ometimes a person can stumble onto something they never knew existed and then feel torn as whether to tell everyone about it, or to keep it a secret. And personally, having lived in Dubai for 6 years I m quite ashamed I had not discovered the treasure that is the Paris Gallery Day Spa. You may well ask the question, Where? At Paris Gallery? Well, yes. After you ve wandered around Paris Gallery on the 2nd level of Deira City Centre taking in all the fabulous brands they have in beauty products, make-up, accessories and sunglasses, hop onto the escalators to the left that takes you to the upper section. Here there is an almost palpable hush as you walk on marble flooring past plush seating and a whole corridor of big brand jewellery towards the glassed entrance of the Paris Gallery Day Spa. The Day Spa is a very large, sumptuous emporium catering to everything a woman could possibly wish for in total face, body, make-up and haircare, utilising premium products exclusive to Paris Gallery every step of the way. The rather large, opulent - and quite busy at the time of my being there - hair

salon covers the full spectrum of cutting, colouring, blow drying, straightening, perming and hair extensions with a speciality being hair for special occasions like weddings and engagements. Stylists in black appear chic, sharp and professional and the salon buzzes with energy. JF Lazartique (only available in London s Fortum & Mason) and Kerastase products are used from simple washing to luxurious hair treatments. Further along one comes to the hushed, hallowed inner sanctum of the spa proper where all the body and facial treatments are conducted. The first area I came upon was the awesome, pillared jacuzzi flanked by a sauna and steamroom. Soft lighting and a lightly perfumed atmosphere just beg you to sink into the jacuzzi s warm waters to let the cares of the day slip from your shoulders, but soft-spoken attendants lead you to beautifully appointed treatment rooms. Soft, subtle lighting and scented candles ensure a completely relaxed atmosphere and the rooms are cosy and intimate. The completely natural, internationally acclaimed Decleor products are used for their treatments for both face and body.

The host of massages range from treatment massages for cellulite, slimming, firming, detoxifying, Swedish, Californian, Shiatsu and Reflexology. Special facial treatments also cover the spectrum, utilising specially blended products to work with a specific skintype. From whitening, and micradermabrasion treatments there are also specially designed facials for deep cleansing, revitalising, face and neck lifting, a special Eye Collagen treatment and an Eye Lifting Treatment. The very private hydrotherapy bath offers a chance to relax and be pummelled by warm jets of water using essential oils or algae to slim, relax or firm. For hair removal there is the highly specialised laser Ellips-Light hair removal system as well as waxing, threading and eyebrow shaping. Feeling very smooth after an hour-long Moroccan Bath it was time to move onto the dedicated hand and nail area. A range of specialised manicures and pedicures are available as well as various choices of nail extension systems like acrylic and French gel, as well as nail art design. I also popped my head into the Clarins Institut. This area offers their own

range of exclusive facial and bodycare treatments using only Clarins products including their acclaimed self-tanning treatments as well as make-up. A major highlight was having a peek in at the Bridal suite. The beauty of this is that it is a private, opulently decorated room dedicated to the bride where she, along with her attendants can be given the full treatment for the day from manicure, pedicure, henna application, hairstyling and a professional make-up applied by professional make-up artists. Then she can be dressed in her gown and whisked away through the private, redcarpeted entrance to a waiting car. There are a choice of bridal packages to choose from that begin with hair, face and body treatments as much as two weeks prior to the wedding, carefully planned right up to and including the big day.

There are also annual memberships available that go up in status from standard, gold and platinum. The benefits vary, as does the price but all include discounts on spa services and products, free access to the sublime jacuzzi and sauna, a month free plus a myriad amount of free treatments on body, face and hair. The spa is absolutely exclusive to women and open from 10am to 10pm. So even if you have a late, romantic dinner planned you could pop in for a facial or anti-stress massage after work and then have your special make-up applied before you flounce out ready for a wonderful evening, feeling wonderful and looking fantastic. With all there is to offer, I think it probably is best to keep it a secret or next time I wonÂ’t get through the door. Shhh!

