My Little Corner

By Shannon Robin I hope everyone enjoyed the Thanksgiving weekend and found many things in life to be thankful for.

Personally, I’m very grateful for my wonderful life.

I work hard, play hard, and share all of this with my awesome family and friends.

I shared this message on Facebook the other day and was glad to have this tool to get a quick message out to many people at once who are important to me.

There were personal conversations as well, but the Internet can be a quick way to get the word out.

I use Facebook and Twitter to post links to stories and updates on the Shootin’ the Breeze website, and have found this to be an effective way to promote community events.

The home page of our website has a newsfeed column, and this is where I post press releases that are more “newsy,” along with individual posts of stories from the print edition and a daily calendar of events.

It was an automatic process for me, last week, to proceed as usual when the news releases from the Municipality of Crowsnest Pass were issued.

I’m quite sure most know what I’m talking about here. The first story announced the release of Blairmore fire chief Jamie Margetak. Subsequent stories confirmed that firemen from Coleman, Hillcrest, Bellevue and Blairmore had turned in their pagers in protest.

As far as the presentation of news releases goes, I don’t edit anything with the exception of the odd spelling error. It says right on the post that the information is unedited.

Choosing what to use and what not to use is always a challenge, though. If the press release is simply one political party attacking another, I won’t post it. This is simply because I try to maintain a positive tone as much as possible, even with the hard news.

Because I try to present news releases relevent to folks in our area, not all of them are positive. You’ll see posts of people missing in Alberta because you never know who knows or has seen something. Most of the missing-persons stories have had happy endings, but not all of them.

I stay away from negativity and sensationalism as much as possible, but I can’t close my eyes to controversy that’s of community concern.

So, back to Crowsnest Pass current affairs, I’ve

simply tried to present the information as it becomes available without including any opinion of my own.

There are many, many opinions out there! Some claim council is pure evil and is damning the community forever. Each negative event prompts a call for resignations, and frustration is coming through loud and clear. It seems the Thunder in the Valley cancellation has left an open wound, and every following event has added salt and caused flare-ups.

I don’t know the mayor, but I do know a couple of the councillors, and neither of them strikes me as being particularly evil in any way.

I also know some thoughtful, well-spoken people who support the changes that have come about in the past year. They may not support all that has happened, or how things have happened, but they agree things needed to happen.

Don’t get me wrong, I’m not belitting any of these things! I’m acknowledging that there are explosive issues on the table right now and hoping people will take the time to learn both sides of the story.

Change isn’t easy, regardless of the magnitude or topic, and anger is a typical reaction. While one group is actively protesting, others are reflecting and wishing to let council know they support the democratic process and appreciate the difficult choices that have been made.

With social media, people feel a sense of anonymity and say things they might not say out loud. From comments I’ve been reading, many are people who will stand behind what they’ve said, but there is also confusion and misunderstanding within some posts.

It’s not my place to judge, and I’m not, but I am concerned and interested. My husband owns a business in Coleman, we both have clients from the area, and our family reciprocates by leaving dollars in the municipality. Because we are outsiders, it might be a little easier for us to stand back and look at the situation from a different point of view and remember that somewhere in all the muddy water there are always at least two sides of a story to consider.

How this will play out remains to be seen.

And, to leave things on a brighter note, I hope you’ll use social media to help the youth of Crowsnest Pass do something positive. To move forward they need your help, so please take a moment to check this out and give them your vote of support: www.avivacommunityfund.org/ideas/acf14754 .

Our goal was to raise more than $3,000. We did, so I baked homemade cookies for the entire school!

Since Canyon students began participating in the walk in 1999, students have raised $34,465.49.

48 24 Hours for Life update X

The Pincher Creakers oldtimers hockey team recently discussed where we are at for the 48 for Life fundraising game. We do not have enough players to play for 48 hours. We are cutting back to a 24-hour game instead.

We have great support for the event from the community, but are having a hard time getting players. They are starting to sign up, but we don’t have any more time to wait and see.

The plan for the game is staying the same. We are playing from 7 p.m. on Friday, Oct. 11 to 7 p.m. on Saturday.

The Rotary Club of Pincher Creek is doing a breakfast Saturday morning. The staff of Kootenai Brown Pioneer Village is serving supper Saturday night. The curling club is running the bar for us.

Minor hockey is running a concession during the day.

We are hoping to fill up the arena for the final two hours of the game.

