Proviz REFLECT360 Cycling Jacket Review
The REFLECT360 cycling jacket is the world’s first to be designed using a 100% reflective outer-shell. The jacket’s high quality material is designed to look and feel great while keeping the weather out. The reflective ability of the material helps other road users to identify a cyclist’s position on the road at night giving them an extra few seconds of time to react and manoeuvre appropriately. First impressions are that this jacket is certainly unique in appearance. Under ambient light, it is a subtle grey colour with a slight shimmer to it with black trim detail. The fabric face is not particularly soft but it is reasonably quiet. The jacket is water resistant rather than fully waterproof however; this is enough to repel all but the worst of downpours and enables it to breathe relatively well given that it is not a Gore-Tex/eVent style 2.5 or 3 layer fabric. The collar is also fleece lined which helps to prevent you feeling the cold. This is a particularly effective feature (keeping the blood in your neck warm is one of the most efficient ways of keeping warm) and the mesh lining helps insulation without adding too much weight. If you run
hot, you’ll appreciate the venting system which comprises of the usual pit-zips but also utilizes twin chest vents allowing air to flow through the jacket, around your body and exit via the rear shoulder exhaust vents. The effectiveness of this is somewhat compromised though, if you happen to be wearing a backpack that utilizes a sternum strap and you might find that you still have the ubiqutous wet back afterwards but certainly to no more of a degree than normal. With all the vents closed, the level of wind stopping is excellent and you should be able to tailor the amount of airflow to the conditions with a great degree of flexibility and the longer length sleeves are also a welcome feature when in riding position.
We did our own ‘on the road’ comparison to test the reflective outer shell. For the price point, this is a decent value jacket with excellent features before you even begin to take into account its USP.... When struck by direct light, the entire jacket reflects the light back to its source, meaning that when riding in the dark, you are fully illuminated to the observer. You can’t see this yourself which is a plus as it allows your eyes to adjust to the dark as they would do normally without being dazzled by reflected light from all over the place. If you use a helmet light, a supplementary benefit is that your cockpit area is also gently illuminated. Ezralow Design Kamini Ezralow defines the description of a global interior designer.

Her roots are in India and South Africa, she grew up in Hong Kong where she was educated at the German school, and travelled widely with her family as a child. She spent her gap year in Paris and attended university and design school in London, eventually setting up design practices both in Hong Kong and LA. For the past eight and a half years she has been based once again in London, which offers perfect access to her clients in Europe and the Middle East, as well as excellent links to Asia and the States. A true internationalist, she is fluent in English, French and German. It was her love of textiles that first drew her to interiors, inspired by the jewel-like saris, often embroidered with shimmering gold and silver thread, which her mother wore. It was on a buying trip to Delhi with her mother [who ran a home accessories store in Hong Kong] that she realised interior design was her true vocation. After completing a post graduate degree at the Inchbald School of Design in London, she set up her first business in Hong Kong. When she married her American husband, the couple decided to move to his home town of LA. There Kamini founded a studio called Dao Designs, which expressed much of what underpins eastern philosophy in the context of space. As Kamini explains, “Design is not just about environment. It is about
in-vironment – the way the flow and energy of a room can make you feel”. Head-hunted to return to London as the Managing Director and Creative Director of Lifestyles Interiors (later to be rebranded by Kamini as Intarya, the interiors division of leading UK property developer, Northacre], Kamini spent six years in this role, covering the spectrum of projects from palaces, villas, townhouses and penthouses to yachts, hotels, spas and restaurants. In this time, she grew the company from being the small, developmentbased interiors arm of Northacre to a high profile, international design studio in its own right. Her signature blend of clean, contemporary lines with unashamedly old-fashioned glamour won her acclaim and saw her garner awards, most notably her first yacht interior, Celestial Hope, a 47m craft built by Heesen. The boat won six awards, including a coveted Superyacht plaudit and the Asia Boating Award for Most Innovative Interior Design.
Kamini has also widened her design talent into her own product lines. In April 2012, she launched her first furniture collection, Bronze, at the Salone Internazionale del Mobile in Milan, a collaboration with Italian family firm, Orsi, which won instant plaudits. The full collection was subsequently launched at Salone in 2013 and has now become the core production range for Orsi. She is also in the final phase of developing her own textile range which has already found itself on the headboards of a prominent international bed manufacturer.
Mid 2012, she set up her own London-based studio, Ezralow Design. Current projects include blue chip residences in London and Dubai, a palace in Saudi Arabia, and the refurbishment of a restaurant in Monaco. She also recently completed the refurbishment and renewal of the famed Marbella Club Hotel, including rooms, suites and outdoor areas.
Most recently, Kamini has just launched her stunning Couture Cushion Collection, a range of beautiful, hand-embroidered pieces that use elegant fabrics and materials. As a designer, Kamini considers one of her biggest compliments to be that so many of her clients return to her 51
again and again. “I see my role as creating homes that have a positive influence on how people feel and how they live their lives. My aim with every project is not just to give the client what they want – but to give them more than they could ever have expected. “Great design is the result of the coming together of myriad details; Inspiration, Creativity, Skill, Craftsmanship and their application in time. On a micro level of a product, the details are in the specific nature of the construction of an item, from inspiration to manifestation. Similarly on a macro-level of an interior, it is the small details, which become important factors, and layers, which subtly and often subliminally set the mood and tone of the design.”

