Welcome to ‘The MAN Issue’ and wow have we had fun putting this one together! We’ve always had a strong male audience and we thought this month, it was time to give the boys a little bit of extra attention; it’s a tough job, but someone’s got to do it! Also, since we last saw you we’ve been sent to the fabulous city of Riga in Latvia to find out why it’s been named the European City of Culture 2014. Travel showcases our recommendations; and now flights are available from Doncaster, it’s easy.

Not only have the men of MODE HQ enjoyed getting involved (mainly due to trying out all the goodies), it’s also been great to get our male readers throughout Yorkshire to contribute to the features. We’ve loved having their opinions and interviewed some really interesting people so we hope you enjoy reading all about what they’ve been up to too.

HOW TO BECOME A RUNNER There’s a lot more to running than just putting one foot in front of another quickly. There are a whole host of techniques that help prevent injury, improve endurance, speed and trajectory, but before all of that there a few very simple things you can do to make the transition from non-runner to runner an easy one.

With a race history including the legendary Marathon des Sables (a 150mile footrace across the Sahara Desert), two 100 mile runs across the North and South Downs Way and a run cross country from Carlisle to Newcastle, we felt confident that Andrew Landells, would be the man to ask about running.

Set a Goal: When I made the decision to run the Marathon des Sables I hadn’t even run a formal 10km race. I’d completed Tough Guy (arguably the original obstacle course race) three times, but obstacle courses are hardly a good test of a man’s ability to run. The Marathon des Sables isn’t your every day goal and with around 18 months until the race I decided to set myself a series of goals leading up to it. The key to setting a goal is making sure you keep it in mind, always; it’s the best source of motivation. Make sure your goal is achievable and isn’t too far off in the distance so you don’t lose heart. A great goal for a complete running beginner is a 5km race that’s only 12 weeks away. Follow a Plan: When you’re new to anything it’s easy to go in too hard and fast at the beginning and then burn out. By setting a progressive training plan that builds up slowly, you’ll keep focused, interested and you’ll be able to easily track your development.

Get Some Rest:

It’s really important that you fuel your body before a run. I can tell straight away when I start a run if I’ve not given my body the nutritional hit it needs for me to perform well. Even if you’re taking up running to lose weight, you still need to eat up! When it comes to running, carbohydrates are your friend, I eat lots of good quality carbs, such as porridge oats and sweet potatoes.

Don’t go overboard, it’s equally as important to let your body get the rest it needs. I aim for two rest days a week, to help my body to repair and recover. Don’t think that by taking a day off you’re undoing all your hard work. Rest days are when your body adapts to the training you’ve been doing which only makes you stronger for the next run!

Refuel: Post run aim; to eat a snack containing protein and carbohydrates within half an hour. Protein is great for recovery and the carbohydrates will help you replenish your depleted glycogen stores so you don’t feel zapped of energy. Some yogurt topped with granola is a good option.

Picking The Right Trainers Never before has there been so much choice in the market of running shoes. Nowadays, brands offer different trainers offering varying levels of support to meet the different needs of so many runners. Whether you’re a road, trail or treadmill runner, it’s important to consider your pronation. If you just went “pro-whatty?”, then this guide is just for you. Tip: grab your current running trainers, flip them over and check the way in which they’ve worn – they way they’ve worn is good indicator of your pronation!

Tip: It’s worth considering the terrain you’re most likely to be running. A road trainer will vary considerably to a trail running shoe.

If your trainers appear to have worn in an ‘S’ shape, from outer (lateral) heel to the big toe then it’s likely you have a neutral pronation. Luckily, you can wear a wide variety of trainers, but more brands are now offering specialised neutral running shoes with good support and cushioning.

If your trainers look to be worn more heavily on the outside then you’re probably underpronating. Underpronation is when the outer side of the heel hits the ground at an increased angle, this can cause injury and interfere with your running efficiency. Underpronators should opt for neutral running shoes with extra cushioning.

Overpronation is when the foot rolls in excessively. Your trainers will be worn down on the inside of the heel and especially around the big toe if you overpronate. Overpronation can contribute to you experiencing pain in your knees and hips. You should go for a maximum stability or support running shoe with structured cushioning.

