My Little Corner

By Shannon Robin Kids and discovery are two words that belong together.

When our local chamber of commerce administrator, Lieve Parisis, approached me about participating in Kids’ Discovery Day, I didn’t think my business would be a good fit.

I’ve got cool computers and software, expensive cameras and a print shop full of machines that aren’t necessarily child-friendly.

Lieve is a creative force, though, and came up with some suggestions that made me reconsider and sign on as a participating business.

She suggested the kids might enjoy putting together a copy of the paper, and I thought this was a good idea to explore.

The first group to arrive included sisters Andrea and Claudia Gross, Jaylene Giesbrecht and Elliot Nemeth.

As we looked at an issue of Shootin’ the Breeze together, Jaylene pointed to Peter Maloff ’s photo in the ReMax ad and let us know, “He’s the man who gave us the farm.”

I showed them how the paper looked on my computer screen compared to the printed copy, and then we got down to business.

Every paper needs a front-page photo, so we walked to the park to take group and individual pictures.

Back at the office, I showed them how the picture made its journey from the camera to the computer and finally into the page layout for our paper.

We created a four-page Shootin’ the Breeze based on the May 16 edition. The ads were left in place, but we created spots for each of the kids to write an editorial and a feature

story.

Our big digital press impressed the kids, and it was fun watching them guess which tray the papers would exit to.

Unfortunately, what exited on the first try wasn’t in the correct format and I had to do a bit of tinkering before we had copies of the paper in our hands.

While writing stories into the blank spots on the page, the kids each took a turn at the computer to create a souvenir business card for the day.

Due to time limitations, the cards were all the same based on a template. The kids imported their photos, added their names and chose the colour schemes.

The second group to arrive included Jocelyn Watts, Trevor Davies and brothers Asher and Kenai Warkentin.

We did the same activities – photographs in the park, creating a paper to call their own, and designing business cards.

I was impressed by the computer skills these youngsters demonstrated. If our session had been longer, they all would have been able to create a full-sized print paper and design some really neat cards.

I think the highlight of the day for both groups was watching the machine take a 12-by-18-inch sheet of paper with their pictures on it and cut it down to 20 business cards for them to take home.

Thanks to the Pincher Creek and District Chamber of Commerce for organizing the event, to Kootenai Brown Pioneer Village for acting as the central meeting point, to all participating businesses and groups, and to the parents who brought their kids out to experience a day filled with new things.

The Breeze Mailbox Sports recognition and UROC rides Hello, thought I’d let you know what is happening in the world of sports here at Livingstone School. Our senior high track and field athletes competed recently in Medicine Hat at the South Zone track and field championships.

Grade 12 student Emma Lowry was first in hurdles and will compete in provincials in Edmonton this weekend. Her younger brother James was sixth in javelin.

Also, through UROC (“you rock”), which is the local mountain bike club, I am hosting youth group rides every Wednesday evening in June, starting at 6 p.m. at the gazebo in Blairmore.

This is a chance for local kids to ride some of the mountain bike trails in Crowsnest Pass.

Helmets are mandatory, as well as a UROC membership and signed waiver (parents must sign if riders are under 18 years old).

Memberships can be purchased online at www.UROC.ca, or at Stone’s Throw Cafe in Blairmore.

Membership costs $5 for kids 15 and under, and $25 for kids 16 and over. T-shirts are available for an extra $10.

All levels of bikers are welcome, but riders should be comfortable on single-track trails with a few rocky and rooty sections.

Living and breathing Crowsnest Pass

By Shannon Robin Whether you’re a tourist visiting Crowsnest Pass, a person considering a move to southwestern Alberta or an area resident, Sue Moser is someone you want to know.

On first meeting you’ll recognize Sue as a true ambassador for The Pass. “I kind of live and breathe it,” she says.

Sue’s eyes light up as she talks about the community she has come to champion and to love over the past 10 years. “This area is a little piece of heaven,” she says.

Sue has become known as the go-to person in town, and if she doesn’t have a name and number on the tip of her tongue to help you out, she’s got it at her fingertips in her trusty Rolodex.

