WHAT INSPIRED YOU TO START LETTERING? I've always been fascinated with signage, specifically vintage hand lettered pieces and then my husband bought me various lettering tools and I haven’t looked back. I wasn’t certain it was something I could learn as I thought it was simply how lettering artists naturally wrote; I didn't realize that lettering is actually drawing letters. If you ask a calligrapher/letterer to write in their regular handwriting, it’ll likely be as normal as yours. WAS LEARNING TO "LETTER" AN EASY TRANSITION AS YOU'RE AN ESTABLISHED ARTIST? Yes. I have been drawing photorealistic graphite portraits for nearly 30 years and a graphic designer for over 20 years, so lettering combined the best of both worlds. WHAT'S THE MOST REWARDING ASPECT OF LETTERING? Recognition from my peers. The lettering community is quite supportive, and any positive reinforcement from letterers that I admire is rewarding.

by jay kana

Our Modern Artist in this issue of Mississauga’s magazine is Elizabeth Wise of Wise Lettering. This local, vibrant, talented, creative and humble artist is one to keep an eye on as she’s quickly rising in popularity due to her imaginative vision and unique creativity.

DO YOU WISH YOU WOULD'VE STARTED EARLIER, OR WAS THE TIMING RIGHT FOR YOU WHEN YOU STARTED? I wish I knew that lettering was actually a "thing" earlier as there are so many times in my design career that I just couldn't find the right font and had to spend a lot of time digitally altering existing fonts to create what was in my head. WHAT FRUSTRATIONS COME WITH BEING A LETTERING ARTIST? Illustrating to some clients to see and understand the value of what they’re getting. Just because I can write something quickly doesn't make it less valuable. To some, they do not consider the hours, schooling and training that went into learning this skill. IS THERE A SPECIFIC STYLE YOU'RE FOND OF? Highly graphic pieces, specifically black and white high contrast. I’m also fascinated with the art of traditional sign painting. WHAT'S BEEN THE MOST CHALLENGING LETTERING PROJECT YOU'VE DONE? This February, I was flown to Atlanta to paint a 13' x 9' wall mural, which took nearly 20 hours of hands-on labour. As intense as it was, I loved every minute of it. WHAT DOES THE BALANCE OF 2018 LOOK LIKE? I have a handful of events in and around Mississauga upcoming and more large scale wall murals lined up. My goal is to become an established letterer and a go-to mural artist in the community. Connect with Elizabeth via her interesting Instagram account, @wiselettering or at www.wiselettering.com.

Modern Mississauga Media and Pixie Blue Studio feature local artist Neerja Trehan, who says “I started drawing very young and have a bachelors in Fine Arts. I capture the serene and compassionate forms of nature to explore the mystical side of life, which helps find peace, insight, and harmony within myself.” DESCRIBE YOUR ART IN ONE PLAYFUL WORD Serene. IF YOU COULD PAINT WITH AN ARTIST FROM THE PAST; SOMEONE WHO HAS INSPIRED YOU – WHO WOULD IT BE? Vincent Van Gogh.

HOW DOES YOUR CREATIVE MIND RECHARGE? I find meditation and baking very relaxing as they allow me to relax, recharge and stay focused. WHAT IS YOUR FAVORITE QUOTE? “Paintings have a life of their own that derives from the painter’s soul” (Vincent Van Gogh). WHAT GENRE OF MUSIC DO YOU LISTEN TO WHEN YOU PAINT? Meditational music, Indian classical music, and pop at times.

WHAT ADVICE WOULD YOU GIVE YOUR YOUNGER, CREATIVE SELF? Follow your dream; “Rome wasn’t built in one day”.

Give Bright Students Concepts they can “Sink their Teeth Into” by kimberley langen, CEO & co-founder, Spirit of Math

Schools

Has your child come home from school with math homework involving memorizing steps and repeating them ad nauseam without really understanding what is going on? Even worse: do you have a bright child who has been turned off math because they are bored with the procedures, and find it meaningless? Math programs with a primary focus on procedures not only turns people off mathematics, but also develops people who learn how to follow without questioning. On the other hand, a strong math program, such as Spirit of Math, that focuses on a solid understanding will produce creative, critical thinkers who are excited to learn more. Finding a program with good core material is tough, but essential. These pointers will help you evaluate the core of a math program and determine if it will meet the needs of your highperforming child.

