Summer

...with its attendant pleasures like red, ripe tomatoes and lush, dripping peaches, is the perfect time to gather at tables laden with the best this steamy season has to offer. After all, we are passionate about eating and drinking in this city— forever talking and even arguing (ever so politely, of course) about the best ways to procure, prepare, and enjoy our favorite foods and drinks. As Southerners, we understand that food is what brings us together in a spirit of true hospitality. It’s how we celebrate our most joyful occasions, as well as nourish and care for one another in hard times. When we share food, we’re sharing love.

Thankfully, the very best food we can offer is right here at our fingertips. As Columbia’s chefs and home cooks connect with local farmers for the freshest and finest ingredients, we’re feeding an agricultural renaissance that means better, healthier food —not just for ourselves, but for our community as a whole. So, this summer, as you set out the good china or lay down your favorite picnic blanket, take a moment to remember how lucky we are to live in a city with such a rich and abundant food culture. And as you gather together, rest assured that—no matter your tastes—there’s always something good to eat around here. LOCAL: IT’S THE TERRA WAY When Chef Mike Davis came up with the concept for Terra, he knew that dishes made of local farmers’ and suppliers’ goods would take center stage. Today, the restaurant has set the standard for working with seasonal, local ingredients. In fact, every afternoon in the kitchen begins with the day’s deliveries from local farmers like Paul at Freshly Grown Farms, whose lettuces make most of the salads at Terra. The perfect pairing: seasonal dishes with local ingredients. See you at Terra soon.

social mission

OFFERING A SOLUTION FOR FAMILIES At St. Lawrence Place, parents get a safe home for their family, and children gain the freedom to explore childhood.

St. Lawrence Place is a 30-home community where homeless families can find skills and shelter that foster independence and free them from the grip of poverty. More than an emergency shelter, St. Lawrence Place keeps families together and helps them cultivate the skills to become contributing members of the community.

With programming and transitional housing—for up to two years—for qualifying families, St. Lawrence Place offers families the structure, training, and support that can help them overcome homelessness. At Fig® we believe in the power of a community that works together to identify needs and find solutions—one that creates community connections and is passionate about helping its neighbors. We believe in the mission of St. Lawrence Place—our 2014 Social Mission Partner. Please consider giving to them with your dollars and your time.

giving back

DR. TRACI YOUNG COOPER

DIRECTOR OF RICHLAND COUNTY SCHOOL DISTRICT ONE’S EXTENDED DAY PROGRAM A dynamo with a vision for making things happen, Dr. Traci Young Cooper led the effort last year to create “Team Richland,” rallying the students, parents, and employees of both Richland One and Two school districts to raise more than $100,000 for Palmetto Health Breast Center through Walk for Life/Race for Life.

“Our aim is to have a mammoth impact on eradicating breast cancer across our county— working outside of our respective school districts. To ensure we have healthy teachers, parents, and students, we are breaking down silos to make sure cancer does not win!” Now in its 24th year, Walk for Life began back in 1991 when the former First Lady of Columbia, Beth Coble, founded the event with Palmetto Health Breast Center staff to help educate women and men about the importance of early detection. Proceeds from the event, totaling more than $7 million, remain in the Midlands at Palmetto Health Breast Center and are used to purchase the latest mammography and ultrasound equipment to help detect cancer in its earliest stages. Proceeds also help fund community outreach as well as programs and services provided to patients and their families.

As a generous donor and an ardent advocate for Palmetto Health Foundation for nearly 10 years, Traci’s commitment to our community and passion for making a difference has had a tremendous impact by helping provide for enhanced programs and services for patients and families served by Palmetto Health.

A 501(c)(3) nonprofit organization, Palmetto Health Foundation engages community partners to enhance health care for patients and families served by Palmetto Health.

LET YELLOW DOG BARBECUE CATER YOUR NEXT TAILGATE EVENT OR SUMMER GATHERING! FIND THEM ON FACEBOOK.