We will have draws for some donated gift certificates, and hopefully a puck drop or 50/50.

We are still accepting players age 20 and up to try and fill up our roster.

Donations for the game are still being accepted, too.

Functional fitness is fun!

They had a blast playing old-fashioned games like tug-of-war that use functional movement to build strength in a fun way, laughed during a Zumba workout and perhaps even sweated a little during a short workout.

Paula Szaroz was even more excited to be re-introducing Fusion Health and Fitness as CrossFit Pincher Creek to her patrons and interested newcomers.

This is more than a simple name change, as it takes training and certification to become a CrossFit affiliate.

The CrossFit movement has been growing in popularity over the past six years, since the CrossFit Games in California became a national event. While elite athletes like Sidney Crosby endorse this style of fitness, anyone can do it, and all are able to participate to the best of their ability.

The games are open to everyone, with top local placements advancing to regional, national and international competitions.

“Someone from Pincher Creek could end up at nationals, just like Heather Gillespie of Lethbridge did,” says Paula.

The little bit of competitiveness at the local level is good for everyone, whether doing modified or advanced workouts.

Both Paula and her husband, Jason, are certified as Level 1 CrossFit trainers. They enjoy the aspect of family and community that has become part of their business, and their son, Easton, has been joining them at the gym since he was only four days old.

Sack races and tug-of-war matches were followed by a Zumba session and a short WOD (workout of the day) before breaking for a barbecue. Participants of all ages shared in the sweat, laughter and fun. movements like lifting, pushing and pulling that we use in everyday life.”

Classes are one hour long and focus on mobility and strength. Every workout is different and, when planning programming, Paula tries to hit all three energy pathways – aerobic (cardiovascular exercise), anaeorbic (weightlifting) and ATP-CP (explosion energy).

“Rather than putting your body on a machine, your body is the machine,” Paula says. This is evident when you look around the gym, with lots of wide-open space to run, jump, lift and pull.

Zumba, yoga, boot camp and typical fitness machines remain part of the overall offerings of CrossFit Pincher Creek, but Paula’s primary focus is on CrossFit and the health benefits it brings to her clients.

“It’s not a fad, like a spin or Zumba class,” she says. “They all have science behind them, but this is the only one where you usually use all three types of energy in every workout.”

Athletic therapist Jill Bruder also has a keen interest in functional movement. “Your body becomes more efficient and learns to use the least amount of energy possible when you do repetitive workouts like 20 minutes on a treadmill,” she says.

This explains why many of us reach a plateau. The wide variation in CrossFit workouts eliminates this issue while keeping your interest and motivation levels high.

“On the first day you might feel like you’re going to die, but after five days it’s all good,” Jill adds with a grin.

As well as officially launching the gym last Friday, Paula and Jason also launched their website, www.crossfitpinchercreek.com .

Here you can learn what the fitness centre has to offer and more about coaches Paula, Jason, Jill, and Jacey Harris. There’s a bit of lingo to master, and the WOD (workout of the day) is posted on the site and shared on Facebook every day.

CrossFit is a full-service gym where, Paula says, you can come in and get anything you want.

“The bottom line is that everyone is working their hardest at the level of intensity that’s right for each individual,” says Allison. “You really do see improvements in yourself that are astounding, and that’s inspiring.”

Discovering ancient pines close to home When I was in Grade 11, I was lucky enough to go on a school tour to France. One thing that sticks out in my mind is a place we went where there was a Roman aqueduct moving water over a deep ravine. The aqueduct was still functioning, even though the civilization that created it was long gone. Near the aqueduct was a gnarly olive tree that the tour guide said was over 2,000 years old. The tree reminded me of the story of Rumpelstiltskin, who in my mind was a gnarly fairy-tale character himself.

Living in the Pincher Creek area, I’ve discovered some ancient trees and forests as well. Some of our Douglas fir, limber pine and whitebark pine forests seem to be pretty old; I’ve heard figures of several hundred years. One limber pine in Oregon has been documented as 2,000 years old.

A forest stand on a windswept rocky ridge seems unlikely, and yet I’ve seen many in my travels through the landscape here. Limber pine forest looks very different from aspen stands or lodge-pole pine forests on other, more sheltered soil types. Often, I find limber pine on the rockiest, windiest locations, which might explain the gnarly, stunted appearance of this species.