Another bit of Crowsnest promo she always has on hand to share is a mini DVD created by Community Futures. Sue figures she’s passed out about 1,500 of the little disks.

In 2008, Sue opened her first holiday home, Turtleback Cottage, in Blairmore. She learned how to make and update a website, and began promoting not only her own business, but also the events which draw people to Crowsnest Pass.

Once her own website was launched and her holiday home was open for business, she founded a group of people with similar businesses who could work together to promote themselves and each other.

“We were all working toward the same goal of bookings for our homes, so I thought why not build a team,” she says.

An intial meeting was held in the fall of 2008, and by March 2009 the group had

Sue has gone on to open a second holiday home in Bellevue called Ladybug Villa, and to help others create websites and other promotional strategies for businesses of all kinds.

The passion Sue has for everything she does shines through in her smile, and her excitement to share the treasures of Crowsnest Pass is clearly genuine.

A caring hand for pets

By Rachel Miller Every pet deserves a safe and loving home, which is why CAReS – the Claresholm Animal Rescue Society – is so busy right now. Shelley Petersen, animal care leader, has 28 kennels for cats and six for dogs and, although not all are currently occupied, there are many animals still looking for a home.

“We currently have 13 full-size cats, three mothers with kittens and a few kittens on their own that need a family,” says Shelley.

Most of the CAReS animals are spayed or neutered, and the few exceptions can be done when they get older or when they find a home. All the animals have been vaccinated, and come with complete medical records. Kim Alexander is the contact person for dog adoptions, and goes through every application to make sure the home is right for the pet.

“We check that the applicants have landlord approval (if applicable), if they have kids, other pets, how big their yard and house is, and how much energy the new owner will have in relation to the pet they wish to adopt,” says Shelley. “We also take FATHER’S DAY IS JUNE 17 Advertise your ties & more!

into consideration how many hours a day a person is away from home at work.”

Adoption costs vary. Cats six months or older are $60, kittens are $125, dogs six months or older are $150 and puppies are $200. If you adopt an animal that is not spayed or neutered, a $100 deposit will be required, and will be refunded once the animal has been brought in for the procedure.

CAReS does not allow its cats to be declawed, and it is also a condition of adoption that the cat will not be declawed in the future. The rescue society does not offer feral cats for adoption, but does offer a trap-neuter-release program if there is an outbreak of feral cats in an area. The cats will be released back into the same area in order to prevent new cats moving in.

CAReS also accepts surrendered pets for a small fee, with a few exceptions – vicious animals which cannot be safely placed in a new home, the extremely old or the terminally ill.

The society does have older pets for adoption, and Shelley points out the benefits of choosing an older animal. “They have a few wonderful years with their new owners, Continued on page 10

It’s difficult to imagine how she fits everything into her days. For relaxation she walks with her dog, but usually hands out a DVD somewhere along the way.

As icing on the cake, Sue is putting her 27 years of experience with RBC and selfemployment as Sue Moser Financial to a new task.

This Friday, Sue assumes the branch manager position at Servus Credit Union in Coleman and she couldn’t be more excited!

She lights up when she speaks about this new opportunity. “I hope to emulate what I feel about my community in a professional business environment,” she says. “Servus is a community institution that embraces that same exurberance.”

Through past and current endeavours, Sue has developed a knack for empowering others with knowledge and building successful teams. This will serve her, fellow employees and members of Servus Credit Union well.

She doesn’t expect her new position to have any negative impact on the holiday homes group. “Others will step forward and take the reins,” she says when asked how she’ll keep up her current pace with the addition of a full-time position.

“I see myself in this position for many years,” Sue says. “Hopefully I can be a spoke in the wheel to the Crowsnest Pass’s recovery.”

Kids discover fun side of business

Last Saturday, Pincher Creek and District Chamber of Commerce hosted its first Kids’ Discovery Day, with the idea to bring the business community together with the community at large.

This free event, for kids ages six to 12, turned out to be a huge success! Twenty-seven kids signed up, and arrived for the exploration tour dressed in their Kids’ Discovery T-shirts and big smiles.

