Raising a glass to our

BEAUTIFUL CITY there’s nothing quite like summertime in the City of Bethlehem. Everything turns green, and flowers abound. Early mornings are met with neighbors walking, biking, running— anything just to be outside. The cafe-style chairs and tables begin to line the sidewalks. The parks and playgrounds fill up and stay active until nightfall. The city is alive and there is always something happening downtown: First Fridays in the SouthSide Arts District, Tunes at Twilight in the Historic District, the Farmers’ Market at Lehigh, Movies in the Park, and of course, Musikfest. This is the perfect time of year to be out and about supporting our city, our businesses, and our neighbors. Dining alfresco is a necessity this time of year. Sidewalks are filled with diners taking advantage of the beauty of our historic landscape. There’s something special about eating outside and our varied dining options are increasing all the time. And, as our choices grow, so does our sensibility. Many of our restaurants are supporting local farmers and dairies—building relationships to help one another to continue to grow and do what they love. At the end of the day, that’s what it’s all about; building each other up and encouraging each other to thrive. In strengthening one another, we strengthen the city that we love. Collaboration and community involvement are foundational to the mission of Fig. We believe in the importance of inspiring people to be invested in their community and understand the importance and impact of buying local. We believe that great things can happen when we work together. Thank you to our community partners: PBS39, ArtsQuest, Historic Bethlehem Museums & Sites, and the Bethlehem Farmers’ Market who share in this vision and work with us for the common good. Please join us as we experience all that Bethlehem has to offer this summer season. Our food and drink issue is filled with a wonderful array of things to do, taste, and savor in our city. Cheers to another amazing summer!

tell people we have a farm in the city, and they’re shocked,”

“i

says Ben Scholl, third generation farmer at Scholl Orchards.

Scholl’s fruit stand opened in 1948 on Center Street in Bethlehem, with the city literally sprouting up around it over time. What began with traditional favorites like ripe apples and peaches, blossomed into a full-fledged business with fruits such as nectarines, pears, plums, cherries, and an increasingly wide array of vegetables. “This was a hobby for my dad,” Ben says, “then he kept expanding it because he was seeing the demand for produce here in Bethlehem.” In response to that demand, the family acquired a larger farm in Kempton, PA, where most of their produce

is grown. Today, Ben’s brother Jake, his sister Martha (who runs the fruit stand), as well as his parents, are all involved in bringing forth the bounty of their farm for Bethlehem. Scholl Orchards retails up to 75-80% of what they grow, selling quality local produce directly to local consumers. They also sell wholesale to Lafayette College, and restaurants such as Maxim’s 22 and Sette Luna in Easton, Bolete in Salisbury Township, Molinari’s and Jumbars in Bethlehem, and other various farm stands throughout the greater Lehigh Valley. Most gratifying for Ben and his family is their relationship with Meals on Wheels of Northampton County. “Our fruits

and vegetables are going to people in this community,” Ben says, “and that’s awesome.” But don’t let the ease with which you can buy these delicious fruits and vegetables fool you. Farming is more than just harvesting fruits; it’s a full time, year-round job, including pruning and planting trees, farm maintenance, and of course getting the produce to the market. So what does a full-time farmer like to do in his spare time? “My wife and I love to go out to eat,” Ben says, “and Bethlehem and the surrounding Lehigh Valley have really become ‘foodie’ areas.” Learn more about Scholl Orchards at www.facebook.com/schollorchardsPA figbethlehem.com

FRESH FACE :

GYMGUYZ

We all know how important it is to make time for our physical health, but finding that time usually proves difficult. How can you manage to exercise when you get home late from work, and then have to figure something out for dinner, walk the dog, help the kids with homework, or just take a few minutes to decompress? Fortunately, an ingenious solution has come to the Lehigh Valley. GYMGUYZ, #1 in home personal training, provides convenient, customized, and creative workouts that enhance the overall health and fitness of its clients.

“We go to people’s houses or their office,” owner Aaron Behrens says, “or we can meet them at the local park. We have a van with 360 pieces of equipment, so we can do workouts in their pools, in the back yard— you’re not limited by where you are.” Aaron and his partner, Brandon Sauers, provide prospective clients with an opportunity for a free assessment and introductory workout that’s one hour long. During that time, they review your medical history and lifestyle, and help you formulate your fitness goals so that they have a good starting point.