Beauty is in the eyes by Birjees Hussain An Italian proverb says, One may have good eyes and yet see nothing. Our eyes are the most important feature on our faces. With them we can show love, hate, anger and happiness. When we re at a loss for words we often speak with them; our eyes can often be our silent tongue. It is important, therefore, that we pay special attention to their appearance and women have found numerous ways to do that. They wear designer frames, coloured contact lenses and eye make-up. Cleopatra and the Egyptian influence It is, however, impossible to talk about eye make-up without references to cosmetics in general, and history is riddled with its various rudimentary applications. The word cosmetic comes from the Greek kosmetikos which means skilled in adornment . Throughout history people have found crude yet innovative means to cleanse and decorate their bodies. References to make-up go as far back as 100,000 BC when early man used ochre to paint his body. But it is from Ancient Egypt that we learn the most about make-up and its earliest applications. Ancient Egyptian women used green powder to coat their eyelids and kohl made from antimony or soot to line their eyes. During her reign Cleopatra was reputed to bathe in asses milk to whiten her skin and it is she who is most renowned for her use of kohl to line her eyes. Then the first century AD saw Roman women emulating their Egyptian counterparts by using kohl to darken their eyelashes and eyelids. Since then the history of cosmetics has had its ups and downs. In the early 1600s Louis XIII encouraged their use but by the mid-1600s their use was discouraged by Oliver Cromwell. However, during the reign of Charles II cosmetics gained in popularity once more and this phenomenon seemed to proliferate throughout the 1700s. But in the latter part of this century the use of cosmetics seemed to be frowned upon yet again and Parliament even passed a law banning its use by women who were courting. Make-up as a ritual Nowadays wearing make-up has become almost a ritual. Women wouldn t dare leave home without it. Like fragrances, wearing make-up can have enormous psychological benefits on women. It gives them self-esteem, self-confidence and makes them look professional. Wearing make-up gives others the impression that she cares enough about herself to spend that small amount of time in the morning in front of the mirror. She owes it to herself and to those around her to make that extra effort even if it s lipstick or mascara. One fashion guru says that a woman who leaves her house without it is vain enough to think she doesn t need it. Today s statistics show that the average woman uses over twenty products on her body as part of her daily beauty routine.

Just as lipstick is essential to complete a look, eye make-up can often make or break it. Changing looks Like all fashion trends, the type of eye make-up worn is determined by what s hot and what s not and this is as true today as it was throughout history. During the Elizabethan era make-up was limited to white face powder made from lead compounds whilst the Victorians bit their lips and vigorously rubbed their cheeks to give them that pinkish hue. That was the extent of their make-up. This look,

or its remnants, seemed to remain throughout the late 1800 s and early 1900 s until the 1920 s when the discovery of the tomb of Tutankhamen hailed in the gothic look. Then came the mod look of the 60 s followed by virtually no eyeliner in the 70 s and 80 s. Today s eye make-up is a marriage of both the trusted kohl and the artist s eye shadow pallet and it s impossible to talk about one without the other. But with so many shades and types of eyeliners and eye shadows on the market how do you know what to buy? Choosing the right eye shadow The array of shades on offer can be overwhelming but the secret, as with choosing all cosmetics, is to find a shade that best complements your skin tone. Cools go great with lighter tones whilst warmer colours are ideal for darks. But wearing make-up should be fun, so experiment with colours. Sometimes, under the right conditions, even the cooler shades flatter

The timeless look Most women shy away from eye shadow because they re not sure which shade would suit their skin tones or because they don t know how to apply it. Many women just stick to mascara. Although looks go in and out of fashion the smoky look is timeless and is perfect for evening-wear. Here are a few simple steps to achieving it. 1. You need a light colour (highlighter) that s a few shades lighter than your skin and a dark colour (base) a few shades darker. 2. Apply the highlighter under the eyebrows to accentuate your arch. 3. Coat your upper lid with the base. 4. Take a deep brown eye shadow and apply it over the base coat reaching into the crease of the lid. 5. Don t forget to apply this colour to the bottom eyelid too but as close to the lashes as possible. 6. Next, apply a grey tone over the brown on both eyelids. 7. Blend with a cotton bud or your finger. 8. Finally, run your eyeliner around the eyelashes and inside the bottom eyelid and this completes your look.

And remember, no shade is unobtainable. If you see one that you like, even if it s on a fabric, with a little bit of hunting you should be able to find an exact or even a close match. And if one brand doesn t carry it try another. Choosing the right eyeliner Eastern women have been wearing eyeliner for donkey s years. In the West, eye shadows have been around for decades but eyeliners only started becoming fashionable in the last 20 years or so. But unless you know how to use it the results can be messy. There is, however, help on the market. To get the best results from your pencil you need steady hands. If you are shaky some eyeliners will be easier to use than others so if you re a beginner buy the one that will minimise the wobbles. First time users should try those retractable pencils that are softer than ordinary pencil liners. Although they don t need sharpening the range of shades is often limited to grey, black and brown. Liquid liners are longer lasting and give a smooth and silky finish. The only problem is that if your hand is shaking the liquid can easily get on other parts of your eyes. So it s better to avoid them until you are more experienced. They say our eyes are the window to our souls so what better way to give them more aesthetic appeal than by dressing them up. So, go on, make eyes at your mirror and, above all, have fun!