Fifteen local businesses and organizations opened their doors to welcome groups of up to five kids. By participating in some engaging, hands-on experiences, the kids learned lots about the businesses in their community.

For participating businesses and community service agencies, it was an opportunity to raise awareness of their products, services and activities and to encourage community volunteerism. And it worked! One youngster signed up to volunteer with the Pincher Planters while participating in the activity, and another is strongly thinking about becoming a Pincher Planter as well.

There was plenty for the kids to discover: At Pincher Creek Veterinary Clinic, kids got to see X-rays of different animals, stitch up a stuffed bear, wear masks and special glasses to see how a laser is used during surgery, and lots more.

At Miso Sushi, they learned all about making sushi rolls using different ingredients, found out how difficult it is to roll them – and how good they taste!

Papa Joe entertained the crowd making balloon animals and showing magic tricks.

Five kids became experienced bakers at Celestial Sweets.

Geared with a camera, a pen and a notebook, junior journalists went out for an interview and published their stories, illustrated by movies, on the Pincher Voice website.

At the fire hall, the biggest attraction was the ambulance, where they could see their own heartbeat on the monitor.

At Mountainside Printing, the kids saw how Shootin’ the Breeze is made and printed. They each got to take home a newspaper personalized with their own article, as well as a package of business cards they created themselves.

The Pincher Planters showed the kids how their volunteer work makes the Cenotaph Park the beautiful park it is today. They planted and watered flowers and did some weeding, and each took home a nice flower and herb pot they planted themselves.

All had a blast at the Mountain Radio booth, where they could record their own voices and play with the sounds.

At Kootenai Brown Pioneer Village, kids learned the importance of storytelling and what it takes to be an interpreter.

During a visit to the Pincher Creek SPCA, dog Tex was overwhelmed with hugs and petting hands.

At The Brick, two kids showed how handy they are by putting together a table and some chairs.

At KaJay Automotive, the kids learned about auto mechanics and got to handle an air gun to take off a tire.

At the Co-op bulk plants, they climbed on top of a big truck to see how it was filled with gas.

The Ramada offered a tour behind the scenes to see what it takes to run a hotel.

At the end of the event, eight kids showed their entrepreneurial skills at the kids’ market, where they promoted and sold their homemade jewelry, baking, toys and crafts – a great end to a successful day.

Everyone went home with a satisfied smile on their face and lots of new experiences in their pockets, which tells me they will be coming back for sure next year.

Nanton gallery elevates art

By Rachel Miller Art can be found in surprising places, but perhaps there is no place more unusual for a gallery than a grain elevator. Inspired by the Nanton elevator, Conneil Wilson renovated the foreman’s building attached to the historic symbol of the Prairies, and Against the Grain Gallery was born in August 2011.

Last March, after Conneil decided to focus on her artistic career, her sister, Jackie Hodgins, bought the gallery. Conneil still looks after the website and designs promotional material for the business. Talent runs in the family, as Jackie points out that both her sisters and her grandmother are artists.

The sisters’ mutual love of art led to the emergence of a completely different type of gallery. Boasting something for everyone to enjoy, Jackie says, “We carry a wide variety of styles and techniques. Everything from glass to pottery, paintings of all styles, water colours to pastels. As well, we have bronze work, concrete, glass and mixed media, all on display.”

“It’s important to us to be involved with local art and to feature local artists as well,” Jackie says.

Besides her sister’s art, Jackie has works on display by artists such as Linda Jolly, Bruce Koch, Sharon Wagner, Peggy Mills, Nancy Osadachuck, Nancy Lynn Hughes, Jamie Morris and Brenda Rahaus. “My greatest joy is to see a person connect with a piece of artwork,” says Jackie. As she explains, artwork is very personal and affects each person differently, including the artists.

“An artist pours themselves into their work – it’s like their baby.”

The current attraction running at the gallery is The Garden Art Show, featuring six southern Alberta artists, with a focus

on the love of gardening. Works on display include Robin Rohl’s garden sculptures, Sharon Wagner’s abstract art, Bonnie Huston’s glassworks featuring birds, fish and snails, and Brenda Rahaus’s acrylic floral paintings.