With a journey time of just two hours and flights running regularly throughout the week from Doncaster, Gdansk has great city break appeal for Yorkshire travellers. There’s a lot going on there for a food loving culture vulture like me with some recent additions to the city which are already on my must see list. The European Solidarity Centre which tells the story of the victory of the solidarity movement and the Shakespeare Theatre boasting Europe’s only tilting roof. Described as a city of the future which does not forget its past, the thousand year old port of Gdansk was guaranteed to give me culture as well as its lesser known long sandy beaches. The surprise that I hadn’t
carved Roman messages one each side; one to welcome visitors and one to address its residents. Everyone who has entered the city has passed through these gates, and now we do the same. Destroyed in the main by the war, today the stunning gothic, mannerist and rococo townhouses are back to their former glory telling stories of the rich merchants who built them. One decadent facade has the words ‘Pro invidia’ -for jealousy inscribed for all to see shamelessly stating that it was better than its neighbour and showing off its owner’s wealth.
anticipated however was just how good the food was, and how proud the people are to show it off. Staying at the very pleasant, very central Scandic hotel situated exactly opposite the city’s main train and bus stations meant getting around was affordable and easy. My view, of the station itself was a good one, an imposing gothic style building with the right amount of hustle and bustle around it. A walking tour of the Old Town taking in Long Street (Dluga Street), revealed a fascinating grid system layout to its streets each of which ended with a protective gate and the river. As we pass through The Golden Gate of the city, we see

and the new lining its banks. A moored wooden Galleon – is now a restaurant and it doesn’t seem out of place at all. There’s the haunting sound of the basilica bells in the background that seem to have an almost calming effect for visitors and inhabitants. It’s now a peaceful place it seems; after all it has waited many years for this. There are no noisy groups of youths, no drinking in the street, just a civilised and relaxed, sort of respectful atmosphere. I feel at home already and definitely see the appeal of this popular city. There’s a packed itinerary which I’m looking forward to, but I’ll definitely be back for a chilled out weekend in the near future.
There are so many highlights to the city whatever your taste but here are a few of my recommends. The European Centre for Solidarity The enormous rusted metal building next to the shipyards that has torn architectural opinion in two is the home of this exhibition which tells the story of victory and freedom. Opened in August this year on the anniversary of the date the movement was formed, it is already a popular place to visit. The five storey building with walls designed to look like they are cracking and tilting is home to the permanent exhibition. There is a viewing terrace on the roof to look out over the remains of the Lenin shipyards where the solidarity movement was born. An excellent educational and somewhat emotional experience.
Amber St Mary’s Basilica of Gdansk You have to see it even if only to understand its sheer size and magnificence; also known as ‘The Crown of Gdansk’ it’s the largest brick church in the world. It has a one-of-a-kind astronomical clock and the most beautiful stained glass windows. The top of the tower can be reached by the hardy via 400 steps with a stunning view of the city as a reward for the effort it takes.
The Gdansk Shakespeare Theatre A modern multifunctional building designed by the Venetian architect Renato Rizzi to reflect a box of treasure; the wooden stalls and luxury Italian seating surrounded by hard angled clean white protective fortress style walls. This is a very contemporary and unique theatre with staging which can be used as Elizabethan, Italian or ‘In The Round’ and it’s retractable roof make daylight or open air showings a possibility.

I missed this by a month or so, but it’s a great reason to visit in December as the streets of Gdansk couldn’t have a more ‘Christmassy’ feel. You may even get some snow so wrap up warm.
The cool and contemporary home of the Lechia Gdansk football team and a host of Euro 2012 is much more than a football stadium. There’s much to do at this cool and contemporary site with its light walls and fish tanks and a really good restaurant. We were booked into its latest attraction ‘The Escape Rooms’. Being locked in a series of rooms with a countdown clock and clues to solve in order to secure your release is at once exhilarating and a little scary, but we all enjoyed the experience.
The markets are situated in Targ Weglowy, Gdansk and run from the 5th to the 23rd December from 10am to 5pm. There is an ice rink, Venetian carousel and horses, reindeers, an exhibition of Christmas trees from around the world and of course Santa amongst some of the attractions.
Built by the Teutonic Knights in the 13th century, the castle of Malbork is the largest gothic structure in the world. It has been home to Polish Kings, taken into Prussian ownership and more recently suffered 80% destruction in WWII. It displays well throughout comparisons of then and now and guides visitors through its absorbing history and reconstruction. There is also a rustic cellar restaurant that offers an ‘eat like a Polish King’ kind of menu. Excellent quality traditional food served in an open brick, open fire and wooden bench surrounding. 57
The ‘Baltic Gold’ trade is a flourishing one with almost 2000 amber stalls, shops and museums to be found in the vicinity, each offering something a little bit more unique than the last. In March each year, the city hosts the largest amber trade fair in the world along with the famous Amber and Fashion Gala and Awards. The Gdansk History Museum in the Fore Gate Complex on Dluga Street is one of the best exhibits of this 40 million year old object of desire.