Saoud Abou Sultan learned early on from his father, famous “Oud” player Selim Abou Sultan, that if he ever had any passion for music, then he had to sing, no matter what the quality of his voice was. And so young Saoud would always sing to entertain his kin when the family came together for gatherings.

aoud s journey towards stardom started with daily training in music and vocalization. Rigorous as it was, the young Saoud was determined. He took inspiration from artists such as Wadih El Safi, Abdel Halim Hafez and Georges Wassouf. And since there is no Music Academy in the UAE, he decided to go to Egypt, where he would hone his musical gift. However, he soon returned to Dubai to finish his studies. But the passion for music burned deeply inside. A great opportunity came through the Super Star program. So he moved to Beirut and stayed there till the last episode of the program where he finally succeeded in showcasing his talent for singing. Esprit caught up with Saoud recently and had this enlightening and intimate conversation. Esprit:How old were you when you went to Egypt to study music? Saoud: I was 18 years-old when I went to Egypt. Anybody who wants to learn and practice music has to go to Cairo. It s the training ground and inspiration for may famous Arab singers, musicians and Oud players. E:What was it like to be in Egypt and away from your family? S: I was very sad being away from my family. I missed them a lot, especially my mom s cooking. But it was also a sacrifice that I had to make, because of my passion for singing and music. E: Did you stop music completely when you

E: How did your album come about? S: It wasn t easy. My first CD had music from four Arabic countries - the UAE, Kuwait, Iraq, and Lebanon. It s a good mix, between various types of accents and music. Thought it was difficult, we managed to pull it off and make the best out of it. E: What has been the response to the album? S: This is my first CD. And so far the response has been encouraging, especially when I present it to the public. I try to mix with some songs of the places where I am at, so people will get familiar with my music and my style. E: Are you working on or thought about another album? S: Yes, I am preparing and arranging five songs already. I am also listing and choosing poetry, meeting writers, composers, and hopefully by the end of this year it will be ready. E: What is your favourite part of being in the music business, the performing, the fame, the promoting or creating music? S: Of course, the performing aspect. I am an artist and I love to perform, to entertain, especially when I can see my fans react to the way I perform. I ve also done an MTV for Mashi Wen which is showing in all Arab TV, E: When you have time to relax, what do you like to do? S: Playing Oud and going out with my family and friends, chatting with friends. E: Do you find that image is very important? S: Nowadays. Yes, Yes, Yes. Because people give a lot of importance to how you look, what you wear, which brand and this not wrong in my opinion. People expect a lot from the celebrities they look up to, and these celebrities must live up to those expectations. E: What would be your favourite place to go shopping? S: Small shopping malls are very good for me, like the one in Jumeirah Beach Road where I find a lot of nice, cool stuff. E: Do you conform to fashion demands or do you think you have your own style? S: In summer here we normally wear the local dress kandora, but when I travel outside to Europe I dress fashionably, according to my own sense of style and tastes. E: Are there certain brands that you go for? S: No, I like classic wear and simple things. E: What would be your favourite place to buy gifts for friends and family? S: I like jewellery shops. For Mothers Day, I bought my mother a diamond and she liked it. For ms sisters, it s usually gold jewellery, which they like to have a lot.

I heard about the program through a friend of mine who is a composer working in Dubai TV. He said that the Super Star Program was taking place in Lebanon on Future TV. They have offices in most Arab countries, even in Europe for the Arabs living there. So, I went to an audition. I passed along with other people and we then moved to Lebanon to start the competition. It was a great feeling, as I was very excited and looking forward to the contest. E: Has Beirut become your home since Super Star or do you still consider the UAE to be home? I was I born in Dubai. I have spent all my life, and this is where I intend to live. Beirut is my favourite place to work, because all the recording studios and composers and production is being done there. E: Tell us a bit about what it was like to participate in the Arab Song Festival in Cannes. S: I was young and it was a great chance for me to visit France and sing before so many people. The experience was special, and it was a good exposure for me. I wish Esprit magazine all the best.

If we feel this way as adults, no matter how much we love our work, can you imagine how a child of eight or nine feels at the prospect of going back to school? I have a stomach ache . or I don t want to go to school today are familiar symptoms on the first day back. I enjoyed school and throughout the summer months I would ask my mother when I would be able to go back to school. But not all children have this attitude. Some actually dread the idea of returning to school, for many reasons. Sometimes it s simply first day jitters which quickly subside when the child has met up with all his old friends but at other times there may be an underlying reason which the child has not been vocal about. Take your child s anxiety about returning to school seriously. There could be a reason behind it. But before addressing the problem you have to have some idea of what it could be. These problems fall into several categories which you can tackle at home during the holidays. To help you understand what is going through your child s mind at

this crucial time, here are some pointers. Is the child afraid of failing in class? Does he lack self-confidence? Perhaps you, as a parent, are expecting too much from him. Therefore, it s important that you set goals based on your child s capabilities; goals you know your child can achieve. Don t forget, unless you talk to your child throughout the school year and especially during the summer, you re not going to know whether or not he is having trouble keeping up in class or has the courage to ask for help when he is. It might also be a good idea to get him a tutor during the holidays for subjects that he is weak in. When I was at school I had problems with algebra, until my parents found me a tutor. Every weekday I d spend two hours with her and by the time I got to

back to school I was getting A s in class. Also, encourage your child to read books, fiction and non-fiction, during the holidays. My parents did and my teachers were pleased that my vocabulary had expanded. Is he bored with his studies? Adults often become bored with the same routine at work. We like variety and entertainment in our working day so is it a wonder that children are the same when it comes to school work? They say that children have the attention span of a fruit fly but remember children dread homework when they re bored with what they re studying or are having difficulties with it. Making learning more interesting may overcome this. Firstly, offer to help him with his homework and be enthusiastic