ED CLANCY A two-time Olympic Gold medalist, an Olympic Bronze medalist and five-time World Champion - Ed is a fundamental member of the awe inspiring Great British cycling team. He also just so happens to be from the best county in England*, Yorkshire. We chatted with him for #TheManIssue to find out a little more about the man under the helmet and lycra... What made you decide to take up cycling? I’ve always loved riding bikes since I was a kid when my Step-Dad got me a racing bike, that’s what got me into cycling. After that I fell in love with the sport, so when I had the opportunity to take it up full-time it was a no-brainer. Who would you say inspires you most? There have been loads of inspirational people that I’ve met along the journey but I probably take the most inspiration from my teammates. There’s great camaraderie within the team. Not everybody has world championships to motivate them. What would be your top tip for staying in shape? If you want an easy way to stay in shape, find a sport or activity you enjoy. That way you aren’t going to see it as a chore or struggle for motivation. Being fit will just be a useful side effect of doing something you enjoy! When you’re not on your bike, where would we find you? When I’m not on racing bikes, I like to spend time on my other bikes, mountain bikes or motorbikes. But bikes aside, I do play a bit of guitar and enjoy listening to music. Apart from being a two time Olympic Gold medalist, what would you say have been your other career highlights? (if anything can possibly come close to trumping gold?) There have been loads of memorable races (for good and bad reasons!). I think when I look back on my career; the highlights will be all the people I’ve met and friendships I’ve made, more than the achievements.

Have you any goals left to achieve? Cycling-wise, I’d really like to go for a third straight Team Pursuit gold medal in Rio. If you had to do a career swap, what would you like to do? I love most forms of motor sport... so maybe a Moto GP rider! As a Yorkshire magazine, we’re always praising our great county, but what’s your favourite thing about Yorkshire? I like the scenery, terrain and roads, which are great for training on the bike. Most of all, it feels like I’m home. As this is our special edition Man Issue, who would you say is the ‘Ultimate Man’? I don’t know... Johnny Vegas?! If you had to give our readers a style tip, what would it be? You’re asking the wrong person. I spend most of my time in Lycra! Finally, do you have any words of wisdom? Find something you love to do in life and you’ll be happy.

With a growing trend for facial hair, Sam Martin set out on a personal journey to create an oil to sooth his beard itch, but what may have started out as an experiment in his bathroom has turned into a global grooming brand and his journey is far from over. Having spent the past decade honing his skills as a bartender, Sam Martin had climbed his way to the top and had gained more experience in mixology and events organisation than most twice his age. But while the rest of us yearn for a youthful appearance, Sam found his to be a hindrance; “I had a CV far beyond my years. However, when I started my own bar company, I found that nobody took me seriously as I looked so young and it was at this point I decided to grow a beard”. Beard in place, he found not only did the demand for his services increase, but he had unwittingly created a brand, “I stuck in people’s minds and this was excellent marketing... so I decided to keep it.” But with a great beard comes great responsibility and Sam soon found that maintaining his new look was far more hard work than he had originally anticipated, “I found it to be dry and itchy, and very irritating, to the point it was painful. I searched everywhere for a man’s product to help me and couldn’t find anything that worked.” It was at this point that he began his own experimentation with creating beard oil, which would take months of research before finally he had a product that worked.

I‘ve just had some of our better known customers, invite me to watch them play at one of the UK’s biggest festivals... I had to double check they meant to invite me!

Around the same time, bearded men started cropping up everywhere, it seemed facial hair had become the new must have accessory and with that Sam found he had developed a following of fellow beard enthusiasts on social media. So when he started posting pictures of his well oiled beard, his followers started demanding to know how he kept his, very trendy, facial hair in such good condition and where he got his new found beard oil, “I repeatedly said, “you can’t get it, it’s mine!”” but eventually the demand and interest would become too much and Sam would give in and it is at this point that the Apothecary 87 journey begins. Aside from the unprecedented demand for his oil, Sam cites his Grandad as his greatest influence for starting the venture, “he was the manliest man I knew and he really helped push me to create the company.” His close relationship with his grandfather inspired Sam to take the plunge into turning his private experiment into a full blown business. Sadly his grandfather passed away before

