10GMS FRENCH ONION / ESCHALOT 1 BANANA CHILI (RED) HOMEMADE FETTUCCINI PASTA 50-80MLS WHITE WINE 100 - 150MLS FISH STOCK 5 GMS UNSALTED BUTTER 3 HEIRLOOM CHERRY TOMATOES 3 QLD 10-15 PRAWN CUTLETS 1 NEW ZEALAND ARROW SQUID 3 DIAMOND SHELL CLAMS 3 SPRING GULF BLACK MUSSELS DE BEARDED 4 LOCAL PIPPIES 200 - 240GM MORETON BAY BUG LEMON CHEEKS MICRO PARSLEY – FOR GARNISH
Put a heavy based frying pan on low heat with a drizzle of oil, before smoking point add finely diced onion, garlic and half of a chopped banana chili. Sautee lightly then add the Moreton bay bug half’s and clams, mussels, pippies and sautee for 1 min on low heat. Deglaze with 50-80ml white wine, then add 100150ml of the fish stock, let it simmer. Add prawns, squid and cherry tomatoes then cover to create steam for 3 mins to cook all the seafood. Blanch the portioned pasta in hot water and add to the pan, mix with a spoon or tongs Finish with a knob of butter, salt and lemon to taste.
Method Prepare fish stock In a pot filled with cold water, add chopped celery head, a medium carrot, 1 brown onion. In a muslin cloth combine 5 bay leafs, 1 tsp of black whole peppercorns, bunches of parsley stalks, rosemary and thyme. 5 kg cleaned snapper frames. Place on low heat for 2 hours. Do not boil. Allow to simmer lightly. Skim off any excess fat from the surface of the broth so it does not taint the delicate flavour. Finely strain into a container and chill in ice bath for 2 hours.