The food in Gdansk was much better than I had expected. I don’t know why, I just envisioned hardcore meat dishes of which I’m not a fan. But Gdansk knows what it’s good at and loves to share it -in my experience, in very large portions. Everywhere we ate, the food was really varied and always full of flavour.
Oktoberfest at Brovarnia Restaurant Smalec for the first time at Gdanski Bowke We were lucky enough to enjoy the private dining area usually reserved for dignitaries at this delightful riverside restaurant. It’s a well done silver service restaurant and the food is traditional for the locality. We try Smalec for the first time; a sort of double fried pork fat with onions and herbs. It’s served with home-made bread, home brewed beer and gherkins, and it’s delicious. Our meal was one of celebration, usually eaten at Christmas, or a big family celebration and was finished with Goldwasser – syrup-like aniseed vodka with gold flakes, served straight from the freezer.
Forming part of the four star Hotel Gdansk, this restaurant’s fun atmosphere hits you as soon as you enter. Big brass brewing vats behind the bar with pretzels and sparkling lights hanging from every surface. It’s a place to come for a really good night, I can feel it. I didn’t expect the food to be quite at the standard it was as the five course Oktoberfest celebration meal began to flow. Turkey livers in bacon with apple aromatised with calvados and red onion followed by a delicious creamed wild mushroom soup. Then a salmon fillet with forest mushrooms served with rice and beans on to Tiramisu and coffee. A real feast in a traditional Bavarian setting.
Zurek at Tawerna Restaurant Tawerna is very popular locally with its on board a galleon like interior and very well dressed waiting staff with dickie bows and silver trays. A real nostalgic atmosphere filled this place with many families enjoying meals together. Here was my first taste of the traditional supper ‘zurek’. A home baked loaf hollowed out and its contents used in the soup which would fill it. There are many flavours but the most popular is meat, mushrooms and usually a whole egg. A half duck followed by Gdansk speciality apple pie made for a satisfying meal that even I could not finish!

A Night in the Steel City The Hampton by Hilton experience promises to be a good one and with Marco Pierre White’s New York Italian restaurant as the dining room, Coral Keers visited to see if it could live up to the hype. I was recently treated to a midweek night away which is something I rarely indulge in. There’s little point since I like to be in the office early in a morning to organise my day before I set off for meetings across Yorkshire. On this occasion though, after an exceptionally busy few months, I told myself that one lie in wouldn’t spoil anything. The newest hotel in Sheffield was our destination and with a celebrity restaurant attached, Hampton by Hilton was central, convenient and a great option for quality and value. It has a history too; a former police station built in 1965. It has seen many famous faces walk through its doors and the European Cup was even handed in here after being stolen from Aston Villa in 1982. Checking in was a pleasant experience. The first thing to notice after the most welcome smile from the reception staff is that familiar promise of perfection. Etched into the check in desk are the words that make up the 100% Hampton Guarantee;
“A friendly service, clean rooms, comfortable surroundings, every time. If you’re not satisfied, we don’t expect you to pay. That’s our commitment & your guarantee. That’s 100% Hampton.” As of March 2014, Hilton brands encompass 4,112 hotels with over 680,117 rooms in 91 countries and 1,940 (and rapidly growing) of these are Hampton by Hilton hotels. That number could read either ‘complacency’ or ‘we know what we’re doing and you’ll benefit’ but the simple fact that the bold guarantee is in place -and in your face, suggests the latter. The rooms are clean, as you’d expect, they’re new. There’s been a lot of thought put into the design and the textures which make up a calming interior; both comfortable and contemporary. I particularly like the ‘over the bed’ artwork which are scenes from the city in which the hotel resides. There is everything you’d expect and a little bit more. With a bathroom by Villeroy and Boch and 62
the beds are the exact same as you’ll find at the Waldorf Astoria, they really mean it when they say a comfy night is guaranteed. For dinner we were booked into Marco’s, the latest in the roll-out of New York Italian restaurants by celebrity chef Marco Pierre White. The menu uses locally sourced fresh ingredients and is inspired by his Italian heritage and passion for American dishes and at first glance seems to offer a great choice; there are the traditional fresh pastas, steaks, ribs, seafood, burgers and handmade pizzas and many have been given a Marco style inventive twist. We’re seated in a high backed circular booth which is open to make us feel included, but also just private enough to duck out to whisper and be romantic. The restaurant is suitably busy as it is open from lunchtime through to evening and welcomes families –although there were only adults dining on this mid week evening.
After browsing the menu, we ordered a bread platter to share whilst having a glass of wine and admiring the decor –which suggests that no expense was spared in its execution. It’s sumptuous and there are classic images around the room and of course a portrait or two of the man himself – would you expect any less? The antipasti set the bar for the meal, looking and tasting superior in its class. Following this was my choice from the specials; cream of cauliflower soup with gruyere and pancetta, and for him, crab cakes. The depth of flavour in the soup was notable indeed with the cheese bringing out the freshness of the cauliflower which was also enhanced by the saltiness of the crisp pancetta. I hope this appears on the main menu. The crab cakes were not short on the main ingredient and were, although huge, light and tasty with a hit of chilli and surrounded by a crisp crumb. His main was ribs, which to me, were ribs, but certainly some of the best I’ve eaten in the UK, and for me, a duck burger. This was by recommendation of the waitress and I wasn’t disappointed. An interesting take on a burger and very well put together, it was served with a classic accompaniment of crispy poached egg and red onion marmalade. Add Marco’s lazy fries (which are just skin on fries - I had wondered too) et violà, a perfect rich and flavoursome dish. No Italian meal is complete without a dessert and Marco’s caters for those with a sweet tooth very well. We opted for a classic vanilla panna cotta and Marco’s Tiramisu and once again were rewarded by having made the right choice. Both were served in a cocktail glass as a plentiful portion and were definitely a big nod to traditional Italian desserts. thick and flavoursome Tiramisu with an alcoholic kick even Mary Berry would be proud of, and a perfectly set deep vanilla flavour panna cotta.