Limber pine (Pinus flexilis) is member of the family Pinaceae. It has also been called Rocky Mountain white pine and southwestern white pine. Both the Latin and common names for this species are apt, as the wood of limber pine is quite flexible and able to withstand heavy winds, ice and snowpack.

Range and habitat – Limber pine is found in the foothill and mountain regions of North America. In Canada it is found in British Columbia and Alberta. It is also found in small patches in the western United States, and parts of northern Mexico. It is often associated with the treeline, either in association with other species like lodge-pole pine, or on its own.

Limber pine can occur as a single tree or in relatively open groups. It seems to prefer drier, rocky soils at higher elevations.

Tidbits – Limber pine is on the species watch list for Alberta, due to relatively few occurrences and/or vulnerability to extirpation from other causes. * The most famous limber pine tree I know of in our area is the Burmis Tree, which died in the 1970s and was estimated to be 650 to 700 years old. Its skeleton is still standing near Highway 3 as you drive to Crowsnest Pass. * Southwestern white pine is sometimes referred to as a variety of limber pine, or a separate species. Its growth form is usually larger than limber pine.

Description – Limber pine is a small to medium pine species. It can grow up to 20 metres tall in optimal conditions, and can be multistemmed. However, I haven’t seen one that tall in the Pincher Creek area. Most of the trees I’ve seen are on exposed sites and much shorter. Some documentation indicates that most of the mature trees in our area are around three metres or less in height.

Young trees are fairly dense and pyramidal in shape. Mature trees tend to be more flat-topped. The roots are relatively deep and quite spread out.

By Brenda Shenton Staff and students of Canyon School in Pincher Creek gathered last Thursday for an assembly, in part to celebrate the retirement of Clara Reimer.

After 40 years of working in both Central and Canyon School libraries, Clara has decided to retire. She says, “In 1972 I decided I would come to Pincher Creek for one year, and started working in the library at Central School because I liked kids and I liked books.”

Shortly after starting at Central she moved to Canyon and has been there ever since. She stayed in the library because “the books are still there and the kids are still there – I can’t get enough of kids and books.”

She said to last Thursday’s assembly of Canyon students, “It has been fun getting to know all of you.” She recognized some of the current staff as former students. She was presented with gifts and cards, and principal Carole Goodreau gave best wishes on behalf of the school.

By Toni Lucas Harvest Fest 2012 will be held Oct. 19 and 20 at Kootenai Brown Pioneer Village in Pincher Creek.

This is designed to be a family-friendly event that will appeal to all ages.

Two new aspects of the event will focus on photography. Della Oosterlee of Dellight Images will be on hand for informal come-and-go sessions on optimizing digital photography. This allows anyone the chance to sharpen skills and learn new techniques for improving photos. If some aspects of digital photography have you stymied, this is your chance to ask an expert. Dellight Images will be available both days of Harvest Fest – Friday from 11 a.m. to 2 p.m., at the same time as the Pioneer Market, and Saturday from 10 a.m. to 4 p.m.

There is also the My Best Fall Photo contest.

With the stunning beauty of Alberta during the magical time of fall, there is much to choose from.

To enter the contest, please bring your eight-by-10 photo to the front desk by Oct. 17. There is a $2 fee per entry.

Photo contest entries, along with colouring contest entries, will be displayed in Pioneer Place, the entrance building of the museum.

To enter the colouring contest you must be in Grade 6 or younger, and we will be distributing the pictures through Canyon, Livingstone and St. Michael’s schools, or you can contact the front desk at the museum. It is free to enter, and a lot of fun to see what the kids make of their projects.

Saturday, Oct. 20, the grounds will be open from 10 a.m. to 4 p.m. with a special entry fee of $2 per person. We will welcome back the donkeys, ducks and sheep for the day, and will have the colouring and photo contest display, rope making, a harvest straw maze, crafts and music. Our partners, Metis Association 1880, will hold a snowshoeing trapline challenge at 11 a.m. and 1 p.m., and Early Childhood Mapping Coalition will host the “grain pit” filled with canola seed. Concession will be available on Saturday.

It is with immense sadness that we announce the passing of Cara Grace Smith (nee Kinsman), who succumbed to cancer on Oct. 1, 2012 at the Crowsnest Pass Care Centre, at the tender age of 59 years. She left this world with grace and dignity, and we take comfort in knowing her suffering has ended.

