Whether your bank balance is recovering from a costly end to 2015, or you’ve made a resolution to be thrifty throughout the coming year, being energy efficient can significantly improve your finances. But with so many ways to reduce emissions at home, with options ranging from simple to drastic, what’s the best way to make a meaningful change? Well it recently emerged that one Merseyside homeowner had achieved the ultimate success, keeping heating, lighting, hot water and cooking energy bills at just £15 per year. Colin Usher, director of Liverpool-based John McCall Architects with a long interest in environmental science, designed the West Kirby property he shares with his wife and insists such a saving is down to a range of eco-friendly elements working together in the house. “Lots of people have asked me ‘what’s the one thing that makes the

difference?’ and the answer is there is no one thing,” says Colin, who was able to recently confirm the low annual costs of running the newly-built property after living there for two years. “I’ve done a bit of everything and every single aspect of the design of the house contributes to its success, either by making it very low energy to run or to make sure it doesn’t overheat.” Colin’s home was created for a target cost of £240,000, a price said to be in line with other more affordable private bespoke homes the architect practice has worked on. “You can spend a lot of money doing this but what I wanted to do was not spend a lot of money, partly because I don’t have a huge amount but also because I wanted to show it’s possible to do something quite sensible but still achieve these terrific results just by thinking it through really carefully,” says Colin.

ACHIEVING ECO SUCCESS So what are the secrets to such high energy efficiency? A focus on orientation, insulation, air tightness and thermal mass saw Colin produce an eco friendly home which remains at a comfortable temperature through summer and winter and doesn’t allow drafts despite incorporating plenty of windows. For instance, large triple-glazed windows are positioned on the south side to attract warmth from the sun, while enough windows to naturally light up the home are included on the north side. A large amount of insulation, including a bed of insulation beneath the house, works alongside a design to seal the property “like a Tupperware box”. “If you insulate a house without sealing it properly you’re wasting an awful lot of time but because its sealed up so well you’ve got to have a ventilation system otherwise you’d eventually run out of air and it would also feel muggy,” explains Colin. Therefore the house, which is largely built out of concrete to retain a comfortable temperature, uses a ventilation system which takes moist air from the bathrooms and kitchen and then blows fresh air into living spaces. Velux windows above an 8.6 metre-high stairwell can also be opened in the summer to release hot air which rises up through the whole of the house. Heat rises up the 8.6m stairwell

COUNTING THE COSTS Colin insists smart spending allowed the house to be built within an average price bracket. “We spent money on making this very low energy and then we made some careful decisions about other aspects of the house,” he says. “Where some people might have put down oak flooring we used bamboo, which is much more sustainable than oak as it’s basically made out of grass. “It’s very good with under-floor heating and very stable and robust; it’s a strange self-healing material.” Filled travertine also took the place of more expensive marble in the bathrooms to provide a similar appearance at a lower cost. While much energy efficiency has been achieved through the construction of Colin’s home, existing properties aren’t a lost cause when it comes to cutting energy usage. Solar panels, for instance, can be added to homes and are too making an active contribution to offsetting energy costs in the £15 per year house, as from their position on the south facing roof they generate power to sell back to the grid. The impact of far simpler alterations shouldn’t be overlooked either, such as reconsidering whether it is really necessary to keep a letterbox on the front door or adding thermal lining to curtains. “If you have patio doors I strongly recommend you add a good quality thermal lining to your curtains because patio doors go right to the ground and they’re a big area of heat loss even if they’re double glazed,” suggests

could be possible among developers who mass produce homes during projects, according to the architect. “You might not put so much insulation in – I’ve possibly gone to an extreme end of that – but I think if you do everything well then it’s perfectly possible for us to get a better performance out of our mass produced homes. “Modern building regulations, in comparison to past ones, are very good but you can still do better. “I think some of that’s down to a willingness to do it as it takes a bit more effort and thinking about it to create a really well sealed up house, and then you have to think about how you’re going to run the ventilation system. “That’s the sort of thing people think is going to be expensive but if it’s designed as part of the fabric of the building from the start it’s not such an issue.”

Colin, who even uses such methods across his triple glazed windows as the effects are positive. “The time when you lose the most heat out of [those windows] is at night time and if you close a quality curtain that comes right to the ground you’ll probably half that heat loss.” Aside from trimming energy costs, Colin hopes more efficiency measures are taken on board to address the impact of climate change. Significant areas of the UK spent Christmas and New Year tackling floods which are reportedly believed by scientists to have been partly caused by man-made climate change – a stark warning that more needs to be done. “I feel quite unhappy that this wasn’t addressed 30 years ago because most of the technology I’ve used in my house was available 30 years ago and we could have been building to this standard. “We can’t change the past but we can change the future and I feel if we can, by taking very simple steps, help people improve their houses then I’m keen for that to be done.” Your Move 43

High ceilings may be a striking feature of a room, particularly in period homes, but they do make rooms much bigger and harder to heat. Placing a shelf just above a radiator can prevent the heat from rising straight up and deflect it into the centre of a room instead.

