My Little Corner

By Shannon Robin In southern Alberta the wind always seems to be blowing, and the winds of change are strong right now at Shootin’ the Breeze.

Nine months have passed since the debut edition of Shootin’ the Breeze, and our first anniversary is just around the corner.

During this time I’ve had the opportunity to meet many fascinating and inspiring people, and to attend some awesome events.

It’s been a privilege to be involved in many communities, and to share their stories.

Both Shootin’ the Breeze and our companion business, Mountainside Printing, are growing in leaps and bounds.

While this is a great thing, it also means we’ve had to make some difficult decisions after assessing all facets of both businesses.

I’m thrilled with the readership numbers for Shootin’ the Breeze, and also pleased with the amount of advertising coming in on a regular basis – despite our lack of sales staff!

While readership is strong throughout our entire distribution area, the overwhelming majority of our advertising support comes from Pincher Creek and Crowsnest Pass.

Our advertisers provide the means to produce and distribute this free publication, enjoyed by over 2,000 people each week.

Another factor we’ve had to look at is the huge amount of overtime that’s been required to produce the paper and keep up with the commercial printing.

After careful consideration, we realize that to continue providing top-notch service to our readers, advertisers and printing customers, we need to make a significant change to our distribution area.

Our plan is to narrow our coverage area to Pincher Creek west to Coleman, east to Brocket and south to Waterton, effective June 20. Our total distribution numbers will remain the same, which means additional copies will be available to the vendors who run out each week.

Personally, this is a difficult decision because I know there are many readers from Fort Macleod to Nanton who look forward to picking up their copy of Shootin’ the Breeze each week. I also feel bad that it means reducing our contract positions for deliveries.

Business decisions are seldom easy ones, and this is no exception. I feel this is a positive move, with a shift in focus to the areas where Shootin’ the Breeze has proven to have the greatest impact and the strongest response from readers and advertisers.

Focusing on a smaller area will allow us to include more stories from each community, which is tricky to manage with our current coverage area.

We’re growing in all aspects of our operation – readership, advertising, online presence and the print shop. Streamlining the coverage area, while maintaining the number of papers distributed, will allow us to continue growing and providing the best possible service to our readers, advertisers and customers.

I can’t say thank you strongly enough or warmly enough to everyone who has embraced our effort to share the good stuff.

I hope our “regulars” in the affected communities will continue to shoot the breeze with us online, where the paper is receiving thousands of page views per week. You’ll always find us at www.shootinthebreeze.ca .

The Breeze Mailbox Pincher Creek inspires national effort!

As a result of the success of the Hank Planger Community Playground project in 2010 and 2011, Pincher Creek has been selected to be featured in a documentary that is intended to inspire community action across Canada. We were one of five Let Them Be Kids projects chosen out of 140.

The film is part of the Let Them Be Kids campaign to promote local community action and improvement across Canada. Our story has made an impression on others. We remain the biggest Let Them Be Kids project to date!

The documentary will be widely distributed, with over 10,000 DVD copies of the film being sent to every local government and school board across Canada. The film is also being entered in a number of major film festivals across Canada and the United States.

You are invited to participate in a sneak peak event and be among the first to see the movie, Sunday, June 10 at 2 p.m. in the Dale Wentz Memorial Gym at St. Michael’s School in Pincher Creek.

Following the event we will have a volunteer fair where volunteer opportunities will be showcased and individuals will be able to see how they can get more involved in our community. We invite any person or group to participate. To finish off the afternoon we will have a free beef-on-a-bun supper.

Gathering celebrates 25 years

Popular local singer Trevor Panczak heads the evening lineup June 15, and crowd-pleasers The Travelling Mabels round off the June 16 feature entertainment, at the 2012 Pincher Creek Cowboy Music and Poetry Gathering. The event showcases Alberta’s rich western heritage in music, storytelling and traditional western poetry.

Celebrating its 25th successful year, the Gathering will offer over 50 entertainers from Canada and America in two venues at the Agricultural Complex at the west end of Pincher Creek. There will be horsemanship demonstrations, too, at the rodeo grounds, and absolutely guaranteed is a down-home weekend of great family entertainment and good fellowship.

