I keep hearing folks say that summer is almost over. And yes, at 10,000 ft that is kind of true. For the rest of Colorado’s lower mountain towns, summer still continues. We may see snow but we usually see snow every single month so to me that is not an indicator that summer is over. There are still festivals, music, art, and wonderful things to eat coming from our farms and orchards to enjoy.

The town was named for Judge Marshall Silverthorn who served as a judge for miners’ in Breckenridge. He came to the town as a prospector and after patenting his claim by the Blue River discovered that gold was sparse and the claim a poor investment. The land passed to his daughters on his death and was sold several times to various mining compa nies. In 1953 Clayton Hill bought the property and subdivided it for homes and stores. From 1961-63 Silverthorne served as a camp for workers while the Dillon Reservoir was constructed. For a long while it was once a pass-through community but with great forethought the town has crafted an exceptional community for residents and visitors to enjoy year-round. by Gaynia Battista

The founding principles of the company came together to craft a sustainable, organic, non GMO, gluten free and absolutely delicious product in completely, compostable packaging with 1% of all sales going to environmental non profits. The Fairview Trek 70 and Fairview Trek 75 were tested extensively in Germany, Italy and Iceland as a travel pack for mountain and urban exploration. For this trip we utilized Osprey’s Ultra Light Packing Cube set. These packs were able to carry everything needed to be away from home comfortably for over 45 days. A smaller zip on and off pack that attaches to the back made it convenient to carry every necessity needed once we were settled into a basecamp. Based out of the Southwestern Colorado town of Cortez, Osprey has been crafting packs for every need and doing it with exceptional talent and first hand experience from traveling the world. www.osprey.com

The American Institute for Avalanche Research and Education (AIARE) along with supporting partners Rab, Mammut, and the GORE-TEX brand, has launched the second season AIARE’s Women’s Mentorship Program. The program aims to welcome women across all levels of experience in the industry, build networks, and provide a mentorship framework for participants to replicate in future peer and mentor relationships.Womenmake up a disproportionately small number of avalanche educators in the U.S. and many women in the field find it difficult to grow and sustain their careers. The financial, sociological, and other barriers faced by everyone in the industry are often exacerbated for women. And those barriers can be even further amplified for women who are racialized, disabled, trans, mothers, poor/working class, and women who hold other historically marginalized identities.Thisseason, AIARE aims to connect 40 mentees with 8 mentors who have deep experience in the avalanche industry. AIARE and its partners strive to create a program flexible enough to accommodate a wide variety of women—and lay a strong foundation for a robust mentorship lifecycle for women avalanche educators, from those embarking on their careers to those with decades of experience. Mentor applications are open now through August 15; mentee applications will be open from August 1 through September 1. In addition to running the Women’s Mentorship Program and offering women’s affinity courses to train instructors and aspiring avalanche professionals this season, AIARE and its supporting partners will host four public networking events across the country this fall. These events will be facilitated by women in the avalanche industry and are open to anyone interested in learning more, building their network, or taking the next step in theirThesecareer.events will be hosted in Denver, Seattle, San Francisco, and Jackson Hole. This is a fantastic way to get to Denver and surrounding neighborhoods from our mountain town communities. Jump on Pegasus and connect with an RTD Lightrail or Bus. Heading to DIA? This is certain ly a convenient way to get to your gate.

“We are continuing to save people time and money with more ways to get to and from the mountains. We are launching Pegasus to reduce traffic, help save Coloradans and visitors money on travel, and more easily explore our beauti ful state,” said Gov. Polis.

Pegasus is allowing people another option for travel along the Interstate 70 mountain corridor

“In addition to helping to alleviate traffic congestion during peak travel times, we initiated Pegasus so that pas sengers could connect to local transit providers at each stop,” said CDOT Executive Director Shoshana Lew. “In addition to complementing the existing Bustang coach service, Pegasus can utilize the express lanes on weekends, when traffic nearly doubles. In turn, we’ll have fewer cars in the regular lanes to improve the flow of traffic and that’ll help reduce greenhouse gas

The Colorado Department of Transportation’s new express shuttle, Pegasus, little brother to CDOT’s Bustang, began providing passenger service on Friday, May 27 with yearround departures from Denver’s Union Station, with stops at the Denver Federal Center in Lakewood, Idaho Springs, Frisco, Vail, and Avon. Gov. Jared Polis joined CDOT and other transit partners for the unveiling of the Pegasus shuttle in an effort to reduce traf fic, air pollution while helping everyone with their budgets.