the company was due to launch and so with the name still undecided, Sam chose to use it as an opportunity to honour the man who had inspired him so much, “He was 87 when he died and as I was born in ’87, I saw it to be a sign...Mixed with my love of all things vintage and the theme of mixing my beard tonic, I named it Apothecary 87.” One of the great things about Apothecary 87, apart from the quality of the products, is the brand’s ethos. In a market that is fiercely dominated by female driven marketing, brands and products, Apothecary 87 is a (manly, deep) breath of fresh air. It is an exclusive brand made by men for men and its set to stay that way, “Keeping Apothecary 87 as an exclusive male brand is so important. Not only is it a huge point in our branding, but this brand was designed around products I thought MEN needed, and I never want to forget that.” Not satisfied with what he’d already achieved, Sam made the decision to enlist the help of bearded (very good looking) model, Chris Millington, to work on a product collaboration. As the first brand in their industry sector to do a model collaboration, once again, they were ahead of the curve and the Milly’s range has proven to be a smart move, “The product itself was the first fruity fragrance beard product on the market. It just really took off well.” And it would seem that they aren’t stopping there, having enjoyed such success with their first collaborative project they’re already in talks with others to offer more exciting products but unfortunately no amount of charm or interrogation on our part can get Sam to reveal any more so you’ll just have to wait! It might be worth mentioning at this point that Apothecary 87 was founded a little under a year ago. Already, the business has grown from offering part time employment to just one man to employing a staff of six as well as becoming the biggest brand of their type in the world. Not to mention the celebrity clientele they are building. “I‘ve just had some of our better known customers (they’re in bands), invite me to watch them play at one of the UK’s biggest festivals, I then got the same offer again from two other bands playing the same festival. That was incredibly exciting... I had to double check they meant to invite me!” But despite the model collaborations, a photo shoot with Calum Best and the celebrity clients, for Sam it is having been able to create a memory of his Grandad that he credits as the highlight of his journey so far, “As I mentioned before, the “87” in “Apothecary 87” is a way of keeping his memory alive. I think he would be proud to have been such an influence and a part of this.”

My favourite product from the range has to be either our Original Recipe Beard Oil or the Shave Oil. Both are great products and have personally helped me out a lot! The beard oil keeps my face fuzz soft and healthy, whilst reducing itchiness. And the shave oil is used on my neck, and stops me coming out in a rash every time I shave!

What would be your top grooming tip? Right, my ultimate grooming tip. I’ve got two.. My first tip is simple, create an image of yourself that you want others to see. If you want to be seen in a certain way, then that is the image you should try to create. My second tip is based on grooming being defined as a routine involving a product to benefit your appearance or the way you feel. With this in mind, one of the most common problems I hear about is irritation from stubble or beards. To help ease this, after a bath or shower, while your face is still warm and damp, apply a drop or two of beard oil to the beard area, massaging it in. This will help the skin, as well as condition the hair, helping to reduce the irritation.

When Amanda Brown and Robert Wright first sent off their application to take part in The Earl of Doncaster Hotel’s “Win Your Wedding Competition” they never imagined they’d end up walking away with a wedding package worth over £20,000!

Having looked round The Earl in the past, Amanda and Robert were quick to take up the opportunity to win their dream wedding at the popular and unique art deco style hotel. One thing that stands out when you read their initial application is their overwhelming desire to be married; in fact they mentioned it about 3 times in 100 words. So when the couple, who met through social media, were announced as the winners at the grand finale event, held at the hotel on the 1st August, it was a dream come true for the loved up couple. But making it to the final, let alone winning, hadn’t come easily. Each couple had to undertake a series of challenges and there were multiple

stages to the competition which saw the couples fundraising and taking part in a dramatic game of ‘Mr & Mrs’ in front of friends and family before they had a chance of taking home the prize. The couples were each invited to choose their own causes to raise money for and winners Amanda and Rob chose to support ‘Cash for Kids’, wasting no time at all by arranging a meeting with charity director Louise Davis to discuss their strategy. It wasn’t long until they found themselves with radio presenter Katie Parsons for a fun style photo shoot, with Amanda donning a wedding dress whilst Rob dressed up as the Hallam FM mascot! The fab fundraising duo, who got engaged when Rob cooked Amanda a romantic meal at home, 49

went on to host charity bag packs, car boot sales, cake sales and raffles along with a superb Race Evening raising a total amount of £1176.18 and said that their favourite part of the competition experience was having the opportunity to help others, “finding out the money we raised helped buy a little girl a wheelchair, gave us immense pride.” Speaking of their amazing efforts, charity director Louise praised their efforts, “I am thrilled that they chose Cash for Kids as their charity for the competition. Cash for Kids is a grant giving charity that supports sick, disabled & disadvantaged children in South Yorkshire. The £1176.18 raised was distributed in our summer

grant round to fund equipment in a playground. Their efforts will benefit hundreds of local children. It was a delight to work with Rob & Amanda. Their passion to make a difference is inspiring. I wish them the very best and I am looking forward to joining them on their wedding day in March.” Along with Louise, we would like to wish Amanda & Robert a wonderful wedding, which we can happily announce has been set for the 6th March 2015! Speaking of their win, Amanda and Rob said, “Winning the wedding has been absolutely incredible, we could have never imagined having a wedding worth £20,000. It will complete us as a couple in our journey. Overall it has been an amazing experience creating some very good life time memories.” Congratulations to the winning couple and all the other wonderful couples who took part! Latvia ...best enjoyed slowly

So, when I received an email from representatives of our very own Doncaster Sheffield Airport stating that Wizz Air are now putting on flights to said country, it was little more than ‘logged for future reference’. However, reading on, the email was actually an invitation to visit the country in celebration of this and its capital ‘Riga’ being awarded European City of Culture 2014. All I had to do was share my experience...