On the evening of Thursday, June 14, Gathering-goers can get to know each other by telling tall tales around the campfire on the banks of the Pincher Creek, and with an open mic session in the Horseshoe Pavilion.

On Friday, the Gathering begins in earnest, with all-day entertainment from 10 a.m. in the Community Hall and the Horseshoe Pavilion, and a terrific selection of artists, artisans, craftsmen and vendors in the Horseshoe Pavilion. supper, followed by the evening’s featured entertainment at the Community Hall with Trevor Panczak and other great western entertainers. We follow up with a western country dance to the music of Phil Lethbridge and his band, The Westwinds.

Saturday morning at 10 it all starts again, with The Travelling Mabels heading up a fabulous selection of western entertainers. The unique, custom-made Gathering buckle will be auctioned on Saturday evening, and for the ladies there’s a custom-made pair of silver earrings.

Both items feature the Gathering’s threecowboys logo. Also to be auctioned is our 12-by-18-inch full-colour poster, signed by all the entertainers. After the auction, dance the night away again to traditional western music.

Sunday begins with a pancake breakfast, followed by Cowboy Church in the Horseshoe Pavilion, and the last chance to browse the booths of the craftsmen and artists in the pavilion and make last minute purchases. The weekend is completed with a fun ranchers’ rodeo specially for kids and their families. With dry camping on-site, plenty of hotels in town, and lots to do in the surrounding area, the 25th Pincher Creek Cowboy Gathering is a great way to spend Father’s Day weekend.

He collected memberships and donations which raised $100,000, plus an additional round of donations from builders, contractors and companies contributed another $100,000. He also helped secure provincial grants for another $116,000 to fund the building of the centre.

“It was well worthwhile,” he said. “It’s used all the time, sometimes two or three times a day. I’m well satisfied it filled a need in the community.”

A lifelong resident of the Pincher Creek area, John owned the Lundbreck gas and convenience store for 14 years until his retirement.

Although he said he has “slowed down,” he still participates in the woodworking shop at the lodge, where goods are created for sale at local craft sales and fairs.

Nominees are evaluated based on their impact on seniors and the community; the need for the service they provide; and the measure of diversity, quality and originality in their service.

“It is so important to celebrate the commitment and dedication of the many Albertans who support seniors,” said Fred Horne, minister of health. “Every single day, people around our province remind us of the incredible volunteer spirit present here in Alberta.”

Award recipients will be honoured at a special celebration today, as part of Seniors’ Week.

Her collection includes music by John Wort Hannam, a Fort Macleod resident, Scott Nolan from Winnipeg, and Sarah MacDougall, who hails from both Sweden and Whitehorse and is described by Pam as “very rootsy and lovely.” Add the Crooked Brothers from Winnipeg and Steve Coffey from Vulcan, and that rounded off Pam’s top five for the day.

Students cook up medal-winning meals

By Rachel Miller Matthew Halton High School in Pincher Creek boasts an impressive commercial kitchen, and has now produced more than just great food.

In April, Caelan Taylor, 14, Yea Nee Shin, 18, and Alex Oliver, 16, after 100 practice hours in the kitchen, entered the South West Regional Skills Canada Competition in Lethbridge.

Caelan and Yea Nee worked as a team and were required to prepare a three-course meal in four hours. This consisted of an appetizer of minestrone soup, a main entree of beef rouladen, duchess potatoes, espagnole sauce, braised red cabbage and steamed broccoli, and a dessert of chocolate mousse. They used 12 recipes for their meal which included garnishes.

They competed against seven other teams from southern Alberta.

Yea Nee and Calean won bronze medals, and also received paring and chef knives, piping bags with tips and other garnishing utensils.

“When you have a partner, you can help each other, talk it out,” says Caelan.

Alex was required to make an apple pie, a decorated sponge cake, muffins and cookies in the same amount of time during the baking competition. Although he finished just out of the medal standings, his feat was no less impressive given the short amount of time all three students were given to prepare for the competition.

