In November, in Mallorca we always have a celebration whose name is “Matances”, the slaughtering of the pig, where work, food and the family fiesta are all closely linked. It goes on all day and we make a lot of food, for example: -“Sobrassada”: it is cold meat. It is made with selected pig’s meat, salt and pepper. -“Botifarró”: It is cold meat. It is made with pig’s minced meat, blood, salt, pepper and other kind. -“Camaiot”: It is cold meat. It is made with thin minced meat, black pepper, paprika, anise and salt. -“Saïm”: It is the pig’s fat. With “Saïm” we do a typical food in Mallorca, the “Ensaïmada”. -“Ensaïmada”: It is a paste. It is made with wheat flour, water or milk, “saïm” and yeast.