I’ve recently turned 40 and as part of the ritual of realisation, I downloaded an app which has already become one of my favourites; ‘Been’. Have you got it yet? As you tick off all the countries to which you have ventured, it colours in the map of the world. So much fun, it prompted me to check in with my ‘must visit’ list and add a few places I’d forgotten about until now. Though I must admit, Latvia was not one of them.

Arriving at The Clarion Hotel Valdemars at midnight on Friday night I was a little unsure of what to expect of the surroundings during the day or indeed if it was safe at this time of night. As I’d reached the city and entered a gated area which was the hotel entrance, I’d seen little more so far. My naive perception of this eastern european country nestled between Estonia, Lithuania and Russia, was that it may still be suffering effects of its struggle for independence, only escaping soviet economic control in 1991. I was not prepared for the miraculous recovery I later discovered had been made. The days that followed were literally full of wonder! Greeted early with a cheery welcome at reception from the Latvian Tourism office, what followed was a whistle stop tour of over twenty of the king pins in the city’s tourism itinerary brochure, finishing with an exhausted flight home on Monday evening. 82

It was quickly evident why it had been named the City of Culture. It’s rich and diverse cultural history sees the city absorb so many influences of its past whilst remaining true to itself and as such, all tastes are catered for. Castles and museums, sports and leisure facilities, spas, beaches, music venues and opera houses are plentiful as is a bustling cobbled open air night scene that still feels, well totally safe (having outed the ‘stag do’ trade some ten years ago by collectively increasing prices). Day one was a walking tour of Riga and its Old Town which took in the spectacular Central Markets, Creative Quarter and promenade as well as a trip through time to discover the history and making of the region’s traditional drink ‘Black Balsam’. The first thing I noticed about Riga was its sheer beauty. The art nouveau influence evident in the architecture is stunning, and almost ‘fairytale’ set on wide tree lined avenues. The second was the cleanliness. Not a scrap of litter or smearing of discarded chewing gum in sight. Riga was also host to The World Choir Games whilst I was there playing host to groups from all corners of the earth who could be heard randomly treating passers-by to their practice sessions which added a further touch of magic.


Thirty minutes by car on day two was the town of Sigulda, which adds an adjective to its marketing to read ‘Sigulda Thrills’; and it does just that. The day was drifting off, barefooted on the grass of the castle gardens listening to live opera. It was walking alongside giant sculptures, breathtaking views and following the ley lines aligning a circle of trees that have shown evidence of granting many a heart’s deepest desires. It was making soy candles in a medieval castle and trying on armour which weighed equivalent to a small horse. It was travelling across the river Gauja hundreds of feet up in a cable car, Gutmanala caves and riding the 900m Olympic bob sled track at over 80kmph. Yes, it was safe to say Sigulda ‘Thrills’.

Jurmala was the destination for the final day. A beach resort with a deep fishing history and (with 60% of the area covered by forest), air that is so clean it attracts thousands of sanctuary and rehabilitation tourists to its world class spas at any time of the year. There is no industry here, no factories, no eyesores, no smoke, no hustle but just enough bustle, and pure relaxation. I visited the vast open-air museum amidst a serene forest and the inner light gallery, meeting an artist whose paintings transformed as the light upon them changed. I bravely climbed the 117 steps of the 33m high viewing tower in the Dzintari Forest and was rewarded appropriately before walking along the beach and making a wish sat astride the famous Turtle of Longevity statue.

The tourism offices put together a packed agenda and yet there is so much more still to see. I have to go back; I need to see the rest of what this beautiful city has to offer. The National Library that every inhabitant played a part in building, and in a strange way, the old KGB headquarters (open to the public this year as part of the City of Culture agenda). I want to explore the vast sprawling markets in much more detail and find the perfect traditional Russian doll available on many of the street stalls. I want to go back because I was so genuinely impressed I need to share it with my fiancé. I loved how something about the place drew me in and made me forget the hassles of everyday life and slow down to its own accepted pace. The customs and traditions that have survived years of oppression are present in almost every tale, every action and the core of every being I came across. It’s commonplace that people are friendly and positive and try to live an idealistic life embracing the country’s folklore and traditions; a total respect for their environment combined with organic and clean living. It’s almost addictive. No, I’m certainly not done with Riga yet.