about it. Remember, your indifference will rub off on the child. If the child is reading fiction why not make time to read with him, discuss the characters and even roleplay? Science can also be made more interesting. As an example, you can make up a song to help your child learn the elements of the periodic table. Is he being bullied? Bullying is a major reason for a child to avoid school and should never be played down. It is the most widespread problem in schools around the world and is of increasing concern to educators. Different children react differently to bullying. In America some children have actually committed suicide as a result of it. Therefore, it is not to be taken lightly. Because it can take many forms teachers have a hard time tackling the problem as most do not recognise the symptoms unless they are clear. For example, most teachers assume that unless the child is being physically hurt he is not being bullied but this is not the case. Even teasing, naming calling or poking fun at is regarded as bullying and children who indulge in this activity should be seriously spoken to by the school. Parents who have even the slightest suspicion that their child is being

bullied should approach the school. No matter what the reason is, even if it s as trivial as dreading the notion of having to get up early, it should never be ignored. Moreover, parents should try and make the transition from holidays to schooldays as painless as possible. This isn t as difficult as it sounds and there are many positive things you can start doing before the big day arrives. Here are some suggestions. Children need to feel safe and secure and it is the job of parents and teaching professionals to ensure that this happens.

Crepe Along to the Bocadillo Ever popular in France, delicate and delicious crepes, both savory and sweet are once again basking in the international culinary spotlight. Suddenly wafer-thin pancakes are turning up on restaurant menus and in creperies throughout the globe. So what of the history of this amazingly versatile culinary treat that can be enjoyed for breakfast, lunch, dinner and dessert? It all began in the Middle Ages when the people of Brittany, the northwest region of France, began to enjoy pancakes (Crepe is the French word for pancake from crispus , the Latin meaning crisp). When bread was short, the lady of the house would set to work in front of the cooking-slab. Masters and servants alike were treated to delicious butter dripping pancakes. They were usually eaten with one s fingers since cutlery only became common in the country areas towards the beginning of the 20th century. Crepes as we know them now are more

recent and date back to hardly 100 years ago. Until about one hundred years ago, all crepes were made of buckwheat flour as ordinary wheatflour used to be expensive and it was only at the end of the 19th Century that it s use became commonplace. Farms had their own Creperie, the corner of the cellar (or barn) fitted out especially for the purpose. Crepes just used to be flavoured with a large knob of salty butter. ydroculture is the practice of growing plants without “soil” in the traditional sense of the word. This is not a new practice, and commercial hydroculture as well as hydroponic systems have been around for the last 60 years. The system is best used for indoor container plants. This system although relatively new to the UAE is used extensively throughout the world to maintain commercial and domestic indoor plants. The hydroculture system involves replacing the soil or peat mixture that you normally find plants grown in with expanded clay pellets. The clay pellets replace and enhance all the functions that a soil medium provides. Normally soil provides the plant with: stability or a point of anchorage for roots, a medium for absorbing and retaining water and fertiliser and lastly an oxygen exchange base for the roots. Growing plants in the hydroculture system provides all of these factors, but better and more efficiently. As the system does not use true soil, a water gauge is incorporated into the system which tells you exactly how much water there is in the container. There is no more guess work involved in watering, you simply fill the water up to the indicator

on the gauge and check it every week; top water up when the gauges shows the plant requires water. The system uses less water than what you would normally use on your pot plants as there is less surface evaporation from the container. Harmful insects and soil borne pathogens are unable to survive and multiply in between the clay pellets as they would in a soil medium. There are a number of secrets that makes the system work so well. As previously mentioned the system uses baked clay pellets as a substitute for soil. These pellets are between 5 and 10 mm in diameter. As the pellets do not compact like soil they allow atmospheric oxygen

to penetrate well into the root zone of the plant. Unlike conventional pots the hydroculture system has an inner perforated container that houses the plant and a waterproof outer container which has no drainage holes. Plants are grown in the inner container which fits into the outer; water is added to the system which fills the cavity between the inner and outer containers. The roots of the plant stand partially immersed in the water reservoir; the reservoir is then topped up to ensure that the roots never dry out completely. The clay pellets have a neutral pH, this means that they will not react with the soil or the plant, as a peat medium would. Due to the neutrality of the medi-

um you would not find plants that show signs of nutrient deficiencies (such as yellowing or stunting) as you may with other soil mediums. Fertiliser is added to the solution in the reservoir every 4 to 5 months; this ensures the plant receives the correct amount of fertiliser when it requires it. An additive in the fertiliser prevents algal growth and ensures the water does not stagnate. As the system is self contained and waterproof any external planter can be used: clay, ceramic, wood, metal, fibreglass; a saucer is not required. Plants used in the system are specially grown for this purpose; you cannot use standard container or outdoor plants. The root systems of hydroculture plants have adapted to live in this environment; hydroculture plants should not be grown in a regular soil medium. Dependant on the size of the reservoir it may be possible to extend the periods between watering of the plants up to 1 month. This is ideal if you are travelling or going on holiday. Softly adventurous in Sun n sand, plus mountains, rivers, sea and more make for a thrilling mix