“One fully-booked Pegasus shuttle is the equivalent of removing six two-person vehicles from the road,” said CDOT Division of Transit and Rail Director Amber Blake. “Multiply that by dozens of Pegasus trips each weekend and we can double our part in mitigating congestion, and help make the drive to the mountains safer and more enjoyable. Moreover, this service aligns with our mission of improving transit options and integrating transit into Colorado’s Transportation System.”Discounted rates are available for senior/disabled and chil dren 2-11 years. ADAM MILLER IS BUILDING BIKES THAT REFLECT HIS LIFELONG CYCLING PASSION by Holly RevelResignoloBikesand Why Cycles, with its home base and production facility situated smack dab in the middle of Carbondale, are crafting bikes from the best materials available. Combine that with designs incorporating years of experience on and off single-track trails and these companies are developing incredible bikes that ride smooth as butter.Meet Why Cycles and Revel Bike brainchild and bike connoisseur Adam Miller. His entrepreneurial spirit was stoked at the early age of 11 years old through his love of biking. While growing up in Alaska he would buy used bikes on eBay or at garage sales and then deconstruct them to sell the individual components. At 14 he was working in an Anchorage bike shop and later joined 907 Bikes, an Alaskan Fat Bike, and Adventure Bike brand. After a move to Colorado Springs, Adam founded Borealis Fat Bikes which he sold in early 2015. He returned to Alaska and crafted a new business idea while spending the summer fishing and biking where he decided it was time to step it up and pursue a new business idea. He started a company called Why Cycles after a move back to the lower 48 to craft bikes geared for luxury, comfort, speed, and fun. His dream was always to make the best carbon full-suspension mountain bikes, so he started cooking up Revel Bikes in early 2016. On a snowy drive back from participating in the Grand Traverse he stopped in Carbondale for coffee and was instantly enamored. In that moment he decided to move his company. He found warehouse space and began the process of building his company’s new headquarters. Revel Bikes was launched in 2019. Adam and his team of experts obsessed over every detail in the production of this brand and it shows. We had the opportunity to experience Revel’s bicy cles. These bikes climb with ease and descend with a silky, strong confidence thanks to their advanced suspension system and frame technology. To “Revel” is to enjoy oneself in a lively and noisy way and we can attest that there was a lot of whooping and hollering with joy on that day of riding. Today Revel Bikes is offering six unique frame models to sync up with your riding style: The Ranger Cross Country, Rascal, Rail 29, Rail, Rover Gravel Bike, and the Tweedy Dirt Jumper. Each bike has been envisioned and built to bring confidence to mind when heading out to ride. Buy a frame to build yourself or let Adam and his team craft the entire bike with their specified build options. Take a tour of their facility while in Carbon dale or better yet, demo a bike on one of Carbondale’s exceptional single-track trails (Restricted to 3hr local rides in Carbondale/Glenwood) at 770 Industry Place, Unit B, Carbondale, CO. or Catch them at these events below: Demo

Some of Colorado’s most beloved bands have graced this new stage, including Trout Steak Revival, Rapidgrass, Dragondeer, Grant Farm, Otis Taylor, and area favorite Bonfire Dub. Their national acts are also on the rise with John Popper (of Blues Traveler), John Primer (band leader for Muddy Waters), Goose, and Futurebirds wowing the Lariat’s Then…crowd. Covid reared its ugly head and the music stopped playing. The dust settled and time stood still in the space that housed this remarkable speakeasy and roadhouse. Good things are hard to kill though and The Lariat just announced their Grand Re-Opening May 13, 2022, with Grant Farm to bring the establishment back to life. Leadville Cherokee is scheduled for the next day and they anticipate the music lineup to stack back up. The same great feel and vibe, new menu, and a Meyer house sound system will greet everyone from this point forward.

