As we return from our traditional winter break we are delighted to present a comprehensively revamped Mallorca Life & Style. After speaking to readers, advertisers and associates over the past few months we concluded that, while the magazine remains far and away the most popular read for English-speaking residents and visitors, rapidly changing publishing trends and readership habits have opened up new opportunities and challenges for a lifestyle and society magazine. To that end, we have re-branded the magazine to give it a more stylish, functional and reader-friendly design, and re-focused the content to include more fashion, health and beauty news and views – both local and international. Readers also requested more “real-life” stories and this issue is packed with articles and features about people, including expanded coverage of the glamorous global world of celebrities and trend-setters. The Devil Inside

This year marks the 75th anniversary of Disney’s cartoon classic Snow White and the Seven Dwarfs, and 2012 also sees the release of two totally different projects featuring the popular fairytale character. Visionary director TARSEM SINGH took the plunge and his spectacular 3D re-imagining of the classic fairytale, “a spirited adventure comedy filled with jealousy, romance, and betrayal”, hits the big screen first. Once upon a time in a land far, far away lived a beautiful princess… Hang on, we all know how this pans out – so what’s different about this 21st century offering. Well, what happens here is the evil stepmother (JULIA ROBERTS) kills her husband (SEAN BEAN) and banishes his daughter (LILY COLLINS – the real daughter of former singer PHIL) to the forest after she attracts the attention of a charming prince (ARMIE HAMMER), who the evil queen also has affections for. As we all know, she meets seven dwarfs – but these are a band

of diminutive highway robbers. Together they “roar into action in an epic battle that blends spectacle, magic and contemporary humour in Singh’s signature, jawdropping visual style”. This version with its humorous twist has won the release race but critics are looking forward to the darker Snow White and the Huntsman (featuring KRISTEN STEWART, CHARLIZE THERON and CHRIS HEMSWORTH), which is released worldwide on 1 June. The dwarfs in Mirror Mirror are played by MARK POVINELLI (Half-Pint), JORDAN PRENTICE (Napoleon), DANNY WOODBURN (Grim), SEBASTIAN SARACENO (Wolf), RONALD LEE CLARK (Chuckles), MARTIN KLEBBA (Butcher) and JOE GNOFFO (Grub).

Release date: 6 January (USA); 16 March (Spain & UK) This received bad reviews Stateside but the public loved it over there and the dollars have been filling box office tills. A woman becomes involved in a series of unauthorised exorcisms during her mission to Italy while discovering what happened to her mother, who allegedly murdered three people during her own exorcism. Stars FERNANDA ANDRADE, SIMON QUARTERMAN and EVAN HELMUTH.

The Pirates! In an Adventure with Scientists Release date: 28 March (Spain & UK); 27 April (USA) This family animated adventure finds a bungling pirate captain on a mission to defeat his rivals, Black Bellamy and Cutlass Liz, for the coveted Pirate of the Year Award. Voices of HUGH GRANT, SALMA HAYEK and JEREMY PIVEN.

Wrath of the Titans Worldwide release: 30 March All-action sequel… A decade after his heroic defeat of the monstrous Kraken, Perseus (SAM WORTHINGTON) is trying to live a quiet life but is forced to partake in a treacherous quest into the underworld to rescue his father, Zeus (LIAM NEESON), overthrow the rebelling Titans and save mankind. Also stars RALPH FIENNES, DANNY HUSTON, and EDGAR RAMIREZ.

in Disney’s The Lone Ranger last month with ARMIE HAMMER (The Social Network) in the lead role with support from RUTH WILSON (main role in the 2006 Jane Eyre mini TV series) and HELENA BONHAM CARTER. DEPP will then move on to the summer shoot of Pirates of the Caribbean 5. Also in his diary is the currently untitled Dr. Seuss biopic which he will produce and star in. Dr. Seuss (Theodor Geisel) drew advertising and comic strips, then political cartoons during World War II, before writing many children’s books (including The Cat in the Hat) which became worldwide classics.

BBC TV star BENEDICT CUMBERBATCH (Sherlock Holmes), has recently finished working on The Hobbit (voicing Smaug the dragon) and is now being beamed up to the cast of Star Trek 2 (working title) in a villain’s role. CHRIS PINE, ZACHARY QUINTO, ZOE SALDANA, ANTON YELCHIN, SIMON PEGG, KARL URBAN and JOHN CHO are all reprising their roles from the 2009 original. Former Robocop main man PETER WELLER is also on board.

Universal Pictures are now filming a big-

screen adaptation of the classic musical Les Misérables with HUGH JACKMAN as convicted bread stealer Jean Valjean and RUSSELL CROWE as his nemesis Inspector Javert. Also cast are ANNE HATHAWAY as Fantine; and SACHA BARON COHEN as Monsieur Thénardier. HELENA BONHAM CARTER is Madame Thénardier; AARON TVEIT (Gossip Girl) plays Enjolras; and AMANDA SEYFRIED is Cosette.

