Easy Dinner Idea CHICKEN ENCHILADA CASSEROLE

Spice up your dinners with this casserole baked with cream cheese and tender Mother’s roasted chicken. It’s a dish the entire family will love! We recommend making this meal on a Monday night because every Monday our Organic and Non-GMO Roasted Chickens are on sale in our Homemade Grab & Go section!

INGREDIENTS:

• 5 cups Mother’s roasted chicken, shredded

• 8oz softened Organic Valley cream cheese

• 4 cups Organic Rumiano Monterey Jack Cheese, shredded

• 9 Mi Rancho Corn Tortillas, cut into strips

• 28 oz red or green Siete Enchilada Sauce

• Cacique Queso Fresco

• Fresh Organic Cilantro, chopped

• Mother’s Homemade Grab & Go Guacamole

• Mother’s Homemade Grab & Go Fire-Roasted Salsa

DIRECTIONS:

1. Preheat oven to 375°F

2. Blend together grated Monterey Jack cheese and softened cream cheese

3. In a 13x9 casserole dish, layer half of the shredded roasted chicken, half of the enchilada sauce, half of the tortilla strips, and half of the cheese blend. Repeat layers

4. Bake covered for about 40 minutes. Uncover and cook for about 10 more minutes

5. Top with crumbled queso fresco and chopped fresh cilantro

6. Serve with Mother’s Homemade Guacamole and Fire-Roasted Salsa on the side