Typically, only gold medal winners are asked to participate in the Provincial Skills Canada Competition in Edmonton but, due to some good luck, bronze medalist Caelan was asked to compete. He was given very little notice – only five days to prepare – and practised 10 hours a day, every day, before the competition.

“It was exhausting,” Caelan says. “Sometimes I wasn’t even paying attention anymore. I fell apart and often the practices were a disaster.”

Caelan needed to learn Yea Nee’s portion of the menu to be able to complete the same meals they presented in regionals, but this time doing it alone.

The provincial competition was a twoday event, May 17 and 18, during which the competitors had to do six precision cuts on vegetables, brunoise, batonette, concasse, paysanne and small dices, make chicken stock, espagnole sauce and present eggs Benedict for two. They

were also required to “shop” for their own groceries on-site, making sure not to buy too much or too little of any one item.

Adding to the pressure were the watchful eyes of the judges, who measured the amount of waste from each of Caelan’s meals, how clean his station was and the order in which he organized his refrigerator. “If even one inch of a carrot was wasted, you were docked marks,” says Caelan.

As well, Caelan was cooking in front of a live audience. Thousands of people passed his station to watch the competition and were a mere three metres away. From among 21 other competitors, Caelan was presented with the bronze medal.

“I would definitely do the competition again,” he says. “It was a great experience.”

Caelan was born in Fiji but has lived in Canada for several years. He hopes to go into hotel management after high school, but also says he might be a chef.

All three students are taught by Yoda Taylor, who instructs the home economics class at Matthew Halton High School.

Wyatt Charles Olson Wyatt Charles Olson, age 24, passed away May 23, 2012 near Bowden, Alberta.

Wyatt was born on July 24, 1987 at Lethbridge, Alberta to Shay and Theresa (Wagner) Olson.

Wyatt leaves behind his love, Stephanie Driver, their unborn child, and Stephanie’s family; his siblings Antonia Olson (Mike Koszta), Tyler Vredegoor (Brandice) and Greg Vredegoor (Selena); his parents, Shay and Sherry (Jacobs) Olson; his grandparents Dennis and Rose Olson, Tony and Olga Wagner, and Winston and Iris Jacobs; his Auntie Caroline (Don) and cousins Jesse and Justin Kloot; many relatives and a long list of friends.

Wyatt was predeceased by his mother, Theresa, in 1993.

Wyatt enjoyed fishing, hunting and everything mechanical. He spent all his free moments repairing his “intersmashable” and his array of Dodge trucks.

Wyatt taught us to enjoy life and to find joy in everyone and everything in life’s journey. He was always full of mischievous anecdotes and will be remembered for “that smile” that left you wondering what he was cooking up next.

Wyatt worked as a carpenter for Hilbert Construction and lately enjoyed his work for Central Crane Services in Olds, Alberta.

Visitation services were held on May 26 at the Pincher Creek Funeral Chapel. A celebration of Wyatt’s life was held at the Cowley Community Hall on May 27. Rev. Brent Woodard officiated and memories were shared by family and friends.

Interment was on May 28 at the Coaldale Catholic Cemetery, where Wyatt was laid to rest beside his mother.

Pallbearers were Matt Sanderson, Scott Ogloff, Dustin Damgaard, Jordon Leveene, Aaron Layton and Brent Afdal. Honorary pallbearers were Norman Hilbert, Randy Hilbert, Vince Gray, Tanner Sinclair and all others that shared in Wyatt’s life. The eulogy was given by Tony MacDonald.

A tree has been planted in Wyatt’s memory. Those wishing to remember Wyatt may consider making a donation for his unborn child.

The earnings of about 26,000 Albertans will rise September 1 when the province increases the general minimum wage by approximately 3.5 per cent, or 35 cents per hour.

The 35-cent increase to the general minimum wage is based on a new formula approved in 2011 that is set to take effect this fall. The formula links possible increases to an average of the annual increases in Average Weekly Earnings (AWE) and the Consumer Price Index (CPI) in Alberta. In the past year, AWE rose 4.56 per cent in Alberta, while the CPI rose 2.44 per cent. The average of 3.5 per cent equates to a suggested increase of 33 cents per hour. For simpler calculations the increase has been rounded up to 35 cents per hour.