1. The program offers questions significantly different than the regular textbook type of questions. 2. The core material goes deeper and broader in each topic. 3. The program has been developed with the intent to first establish very strong numeracy skills. 4. The program was developed over many years, in the classroom with students. There are so many math programs out there, and many more people who think they can teach math because they know “the steps”. It takes a very discerning parent to look deeper into the program and to make sure that it is, in fact, going to teach their child how to think mathematically, and not just how to do the next question. A person who can think mathematically is able to logically put ideas together and that is a skill that can be applied to every area of life. Kimberley Langen is the CEO and Co-Founder of Spirit of Math® Schools. For more information about Spirit of Math, and to find a campus near to you, go to www.spiritofmath.com.

by jay kana photos courtesy of jay kana As a diverse, cultural and artistic hub, Montreal’s vibrant art scene attracts visitors worldwide who want to engage with and experience what this charming city has to offer. I recently spent a few days in marvelous Montreal and familiarized myself with their alluring art scene. Founded in 1997, Ubisoft Montréal is the world’s largest videogame development studio. They’re a proven industry leader, having created nearly 100 games for huge, global brands, such as Assassin's Creed™, For Honor, etc. There’s a direct correlation between video games and art as the hundreds of thousands of work-hours put in to create such exquisite detail is an art form all to itself. They blend innovation, creativity and the building blocks of technology to produce this popular art form. The inviting, stylish, artsy, creative and unique neighbourhood of Mile End is a tapestry of art galleries, designers' workshops, boutiques and cafés. There’s a burgeoning indie scene that sees distinct retail outlets showcasing music, clothing, restaurants and bars. Local hotspot, Dieu du Ciel, has earned the “best brasserie in Canada” by ratebeer.com for 12 consecutive years! With nearly something for everyone, Mile End easily keeps you interested and engaged for days on end. A true art collective, the creative clothing team at Le Cartel collaborate local and international artists with original, artistic themes to produce unique and trendy apparel designed and hand printed in Montreal. They also give back a percentage of sales to the artist so the wearable piece of stylish art you buy supports the local art scene. The Phi Centre, a multi-disciplinary arts and culture hub, produces cool, original content through a variety of initiatives through several genres. This versatile venue for arts & culture can host concerts, film screenings, plays and exhibits and always has something going on. Bring your comfy shoes and tour the street level art scene by foot via a walking tour. You’ll discover the plethora of murals and learn about the artists who bring the streets to life, along with Montreal’s abundance of historical and cultural richness through various neighbourhoods. On the culinary side, vegan/vegetarian restaurant, LOV, illustrates that food is certainly an art through their “back to basics” approach of delicious, delectable and divine menu items that are truly Instagram-worthy. With an art scene that’s as exciting as it is eclectic, remember that you can’t spell Montreal without the word art.

exciting eats and adventure on our east coast by jay kana | photos by jay kana Picturesque Prince Edward Island (PEI) may be our smallest province but they've certainly got a massive amount of charm, excitement and oh-so delicious dining options. My better half, Laura, and I spent a week “out east” and explored the province via car (a peppy, fun and functional manual transmission 2018 Mazda CX-3) and took hundreds of pictures to capture the beauty of our adventures. After flying into Halifax, NS, we drove 90 minutes to Caribou, NS, where we enjoyed the 75 minute afternoon ferry ride to Wood Islands, PEI upon calm, scenic waters. Our first stop was the Cape Bear Lighthouse, built in 1881. Interestingly, it was here that Thomas Bartlett heard the first distress signal from the Titanic as it sank off Newfoundland. Laura and I checked into the gorgeously quaint Georgetown Historic Inn that evening, which oozed charm, friendliness from the staff and guests. We strolled through this historic town via a self-guided tour and snapped pictures of all the brightly painted homes and shops as we embarked upon their wondrous waterfront. Dinner was at a waterfront restaurant called Clam Diggers, where we enjoyed a casual yet exceptional dining experience. We strongly suggest the pasta and scallops and of course, try the fantastically fresh lobster dinner. The following morning saw us explore one of our favourite spots on