T

raditionally perceived as a tropical beach paradise, Sri Lanka actually offers more than the standard golden beaches, waving palm trees and azure waters associated with that theme. When travel trends developed towards more active holiday pursuits, the country positioned itself to capitalise on this growing sector as well by offering a wealth of soft adventures to suit all tastes. For those who opt for the really soft stuff, there are world-class spectator sports with the famed Sri Lankan cricket team regularly hosting the world s best in the white flannel stakes. Lovers of the turf might not find such an international level of their sport, but the spring race season at the Nuwara Eliya racecourse in the hills offers up its own charm. With a history of racing dating back some 150 years, the sport was revived in 1981 by the Sri Lanka Turf Club, and events such as the SriLankan Airline s Governor s Cup make for an interesting day out, with all the champagne, bookies and hats of Ascot combined with a local flair. This year, energetic dancers jived their way through a Thoroughly Modern Millie display, one horse went round the course the wrong way, and a soft rock band accompanied much of the day while the jockey silks shone brilliantly and it was possible to get up close and personal with both horses and riders.

For those who like a walk with a stick, golf is another pursuit that has a history in Sri Lanka, where the Royal Golf Club in Colombo dates its origins back some 125 years and is the second oldest Royal Club outside of the UK. Run very much along the old traditions along with its counterpart in Nuwara Eliya, it offers a very different take on golf in the tropics and , combined with other courses at Hunas Falls, Pelwatte and Victoria, offers keen golfers a week to 10-day tour of surprises as well as the usual bogies, eagles and sand traps. Getting serious about adventure, Sri Lanka does have potential to rival some of the world s established activity destinations, with its mountainous centre the source of around 130 rivers that make their way down to the coast through gorges and across plains. Navigable rapids range from grade 1 to grade 6 in breath-taking difficulty stakes for white-water enthusiasts, while calmer stretches and the island s coastal lagoons offer perfect venues for more serene canoeing expeditions. Trekking, too, is ideally suited to Sri Lanka where walkers can transit craggy highlands, mountain forests, alpine grasslands, precipitous tea estates, paddy

fields and scrub jungles in just a few days. Alternatives include mountain climbing or even mountain biking, offering opportunities to freewheel down the slopes visiting caves, temples, reservoirs and tea estates on the way. Cycling generally is well suited to Sri Lanka, although only for those serious bikers who are not easily fazed by cacophonous traffic, errant donkeys and Schumacherstyle taxi drivers. The National Cycle Trail offers up four geographical areas for consideration, with 240km of coastal routes from Colombo to Galle (good for beach, coconut and rubber plantations, village life and fauna and flora); a 150km route in the cultural triangle in the middle of the island (good for culture vultures); 200km of trails in Sabaragamuwa province, famed for gem stones and rain forest, and a 300km high maintenance route through hill country. Less exhausting scenic opportunities include paragliding and ballooning, while on the coast, Hikkaduwa is the famed centre of surfing, and many resorts offer excursions offshore to explore the wrecks and coral hotels that litter the west and east coasts. And then there s elephant beach polo, too.

Built by the Habsburgs in the middle of the 19th-century, the Citadella s hill top position was used to strengthen their hold over Buda s inhabitants after the failed War of Independence between 1848-1849. Still scarred by bullet holes from many wars, the building today houses a restaurant and a café while the area around the Citadella commands some of the most breathtaking views of the city. Just a short walk away is the statue of St. Gellért and the Liberation Monument. t wasn t just Will Smith who was smiling after I-Robot scored a big hit in the box-office. Audi executives were also overjoyed now that aggressive German carmaker is fast catching up in the automotive industry big league. In IRobot, the futuristic and stylishly designed car that Will Smith used was an Audi. It looked impressive, even if what we saw in the movies were mostly the exterior. It isn t that Audi is lagging in terms of design and technology. It s just that for most people around the globe, it s still Mercedes, BMW or Jaguar that are the top favourites. Not surprising, because in this sector, image is everything. But the last few years have seen the ascendancy of Audi models. This year, the latest generation of the A6 is a saloon that is destined to leave its competition behind, literally. It graces the hot and humid highways of the Middle East this September. The new A6 is aiming for leadership in its seg-

