paste 1 tsp. dried oregano 1 (28-oz.) can crushed tomatoes 2 tbsp. thinly sliced basil, plus more for garnish 1 large head of cauliflower, (about 3 cups) cut into florets, blanched, and drained well 1 1/2 c. fresh ricotta 2 c. shredded mozzarella 1/2 c. freshly grated Parmesan
DIRECTIONS 1. Preheat oven to 375°. Heat olive oil in a large saucepan over medium heat. Add onion and sauté, stirring often, until onion is soft, about 5 minutes. Stir in garlic and red pepper flakes and cook for one minute. Add meat and season with salt and pepper. Sauté until browned. Drain fat. 2. Add tomato paste and oregano and cook over medium heat for 2 minutes more, until slightly darkened. Add crushed tomatoes and bring sauce to a simmer, reduce heat and cook, stirring occasionally, until slightly reduced and flavors have melded, 10 to 15 minutes. Remove from heat and stir in basil. 3. In a large bowl, pour sauce over cauliflower and stir to combine. In a large baking dish, place half the cauliflower in an even layer. Dollop all over with half the ricotta, and sprinkle with half the mozzarella and parmesan. Add the rest of the cauliflower in an even layer on top, and top with remaining cheeses. 4. Bake until cheese is melty and golden, 25 minutes. Garnish with basil and serve.

DIRECTIONS 1. Preheat oven to 400ยบ. Place chicken on a cutting board and make 5 slits in each breast, being careful not to cut through completely. Transfer to a small baking sheet. 2. In a small bowl, whisk together olive oil, lemon juice, dill, parsley and garlic. Drizzle over chicken breasts, making sure olive oil mixture gets in the slits. Season with salt and pepper. 3. Stuff each chicken breast with zucchini, tomatoes, red onion and lemons. Sprinkle crumbled feta and mozzarella on top. 4. Bake until chicken is cooked through and no longer pink, about 25 minutes. Garnish with more dill and parsley. Serve warm.

DIRECTIONS Heat broiler. In a large bowl, combine black beans, corn, 1/2 can green chiles, Grilled & Pulled Chicken Breasts, cheddar, taco seasoning, and fresh cilantro. Stir until combined. Halve and separate three avocados, removing pit and hollowing out insides. Mash insides in a small bowl and set aside. Place avocado boats face up and fill each with 1/3 cup of filling. Sprinkle with more cheddar and more fresh cilantro, then broil until cheese is melty, about 2 minutes. Make the dressing: In a medium bowl, combine ranch, lime juice, remaining green chilies, cilantro, salt, and pepper and stir to combine. Fold in mashed avocados and mix until smooth. Remove avocado boats from oven and transfer to serving dish. Drizzle with dressing and garnish with more cilantro, if desired. Serve immediately.

In a large bowl, combine cauliflower, 1 cup mozzarella, eggs, 1/2 cup Parmesan, and garlic powder and season with salt and pepper. 2. Press mixture into skillet, making sure to get up the sides, and bake until deeply golden and dry, 25 minutes. 3. Spoon a thin layer of pizza sauce over crust and sprinkle with remaining mozzarella and Parmesan. Top with mini pepperoni and bake 5 minutes more. 4. Sprinkle with basil, slice, and serve.

DIRECTIONS 1. Preheat oven to 400°. Place bell peppers cut side-up on a large baking sheet and drizzle all over with olive oil, then season with salt and pepper. 2. In a large skillet over medium heat, melt butter. Add onion and cook until tender, about 5 minutes. Add garlic and cook until fragrant, 1 minute more. 3. Add shredded chicken and hot sauce and toss until combined. Cook until the mixture comes to a simmer, then remove from heat. 4. Divide chicken mixture between pepper halves. Top each with gouda and bake until cheese is melted and peppers are crisp-tender, about 20 minutes. 5. Drizzle each stuffed pepper with ranch and sprinkle with chives.