Cara was born on Feb. 1, 1953 in Halifax, N.S. to loving parents, Donald and Norma Kinsman. She and her siblings were raised with a respect for family, hard work and a compassionate nature. Cara grew to be a lovely young lady and entered into marriage to be further blessed with two children, whom she cherished dearly. Her family’s happiness was her heart’s desire and she tirelessly strived to provide for them to the best of her ability.

Later in her life, Cara remarried and discovered new strengths and talents that enabled her to courageously move to the Crowsnest Pass with husband Derek and build a successful business – the Pure Country Saloon. She loved her work and was a fantastic cook, boss and friend.

Cara cared about the welfare of all animals, especially horses, our local wildlife and her loyal house pets. She was an avid reader, enjoyed the beauty of flowers and plants and in her younger years loved to dance the ballet. She had a strong will and determined character, coupled with a sense of fair play. One of her finest qualities was her inclination for forgiveness and grace. She could not hold a grudge nor could she turn away anyone in need. Her self-sacrificing nature and immense capacity to love made her an inspiration to us all. She will be forever admired and shall never be forgotten.

Cara is survived by her loving husband, Derek Smith of Frank, Alta.; her daughters, Allison (Garnet) Howlett of the Crowsnest Pass and Carolyn (Des) Chubay of Edmonton; her precious grandchildren, Emily Grace Hansen, Lorin Hansen, Brody and Tyler Chubay, Kirby and Kristy Howlett; her mother, Norma Elanor Kinsman; her brother, Ian Kinsman of California; her sisters, Wendy (Todd Kluthe) Dwernychuk of Alcolmdale, Alta. and Nancy (Ray) Lefebvre of Ottawa; nieces, Elyse and Pam; nephews, Justin, Patrick and Christopher; her extended family; special friends, especially Faith (Allan), Debbie (Gary), Daryll “Twig,” and her canine companions, Bear, Kim, Puff and Nina.

She was predeceased by her father, Donald Kinsman.

The memorial service celebrating Cara’s life was held on Oct. 9 at Fantin’s Funeral Chapel (13461 20th Ave.) in Blairmore, Alta., with Pastor Al Robinson officiating. Special tributes were provided by the family and her close friends.

Donations in memory of the late Cara Smith may be made to the charity of your choice. Flowers in honour of Cara are greatly appreciated.

In loving memory of

Lucille Mary Glaister Lucille Mary Glaister of Pincher Creek, Alta. passed away peacefully, with most of her family by her side, on Sept. 28 at the age of 80 years.

She is survived by her husband of 60 years, David Ballantyne Glaister.

Lucille was born in High River, Alta. in 1932 to Daniel and Rebecca Dudenhoeffer. She is survived by her older brother, Fred Dudenhoeffer (Edna) of Barrhead, Alta. After finishing her nurse’s aid training, she worked at the Banff and Turner Valley hospitals. In 1952 she married David Glaister of Millarville.

They had three daughters: Joan Lucille Glaister (David Nowakowski), Jane Lynn Wilder (James Bergren) and Kathryn Anne Flundra.

David and Lucille ranched for many years in Millarville at Mesa Creek Ranch and then in Pincher Creek at the Shoderee Ranch. In 1969 David and Lucille purchased their first Red Angus bull, which led to many years as highlyrespected breeders of pure-bred Red Angus cattle.

Lucille will always be remembered for her beautiful smile, her sense of humour and her unselfish personal generosity. She was an amazing hostess and cook who was always ready to give lessons, and her cookie jar was never empty. As a textile artist she made many beautiful weavings, quilts and knitted sweaters.

She won awards with her creations because of their striking colours and designs. Her work was loved by many people and they wore her sweaters with pride.

Lucille dedicated many years of service to the Junior and Senior Guilds of Millarville and the Square Butte Ladies Group. She also gave her time to the Anglican Church, the poets festival and the Kootenai Brown Museum in Pincher Creek. She also found time to be very involved with many projects in Waterton Lakes National Park.

The greatest joy in her life was her precious grandchildren: Jenevieve Nowakowski (Tony Emmanuel Okeke), Dustin Flundra (Niki Flundra), Mathew Wilder (Brittney Charette) and Nina Smith (Randy Smith). Even more joy came with the addition of her great-grandsons: Malachi and Zion Okeke, and Ridge Flundra.

A celebration of Lucille’s life was held on Oct. 3 at the Millarville Racetrack Hall.

Lucille’s family thank all the doctors, nurses and support workers who attended to her in the last years of her life.