ment through outstanding driving dynamics and high technology, superior comfort and a wide range of equipment. The car will be officially launched in the Middle East in October 2004. And exactly how will the Audi A6 do it? Powerful petrol engines, as well as frontwheel or quattro permanent all-wheel drive set the foundation for the supremacy of the new A6 sports saloon. ife, they say, is a series of moving pictures. Those moments that we want to cherish a bit longer, we capture in pictures. Even in this age when videography has increased in popularity, a vast majority still uses photography to preserve the most memorable moments of their lives. Indeed, we document every significant moment of our lives from birth until death with pictures. For amateur photographers, taking pictures is nothing but a simple click of the camera, with the occasional, sometimes simply mechanical focusing of the lenses. But for those with a passion for photography, it is an amazing combination of art and technique. Now considered a genuine art form, photography was previously not as highly esteemed as traditional painting. The latter, many argued, was more artistic and natural compared with photography, which was thought of as artificial involving as it does technology. Photography 101 Photography started in the early 19th century and was discovered based on the principles of light, optics and chemistry. Today, photography has not only established itself as a genuine art medium, but as a legitimate commercial enterprise as well. Whether you take photography as a hobby or a profession, and even before you even think of buying any camera, you should ask yourself, Am I ready for this? A lot can go into the production of a single photograph. There are things to

consider like camera body, lens, film, light, time, spot and others, which can be both time and resource consuming. Then there is the issue of imagination, art, and harmony synchronization. However, despite all these, photography can be both a rewarding and fulfilling experience. What do I need? Having the right tools or equipment is indeed important. But the two most important elements of photography are the subject and the photographer. A skilled and talented photographer with a simple camera can take better pictures than an unskilled person equipped with a hit-tech camera. As it can be a demanding hobby or profession, anyone interested in pursuing photography needs a basic level of interest and commitment. With the growth of photography came the rise of training schools with diploma and short-term courses in basic and advanced photography. It is a subject in many arts-related schools. There are internships and seminars as well about photography. In other words, there are a number of opportunities for you to broaden your knowledge and skills. You need to invest some time in understanding light and film development, as well as shot selection and blocking. Camera essentials

Having developed an interest in photography, you will have to deal with the issue of which camera you are going to use. A lot of it will depend on your purpose personal, as in just for the sake of taking pictures or as a hobby; or artistic and commercial, as in for the sake of selling photographs as artwork or making a living as a commercial photographer. Essentially, a camera is a lightbox with a lens on one side and a light-sensitive film on the other. Camera technology has improved dramatically over the years, giving photographers a better control over the quality of their photographs. Despite present-day cameras being hitech, the principle used is essentially based on 16th century technology called camera obscura. The earliest form of this device was a darkened room with a tiny hole in one wall through which light entered, and resulting in a projected upside-down image on the opposite wall. The camera obscura has since

evolved into a handheld box with a lens replacing the pinhole and an angled mirror at the back. The mirror reflected an image onto a ground-glass viewing screen on the top of the box. The inventors of photography later adapted the principle behind camera obscura adding a device for holding sensitized plates in the back of the box. Professional photographers still use a similar camera today, a large-format camera known as the view camera. A significant improvement in camera technology was the development of lens shutters, devices that could limit the time of exposure to a fraction of a second. In 1888 George Eastman introduced the first Kodak camera, making photography available to a great num-

ber of people, thus paving the way for a camera craze, which continues to this day. Modern cameras come in a variety of forms. Whereas cameras once required many decisions on the part of photographers, most of today s cameras offer a range of automated

features, thanks to digital technology, that greatly simplify picture taking and reduce the likelihood of error. Digital technology offers a huge potential in terms of perfecting the art and technique of photography. Although its benefits are tremendous, only recently has the technology been adopted by both amateur and professional photographers. In fact, out of 13 billion shots taken every year around the world, there is 3 billion only taken by digital cameras. The world of photography is indeed fascinating, and there is a lot to discover about photography, of which cameras is only but a part. Seize the day at Carpe Diem by Debra Berriman

M

y venture into finding the best coffee shops around Dubai led me to a real gem at Town Centre that has become and institution for many a Jumeirah resident and that is in the form of Carpe Diem La Cafette. Like it s namesake, the lovely Carpe Diem the art of living soft furnishings and furniture showvilla just further up Beach Road, the atmosphere is stylish yet cosy. On entering the café there is an alcove to the right showing off wares and furniture pieces available for sale at Carpe Diem, but then again, everything that can be seen and used can be purchased, from the lovely pictures on the walls to the dainty spoons you use to stir your frothy cappuccino. Opposite this small showcase is the inviting and comfortable seating area, with stylish wicker chairs all dressed in lovely earth shades with splashes of green in the form of potted plants and softly textured walls to create the cosy atmosphere. A lovely touch is the assortment of earthtoned pashmina s hanging nearby to use if anyone feels a little chilly. What is almost instantaneous on entering is how the aroma of freshly brewed coffee and freshly baked pastries assails the senses and invites you to sit down and browse the