Cook until soft, 5 minutes, then add garlic, cumin and chili powder and stir until combined. Add shredded chicken and 1 cup enchilada sauce and stir until saucy. 3. On a cutting board, use a Y-shaped vegetable peeler to make thin slices of zucchini. Lay out three, slightly overlapping, and place a spoonful of chicken mixture on top. Roll up and transfer to a baking dish. Repeat with remaining zucchini and chicken mixture. 4. Spoon remaining 1/3 cup enchilada sauce over zucchini enchiladas and sprinkle with both cheeses. 5. Bake until melty, 20 minutes. 6. Garnish with sour cream and cilantro and serve.

DIRECTIONS 1. In a medium skillet over medium heat, heat oil. Add onion and cook until tender, about 5 minutes. Add ground beef and taco seasoning, breaking up the meat with a wooden spoon. Season with salt and pepper, and cook until the beef is no longer pink, about 6 minutes. Drain fat and set aside. 2. Flip tomatoes so they are stem-side down. Cut the tomatoes into six wedges, being careful to not cut completely through the tomato. Carefully spread open the wedges. 3. Divide taco meat evenly among the tomatoes, then top each with cheese, lettuce, and sour cream. Serve.

Ozar k s Am ph it h eat er After a long winter it is great to find the rolling Ozark hills alive with the color and smells of spring. Like clockwork and in keeping with the old rhyme? April showers did in fact bring May flowers and the return of friends and families from their winter hibernation to enjoying the ample beauty and outdoor attractions found in our wonder state of Missouri. One such attraction our Missouri Magazine readers voted ?The Best Large Outdoor Venue? in the ?Best of Missouri? issue. The Ozark Amphitheater boasts more than 10,000 seats. In addition there are between two and three thousand additional lawn seats. New this year will be a VIP deck offering the best seats in the house. The truth is wherever you sit in this beautiful venue you are going to have an amazing musical experience. Music under the stars in a venue tucked away in the beautiful Lake of the Ozarks hills... Can it get any better than that? The venue was completed in 1993 and over the years has hosted world class acts such as the Charlie Daniel?s Band, Foreigner, REO Speedwagon, Miranda Lambert, Blues Traveller, Willie Nelson and many more. But it took a while to get there. After struggling between ownerships the amphitheater sat vacant for a number of years until it was purchased by Bill Carle and Robert Mein, two business partners that worked together for several years at Red Rock Amphitheater in Colorado.
The venue had fallen into poor condition after sitting vacant for a number of years. It took the two partners nearly two years to make necessary repairs to reopen in July of 2015. In addition to a much needed facelift, lots of painting and general cleaning of the stage was necessary. The backstage area also required a wastewater treatment update. These were just a few of the changes needed to reopen the doors. Carle is no stranger to this line of work. He grew up in a family that had been in tourism for many years. His mother ran the trading post at Red Rock when he was a child. Carle and Mein discovered the Ozark Amphitheater property online. They followed that with a few trips to Camdenton to see if the property had sold. Carle remembers being intrigued by the property when he discovered the location being in Camdenton. He was familiar with the area since he had visited it when he was a child. Helping with the family business as a child he remembered watching trucks pull up to ?Blair ?s Cedar ?in Camdenton. He said ?this made me feel I already had a connection to the area.? Carle remembers purchasing the property. He said, ?There was an auction and I just sat there until I was the high bidder.? Following the purchase Carle and Mein were also joined in business by Mike Flaherty who was also from Colorado. Dustin Day manages the property and Mary Kay Von Brendel works Public Relation and Marketing for the venue. Von Brendel, since the opening of the amphitheater has become the face and voice for the venue. ?I remember driving by the venue when it was closed. I actually snuck in and stood on the stage and began to sing? the acoustics were amazing and I knew I had to be a part of this incredible gem,? said Von Brendel. ?I began researching and found out the group from Red Rock had purchased it and I reached out to them and joined up with them in 2014 and the rest is history.? Von Brendel remembers all the work that went into reopening the doors to the Amphitheater. She said it was a true labor of love. She also recalled one of the owners saying about the venue, ?She?s a big ship; it will take a lot to turn her around.? Four years later, and we have come a long way. In fact they were voted ?Best Large Outdoor Venue? by Missouri Magazine readers in 2017. Von Brendel went on to say, ?We were also ranked #5 of the Top 10 Outdoor Venues in the State of Missouri, and we?re just getting started? we are very excited with what 2018 has in store.? Von Brendel said the 2018 will kick off a bit different. In fact the Amphitheater will be doing a first time ever event we are calling the ?Stampede on the Stage?, Saturday, May 19th. This event will feature live bull riding and mutton busting right on our stage at the amphitheater.
Von Brendel said they will be hosting the event in conjunction with the Camdenton VFW Post 5329 and Sho-Me Rodeo Productions. Then of course there is music. Memorial Day Weekend the Amphitheater is excited to announce that ?Alabama? will take the stage the evening of Saturday, May 26th. Von Brendel said ?We already have ticket sales from over 23 states, so this promises to be a great way to kick off the summer.? This is the time of the year when wineries release their finished wines. The white wines, which usually require less time to age, it will be the 2016-2017 vintage. The reds require a bit more aging, usually in oak barrels, and take a bit longer before they are ready to be sent to the marketplace. What results is the topsy-turvy world of the wine retailer. The white wines which have an active life of approximately five years start at higher prices which will go down as the get older while the red wines do just the opposite, increasing in price and depth as they get older. The age rule is not iron clad but rather a suggestion because nobody ever really knows what is in the bottle until it is opened.
With that in mind, the latest release from Line 39 ( http://www.line39wines.com/), a winery that produces some excellent wines at even better prices. Their trick is simple, source grapes from vineyards in the wine grape growing region that are known for growing quality grapes but are not in
the high dollar zone and make the best possible wines from them, which they definitely do.
Lin e 39 2015 Pin ot Noir ,($14.99). I start with the Pinot Noir because it is one of my favorite varieties and the variety that I am most critical of. Pinot Noir wines, to use a well worn term, are bold and beautiful and if they are not, I can be mean, cruel and curmudgeonly. No problem here, this wine, is remarkable and more than fills the definition of what a Pinot Noir should be. The wine accents cherries and rose petals in the aroma and cherries, oak and vanilla in the flavor. It is a bright and open wine with a soft fruit flavor and an interesting aftertaste. While this wine is not a rival to the great Burgundies of France, it most certainly is a fine example of a well made and affordable California Pinot Noir.