October is seatbelt safety month RCMP news release - unedited

The Alberta Traffic Safety focus for the month of October will be directed at seatbelt usage. The proper use of occupant restraints significantly decreases the severity of injuries sustained as a result of motor vehicle collisions. Research and collision investigations indicate that the use of seatbelts increase the chances of survival in a collision by up to 50 percent. According to Transport Canada, almost 40 percent of drivers and passengers killed in collisions were not restrained at the time of the crash.

Alberta has been quite successful over recent years with restraint compliance. According to the Alberta

Occupant Restraint Program, seatbelt usage is around 95% in our province.

However, we continue to see far too many collisions involving fatalities or seriously injured victims who were not belted in when the collision took place.

The Integrated Traffic Service of Alberta, comprised of RCMP and Traffic Sheriffs, work tirelessly to get this message out to motorists; however, during the month of October we are going to pay special attention to this important issue.

Seat belts are proven to save lives.

If you are not wearing yours, the chance of dying in a vehicle is significantly higher. Even at 40 kilometers

per hour, if you are in a collision, the chances of serious injury and/or death is significant. It would equal falling off a 4 story building! Seatbelts are the single most cost effective life saving device we have to protect us in a motor vehicle collision. Don’t you owe it to your family and friends to take every precaution available to you to stay safe?

Our traffic officers are going to be highly visible on the streets and highways targeting drivers and passengers not complying with seatbelt laws.

Avoid the $115.00 ticket and buckle up. It takes seconds to buckle up and a lifetime to make up for a loss!

Albertans to have their say on priorities for 2013 budget Multiple ways to take part – in person, online and with a budget app coming soon

The province is asking Albertans for specific priorities they would like to see in next year’s provincial budget.

“This year, there are so many ways for people to participate in the development of budget 2013,” said President of Treasury Board and Minister of Finance Doug Horner. “I hope that everyone will take the opportunity to have their say. It’s important that the budget reflects the values and priorities of the majority of Albertans.”

Public open houses will take place in nine communities across Alberta

from October 4 to 13: Calgary, Drumheller, Lethbridge, Medicine Hat, Bonnyville, Red Deer, Grande Prairie, Fort McMurray and Edmonton. People attending the sessions will be guided through a series of questions that will help the province gather feedback on Albertans’ priorities for next year’s budget. Horner, along with Associate Minister of Finance Kyle Fawcett, will attend each event.

Albertans unable to attend an open house can complete an online survey that asks the same questions that will be discussed at the open houses. A new smartphone app, soon available for

download, will provide Albertans with the experience of making spending decisions, seeing the consequences of each decision and how all the different aspects of the budget fit together.

The tool will be available online on October 5. Apple, Android and BlackBerry versions will be available in the near future.

The budget survey, app and other background information is available at www.dollarsandsense.alberta.ca.

Albertans may also still complete the fiscal framework survey at the same website. Both surveys close October 31.

“Giving Up the Ghost”

By Eric Nuzum (Dial Press, $15) Reviewed by Rose M. Croke There are many kinds of ghost stories. “Giving Up the Ghost” is one about second chances, the power of friendship and what it means to be haunted.

In his memoir, Eric Nuzum reflects on his troubled adolescence -- a time in his life when he felt lost and weighed down by an omnipresent sense of isolation and disconnection. Depression and substance abuse finally lead him to hit rock bottom, and a brief stint in a psychiatric ward forces him to face his demons -- both real and imagined.

One source of stress is the presence of a ghost. Throughout his teen years, Nuzum had recurring dreams involving a little girl who appeared wet with blond curly hair and wearing a blue dress. He remembers that she tried to speak to him in a language he couldn’t understand,

and each time he tried to touch her, he would wake up. He and his family lived in a creaky old house in Canton, Ohio, and he believed she resided in his attic bedroom, where he often heard sounds.

During his downward spiral, his beautiful friend Laura kept him from completely losing control. Through a mutual love of music and emo-rock, they became friends in high school.

He describes her as the one “stabilizing force” in his life. Then in a tragic twist of fate, Laura dies after being struck by a car. The memory of her and a mystery poem written on a lost scrap of paper she gave to him haunts Nuzum for years.