The latter is also filming Lovelace, a biopic

on the legendary early ‘70s porn star Linda Lovelace. The Mamma Mia! babe will portray the world-famous sex star while PETER SARSGAARD (baddie in the Green Lantern) plays the husband she eventually divorced, accusing him of coercing her into the X-rated industry. Another project, Inferno: A Linda Lovelace Story, stars MALIN AKERMAN (Watchmen) in the role as the adult movie legend who starred in 1972’s Deep Throat with MATT DILLON in the spouse role. JAMES FRANCO plays Playboy king Hugh Hefner and SARAH JESSICA PARKER is the famous feminist journalist Gloria Steinem.

2011 Oscar nominee HAILEE STEINFELD, who got her career off on the right foot in True Grit, has landed her first major role since her impressive debut, playing lead in yet another revamp of Romeo and Juliet with The Pillars of the Earth youngster DOUGLAS BOOTH as her tragic lover. This project, which has been described as Shakespeare for the Twilight generation, also stars DAMIEN LEWIS as Lord Capulet and STELLAN SKARSGARD (Mamma Mia!) in the shoes of the Prince of Verona.

MUSIC HEADLINES THIS MONTH SO BO is said now to be worth over £22 million and has plans to buy a horse and learn how to ride it – now that’s another horse that will go to war! As we all know she is not a very good traveller and while on a plane to Australia she kept passengers in first class awake as she was snoring “like a tractor engine”. After the failure of last year’s Y (as in why) Factor, SIMON COWELL is so desperate to find a decent act he’s even tried to sign UGGIE THE DOG – the canine star from the multi Oscar-nominated movie The Artist. Barking mad or what? Auditions for this year’s fiasco are taking place around Britain from 3 March.

During this publication’s winter hiatus the Mallorca Rocks organisation pieced together the first tracks for this summer’s lineup. Their rock ‘n’ roll train will get back on the rails when British singer/songwriter ED SHEERAN opens the 2012 season on Tuesday 5 June. At the time of going to press no other acts had been announced but more were expected to be named in the near future. For more info go to: mallorcarocks.com.

Talking of that show… on a recent visit to the UK a trip down to Brighton to see 1980s US punk legends THE MISFITS was taken in and, whilst walking the promenade, a familiar figure power-walked past. It was the one with the funny-shaped face for last year’s winners LITTLE MIX, who apparently were in town recording their debut album (JESSIE J is writing some songs for them). It was due for release this month but has been put back so more work can be done to improve it. Still on JESSIE J… she will be a judge/coach for the BBC 1’s new talent show (not another one!) The Voice, along with WILL.I.AM, TOM JONES and DANNY O’DONOGHUE (THE SCRIPT). The show will be aired on Saturday nights starting this month.

The day before WHITNEY HOUSTON died a picture appeared in one of the UK daily red top publications – she looked awful, and that night she “partied her tail off” once too often. The BARBRA STREISAND tribute said it all: “She had everything – beauty, a magnificent voice. How sad her gifts could not bring her the same happiness they brought us.” And the hotel room where she died is now booked out for the “foreseeable future”. The week after her death, ADELE equalled Whitney’s record for longest run at number one for a female artist on the US album chart when 21 levelled up with 1992’s The Bodyguard. She has gained a lot of respect after her decision to make freeloaders, who get complimentary concert tickets, donate at least £20 to charity – I bet a few footballers won’t be happy about that. Did you know that last year someone, somewhere in the world, bought a copy of 21 every eight seconds.

One reunion that has already happened is the original SUGARBABES line-up. SIOBHAN DONAGHY, MUTYA BUENA and KEISHA BUCHANAN are currently in the studio but they will have to find a new name as their original one is still owned by their former management. The current members of that band might be looking for new jobs in the near future. Hits for JADE EWEN, AMELLE BERRABAH and HEIDI RANGE have dried up of late and three new names might be drafted in to replace them. But the latter could be called up for the ATOMIC KITTEN get together. Their management wants to make a STEPS style documentary… they got their names back in lights last year after the Sky Living channel’s series. It’s not known if the original line-up of HEIDI, KERRY KATONA and the ever-present LIZ McCLARNON is preferred or the first two replacements, JENNY FROST and NATASHA HAMILTON.

Madonna Teams up with Hottest Music Stars for new Album So will 2012 be a good year for MADONNA? She got it off with a bang when chosen ahead of LADY GA GA to perform at the Superbowl half-time show last month. This prestigious event pulled in a record audience of 117.8 million – three million more than actually watched the game itself. The 12-minute medley featured several hits plus Give Me All Your Luvin, a track off her forthcoming new album, MDNA (a pseudo-

blend abbreviation of Madonna), which is released on 26 March. Madge has once again teamed up with producer WILLIAM ORBIT for this, her 12th, studio album. As with past offerings, it has been shielded to stop bootlegs leaking on to the internet but Masterpiece, a tune from the film W.E., which she produced, won a Golden Globe in January. She is also embarking on a 50-country tour in May and plays Barcelona

on 20 and 21 June. Other album releases this month include the MILITARY WIVES with In My Dreams and KATIE MELUA with Secret Symphony on the 5th and Spanish favourite BRUCE SPRINGSTEEN with Wrecking Ball on the 6th. LEONA LEWIS was supposed to release her long-awaited third offering, Glass Heart, on the 26th but that has been delayed until…?

