Chicken and Pesto Pasta with Broccoli Ingredients for one person      

1 Chicken breast, 1⁄2 a broccoli head without the stalk, 1 tablespoon of pesto sauce, 1 cup of fusilli pasta, 1 tablespoon of cooking oil, Salt and pepper, Handful of pine nuts (optional)

Method  Bring a saucepan of water to the boil, add the pasta and cook for 10-12 minutes.  Cut the broccoli into florets,  Add the broccoli for the last three minutes with the pasta to cook.  Meanwhile cut the chicken into small chunks.  Heat a none stick frying pan add oil. Stir fry the chicken for five minutes on a high heat stirring often, until the chicken is no longer pink.  When cooked drain the pasta and broccoli and add to a large bowl.  Add the chicken and pesto.  Fry the pine nuts for 30 seconds to toast and add to the bowl and mix.  Season to paste.  Enjoy.
