Visual Arts Mississauga and The Riverwood Conservancy have joined together with The Chamber Music Society of Mississauga and Driftwood Theatre to bring Mississauga residents free entertainment throughout the summer months. Located off of Burnhamthorpe close to Creditview, Riverwood Park is a cultural gem in central Mississauga. “The work of all of our charitable organizations is based on a unified mission, to nurture, educate and comfort the citizens of Mississauga through nature, theatre and music,” explains Lorraine Crow Manager, Philanthropy with The Riverwood Conservancy.

Attendees are encouraged to bring their own lawn chairs and bug spray. Donations of non-perishable food items for The Deacon’s Cupboard Food Bank will be accepted (suggested donation of 1 item of food per performance). ONE TANK TRIPS WHAT I DIDN’T KNOW

ABOUT STRATFORD, ONT.

A lot it turned out. I knew, of course, about the Stratford Festival. This repertory theatre event has been showcasing the best of the Bard as well as Broadway favourites since 1953. I was acquainted with the idyllic Avon River with its swans and paddleboats. I was also aware that Justin Bieber was born here, and busked on the steps of the Avon Theatre, before catapulting into international stardom. And I heard about Stratford’s prowess on the culinary scene with top-rated restaurants and the Stratford Chefs School, one of Canada’s most lauded cooking schools. What I didn’t know was that someone like me, whose meals usually involve a can or a jar as a base, could not only take a cooking class at the institute, but could actually manage to produce a respectable Spanakopita, a savoury Greek pastry filled with spinach, feta and herbs. Though my confidence was admittedly shaky at the beginning of the workshop. “How is this even possible in three hours?” I whispered to my friend as we thumbed

through a booklet with detailed instructions on an formidable Greek menu that included flatbread, spanakopita, tzatziki, moussaka and melomakarona. No time for regrets, though, as Chef got right down to business, starting with a quick run-through of the dishes and then dividing us into groups, each responsible for different menu items. What I thought was going to be chaos and mayhem all worked surprisingly well and all the dishes miraculously came together. Before long, it was time to enjoy the fruits of our labour, and we sat down to devour the Greek feast with a glass of wine. But it wasn’t all Greek for me in Stratford. As a chocolate lover, I was delighted to find out that there’s a Chocolate Trail dedicated to cocoa creations. With precision planning over a coffee at Revel, we mapped out our route and collected our goodies. We especially enjoyed the squares from Black Angus Bakery, and truffles from Chocolate Barr’s Candies. I was also interested in learning the stories of people who had given up their day jobs to pursue their passions --


entrepreneurs like Dave Oldenburger and Phil Buhler, former construction workers, who are now proud owners of Jobsite Brewing Company. A self-described nerd, Phil said they’ve gone down the rabbit hole. “I consider it an extreme hobby,” he said. Obsession has paid off with tasty brews that have garnered recognition well beyond the borders of Stratford. Their restaurant serves up wood-fired pizzas, a tasty accompaniment to Wrong Nail Amber Ale. Right next door at Junction 56 Distillery, I talked with James Donnelly, who quit his tech job at Blackberry in Waterloo to join Mike Heisz in the precision art of distilling. Their first batches of whisky sold out quickly, and their mint smoothie liqueur has a cult following, of which I am now a member of. Given Stratford’s allegiance to centuries-old literature, one of the biggest surprises was its tech savviness, with innovative start-ups’ centers, a University of Waterloo campus and even a testing center for autonomous cars. Speaking of self-driving cars, I was lucky to have the chance to test drive the 2019 Ford Edge, a midsize c SUV that got us to our destination with ease, comfort and style. Even though Stratford is less than two hours away from Mississauga, stop and go traffic on the Gardiner and the 401 can increase that time and be frustrating. However, the technology in the Edge significantly lessened the aggravation factor. The adaptive cruise control meant I didn’t have to worry about how slow the traffic was because the vehicle adjusted accordingly. What was different in the Ford Edge compared to other vehicles