The Black Magic Bar has a hidden secret deep underground and accessed only by a secret doorway from the main bar. The original cellar in which the black liqueur was first produced is a must-see and home to haunted educational tastings.

Rozengrals is an authentic medieval underground restaurant in the heart of the city. A candle lit space dating as far back as 1293 as an ancient wine cellar. Meat is a popular choice, spit roast and served with traditional accompaniments of the day, but vegetarians are also well catered for.

Shop for amber! All grades of amber and a vast and varied range of amber decorations and jewellery are widely available.

Get into the heart of the local community of Riga at Grandma’s House. A late bar that comprises of all the old fashioned furniture, standard lamps and even board games, that you’d find when you were small at Grandma’s House, yet somehow, it’s uber cool.

Aparjods restaurant is a delightfully thatched part of an elegant hotel and spa complex. It prides itself on its endless wine cellar, BBQ menu and traditional Latvian fayre. Try the black bread dessert with berry jelly, it’s a must.

On Sunday mornings, grab a coffee from the traditional cart in the grounds of Sigulda Castle as you sit amongst a picnic blanket sea of families who travel far and wide for the free classical concerts.

Walk the Olympic Bobsled and Luge track and if you can, book a ride. Helmet on, buckle in and scream for a once in a lifetime experience.

Turaida Museum Reserve has it all, castles, history, galleries, churches, sculptures and views to name but a few. Popular with local school children so perfect for family, but don’t worry, its 100 acre site simply doesn’t feel busy.

Brasserie Blanc You could almost be forgiven for walking by this canal side hideaway which for me is part of its charm. Brasserie Blanc is a delightful converted Victorian mill nestled between modern offices and the edge of the canal just off Sovereign Street and has carved quite the reputation for the excellence our popular French friend is famous for. Raymond Blanc himself is a self confessed lover of Yorkshire and in particular Leeds. He appreciates the city’s rich history and how it is surrounded by fantastic local producers; only fitting then he should put down roots here. The open brickwork and low vaulted ceilings enhanced by cast iron pillars create a real modern yet traditional feel that welcomes us from the rain outside. I happen to know that despite the wet giving a different perspective, the relaxed outside dining area is very well used during the -let’s say, more ‘polite’ weather. Inside, giant candelabras and clusters of wine bottles are filled with candles which generate just the right amount of warmth as wax drips on wax to create deliberately accidental pieces of art. Chris is the duty manager on hand to see new arrivals to their seats and ensure they understand that their wish is his command.

We are there for a quiet meal and what I particularly liked was that there is bustle –and later music, near the entrance and bar area and the deeper we go into the restaurant, the quieter it becomes. It’s made to be like this, there are still full tables, but less of them, and slightly less light. Whatever your reason for visiting or preference of atmosphere, you’ll not be disappointed here. General Manager says; “We all believe in team work. If we are having fun, then our guests will too and it will make the restaurant a success. She continues to explain; “not only this, but we work very long hours, we are together for long periods and it’s important we respect and like each other. This is always considered when hiring new people into the team. If the team works well, the work will be easier for all.” We have a drinks waiter John, and a food waiter Laticia who are both equally enthusiastic about their role in ensuring we enjoy our experience as indeed they do with each of their guests. They proudly describe their specials and recommendations like the perfect dinner party hosts. Their knowledge is refreshing, and welcome. The menu is just as enticing as the surroundings, French, but not so much that most couldn’t find a nod to something on their favourites list tucked in there too. The ‘tartare’ is certainly celebrated with several versions of the classic. People also come here for a really great steak; it’s free range pasture reared Cornish heritage beef which is dry aged for at least 30 days. Now that’s a steak.

My fiancé decided on the steak and being somewhat of an expert on ‘meat’ he was not disappointed. Just the right amount of fat and medium rare was exactly how it’s meant to be. My particular favourite of the evening was the potted shrimp with a twist on the usual suspects in taste accompaniments as nutmeg replaced garlic in a luxurious smooth butter. I couldn’t resist a taste of my dining partner’s cheese soufflé which also pleased in texture and flavour. Chef had recently decided on an addition to the light and fluffy soufflé with just the right amount of ooze in the centre; a small jug of rich cheese sauce on the side ...simply sumptuous. None of the meal disappointed and all of it delighted. All cooked with an obvious care and attention to detail right down to the presentation. A miniature pan here and a wooden board there with a splash of jus on the side and a caramel shard delicately reaching from a pristine chocolate ganache, it was all just right. If I could change anything at all, it would be that the dessert menu could be just a tiny bit naughtier, but that’s less about the actual choice available, and more because I’m just a little bit greedy when it comes to pudding!