Will Lacey, Owner of Yellow Dog BBQ, & Dixie

IN WILL LACEY’S OWN WORDS... “Some of my best memories growing up are of family and friend gatherings with a table of great food, and wonderful company. It has always been amazing to me how food can bring a group of people—sometimes even strangers—together. And that’s a big reason why I started Yellow Dog Barbecue. The yellow Lab featured on our logo is our ‘matriarch dog,’ Savvy. She passed away a few years ago, and I couldn’t think of better way to pay homage than by creating a company that aims to bring people together just like she did. Our best-selling sauce is

named after her. They are both incredibly well rounded and perfect for any occasion or circumstance. Or as I like to say, they are both sweet with a ton of character. My yellow lab, Dixie, also had to have her own sauce. This one took a lot of time to decide on and to get just right. Dixie has an incredible amount of personality that could easily be described as bold. At Yellow Dog, we smoke our pork with a mixture of pecan and peach wood. This mixture ensures a more subtle smoke flavor with a hint of fruit that doesn’t completely overwhelm the taste of the meat itself. It’s

also a little bit of a salute to the state of South Carolina and my experiences growing up here. In our catering, we do a lot of the classic BBQ dishes, but are always open to exploring new techniques and new ways to serve or present the dish. And we don’t limit ourselves to barbecue, although that is definitely our focus. We’ve done everything from gourmet burger sliders to shrimp and grits. Basically, I guess you could say we really enjoy playing with our food. We are in the process of getting our three sauces bottled and distributed in local stores, so be on the lookout!” 803.331.4675

authentic: Basil Garzia ROSEWOOD MARKET Rosewood Market is so much more than a healthy grocery store and deli. Walking in the door makes you part of Basil Garzia’s family. They care about how you’re doing and are always ready with some advice, whether you need to know the best way to season the fresh clams you just bought in the parking lot farmers’ market or a great natural way to deal with seasonal allergies. Just ask. When Basil made his way into Columbia’s retail and restaurant landscape in the early seventies, he knew he wanted to do something different.

Since the beginning, Basil has had his finger on the pulse of the health-conscious community

in Columbia. He’s explored and supported it all, from vegetarian and macrobiotic eating to healthy carb counting and gluten-free living. In recent years, he’s developed close relationships with local vendors, supporting them by carrying their products in store, as well as hosting bi-weekly farmers’ markets in his parking lot, where those local growers can sell their wares directly, making friends as they go. Before the All Local Farmers’ Market moved to its permanent location on Main Street and became Soda City, Basil hosted the market every other week outside of his Rosewood location. Being at the forefront of the local food movement comes naturally to Basil, because

he is drawn to people and, when it comes to cooking and eating, he cares about tradition. “I feel a connection to traditional methods. I look to the way my grandparents did things.”

Rosewood Market is Basil’s home. He laughs when he says, “My wife has made the observed comment that the market is more of a social outing and club than work.”

Basil is an icon in the healthy and local food community here in Columbia, but you won’t hear it from him. He’ll be too busy talking with friends: the vendors, farmers, and shoppers who make up his community. Thanks to Basil, Rosewood Market is a community center, leading the way to healthy, sustainable living.

COLUMBIA’S FOODIES SPEAK UP!

GOOD EATS

Summer IN THE

“My favorite summer dish in Columbia would have to be a Carolina Burger at Henry’s on Devine Street. Paired with an ice cold beer and a nice summer breeze on their patio, it absolutely can’t be beat.” WILL LACEY

“I would have to say that my favorite summertime food would be a bag of old crop boiled peanuts from the dam peanut man out near Lake Murray, chicken salad from the Gourmet Shop, pimento cheese from DiPratos, and a loaf of freshly baked bread from Crust on Rosewood—preferably all served on a screened in porch! It’s simple pleasures like these that will help you survive the hot summers in Columbia!”

ERIN NOBLES

56 figcolumbia.com

“I mean, nothing beats vine ripe tomatoes out of your backyard garden with Dukes, fresh bread and S&P. However, I feel everyone makes salads better than me and in the warm weather I crave them more. My favorites are the Ensalada 116 @116 State, Mike Davis’s Green Salad with WalnutCrusted Split Creek Farms Goat Cheese at Terra, the ever-changing seasonal Cobb Salad at The Oak Table, the Rosso Wedge and seasonal salads at Motor Supply. You cannot go wrong with any of them!”