Glasses of Limoncello and cups of espresso finished a perfect meal and although we were glad that we didn’t have far to travel home, we decided to take a short stroll around Sheffield before retiring to the room. The location of the hotel meant we were central enough to walk and see some sights at night and if we were a few years younger –and perhaps had eaten a little less, close enough for lots of bars and clubs too. All in all I expected great things of the hotel and it stopped nothing short of delivering just that, topped off with a delicious all you can eat, free breakfast in the morning. Marco’s, in honesty I’d anticipated a slightly more developed version of a ‘Frankie & Benny’s’ style eatery but it did surpass my expectations. There were some really great elements of fine dining with excellent service and a relaxed and fun atmosphere. It was a very good experience and one I’d certainly like to repeat.

We are shown to our table upstairs in a delightful area lit dimly but for the glow of the open kitchen. Hung proudly against the open brick walls are artworks by local artist Jayne Cooper using parts of the old market –a fitting tribute to the area in which the restaurant is located. Even many of the ingredients are sourced from the very market by which it stands. The chef works calmly as the diners look on and the smells that emanate from the kitchen are teasing us to the
So many of our friends had managed to get to No7 The Rum Rooms before we did and we were quite excited by the hype. The word on the street was that we’d be in for a real treat and it was believable from the moment we arrived. The restaurant is at the back of a traditional pub in the centre of Doncaster, but trust me, you would think you were anywhere but. As we approach via the beer garden of the pub, we see it morph into a caribbean hideaway with lanterns, candles and heaters. It has a way of transporting you to somewhere unknown and
where it’s possible to relax and bask in the anticipation of what’s to come. Wandering into the intimate wooden bar area there are comfortable sofas that give off an undeniable ‘come put your feet up’ vibe. Owners Ian and Jackie are immediately welcoming and are obviously born to host; a phrase I’ve heard many times already and I definitely concur. Ian is already pouring the rum and Jackie is telling us how the popular ‘Old Ginga’ was named after their best friend; but I’ll let them tell you the rest of the story. 66
point of distraction. All his dishes are created on site, using the finest, fresh and local ingredients available. First up for us is braised pot of baby back ribs with pork cheek and a spiced sweetcorn puree and a classic combination of seared scallops served with chorizo and pea puree. The complexity of taste of both dishes is astonishing. Beautifully presented on dark slate, it’s the finishing touches that make us really notice what we’re eating. Edible flowers and shoots, the finest ribbons of vegetables, perfectly tiny wedges of lime and just the right amount of cooking add up to perfection. Mission accomplished. By the time our main is delivered we know that this tiny restaurant can deliver big flavour but the dishes laid in front of us take it up once again to the next level in terms of presentation.
One of us finds cubes of Indian spiced onglet steak laid diagonally across a huge square plate sat neatly atop the most flavour packed tomato and red onion chutney we’ve had the pleasure of tasting. There’s a stack of Bombay potatoes with a roast peanut crumb to add texture and a pot of incredibly fresh cumber raita. For the other, it’s a classic lamb dish which is equally impressive; we’ve already agreed we simply have to swap plates after half way. The lamb is accompanied by carrot and parsnip crisps, layered potato and sweet potato fondant and pea puree. For added wow factor there is mint jelly filled courgette.
Try The ‘Old Ginga’ at home
There’s no lazy cooking here. No short cuts. Everything on the plate matters. One could possibly be forgiven for thinking the price per dish sounds at first on the higher side. But with consideration of how complete the dish is, there is no need for sides, the price is justified. Instead, accompaniments come as part of the plate, so there’s no need to order plain vegetables which usually top up the price with little return.
Mark says “There are some really great rums out there that deserve recognition, that’s part of what I want to do, share them with our customers. I’ve hardly had anyone ever leave an ‘Old Ginga’.” Blend Old J vanilla spiced rum, Old Jamaica ginger beer, a wedge of lime over ice and enjoy.
Dessert is a talking point in the restaurant. Diners are all speaking so highly of what they had experienced before that the conversation naturally overlaps form table to table. “I have no idea what I want to go for, what are you going to have?” It’s such a good feeling, and one that is rare, as not often will all the diners be experiencing the same level of menu euphoria! We settle on a crème brulee and a very rich, very gooey and ultimately delicious chocolate brownie with of course, all the trimmings. We each finish with an aperitif; limoncello and a chocolate grappa, under the heaters in that little caribbean hideaway lamenting over the fact that the meal is over.