Peggy Mills, Nancy Osadachuck and Nancy Lynn Hughess are also contributing their artistic works to the show. Some of the artists will be giving demonstrations on-site.

The next art show debuting at the gallery will be Tiny Gems, showcasing paintings eight by 10 inches or smaller. This show will run from June 19 to 30.

Western Art Show, July 1 to 31, will feature the works of Bruce Koch, Darcy Presiloski, Jamie Morris and Donna Wilson.

This display will focus on farming, ranching and prairie life using a variety of media, from paintings to bronze work.

Nanton Camera Club members recently had their photography displayed on the walls at Against the Grain Gallery, and winners of the club’s competitions will regularly be displayed at the gallery for all to enjoy.

Refreshments and tasty goodies are offered to guests at each art show opening.

Featured artists attend the openings to answer questions or do demonstrations.

The gallery, located at 2101 19th Ave. in Nanton, is open Tuesday through Friday from noon to 5 p.m., and Saturdays from 10 a.m. to 5 p.m. Extended summer hours begin in July and will include Sundays.

Family celebrates 90 years of Waterton business

By Aynsley Baker This is a banner year for the Baker family of Waterton Park, owners and operators of Tamarack Outdoor Outfitters and Waterton Outdoor Adventures, who are celebrating 90 years of continuous business in the village.

Over the years, they have watched the tiny settlement of Waterton grow into the international tourism destination it is today.

Generations of visitors have passed through the doorway of the Bakers’ main business operation on Mount View Road. Waterton has changed dramatically over the years, but hard work and love of the land has kept the family’s businesses active in the park since 1922.

National Aboriginal Day

By Leanne Van Loon Canadians from all walks of life are invited to participate in the many National Aboriginal Day events that will take place from coast to coast on June 21.

National Aboriginal Day kick-starts 11 days of Celebrate Canada, which also includes St-Jean-Baptiste Day on June 24, Canadian Multiculturalism Day on June 27 and Canada Day on July 1.

First Nations, Metis and Inuit people will gather to celebrate and to share spectacular dance, song and theatrical performances – both contemporary and traditional – that will bring you to your feet!

National Aboriginal Day is an opportunity to learn more about Aboriginal people and their contributions to Canada. Share in the

On June 21, we have been given the opportunity to open up the Piikani Nation Arbour for a National Aboriginal Day Celebration. Busy 4-H club prepares for show

By Whyat Bruder Wow! What another exciting year!

The Rocky Mountain 4-H Swine Club has been busy. In October, we started our club. We have 11 members and five families.

In December, we had our Christmas party with games and a pizza supper, enjoyed by all members and families.

In January, we did our community service, where we played card bingo at Crestview Lodge with the residents and then shared some snacks.

In March, we hosted the district demonstrations at the Foothills Church. Also that month, we picked up our pigs. They were between 92 and 96 pounds. We care for them twice a day with feed, water and a warm house, and by achievement day our target weight is around 265 pounds.

In April, we did our pig tour, where we went to all our members’ ranches and talked about feed and measured our market hogs. Then we had a barbecue and meeting at Barberos’.

In May, we did highway cleanup – we just beat the rain.

Our club will do the cowboy poetry concession, family fun day concession, Pincher fair and rodeo concession.

We are also planning our awards evening in June, and a whitewater rafting float in July.

As you can see, our club is always having fun!

So, I would like to invite you to come and see why we do all this. On June 4, we partner up with the Chinook Multi Club Swine Project for our show, starting at 2:30 p.m.; then supper at 5:30 by Karl Janzen; then sale at 7.

4-H is all about learning to do by doing – and that’s what we do!

By Nicki Schoening In the last five months the Ranchland Mall Tenants Association has given away approximately $2,500 in prizes including gift certificates for mall merchants and a fabulous night out with dinner and a limo ride.

Diane Forbes is the most recent winner and she was very pleased to take home a patio set including a table, loveseat and two chairs.

With this most recent prize giveaway, the businesses in the mall have also decided to start giving back in another way.

There are several non-profit associa-

tions in the community who have been actively fundraising at the mall, including participating in the chili cook-off and other mall events.