Night of The Artist The Artist confirmed expectations at the 84th Academy Awards when it won five awards. It became the first silent motion picture in 83 years (after Wings, at the first Oscars) to be named best picture and was also the first French film to win in that premier category. Michel Hazanavicius won the best director award and Jean Dujardin was judged best actor, and the film’s other two awards were for best original scorer and best costume design. Also as expected, Meryl Streep won her second Oscar for best actress for The Iron Lady (she previously won for Sophie’s Choice in 1982 and was best supporting actress in 1979 for Kramer vs. Kramer). After seven decades in the business Christopher Plummer finally won his first Oscar, as best supporting actor in Beginners (the oldest actor to win an Oscar); and the best supporting actress award went to Octavia Spencer for her role in The Help.. Host for a ninth time, Billy Crystal was in customarily acerbic form. “Nothing takes the sting out of these tough economic times like watching a bunch of millionaires giving golden statues to each other,” he quipped.

She attended Nightingale-Bamford School then St. Luke’s – starring on the field hockey team. She interned at Quest magazine before her potential was “noticed” by photographer Patrick McMullan at a charity auction. He subsequently took photos of her around town at various social events.

Olivia had a leading role in reality TV show The City, a spin-off of The Hills – also on MTV. Broadcast for two seasons (December 2008 to July 2010), the show followed former The Hills cast member Whitney Port as she moved to New York City to work for fashion designer Diane von Fürstenberg. Olivia was Whitney’s former co-worker and rival at the fashion house. She agreed to star in the series to familiarise herself with acting and was reportedly paid $12,000 per episode. Her role in the show involved a stint working in the PR department for Diane von Fürstenberg, then the accessories department at Elle magazine. For the second and final season, she took on reporting duties for Elle.

extreme transformations for roles may be needed to distract the public from concentrating on the actor, as opposed to the character he/she is playing in the movie. Our obsession with the celebrity industry has made an actor’s job that much more challenging. We have seen many actors go through strenuous transformations to play a role in a movie or TV show: Sylvester Stallone gained 30 pounds (14 kilograms) for his role in Copland; Renee Zellweger swapped her size zero figure for a muffin top in Bridget Jones Diary; and, most shocking of all, Christian Bale shrunk a huge 63 pounds (29 kilograms) for his role in the Machinist (eating only an apple and a can of tuna a day). Regardless of the psychology behind these transformations, one thing remains true – we love to see them. So when a pure, natural beauty such as Rooney Mara is transformed to look like a female version of Sex Pistols

roonez mara is transformed from a natural beauty to a female version of Johnny Rotten lead singer Johnny Rotten, unsurprisingly, it attracted some extensive media attention. The last significant time that Rooney Mara graced our screens was as an All-American college girl in the hit biography of Mark Zuckerberg – The Social Network. Since then, she has had part of her head shaved, the remaining locks died jet-black, her eyebrows bleached to appear invisible and her nipple and various parts of her face pierced more times than Vivienne Westwood’s pin cushion. Mara, who is the offspring of two football dynasties – the Rooneys (who own the Pittsburgh Steelers) and the Maras (who own the New York Giants) – received great praise from director David Fincher for her ability to portray the troubled but brilliant hacker. Of course, this rather extreme make-over was not just to upset her parents: it was for her latest role as rebel Lisbeth Salander, from the big screen adaptation of Stieg Larrsson’s novel Girl with a Dragon Tattoo. When asked

about the extreme make-over, Maras “biggest shock” was the illusion that her eyebrows had disappeared, as this “completely changed the shape of my face”. „I didn‘t even have pierced ears,“ Mara told Vogue magazine. „They put four holes in each ear, and, weirdly, that hurt the most.“ Still, the physical transformation of Rooney Mara to Lisbeth Salander didn’t seem to be enough for director David Fincher. During filming, Fincher asked his leading lady to, „Go out and get really, really drunk and come in the next morning so we can take pictures of you.“ He wanted to show the movie‘s producers that she could look „strung out“.

In fact, the makeover made such an impact on the public that it has almost eclipsed the movie itself in terms of media coverage. This is testament to the public’s primary interests – they are more concerned with the real person than the persona the actor is portraying. The ironic part of all this is that in many cases the “person” we read about in the tabloids and gossip magazines is in fact the persona that the media has created. Ironically, it seems the only time you can tell the most about who a celebrity really is, is when they are pretending to be someone else… “…but she‘s level-headed and hard-working. It‘s so odd how who people are comes out in auditions…” David Fincher told W magazine. The media has done a very successful job in manipulating the private lives of celebrities so that they appear just how the public would want them to. We may never know the true identities of the celebrities we obsess over on a daily basis but the unsettling question is: do we really want to? Mara has added her name to a long list of celebrities who have really gone the extra mile to portray a character in a movie. Gone are the days when a well-rehearsed accent and slight wardrobe adjustments were all that was needed to transform an actor into a completely, different and believable alter-ego. This is not because of a declining level of skill in the acting industry. It is due to a revolution in society and