Determined to make peace with his past and confront his fears, Nuzum sets out on a journey to investigate the most notorious haunted locations throughout the United States. In his travels, he doesn’t discover any tangible proof that the places are haunted, but he encounters many people who are haunted by the ghosts of their pasts, the people they’ve known and the world they’ve experienced. By Steve Becker THE WALLS CAME TUMBLING DOWN The Flannery convention, used mostly in tournaments, was devised for those hands where the opening bidder has specifically five hearts and four spades and usually less than 16 points in high cards -- a hand that is difficult to describe in standard bidding methods. Those who play Flannery open such a hand with an artificial bid of two diamonds. Partner then makes whatever response is appropriate for his high-card values and distribution.

This deal occurred some years ago in the Blue Ribbon Pairs. At most tables, North got to four hearts and made four after East led a club to West’s ace and ruffed the club return.

But our story concerns itself with the table where South, playing Flannery, got to be declarer at four hearts and West led his singleton spade. South played dummy’s eight, which held the trick.

Then, unaware of the catastrophe about to befall him, declarer led dummy’s

queen of diamonds, at which point the roof caved in.

East took the diamond with the ace and returned a low spade, ruffed by West.

West led the ace and another club, ruffed

by East. East played another spade, ruffed by South with the nine and overruffed by West with the ten.

The debacle continued when West led another club, ruffed by East, and East then returned a fourth round of spades.

Declarer ruffed with the four, overruffed

by West with the six, and South’s agony was finally over.

It is true that declarer could have made the contract by simply drawing trumps at the start of play. In fact, he might even have made an overtrick. Mike also is aware that he won’t be young and chiseled forever, and this is where the drama comes in. Beyond the indulgence, Mike knows he has other dreams to follow.

The movie straddles the line between bachelorette party and mainstream character drama. Just when you get used to the story moving forward a bit, there’s a break for some more dancing. The story is drawn from Tatum’s own story; the Hollywood actor paid his bills by stripping before he hit it big.

There’s all kinds of odd and funny characters to meet when the apocalypse looms. While some of jokes seem obligatory, the relationship between the two main characters is rather unique. Maybe Carell wallows too much, and Knightley might be too cute, but the story that brings their characters together is less predictable.

“Abraham Lincoln: Vampire Hunter” (R) -- Based on a satirical history novel of the same name, this movie delivers just what it promises. A young Abe Lincoln loses his mother to vampires. When he grows up, not only is he the 16th president of the United States, he’s also the nation’s most vigilant slayer of the undead.

The movie takes itself a bit seriously, but not seriously enough to have anything to say. The action is overthe-top. The visual style is cool. Still, this one probably won’t stick with you long after it’s over.

APPLE TASTE-TESTING Have your family taste-test several varieties of apples, including specialties from your area. First, sort them by color and name, such as Granny Smith, Red Delicious, McIntosh, etc.

Gout Diet Not Too Restrictive DEAR DR. DONOHUE: Will you give me information on the lowpurine diet for gout? -- C.J. ANSWER: Years ago, before effective gout medicines were available, diet was the major treatment for gout. Now, with modern medicines, diet doesn’t play such a big role.

Elevated blood uric acid sets the stage for a gout attack. Uric acid infiltrates joints as needle-shaped crystals. Most uric acid comes from the recycling of body cells, a daily process. Only a small amount comes from food. It’s still wise for gout patients to take it easy on foods that are high in purines, but they don’t have to be as strict about diet as former patients had to be.

Purines are the substances that produce uric acid.

Gout patients ought to scale back a bit on meat and fish. Anchovies, organ meats like liver and sweetbreads, and gravies have lots of purines in them, and should be taken only once in a while, if at all.

Patients need to watch the amount of alcohol they drink. Beer, in particular, often triggers a gout attack.

Steak With Relish Blasted with blazing-high heat and basted in butter, this aged, succulent strip steak brings chophouse authenticity to the table in 15 minutes.

2 tablespoons prepared horseradish, drained 1 tablespoon plus 2 teaspoons apple cider vinegar 1 tablespoon fresh lemon juice 1 tablespoon maple syrup Salt and pepper 1 Golden Delicious apple 1 Granny Smith apple 2 (each 12 ounces and 1 1/2-inch thick) strip loin steaks, preferably dry-aged 1 tablespoon vegetable oil 1 tablespoon butter or margarine 2 sprigs fresh thyme 1. Arrange oven rack in lowest position. Preheat oven to 450 F. 2. In medium bowl, combine horseradish, vinegar, lemon juice, syrup, 1/4 teaspoon salt and 1/4 teaspoon freshly ground black pepper. Using large holes of box grater, grate apples; discard cores. Immediately stir apples into horseradish mixture.