Alberta’s general minimum wage will rise from $9.40 per hour to $9.75 per hour. There will be no change to the liquor server minimum wage, which will remain at $9.05 per hour.

“Minimum wage earners are an important part of our workforce and are employed in many different settings.

Air lift rescue last weekend NEWS RELEASE At 5:30 p.m. June 2, Pincher Creek Fire Rescue and RCMP were notified that a climber had fallen and was injured on Victoria Peak, 20 kms south of Pincher Creek.

A 50 year old male from Calgary was climbing the mountain, and after reaching the summit was descending when he fell crossing a snow filled area, sliding approximately 20 metres and striking a tree. He receive serious but non life-threatening injuries to his chest, and was unable to continue on his own.

Pincher Creek Fire, Rescue and Search and Rescue members were

able to hike into the site and stabilize the victim, and due to the rugged terrain and high elevation, Alpine Helicopters public safety helicopter from Canmore was used to transport rescue personnel onto the mountain and sling the patient out below the helicopter.

The victim is being treated in hospital for his injuries, and is expected to recover.

In the country of Illea, the caste you are born into decides your fate. So when the once-ina-lifetime opportunity is given to move up to fabled One status by marrying the prince of the realm, thousands of girls across the country jump to compete in the Selection.

Though pushed by her family to enter, America doesn’t really want to -- she’s fine with her Five existence and loath to leave her secret love, Aspen, a forbidden Six. So of course America is chosen as one of the initial 35 contestants, and instantly plunged into the nation’s biggest reality show, “The Bachelor” for the royal set, with all the egos, catfights and sparkly dresses that entails.

Estranged from Aspen and ensconced in the palace far from home, America is simply happy to make a few friends, avoid her enemies and enjoy having enough to eat for the first time in her life.

She doesn’t think she stands a chance in this contest, not that she cares much; she has no desire to be a princess. But that’s before she actually meets Prince Maxon, and discovers that he is far more than the stiff drip he always seemed on TV. And before Aspen shows up at the palace, determined to pick up where they left off.

Although “The Selection” falls into the currently red-hot youngadult dystopia category, it is on the lighter side of the genre. Illea’s society is far enough into the future to have relegated our countries to their history books, but technology and style is approximately analogous to the present day.

The characters are the most interesting points, particularly feisty but compassionate America and the genuinely gentlemanly Maxon. Good contracts might fail because the defenders’ cards are divided unfavorably, while bad contracts might succeed because the defenders’ cards are favorably located. However, good play sometimes can overcome a bad lie of the cards.

Consider this deal where West leads the king of diamonds against four spades.

Declarer has no way of knowing at this point how he will eventually fare. The outcome depends mostly on how the missing cards are distributed.

Thus, if the trumps break 2-2 and either defender has a singleton or doubleton queen of hearts, declarer makes 12 tricks. If the cards are divided somewhat less favorably, he finishes with either 10 or 11 tricks; and if the cards are badly stacked against him, the contract might fail altogether.

Declarer starts by winning the diamond lead with the ace and plays the ace of spades, learning to his horror that East has two sure trump tricks. The contract

now seems doomed, since South apparently must lose a diamond and, unless he gets very lucky, a heart as well.

But South carries on, hoping to overcome the 4-0 trump division. He begins by conceding a diamond, planning to crossruff thereafter. West takes the diamond with the queen and shifts to a club. Declarer wins with dummy’s ace and ruffs a club. He then trumps a diamond in dummy, ruffs another club, leads a heart to the king and cashes the heart ace.

South next ruffs the jack of clubs with the seven of spades as East helplessly follows suit, and so winds up scoring 10 tricks even though the enemy has four apparent winners. A likable young TV reporter in small-town Alaska (John Krasinksi) finds out about a family of whales stuck under the ice, cut off from the ocean. What starts as a local news piece becomes a story watched by the whole nation as an activist (Drew Barrymore) and many others (it’s a big cast) get involved.

Krasinski brings his “Jim from “The Office” charm, and helps keep the movie light. It is, after all, a movie set in the real world -- where saving the whales requires help from such cynical sources as politicians and oil executives. The balance between reality and feel-good is impressive, and successfully delivers the warm, fuzzy feeling.