I’ve tried with comparable technology, was it came to a complete stop on its own. Yes, believe it or not, as the ‘driver’, I didn’t have to touch the brake pedal (however much I wanted to). In addition, the Lane-Keeping System kept us centred effortlessly. I barely had to touch the steering wheel. Other impressive technology included emergency braking, remote start, parking assist and blind spot alerts. With so much automation, it was easier to enjoy my Spotify road trip playlist on the Edge’s first-rate audio system with 12 speakers. With good music, comfy seats that sat high up, a large windshield and even a sunroof, it was a pleasure to cruise the highways. The center console stored all our gear easily and had a convenient wireless phone charger. Despite its size, the Edge was agile, handling like a much smaller vehicle. And fuel efficiency? With this SUV, we could rename the column half-tank trip because that’s all the gas we needed to get to Stratford. Accommodation: We stayed at the Birmingham Manor Bed & Breakfast, a beautifully restored heritage house in walking distance to downtown attractions. Our lovely host not only had good taste in décor, but also cooked up an incredible gourmet breakfast.

SIX ROAD TRIPS It’s road trip season!

These are six of my favourite destinations where the journey is as rewarding as the destination. What are some of your favourite road trip destinations?

1. Gananoque & the 1000 Islands

Head east on the 401 and you’ll find one of the most beautiful places in Canada. The waterfront theatre, small-town charm, hiking and cycling options and of course,

the ample on/in water activities are all part of its allure. There’s also two UNESCO designated sites and amid the spectacular scenery which combines to make this is a world-class waterfront destination.

2. Ellicottville

Head south on US 219 from the border and you’ll find yourself in charming Ellicottville, NY. A year-round attraction, Holiday Valley Resort has plenty to do from golf to swimming to their Sky High Adventure Park, which is highly recommended. Walk their beautiful main strip for quaint shops and restaurants and soak in their small-town charm.

3. Montreal

One of my favourite places in the world is Montreal as it’s alive year round. The food scene is always exciting and evolving with exciting restaurants, there’s so much culture to absorb and enjoy and best of all, there are so many different hotspots throughout the city that you won’t get bored.

Walk the city, appreciate the art, take a spin on the massive Montreal Observation Wheel and enjoy what marvelous Montreal has to offer.

4. Philadelphia

Known as the birthplace of life, liberty and the pursuit of happiness, Philadelphia packages one destination, five counties and several fun and exciting things to do. From museums, national historic sites and famous food to an exciting cultural scene, Philly’s got a lot to offer. Grab a bite at the Reading Terminal Market, tour the Eastern State Penitentiary and of course, visit the Philadelphia City Hall observation deck… it’s also the world’s tallest masonry building!

5. Algonquin Park

Ontario’s first Provincial Park has oh-so much to offer. You can camp, bike, hike, boat, kayak, whitewater canoe, fish, and watch wildlife in this national gem. Interestingly, Algonquin's dark sky (lack of human created light) attracts amateur and professional astronomers. Steeped in Canadian history, it’s great for a day trip, weekend away or week-long vacation.

6. Finger Lakes

Known for producing wonderful wine, the Finger Lakes are recognized for their world-renowned Rieslings. The region also boasts a number of breweries, distilleries and hard-cider producers. Also renowned for their outdoor options, the Finger Lakes are a terrific destination. From hiking and biking, to boating and fishing, there's something for nearly everyone to enjoy. There are also state parks with scenic beauty to behold including a number of waterfalls. Check out Watkins Glen State Park to see the gorge trail complete with 19 waterfalls.

