FRESH and in SEASON i’m thrilled to be the new Managing Editor of Fig® Bethlehem. Even
though I wasn’t born and raised here, I chose to make Bethlehem my home more than 13 years ago—first, in the little borough of Fountain Hill and then to a rental on bustling Main Street. Three years ago my boyfriend and I settled into a home of our own near Liberty High School and we love it. Since joining the Fig® team, I’ve already experienced so many new places in my town. Each day leads to a new discovery. Living downtown certainly has its advantages. Being able to walk to a favorite pub on a beautiful night or taking a morning stroll to a new breakfast place is such a luxury. We are definitely spoiled with all of the amazing eateries to choose from in Bethlehem. Over the past few years, more diverse, eclectic, and locally conscious dining options have popped up. The use of locally grown food is so important for our sustainability as a community, and I’m happy that my town embraces this. Our shops and restaurants, pubs and cafés, all working together with local farmers and artisans are keeping Bethlehem on the path of growth through community cooperation. After all, isn’t that part of what food does? It connects us.
“ Living downtown certainly has its advantages. Being able to walk to our favorite pub on a beautiful night or taking a morning stroll to a new breakfast place is such a luxury.”
Whether it’s a group of friends dining at a restaurant or a family gathered around the dinner table with fresh food from the farmers market—food brings people together. This summer issue showcases a sampling of what the Bethlehem food scene has to offer. Go out and explore what’s new—I know it will be a delicious experience!

authentic: LYNN PRIOR OF BUY FRESH BUY LOCAL have you noticed that Bethlehem
restaurants offer more and more locally grown foods on their menus? For this palatable pleasure, you can thank Buy Fresh Buy Local of the Greater Lehigh Valley and its dynamic director, Lynn Prior. Buy Fresh Buy Local is a national program connecting consumers to fresh, locally grown foods. Since starting it in the Lehigh Valley in 2008, Lynn has been trumpeting the many health, economic, and social benefits of a local food system that links small producers and growers, chefs, and consumers. Today, Buy Fresh Buy Local

about 25% of the land to be preserved as farmland. “It will take a big effort on the part of all 62 municipalities to make this happen,” says Lynn.
Still, much more work needs to be done. “The biggest challenge,” Lynn says, “is the disappearance of farmland. About 2,240 acres per year are lost to housing, commercial, and industrial projects. You can’t have a local food economy without farms!”
As a native of Canada, Lynn marvels about the long growing season in the Lehigh Valley. “A great variety of foods is grown here, both cool-season and warm-season vegetables.” Lynn suggests the best way to enjoy the local flavors is to eat at a farmto-table restaurant, and visit one of the farmers’ markets or farm stands.

Andy Po & skater-pup Holmes
At more than 750 ft. long, the Plaza is a oneof-a-kind venue capable of supporting national skate and/or BMX events, celebrations, and festivals.
giving back: ANDY PO OF HOMEBASE SKATESHOP andy po is the owner of Homebase Skateshop in Bethlehem. Since moving here from San Diego in 1997, he’s watched the skate scene transform from barely nonexistent to flourishing—and he’s proud to be a huge part of that change. The Bethlehem scene had skaters and skateshops but what it lacked was a sense of community. Through Homebase610, Po wanted to showcase the skateboarding culture in a positive light and bring people together. In 2010 the Bethlehem Skateplaza came to fruition—a concept over a decade in 6 figbethlehem.com
the making between the Bethlehem Parks Department, Po, and the community. There were challenges, setbacks, and countless town council meetings, but Andy knew there needed to be a place for kids to skate and not get in trouble. “The Skateplaza breaks down all socio-economic and age barriers,” he said. “A thirty-five-year old can be skating alongside a ten-year old, each learning from the other.” There is a community-wide effort when it comes to maintaining the plaza. Skaters will shovel snow in the winter and pick up the litter themselves in the summer. Soon there will be a concession stand operated

by Homebase610 where Po hopes to create a volunteer program to keep the park clean. Andy’s goal is to empower; he aims to lead by example and show the younger generation they can rise above stereotypes. “If what we’ve done or created helps someone find their passion or build the community, we’re good with that. Everything good that happens here is from the support of the community.” For information on how you can donate to the Skateplaza, please visit bethlehemskateplaza.com or connect via social media channels.