Chocolate Macaroons Although created in France way back in the sixteenth century, macaroons continue to mesmerise us. They are the little black dress of pâtisserie and a blissful treat. We suggest finding a luxurious little presentation box and ribbon to gift wrap your macaroons.
into 3cm rounds on baking trays lined with non-stick baking paper, spacing them at least 2cm apart. Carefully slide the macaroons on the baking paper onto the preheated baking tray and cook for 8 minutes. Leave to cool and firm up on the baking trays for 5 minutes before transferring to a wire rack to cool completely.
Cooking time: 8 minutes Special equipment: electric mixer, cook’s thermometer, large piping bag, 8mm plain nozzle.
To make the ganache Finely chop the chocolate and place in a heatproof bowl. In a medium saucepan over a medium-high heat, bring the cream just to the boil. Immediately take off the heat and slowly pour onto the chocolate, whisking constantly. Continue whisking until the chocolate is melted and the ganache is smooth, then leave to cool. Place in a piping bag until needed.
Ingredients For the macaroon paste 60g pure chocolate (cacao paste) 185g icing sugar 185g ground almonds 2 organic/free-range medium egg whites For the Italian meringue 185g caster sugar
To finish Pipe about 1 tsp ganache onto the flat side of a macaroon and sandwich together with the flat side of another macaroon. Repeat to pair the rest. Store in a single layer in a sealed container in the fridge until needed.

Spiced Beetroot and Orange Chutney
Chilli Oil Chilli oil is perfect to give as a homemade edible present for use in salad dressings, stir-fries or on pizzas. If you’ve got a friend who likes it hot then this is the gift to give! Cooking time: Prep – 30 minutes, Cooking – 10 -30 minutes
Ingredients 450ml/17fl oz olive oil (not virgin) 20g/¾oz dried red chilli flakes 3-4 whole dried red chillies
Method Gently warm the olive oil in a saucepan. Add the chilli flakes and whole chillies to the oil and heat for 3-4 minutes. Remove from the heat and leave the oil to cool slightly.
This fantastic chutney serves perfectly with cold meats and cheeses. Find some old jars and ribbon to create a truly personal gift, complete with a handwritten brown tag! Cooking time: Prep – 20 mins, cooking – 1 hour
Ingredients 1½ kg raw beetroot, trimmed, peeled and diced (wear gloves!) 3 onions, chopped 3 eating apples, peeled and grated zest and juice of 3 oranges 2 tbsp white or yellow mustard seeds 1 tbsp coriander seed 1 tbsp ground cloves 1 tbsp ground cinnamon
When the oil has cooled slightly, carefully pour it into sterilised, sealable glass bottle using a funnel. (Caution: hot oil can be dangerous.) Add the chilli flakes and dried chillies from the pan. Seal the bottle.
Method In a preserving pan or your largest saucepan, mix all the ingredients together well. Bring to a gentle simmer, then cook for 1 hr, stirring occasionally, until the chutney is thick and the beetroot tender.
Keep the bottle in a cool, dark place, shaking the bottles once a week. As time goes on the oil will become redder and hotter.
While the chutney is cooking, prepare your jars by running through a short hot wash in your dishwasher. Or wash thoroughly by hand, then put in a hot oven to sterilise for 10-15 mins. Once the chutney is ready, let it settle for 10 mins, then carefully spoon into the jars and seal while still hot. You can eat it straight away but it will be even better after a month. Will keep for up to 6 months in a cool dark place. Once opened, refrigerate and eat within 2 months.

