The good oil . . .

By Anthony Mitrow THERE is an aroma on the breeze rolling over Umberto Frattali’s 200 undulating acres just outside of Yea. But it’s more than the sweet and peppery smell of 7,500 olive trees studding the hills, the mustiness of the wine cellar, freshly brewed coffee in the kitchen or the basil thriving in the veggie garden. It’s a subtle pervasive quality or atmosphere; a distinctive, but intangible quality – the aroma of authenticity and a tradition that traces back to his Italian homeland. “I come from an area very close to Rome,” Umberto says. “My father used to make oil and wine, but he would also produce wheat, corn, beans, you name it – to be self sufficient for the family. “It goes back, for I don’t know how many generations. It was just

always there. It wasn’t unusual, just a normal part of the landscape. That was life in Italy.” Olive oil is in his blood. For Umberto it’s part of the family, part of the tradition, part of life. While his ideology of interconnectedness with the land extends to all agricultural production, he admits there is something particularly enchanting about the olive – it’s association with life, health and vitality. “Olive oil does not have cholesterol. It’s the best hair conditioner, the best skin conditioner – you name it,” he says. “The olive tree is the sign of peace – the olive branch. It’s got an aroma – it’s got a history about it. They call the tree sacred – which it probably is, I don’t know.” Stranger on the shore Umberto arrived in Australia

Umberto Frattali, like his forefathers, is a strong believer in mixed cultivation. He grows a wide range of foods for his own dinner table and shares the excess with friends and family. in 1967 as a young man eager to learn, adapt, work and succeed. He settled in Melbourne, but it was not yet the integrated and sophisticated melting pot of cultures and cuisines for which it is famous today. Recalling the limited understanding of foreign cuisine by some of his hosts makes him chuckle. “The spaghetti was so overcooked it would come out like glue. They would buy the Rosella tomato sauce, mix with the cheese and that was it,” he said. One evening an English couple invited Umberto and his wife Maria for dinner. “I said to Maria, ‘What’s that smell coming from the kitchen?’ She explained it was dripping. I didn’t know what that was – that people would use the fat from sheep to cook with,” he says. 12 – Murrindindi Guide – AUTUMN 2015

“Trying to swallow the food was a bloody disaster, especially since I don’t like eating sheep anyway.” Things have changed now, but for many years the comforts of home were hard to come by. “We have so many restaurants in Melbourne now that are nothing to sneeze about – the food is excellent,” Umberto says. “Even the coffee now – I used to come back from Italy and order a coffee and it was hard to drink. “In Italy it doesn’t matter where you go – you get a beautiful cup of coffee. “In Australia you would order a coffee and get this huge cup. I like espresso coffee, which is more than a drink – it’s an aroma.” Though there were difficulties, Umberto was

determined to overcome them and make the best of his new life. “When I came I went to work in a factory because I didn’t have any English at all,” he explains. “Language for me is not an easy exercise. I find it difficult – even after 50 years I haven’t mastered it. “I tried to eliminate all my Italian connections. I didn’t want to be around any Italian people to force myself to speak English. “We used to put 1c (in a jar) for every mistake I used to make, and then that was used to do the shopping. That was a good idea and made me stop and think before I spoke.” Umberto came to Australia to work as an architect, spent many years in and around Melbourne as a builder, and now is spending all the

money he managed to save on his farm near Yea. “I don’t know why. Probably going back to the roots. The passion for the land has been always there,” he says. A world away but not too far Umberto convinced Maria that retiring from the Melbourne rat race to a peaceful farm in the hills around Yea would be a relaxing way to live out their lives. But the bare 200-acre patch wasn’t going to cultivate itself, and the last 15 years have entailed plenty of hard work and perseverance. “There’s always work to do on a farm. It never finishes. But I love it,” Umberto says. “We bought this land in ‘99. It was a year or two before we decided to settle here. I had a friend who was


doing a job on a property next door. He said I needed to see this block. I did, and I was hooked.” Though in different hemispheres, Italy and Victoria sit a similar distance from the equator. Umberto says other factors such as elevation above sea level make the conditions here similar to his homeland and ideal for olive cultivation. “The climate is very similar to the area I come from. A healthy olive grove means you need a very hot summer and cold winter, and Yea has got that,” he says. “Olive trees are very tough. They want well drained soil. Down in the valley, of course you get much more fertile soil, but the olive trees don’t like it. “You see, around the property in some places where it’s very steep, the trees are huge and the ones planted down the valley in the more fertile soil, they don’t grow.” With a combination of old world traditions and modern techniques, Umberto has developed a product favoured by the chefs of some of Melbourne’s top restaurants. “Although I was young, I remember some of what my father used to do. When I was starting here I did a hell of lot of courses to see how the industry is developing,” he says. Umberto’s brothers remain in Italy and still work their own patches of land. “Every so often I get on the phone to my brothers: ‘How do you do this, how do you do that’. From that, and what I remember from the family, I draw comparisons with what people here say and do, and then I make decisions on the