He has many funny friends whom he casts in his movies, and they usually give great performances. His works usually fall in with the absurd, subversive and cultish, but this film is aimed at a slightly broader audience.

“Wanderlust” (which he directed and co-wrote) isn’t his finest work, but it certainly produces laughs.

“Project X” (R) -- A handful of middle-class suburban teenagers throw a mega-huge party, and film the whole thing. It’s not a wild premise. The most audacious thing about it is that the movie uses the found-footage perspective, and expects that to bring this non-story to life. The result is 87 minutes of mean-spirited adolescent humor. The characters and filmmakers have seized upon the tenets of repugnant high-school mentality: women are sex objects sent to earth to frustrate young men; anybody different must be ridiculed; and everything is a competition.

Homemade Power Bars Are Energy Snack Neighborhoods hum and bustle with an extra dose of activity this time of year, and some households, like the Gustafson’s, seem to be especially on the go -- make that “on the run,” but in a good kind of way. Watching the action from the sidelines, I can’t help but be inspired by this fit family. All four kids play hockey, baseball/softball and tennis, and two play soccer. Toss in the parents, and biking trumps driving the car whenever possible.

No wonder mom Angie always has her favorite chewy power bar recipe handy for easy reference. She and the kids enjoy making the tasty snack that is chock full of healthy ingredients, including flaxseed, wheat germ and raisins. Reese’s Pieces are added to the mix, but she controls the amount.

“The original online ‘Ultimate Power Bar’ recipe, which has been passed from friend to friend, comes from Lunds, our neighborhood market where you can easily find all the ingredients,” she says.

“But, like most recipes I prepare, I tweak the ingredients to suit our tastes. The bars are ideal for school lunches, picnics and rest stops when we bike around town with our cycling club. I don’t know a kid who doesn’t like them -- even the picky eaters ask for the energy snack.”

DEAR DR. DONOHUE: I am an 80-year-old male whose annual physical exam was good. My wife and I have a good sex life. We’ve been married 61 years.

However, my PSA rose to 5.7. My family doctor sent me to a urologist, who suggested a biopsy. The urologist said my prostate gland is normal for my age and had no hard spots or lumps. My dad died at 87 due, in part, to prostate cancer. A brother also had difficulties. I read that at my age, I should enjoy life without such procedures. Your opinion, please. -B.M. ANSWER: What to do when the prostate specific antigen (PSA) blood test is higher than normal is a controversial subject. Every year, about 192,000 men are diagnosed with prostate cancer. Close to 70 percent of those cancers are low-grade, meaning they don’t pose a serious threat to life. Such cancers, depending on the man’s age and his health,

may not require any treatment other than scheduled monitoring.

One of the ingredients that goes into the mix for making a decision for “active surveillance” is what’s seen on the biopsy. The pathologist examining the prostate tissue discovers if any cancer is present and assesses the cancer’s stage and its potential to be an aggressive cancer. If the cancer is in its early stages and if its appearance is one that’s not threatening, then the decision for treatment is something that can be discussed with the doctor. Quality of life is as important as extension of life. However, I believe you should have the biopsy.

It has some rare complications, but it provides information not obtainable in any other way.

You are a very young 80-year-old.

You have no other health problems that might shorten your life. You have a family history of prostate cancer. If the biopsy shows a low-grade cancer, then talk to the doctor about your wishes. One of those wishes could be active surveillance.

Salmon Sliders This recipe is a fun and creative way to use up leftover wine. These bite-sized sandwiches also make a great party snack to complement your favorite bottle.

6 hot dog buns, toasted 1 pound skinless salmon, cut into chunks 2 green onions, chopped 3/4 cup wine 2 tablespoons mayonnaise 1/3 cup mayonnaise, for sauce 1/4 teaspoon salt 1/4 teaspoon pepper 1. In food processor, pulse 2 toasted hot dog buns into crumbs; transfer to bowl.

Pulse salmon until chopped.