Don’t over fill the kettle, it’ll waste water but also energy as it takes longer to boil. Simply fill up with as much as you are planning to use.

As well as natural light, windows can invite warmth into your home on sunny days so make the most of it by keeping curtains and blinds open in the day time. Be sure to close them to help retain heat during colder climates and at night time, but avoid covering radiators with long curtains as it can guide heat out of the window.

YOU CAME TO BOXING RELATIVELY LATE AGED AND BEFORE THIS YOU HAD BEEN A KEEN FOOTBALLER WHY DID YOU MAKE THE SWITCH? From 11 to 14 years of age I’d come home everyday after playing football in the street and my three brothers would be talking about how hard a circuit had been or asking each other ‘did you see so and so sparing?’. It’s not like I felt left out but very rarely would they ask me what I’d been up to. We also used to live only a stone’s throw away from our amateur club The Rotunda ABC (amateur boxing club). Everyday I would be here, my dad and my brothers and I would get the coach, Jimmy Albertini asking me when I would be starting. The main reason though, is two of my mates from school started boxing at Kirkdale [ABC] and I remember thinking, ‘Right, I’m going the Rotunda and I’m going to box one of you’. In the end, by the time I had my first fight just three months later they had quit. Even though I hadn’t been coming to the gym long, I was always boxing in the house with my brothers – I was a quick learner. YOU STILL PLAY FOOTBALL EVERY WEEKEND DO YOU EVER WORRY THAT AN INJURY COULD EFFECT YOUR BOXING CAREER? LIAM IS NURSING A SLIGHT LEG INJURY WHEN WE MEET AFTER PLAYING THE DAY BEFORE Not really, I haven’t had any really bad injuries, touch wood. Today I’ve just woken up and my leg is a bit stiff. I think the day people will argue with me over it is when I have to go into Joe [Gallagher, Liam’s coach] and I can’t skip because I’ve hurt my leg or my ankle. I think if I ever had to pull out of a fight because of a football injury that’d be something I would have to think about. I’m not a silly lad and I know anything can happen in football but I could go running and go over on my ankle, so I just think if it’s going to happen it’s going to happen. I enjoy it as well to be honest with you, it keeps me the way I am. I see my mates every Saturday and Sunday. If I stopped playing football it would make me think I was changing myself. I don’t want people to think ‘ah he’s changed him’. At the moment I’m just going to stay the way I am. WITH ALL THREE OF YOUR BROTHERS BEING BRITISH CHAMPIONS AND SUCCESSFUL BOXERS IN THEIR OWN RIGHT DOES IT PUT PRESSURE ON YOU HEADING INTO A FIGHT ESPECIALLY IF THEY HAVE WON RECENTLY? No, it gives me massive confidence. I said before the Callum (Liam’s younger brother) and Fielding fight - who in their right mind would want to fight Callum after watching

Stephen (Liam’s elder brother) win his final eliminator in the way he did? Then I won a world title. That just keeps adding confidence to us. Success breeds success, everyone bounces off each other – that is from our family and from the gym. We train every day together. We travel every day in the car up to Bolton together, we do all our running together, swimming together. If you ever see a picture of us training it’s very rare you won’t see one of the others in the background.

WHAT ARE YOU PLANS FOR THE REST OF YOUR CAREER? I want to secure my future. I have won titles at every level; Commonwealth, British, two international titles and I’ve finished with a world title. I was the first scouse boxer to win a world title for 22 years and the next one to win one will be the first scouse world champion since Liam Smith. I could finish tomorrow and no one could take away from me what I’ve done but I haven’t got the money to finish tomorrow!

It definitely is – I’ve had two good offers. Frank [Warren, Liam’s promoter] is in America this week and has told me to sit on them for a bit; don’t make any decisions because he is very confident he can make the Cotto fight for June. I’ve had a good offer for someone else in Vegas (Canelo Alverez) and he has told me not to accept or reject it yet. The Cotto fight would probably make more sense because I could fight in March and then in June. That would be a better option, that’s the one that I would love. I’m not putting all my eggs in one basket though; I would love any of the big names.

IS THAT WHAT IT IS ABOUT NOW THE MONEY? Now it is. It was always about being a world champion and I am there now. If it was just about being world champion, I would finish tomorrow but it’s not now. It’s about money and about trying to secure a better future for myself.