As a world-renowned festival, the Montreal International Jazz Festival is one of the most exciting yearly music and cultural festival. Attended by locals and fans across the globe, it unites people of various backgrounds under the large umbrella of music. For its 40th anniversary, they’re expanding within the city and have a new site in Verdun. This exciting development allows it to increase its presence and to meet citizens where they live. In relation with the new Cultural Policy of the City of Montréal and the new Tourisme Montréal Development Strategy, the Festival will promote the discovery of the cultural wealth of the various neighbourhoods by anchoring itself in several of them. In addition to continuing to occupy its central site in the Quartier des Spectacles with large-scale gatherings, indoor shows and family activities, they’ll reach a wider local audience with the creation of new festival hubs. Verdun will host original experiences created especially for the borough and the communities that live there, in collaboration with community organizations, merchants and citizens. It’s free and will offer the same artistic quality as the rest of the Festival, in addition to respecting sustainable development and ecoresponsibility principles. By reaching new communities and inviting visitors to experience a new neighbourhood with which they are less familiar, the new site will foster citizen meetings and generate new benefits for the borough, in a spirit of inclusion and integration. “Tourisme Montréal is very proud to be participating in the Jazz Hub project, which we believe holds a lot of promise for our destination. We hope it will encourage tourists to venture into the city’s different neighbourhoods, explore our diverse arts and culture scene, and come away with a truly authentic Montréal experience. This initiative supports our strategic vision to promote tourism in neighbourhoods across the city. HOLIDAY VALLEY IN THE GREEN SEASON by jane eshbaugh Just south of the border in Western New York lies the family-friendly resort of Holiday Valley. The “Green Season” at Holiday Valley gives Canadians a chance to get out of the city and relax in the fresh air and uncrowded hills around Ellicottville. Visitors can golf the Double Black Diamond Course with 18 challenging and scenic holes, climb in the treetops at Sky High Adventure Park, zip down the mountain on the Sky Flyer Mountain Coaster, pan for crystal treasures at Mr. Happy Gem Mining Company, cool off and relax at the pools, Cabana Bar and Game Deck, and mountain bike and hike the trails at

the resort and in the adjacent state forest. But that’s not all! Several festivals and events are planned for the Village of Ellicottville and Holiday Valley throughout the summer starting with Holiday Valley’s 8th annual Mudslide Obstacle Trail Run on June 15th. The Mudslide is muddy fun for the whole family with the option of a 3.5 mile or 5.4 mile course, 13 obstacles and a rousing after-party. The Ellicottville Paddlefest on June 22nd and 23rd kicks off the summer paddling season at Spruce Lake with kayak, SUP and fly fishing demos, plus music and a cookout. The Summer Music Festival from

July 5th to 7th presents Don Felder, formerly of the Eagles, live on stage at the base of the slopes on Saturday night and the Buffalo Philharmonic and a grand fireworks show on Sunday night. July 26th to 28th is the Jazz and Blues Weekend and the weekend of August 10th and 11th is the popular Taste of Ellicottville. With so much happening in the city during summer, it’s a good way to become reacquainted with Mississauga. There are festivals and events aplenty across the city in various sizes and themes with most of them being free and family friendly. We’ve got hundreds of parks and walking trails that are captivating and worth spending time at/on. Hidden gems include Final Approach: Danville Terminal viewing area, Lake Aquitaine Park, Paul Coffey Park, and The Riverwood Conservancy. You can one city ward per week to explore, which should see you cover all 11 wards by the end of summer. Each has its own unique attractions, charm and allure. Try looking for under-the-radar places and support local businesses. Nearly everyone’s seen the Absolute Towers from street level… head to the top floor of the parking garage in Square One between The Bay and Walmart for a different perspective and some cool photo opportunities.

Within a 100 km radius of Mississauga is a plethora of fun ways to spend time this summer. Some of my favourites are the Forks of the Credit Provincial Park, Cheltenham Badlands, Midland, Hamilton’s army of waterfalls, Niagara-On-The-Lake and the Niagara Escarpment. For longer trips, Montreal, Ottawa, London, Collingwood and Tobermory are delightful destinations to see more of our beautiful country. Want to stock up on gas reward points? Consider seeing our Maritime Provinces (they’re all spectacular) or dip down into the northern United States and experience New York, Pennsylvania, Ohio and Illinois, among others. Bottom line, get out there if you can and see some new places and create new memories.