2. Mix with crumbs, green onions, 1/4 cup wine, 2 table-

spoons mayonnaise, salt and pepper. Form into 12 patties.

3. Bake on foil-lined pan in 425 F oven 10 minutes or until cooked through. In saucepan, boil 1/2 cup wine on high until reduced by half, stirring; chill slightly.

4. Toast 4 more buns, cut into thirds. Whisk wine into 1/3 cup mayonnaise; serve with patties on buns. Makes 12 sliders.

1 cup peanuts 1/4 cup coconut milk

HOLLYWOOD -- Everyone keeps asking why Hollywood studios insist on remaking films that were perfect the first time around? The answer is ... studios can’t make money on titles they own unless they can pull new projects out of them! So brace yourselves for the onslaught coming our way. First we’ll get a remake of “Red Dawn” with Chris Hensworth (riding high as Thor in “The Avengers”), Josh Hutcherson (who broke through with “The Hunger Games”) and Jeffrey Dean Morgan, due out Nov. 21. Next is “Carrie” on March 15 with Chloe Grace Moretz (Nicolas Cage’s daughter in “Kick Ass”) in the title role, with Julianne Moore as her mother (in the role that earned Piper Laurie an Oscar nomination).

On Aug. 19 comes the remake of “Robocop” starring 32-year-old Swedish actor Joel Kinnaman (nominated by the Screen Actors Guild as best actor in “The Girl with the Dragon Tattoo” and opposite Denzel Washington and Ryan Reynolds in “Safe House”). Also look for remakes of “Valley Girl” (as a musical!), “Poltergeist,” “War Games” and the l974 Charles Bronson classic “Death Wish.” Remakes are rarely as good as their originals because ... they don’t make films like that anymore.

Tom Cruise’s next film is “One Shot,” from a novel in the bestselling Jack Reacher series by Lee Child. Cruise plays Reacher and stars with Robert Duval and Richard Jenkins. The film is due out Dec. 21. Cruise, too, is jumping on the remake bandwagon with new versions of “The Magnificent Seven,” “Top Gun” and “A Star Is Born” (with Beyonce). Cruise is back on top thanks to his latest film, “Rock of Ages.”

If your dad loves spicy foods, a signature homemade hot sauce is the perfect gift. You also can start a tradition of presenting him with a new bottle of custom-made hot sauce each year.

The trick to the perfect hot sauce is using a combination of peppers with a balance of sweetness, fruit and heat. Fruity peppers like the Aji Amarillo Chili, the Mexican Mirasol Pepper or the Yellow Peruvian Chile (which is a deep yellow, sometimes orange, 4 to 5 inches long) have an intense spice with a fruity flavor. A Mustard Habanero pepper retains the heat found in many Habanero varieties but has fruity overtones. This pepper is dark-yellow with hints of orange and a pointed tip.

Chile peppers like poblano, New Mexico or Anaheim are a mix of fruity, mild and spicy.

Certain types of peppers like the Caribbean Red Pepper and Scotch Bonnets add to the hot sauce the heat that will make your Dad’s mouth water, his ears pop and his body temperature rise. Combining different types of peppers with vegetables will add sweet, fruity and flavorful notes to your homemade hot sauce.

Using your computer or supplies from the arts-and-crafts store, create a special label for Dad’s custom “Hot Stuff Hot Sauce” using the recipe below.

HOT STUFF HOT SAUCE 3 tablespoons extra-virgin olive oil

1 large yellow onion, sliced 2 teaspoons salt 2 large jalapeno peppers, diced 2 medium chile peppers, such as poblano, New Mexico or Anaheim, diced (see Tip below) 2-4 habanero or other small, hot chile peppers, stemmed, halved and seeded (see Tip) 4 cloves garlic, diced 1 large carrot, tip and root end removed, chopped 1 pound tomatoes, diced (about 3 cups) or 1 (28 ounce) can fire-roasted diced tomatoes 1-3 teaspoons sugar or stevia 1 cup distilled white vinegar or apple-cider vinegar 1. Heat oil in a large saucepan over mediumhigh heat. Add onions and salt, and cook for 3 to 5 minutes, until onions begin to soften.