the island; the Greenwich National Park. It features a nearly 1 km long floating boardwalk (which is remarkable!) that takes you to PEI’s most famous beach and provides access to the breathtaking parabolic dune system emerging above white sand beaches. All that walking stirred up quite the appetite for us and Rick’s Fish and Chips was easily the best choice for us. While the menu was bursting with Rick’s own cool creations, we opted for the classic (and absolutely perfectly cooked) Fish & Chips for lunch, which we enjoyed beneath the sunshine on their patio. Since Laura and I were walled by water, we floated by Outside Expeditions for a kayaking tour, hosted by the owner (and tremendously fantastic fellow) Tim Nicholls. No fighting, no capsizing and an all-around great time! The famous and fun Blue Mussel Café, in North Rustico Harbour is a must-visit for nouthwatering seafood and an exciting atmosphere. Owners Steve and Christine have made this an award winning eatery by blending stellar service with fresh, delicious seafood. Unsurprisingly, we each had the lobster dinner and well, it doesn’t get any better tasting than it does at this charming, seasonal restaurant. The Kindred Spirits Country Inn provide refuge for us from the fun-filled day, complete with a spacious and very clean cottage room, small-town charm and a solid nights rest. Day three saw your east coast couple spend the morning walking

the scenic Cavendish section of the Prince Edward Island National Park and then a stop in at the Glasgow Glen Farm, featuring artisanal cheese production and farmhouse bread and pizza fresh from their wood fired brick oven. Lunch was enjoyed at the Sou’ West Restaurant and Grill in gorgeous Green Gables, where we dined on fresh and fantastic seafood with a perfect view of the water. We even got a demonstration on how to properly shuck oysters! The star attraction during our visit was the renowned PEI International Shellfish Festival and yes, it’s as amazing as it sounds. Since 1996, this iconic festival features

culinary demos, celebrity chefs, delicious dining experiences, the best of the best potato seafood chowder and the everexciting oyster shucking competitions. While you can enjoy PEI year round, I highly suggest you experience the Shellfish Festival as the food is fresh and plentiful, there’s a constant buzz of excitement and activity and there’s something for everyone, whether it’s family or friends. The event runs this year from September 13 to 16. As I race toward my word count, Charlottetown’s newest luxury lodgings, The Sydney Boutique Inn and Suites takes upscale to an entirely new level and is walking distance to many local attractions.

And keeping on the food side of things, drive 30 minutes west and visit the charismatic village of Victoria by the sea to load up on pictures and if you’re hungry (which I’m sure you will be) pop into the Lobster Barn Pub & Eatery for (of course) delicious seafood and pub fare, which can be enjoyed right on the wharf. Our PEI escapade filled our cameras with pictures, our stomachs with unbelievable food and our minds with memories. Imagine how wonderful it’ll be when you go! tourismpei.com 1-800-463-4PEI

ROCKING OUT IN

BANCROFT by jennifer merrick | photos by jennifer merrick “The Weekend” is what Bancroft locals call the first weekend of August, when the Rockhound Gemboree takes place. Over 6000 folks visit this town located in the Haliburton Highlands, 250 kilometres north of Mississauga for the country’s largest gem and mineral show. But Bancroft, known as ‘The Mineral Capital of Canada’ is a gem to visit at anytime, especially for those like myself who can’t resist picking up an unusual rock or two or three... “Its geological history goes back 1.4 billion years,” says geologist Corey Lablans. “And more than 1600 different types of minerals have been identified in the region.” This means that anyone, rockhound or not, can find some display-worthy minerals to take home. Our family scored rose quartz, amethyst, appetite crystals, mica and the highly-prized sodalite on our visit. Sodalite holds a special place in the region’s mineral heritage. Other than South Africa, Bancroft is the only other major source of the royal-blue decorative gem. The best place to find it is at the Princess Sodalite Mine, where visitors can unearth the sought-after gem themselves at the site. For those who’d rather let others do the mining, the rock shop on the premises stocks mineral specimens, gems, collecting

supplies and jewelry. The self-named “healy feely” section is filled with metaphysical literature and gems labelled with their transcendental abilities. For Wendy Melanson, curator of the Bancroft Mineral Museum, gems don’t need any mystical properties to impress. “They are attractive in their own right,” she says. And the minerals and gems on display at this museum certainly dazzle. Bancroft specimens have been shipped for displays all over the world, including the Smithsonian Institute, so it’s fitting that they should finally have a place to show off their brilliance at home. The Bear Lake Diggings display features large specimens found at this popular nearby collection site. In fact, anyone willing to dig and get dirty for their riches is welcome to gather rocks here once they have purchased a pass (though you’ll need to bring your own supplies). THE MISSISSAUGA FIRE DEPARTMENT – by lindsay noronha | photos by craig wilson