Set relish aside.

3. Heat 12-inch ovenproof skillet on high. Pat steaks dry with paper towels. Sprinkle with 1/2 teaspoon salt and 1/2 teaspoon freshly ground black pepper to season both sides.

Add oil to pan; swirl to coat bottom evenly. When oil shimmers and is almost smoking, add steaks.

4. Cook 2 minutes. With tongs, lift each steak from pan and put back down on same side. Cook 1 minute longer, then turn steaks over. Transfer to lowest rack of oven. Roast 4 minutes.

5. Carefully add butter and thyme to skillet. Baste steak with melted butter. Roast 2 to 3 minutes longer for medium-rare, or until desired doneness.

6. Remove pan from oven and baste again. Transfer steaks to cutting board and let rest 5 minutes.

7. Slice steaks against the grain at an angle. Spoon steak juices on top and serve with apple relish. Serves 4. • Each serving: About 505 calories, 32g total fat (13g saturated), 102mg cholesterol, 585mg sodium, 17g total carbs, 3g dietary fiber, 35g protein.

Braised Mushrooms Quickly braise meaty mushrooms in red wine for an easy side dish that’s great with steak.

2 tablespoons butter 1 shallot, chopped 3 large sage leaves, chopped 1 cup wine 1/4 teaspoon salt 1/4 teaspoon pepper 1 pound mushrooms, halved 1. In 10-inch skillet, melt butter on medium. Add shallot and sage leaves; cook 2 minutes.

2. Add wine, salt and pepper. Boil on high 1 minute. Stir in 1 pound halved mushrooms.

3. Reduce heat to medium. Cover; cook 5 minutes. Uncover; cook 12 minutes or until tender, stirring.

By Samantha Mazzotta Lawn Will Thank You for Raking Leaves Q: I’m not thrilled with all the leaves piling up in my yard. Do you have any tips to make fall cleanup easier?

Why can’t I just leave them where they lie? -- Barbara in Dover, N.H. A: Raking leaves can be a tedious task, and gets exhausting when dealing with a large yard with lots of trees. During the fall season, a homeowner could wind up raking the yard at least once a week.

Unfortunately, leaving those leaves to pile up will wreak havoc on your lawn.

First, the coating of leaves prevents air and sun from reaching grass directly, but

lets rainwater trickle down, creating a harsh environment for grass. Second, leaves are filled with alkaline compounds that can damage the grass. These factors make leaves a great mulch ingredient, because you typically put mulch where you don’t want grass or weeds to grow. You don’t want a heavy coating of leaf mulch on your lawn, though.

So, you’ve got to clean up those fallen leaves eventually. Here’s a few ideas to make the task somewhat easier.

• Pick up the first light coating of leaves while mowing the lawn, with the bag attached.

• Borrow or rent a leaf blower to tackle larger areas with a moderate to heavy coating of leaves. Carefully blow the leaves into rough piles around the lawn.

• Use your rake to finish a large leaf cleanup job: pile the leaves closer together, or use the rake to shift leaves into a bag or wheelbarrow for disposal elsewhere.

• Add leaves to your compost pile. Fall is a favorite time for homeowners who keep compost piles because

leaves add bulk to their compost and can help balance nutrients and acidity or alkalinity if used in the right amounts.

HOME TIP: Watch out for that noisy leaf blower. Be aware of any local noise ordinances before using a leaf blower and try to avoid using it before 10 a.m. most days. Your neighbors will thank you.

When I was a new bride and college student in 1975, casseroles were the perfect remedy for my woefully limited cooking skills and lack of time.

A casserole is an easy way to create a budget-friendly meal, or to stock my freezer with crowd-pleasing dishes that can be re-heated in the microwave. It’s also the perfect meal and gift for a new mother and her family.

This recipe for Bean and Cheese Tortilla Casserole freezes well, can be increased to feed more people fairly easily, or transformed from a vegetarian dish to

include the meat of your choice.

BEAN AND CHEESE TORTILLA CASSEROLE You can add cooked and crumbled ground meat or shredded chicken to this vegetarian casserole, if desired. Just place the meat on top of the bean sauce and continue with the directions.