Petit Verdot, Petit Sirah, Zinfandel and Merlot, grape varieties rarely see in the same blend, have been masterfully combine to produce a really interesting wine that wine explodes with the aromas of blackberries, raspberries, plum chocolate and oak. The flavor leans toward the plum backed up by a noticeable hint of chocolate that then continue on to a luscious and long finish. While this may not be your usual red wine choice it is an ?excursion? into the modern and exciting world of 21st century wines.
Lin e 39 2016 Sau vign on Blan c ($11.99). There is no fooling with this wine; it is as classical a Sauvignon Blanc if there ever was one. The wine is crisp, dry, and acidic with the lemony citrus and herbaceous (grass like) flavor that has made Sauvignon Blanc the popular wine to serve with sea foods of all types and in the past was the only wine that was recommended to accompany Asiatic dishes under the product name of Wan Fu. While this variety is often overlooked by white wine enthusiasts, Line 39 Sauvignon Blanc could rectify that situation.

The Line 39 Cab is a true child of California stressing fruit flavors over the usually austere and stiff character often associated with the variety. The color is a deep and dark garnet introducing the aromas of blackberry and ripe plum followed by hints of vanilla. These carry over to the flavor where they mingle with a raspberry element and the very discernible flavor of chocolate and oak. This wine has a wonderful softness about it and reflects many of the flavor and aromas found only in well-aged wines. Rather than being saved to be served only with the heaviest of meat dishes, this wines open and friendly spectrum allows it to be friendly with a much broader selection of meat dishes and is the perfect accompaniment to anything off of the barbeque grill.