THE YEAR 1968

was a significant one for the history books. From the introduction of Boeing’s first 747 Jumbo Jet to the first manned spacecraft to orbit the moon, many memories were made in the late sixties. For Mississauga residents, 1968 was significant for another reason. This was the year the Mississauga Fire Department was formed. The creation of Mississauga Fire brought together fire stations that were operating in the then independent towns of Mississauga, Streetsville and Port Credit. These three stations served their combined population of 120,500. Over the past 50 years, the City’s population has skyrocketed and Mississauga Fire now proudly serves nearly 800,000 residents through 20 fire stations. In 2014, Mississauga Fire and Emergency Services (MFES) – which evolved from the Mississauga Fire Department in later years – welcomed its sixth fire chief with the

16 MODERN MISSISSAUGA | EARLY SUMMER 2018

appointment of Tim Beckett. Chief Beckett has been described as a visionary in the fire service and has been applauded for running a progressive department. “It’s about the people,” Beckett shared. “We had great people blazing the trail before me and I have amazing people working with me now.” The people Beckett is referring to are MFES’ more than 700 staff. This includes their leadership team, of which 50 per cent are women. Beckett cites the work done by past chiefs as the catalyst to the amazing work that is being done now by the fire department. Beckett includes the late Garry Morden, who served the

– 50 YEARS IN THE MAKING community from 1977 to 2008, as one of the great chiefs that called Mississauga Fire home. That name may sound familiar as it adorns the City’s state-of-the-art, multi-agency training facility, the Garry W. Morden Centre (GWMC) – a colourful feather in MFES’ cap. The GWMC, which opened in 2012, is where MFES trains its staff in all aspects of the fire service including fire suppression. In contrast, 50 years ago, fire recruits would practice their firefighting skills at old farmhouses scheduled for demolition.

Igniting the Passion for Fire Service

Training isn’t the only example of how the fire department is evolving. With the introduction of new programs including Camp Ignite and Road to Mental Health Readiness (R2MR) training, the 50-year progression is highly visible. Camp Ignite, a firefighter training camp for teen girls, focuses on shining a light on the fire service as a potential career path for young women. “It’s not about having more women firefighters on the job,” explained Beckett. “It’s about having the right people in the right roles and we want young women to understand that they could be the right people. We want them to ask themselves, ‘Why not me?’” The third annual camp is taking place this July. Since its inception, four former campers have

enrolled in fire training programs - a number that Chief Beckett is very proud of.

Prioritizing Mental Health

Over the past 50 years, first responders have come a long way in recognizing and acknowledging the impact the job can have on the mental health of their frontline staff. As a global leader in fire service, MFES was the first career fire department in Ontario to offer the R2MR program to its supervising officers through the Ontario Association of Fire Chiefs. This program addresses the stigma that often surrounds mental illness and increases resiliency. “We want firefighters to understand there is no shame in admitting they need help,” said Beckett. “It is essential that all first responders are prepared mentally for the challenges they will encounter on the job. This course gives firefighters the tools they need to recognize a potential issue in themselves and others.”

The Next 50

Traditionally, a 50th anniversary is celebrated by exchanging gifts of gold. MFES, however, will celebrate this milestone year by doing what they’ve always done – serving the community through passion, hard work and dedication. Mississauga Fire looks forward to celebrating their 100th anniversary with residents in 2068!

6 WAYS TO

increase fuel economy by jay kana Gas prices are constantly climbing and while you’re earning a few extra reward points at the pump, it’s still costing you more than it did a few months ago. Here are six ways to increase your fuel economy to maximize every liter of gas or ounce of electricity: PROPERLY INFLATED TIRES Check your tire pressure once a week as the PSI can fluctuate. Under inflated tires increase rolling resistance and your vehicle uses more fuel/electricity to be kept in motion. PLAN YOUR ROUTE Several short trips decrease fuel economy so take a few minutes, organize your day and routes and try and get all your short-trip driving done in one circuit. If you’re list includes the hardware store, drug store, music shop and grocery store, hit up the grocery store last so your cold/cool items spend as little time in the car as possible. AVOID EXTRA WEIGHT From a few boxes of old clothes/items destined for donation to the “I’ll remove that box of whatever” next time, unnecessary weight will increase how much fuel you use. DRIVE SMOOTHLY Primarily for highways, find the speed that traffic is moving at and stay in that zone. Hammering down on the gas pedal to weave through traffic is stupidly dangerous and wastes fuel. Use the cruise control when you can as the constant speed reduces gas consumption. DRIVE SENSIBLY Full throttle from a dead stop just to be the first at the next red light is a massive waste of fuel. You don’t have to crawl “off the line” but there’s a sensible balance to be had. The same applies for slamming your brakes when slowing down. For the manual drivers, don’t be wasteful and rev your RPM’s higher than necessary; shift to what the manufacturer suggests or close to. Electric/hybrid drivers; see my first point about gunning it off the line as your battery life will deplete faster than expected and with electricity prices being high, consider maximizing every dollar spent charging your car. AVOID IDLING If you’re stuck at a long light, turn your car off to save fuel. Several new cars have an auto start/stop feature to save fuel and if you’re car doesn’t, it’s worth it to shut off your engine instead of wasting fuel by idling.