We all can come up with a million reasons not to work out, and then stress out about not getting enough exercise on top of everything else. But when one of Aaron’s trainers pulls up in their unmistakable big red van, you can check one thing off your list, and know you’re doing something beneficial for your health. “I’ve been in the industry a long time,” Aaron says, “and there’s nothing like it.” Learn more at www.gymguyz.com.

Vicky Bastidas, President of Friends of Johnston, Inc.

GIVING BACK : vicky bastidas radiates a passion for education that is

both palpable and infectious. As the founder and President of the Friends of Johnston, Inc., she channels her energy to engage, inspire, and educate students of all ages in hands-on collaborative educational projects that are helping to restore the Archibald Johnston Estate in Bethlehem. “Participating in an afterschool program on the estate,” she says, “gives children a very safe place to be, where they can work together, do something that is both hands-on and productive, and find a practical use for all of the math and science they’re learning in school.”

FRIENDS OF JOHNSTON, INC. Vicky found a mentor in Archibald Johnston, the first mayor of Bethlehem. He believed that all community members should have equal opportunity, equal access to clean water, clean air, handson skilled education, and access to open spaces. In that spirit, Vicky and the Friends of Johnston, Inc. adhere to the guiding principle set forth in the will of Johnston’s granddaughter, Janet Johnston Housenick, concerning the development of the estate for “charitable, educational, and scientific purposes. This includes the promotion, protection, preservation, conservation, maintenance, and enhancement of the park.”

guesthouse, bunkhouse, and Johnston’s Georgian mansion, leaving Vicky and her small army of volunteers with plenty to do. What’s next on the To-Do list?

Preserving the Johnston estate hasn’t been easy. The sprawling 135-acre estate consists of a barn, farmhouse,

at bethlehem’s Burnside Plantation, you can see what eating locally meant in Colonial times. 250 years ago, produce was grown in the communal garden and processed right next to the garden in the summer kitchen. From then to only recently, consumers moved to processed, frozen, canned, and prepackaged food. But today eating habits have come full circle: local and seasonal foods have returned to Bethlehem in a big way. Restaurants and eateries are increasingly sourcing from local farmers and suppliers. CSA’s deliver fresh, locally grown produce and other foods to residents. Every Thursday, between May and October,

No space is too small to grow something for your table, and nothing tastes as good as fresh, local food. With this credo, Nadia blogs for Fig Bethlehem. As a Penn State Master Gardener, she is passionate about spreading the gardening bug (a good bug!) and cooking. Since 2010 she has been recording her gardening ups and downs in her blog My Gardener’s Table. When she is not cooking or gardening, she works as a freelance copywriter, translator and editor, or loves to venture from her rural home into Bethlehem. The Old World charm of the city reminds her of her native Germany, whose food and culture she explores in her book and blog Spoonfuls of Germany.

the Bethlehem Farmers’ Market, a producer-only market, brings fresh and local food and produce to Lehigh University’s Campus Square. The Bethlehem Food-Coop is working hard towards its goal of opening a community-owned and operated grocery store in downtown Bethlehem that will showcase local products. For those who want to get their hands in the dirt, and grow their own veggies, there is a growing number of community garden plots within city limits. Many of the communityoriented initiatives heavily depend on volunteers. Many more local food initiatives are popping up. For example, Buy Fresh Buy Local of the Greater Lehigh

Valley, which has been instrumental in reviving the local food economy, is holding Taste of the Lehigh Valley on July 24 at ArtsQuest, featuring local food dishes from area restaurants. What makes Bethlehem so special is that a walk on the scenic trail along Monocacy Creek takes you from one end of Bethlehem’s history of local eating to the other—from the beautiful bountiful Colonial kitchen gardens at Burnside Plantation, to downtown Bethlehem where restaurants offer farm-to-table menus. And, to toast to this revival of the local spirit, you can have a locally brewed beer, hand-crafted whiskey, or a glass of mead—honey wine made from local honey.