So, with each prize giveaway the association intends to count the draw entries and make a corresponding donation to one of these hard-working local non-profit organizations.

The recipient of the inaugural donation in this program was Children’s World Daycare, who received a cheque for $271 from treasurer Loretta Packham.

Director of Children’s World Daycare, Leanne Wiebe, says this money will be earmarked for much-needed new playground equipment.

The next draw, scheduled to take place at the end of June, will be for a new barbecue, barbecue tools, a propane tank and the fixings for a steak dinner for four.

Charitable proceeds from this draw will go to the Kootenai Brown Museum.

The businesses in the Co-op Ranchland Mall are thrilled to provide this opportunity to not only give something back to a lucky loyal customer but also to a deserving community organization.

CAReS in Claresholm The CAReS shelter moved into a new building in October 2011.

Assistance with construction costs came in the form of a grant through the Alberta Community Facility Enhancement Program.

The calici cat room doesn’t have cages. These cats are long-term residents of the facility and are more difficult to place because they have the calici virus. It makes them more susceptible to infections and the virus is contagious. At one time 30 cats with the virus lived in the facility; currently there are four.

Pitch, Hit and Run Challenge

Pincher Creek Minor Baseball hosted the Hit, Pitch and Run skills competition, sponsored by Major League Baseball and Aquafina, on Saturday, May 26.

It was an exciting baseball skills competition that provided boys and girls ages seven to 14, in Chinook West Little League, the opportunity to showcase their pitching, hitting and running abilities.

The Fort Macleod Royals came out and helped run the stations and Back Country Butchering provided the burgers that were enjoyed by all who donated bottles to the bottle collection.

Looking for a home

Davy is a black domestic short-haired cat with a small white locket (white patch on his chest). He loves climbing and playing. He misses his buddy Mason, who was adopted about a month ago. Davy came to us with an infection and is now better, but will always have a snotty nose. He would love for someone to visit him at PetSmart in Lethbridge to give him a forever home.

“That Woman: The Life of Wallis Simpson, Duchess of Windsor”

by Anne Sebba (St. Martin’s Press, $27.99) Reviewed by Larry Cox Wallis Simpson wasn’t strikingly beautiful or especially brilliant, but she was a clever, determined woman who almost single-handedly changed the course of British history during the 1930s.

Born Bessie Wallis Warfield in 1896 in Baltimore, she dropped her first name because it sounded too bovine, and then set out to reinvent herself. With wit and a sense of style, she charmed her way into the social circles of the upper-class elite and earned a reputation as an almost unstoppable force when it came to getting what she wanted.

As Wallis once wrote, “It was not quite enough for me to be ... the life of the party or to spend my existence merely taking part in good conversation. I wanted more out of life.”

In 1916, Wallis married Lt. Earl Winfield Spencer, but the marriage

was dissolved a decade later. In 1928, while in London, she married Ernest Simpson, an American-born Briton, and through his connections she met Edward, the Prince of Wales, at a party in 1931. As Wallis mesmerized the Prince, their growing romance was problematic. For starters, Wallis was a divorcee and still very much married to Simpson.

The relationship between Wallis and Edward became very public in 1936, the year of Edward’s accession.

Wallis obtained a divorce, and the King made it clear that he intended to marry her, even if it meant giving up the throne.

Give it up he did. Wallis and Edward were married in a small ceremony in France in 1937. One of Edward’s major disappointments was that his wife was never accepted by the Royal Family. The Queen Mother never mentioned her by name, only as “that woman.”

Many books have been written about Wallis Simpson and the sensational “romantic story of the century.”

Things are, however, never quite as they seem, and that is why the story of the Duke and Duchess of Windsor remains so fascinating. (c) 2012 King Features Synd., Inc.

By Steve Becker This deal demonstrates how a declarer can take advantage of the knowledge he has acquired during the bidding and play to bring in a seemingly unmakable contract.

West led the king of hearts and shifted to a low diamond at trick two. Declarer won with dummy’s king, cashed the ace of spades, catching West’s jack, and continued with a low spade to the queen.

West took the king and led another diamond.