an obsession with celebrity that has in effect turned a celebrity into a brand. As any marketing expert will attest: once a brand has been established in a consumer’s mind, it is very difficult to remove it. If actors are indeed now “brands”, then their job of convincing us that they are anything but the brand we read about every day will keep on becoming more and more difficult. The moment Karl Lagerfeld uttered the word “fat” in relation to global sweetheart Adele, collective gasps were heard from commentators, celebrities and journalists across the world. Comedian Alan Carr branded Lagerfeld a “vile old queen” for the comment, adding, “If I see him I‘d rip his grey hair off the top of his prune face.“ The headline of Carol Midgley’s column in The Times read, “Back off Karl, at least Adele doesn’t look like an undernourished lizard in a Pat Butcher wig.” And TOWIE’s Gemma Collins wrote in The Sun, “Karl was very overweight himself once. He has forgotten how this feels now he is skinny with yellow perma-tanned skin and a fluffy grey ponytail.” There were calls to boycott Chanel and a glut of articles appeared attacking Lagerfeld for the use of the word. In the same interview Karl called Russian men „ugly“ and said Greeks and Italians had „disgusting habits“ and the British monarchy was “totally unnecessary but pleasant“. Gentle racist and national stereotyping appears to be an acceptable trait from an eccentric artist, unlike branding a singer in the public eye “fat”. Was Lagerfeld being purposely controversial as part of a clever PR stunt designed to inhabit column inches? Or was he truly appalled that a woman should eat a doughnut and still be showered with awards? Perhaps, but most interesting is the reaction of those who jumped to Adele’s defence. Journalists, bloggers and the general public took to the web to vent their outrage. And what was their defence? That Adele has a “beautiful face”. The unsaid addendum to this seems to be “despite her figure”. Indeed, Lagerfeld was vilified for his comments by the same people who write with glee about stars who have the smallest of muffin tops poking out of their size 8 jeans. But Adele has never been one to flaunt her body, I hear you cry. Adele has said herself, “I love seeing Lady Gaga’s boobs and bum. I love seeing Katy Perry’s boobs and bum. Love it. But that’s not what my music is about. I don’t make music for eyes, I make music for ears.” And recently she added, “I don‘t want to be some skinny mini with my t*** out. I really don‘t want to do it and I don‘t want people confusing what it is that I‘m about.”

Part of Adele’s image is that she isn’t competing with Lady Gaga in the clothes department, doesn’t wear latex mini dresses like Katy Perry and is perfectly happy to dress in the simplest of black dresses, just as huge-voiced Edit Piaf once did, so as not to detract from her talent. However, in a world where aesthetic beauty is revered above all else should Adele expect to be exempt from the debate? Indeed, public figures whose careers are far removed from the entertainment industry are still debated in reference to their bodies and clothes. Olympic swimmer Rebecca Adlington received comments about her appearance because, being a swimmer, she is – an shock, horror – more muscle-clad than most. And there is more column space dedicated to Michelle Obama’s wardrobe than to the work she is doing. It seems that there is a tendency to use the fashion and entertainment industry standard of beauty across the board. That being said, there is no doubt that at just 23 Adele appears to be overweight. With a nation that is growing ever fatter should we ignore this in our defence of her? Adele has admitted in the past that she “hates exercise and loves food”. And, just as the skeletal models used in Karl Lagerfeld’s shows are certainly not healthy, being overweight can have serious health implications. So was Lagerfeld right in his fairly meek statement that Adele is “a little too fat”? In response to Karl Lagerfeld’s comments Adele says, “I‘ve never wanted to look like models on the cover of magazines. I represent the majority of women and I‘m very proud of that.” But soon after Adele was on the cover of Vogue, polished and stunning like any other model or role model. Furthermore, it appeared that her shapely figure had been slimmed down significantly. The

Daily Mail ran the headline “Proving Karl Lagerfeld wrong: Adele looks stunning as she graces the cover of Vogue magazine”. Which prompts the question: is anyone proving Karl wrong when magazines appear to be slimming Adele down to size 12 proportions? Following the backlash and Adele becoming Vogue’s latest cover star, Karl Lagerfeld was quick to follow up his statement with a retraction. “I’d like to say to Adele that I am your biggest admirer,” he began. “Sometimes when you take a sentence out of the article, it changes the meaning of the thought. What I said was in relation to (singer) Lana Del Rey and the sentence has since been taken out of context from how it was originally published... I actually prefer Adele. She is my favourite singer and I am a great admirer of her.” A real apology would of course have been to swap his size zero runway models with curvy girls, but then his look is based on a waif-like Coco Chanel, whose aesthetic is very far from Adele. And if his latest designs had all been for the curvier body would Vogue,

“You look like you enjoyed christmas … and January…” Seven weeks into 2012 and I had my first client today. No one wants styling in January because they’re all detoxing with weird green drinks at home. Met client outside Zara where she eyed me up and down. “You look like you enjoyed Christmas,” she said.

“And January,” she added, smiling sweetly.

She thinks she looks like Kelly Brook since she lost four stone and I started dressing her in clothes that weren’t bought by her maiden aunt. In fact she looks more like Kelly’s older, fatter sister. In fact before I got my hands on her she got mistaken for a man on more than one occasion. Still it’s mortifying. I must do something about this muffin top before it turns into a full-scale cake sale.