Add in peppers, garlic and carrots. Cook, stirring, until onion begins to brown, about 3 to 4 minutes. (Note: This should be done in a very well-ventilated area! The fumes from the cooking peppers are strong, so do not lean over the pot, or you may inhale the acrid steam.)

2. Reduce heat to medium. Add tomatoes and sugar or stevia. Bring mixture to a boil, then return heat to medium. Continue to cook, stirring occasionally, until the tomatoes begin to break down, about 15 to 20 minutes.

3. Remove from heat and allow mixture to steep until it comes to room temperature.

Carefully transfer pepper mixture to a food processor or blender. (Use caution when pureeing hot ingredients.) If you’re using a blender, place the lid on loosely and cover it with a dishcloth to allow any steam to escape. Puree mixture for 15 seconds. With

food processor or blender running, add vinegar through the feed tube or opening in the lid in a steady stream.

4. Puree until smooth. Set a fine-mesh sieve over a medium bowl; pour the pureed mixture through the sieve, gently pushing on the solids with a wooden spoon to extract all the liquid. (Discard solids.) Let the sauce cool to room temperature, about 1 1/2 hours. Taste and season with more salt, if necessary.

5. Transfer hot sauce to a sterilized, pint glass jar or bottle and secure with airtight lid.

Refrigerate. The hot sauce tastes best when aged at least 2 weeks. Shake bottle to recombine the liquid before using. Can be stored in refrigerator up to 6 months. Makes 1 pint.

Tip: The membranes that hold the seeds are the spiciest part of chile peppers (that’s where the capsaicin is). The seeds pick up some spiciness by association. You can adjust the heat of the peppers and the spiciness of the hot sauce by using some or all of the seeds along with the flesh of the peppers. Be sure to wash your hands thoroughly after chopping hot peppers, or wear rubber gloves.

Pets in Distress DEAR PAW’S CORNER: Recently, my cat “Clark Gable” got very ill -vomiting frequently and lethargic.

I had no idea what was wrong, so I called my veterinarian. The vet’s assistant talked me through some important steps that I didn’t know and wouldn’t have been able to accomplish in my panicked state, such as looking at what C.G. was vomiting up and looking for possible sources of poisoning in my apartment. She advised me to bring him in imme-

diately along with a sample of the vomit (gross, right?) and a couple of possible items he could have eaten.

• On June 11, 1509, King Henry VIII of England marries Catherine of Aragon, the first of six wives he will have in his lifetime. When Catherine failed to produce a male heir, Henry divorced her against the will of the Roman Catholic Church.

• On June 15, 1877, Henry Ossian Flipper, born a slave in Thomasville, Ga., in 1856, becomes the first black cadet to graduate from the United States Military Academy at West Point, N.Y. Flipper was never spoken to by a white cadet during his four years at West Point.

• On June 16, 1884, the first roller coaster in America opens at Coney Island, in Brooklyn, N.Y. Known as a switchback railway, it traveled approximately 6 mph and cost a nickel to ride.

• On June 12, 1942, Anne Frank, a young Jewish girl living in Amsterdam, receives a diary for her 13th birthday. A month later, she and her family went into hiding from the Nazis in rooms behind her father’s office. Anne’s diary, detailing their two years in hiding, was published in 1947.

• On June 14, 1951, the U.S. Census Bureau dedicates UNIVAC, the world’s first commercially produced electronic digital computer. UNIVAC, which stood for Universal Automatic Computer, used thousands of vacuum tubes for computation and was the forerunner of today’s digital computer.

• On June 13, 1966, the Supreme Court hands down its decision in Miranda v.

Arizona, establishing the principle that all criminal suspects must be advised

of their rights before interrogation. The roots of the Miranda decision go back to 1963 when Ernesto Miranda confessed to a crime and later recanted, unaware that he didn’t have to say anything at all.

• On June 17, 1972, five of President Richard Nixon’s re-election employees are arrested for burglary in the Democratic National Committee headquarters at the Watergate Complex in Washington, D.C. An investigation unveiled a scheme of political sabotage and espionage designed to discredit Democratic candidates. Equipment used during the burglary had been borrowed from the CIA.