FRESH FACE:

the sun inn may be the best known Bethlehem icon, as well as the

least known. Most locals know it as an historic Inn built by the Moravians in the 18th century that hosted many prominent colonial figures including George Washington, Benjamin Franklin, Alexander Hamilton, and Samuel Adams. But what they may not know is the latest incarnation of the Inn is right around the corner, opening its doors this summer. Thanks to a group of local friends and business partners, the Sun Inn will open to guests eager to experience Bethlehem’s colonial past with a new restaurant, Tavern at the Sun Inn, and a distillery, Christmas City Spirits. The restaurant and distillery will offer colonial-inspired dishes and drinks to their patrons. The distillery will also offer a tasting room and retail sales of products. The Tavern will have outdoor seating on the North Green.

“Our team is native to Bethlehem and was exploring ways to incorporate our hometown’s history into a distillery that we were planning— that’s when we thought—why not team up with the Sun Inn?” says local Brett Biggs. The Tavern will boast the culinary talents of Billy Gruenewald, the owner of The People’s Kitchen and The Bolt and Key. Gruenewald is honored to open the doors to the next chapter of the storied Inn. The first floor will remain a museum operated by the Sun Inn Preservation Association as it has since 1982. Within the Inn the Tavern will be comprised of two dining rooms and a bar room on the second floor. Christmas City Spirits will be located in the Ground Floor of the Inn which includes a stylish rath-skeller style tasting room. The Tavern will feature approachable, casual cuisine inspired by the rich colonial history of the Inn, utilizing fresh produce and meats that would have been available to Bethlehem’s forefathers.

Greunewald plans to achieve this by working with the Bethlehem Food Co-op. The distillery plans on recreating historically-accurate distillations. Such colonial distillations would include a focus on fruit brandies, rum, and whiskies. Biggs notes, “Bethlehem Moravians began operating a still alongside their brew house, in an area known as Christian Springs, as early as the 1750s. With the robust Moravian archives, we hope to recreate the exact recipes that would have been distilled and served in the Inn.” The team has been working hard on renovations to the Inn and plans on opening the Tavern and Distillery in mid to late summer. To find out more about the progress and opening dates, please visit at SunInnBethlehem.org and facebook.com/ tavernatthesuninn.

SUMMER DRINK

SUMMER ACTIVITY

“Without a doubt, my favorite summertime drink is The El Rum! I discovered this delicious summertime libation at The BookStore Speakeasy in SouthSide, Bethlehem. It’s been my chillout-zen-meditation in a glass ever since.”

“I can’t hide it, it’s working Musikfest! The excitement, the food, the crowds, all with live music & energy. It’s a circus that I can play in for 10 days without leaving to runaway to do it! Musikfest gives me the opportunity to pitch my gypsy tent on Main Street, dress up in costume, and play with the guests. I’m a fortune teller, so I have so much fun listening to people’s stories. It might sound cliche, but it’s the razzle dazzle of the lights, sounds, and crowds that give me life!”

-jacob james pierri

“Artisan drinks are all the rage right now. My favorite Bethlehem drink is a Moscow Mule from the Social Still. The ginger beer they use paired with their own freshly distilled vodka is so refreshing!

-kristina cole

“I’m not much on “Summertime” drinks, as they tend to be on the fruity or sweet side. I do, however, prefer a seasonal beer brewed by Victory called Summer Love. I usually pick up a 6-pack at Abe’s 6 Pack Shop.” -nathan linder “White Wine Punch, a specialty from my native Germany, is my favorite. I make it either with elderflowers or with strawberries or peaches later in the summer.” -nadia hassani “I love sitting out front of Apollo Grill sipping Basil Cucumber Martinis with Social Still Vodka. I also love the Mint’s Moscow Mules! Both are super refreshing and both places offer great outdoor spots to enjoy the summer weather.”