It’s also good to know that refreshingly, there’s an amazing value set menu on offer. It’s unusual to find celebrity restaurants quite this affordable, so respect to Raymond! The Menu Maman Blanc is fresh and seasonal and changes on the first Thursday of each month. At £11.95 for two courses and £14.45 for three at lunchtime and £14.45 for two courses and £16.95 for three courses at dinner, it gives the close by office community the perfect place to bring clients or meet colleagues and the local waterfront apartment dwellers the chance to eat out regularly without breaking the bank. There’s even a Sunday roast menu and three, yes three children’s menus all aimed at different age groups which is great for encouraging families to eat out together more. There’s Bebe Blanc, as the name suggests for babies where free organic carrot puree is the order of the day. Petit Blanc for children aged under 8 and the Petit Menu for a larger appetite and those who like to order from a ‘real’ menu just like Mummy and Daddy including a main, side and dessert for £5.95. All said, Brasserie Blanc is a great all round eatery that has something for everyone and can cater for most levels of budget. We’ll be going back for sure!


FOOD & DRINK

“Fresh grilled sardines are the perfect beach or barbecue food. They can be as fancy or as simple as you like. In the Brasseries we serve them with braised fennel & olive oil mash. Feel free to do the same, or just enjoy them as is with a simple green salad.”

Grilled Atlantic Sardines with Tomato Sauce (serves 4)

You will need •

3 smaller or 2 larger sardines per person. (Ask your fishmonger to scale, gut and take the heads off)

For the marinade: •

100ml of olive oil

5g garlic - peeled & finely chopped

10g shallots - peeled & finely chopped

25g fresh parsley, washed & finely chopped

a small bunch of fresh rosemary, finely chopped - about a teaspoon

METHOD:

a good pinch of coarse ground black pepper & sea salt to season

1. Wash your sardines and pat dry inside and out with a paper towel.

For the tomato sauce: •

65g onions - peeled and cut into 1/2cm squares

1 tablespoon of olive oil

1 - 2 cloves of garlic (2 scant teaspoons) peeled and finely chopped

1 teaspoon fresh thyme - chopped

1 small bay leaf

165g plum tomatoes

2 tablespoons tomato puree

165ml water

a good pinch of salt & fine white pepper

1 tablespoon caster sugar

2. Combine all of the marinade ingredients in a shallow dish. 3. Coat the sardines in the mix, cover, refrigerate and allow to marinade for at least 2 hours prior to cooking. 4. Whilst the sardines marinade, prepare the tomato sauce. 5. Sweat the garlic & onion in the olive oil for 5 minutes without colouring. 6. Add the tomato puree, bay leaf, thyme & sugar and cook for 1 minute further. 7. Add the chopped tomatoes & the seasoning and simmer for 5 minutes.

8. Add the water and simmer for 20 minutes. 9. Set the sauce aside for a time to allow the flavours to infuse. 10. You can serve the coarse sauce as is, or if you prefer a smooth sauce liquidise with a hand blender and pass through a fine sieve. 11. Reheat before serving. 12. When ready, take the sardines out of the marinade & grill for two minutes each side under a hot grill or on a griddle pan. 13. Cook Like An Italian! A third generation restaurateur and Italian chef, Alessandro Primo Calzini of Florence, owns two of Doncaster’s most popular restaurants. Since launching Ziniz in Bawtry in 2000, it has gone on to be named by The Times as one of UK’s Top Ten Italian Restaurants. Alessandro’s belief in authentic Tuscan cooking, using only the best ingredients is key to his success. Here, he shares one of his favourite recipes!