It’s a Gin Thing In case you’ve been living under a rock this year, gin is in, in a big way. Gin snobbery is on the rise and the spirit, so affectionately known as mother’s ruin, is cropping up just about everywhere and is everyone’s favourite spirit.
One craft gin that appears to be gaining popularity and accolades (they’ve already won several awards and distinctions in just 2 years) is BIG GIN, distilled by Captive Spirits. Launched in 2012 by Ben Capdevielle and his fiancée Holly Robertson who noticed a gap in the market for a big flavoured gin, Captive Spirits works out of Ballard near Seattle and is purely a distillery of gin. With a family history steeped in distilling (Ben is a third generation distiller) and years of experience working in the bar industry, Ben teamed up with business partner Tom Leabman, and they made their dream for a powerful gin flavoured gin (and by that we mean a gin packed full of juniper), a reality. Distilled from a corn based spirit in a 100-gallon Vendome-made pot still, BIG GIN was always intended to be a gin that doesn’t shy away from the juniper. Early in their journey they tasted several gins, picking out the
best characteristics of each in order to determine what their own gin should consist of. When asked by the Gin Foundry, Holly of Captive Spirits stressed that “Ultimately, what we are striving to produce (and feel like we do!) is a domestic dry style gin made for people who enjoy the traditional flavour of gin.” Fairly traditional in its line-up of botanicals (of which it has nine juniper, coriander, bitter orange peel, grains of paradise, angelica, cassia, cardamon, orris, tasmanian pepper berry) – the nose of BIG GIN is strong and assertive, peppery and bold. It’s great straight, but also mixes really well, we have sampled a few of the cocktail recipes on their website and are particular fans of ‘The Working Late at the Office’. Following the successful launch of BIG GIN, Captive Spirits launched bourbon barrelled BIG GIN, offering a new spin on classic gin or bourbon cocktails. Aged for six months in used Kentucky Bourbon barrels, the finish is woody and rich and is great for mixing.

There are lots of fantastic gin distilleries here in the UK and a couple right here in good old Yorkshire (Mason’s Gin & Sir Robin of Locksley we mean you!), but for this particular feature our attention is on the Yanks. It would seem micro distilleries are cropping up all over the US and while in the grand scheme they represent a very small minority of spirit producers, they appear to be leading the way when it comes to the production of American gin.
Sadly these hand labelled (we love attention to detail) bottles of gin goodness are not widely available here in the UK but it’s not impossible to get your hands on, and that’s the main thing. Currently it is exclusively available through Master of Malt. Phew. So make a note and be sure to stock the bar with these this Christmas, we promise you’ll not regret it!

20 years at the top For the first time on such a visit to the UK, Camus ventures outside of London and chooses the stunning Yorkshire venue Middlethorpe Hall to host the launch of his Anniversary tasting event - next stop, the Ritz, London. Grandson to a farmer of the Thiérarche, in north-eastern France, Régis Camus, 58, is the man in the shadows, shaping the Piper-Heidsieck champagnes since he first arrived at the House. Following studies in biology and biochemistry, he trained as a winemaker in Reims and began his career in a Champagne cooperative before joining the team at Piper-Heidsieck.
In the grand drawing room of this magnificent country house hotel, Régis Camus’s suave and exuberant personality draws in an audience gathered to hear him speak about his life as Chef de Cave at Piper-Heidsieck. Crowned ‘International Wine Challenge Sparkling Winemaker of the Year’ eight times running, this year Camus celebrates his 20th year as this prestigious champagne house. Throughout this time he has carved out a position for himself as one of the most awarded and influential winemakers of the century. During the tasting presentation, Régiis Camus is passionate and light hearted; a really likeable fellow who seems to enjoy using funny anecdotes to get his point across. We particularly love how he describes each Champagne by demonstrating a comparison of the range with the fashion industry. The Cuvee Brut Non Vintage is like the ready to wear range of a fashion designer. The same well thought out signatures styles appearing season after season. The 2006 Vintage Brut for example is like a ‘collection’ such as the ‘Spring sportswear collection’ of a fashion label. The Rare Millesime 1998 can only be bought in a magnum. Regis goes on to say that all Champagne should only be available in a magnum which is the best size for two people to enjoy –especially (he 74
jokes) when one doesn’t drink. This is one of only eight vintages since its preparation began with a Faberge designed bottle. This is haute couture. We were honoured to be invited to the celebration and delighted to have the opportunity in an exclusive interview for MODE, to meet the man himself.
This is your 20th year at Piper-Heidsieck. During your time here you have made quite a few changes. Could you explain these changes and why you chose to make them? He starts by telling us it has been 20 challenging, yet enjoyable years. He goes on to explain; the first aim was to renew the old range and give it a contemporary note. When he arrived at PiperHeidsieck, Régis felt that the brand was very well known but the wines were not quite to the standard of the win. It’s a big thing to admit and even bigger challenge to embark upon correcting. Next, he set about building and developing the winery and creating a closeness to the growers not only Champagne, but around the world. There was a particular focus on South Champagne to increase the availability of the Pinot Noir grape, one Régis sees as very important for the production, colouring and taste of the wine. Another impacting step taken was the construction of Reserve wines and development of the Non-Vintage range. Extending the maturation for Non-Vintage Brut to a minimum of 24 months compared to the regulatory 15 months. He also decided to keep the wine a further three months after disgorging. He concentrated on increasing the share of crus or villages into the production mix concentrating on the Pinot Noir for a fruity richness in the Brut Non-Vintage. These changes saw his first Non-Vintage in 2004 win a prestigious award and set the benchmark for award winning winemaking over the 20 years that followed. When you were a child, you wanted to be a scientist. How do you think your interest in science has helped you in your role as Chef de Cave? Régis tells us he had an innate need to feel close to nature, close to science which drove the notion of becoming a scientist. Being ultimately aware of smells and aromas, atmosphere and sensations is what a winemaker needs to consistently use to feel the perfect product. A little like a chef that touches the meat in the pan to test it is cooked rather than using a timer –so it certainly helps.
What would you say is the most enjoyable and most challenging aspects of your? “All of the job is enjoyable” Régis tells me with such a genuine smile, such passion, that I know he really means it. He says that from the difficulties, he makes opportunities, and there are many difficulties. They don’t scare him though he says, he gets bored too easily so is happier when things are running less smooth. If you had to describe the House style of PiperHeisieck in three words, what would they be? We are a House with roots deeply set in Champagne since 1785, in three words (Régis looks upon the task as a challenge) Structure – The Pinot Noir brings a structure to our blending Fruit – Whatever the country, we use their fresh fruit Volume/Length –It has big personality, especially thanks to the reserve wines. If you could offer tips for enjoying Piper-Heideick? Régis says that the grower takes nine months to create his ‘baby’ the grape, he takes nine months to make the cuvee. There is a minimum of three years in the cellar for his Non-Vintage, five to six years for Vintage and a minimum of eight years cellar time for prestige bottles. When it gets to the drinker, it can be spoiled in just two seconds! The most important factors to consider to avoid spoiling your Champagne are; Good conservation of the bottles – the same as wine and away from light, heat, vibration and temperature fluctuation. Good serving temperature –ideally 8-10 degrees
Over and above mastering the technique, there is the loyalty to House style, a clear vision of where one wants to bring it and the intuition and confidence to know the way. The most important is probably the desire to share one’s passion. Régis Camus

