Green Chutney
Ingredients
Large bunch of fresh coriander 2 springs of fresh mint leaves (optional, adds a bit of fragrance) 4 green chillies 3 tomatoes 2 teaspoons of dried coriander 6 cloves of garlic 1 tub of natural yogurt (420g), I use Pakeezah’s version because my mum has always used that Salt and pepper
Method
Pop it all in a blender and blitz it into liquid
Avocado on Toast With Smoked Salmon
Ingredients
1 Avocado 2 Tbsp fat-free yogurt 1⁄2 Lemon, juiced 2 Slices rye bread toasted Pinch of cayenne peppe 75G (3oz) smoked salmon 1/4 Cucumber, ribboned with a veg peeler Handful of salad cress or micro greens
Dressing
1⁄2 Red chilli, seeded and finely diced 1 Tbsp finely chopped mint 1⁄2 Lemon, zested and juiced 1 Tomato, finely diced 1Tsp white wine vinegar
Method
Mix all the dressing ingredients together in a small bowl and season well. Slice the avocado in half and remove the stone, scooping the flesh into a bowl. Add the yoghurt and lemon juice and mash it all together with a fork. Season well with salt and black pepper. Divide the mix between the toasted rye bread, sprinkling over a little cayenne pepper and layering the smoked salmon and cucumber on top. Spoon over a little dressing, then top with the cress.
Chicken Risotto
Ingredients for one person
1 chicken breast, A handful of mushrooms, ½ an onion, 1 bulb or garlic, 1/3 a cup of Arborio rice, 1/3 of a stock cube chicken or vegetable, 1/3 of a cup of peas, a squeeze of lemon, parmesan shavings, pinch of salt and pepper.
Method
Fry the onion for 2 mins until brown, add the onion and garlic and mushrooms until they begin to soften. Add the rice and stir. Meanwhile boil 200mls of water and dissolve the stock cube. Add to the pan and stir on a low heat regularly ensuring the mixture does not become dry. Add water extra boiling water was required. After 15-20 mins taste the rice. If it is beginning to get soft add the peas and chicken and cook for a further 5 minutes and season. Once the chicken is no longer pink its ready. Squeeze the lemon and parmesan over the top. Yum!!