Declarer put up dummy’s ace, East contributing the ten, and was now in excellent position to judge West’s distribution. West had started with two spades, at least six hearts, most likely four diamonds to the jack and, therefore, at most one club.

So, after cashing the ten of spades, declarer cashed another spade. This forced East to discard a heart as South discarded a club. Now the ace-of-clubs play from dummy, on which West produced the eight, convinced South that West had started with 2-6-4-1 distribution.

This assumption was confirmed when

declarer next led a diamond to his queen, forcing East to discard still another heart. South then ruffed the queen of hearts with dummy’s last trump as East followed with his last heart.

Everyone was down to three cards at this point. Dummy had the K-10-7 of clubs, East the Q-J-6 and South the 9-5 of clubs and seven of diamonds. On the night we got the news that we weren’t being renewed for a second season, I got a text from Miriam (Shor, who plays Cricket) that said, ‘I will miss you most of all, Scarecrow.’ If there was a moment in which I got a little choked up, it was probably the moment when I read that text. A: The picture you sent makes me think the sleigh is not as old as you think. This obviously is a Christmas table decoration, and the paintwork doesn’t appear to be as detailed as in most of the older pieces I have seen.

A used copy of “The Collectors Encyclopedia of Toys, Banks, Cast Iron Windup Autos and More, with Prices” by L-W Books is available for $6.94 at www.amazon.com. *** Q: I have a scale that I believe is from about 1937 or earlier. It is the same one seen in the movie “A House Without a Christmas Tree.” It was manufactured by the Hobart Company in Dayton, Ohio. Any idea of

how old it is and what its value would be? -- Inge, Granite City, Ill. A: I’m not sure if your scale has a three- or 30-pound capacity. There is a difference when it comes to prices.

The three-pound scale was often found in candy shops, the larger ones in other retail outlets. The scale was manufactured throughout the 1930s and ‘40s. I found one of the smaller scales being offered in an online auction for $40.

Don’t expect a slowly unraveling mystery -- this movie is more like the adventures of Iron Man if he didn’t have his suit and lived in Victorian-era England.

Just like last time, it has more explosions and brawling than you might remember from the original stories, but the resulting experience is more fun than you expect. Send a Handwritten Thank You to Teacher “Mr. Wold, you taught me how to read and write,” begins the thoughtful thank-you book 5-year-old Emmett Brown is making to give to his kindergarten teacher on the last day of school. Emmett eagerly practices his new skills as he sounds out words and writes them with a sharp pencil. “I think your glasses are cool when you read to us,” he continues, energetically dotting the “i” and crossing the “t.”

“Making a little book or card is a personalized way of showing teachers how much they have made an impact on young lives,” says his mom, Wendy Brown, mother of two and blogger of her inspiring site about the art of handwriting, (www.brownink.co) Computers are a way of life for kids, but she believes it’s important to make room for paper, pencils and pens, too.

“Emmett was going to write a card for his teacher, but when we discovered a create-your-own-books kit at a toy store, he got excited to make it a bigger production,” she said.

To get started, Wendy and Emmett talked about the school year and then she helped him create topics for each page. Using photos, stickers and maga-

zine pictures, the pages feature nature outings, ice skating, night sky watches and even the birth of Mr. Wold’s baby girl. The “Words of the Day” page lists Emmett’s favorites -- groundhog, The White House and chrysanthemum.

On the “I like your one-liners” page he writes “It’s the weekend, baby!” and he also glues on a tiny note from Mr. Wold: “Emmett, I’m hog wild for you.”

Your school-age kids can show their appreciation to their teachers by putting energy behind a pen or pencil, too. Help them make their own small book by stacking nice paper and punching holes along the side. Bind them together by weaving ribbon or string in and out of the holes. If you prefer, make a card by folding heavy paper in half or use a large sheet of construction paper cut in half lengthwise. Tape the short ends together to make a long strip and make accordion folds. Jot thoughts and attach pictures on each section.

Heart failure comes from heart arteries clogged with cholesterol, from heart valve malfunction, from high blood pressure and from heartbeat disturbances like atrial fibrillation.