menu. The choice of coffees covers the spectrum from Espresso, Ristretto, Cappucino, Café Latte and American Coffee and then there is a selection of classic teas and herbal and fruit tea infusions, all served with freshly made cookies. Or there is a brilliant Hot Chocolate Milk made with real Belgian Chocolate, as is the chocolate milkshake! The croissants are warm, flaky and melt in the mouth and the freshly baked cakes I spied on the counter were equally tempting. The selection of meals would satisfy anyone from meat lovers who can enjoy a Classic Belgian Steak Tartare as a main, starter or sandwich, or delicately Norwegian Smoked Salmon with avocado and goat cheese for fishy people. Vegetarians and dieters have a lively selection of salads, and the healthy kid s menu is refreshing. The choice of sandwiches comes on freshly baked white or brown French Baguette bread and has tasty fillings like Deluxe Crab Salad, Brie cheese, warm goat cheese with a pine nut crust with spinach or try the Chicken in Curry and Pineapple Dressing with tomato and crispy lettuce. Given the choice of pancakes and waf-

fles on the menu this is obviously their speciality. Salted pancakes have wonderful fillings like tossed spinach with Smoked Salmon and creamy herb dressing, or melted Mozzarella on pesto and tomato. The sweet pancake choice would make any dieter s determination wobble when tempted by an array like real Belgian chocolate melted over vanilla ice-cream, or caramelised red apple with vanilla icecream all with whipped cream! But she could settle for the delightfully classic lemon and sugar. The luxurious authentic Brussels waffles have the same toppings and more whipped cream! And just when you thought that was all there is the range of Belgian Tradition and New Zealand s Creamiest Ice Cream that can tempt you by the scoop or assembled into a myriad of combinations. All in all just too tempting for words. We all have our idiosyncrasies, especially when it comes to food. We like to have our salad in a particular way, or our chicken cooked in a certain style or manner. And so when I heard about this seafood restaurant that will cook my favorite seafood the way I wanted it, I simply had to try it out. Off I went to the Blues Seafood Restaurant located at the Marina Walk. This new concept restaurant is an excellent addition to the already myriad fine dining restaurants that we have in Dubai. As you enter the restaurant, you will be impressed with the unique ambience. As I knew it was a seafood restaurant, I was

nonetheless amazed at how unique the whole ambience is. Once inside, the wait staff is prompt and polite. The service quality is maintained consistently all the while I was eating until I left. But the highlight of my dining experience was naturally the food. Blues has a large seafood collection from which you can choose. It is a virtual seafood market tastefully displayed in keeping with the restaurant s classy ambience. For me, the obvious choice was the lobster sautéed in soy sauce, garlic and spring onion, and it was the best that I have ever tasted. The lobster was absolutely fresh,

and the taste superb. Every bite was flavorful, and my only regret was the fact that my personal diet regimen would not allow me to go for a second serving. But, there is always another day. I did try some shrimp in ginger and Oyster sauce. And it was just as mouth-watering as the lobster. The fact that the seafood was fresh made it truly an exceptional dish. But what made it even more sumptuous was the consistency of the cooking so well done by the international chef that Blues brought on board from abroad. Excellent as its main courses try, you should also try a good number of the restaurant s appetizers from the trey bien seafood pastry rolls to the sumptuous caviar served with crème fraiche diced onion and egg. The seafood chowder as well as the calamari and crab salad are not be missed. In addition to the seafood delights, Blues also serves Grilled Baby Chicken, Fillet Steak and Lamb Cutlets, which only serve to emphasize the excellent kitchen staff that Blues has. Blues had its soft opening last July and has seen a steady increase in regular patrons. DAMAC is redefining Dubai s dining scene with the Blues restaurant concept. All in all, Blues has superb facilities, a remarkable ambience, a well-trained staff and hotel-like services and dishes at non-hotel prices.

If you are looking for a leisure activity that is both mentally stimulating and physically challenging then look no further than Wall Climbing? Wall Climbing? you may well shriek, and quite frankly, Yes! Okay then, the next question would be, Where? and the simple reply would be, Pharaohs Health & Leisure Club at Wafi City. by Debra Berriman

had visited the Pharaohs Health & Leisure Club a few times for various reasons and on each occasion my eye kept on being drawn to some very high, interesting looking walls with strange configurations and assorted coloured protrusions sticking out that to my untrained eye seemed more a modern art sculpture than anything else and on enquiry was told it was the Climbing Wall the highest one in the region for that matter. Again, curiosity got the better of me and I was shown a collection of equipment, helmets, some very sassy looking climbing shoes and a multitude of ropes. On seeing all this paraphernalia I automatically assumed that one had to be an experienced climber and also that one had to have superhuman strength i.e. like Tom Cruise defying gravity and hanging upside down whilst clinging to a rock face with his fingertips in Mission Impossible II. Not so , I was informed by the knowledgeable staff and so a practice session was initiated much to my trepidation. The idea is actually quite a simple one. The various protrusions are painted in 4 different colours that on closer examination reveal a set course for one to navigate yellow being the most difficult, red the easiest. There are also four different walls with varying degrees of angles at different stages, and these too have the four different colours for four different difficulty levels so basically sixteen courses - or should I say challenges? As I had absolutely no experience I was to try