Thinking Weight Watchers is the way to go. Should have started in January with the rest of the world but still had boxes of chocolates to finish and anyway I thought the ski holiday would sort me out. Snow is a well-known fat burner. The Husband said I wouldn’t burn 5,000 calories a day sitting in the jacuzzi and that I actually needed to get on the slopes. I proved him wrong. I ate tons of steak and chocolate and I still lost five pounds – at least that’s what the scales at the resort told me.

So there I was queuing up alone (thanks to Susie who promised to come but bailed at the last minute saying that her dog was depressed and she had to take him to the vet) and I overheard two women chatting behind me. One was blond, plump and short and the other was brunette, slim, but with a very rounded tummy.

Diets I’ve considered are:

Dukan – Trendy with my clients since the Middleton clan are known followers. Would quite like Pippa’s bum so I was tempted until I found the following…

No alcohol. None. Zilch. Zero. I have a tod-

dler, a teenager, a husband and a stressful job (well I think it’s stressful, the teenager says I play Barbie every day) and I simply couldn’t get by without my nightly champers.

Protein = stinky breath. Not good for close proximity, which is a vital part of my job. Especially when I’m yanking dresses over the hips of my more delusional clients who insist they are still a size 8 despite all evidence to the contrary.

“Well I need to lose half a stone to fit into the Dolce number,” the blonde said proudly. Once they’d mentioned Dolce I couldn’t help myself and started suggesting places for them to find fabulous dresses. They were really happy to have my input until I turned to the brunette and asked, “So when’s it due?” “Pardon?” She looked confused “The baby, when’s it due? The reason I ask is that I brought all my maternity clothes online…” I continued until I saw the look on her face. “I’m not pregnant,” she said through gritted teeth. “When’s yours due?” she added quietly, her gaze lingering on my stomach. “I didn’t mean you looked pregnant, it’s just you looked too small to be here. I thought you were supporting her.” I turned to the blonde whose face was quickly turning a shade of crimson that didn’t match her yellow dress. I stuttered an apology but they both ignored me, which I think is really quite rude. Then they turned away and started talking loudly about how rude it was to butt into people’s conversations. When I finally got to the scales I was quite flustered but the leader, who introduced herself as Nancy, put me at ease by smiling and talking as one does to a child; calmly, slowly using simple language. She looked a bit miffed when I gave her my Miu Miu handbag, coat and phone to hold but she

recovered nicely just as I took my shoes off and popped them on top of the pile. Her face was slightly obscured but I figured she was probably grateful. The alternative view was a room full of porkers. I stepped on the scales and heard this huge scream, which I was told later came from me. “These scales are wrong,” I screeched. Well I didn’t think I was screeching until Nancy asked me to calm down. Apparently the scales were not wrong. “I’ve gained ten pounds in a month.” I was sobbing but that didn’t stop the blond bitch behind me piping up, “That’s one large baby sweetheart.” “How much do you want to lose?” Nancy asked, her smile looking ever more plastered on. “I’m suing Chateau Chateau for this.” “Shall we say…?” Nancy started. “Fine two and a half stone.” Her smile wilted. “You don’t need to lose two and a half stone. You’re already in your healthy weight range so the most you can lose is a stone though I don’t advise it because that takes you down to the lower end of your healthy weight.” After a long discussion about BMI that started with me explaining how I wasn’t even sure it was an accurate way to measure weight I concluded that a stone would have to do. Nancy insisted I stay for the “talk” but then asked me to leave when I took a phone call as she was harping on about the fat content of a pork pie. Apparently having a conversation with my hairdresser is rude. I think its rude interrupting someone when they’re about to find out if Marco really did shave a heart into his Chihuahua’s fur. When I got home my smarty-pants daughter scoffed, “Mum, you’re pure embarrassment, do you know that?” Then my husband chipped in. “Who asks someone at Weight Watchers if they’re pregnant?” He shook his head in bemusement. They both concluded that I am in fact very stupid.

Chef’s Selection For this first, new-look issue of 2012 we introduce a special culinary section presenting Mallorca’s top chefs and their signature dishes. Málaga-born José Manuel Bellido, head chef at Marc Fosh’s Misa Brasserie in Palma (misabraseria.com), invites us into his kitchen to prepare one of the restaurant’s appetising house specialities: fillet of hake with saffron parmentier, tomato compote and green bean vinaigrette.

Ingredients: Hake Potatoes Onion Saffron Fish stock Tomatoes Brown sugar Sherry vinegar Green beans

Green pepper Red pepper Pak choi Solivellas olive oil Salt White pepper Cream

Clean the hake and prepare fish stock with the bones. Roast the hake on a grill, leaving the skin crispy and golden-brown. Prepare a sauce with the potatoes, onion, saffron, fish stock and cream, and strain – leaving smooth and creamy. Add salt and more saffron to taste. Remove the seeds from the tomatoes, blanch and cut them into brunoise portions. To make the compote, mix and heat with the brown sugar and sherry vinegar. Cut the peppers into brunoise portions, blanch and let them cool. Repeat the process with the beans, blanching, peeling and letting them cool. Once the peppers and beans have cooled, mix with olive oil and “fleur de sel”. Blanch the pak choi and season with salt. Place a mounting ring on a soup plate and add the tomato compote to the base. Place the parmentier around the ring and the hake on top of the compote, with the skin facing upwards. Finally, on top of the hake add the green bean vinaigrette and peppers, pak choi and olive oil.