A large renovation revealed the structure’s beautiful red brick walls and vintage oak floors. A “steampunk” touch was added to the original back bar that had been brought down on a train from Leadville 100 years ago, Then they installed the piece de resistance – a large elevated stage with an over the top sound system and plentiful dance floor space to enjoy it all below.

THE LARIAT

Vista had fast become a music sensation and the Lariat is back once again bringing live music to their fans. Check their schedule, get back out, and go enjoy a night of entertainment and fine food right there in downtown BV. 206 E Main Street Buena Vista, www.thelariatbv.comColorado

The Lariat has also crafted a new menu to keep you ener gized for dancing throughout the night or to enjoy a nice lunch. An array of selections ranging from small plates to salads, grilled dinner entrees, and sandwiches will be ready to order. You can once again belly up to their expansive bar with fabulous bartenders ready to stir up a libation to your Buenaliking.

Court Johnson stumbled onto a 135-yearold historic building in Buena Vista that had housed a neighborhood bar for over 100 years called The Lariat Bar and Grill in Buena Vista (The building has been a brothel, bar, post office, confectionery, and general store). Enchanted by its turn-of-the-century railway-town soul he saw the poten tial and decided to buy the place.

Ironically, she’s never been to the festival. “But this year I’m going to be there. I’m going to see this craziness go on.” She adds that she has no concerns about the impact of a couple thousand people on the property. Says Stecken, “It’s a great property, heavily wooded and right on the river, so we get to keep the name.”

A Smaller Event

Just across the river from the town sits a mostly vacant, wooded lot, 35 acres, home of a former sawmill.

Kathy Willschau’s family owns the land. When she heard festival organizers were struggling to find a new location, she offered up the land for the festival, free of charge.

A Lifeline for the Festival

The music festival, held annually along the banks of the Rio Grande in the San Luis Valley since 2006, had grown from a one-day concert in the parking lot of the visitor center in South Fork to a three-day camping festival, attracting music lovers from across Colorado for the family-friendly atmos phere, affordable prices and idyllic mountain setting.

While the South Fork location was usually a self-contained event, Stecken expects concert attendees will spread out to visit local restaurants and attractions, such as the river water park and the nearby trail network. They’re encouraging it, delaying the start of music on Saturday so concert-goers can walk into town to enjoy the parade at Covered Wagon Days, another longtime event held the same weekend.

Then Covid happened, canceling the 2020 and 2021 festi vals. Then the owner sold the land to build an RV park.

Del Norte, population 1,500, was once a sleepy one-stop light hamlet, where drivers from Denver turned right to ski Wolf Creek 37 miles away, with few dining options or trails in the rattlesnake-infested hills around the town. It flourished in the 1880s but fell on hard times with the decline of mining in the nearby San Juan Mountains and the decline of the Denver & Rio Grande Railroad.

The Wall Street Journal recently featured the town on its list of “mountain towns that promise a crowd-free summer.”

A dozen musical acts have been announced, including headliner Railroad Earth, a Denver band known for jam-ori ented bluegrass.

38 ISSUE 36 2022 | www.mountaintownmagazine.com

Today it has a brewery, Three Barrel Brewing. The historic Windsor Hotel was saved from demolition and remodeled into an upscale staying or dining experience. Its rich network of trails has caught the attention of mountain bikers. A water park with swimming holes and a play wave was built on the Rio. Numerous new restaurants have popped up. It even has a health food store. There’s still only one stoplight.

Scott Stecken couldn’t help but wonder: Was Rhythms on the Rio going to be history?

The new site is about 10 acres smaller than in South Fork, so the number of tickets with camping will be limited to 1,600. RV campsites sold out fast, though tickets for car and tent camping remain on sale. A three-day pass with camping is $160 per person, and children 15 and under are free. Tickets were still available at press time, though Stecken expects the concert will sell out.