Treatments are available. Water pills draw water from an overfilled circulation, and that eases the burden on the heart. Other medicines increase the strength of the heartbeat. Special pacemakers can restore synchronous beating to the heart’s out-of-sync pumping chambers. Congestive heart failure is not always a death sentence.

Fresh Lemon Bars A classic American sweet that has been winning over kids and adults for years. Our recipe is super-simple, with a crispy cookie bottom and a tangy lemon custard.

1 1/2 cups all-purpose flour (see step 2) 3 tablespoons all-purpose flour (see step 4) 1/2 cup confectioners’ sugar (see step 2) 1 tablespoon confectioners’ sugar (see step 5) 3/4 cup (1 1/2 sticks) margarine or butter, cut into small pieces 2 large lemons 3 large eggs 1 cup granulated sugar 1/2 teaspoon baking powder 1/2 teaspoon salt 1. Preheat oven to 350 F. Line 13- by 9-inch metal baking pan with foil; lightly grease foil.

2. In medium bowl, combine 1 1/2 cups flour and 1/2 cup confectioners’ sugar. With pastry blender or two knives used scissor-fashion, cut in margarine or butter until mixture resembles coarse crumbs.

3. Sprinkle crumb mixture evenly in

pan. With floured hands, firmly pat crumbs onto bottom of pan to form a crust. Bake crust 15 to 17 minutes until lightly browned.

4. Meanwhile, grate peel from lemons to equal 1 teaspoon and squeeze juice to equal 1/3 cup. In large bowl, with mixer at high speed, beat eggs until thick and lemon-colored, about 3 minutes. Reduce speed to low; add lemon juice, lemon peel, granulated sugar, baking powder, salt and remaining 3 tablespoons flour, and beat until blended, occasionally scraping bowl.

5. Pour lemon filling over warm crust. Bake 15 minutes or until filling is just set and golden around edges.

Remove pan to wire rack. Place remaining 1 tablespoon confectioners’ sugar in sieve and use to sprinkle over warm filling. Cool completely in pan on wire rack.

6. When cool, cut lengthwise into 3 strips, then cut each strip crosswise into 12 bars. To store, cover pan and refrigerate.

• Each serving: About 90 calories, 4g total fat (1g saturated), 18mg cholesterol, 90mg sodium, 12g total carbs, 1g protein.

Make It Easy to be Gluten-Free Living a gluten-free lifestyle has become much easier thanks to a wider variety of products at grocery stores and online.

Using gluten-free ingredients, you can transform your favorite recipes.

If you’re looking for gluten-free foods, start by reading the ingredient list on the food label to determine if a product is gluten-free -- or made without gluten.

Identifying gluten-free products involves more than just looking for the words “wheat,” “rye,” “barley,” “oats” or “buckwheat” in the ingredient list. Wheat also might be called durum, farina or semolina; gluten also can be found in buckwheat, additives, seasonings and flavorings. And a food originally gluten-free may come into contact with equipment contaminated by gluten, or may be processed in an area that contains gluten.

Since a food label may not be able to tell you if a product has gluten in it, looking for the phrase “gluten-free” is very important. If you see the words “gluten-free,” then you know the product should not contain gluten. Keep in mind that lists and signs do not take the place of reading a food label. Always double-check to be sure a product is gluten-free, even if that means calling the company. Finding gluten-free foods may seem like an impossible task, but once you know what to look for, shopping can become a breeze.

University of Missouri Extension) GLUTEN-FREE ZUCCHINI BREAKFAST CAKE 2/3 cups almond meal 2/3 cup sweet white sorghum flour 1/2 cup quinoa flakes (cereal flakes, not whole quinoa) 1/4 cup tapioca starch 2 teaspoons baking powder 1/2 teaspoon baking soda 3/4 teaspoon xanthan gum 3/4 teaspoon sea salt 1 teaspoon ground cinnamon 1/2 teaspoon ground ginger 1/4 teaspoon ground nutmeg 1 cup pure maple syrup or maple-flavored or plain agave syrup 1/4 cup light melted coconut oil 3 organic free-range eggs, beaten 1-2 tablespoons coconut milk, soy or rice milk 1 medium apple (Gala, Fuji, Golden Delicious or Braeburn) peeled, cored and diced 1 cup raisins 1 cup walnuts, chopped 2 teaspoons vanilla extract 1 teaspoon almond extract 1 packed cup shredded zucchini, patted dry 1. In a large mixing bowl, whisk together almond meal, quinoa flakes, sorghum flour, tapioca starch, baking powder, baking soda, xanthan gum, sea salt, cinnamon, ginger and nutmeg.