Interview The Man Behind the Chef ... From Málaga to Mallorca

Your New Virtual Showroom

Did you cook growing up… and did anyone influence you when you were young? My mother and father had a bar-café where I liked making tapas and things but not a high-class place – more like a bar-chiringuito in Málaga What made you decide to become a chef? I didn’t really think about becoming a chef until I was about 22 or 23. I started in a major hotel on the Costa del Sol in a commis chef role but I always had an artistic side and this was behind my wish to become a chef. I then moved on to a restaurant in Barcelona and I had my first connection to high-quality catering there. Whom did you learn most from? I must say my biggest influence is Marc Fosh. What inspires you? I love looking around at the market and the changes that have happened in this country since I first started. Inspiration comes from many areas on the island: the produce, the seasons and also sometimes other chefs in the kitchen. Are there any particular ingredients that define your cooking? What five ingredients are the most important to you? I like to work with many things. I love getting fresh ingredients and working with them: fish, meat, vegetables like in my signature dish… Mediterranean fish with refinements and Chinese pack choi, bringing two worlds together, although I don’t like to over-complicate dishes for our diners. Best kitchen aid? I like to use the siphon to create foams, a new kind of cooking called sous-vide where things poach at a set temperature in a vac-pac to seal in the flavour, with the garnish and sauce trapping all the flavour of the main ingredient. Also, the hand-held whisk is very important in our kitchen to produce those fine purees that are so distinctive in our cooking. We actually don’t have many aids in the kitchen… a good set of knifes I think is very important. Favourite food to cook? How much is the average cost of dinner for two, with wine? The price is always affected by what you choose but I would say on average dinner at between €30 and €40 and we have a set menu of €17.50 every lunchtime through the week. What was the most unusual dish on your menu last year and what was the reaction from your guests? We don’t really work with unusual things, preferring to stay with the seasons, the market and the costs, although we have been using a type of curry from Morocco and it seems to go down well with our guests. Your favourite cookbook? I have a lot of books but the Larousse Gastronomique has been a great influence on my style of cooking.

Where do you like to go out to eat yourself? I like simple Mediterranean foods cooked with flair. I like to eat around the coast, trying different varieties of foods. We are spoilt here in Mallorca, and especially Palma, that we have such a wide spectrum of eateries available. Your best piece of advice for a home cook? new worlD wines froM the olD worlD To start this series of articles on Spanish wine, I have chosen a wine region you may never have heard of – Somontano. Why? Because anyone who professes to have more than a passing interest in wine should already be aware that there are more than 60 officially-registered areas that have their own special rules and regulations – and La Rioja and Ribera del Duero are but two of them.

There were only seven Somontano bodegas in 1997. That number is now 34. Somontano has been referred to as the Aragonese Rioja, and the traditional grape varieties have largely given way to imported stock. The reds are made using syrah, tempranillo, cabernet sauvignon, merlot and moristel grapes, and the whites chardonnay, macebeo, gewürtztraminer, alcañón and garnacha blanca. Wineries range from traditional, small, family-run bodegas to modern, architect-designed monsters, but about 80 percent of the region’s production comes from three bodegas: Bodegas Pirineos, Viñas del Vero, and Enate. Bodegas Pirineos, controlled by Andalucian sherry house Barbadillo, currently markets six brands with a spread of 20 different wines. Viñas del Vero is mega. Its vineyards are so big, 550 hectares, that there are different microclimates. The production is a staggering six million bottles annually. An offshoot of the firm is Blecua, set up to produce a designer wine to be sold at a high price and, if the quality of the vintage is not up to its very high standards, no wine is made under the Blecua label that year. Enate was founded in 1991 and makes 14 wines, easily distinguishable by their designer labels by well-known painters.

Of the smaller bodegas, you will never be disappointed with the wines from Bodegas Borruel, Sierra de Guara, Olvena, Otto Bestué, Monesma, Laus, Mochis, Meler, Lalanne, idrias and Mateu.

the best vintages, indeed, those classed as excellent, are 1993, 1994, 1995, 1998, 2001, 2005 and 2006; while 1991, 1992, 1996, 1999, 2002, 2003 and 2004 are officially Very Good. Spoilt for choice i would recommend the following wines as being outstanding examples of the best of Somontano. They have all received high awards from independent wine critics over the years, and are placed in order of distinction:

Fine Dining at The eclectic menu is brought to life by a mish-mash crossover of the Indian subcontinent and Indochina