“We were very concerned. We didn’t really have a direction as far as another site,” says Stecken, president of the South Fork Music Association, founded in 2005 to use the festival’s revenue to help connect local children with music instruc tors and instruments. To date the organization has donated $25,000 to San Luis Valley schools for music programs.

“All of us on the board were not too sure what we were going to do and where we were going to go,” he says. But there’s good news, music lovers. Rhythms on the Rio came back after 2 years, in a new location: Just outside the town of Del Norte.

“I think it’s going to be fantastic for Del Norte and the area,” she says. “It’s a great location for that.”

A Sleepy Hamlet

Organizers found officials in Saguache County more amenable. The county, which spans the north side of the San Luis Valley, approved a 20,000-person festival over Labor Day weekend. It will be near the town of Villa Grove, against the backdrop of the Sangre de Cristo Mountains.

Asked why the festival remains so popular people will buy tickets without knowing who all the bands will be, Stecken says music lovers believe in the brand.

“Concerts are a place where nobody cares about anything accept what’s going on in front of them and that’s the music. Nobody cares about your political affiliation. Nobody cares about what clothes you have on. It’s just the music and I want to see that continue in the future. I want my kids to have that ability. We just want to keep music going.”

BREAK-OUT BOX?

www.rhythmsontherio.com.visit:

The lineup is heavy on bluegrass acts, though Stecken expects more musical diversity as new acts are signed.

Tickets for the three-day festival start at $219, while camp ing passes start at $159. for more information: Visit www.sevenpeaksfestival.com

| ISSUE 36 2022 39

Country music stars Dierks Bentley, Morgan Wallen and Tracy Lawrence are among the many performers.

“Our festival is never going to be a festival where you walk in and start getting hit up by corporate sponsorships. Our goal is to put on great music at an affordable price for families and individuals to come and enjoy,” he says. Plus, he says, “Our lineup is stacked. We could have poten tially 10, 12 Grammy winners.”

Stecken hopes the festival will become an annual one in Del Norte, and that it will enhance the town’s profile and put it on Colorado’s musical map.

The Seven Peaks Festival, launched near Buena Vista in 2018, was canceled for Covid in 2020, and promoter Live Nation canceled last year’s event after Chaffee County Com missioners wouldn’t raise the cap on attendance.

www.mountaintownmagazine.com

Other announced acts are the Bluegrass Generals, featuring Andy Hall and Chris Pandolfi of Infamous Stringdusters with a special guest to be announced; the Travelin’ McCourys; Hip Abduction; The Texas Gentlemen; Pixie & the Partygrass Boys; Laney Lou & the Bird Dogs; Cole Chaney; The Jauntee; Branjae; and The Smelter Mountain Boys.

“Maybe people won’t see Del Norte as such a trave ling-through town.”

Rhythms on the Rio won’t be the only music festival in the San Luis Valley this summer.

THE LE MAYEN

Jeremy Fischer has been building homes since he founded Ivan Stanley Fine Home Builders in 1997. When he says, “I’ve never seen anything like this before,” he knows what he’s talking about.Over the last year, Fischer and his crew have become intimate with “Le Mayen”, a Swiss-designed 7,595 squarefoot, six-bedroom. six-bath masterpiece home located on the last available site in Timber Trail, a ski-in/ski-out luxury subdivision in the Peak 8 area of Breck enridge. “If you compare this to conven tional American construction, it almost makes what we do look like second rate,” Fischer says. “There is nothing else like it.” Most of the materials, from the centuries-old reclaimed wood and Norwegian natural stone slates to the handcrafted fixtures and handmade forged hardware were imported from the Swiss Alps.

Homes & Real Estate A SWISS INCORPORATESMASTERPIECEDESIGNEDLUXURY AND EXQUISITE HAND CRAFTED FINISHES IN A SLOPESIDE MODERN DAY CHALET

While eight-figure homes are com monplace in neighboring mountain town communities like Vail, Aspen and Telluride, Le Mayen will command a record-breaking listing price for Breckenridge at $18,999,000. “Every room is a 10 out of 10,” says Michele Hart, Broker Associate for Slifer Smith & Frampton, the leading independent real estate brokerage firm in Summit County and exclusive real estate partner on the project. “This house is going to blow everything else away.” Hart, who is the co-listing agent with Jim Schlegel, traveled to Verbier to visit Chalissima’s warehouse and to better understand the inspiration for the house. “I wanted to see it from the source – this rare Swiss craftsmanship. It’s incredible,” she says.