A Sensational Win for the House October saw the official unveiling of the £2 million refurbishment and extension of Napoleons Casino & Restaurant at Owlerton in Sheffield. The exciting VIP studded event saw the opening of a new restaurant, bar and lounge area, extended gaming floor and most significantly for the venue, the opening of the first outdoor gaming terrace outside London.
Part of the A&S Leisure Group, which last year celebrated 45 years of business in Yorkshire, Napoleons has a long-standing reputation within the city’s night-life scene. Getting ahead: Dress for success Don’t let shoddy office attire be the undoing of your career. Take our tips on dressing for work to make sure your interpretation of the office dress code is more hit than miss.
Make sure your dress fits in. If everyone else comes to work in jeans, don’t insist on wearing a suit. The same rule applies in reverse, if the office policy is to wear a suit then you must. Whilst it’s important to respect the general office wear dress code, remember to be yourself. If your office insists on more formal attire, employ subtle ways to convey your character, such as choosing a statement necklace, or colourful tie or socks. Don't completely detach your character from your dress sense for work or you’ll come across as unremarkable to your clients, colleagues and managers. Power dressing isn’t just a phrase coined by fashion heads, it’s a proven method. People perform better when they feel empowered and part of that comes from looking good. It’s also important to make sure you feel comfortable, following trends when they go against your natural sense of style and character can throw you off, if you’re feeling self-conscious then it’s going to show through in your work.
We aren’t suggesting you create a mini office to arrange your attire. But it might help... Preparation is key, think ahead to what you’ve got planned that day; meetings with clients may require more thought than a quiet and casual Friday. Inappropriate dressing is very counterproductive. Skirts that are too short, sheer fabrics or low cut garments may call into question your professionalism as will un-kempt clothing. If you can’t be bothered to iron your shirt, how much attention will you pay to your work? If you’re unsure about the propriety of a particular garment then it’s probably not appropriate, if you 89
have to think about it then avoid wearing it to the office. Dress down day should not be mistaken for anything goes day. Smart denim and knitwear, or a more casual shirt are usually safe bets. Sportswear isn’t appropriate work attire (unless of course you happen to work in a gym…) Whilst some might prefer to just wear a suit rather than partake in a casual dressing day, we would advise you to participate. Choosing to ignore the dress down policy could be interpreted as negative behaviour by your employer.