I’ve had three weeks off from the gym. I had a good week after the fight, I celebrated quite a bit and then I went away with my girlfriend. Since I’ve been home I haven’t really done much. I can’t wait to get back in the gym to be honest with you. I’m looking forward to it but I needed that break – I had a good year last year because I had no injuries so I was in the gym all year. I did two hard camps back to back, the fights themselves were not that difficult, I was always comfortable when I got in there – it was the 10 weeks before that, making the weight and getting fit. If I’d have taken a Feburary fight that would have been my third fight back to back but I’m not in a position where I have to take these fights now. I am champion. Your Move 59

Simple soup Essentially just a stock made from slowly cooked roasted bones, bone broth was the drink of choice for supermodels at New York Fashion Week last year and is now on sale in various trendy spots across London. One such haunt is Bone Tea based in Notting Hill, serving takeaway cups of the hot drink which has caught on due to its high levels of vitamins, minerals, proteins, collagen and keratin.

WHAT WILL BE HOT ON LIVERPOOL’S THRIVING FOOD AND DRINK SCENE IN ?

Late-night nourishment Gone are the days when the only food around at midnight was a takeaway kebab. Now you can feast in Liverpool hotspots while sipping cocktails until the early hours, thanks to the emergence of late night bar menus. New York has been filling its nocturnal foodies with everything from sushi to tacos for some time, and now it’s catching on here. KYO above Bold Street’s Miyagi and Blind Tiger’s dim sum offering helped start the trend locally and the latest is Maray’s after-hours ‘Trouvaille’, welcoming guests until 2am if they ring the buzzer.

Sustainable superfood Seaweed is gearing up to be big across the board and that includes food, as it boasts calcium, micro nutrients and plenty more goodness. Expect to see it replacing the likes of kale and cabbage as a side dish or standalone salad as this environmentally friendly and über sustainable food explodes in popularity. The superfood has already become a hit in the capital with distributors and restaurants realising it’s now a menu must-have. Liverpool’s Japanese restaurant Etsu serves two salads containing seaweed but the food will no doubt be appearing in more eateries soon. 62 Your Move

Adding to the mix Liverpool bars have been shaken up by cocktails but will they take on 2016’s twists? A craze for housecarbonated concoctions is said to be bubbling away from Chicago to San Francisco, and last October’s London Cocktail Week saw renowned mixologist Ryan Chetiyawardana – aka Mr Lyan – team up with SodaStream to add fizz to bespoke beverages. Adding tea infusions to mixtures is also causing a stir, with hints of oolong, Earl Grey, rooibos and matcha making appearances. The likes of Jackknife in America’s hip Portland is among those adding depth to drinks through the method. Fancy a brew?

Foodie throwback? Vinyl cafes and classic board games in bars brought nostalgia in 2015, but which blast from the past will be next? Maybe Writing on the Wall is onto something as its 2016 festival theme delves into comics, or will the inaugural Liverpool Gaming Festival in March be a sign of the future when it couples consoles with cuisine?

Super scrumpy Craft cider has been around for just as long as the more high profile beer creations, but 2016 could see its emergence as a key competitor in this continually thriving market. Currently bars and pubs across Liverpool include an offering alongside their wider array of beers. For instance, you can sample Sandford Orchard Devon Red Cider on tap at BrewDog or head to the Ship & Mitre on Dale Street for a drop of Orpens Irish Cider. The apple-based alcohol could be upping its presence in the months ahead though.

Aloha to PokE Set for ‘big things’ in 2016, Poke (pronounced poh-keh) is a Hawaiian food consisting of marinated cubed raw fish that provides an almost endless possibility of flavours and textures. Served on-the-go or as a light meal that’s set to usurp Sushi and is branded the ‘new sashimi’, Poke is becoming increasingly popular in the US and is now emerging in London. This healthy hit of tropical tasting fresh food is lining up to take the culinary world by storm this year, so it must be a matter of time before Poke makes it to Liverpool.

New Asian sensation

When you think of Brazilian food, you’re likely to expect copious amounts of meat. With the Rio Olympics approaching though, 2016 is anticipated to be the year when authenticity will shine through in Brazilian cuisine served here in the UK. Taking inspiration from Spain and Portugal; fruit, rice, curries and street food such as Coxinha, Pao de Queijo and Pastel are among its highlights. Liverpool is already home to Brazilian restaurants including Bem Brasil, Viva Brazil and Fazenda, so we’ll look forward to seeing how hearty dishes and a wealth of natural ingredients will be further embraced in the year ahead.

Wine revival

Best thing since sliced bread Could the success of a cereal cafe in London have helped pave the way for other typically breakfast-based foods to become the headline act on menus? With nutritionists accepting that carbs are good, a new foodie trend is emerging in the States and it’s the best thing since sliced bread – in fact it’s toasted sliced bread! Gourmet toast is coming topped with anything from honey and nuts to avocado and anchovies to make a meal. Can it really become a trend? If cereal can, why not!