The showcase home was conceptu alized and designed by the Swiss group Chalissima, 60 architects and designers and over 100 carpenters and technicians with over 60 years of luxury construc tion experience in Switzerland and have been growing in Colorado and other US locations since 2016. Chalissima has curated an assortment of rare reclaimed wood unlike anything in the world, with an inventory of more than 5 million board feet stored in a 120,000-squarefoot warehouse in Switzerland. “Our specialization is alpine design in the purest tradition with some modern and creative adaptations,” says Bertrand Vaudan, Chalissima CEO.

The home features intricate hand crafted detailing reminiscent of the Swiss Alps, from the Norwegian natural stone roof tiles and elaborate hand carved wood detailing to the hand-painted stenciled walls in the bedroom suites. Reclaimed hardwood is generously used on walls and floors, with vaulted ceilings flanked by heavy timber support beams, timber framing unlike anything Fischer has seen before.

Vaudan says this house is inspired by the traditional Swiss Alpine mayen, the chalet style mountain cabins that date back almost 300 years, some of which still exist or are dismantled and harvest ed for wood. A far cry from a cozy cabin, this modern interpretation includes a large spa with an ornate Turkish steam room, game room, wine cellar, and three levels of outdoor living. “We integrate modern and contemporary design details and features influenced by the various European design styles that are slightly different, and perhaps richer than the American design style,” Vaudan says.

There’s a shower, sauna, steam room, bathroom, and lounge, but what’s really special is there’s a plastered ceiling we painted black and fiber optic LED lights that make it look like a night sky.”

This exquisite chalet showcases a modern interpretation of traditional Swiss alpine archi tecture and design. It is a masterpiece of light and space, wood and stone and the authentic feeling a mountain dwelling should bring to our mind and body - simple, exquisite luxury. The home will be completed in the late Fall. For more information on the house, it’s builder and architects contact www. teamhartschlegel.com

44 ISSUE 36 2022 | www.mountaintownmagazine.com

On top of the value of the house is the location. “What’s special about Timber Trail is they have a private shuttle and access to all the amenities at One Ski Hill Place. It makes you feel like part of the resort area. It’s elite resort home ownership at its finest,” Schlegel says. Currently under construction, the home is expected to be completed in late fall 2022 but is currently listed as a spec house. “It is risky. We want it to be a showcase,” Vaudan says. “The price seems high, but the quality, authenticity and the typicity of this house make it unique, a real standout in the market.”

Beneath all the old-world charm and style is top-of-the line modern technology and lighting. “The Swiss mountain modern style is so chic and so traditional, but it’s over-the-top modern in others,” says Jim Schlegel, Broker As sociate, SSF. “Even something as simple as the canned lights are $800 a piece.”

“The framing alone is wonderfully substantial. The walls are 8 inches thick and each of the common studs is literally timber. As we were putting the finishes in and the core started to disappear, I felt remorse that a buyer won’t be able to see it, but when you walk through the house you can feel it. It’s so quiet, and dense, and substantial,” Fischer says. “When the brokerage com munity confronts me to substantiate the value, I tell them they don’t even know what they’re selling because there’s no other house like it.”

The one room that exemplifies the uniqueness of the house is the hammam, a Turkish-style steam room in the spa. “We build plenty of steam show ers, but this is more like a spa you’d find in a resort.

COLORADO WINES SHINE

In addition, many Colorado winemak ers are reporting signs of a successful growing season. “We are looking at about a 90% crop in cold-hardy varie ties and about a 50% crop in traditional Vits vinifera varieties. Merlot, Cabernet Franc and Sauvignon Blanc are doing well,” said Bruce Talbott of Talbott Farms. “After a slow start, growth seems to be good. Harvest timing appears to be fairly average at the moment.”