“My favorite summer activity in Bethlehem would have to be the summertime concerts they have at Levitt Pavilion at Steel Stacks. I can’t wait to see Ben Folds this year!” -kat aldrich “When the weather finally breaks, you can find me biking, and if I’m really ambitious, running. I also enjoy walking along the Monocacy with Stephanie and our dog, Gilbert.” -nathan linder “Having dinner in one of the restaurants with outdoor seating. It gives me a summer-in-the-city feeling, but without the noise, pollution, and commotion of a big city.” -nadia hassani “If I had to choose a favorite, it would be dancing the night away at Musikfest!”

Social Mission

At Fig, we believe in the power of a community that works together to identify needs and find solutions—one that creates community connections and is passionate about helping its neighbors. We believe in the mission of New Bethany Ministries—our 2016 Social Mission Partner. Please consider giving to them with your dollars and your time this year.

new bethany ministries: promoting wellness for the mind, body, and spirit.

Our Wellness Programming encompasses many services. Most are delivered through our Mollard Hospitality Center, open Monday-Friday from 8 AM - 4 PM, with extended hours in extreme weather.

At New Bethany Ministries, our mission is to provide opportunities for a secure future to the hungry, homeless, poor, and mentally ill of the Lehigh Valley. In daily practice, we believe this mission drives us to not only provide basic services to those in need, but to promote overall wellness for those we serve. We fulfill this responsibility by providing services in a caring and non-judgmental atmosphere, run by staff and volunteers who are compassionate, supportive, and welcoming. At New Bethany, we are a community family that celebrates success and works through hard times together. Our hearts work beyond “regular” hours, to consistently care for those in need.

DAY SHELTER: Our Day Shelter provides meal and hygiene services in a welcoming and nurturing family atmosphere, allowing a safe retreat for those who are homeless, hungry, or lack support networks. MEAL CENTER: Our Meal Center provides two meals daily—breakfast that alternates between continental and hot breakfast sandwiches, and a hot, nutritious lunch. Daily meals are prepared and served by volunteer teams from local faith groups, organizations, and companies. EMERGENCY FOOD PANTRY: Our Food Pantry is the only one in the area that is consistently open Monday-Friday. Households from the 18015 zip code can receive a three-day emergency supply of food every 30 days based on their family’s size. HYGIENE SERVICES: New Bethany is the only place in the Valley where those in need can walk off the street and take a shower. Our Mollard Hospitality Center features two, newly-renovated showers, as well as laundry services. PRIMARY CARE MEDICAL CLINIC: Run in partnership with the Lehigh Valley Health Network “Street Medicine” Program, our Center hosts a free primary care clinic two Mondays a month for those New Bethany serves. Those who are underinsured or uninsured can utilize the clinic and subsequent follow-up care at no charge. COMMUNITY OUTREACH SERVICES: Run in partnership with Haven House, a bilingual representative is available every Tuesday morning in our Center to provide support to clients, as well as referrals to additional community resources upon request. ADDITIONAL ASSISTANCE: We also offer mail address services for those who do not have a permanent address, referrals to additional community resources, clothing, and job opportunity assistance. We provide programming for the financial wellness of our clients through our Representative Payee Program. This homelessness prevention program provides bill payment, budgeting, and savingsbased services to adults receiving Social Security who are unable to maintain their own finances. Unlike many other similar services in the Valley, our program is open to any qualifying person in need. Our program extends beyond purely financial needs, providing case management and emotional support to our payees.

Finding Creative Ways TO HELP THE COMMUNITY

Securities may be offered by Valley National Investments, Inc. and independent broker/dealer and member FINRA and SIPC.

Valley National Financial Advisors team

valley national financial advisors is one of 24 teams working with nonprofit agencies, parks and elementary schools here in the Lehigh Valley. The challenge is to help the community in creative ways! Valley National created Welcome Baskets with living essentials for families moving into the shelter at Third Street Alliance for Women & Children. The items in the baskets were donated by friends in the community as well as the generosity of individual Valley National team members. As more donations continue to come in, the team plans to work with BW NICE Lehigh Valley Chapter to sustain the Welcome Basket project beyond the Volunteer Challenge. The goal is to make every family moving into the shelter in Easton feel a little more at home. All of the Volunteer Challenge projects were on display on May 24th at Coca-Cola Park during an annual event for the Volunteer Center of the Lehigh Valley. Visit www.volunteerlv.org, for more information.
