SIPPING

“If you have no personality to sell, no leadership skills to lead a bar or you don’t know how to welcome a guest, then this business isn’t your pair of shoes.” Agostino Perrone on persona in bartending.

COCKTAILS

Natural Hipster Gilt QT Sydney

Gilt’s Natural Hipster combines Cazadores Blanco Tequila, Earl Grey, with aloe vera, spirulina juice, melon and fresh lime for a refined kick. All ingredients are wet-shaken, double strained into a Nick and Nora glass and garnished with a pegged parsley sprig. A product of Gilt’s adventurous cocktail menu, Natural Hipster is a knowing, and presumably ironic, nod to the bar’s clientele: itself a cocktail of cool urban Sydneysiders, millennial travellers and suits-sanssocks. Each cocktail at Gilt is suitably themed and creations leapfrog from continent to continent, from the Sake to me Baby, with sake, pomegranate, orange blossom, lemon and edible flowers; to the Corn ‘N’ Broil which features jerky and blackened corn along with Laphroiag, Pussers, House Falernum, BBQ bitters and lime. www.qthotelsandresorts.com

COCKTAILS

Super Soaker In-Room (Peg + Patriot) Town Hall Hotel, London

Supplied in-room at the Town Hall Hotel, the Super Soaker is a handmade bottled cocktail crafted by Peg + Patriot, the hotel’s ground floor bar. Combining watermelon infused Woodford Reserve, Cocchi di Torino, Campari, sugar, acid phosphate and orange twist, Super Soaker allows guests to experience the distillation bar’s premium bespoke cocktails without leaving their room. Intended to be served with ice, the cocktail channels the chic modernism of the Town Hall Hotel’s design scheme and the metropolitan buzz of surrounding East London, containing three full serves and ready to drink straight from the fridge. Also available bottled in-room is the Vesgroni, made from juniper, spelt, rye, orange and bittered grape; and Green Lanes, which combines juniper, pistachio, orange, bitter grape and rose. www.townhallhotel.com

COCKTAILS

Ink Bank Bar and Brasserie Park Hyatt, Vienna

The drinks served at Park Hyatt, Vienna’s Bank Bar and Brasserie are intended to emphasise two prominent elements: the history of the building, and an experiential association with materials like wood, leather, metal and copper. The Ink cocktail - which marries Woodford Reserve bourbon with mezcal, lime juice, Frangelico, agave juice concentrate, ink and egg white - channels both of these ideas. Served in a traditonal ink well and with a fountain pen at hand for added flourish, the cocktail is a brazen reference to the venue’s past. Located in the historic cashier hall of the 100-year old building, the bar acts as the centrepiece of the hotel and focuses on contemporary twists on classic recipes that embody the atmosphere and legacy of the surroundings. www.restaurant-thebank.com/bar

driven by the creation of an image, and a message, as opposed to adhering to a limiting seasonal style. Elsewhere, Meeten’s work for bespoke suit companies, and his extensive education and training courtesy of some of England’s finest tailors, ensures a broad knowledge of construction, pattern cutting and fabric types. A chance meeting brought the pair together and the rest, as they say, is history. With a range of off-the-peg garments including aprons, waistcoats, jackets, shirts and dresses, The Uniform Studio is producing contemporary work that references the fields that produced the two designers, and speaks directly to the industry they find themselves in now. “People dress in a way that reflects their personality and how they like to be perceived, and a uniform is no different. Its job is to communicate the hotel’s brand and identity,” Hill continues. In terms of process, the studio begins with a blank canvas, each garment being bespoke to the client. Once a design is chosen, the studio’s in-house cutters begin production, with calico samples sent to the buyer to ensure the planned uniform meets their standard, followed by a detailing method that provides each garment with distinctive features unique to their establishment. The outcome is a uniform that allows guests to observe ideas at the heart of each brand, up close and personal. With this in mind, the studio’s mantra “We design for you” works in the context of both staff and guest perspectives. “I like to think of the uniforms as part of a story running through the areas of a hotel. They all have their own needs in terms of aesthetic and function, but also draw you in and take you on a journey as you move from one area to the next,” Hill concludes, encapsulating The Uniform Studio’s desire to create work that rivals the importance of architecture, design and cuisine in the overall hospitality experience. www.theuniformstudio.com