Yep, I keep bringing this topic into articles because it’s something that everyone should try at least once. If you don’t like it, there’s zero obligation to keep doing it. Not once prior to launching Modern Mississauga Media did I think I’d own Mississauga’s magazine but here we are. Locally, there’s canoeing/kayaking as we’re fortunate to have a waterfront. New thriving hot-spot The Studio Paint Bar has brought out the hidden painter in so many people. There are oh-so many learning courses offered by the city from photography to music to life skills to sports to cooking and so much in between. Maybe you’ve always wanted to learn to use a manual transmission or how to taste wine. Perhaps public speaking or how to speak another language has been on your radar. If boosting your social media presence for yourself and or your brand is on your to-do list, do a deep-dive and figure out how to work differently or how to create videos to bolster it. With Instagram recently levelling the playing field while it continues to grow in popularity, here are my six ways to maximize your account:

1. FIND YOUR PURPOSE

Maybe you haven't found your purpose in life but that doesn't mean your Instagram account hasn't. If you're a business, what are you trying to tell people about services or products? Include this in your bio, whether it's an emoji, statement or hashtag.

2. GIVE IT PERSONALITY

Are you trying to be cheeky, professional, sarcastic or funny? Think about qualities to add character to your account and apply it to your captions. Think phraseology; it’s a real thing. What filters are you using on your photos to pull your viewers in? Is it airy-blue tones, black and white or moody vibes? Whatever it is, add personality to it.

3. MAKE A COMMITMENT

This rule should be applied to theme, layout, and fonts and remember to be consistent. If your audience doesn’t know what to expect, they'll become disinterested. Listen to what they want but remember to be confident in your account's purpose (Cue the song “Just The Way You Are by Billy Joel”). Also, be realistic - can you post once a day or once a week?

4. TAG, TAG, TAG

Utilize geotagging, hashtagging and tagging. Tag more established accounts if they are relevant to your post. Using hashtags in your stories might get you noticed on the “Explore” page. Share other people's posts that are relevant to your account.

5. BE RESOURCEFUL

And by resourceful, I mean use Google. Check out apps such as Snapseed, Font Candy and Planoly to help you design, create and plan your posts for a higher chance of engagement.

6. DON'T BE LATE.

What's a long-lived rule that never gets old? Be on time. Schedule your posts at peak times and post consistently. If you are late, let your followers know to show them you care. "I'm so bad at planning", you say? Well, it's not like I just mentioned an app that can help you plan your posts..wink wink. Psst... it’s in #4. It's called Planoly. Malton & the AV R O A R R O W by natalie hart

60 years ago this year,

the Avro Arrow project was cancelled by Prime Minister John Deifenbaker and tragically destroying all the plans, prototypes, parts and scattering the incredible talent assembled to create this plane in Malton. The economic impact was devastating with estimates as high as 50,000 jobs lost, locally over 9,000, and the potential for growth set back decades in a community that had the skills to lead the way in innovation for all of Canada and the world. Five Arrows were built and flown over Mississauga, and its progress was marked with national and international attention. So skilled was the workforce that engineers from the A.V. Roe firm went on to join NASA and were instrumental in the space race!

The Arrow included many firsts:

• Digital computers and CNC machining were used in the design and components • Computer controlled navigation, weapons release, electronic counter measures and jamming technology. • Superior speed, lower weight, and ability to carry more payloads How do these historical achievements relate to present day Malton? With Pearson airport in Malton, aviation is a high growth industry for Mississauga with over 60% of growth in the last five years. These high value jobs pay approximately 40% more than other industries. To celebrate the creation of this innovation, the Malton BIA, along with support from the City of Mississauga, is moving forward with a project to create a full-size replica Avro Arrow to be displayed in Malton. Impressively, this will be six storeys high, 55 feet wide and 72 feet long. Exhaustive interviews, and research have gone into the plan and the first step is already underway. As Matthew from Heritage Mississauga said “Thanks to the Malton BIA & Carolyn Parrish, Councillor for Ward 5, the Avro Arrow was a highlight of the Canadian Pavilion at Carassauga 2019.The model was truly a wonderful addition. “The Avro Arrow project will create an iconic figure for Malton & Mississauga, manifesting the motto of "from here to anywhere" by including our past as we move forward” said Natalie Hart of the Malton BIA. Ward 5 City Councillor Carolyn Parrish adds: “We are very excited to display a seven foot model of our AVRO Arrow, the most powerful, fastest fighter of its day - designed and built in Malton. Regardless of when they arrived in Mississauga, both longtime and newcomer residents share their passion to protect our environment. Mississauga’s Alice Casselman, a lifelong environmentalist, is a now-retired Science Department Head who took

her Planting for Change (P4C) program and Citizen Science monitoring network first developed at Applewood Secondary School in 1987, to a new school in Brampton. On May 17, spring weather kissed sunshine onto Nelson Mandela Public School