2. Add in the maple syrup, coconut oil, beaten eggs and one tablespoon coconut

milk. Beat to combine. If needed, add another tablespoon of coconut milk to loosen the batter. Add the apples, raisins, walnuts, and vanilla and almond extract.

Beat batter until smooth and slightly sticky. Add in shredded zucchini and stir by hand to combine.

3. Spoon the cake batter evenly into the lined cake pan. Wet a spatula or a knife.

Smooth the top of the cake with the spatula or knife until even. Bake in center of a preheated oven for about 30 minutes, until the top is golden and springy-firm to the touch. A wooden pick inserted into the center should emerge clean.

4. Cool the cake pan on a wire rack for five minutes. Loosen the edges with a thin spatula or knife and release the clasp on the Springform pan. Move cake to wire rack and continue cooling. This cake freezes well when wrapped tightly in plastic wrap and a layer of heavy-duty aluminum foil. Serves 8 to 10.

• Use a bandana to strain coffee if you’ve accidentally had a filter bust.

It works. I first used this tip when camping, but I have used it at home, too. • “To freshen stuffed animals, dampen a cloth with a solution of 1 cup vinegar and 3 cups water. Wipe outside fur thoroughly, being careful not to soak it. Secure in a delicates bag or tie inside a pillowcase, then put in the dryer at low heat until completely dry. Adding a fabric softener sheet for the final five minutes is nice, too.” -- D.W. in Oklahoma • Here’s a wonderful tip from Fibrenew, a leather, vinyl and plastics refurbishing specialist, on what to do if you get ink on your leather car seats: “DON’T use dish soap or hair spray to remove the marks. The degreasing agents in dish soap can permanently de-gloss and damage the top coating on the leather surface. Hair spray, another commonly recommended remedy, has alcohol in it and will ruin the surface coating on your leather.” Use a special leather-cleaning kit instead, or contact a local professional to fix it for you.

• On June 8, 632, in Saudi Arabia, Muhammad, founder of Islam, dies in the arms of Aishah, his third wife. In 610, in a cave north of Mecca, Muhammad had a vision in which he heard God command him to become the Arab prophet of the “true religion.” He began having religious revelations, which he collected as the Qur’an.

• On June 5, 1933, the United States goes off the gold standard, a monetary system in which currency is backed by gold. The Great Depression of the 1930s had frightened the public into hoarding gold. Roosevelt ordered all gold coins and gold certificates in denominations of more than $100 turned in for other money.

• On June 4, 1942, the Battle of Midway -- one of the most decisive U.S. victories

against Japan during World War II -begins. During the four-day sea-and-air battle, the U.S. Pacific Fleet succeeded in destroying four Japanese aircraft carriers while losing only one of its own.

• On June 9, 1956, one of the world’s top-selling crime novelists, Patricia Cornwell, best known for her forensic pathologist character Dr. Kay Scarpetta, is born in Miami. Cornwell’s first novel, “Postmortem,” was released in 1990.

• On June 7, 1962, the banking institution Credit Suisse opens the first drivethrough bank in Zurich, Switzerland.

The drive-through featured eight glass pavilions and a sensor on the ground that activated a light trail that directed drivers to the next available bay.

• On June 6, 1981, more than 500

passengers are killed when their train plunges into the Baghmati River in India. The rail accident was caused by an engineer who braked too hard to keep from hitting a cow that was crossing the tracks over a bridge. Seven cars derailed into the river.

• On June 10, 1979, actor Paul Newman roars into second place in the 47th 24 Hours of Le Mans, the famous sportscar endurance race held annually in Le Mans, France.