PANZANELLA- TUSCAN BREAD SALAD “This is an old dish that my Nonna would make using ingredients that were available around the kitchen at the time. Not wanting to waste anything, any stale bread and ripe tomatoes were used in Panzanella. Now, it has had a massive resurgence in Tuscany and a lot of local Tuscan restaurants are judged on how good their Panzanella is. As it requires no cooking, it is an easy and simple dish to do and a great Italian salad that will go with anything”

INGREDIENTS (SERVES 2-4)

1 small loaf of Italian style bread cut into large chunks (about 2-3 days old) 1 small cucumber, roughly chopped 3 celery sticks, roughly chopped 1 large red onion, roughly chopped 3 ripe tomatoes, roughly chopped 5 tablespoons of extra virgin olive oil 3 tablespoons of white wine vinegar A good bunch of basil leaves Salt and black pepper

METHOD: Remember that the secret to a great salad is making sure that it has been really well tossed. Really mix the flavours and condiments. Put the cucumber, tomatoes and red onion into a large bowl and add the bread chunks. With your hands, mix really well and season with salt, pepper, olive oil and white wine vinegar and then decorate with basil. Make sure you stir it well and cover. Leave it to sit for an hour and serve directly, however I advise leaving it overnight in the fridge as it allows the flavours to mellow. Just remember, the bread should be moist and not soggy! Despite struggling through school with dyslexia, Peter Sidwell, went on to forge a successful and enviable career in the food business, working as a published food writer, restaurateur & TV chef. Now living and working in Cumbria, he spoke with us to share his passion for food and his top tips for cooking up a storm in the kitchen! Where does your love of cooking come from? It was something that started quite early really. I enjoyed cookery lessons at school, it was something I could do with my hands and not too much writing, and it progressed from there really. I unfortunately left school with only 1 GCSE due to my dyslexia, so I needed to find something I was good at for a career. It’s not only my career but also my hobby and I think that’s why I have managed to be successful so far. I am thinking about food, ingredients and cooking 24 hours a day. You’re career has a chef has seen you travel quite a bit, is there anywhere that you feel really inspired your cooking? Italy has been the most significant place for my career. It’s not so much the style of food but the culture of food out there, the seasonality of dishes and the wealth of regional variation that has made the biggest impression on me. When I first went to Italy I visited Naples. I just went to Manchester airport and look the first flight I could find, not really knowing what I’d be doing or where I was going to end up. I plunged myself into the Italian lifestyle and culture, it was like being a trainee chef again, I just became a sponge and soaked up every ounce of knowledge and experience I could. I let go of my inhibitions and just asked questions, showed an interested and tasted everything that was on offer. Trips like that became such significant mile stones in my career and I would urge any chef or wannabe chef to do the same. I now take my family to Tuscany whenever possible. It’s my favourite place to cook as we just all love the food, lifestyle and people there. What’s your favourite dish to cook AND what’s your favourite to eat? That’s a tough one. My absolute favourite dish I have ever eaten would have to be Spaghetti Vongole, it’s a pasta dish made with fresh clams, garlic and herbs. Whenever we are on holiday in Tuscany we always go to a certain restaurant on a Thursday lunch time and have this dish. It’s not a posh restaurant, in fact it’s a little cafe next to a train station but it’s full of locals and the dish is only available on a Thursday as they are closed on a Wednesday out fishing for the clams. I have been

lucky enough to eat in some special restaurants in my time but that dish is without a doubt a show stopper for me! In regards to cooking, I love to bake so I’d have to say bread; I love the process of making a dough and then turning it into a beautiful loaf of bread that encases a combination of delicious flavours. I have just been making a roasted walnut, Wensleydale cheese and rosemary focaccia bead, such an amazing combination of flavours. If you had to cook a dish that embodied the spirit of Yorkshire, what would it be? Without a doubt, a Yorkshire pudding starter. Three puds with an amazing onion gravy made from Yorkshire beer and the stock from a shin of beef slow cooked over night in a slow cooker that we’d go on to eat as the main course! It’s simple and modest cooking. Now that I live in the Lake District I am trying to convert Cumbria to a Yorkshire Pudding starter but they just don’t seem to get it! Do you do all the cooking at home too? I’m afraid not. My wife Emma has turned out to be a great cook and now that we have a young family she tends to cook during the week but I always cook at the weekends as my family are the people who I love to cook for the most. It starts on a Friday evening when we love to have a fresh pizza after the kids are in bed. I take myself off to my little pizza oven in the garden and I make us both a lovely thin traditional pizza. Do you have a top tip for novices in the kitchen? Keep it simple and always start with an ingredient not a recipe. Go shopping and find the key ingredient and then look at what to cook with it. Cooking is about confidence and tasting your food along the way so that you can make adjustments if need be. Always cook with the best quality ingredients you can, and remember, less is more. If you cook with good quality ingredients half your work is done. Finally, always season your food when cooking (Mum, you know I am taking to you!).

200g feta cheese

In a frying pan, lightly toast the walnuts. Then cool. In a saucepan, boil the beetroot for 25 minutes. Then cool and peel the skin off – it should fall off to reveal ripe, purple baby beetroot. Cut the beetroots in half and place in a mixing bowl. Crumble the feta and toss together with the beetroots, walnuts and a little extra-virgin olive oil. Season to taste with salt and pepper.