AVRO

ARROW 2019 marks the 60th Anniversary of “Black Friday” February 20, 1959. On that date Prime Minister John Diefenbaker announced the immediate cancellation of the AVRO Arrow program and the destruction of all traces of the program – planes, parts and plans. One nose cone was saved and is now on display in the Canada Aviation and Space Museum in Ottawa. The Malton Business Improvement Association has invested in the design of a full-sized 77 foot by 52 foot Arrow to be displayed beside a restored CF-100 in Paul Coffey Park on Derry Road East in Malton. Once located on a pedestal, its delta wingspan will be clearly visible from the air as planes take off and land at Pearson Airport.

as students planted 45 shrubs and 16 trees. The planting included a signature Acer rubrum, a Canadian Red Maple. In autumn, the tree will turn the heritage red colour depicted in our Canadian Flag. Named for the maple tree, ACER - the Association for Canadian Educational Resources - was founded by Casselman in 1987. ACER is recognized by the City of Mississauga as a schoolyard planting partner to help meet the target of their One Million Trees initiative. This is important to the environment, health and quality of life in the city.

"Citizen Science monitoring acknowledges that people want to know how to take action on climate change, and that residents in the community are the best to ask about what’s going on," says Alice. Training and equipment for the planting and monitoring is provided by ACER, in exchange

for data collection to report tree growth. Open data posted online aids the study of the impact of climate change on biodiversity. Mississauga has 8 of 18 planting sites located in Peel Region. Alice continues by saying "students plant trees and shrubs as part of a living laboratory in their schoolyard and join our P4C monitoring network. Citizen Science activity is a win-win. The planting fulfills many elements of Ontario’s education curriculum, over a full spectrum of grades from public through secondary school.” Planting sites can strengthen school ties with residents' associations, increase community eye-appeal and bring about well-being and biodiversity benefits. P4C has expanded every year since 2008, with the now affordable use of geolocation tagging and mobile devices. Since 2008, more than 50 sites have been planted, from the GTA to Barrie and Thunder Bay. 6 WAYS TO

It's BBQ season!

Before you fire up the grill, we’ve got some great tips and techniques to help you make the most of your outdoor cooking and further enjoy summer.

A DRYING SHAME

To avoid dried up food, during the turning process, always flip your meat or vegetables using tongs opposed to a fork and avoid pressing down on them as it squeezes the juices out of them. Limit the number of “flips” on the grill to once per item.

SAVE THE BASTE FOR LAST

SAFE PLACES

Food safety is a top priority! Eliminate cross-contamination by using separate cutting boards, utensils and platters for raw and cooked foods. Refrigerate foods while marinating and never baste with the marinating liquid. Instead, make extra marinade just for basting. Interestingly, marinating also impedes the formation of potentially carcinogenic HCAs (heterocyclic amines), which form when grilling poultry, red meat and fish. Marinating can reduce HCA formation between 92 and 99 percent.

TESTING, TESTING, 1 2 3

Basting should be left for the end so the sugars in your marinade or sauce won’t have time to caramelize or burn, which can affect the flavour of your food.

Always, always, always accurately check and test the internal temperature before eating any type of meat via an instantread thermometer. Consuming undercooked meat is a recipe for a bad time.

STABLE AND SAFE

DON’T GET FIRED

Preheat your grill for 15 minutes prior to laying any food on your BBQ. This gets your grill to the right temperature and importantly, kills any bacteria. A well-heated grill sears foods on contact, keeps the insides moist and doesn’t stick.

To cut down on flare-ups is done by selecting leaner cuts of meat, trimming excess fat and removing poultry skin. Keep a spray bottle of water handy to douse any flare-ups. Flare-ups can cause carcinogenic PAHs (polycyclic aromatic hydrocarbons) to form on your food causing a peculiar taste. They can also char the outside of food before the inside has thoroughly cooked.