VANESSA DRISCOLL

“ The Salade Nicoise at Hampton Street Vineyard. For the longest time Hampton Street Vineyard was one of the only places with outdoor seating close to Main Street. Being French, the combination of both street dining and a good French ‘salade’ always reminds me of my years spent in Paris.”

AGATA CHYDZINSKI

“ Tomato dishes at the Tasty Tomato Festival! Old fashioned tomato sandwiches by Rosewood Market and Spotted Salamander’s Hand Held Tomato Pies! Amazing tastes of summer!” RYAN NEVIUS “Ice cold watermelon slices with ricotta salata, olive oil, and balsamico with a tall Aperol Spritz on the patio at Rosso!”

KRISTIAN NIEMI

“So when it comes to my favorite summer dish, I like to indulge in my absolute weakness for Korean food. My top spot is Blue Cactus Café in 5 Points, where I can get a light but hearty bowl of tofu Bibimbap! The spicy bean curd that comes on the side will make a man sweat, but I always make sure to get a large bowl of red bean ice cream before I head outside to battle the heat!” MILO KLOS “Favorite summer dish: grilled okra! I love grilled okra because it’s crispy, savory, good for you, and feels totally homey, although no one ever cooked it that way when I was growing up—so it also feels kind of new and exciting!” TRACIE BROOM “I love to go catch fish and eat them. I have fun doing it and fresh fish is the best.”

KEN DUBARD

“As soon as it starts to warm up, I crave a Seasonal Green Salad with grilled chicken from the Gourmet Shop. It is all about the House Dijon Vinaigrette that makes it the perfect summer lunch. Pair it with their lemonade, which is simply the best in town.” JOELLE RYAN-COOK

“My favorite summer food is an heirloom tomato. I love to eat a BLT over my sink or trashcan because of all the juices that flow. I like them best when they are tomatoes that I grew, or if they come from my man Phil Wingard who sells his whole production to Terra every summer. If you only eat these things while they are in season, you see why there is a season in the first place.”

“One of my favorite summer meals can be found at the rustic, unpretentious, and comfortable Hunter Gatherer. My old faithful is the Portobello Mushroom Gyro. I love enjoying this delightful meal best at a table outside overlooking the SC State House with a Pale Ale or a glass of Pinot Grigio (if I’m feelin’ fancy). Pillow-y pita bread, grilled Portobello mushrooms, lettuce, tomatoes, (no onions for me), feta, Tzatziki sauce and a small Greek salad with extra feta (yep, I said it) is seriously like a hug!”

“My favorite summer food would be steamed crawfish. There’s nothing better than sitting down with a couple beers, some buddies, and a table full of steamed crawfish.”

KI M JAMIESON

“A real guilty pleasure is getting a chili dog and fries from Edna’s out on River Drive. It’s like a trip back in time.” ANDY SMITH

“Every summer I have a craving for onion sandwiches, and I mean craving—usually eat 7-8 at one sitting. Thick slice of raw Vidalia onion, bread, mayo (I like Hellman’s, sorry Duke’s), and a little salt. Can’t stand raw onions the rest of the year but for one or two times in the summer!” EMILE DEFELICE

MIKE DAVIS

BRYAN TAYARA

“Does booze count? I have been waiting all winter to have one of Josh’s margaritas at Motor Supply Company. Last year he had a spicy cucumber margarita with fresh local peaches and cukes. It’s not overly sweet, but naturally sweet in all the right ways. The best part is the Sriracha heat that lingers in your throat after every sip. It changed my life. Happy to know that he has brought back a variation of the margarita on their current seasonal drink menu. Sweetness and Sriracha and all! If you want to talk food—nothing beats a fresh tomato sandwich at the Tasty Tomato Festival! White bread, Duke’s Mayo, fresh tomatoes, and salt and pepper.” MERRITT MCHAFFIE