“one thing that has not slowed down is the growing quality of Colorado wines”

In time for thesummer visiting season, new tasting rooms have opened on the Western Slope and across the state. Carboy Winery opened a brandnew Palisade tasting room this spring with a patio overlooking their vineyard and Mt. Garfield.

Ben Parsons, founder of Infinite Monkey Theorem, has intro duced The Ordinary Fellow, a brandnew winery and tasting room on the site of the historic United Fruit Growers COOP peach packing shed in Palisade.

Carboy Winery, Palisade

And the first winery to receive a license in Colorado after prohibition in 1933, A. Carbone & Co, is being revived by An thony Carbone’s great grandson - who is also opening San Luis Valley Distillery.

Kevin Webber of Carboy Winery, last year’s Governor’s Cup Competition winner, stated that its Grand Valley vineyard, Kay Vineyard, is the “best it has ever looked.”

Finally, this August, CWIDB will host an in-person judging panel for the 2022 Colorado Governor’s Cup Competition, the only statewide wine making com petition exclusively for Colorado wines. Notable sommeliers, writers, and wine experts from around the country will make up the panel that will evaluate the entries and determine the top wines in the state for 2022. Notable returning judges include Doug Frost, Master of Wine and Master Sommelier; Ashley Hausman, Master of Wine; and Clara Klein, Sommelier at Sunday Vinyl. New notable judges sitting on this year’s panel include Zach Lewison, Sommelier at Sonnenalp in Vail; and Joe Roberts, wine writer at 1WineDude.TheColorado Wine Industry De velopment Board will announce the winners of this year’s Governor’s Cup Wine Competition in September. The winning wines will be put into the 2022 Governor’s Cup Collection, a selection of wines designed to highlight not one but a dozen of the state’s top wines, which will be tasted for the public at Colorado UnCOrked, November 4, 2022 at the History Colorado Center in downtown Denver.

Colorado State University Viticulturist Dr. Horst Caspari has noted that the warm summer is pushing harvest up for a late July or early August start. He also said there is no current sign of diseases that occasionally can be found in Colorado’s vineyards, such as powdery mildew.

In the past year, Colorado has climbed the ranks as a top wine destination in the country. Wine Enthusiast named The Infinite Monkey Theorem one of the best urban wineries in the U.S.; HuffPost listed the Grand Valley as a top U.S. wine destination as an alternative to Napa and Sonoma; Hemispheres Magazine dubbed Palisade as a wine region to watch; and Forbes noted the economic growth that the wine industry has brought to Colorado. The proof is also in the numbers. Wine Enthusiast recently reviewed 21 Colorado wines which received an aver age score of 88.2. Seven wines received 90 points or higher: 2019 Reserve Merlot, BookCliff Vineyards (91 points) 2019 Cabernet Sauvignon, Winery at Holy Cross Abbey (91 points) 2020 Malbec, Infinite Monkey Theorem (90 points) 2018 Cabernet Franc, Winery at Holy Cross Abbey (90 points) 2019 Malbec, Carboy Winery (90 points) 2019 Merlot, Winery at Holy Cross Abbey (90 points) 2019 Reserve Cabernet Sauvignon, Winery at Holy Cross Abbey (90 points)

The Colorado Wine Industry Develop ment Board (CWIDB), representing the state’s 170 wineries, meaderies, and wine tasting rooms, is entering the 2022 growing season with optimism. With new producers, 90+ point ratings from Wine Enthusiast, a strong grape crop and national recognition as a top wine destination, there is a lot to celebrate. The CWIDB is also bringing back the in-person judging of its 2022 Governor’s Cup Competition, which will bring world-renowned wine experts to Denver thisDougAugust.Caskey, Director of the Colorado Wine Industry Development Board, said, “After a quiet couple of years, one thing that has not slowed down is the growing quality of Colorado wines and our recognition as one of the top unique wine regions in the country.”

“I knew that I wanted to be in kitchens and learn about food. My interest was exploring ingredients, plating, finer dining.” Even at that tender age, Vawter was on his life’s path. Working at Keystone’s golf courses brought his dad in close contact with David Welch, then chef at the Keystone Ranch. “Ask Chef if he can give me a job,” Vawter requested his father. “Chef David gave me the opportunity at 15. I started there.”