3 cans pinto beans, rinsed and drained 1 tablespoon olive oil 3/4 cup chopped onion 1 teaspoon minced garlic 1 teaspoon salt 1 teaspoon freshly ground black pepper 3 cups vegetable or chicken broth 1 1/2 cups mild to medium salsa 1 tablespoon chili powder 1/2 tablespoon cumin 1/2 teaspoon dried oregano 12 corn tortillas 2 1/2 cups shredded Manchego, Swiss or Monterrey Jack cheese Mexican cream or regular sour cream, for drizzling, optional 4 tablespoons chopped cilantro, optional 1. Preheat the oven to 350 F. 2. In a microwave-safe bowl, combine olive oil, onion, garlic, salt and pepper, and heat on high for 4 minutes until the onion is soft.

3. Using food processor or blender, combine onion mixture, beans, broth,

salsa, chili powder, cumin and oregano together until smooth. Pour bean mixture back into a bowl and microwave on high for 6 to 7 minutes, or until the beans are hot.

4. Place about 1/2 cup of the bean sauce into the bottom of an 8 to 9-inch square baking pan or casserole dish. Place 4 of the tortillas, with the sides overlapping, on top of the bean sauce. Sprinkle with the shredded cheese. Cover with another 1/2 cup of the bean sauce. Place another 4 tortillas, with sides overlapping, on the bean sauce. Sprinkle with the shredded cheese. Repeat bean sauce, tortillas and finish with cheese layer.

Bake until the cheese is melted about 10 to 15 minutes. To serve, drizzle with Mexican sour cream or plain Greek yogurt and chopped cilantro, if desired.

Serves 4.

House Training Advice DEAR PAW’S CORNER: I’ve been trying to house train my puppy, “Genie,” but she still leaves puddles around the house in the morning before I wake up. I tried rubbing her nose in the mess, but it doesn’t seem to work. Can you help? -Claire W., Akron, Ohio DEAR CLAIRE: Some dogs are a bit more difficult to house train than others, but don’t give up. First,

however, stop rubbing Genie’s nose in her puddle. Dogs’ attention spans are pretty short, and trying to punish her long after the act won’t help, and in fact can set her training way back.

Does Genie make that puddle at roughly the same time each morning? If so, that’s a clear signal that her bladder is full by that time.

You need to make an adjustment: wake up earlier, before Genie pees in the house. Take her outside on her leash and encourage her to go, praising her lavishly when she does.

Repeat this every morning without fail -- Genie will get it.

Now, to get your sleep time back, you need to try and adjust when Genie goes at night. If you’re taking her out at 10 p.m. and she’s wetting the floor at 5 a.m., take her out at 11 p.m. instead. Then take her out at 5:30 a.m. the next morning, and at 6 a.m. the following morning. See if her clock adjusts.

If that doesn’t work, remember, Genie is still young and growing.

She may be able to hold her urine longer when she gets bigger. So be patient, and keep working with her.

• On Oct. 13, 1775, the Continental Congress authorizes construction and administration of the first American naval force. Esek Hopkins was appointed the first commander-in-chief of the Continental Navy. His first fleet consisted of seven ships: two 24-gun frigates, two 14-gun brigs and three schooners.

• On Oct. 12, 1786, a lovesick Thomas Jefferson composes the first of many romantic letters to a married woman named Maria Cosway. In 1789, his letters grew less frequent. She continued to write to him and vented her frustration at his growing aloofness. After her husband died, Cosway moved to a village in Italy to open a convent school for girls.

• On Oct. 11, 1793, the death toll from a yellow fever epidemic in Philadelphia hits 100. By the time it ended, 5,000

people were dead. A vaccine prevents yellow fever in much of the world, though 20,000 people still die every year from the disease.

• On Oct. 14, 1944, German Gen. Erwin Rommel, nicknamed “the Desert Fox,” is given the option of facing a public trial for treason, as a co-conspirator in the plot to assassinate Adolf Hitler, or taking cyanide. He chose the latter. The German government gave Rommel a state funeral. His death was attributed to war wounds.

• On Oct. 8, 1956, New York Yankees right-hander Don Larsen pitches the first no-hitter in the history of the World Series. Even better, it was a perfect game -- that is, there were no runs, no hits and no errors, and no batter reached first base.

• On Oct. 10, 1985, the hijacking of the Italian cruise ship Achille Lauro reaches a dramatic climax when U.S. Navy F-14 fighters intercept an Egyptian airliner attempting to fly the Palestinian hijackers to freedom. On Oct. 7, four heavily armed terrorists had hijacked the Achille Lauro and 320 crewmembers and 80 passengers.