the easiest (hah!) and highest wall that is 3.5m straight up! This is done with a trainer and is called Top Roping . First, the all important helmet, and then you get clipped into a harness. A rope is attached to you which goes up to the top of the wall and the other end is held by the trainer, so that as you climb you can feel completely safe. The trainer does not pull you up but you can feel him taking up the slack as you go higher, and higher, and higher. The most daunting thing is actually taking the first step. The handholds and footholds actually appear too small to give any kind of help and the wall is right in your face, but after a few false starts a kind of rhythm seems to set in

and you find yourself reaching out, stretching, twisting and continuously looking up for the next hand or foothold. Once you reach the top you signal the trainer below that you will be coming down and with a push off the wall the trainer will bring you back safely back to earth by manipulating the ropes. And I think it can safely be said that you will immediately want to do it again. Well I did anyway! It is an amazing rush that gets the adrenaline pumping through your veins and you can hear your heartbeat in your ears. The sense of achievement is overwhelming and I looked at my body in a completely different light. Aside from this immediate benefit, the long term benefits are increased body muscular strength, co-ordination and agility and when performed on a regular basis it increases general cardio fitness. The basic equipment that is required is: Harness Figure of 8 ( type of belaying equipment ) Gri-gri (type of belaying equipment ) Ropes Helmet Chalk Chalk bag Special climbing shoes are recommended as they are specially designed to have more grip, support and flexibility, however sneakers can be worn as well. The chalk is used on your hands to help you get a better grip and this is especially so in hot weather when sweaty hands are quite prevalent. The best way to pursue this sport is to go on a course. Club consists of 6 sessions where you learn Top Roping on the various levels, correct rope procedures, how to use your equipment correctly, climbing etiquette and safety procedures, as well as an introduction to Free Climbing. (Free Climbing known as Bouldering Free Climbing is performed without safety equipment and is only for experienced climbers going no higher than 3.5m around the wall horizontally, not vertically.) Follow up courses are also available which are the intermediate and advanced courses for improving climbing technique. The soup selections are also typically Mediterranean in flavour including a hearty fish soup, or the delightful Spanishinfluenced ice cold Gazpacho soup. The beauty of the menu is that it clearly states where the delights of the sea on offer have come from with a good share of it coming from our very own waters. The menu also shows you the chef s recommendation on how your choice is usually best enjoyed, with classic presentations like langoustines simply being pan fried with herb and butter or steamed, or the Belon oysters presented raw with lemon, shallot vinegar and bread and butter. Clams and mussels are recommended either in a creamy Mariniere sauce or typical Provencal style with a sauce of tomato, basil and garlic. On the fish side, descriptions of the type of flesh of the fish helps one decide on the cooking method used and papilotte-style (cooked in a paper case) very often seems to be the way to go, followed by grilled, pan-fried or steamed. and served with simple herbed rice and grilled vegetables. On the dessert side fruit plays an important role with delights like a Fruit Minestrone, an exotic Fruit Platter or a selection of fruit sorbets. What is not so typical is the Muhamarah, a delicious spicy dip made with breadcrumbs, walnuts and onions blended with chilli paste and olive oil which is just brilliant to dip hot mezzeh selections like Fried Kebbeh or Grilled Halloumi Cheese, or the mouth-watering Chicken Livers flambéed in lemon juice and drizzled with pomegranate syrup! The Indonesian braised hammour fillet topped with dark soya sauce is perfect if you are not into too much spice. Naturally there is a large choice of steaming hot, sizzling stir-fries to choose from like the Indonesian pan-fried beef with mixed vegetables and oyster sauce, the Malaysian grilled chicken and lemongrass and coconut milk or the Thai roasted duckling served with young broccoli leaves and gravy. With the rice and noodle selections you cannot go wrong with the traditional Indonesian Nasi Goreng or just a plain bowl of steamed rice to sop up the juices. For curry lovers run the full gauntlet of roast duck with red curry and coconut milk or opt for a milder chicken or prawn green curry, and for meat lovers there is a delightful spiced beef curry. Fruit also plays an integral part of the desserts on offer like sweet sticky rice with mango or fresh mango in coconut milk. For something really different and refreshing try the delightful coconut ice cream served in a half coconut shell. Fusion is open daily from 19h00-24h00. Prime Rib This award-winning outlet specialises in serving Prime Beef and is a haven for the meat lover who craves his slice of beef served up in a modern, contemporary atmosphere. Among its many features, ilkone i800 offers automatic precise prayer timing anywhere in the world, an alarm option which can be set to sound before and after the call to prayer (Azan) with actual Azan voice which could be automatically set to silence throughout prayer. The name ilkone is derived from the Arabic word meaning universe . Ilkone has harnessed the specialist expertise of the different international companies to develop unique applications for specialinterest market segments. The i800 is the product of an international consortium, comprising partners from the U.A.E., Egypt, England, Australia, and South Korea. Ilkone s CEO Mr. Saqer Tellawi says the consortium has devoted two years of research and development in bringing this new phone to the market, focusing on key areas from design to manufacturing and distribution networks.