If you have travelled throughout the Far East and Indochina, every now and then you get a craving for those special flavours that, when tasted or smelt, bring back the feelings of warm nights and hot days sitting by a lapping sea on a fragrant beach. On one of those days recently we decided to search out a restaurant closer to home that could bring back all those sensations. Finding it quite easy to park in the Port of Andratx we took a slow stroll along the pleasant quayside and over a little pedestrian bridge, which obviously gives the restaurant its name, together with its portside location. On nearing the restaurant we were treated to one of those fragrances of the Far East: a mix of charcoal and lemon spice wafted towards us, enticing us in. The restaurant has a very luxurious setting that leads you to expect a very high standard of food and service – and we were not disappointed. The décor is typically modern, western-style Thai sumptuousness with wall displays and standing statues. We were directed to a large, airy table by the owner. The table was laid with linen tablecloths and napkins in a light brown colour scheme that nicely matched the restaurant’s colours. While we surveyed the extensive Thai and Indian menu, a crispy won ton style cracker was served with a finely sliced cabbage and carrot salad. A small pot of sweet chilli dipping sauce laced with an aromatic blend of chilli and garlic was served to accompany it. The food of the region has many influences, brought together in a mish-mash crossover of the Indian sub-continent and Indochina, so to find dishes together in one restaurant was a real treat.

Bridgeport Typically in Thailand and India, food is not served in courses but here this has been refined for our western palates. We chose for our first course one of our old favourites, chicken satay, which came with a peanut and sweet vinegar dipping sauce that is classically not a Thai dish. It comes from the Satay Club in Singapore but is found in many restaurants in Thailand. We also had beef spring rolls that were very reminiscent of some tasted on a little beach on an island in the gulf of Thailand. The satay was beautifully marinated in tamarind and grilled to perfection. The spring rolls were served piping hot without a hint greasiness. We choose Tom Ka Gai to follow, which is a chicken and coconut soup with lime-juice and coriander. We asked our

waitress, Pornsawan, who is from a small village in north-east Thailand (close to the Thai-Laos border, called Udonthani), for a short break before our main meals. We had a crispy duck served with a sweet sauce and chicken fried rice enhanced with nam pla (fish sauce) – and both were delicious. The service was attentive with the right amount of fuss. For great Thai-Indian food this place is a must. Take-away is available and the bill was very reasonable for the standard of the food and service. Have you ever felt exhausted just trying to look and feel better? Do you sometimes suspect that the way we live emphasises quantity over quality and “doing” over “being”? Has life lost its zest? One man has seen the light and developed the antidote to lifestyle-induced energy-loss. Dubbed the “the most intelligent practice on the planet”, Budokon, a carefully crafted blend of yoga, martial arts and meditation, is the brainchild of Californian black belt karate and taekwondo champion Cameron Shayne.

Soft-spoken 41-year-old Shayne, whose body is breathtakingly toned and supple, sees himself as an urban samurai. However, Budokon, which means “way of the spiritual warrior” in Japanese, was not created from within the tranquillity of some far-flung Buddhist monastery but from the edge of the cut-throat world of the American film industry. Shayne’s martial arts skills won him wealth and recognition as personal trainer and choreographer for fight scenes in such films as Rush Hour 1 and 2. But he began to wonder if the intense pressures outweighed the material rewards.

Bodyguard and Burn-Out

In the late 1990s he became bodyguard to the now infamous film and TV star Charlie Sheen. Spending time with Sheen, helping him through rehab from drug addiction, meant witnessing at close hand the agonising result of burn-out. This exposure to man-made stresses and excesses of L.A. life made Shayne realise yoga practice was becoming as important to him as martial arts. He also found that meditation, diet and self-care were all essential elements for his personal survival in a world surrounded by gifted people, often losing their way. “I wanted to do more than teach martial arts. I wanted to share everything I knew about compassion for self and others, so I came up with Budokon,” says Shayne.

Budokon or BAFTA List! Ironically, the flip side to chaotic California is what makes it America’s mecca for personal growth and physical fitness. When Shayne launched himself as personal trainer using his new Budokon programme, his client base read more like a BAFTA nominee list, including Courtney Cox, Jennifer Anniston, Renee Russo (whom he trained for the Lethal Weapon films), David Arquette, Sugar Ray Leonard, Sean Penn, Amber Valetta, Christine Davis and Jamie Lee Curtis – all benefitting from a Budokon mind and body transformation.

Valentine’s night was a very romantic evening with many tables for two and guests enjoying the special menu and ambience. The Supper Club, which is a new networking event for Mallorca, is held every month on a Thursday. The February Supper Club featured Kate Mentink, who spoke about the new labour laws on the island. FiESTA DE ZuMBA The new dance and exercise craze Zumba has inspired a night of fiesta at the Millennium nightclub at the BCM Planet Dance complex in Magaluf on Friday 23 March. FALLAS FiESTA Every year the residents of El Toro emulate the huge fiesta in Valencia with a weekend of parades and the Fallas Fiesta where large statues are burnt to symbolise the end of winter and the start of spring. it takes almost a year to make the effigies but only minutes to set them alight. The fun starts on Friday the 30th with a barbecuje and party and ends on Sunday 1 April with the bonfire and a fireworks display.

Spanish Golf Crown for Englishman

Young English golfer Jack Hiluta defeated German rival Marcel Schneider 4&3 in the 36-hole final of the Spanish Amateur International event played at Mallorca’s Alcanada Golf. One of Europe’s most prestigious competitions, dating to 1911, the King’s Cup has previously been won by such luminaries as José María Olazábal, Darren Clarke, Sergio García and Gonzalo Fernández-Castaño.