THE 911 CARRERA Following on from last issue, this is the second part of our review of the two Porsches we had to play with at MODE HQ. To remind you we had the Boxster S with PDK and this special Martini Edition 911 Carrera. So in this issue we have a closer look at the 911.
The problem we have here with this review is that we are naturally going to compare the two models as they were road tested at the same time. The actual model tested here is the standard Porsche 911 Carrera with the special Martini livery to celebrate the launch of the "Porsche 911 S Martini Racing Edition". This is to coincide with this year’s 24 hours of Le Mans race. Marking the return of Porsche to endurance motorsport is a limited edition 911 in traditional Martini racing design, which reflects the styling of Porsche race cars of the 1970s. The 911 Carrera S pays tribute to the successes of the legendary Porsche Le Mans race cars such as the 917 and the 935 “Moby Dick”. The special edition is limited to 80 units worldwide and obviously more expensive than this model if you can get your hands on one. When comparing this 911 to the Boxster S the obvious thing that stands out is that the
performance figures are almost identical. This is because the Boxster had the full sports package. When you compare the prices the Boxster is almost £25k less making it a really attractive option. At the end of the day though. This is a 911. All 911’s are very special in terms of engineering and driver experience as well as that extra kudos that it’s a 911 and nothing else. There are currently twenty 911 models available not including the special editions. My particular favourite is the Porsche 911 Carrera 4S which I hope to get hold of again soon. Verdict: Although I’m not giving this model top marks. It is an outstanding car to drive. If you are going to buy one it is well worth spending a little extra for a whole lot more. I would always go for the PDK gearbox with the sports exhaust. It adds a lot of fun to the driving experience and would score 5 stars all day long. 90

Aston Martin Lagonda The finest of fast cars...
A bespoke product programme for a new super saloon will see the revival of the historic Lagonda nameplate in a strictly limited series. As has traditionally been the case, the Lagonda badge will once again sit proudly on a luxurious and exclusive super saloon. The stunning luxury super saloon revives the Lagonda ethos of ‘the finest of fast cars’ and will be offered exclusively in the Middle East, as a result of specific market demand.
The return of Lagonda follows in the wake of other headline-grabbing projects such as the One77 hypercar, V12 Zagato and last year’s CC100 Speedster Concept – then seen as the ultimate Q by Aston Martin car – which started out simply as a centenary celebration design concept and, as a result of exceptional demand, later turned into two customer commissions. Based on the brand’s existing flexible VH architecture, the new car draws inspiration from

the highly sought-after William Towns-designed Lagonda of 1976 and features many of the same cutting edge engineering techniques seen in modern Aston Martin sports cars such as the use of carbon fibre in the body panels. It will be hand-built by the finest craftsmen and women at Aston Martin’s modern manufacturing facilities in Gaydon, Warwickshire in a dedicated building previously given over to the creation of the One-77 hypercar.

AMG MERCEDES When the invitations to a Mercedes AMG Drive event landed on my desk I was of course very excited as usual. But more so this time as it has been a huge year for Mercedes.
With some new model launches recently and more to come soon, it’s a good time to get to experience what’s on offer. The AMG brand of Mercedes-Benz is deeply rooted in motorsport. The story of AMG begins with two Daimler-Benz engineers. Hans Werner Aufrecht and Erhard Melcher worked in the Daimler-Benz Group’s development department in the 1960s and prepared the 300 SE racing engines. The name AMG comes from the first letters of the founders’ family names followed by G for Großaspach – the town where Aufrecht was born. These days an AMG is not simply a Mercedes with more horsepower – it’s virtually a completely new vehicle. In order to achieve this goal, AMG engineers are involved at the earliest concept phase when the Mercedes-Benz development team considers a new model. Only in this way can they integrate AMG

Being a Formula 1 fanatic and supporting Lewis Hamilton all season and seeing him become World Champion for the second time along with Mercedes winning the constructors championship. This is a fantastic result as a fan and for the Mercedes brand all around the world. A lot of the engineering and technology created by the racing teams filters down to the road cars. The three letters, AMG, are at the heart
of the “Mercedes AMG Petronas Formula One™ Team”. AMG is synonymous with sporting performance. The high-performance brand has strengthened this claim since 2012 through its presence in Formula 1. Mercedes AMG Petronas Formula One Team combines the traditions of AMG with those of the ‘Silver Arrows’, which have been successful in the top tier of motorsport in a period stretching over 75 years. Culminating this year with the ultimate prize of winning both drivers and constructors championships in the very top tier of motorsport. Mercedes C63 AMG I arrived at Mercedes-Benz Sheffield, part of the JCT600 Group, just after lunch and the most horrendous morning’s weather. Luckily right on cue the skies cleared and the roads dried. The car I took out was the AMG C63. Although this is now the old model it did not disappoint. Mercedes have just brought out an update on the C-Class. This version had a whopping 457bhp from a glorious sounding V8 - 6.2 litre power unit. Driving away from the dealership in heavy traffic, everything was very calm inside the car. This is a very comfortable saloon that is at home cruising around town without being obvious of what performance it’s truly capable of. As soon as I hit open country and clear roads, the beast of an engine roared into life and the adrenaline levels went through the roof. This car is simply awesome. My verdict: The C63 AMG is an amazing bit of kit. It’s a practical, comfortable everyday family car with a huge V8 that delivers stunning performance when you get the chance to use the horse power available.