6 BEST RIDES FOR

THE DRIVE IN by jay kana |

photo courtesy of welcomia / freepik

With drive in season is here, don’t settle on watching a tiny 50” TV screen at home. Instead, get out of the house and visit a drive in to watch your movies on a massive screen! Not sure on the best vehicle to optimize your drive in experience? Read on, friends, as we’ve got you covered with six options that’ll make your drive in experience exemplary:

MINIVAN

With this couch on wheels, bring your family, friends and even neighbours to the movies, all under one long roof. The 2018 Honda Odyssey is our choice as it’s spacious and oh-so comfortable.

CONVERTIBLE

Enjoy a movie beneath the stars via a retractable top and there’s no fogging up of windows. Let the sound of crickets be your background soundtrack to whatever you’re watching! The 2018 Ford Mustang is our favourite because in addition to being comfortable, it also offers available heated and cooled seats.

PICKUP TRUCK

Truck Yeah! Reverse into your parking spot and hunker down in whatever seating choice you’ve brought. Whether it’s a recliner, couch, lawn chairs or an air mattress or, well, whatever fits in the bed of your truck, know that you’re bring the comforts of home to the urban outdoors. The 2019 Dodge Ram is up to the task of making outdoor movie nights a ton of fun because it’s from the future being a 2019 model!

LUXURY SUV

Not comfortable unless you’re saddled in plush, leather seats? Us either. Which is why a luxury SUV is the way to go as it’s s pacious, posh and quite comfortable if you’re sitting (not driving) for several hours. We quite like the 2018 BMW X3 as we spent a week in it and loved just how comfortable the seats and layout is.

A VEHICLE WITH A FRONT BENCH SEAT

We’re equally shocked that front bench seats are available in 2018. This retro classic makes stretching out a breeze and provides ample arm and leg room. The 2018 Nissan Titan XD is our choice because, well, Nissan makes great trucks and we applaud them for not “benching the bench.”

LUXURY CAR WITH MASSAGING SEATS

Massages, movies, Modern Mississauga – three things that enrich your life. But seriously, watching a movie and getting a massage is a pretty sweet combo. The 2018 Lincoln MKZ has a marvelous massage system for the front occupants. Unless you’re playing musical chairs during the movie, pick one lucky person as your movie companion.

MODERN ENTREPRENEUR:

Julia Chatterji

by jay kana | photos by pala dang Mississauga’s ambitious, creative and driven Julia Chatterji is on a path to make creating art approachable, engaging, and accessible and is opening her first location of The Studio - Paint Bar this summer in picturesque Port Credit. She’s been hosting and organizing paint and sip events for the past two years at various venues and has smartly decided to open a studio space with a wine bar and a community living room feel. Offerings include live music nights, gallery displays for local artists along with hosting several paint nights. Best of all, there will always be an easel and canvas open for anyone to walk in and create with. She recalls beginning her entrepreneurial journey by saying “I’ve always liked painting but rarely finished any of mine as I am a bit of a perfectionist. I went to a paint night for my birthday a few years ago and completely

20 MODERN MISSISSAUGA | EARLY SUMMER 2018

lost my inhibitions about painting. Shortly afterward, I thought why not share this with my son? We were both transformed by the experience and it inspired me to work towards starting my own company. I got asked to do “Mom & Me” parties and then got my first corporate event. After a couple of events, I realized this is what I want to do and what makes me happy.” Two years later, she’s hosted over 50 events from community fundraisers, unique collaborative experiences, including a Paint and Polish Party at a nail spa, singles paint nights, birthday parties, and other events catering from toddlers to adults. The beauty of what she does is that it’s completely customizable to any age or demographic. No artistic experience is necessary to have fun at her events. Her obstacles included the quest for the perfect space, which her team found after

over two years of searching as the right location is crucial for the studio’s success. Self-doubt crept in at times regarding how she’d differentiate her business from the others in this popular and growing industry. Remembering her vision and motivation helped keep her on course. The Studio – Paint Bar will be a creative space like no other, and that’s what drives her. Her advice for other entrepreneurs? “Just go out and do it as there’s never a perfect time. Research your idea, test it, be passionate about it and most importantly, love what you do.” “I’m so excited to be a part of the Mississauga business community. I have a remarkable team, a supportive family and friend circle, and together we look forward to working with our community and our city” says our Modern Entrepreneur.

