Spoil mum with Cherry Ripe Balls 30 second Self Saucing Chocolate Pudding in a Mug The picture says it all – yum – 30 second Self Saucing Chocolate Pudding in a Mug Cherry Ripe Balls can be stored in the fridge for a few days, or stored in the freezer (they don’t freeze solid because of the condensed milk so can be eaten straight from the freezer). Ingredients: -1 Packet Milk Arrowroot Biscuits -6 Regular Sized Cherry Ripe Bars -1 Can Sweetened Condensed Milk -2 Tbs Cocoa Powder -Desiccated Coconut Method: 1. Crush all Milk Arrowroot biscuits in the food processor until they resemble fine crumbs. Pour into a large mixing bowl. Next process the 6 Cherry Ripe bars and add to the biscuit crumbs in the mixing bowl. 2. Add the condensed milk & cocoa powder and stir to combine. 3. Roll mixture into balls (approx 5cm in diameter). 4. Roll all balls in a bowl of dessicated coconut (use your discretion as to how much coconut to use). Put all balls single level onto a tray or plate and refrigerate or freeze until set. Transfer to a container and store as desired. *Tip: to dress them up, mini cupcake cases can be purchased to present them in when entertaining for single serves*
Ingredients 1 heaped tablespoon self raising flour 1 heaped tablespoon cocoa 1 heaped tablespoon sugar 1 and a half tablespoons milk Topping: 1/2 tablespoon cocoa 1 tablespoon brown sugar 1 tablespoon hot water Method 1. Mix together self raising flour, cocoa, sugar and milk in a coffee mug (or other small microwave proof jug). 2. Sprinkle on top extra cocoa and brown sugar and carefully pour on hot water. 3. Cook in microwave for 30 seconds. (Mixture should be combined and cooked. If undissolved cocoa exists, zap for an extra 10 seconds.) 4. Pour into a bowl or add ice cream or cream to the cup.

Ingredients 2 large beetroots, cooked & grated 4 eggs 1⁄4 cup rice malt syrup (add more for sweeter cakes) 1/4 cup coconut oil, melted 1 teaspoon vanilla powder 1 teaspoon ground cinnamon 1 teaspoon gluten free baking powder Pinch sea salt 1⁄2 cup raw cacao powder 1 1⁄2 cups almond meal Method 1. Wash, top and tail the beetroots then cook them by boiling in a pot of water until tender. Allow to cool before peeling and grating. You may want to use rubber gloves to keep your hands clean. 2. Preheat oven to 160°C and line a 12-hole muffin tray with baking paper or patty cases. 3. Place grated beetroot, eggs, rice malt syrup, coconut oil, vanilla, cinnamon, baking powder and salt in a food processor and blend all ingredients well until smooth. 4. Transfer to a bowl and stir in the raw cacao powder and almond meal until well combined. 5. Pour mixture into the lined tray and bake for 35 minutes or until a skewer comes out clean and the tops are slightly crusty. This will vary depending on your oven so check them after 25 minutes. 6. Chocolate Macadamia Biscuits
Chocolate Macadamia Biscuits are the perfect homemade gift as well as being scrumptious for those afternoon teas entertaining at home! Stack biscuits and tie up with a ribbon to gift. The drizzled chocolate looks gorgeous and professional!
Ingredients: -1 Cup Macadamia Halves -125g Butter, Softened -1/2 Cup Caster Sugar -1 Egg -1/2 tsp Vanilla Essence -1 tsp Ground Cinnamon -1 1/3 Cups Self Raising Flour -50g Milk Chocolate, to drizzle
Method: 1. Preheat oven to 180 degrees Celsius (160 fan forced). Place macadamia nuts on a lined baking tray. Roast for 3-5 minutes or until light golden brown. Put aside to cool completely. 2. Reduce oven to 160 degrees Celsius. Line 2 baking trays with baking paper. 3. Using an electric mixer, beat butter & sugar in a large mixing bowl until light and fluffy. Add egg, vanilla and cinnamon and beat until just combined. 4. Add flour & roasted macadamia nuts to the mixing bowl, and stir until well combined using a wooden spoon. 5. Spoon level tablespoons of mixture, approx 4cm apart, onto prepared trays. Bake for 18-20 minutes or until lightly golden. Cool on trays for 5 minutes then transfer to wire rack to cool completely. 6. Melt the chocolate in the microwave then drizzle over biscuits using a teaspoon. Set aside for 30 minutes while you enjoy licking the bowl & spoon, ah I mean until the chocolate on the biscuits are set! Enjoy

mum Sprouted buckwheat pancakes with banana, lemon & maple cinnamon walnuts Pancake batter
Ingredients Buckwheat sprouts 1 cup raw buckwheat kernels 2 cups filtered water for soaking Pancake batter 1 cup soaked buckwheat kernels, rinsed 1 cup filtered water 1 tsp salt Coconut or olive oil Optional: 1 tsp cinnamon
Pancake filling ingredients ¾ cup walnuts 1 tbs coconut (or olive) oil 1 level tbs cinnamon ¼ cup maple syrup (plus extra for drizzling) 6 ripe bananas (not over-ripe) (one per pancake), sliced 1 lemon, cut into wedges Buckwheat sprouts Soak buckwheat overnight in the filtered water. In warmer weather, soak the buckwheat for a few hours then keep it in the fridge overnight to prevent fermentation.