DELECTABLE LEMON TARTS by chef shai mandel

PÂTE SUCRÉE

(Yield: 1 x 9" tart)

INGREDIENTS: • 75g unsalted butter, softened • 125g eggs, room temperature

• 55g granulated sugar • 167g all-purpose flour, sifted

DIRECTIONS: 1. Using a wooden spoon, cream the butter and sugar until well combined. Beat in the eggs, one at a time, until fluffy and fully incorporated 2. Mix in the flour until the mixture comes together as a dough and becomes difficult to mix with spoon. 3. Transfer the dough onto a floured table and gently knead until smooth and fully combined. (about 30 seconds - 1 minute) 4. Roll dough into a ball and flatter to form a disk. Wrap with plastic wrap and chill, for about an hour. TO BAKE: 1. Remove dough from fridge 15 - 30 minutes prior to baking. 2. Preheat oven to 375F. 3. On a lightly floured surface, roll out the dough. Fit the dough into a tart pan and press firmly against the sides and bottom without stretching it. Trim off any excess dough, cover and chill the dough in the pan for 30 minutes.

4. “Dock” the pastry by using a fork to prick the bottom of the dough. Cover with parchment and fill with baking beans. Blind bake* with parchment for 15 minutes. Remove the parchment and bake for an additional 10 minutes or until bottom of the shell is golden brown. *Blind Baking or pre-baking, is the process of baking a pie crust or other pastry without the filling

LEMON TART FILLING INGREDIENTS: • 112g granulated sugar • 127g eggs whole • 70ml 35% cream

(Yield: 1 x 9" tart) • 10g lemon zest • 91ml lemon juice

DIRECTIONS: 1. With a rubber spatula combine the sugar and lemon zest until blended and the natural oil has been extracted. The sugar should resemble slightly moistened sand and have a strong aroma of lemon. 2. Whisk in the eggs. 3. Whisk in lemon juice, followed by the 35% cream. 4. Pour mixture through a fine mesh strainer. 5. Pour mix into pre-baked shell. 6. Bake at 300F until just set - 30 minutes. 7. Let tart cool completely before slicing. ENJOY!

THE ULTIMATE SUMMER WINE

In recent years, rosé has soared in popularity experiencing a surge in global sales and establishing itself as the quintessential summer wine. This should come as no surprise as rosés are vibrant, refreshing, an easy drinking, making them perfect for sipping poolside and on patios. Their bright acidity makes them versatile and food-friendly. Their lovely pink colour and characteristic aromas of strawberries and watermelon evoke visions of summer, contributing to their mass appeal and the rise of catchy slogans like “Rosé all day” and “Yes way rosé”. The range of rosés on the market today is astounding, but there are different methods of producing rosé resulting in very distinct styles, ranging from light and fruity to rich and savory. The most common is the maceration method, where grapes are crushed and the juice remains on the skins for several hours, typically producing rosés that are dry, delicately flavoured and refreshing. Another method is the blending of red and white wines post-fermentation, where the style varies based on the wines used. Finally, the Saignée method sees a portion of juice destined for red wine “bled off ” the tank at an early stage and fermented

on its own, resulting in a bolder, richer style. The winemaking method is also responsible for the different shades, which range from light coral to salmon pink to deep raspberry. With the broad range of rosés available, it’s easy to find a style to suit your preference. Below are great selections from the Wineries of Niagara-on-the-Lake: INNISKILLIN, 2017 PINOT NOIR ROSÉ $14.95: Aromas of ripe strawberry and rhubarb are complemented by refreshing flavours of plump raspberry and juicy watermelon. The fruit is balanced by the bright and structured acidity, all of which leads to a clean fruit driven finish. KONZELMANN, 2017 CABERNET ROSÉ $15.95: This rosé has rich tropical flavours and aromas with hints of papaya, floral notes, subtle citrus and candied watermelon on the nose and palate. Pairs well with light hors d'oeuvres or a fresh summer salad. PELLER, 2018 PRIVATE RESERVE ROSÉ $22.95: A blend of 87% Pinot Noir, 10% Gamay Noir and 3% Pinot Meunier.