best way to go,” he says. “For example people here think you have to separate all your varieties, where as in Italy it’s not that way. And I don’t do that either. “My father used to say, ‘Good oil is good oil’, and actually you get a better flavour if you mix different varieties together than having only one kind. “The palate is not similar to wine. Sure – if you get kalamata, leccino, pendolino, whatever it is – every fruit is slightly different. But it’s not something that you sit around and drink like wine. If you’ve got a good product to put on a plate, on a salad or whatever – it doesn’t matter what brand or what variety you have – as long as the quality is good. “One variety of olives is called Frantoio. It’s a very strong and peppery oil. Leccino gives you a more buttery oil – smoother, sweeter. The majority of olives I’ve got are Frantoio and Leccino, but I’ve got 13 different varieties. “I’ve got different batches when I pick the olives because many people, many restaurants, come here to chase the flavour they like. One prefer one, one prefer another. The difference between one batch to another is very little – it’s more peppery or less peppery.” The philosophy of mixed production extends beyond olives. In Italy, Umberto says, the culture of self-sufficiency is strong. Though land is scarcer than in the Great Southern Land, small plots are highly cultivated with diverse crops, which Umberto says, has wide ranging benefits and makes sense on many levels. “Why travel so far just to

do the shopping when you can grow most of what you need outside your door?” he recently asked a farming friend in Myrtleford. “If you need a plate of salad, you have to travel nine miles there, and nine miles back, when you could just get it from outside your house.

“In Italy everything is a mixed production. For example you get thousands of people growing fruit, and no one use netting absolutely nobody. Because it’s everywhere, so the birds eat something here and move on and eat something there, and there’s plenty left for you.

“You cut it and slice it like spaghetti. When you put in water they go curly, like a curly hair. If you eat it now, it’s a bit bitter, but very nice. One recipe is put some anchovies, oil, vinegar, and it’s a beautiful salad to eat. Absolutely.”

“The countryside here is completely different. When you plant something here, grapes or something, the birds will come in and take it all.”

Building an empire

He has established an empire down under that astounds his Italian brothers with its size and success, and in a business environment where the prestige of Australian olive oil is rapidly increasing. His olives are picked and pressed within 24 hours, using his own equipment housed in a purpose built facility, using a process which never sees the temperature rise above 30 degrees Celsius – five under the requirement to be classified as cold pressed. He sells about 17,000 litres per year, and says the business is growing faster than his ageing body can keep up. Umberto worries that like Caesar Augustus, his empire and legacy may not endure indefinitely, and hopes above all else he can demonstrate to his heirs the passion in his dream, and the beauty in nature.

“I’m 71 and I don’t know for how long I can stay here running the business. It’s growing quite a bit. I hope someone will take over, but I don’t know,” he says. “While I love and enjoy it, then I’ll do it. Absolutely. But after that, que sera sera.” Umberto also says “I feel truly blessed to have come to Australia because this country has given me so many wonderful opportunities to achieve all that I have done. I believe I could not have done what I have done in Australia, in any other country.” Umberto does not maintain a cellar door, but for more information he can be contacted on 0418 333 586. Breathing new life into historic hotel By Anthony Mitrow ONE of the oldest and best-preserved examples of Alexandra’s architectural heritage has been given a new lease on life. The Alexandra Hotel was well known as the domain of the McNair family, who had owned and operated the iconic landmark for the best part of a century. When the hotel was put up for sale, some lamented the end of an era, but for Linda McAuliffe, passing through town on her way back to Melbourne last year, it was an irresistible opportunity and love at first sight. “It was the building I fell in love with. As soon as I walked through, I knew I wanted to work on it,” Linda said. “I could see what I wanted to do. I could see the enormous potential it had and the challenge really attracted me.” But rather than make a clean break

with the past, the business owner and keen renovator wanted to draw on the heritage of the hotel while offering the community something new. The building’s façade remains unchanged, but inside the hotel has been transformed into an open plan, light and airy space with vintage elements but a contemporary feel. Natural wood tones compliment the breezy interior, while rustic items and photos of times gone by adorn walls and surfaces. In a nod to those who have gone before, Linda has restored the bar to its original position. “Where the bar was is now a lounge area with an open fireplace and the old dining room is the new café. We’ve incorporated all the little rooms into a big, open space,” Linda said. “The McNair family have been amazing. It has been a sad time for them handing over their ‘home’ but