Marinate the beef by rubbing over 2 tablespoons olive oil and seasoning generously with fresh ground black pepper. Put on a plate, cover with cling film and leave out of the fridge for 2 hours before cooking. Heat the barbecue. Salt the beef generously and seal on the grill, fat-side down, at a medium temperature for about 10 minutes or until nicely charred. Seal on the other side for

In a large saucepan, cover the potatoes with cold water and bring to the boil. Turn down the heat and simmer until cooked. (A knife should easily cut through one when cooked.) Drain and allow to cool. When cooled, cut the potatoes into quarters, place in a bowl with the cornichons, capers and mayonnaise and toss together. Season to taste.

FOR THE BEETROOT AND FETA SALAD: 5 bunches of baby beetroot

100g cornichons, roughly chopped 50g capers, drained 100g mayonnaise

diversity of beers that are being brewed by Yorkshire microbreweries. There are currently over 160 different breweries in this county alone and this creates not only a competitive market but one that is throwing up new and exciting beer recipes all the time. It is a difficult task to come up with recommendations as everyone has a preferred style whether it is a hoppy pale ale or a rich dark malty ale. We feel that these three represent excellent examples of their style and have proved extremely popular since they first came to prominence.” Treboom - Yorkshire Sparkle, is a 4.0% pale ale brewed just outside York by a talented brewer called John Lewis. The beer has a combination of three hops that give it a refreshing citrussy grapefruit flavour and works well with food such as fish and chips or equally well on its own. Brown Cow - Genesis, is a typically English 4.2% golden ale brewed just outside Selby by a female brewster called Sue Simpson. The beer is very well-balanced with English hops and

malts and often comes first in independent blind tastings. Brown Cow brewery has been in operation for 18 years but remains resolutely small and independent. Revolutions - Manifesto is a rich, dark 6.0% stout brewed in Castleford. The beer is named after the album by Roxy Music as this brewery like to link their brews to their favourite music styles. Kirkwood Hospice provides specialist care, free of charge, to adults in Kirklees with advanced, progressive illnesses at any time from diagnosis to the end of life, respecting their individual needs and wishes. Care and support is also provided for their family members, friends and carers, both during the illness and after death. A problem at work What do I need to do to try to resolve it? So, you’ve encountered a problem at work. It’s always wise to try to fix it ‘at source’ if you can. If it’s a problem with a colleague, this will help keep the relationship on track. Fixing it ‘at source’ may help avoid a potential battle as well as to reduce any stress and anxiety you are feeling. For those reasons it is usually better to try to resolve issues that you have with colleagues or your employer at the earliest stage possible.

How to go about it? • Try to resolve it informally - have a quiet word with your supervisor or manager to see if the problem can be fixed with their input. • If the informal approach doesn’t work, check your employer’s grievance policy and consider raising it formally, by way of a grievance. Typically this will involve you writing a letter or email setting out the issue, attending a grievance meeting to discuss it, allowing your employer to consider it and respond. If the problem is not resolved, it will require you to lodge an appeal and attend an appeal meeting (normally held by somebody more senior than the person who made the original decision about your grievance). Normally, the appeal hearing is the end of the process and the decision made at that meeting is final. It is crucial that you check your employer’s grievance policy and any other relevant policies to ensure that you comply with it.

SAY “HELLO”, AGAIN, Jaguar has revealed the prototype of its ‘new’ Lightweight E-type - a further six of which will be built and sold. Jaguar announced in May 2014 that it would recreate six new Lightweights, each built by Jaguar Heritage, part of Jaguar Land Rover’s new Special Operations division.

The new cars are the ‘missing’ six vehicles from the ‘Special GT E-type’ project, which originally started in February 1963 with the objective of building 18 cars. Only 12 of the aluminiumbodied Lightweight E-types were eventually built and the remaining six designated chassis numbers

having lain dormant, until now. The six new cars will carry those original, historic Lightweight E-type chassis numbers. A race winner in the hands of a variety of famous drivers during its short competitive career, the car has achieved worldwide fame and original examples are now valued in the many millions. In recreating the Lightweight E-type, Jaguar Heritage has been able to call on the superlative skills and experience of many talented engineers

The E-type is an iconic car, and the Lightweight E-type the most desirable of all. To be able to complete the intended production run of 18, some 50 years after the last Lightweight was completed, was an opportunity we couldn’t miss.