TALKING ROOTS WITH CHEF MATT VAWTER

Breckenridge happily reclaims acclaimed Chef Matt Vawter as our first home-grown chef. Raised in Summit County, trained in CMC’s rigorous Culinary Program, seasoned in top-end kitchens in Denver, and now back in Breckenridge with his own restaurants. With the wildly popular Rootstalk and the soon-to-open Radicato, Vawter completes the circle from local kid to local celebrity chef.

Front Range foodies know Matt Vawter from Fruition and Mercantile Dining & Provisions in Denver. Vawter started at Fruition at age 22 and worked his way up to executive chef and partner at Mercantile with Alex Seidel, winner of the 2018 James Beard Award for Best Chef: Southwest. In 2020, Vawter returned to Breckenridge to open Rootstalk. How did a kid who grew up ski racing on Summit’s slopes with a love for football make it happen? We asked Matt Vawter to share the story of his roots. Young Matt Vawter came to Summit County with his family. His step-dad worked at Keystone’s golf courses, maintaining the greens and irrigation, while Matt and his siblings grew up in Keystone, Dillon and Silverthorne. At age 14, Vawter got a job bussing at Frisco’s busy break fast joint, The Claimjumper. He gravitated to the kitchen, lingering there after his shift. It wasn’t long before someone said: “if you’re gonna hang out back here, do something!” The manager recognized his culinary interests and quickly gradu ated the youngster to working the line, flipping pancakes and hashbrowns.Vawterloved the fast pace and teamwork of restaurants, the sense of feeling under the gun. As in sports, the cooks win and lose as a team. A football player since sixth grade, Vawter found kinship in the kitchen.

A good chef surrounds him or herself with a great crew. Vawter credits his staff and partners for allowing expansion to Italian-themed Radicato, the new restaurant taking over Chef Fackler’s former Relish space.

After graduation, Vawter had offers from Keystone. It was Chef Fackler who asked “Why? You’ve been here since you were fifteen. Get out and see what else is out there.” Fackler suggested working at a new restaurant in Breckenridge, The Cellar. Later, Fackler “recommended Fruition in Denver. That worked out. It was good advice. Matt Fackler was the first person I asked about doing Rootstalk. We are still good friends.”

Vawter’s philosophy carries over into the dining experi ence. Rootstalk’s concept is to create memories around food and the restaurant. “I want you to remember forever the people you were with, the food you were eating, the service. That’s the core of our mission.”

Unlike others in the kitchen at the Keystone Ranch, Matt was a hire, not an apprentice. But that quickly changed when Chef Kevin Clark of the Culinary Program at Colorado Mountain College noticed his skills. Clark wanted Vawter in the program, and figured out a way to keep him at Summit High School while simultaneously earning credits toward a Culinary degree.

“I was a special case,” Vawter explained. “A couple days after I finished my last day as a junior in high school, I started my first year in Culinary school.” But something had to give. Vawter gave up football for his senior year at Summit High. “At the time, it was the toughest decision I had to make.” In that era, the CMC Culinary program had a football-style draft to recruit the apprentices into their next kitchen assign ment. Matt Fackler, then Chef at Keystone’s Ski Tip Ranch, picked Vawter for his last rotation in culinary school. “Some of the same lessons he taught me I still preach to my cooks today. Integrity of ingredients, proper care for ingredients.”

Radicato translated from Italian means deeply rooted. Vawter, deeply rooted in the mountains of Breckenridge, is back home. The Breckenridge dining scene is all the better for it. by Leigh Girvin

The focus on ingredients instilled by mentor Matt Fackler undergirds Matt Vawter’s food philosophy today. At Root stalk, Vawter’s menu showcases produce. “Vegetables and the seasonality element, that’s what excites me most about food. Seasonality means traveling around the calendar. As different things come into season, that dictates our menu and techniques.”Vawteralso appreciates the farmers growing the food: “they are craftsman in their own right, caring for the prod ucts. It’s on us to take care of the process to the plate. We don’t have to do a whole lot to highlight that. My philosophy of food is ‘keep it simple,’ let the ingredient do the talking.”