Jennifer Washburn & Francesca Ohl
Meet new local businesses that add to the texture of our thriving City. Look for our Fig® Fresh Faces in every issue.
fresh face: CROSSFIT ADORATION the name “crossfit adoration”
doesn’t just represent a fondness for the CrossFit exercise philosophy, but a devotion to what is best about a family: honesty, integrity, dedication, and mutual encouragement.
“It’s a community, and it’s a family,” says co-owner Fran Ohl, “and more than anything, it’s about support and camaraderie.” Those values brought Ohl and co-owner Jenn Washburn together when they first met at another gym across
town. They realized they complemented each other, and decided to partner together to open CrossFit Adoration back in January. “Our philosophy is one of competition with each other, not competition against each other,” says Washburn, “and that enables people to be better together.” Ohl and Washburn make a conscious effort to incorporate their values of family and fun into the CrossFit experience. One night they had kids compete in a lighter
“Workout of the Day” with their parents. Another night they hosted a roller skating fundraiser, the proceeds of which went to one of their member’s children with Down Syndrome. In the true spirit of fitness and competition, CrossFit Adoration is there to help their members lead healthier, happier lives by reaching goals not just physically, but mentally and emotionally as well. “when I had the opportunity to work in Bethlehem,” says a young, professional chef, “I snapped it up. Because unlike Philadelphia or New York, the parameters here are not set. A truly great food scene is just emerging. I want to be where cutting-edge foodthings are happening.” We couldn’t agree more! Something delicious is cooking in Bethlehem. In whatever direction you walk or drive, you’ll find great food. There is a vibrant restaurant scene in Downtown Bethlehem and on the South Side. You can find variety, ranging from ethnic cuisines to farm-to-table dining. Another pin on the food map: Bethlehem’s annual VegFest in August is a popular destination for vegans and other health-minded foodies. If you venture beyond city lines, you can whistle-stop your way through Lehigh Valley’s dozen farmers’ markets. You’ll be able to pick up vegetables harvested the same morning, sun-ripened strawberries and blueberries, juicy orchard peaches, artisan cheeses and other dairy, honey, mushrooms, pastured meats—all produced by local farms. Once you fill up on local fruits and vegetables, make a stop at one of the nine family-owned vineyards and wineries that form the Lehigh Valley Wine Trail. Prefer a brew? Put the Lehigh Valley Ale Trail on your itinerary and discover local breweries and pubs and their acclaimed craft brews.
" A truly great food scene is just emerging."
The rise of Bethlehem’s food scene over the last decade is the result of community organizations, businesses, chefs and farmers, and numerous other individuals working together. They saw that food, and drink, bring people together, and that growing local and buying local would contribute a valuable catalyst to growth and the quality of life. .......
Summer is a great time to listen to your stomach and to taste local food, produce, and drink. Learn more about VegFest at downtownbethlehemassociation.com/events/vegfest. Find out how you can enjoy the Lehigh Valley Wine and Ale Trail at lehighvalleywinetrail.com and lehighvalleyaletrail.com.

organic pioneers SINCE 1947
rodale institute was founded in 1947 by J.I. Rodale to study the link between healthy soil, healthy food, and healthy people. Dedicated to pioneering organic farming through research and outreach, Rodale Institute has been researching the best practices for organic agriculture for more than 60 years. The Institute is at the forefront of the organic community—a valuable asset that’s helping communities like Bethlehem get fresh, healthful meats and produce to individuals and restaurant owners. Rodale Institute also works with individuals who grow on every level, in addition to working with cities and organizations to create sustainable opportunities for the next generation. Through their ASC program (Agriculture Supported Communities) Rodale Institute brings fresh, high-quality organic food to underserved communities and provides a viable business model for new or established farmers who want to enter these markets.