Launch of Sculpture Gardens in Deià

Orient-Express’s rustic manor house hotel in Deià, La Residencia, has inaugurated one of Spain’s largest permanent sculpture gardens. Spearheaded by the hotel’s sculptor in residence, Juan Waelder, the exhibition displays the works of “up and coming” as well as established sculptors from around the world and showcases a mix of both contemporary and more classical pieces, all comprising different materials and styles. As with the art exhibitions displayed in the hotel’s Tafona gallery, entry to the sculpture garden is complimentary for both hotel guests and non-guests, and all pieces are available for purchase. Helping British Citizens in Distress

A new TV documentary series broadcast on the UK’s Channel 4 this month highlights how the staff of British consulates in Spain help citizens in trouble. According to the British Embassy in Madrid, “The problems caused by lost and stolen passports, and the costs and consequences of failing to buy holiday insurance, are just two of the biggest calamities for residents and holidaymakers who turn to the British Consulates for help… From helping victims of crime to advising Brits arrested by the police, the series also follows consular staff as they visit holiday-makers who end up in hospital and meet expat residents to hear their property concerns.” In the first programme featuring Ibiza, consular staff “tackle the fall-out from a new drug on club scene – the so-called ‚pink pill‘. A young tourist is found lost, nearly naked, and unable to recall anything but his name. Then the Brit dealers who supply the pills also need help after they‘re arrested.” On Mallorca, also featured in the first programme, “Staff deal with a young Brit who‘s been tasered by over-zealous police. A holidaymaker from Essex has been run over by a drunk driver, and lies seriously injured in hospital. Old Town and Santa Catalina While other more tourist-orientated areas of Mallorca gradually awaken from their winter semi-hibernation in the lead-up to Easter, Palma city remains a focal point of the island’s magnetic charm and alluring appeal – for residents and visitors alike – throughout the year.

With its excellent dining establishments, offering everything from Spanish tapas to international fusion cuisine, its many chic and cosy bars, lounges and cafes, its treasure trove of retail outlets, its boutique hotels and its cobblestoned alleyways and venerable sights, providing a mesmerising journey back through history… Palma is one of Europe’s most captivating cities.

Here we take look at some of the city’s most popular hotspots and hidden gems… in the Old Town as well as neighbouring Santa Catalina. Situated to the west of Palma’s old city walls, nestled against the harbour front, the former fishing village of Santa Catalina is home to a veritable village of modern-day services, including a lively fresh food market.

Traditional Thai cuisine – back to the exquisite basics

There are few cuisines that have travelled well into our consciences – and one of these is Thai food. Let me explain… Indian and Chinese food was brought over in the fifties and sixties with the influx of people from their respective homelands but, with very few of the ingredients they were used to in their native countries, they had to adapt and change recipes to suit the things they had at hand, while also changing aspects to suit their customers. Thus we have chicken tikka masala, sweet and sour pork, and the like – though not so much the same with Thai food. In the first place, it’s a relatively new import to our shores and, taking advantage of better transport connections and our own expanding travels and tastes, it has come through to the west relatively unscathed. Therefore, if you eat something here on our shores it usually has a sister dish back in the old country. The chef at Koh, in Santa Catalina, has done his homework, not only sticking to authentic Thai flavours but also taking them to another level with his interpretation of what is known in Thailand as “King Thai” food, now served in many of Bangkok’s top eateries. We decided to try the tasting menu because the chef will usually have picked his best dishes and ones that push his artistic and culinary skills to the limit.

spring onion, as well as banana and chilli sweet and sour sauce. Followed by Korean noodles with strips of beef and king prawns, slightly spicily laced with chilli and tamarind. Our final savoury dish was a Thai classic: a combination of crunchy skinned breast of duck, liaised with a Thai red curry sauce and with plenty of coconut cream so as to not overwhelm the palate. The fine strips of duck were served alongside a Bali-flavoured root vegetable medley. Desserts in Thailand are not one of the strong points of its cuisine, but you won’t be let down at Koh. We had a chilli and chocolate mousse, sitting on a bed of crunchy biscuit base and topped with a crispy coconut crumble and a mocha frosting; and a Thai-inspired crème brûlée made with coconut milk and lemon grass. All in all, we enjoyed a sumptuous feast of Far Eastern cuisine served in a pleasant, light and airy atmosphere (including a patio). I would definitely recommend the restaurant to readers who maintain a soft spot for such gems, rarely found outside the original country.

This night we were not disappointed. We started with pieces of tempura-battered monkfish coated with a wasabi and honey glaze, topped with chopped pistachio, macadamia nut crust and a small baby leaf salad; while accompanying these deliciously moist yet crispy fish pieces was a mango and aubergine puree. Next we were treated to a sublime combination. The limemarinated raw sea bass was cooked like a ceviche, topped with green mango and fresh coriander leaves. The other dish was baby steak tartar laced with red chillies, surrounding a quail’s egg and tiny aubergines, and served with pickled cucumber. Next we were offered two foods on a single slate plate: a steamed pork and lemon grass dumpling, with an Indonesian sauce made with palm sugar and a blend of different dried peppercorns; and a peanut-infused spring roll, filled with pork and spices and topped with thinly-sliced