Because of the Distillery’s special liquor license, Keithley can’t go out and buy spirits and cordials elsewhere, so she creates them herself. It may not be right but it is happening in mountain towns all over the country as the realtor/developer/builder industrial complex bulldozes ahead. So what can be done? I don’t have the answers as I’m not a politician or town planner, much less part of the aforementioned RDB complex, but I am the founder and ringleader of an ideas festival in Telluride called Original Thinkers. I know how to gather people who are com mitted to cultivating community, even as the trees around us may Recently, fall.

David Holbrooke is a filmmaker and cultural entrepreneur who started the Original Thinkers festival in Telluride in 2018. This year’s event takes place September 29-October 2 and features a robust array of brilliant speakers, memorable films, innovative artists and talented performers who take the stage at the historic Sheridan Opera House over four incredible autumn days when leaves are at their peak. Holbrooke was Festival Director of Telluride Mountainfilm for a decade and his documentary, The Diplomat about his father, Ambassador Richard Holbrooke can be seen on HBO. For more on the festival, go to Originalthinkers.com.

Original Thinkers produced a short documentary called Postman Jim about a beloved local named Jim Looney who retired from the post office after 20 years of service. He knew most everyone who came to send mail by name (and knew their PO Box number by memory) and that kind and personal approach charmed everyone in town. Like my neighbor Kathy, Jim is a true Original Thinker who represents so much of what I love about living in this small town of Telluride. Watch the documentary by scanning : The growth of these towns - and the loss of these trees - seems inevitable but they still remain the places we call home. Even in the face of change, our towns continue to give us plenty of reasons to stay, whether that comes in the form of chatty postmen, or eye-opening ideas festivals, or exceptionally good Whenneighbors.thatCottonwood was cut down, Kathy reached out to the neighborhood to gather at the stump to memorialize its remarkable life. We brought beer and all shared something about the tree and while it was a sad and significant moment, I was grateful - being new to town - that I had a neighbor like Kathy. May we all be so lucky.

Over her five decades in Telluride, Kathy has seen so much change here in this small ski town (sadly Chuck died in 2007 but left behind a remarkable legacy including our Via Ferrata, which was the first in the U.S.). As we know, so many of the changes in these once-funky and scrappy towns are compli cated. Seismic factors such as income inequality, housing insecurity and the climate crisis are all dovetailing to create a very different life for people who migrate to the mountains

isn’t the only mountain town facing run away construction and if anything a recent New York Times article about Sun Valley shows we are relatively lucky here. Still, it remains hard to watch giant monoliths sprout up that will likely be used only a few times a year by their owners.

Atoday.huge part of that change is new construction. We live up on the north side of town and Kathy’s compound is literally a stone’s throw away. Between our house and hers are were scrappy uninhabited lots save for an old miner’s shack. During the pandemic, all four small lots sold for big money and now high-end houses will go up in our formerly low-key Ofneighborhood.course,Telluride

I first came to Telluride in the late 80’s, moved to town for the 1991-92 ski season, got married here in 1999, then relocated full-time with my family in 2013, so it could accurately be said that I’m still new to these parts. Our amazing neighbor Kathy is not. She and her husband Chuck arrived in Telluride in the late 70’s and built a remarkable home right up the hill from us. Their place is more of a compound than a house, which was prescient as a wide-ranging retinue of locals who would otherwise be struggling with their living situation, have a place to live.

Last Lift MAY WE ALL BE SO LUCKY by David Holbrooke 72 ISSUE 36 2022 | www.mountaintownmagazine.com

It was particularly painful to watch recently as our new neighbor cut down a giant Cottonwood tree that shaded our neighborhood. Kathy told us she had looked out on this tree everyday for 42 years and was heartbroken to see it chopped down. Our young neighbor Claire who is 20 and grew up on our street told me she had a real relationship with that Cottonwood, saying through tears, that “it just isn’t right.”