A break from steak If 2015 spoilt Liverpool diners for choice with mammoth meat portions then 2016 will be happy for herbivores. The arrival of The Allotment, a plantbased fine dine restaurant on Smithdown Road, provided a meat and dairy-free start to the year that’s set to last far beyond

Crafty concoctions The popularity of craft beer shows no sign of slowing down and 2016 will see the drink appear increasingly on both our bar and restaurant menus. Beer cocktails are expected to become more commonplace alongside beer inspired desserts. In fact, here in Liverpool, Bold Street’s recently opened pizza joint Crust has created its own indulgent ‘Birramisu’ (pictured) which substitutes the classic tiramisu’s coffee for chocolate ale.

‘Veganuary’. Meanwhile GIVE Kitchen is preparing its new year vegan eatery launch on Brunswick Dock. A new Bold Street vegetarian restaurant and juice bar could complete a hat-trick in 2016 courtesy of Your Yoga Studio, with a “top chef and nutritionist” said to be developing the menu.

Food and drink enthusiasts have been preparing their pallets for an expected return of the wine bar. A refreshed format offering more chances to enjoy varieties by the glass within unpretentious surroundings is on the horizon. Bringing a changing chalk board wine list, relaxed décor with tables big enough for groups, and an accompanying wine shop, the launch of Buyers Club’s bar (pictured) in late 2015 showed Liverpool had cottoned on early.

Gold medal grub

Chinese food is a regular sight across Liverpool and the globe with Japanese becoming the same, but it’s Korean cuisine that’s next in line to be the ‘it’ Asian offering. Kimchi, a staple of Korean food, has won over critics for its stomach-settling and antibacterial qualities but it barely scratches the surface of this food that’s set to hit the mainstream. Already a smash in London, Korea’s serving is less greasy than Chinese, not as spicy as Thai and lighter than Indian curries, so it surely won’t be long before we see some delights in Liverpool.

CRUST Bold Street, L1 Much to the amusement of my friends, when it comes to Italian food I like to think of myself as a bit of an expert after numerous holidays to the country over the years. So when I heard about a new pizza and beer joint opening on Bold Street I of course had to pay a visit. Walking into Crust on a busy Saturday night, hearing the sounds of Italian waiters conversing in their native tongue and seeing a team of chefs slaving over a huge authentic Italian wood fire pizza oven, I could have easily been back in a Neapolitan pizzeria. After a short wait at the bar, my dining partner and I were shown to our seats. For starters I chose the Proscitto Di Parma (£5.95) accompanied by a pint of smooth Menabrea Birra Bionda (£4.40). The ham was served with buffalo mozzarella, which unlike any mozzarella I have tried before was incredibly moist, rich and flavoursome. My diner date was equally as impressed with her focaccia (£4.95), which came topped with garlic, tomato and gooey mozzarella. As a big fan of the folded over calzone pizza, choosing the magnificently named

Black Vulcano (£9) for my main was an easy decision. What I was presented with was the biggest main course I think I’ve ever seen. Made using black dough - which as our waiter explained is healthier than the standard base thanks to its natural vegetable charcoal - the calzone was fashioned into an impressive volcano shape. Packed full of juicy tomato, mozzeralla, thick ham, mushrooms and spinach it was a delight. I’m slightly ashamed to admit that I was only able to complete just over half of the monster meal but enjoyed every bite. My date went for something on the lighter side for her main; the Strascinati (£8) combined homemade strascinati pasta, friarielli (a broccoli-like green vegetable widely used in southern Italian cuisine) and Italian sausages. The pasta had just enough bite whilst the rich creamy sauce accompanied the sausages well. To be honest, the idea of a dessert after the mighty Vulcano was not the most appealing thought but when

I tasted the Birramisu (£5) and chocolate Ravioli (£6) I soon changed my mind. The indulgent Birramisu substituted the usual coffee in the classic tiramisu dessert for chocolate beer with incredible results, whilst the fried chocolate Ravoli was a delicious twist on the savoury staple. As the manager Alessio had predicted, a chilled glass of Italian produced Cortigiana Golden Ale (£4.80) complemented both dishes perfectly. It’s worth noting that alongside the Cortigiana, Crust boasts an impressive range of both local and Italian craft ales to sample. As we headed for the exit suitably full, Alessio enthusiastically introduced us to the owners who were busy talking shop at a nearby table. We promised we would be back soon and certainly intend to be. Crust stands alone in an increasingly competitive list of pizza spots in the city thanks to its authenticity and quality of ingredients which will prove hard to beat.