Pros & Cons

OF A VARIABLE MORTGAGE RATE

Some home owners prefer a fixed rate mortgage versus one of the variable rate products on the market today. Before you assume one is automatically better than the other, it pays to look closely at the advantages and drawbacks associated with each one. Variable rate mortgages can be structured in one of two ways. One is known as an open variable product. What this means is that the debtor has the option of converting to a fixed rate at any time. The second approach is a variable rate mortgage that includes a specified fixed term at the front end. Some people choose open rate variable mortgages because they want to be prepared for any fluctuations that may occur with the prime rate. It’s true that you do assume some risk by choosing a mortgage with a variable rate. When the options are evaluated based on what has taken place in the real estate market in Mississauga and other major Canadian cities over the last decade, it pays to be poised to make the most of the current trend. This means you do need to monitor what is happening in the market, and with interest rates, and be prepared to make a change

by sam mcdadi if the circumstances warrant such an action. This means if the prime rate increases and the predictions indicate the rise will continue for several years, it’s time to exercise your right to convert and lock in a lower fixed rate now. In the period between 2007 and 2017, homebuyers in Mississauga who opted for variable rate mortgages saved quite a bit of money in comparison to consumers who chose fixed rate mortgages. Should you choose to secure a fixed rate mortgage, that rate will apply for the duration of the mortgage contract. Whether the prime rate increases or decreases will have no impact on the amount you repay to the lender. That’s great if the prime rate does increase as the years pass, but it can sting a bit if the rate drops well below what you are currently paying. Only you can decide if a variable rate is better for you than a fixed one. Work with a professional to explore different scenarios and settle on the one that seems to be best. The right choice will ultimately save you a lot of money. Call me at 905-502-1500 for more information. www.mcdadi.com

Millions of pictures are taken daily on smartphones and while there’s a fair number that are great, some shots could use a touch of improvement. Here are our six favourite accessories to boost your smartphone pictures and videos to keep your social media accounts looking lovely.

tex-mex stuffed peppers

by laura qusen I love traditional stuffed peppers but in the summer, I want spice and southwestern flavours and this recipe offers just that. Traditional taco flavours mixed with enchilada sauce provide the right amount of zing! I tend to use pork but you could use beef, turkey or chicken as all of the flavour comes from the spices added to the meat. INGREDIENTS

• • • • •

6 large bell peppers, any colour or mix of colours will do. Make sure to choose peppers that will stand easily on their ends - you’ll appreciate this when you start filling them! 1/2 Spanish onion diced • 1 lb lean ground pork 1 packet taco seasoning • 1 small can chopped green chilies 1 packet Red Enchilada Sauce • 1 cup shredded extra old white cheddar 1 cup shredded Monterey Jack

DIRECTIONS

1. Line your BBQ grill on one side of the BBQ with foil. Preheat BBQ to 300F or medium heat. 2. In a frying pan on low-medium heat, sauté the onion with some olive oil. Once the onion is translucent, add the ground pork and taco seasoning, breaking up the pork as it cooks. 3. When the meat is almost cooked, stir in the green chilies and enchilada sauce. Set the pan aside. 4. Cut the top off each pepper and hollow out the inside. Place each pepper on a cutting board or other flat tray you can use to transport then peppers to the BBQ 5. Mix the two types of shredded cheese together 6. Use a serving spoon to fill each pepper just less than half way with the meat. Then add a layer of your shredded cheese mixture. Fill the rest of the pepper with more meat and top off with another layer of cheese, keeping the last layer level with the top of the pepper. Put the cap of the pepper back on top which will keep the heat in as it cooks. 7. Use tongs to carefully place your peppers on top of the tinfoil on your preheated BBQ grill. Close the BBQ lid. 8. BBQ for 25 - 30 minutes or until peppers are tender, slightly charred and cheese has melted 9. Serve with cilantro rice and any toppings of your choice. 10. Any leftovers will keep for a few days on the fridge or a few months in the freezer.