they are very happy with the transformation,” she said. The new café area is a cornerstone of Linda’s vision to diversify the drinking and dining options for Alexandra residents and visitors, and so far the response has been overwhelmingly positive. “So many people that I’ve never met before are coming in and commenting that it’s just what they wanted and hoped to see,” she said. “I really want to thank my tradies – they were so professional and we made a great team. I couldn’t ask for better. “(Murrindindi Shire) Council has been so supportive and encouraging to get this up off the ground – they’ve been helping me the whole way.” Linda said shifting the focus of the hotel from a drinking establishment to a versatile venue welcoming to families, couples, groups and singles, has been a success story. “For me, coffee and food and wine go hand in hand so it makes sense to have them on offer together. And it’s certainly working. You get different types of people talking to each other, and the café is doing exceptionally well,” she said. “I have owned cafés before and this time I wanted to incorporate a bar with a café so we can cater to everyone and keep them happy. If someone wants to come in for a wine, and their partner just wants a coffee and cake that’s fine also.

Apart from the hotel’s new bicycle-riding mascots, minimal changes have been made to the historic façade, but there are plans for a freshen-up eventually. 18 – Murrindindi Guide – AUTUMN 2015

“One of the lovely things about the design of the place is how the café spills out onto the alfresco area, which is great for our Sunday acoustic music sessions.” Popular drop Toby’s Estate Coffee was sure to be a hit,

Linda explained, and she was eager to see every man and his dog popping in for a sample. “It’s family friendly, and pet friendly, bike friendly, it’s wheelchair friendly with a ramp and specially designed restroom,” she said. “Being incorporated with the bar, we’re able to stay open longer than cafés usually do too. If people want to have tea and cake, or coffee and cake at 8pm they can. “There’s three other pubs in town already, so I didn’t just want to give people more of the same, we needed to diversify.” You won’t find any gambling in the new pub, and the pool table and darts board have been moved into a dedicated games room. The menu is also a step away from traditional pub grub, with not a single parma in sight. Instead the focus is on fresh, healthy ingredients and making use of local produce like river trout and Anvil Angus beef, and home grown herbs from the garden out the back. “Also, all our cakes are home baked. They’re a bit like grandma used to make – all based on traditional recipes – teacakes and fresh scones, things like that,” Linda said. Though there is plenty of work still to be done on the accommodation upstairs and the rustic shed and paddock area planned for the back, Linda remains keen. “We’re currently working on the five rooms upstairs, which should be ready by the end of February. They all have ensuite facilities and are individually styled – they’re lovely,” she said. “What we’re planning on doing out in the ‘back paddock’ is taking down

The purchase was a spur of the moment decision for Linda, who had never been to Alexandra before spotting her opportunity, but she’s confident Alexandra’s star is on the rise.

“We’re also proposing to build a rustic shed and hopefully host a farmer’s market there.

“It was a big decision. I’ve invested virtually everything I have in this building but I was never daunted. I knew what I wanted to do and I am really passionate about making it work,” she said.

“When its finished, I’m really looking forward to having weddings and functions where groups can book out the whole facility. It would be a perfect wedding venue.”

“I think the town has potential for growth. It’s so close to Melbourne. A lot of

weekenders come up this way – the boatie crowd, and also in the snow season, and it’s a beautiful drive. “It’s in the middle of Yea, Healesville, Eildon – all these other great spots that are on the tourist path. “Alexandra is still quite affordable, and I think it has to develop. Investment creates excitement and hopefully it will spread and more will follow. “The rail trail’s great as well. I love it when the bike riders come in and park their bikes

out the front near my little bike feature. “Groups of vintage cars come up this way and I’d love to host them too. We’re keen to be known as a versatile venue to host functions, dinners, events, but you can also have a quiet candlelight dinner here if you fancy something romantic.” The Alexandra Hotel café opens at 7am and stays open until the bar closes around 10pm. Breakfast and lunch are offered seven days a week with dinner Friday and Saturday nights.

Fresh start for CWA in Flowerdale By Jeni Emmins A NEW branch of the Country Women’s Association has formed in Flowerdale. The move came after staff at the CWA’s Melbourne headquarters received a number of requests from individuals in the area about the possibility of forming a group. They then made contact with representatives of the Flowerdale Hall, set up an information session last November and called for expressions of interest. Thirteen turned up, and more are keen to join. New president Lareesa Brennan said members were keen to start a variety of activities: “Our interest list

was quite varied,” Lareesa said. “Cake decorating, scrap booking, knitting and crocheting, women’s health issues, learning another language, creative writing, and photography are on the list.” But members will also tackle serious issues, such as homelessness and family violence. Importantly they will provide practical assistance, in the true spirit of the CWA which has charity as one of its primary aims. At the next meeting members will be knitting and crocheting scarves and beanies for the homeless. “We’ll all bring in our stash of wool, swap them around and get started,” secretary Vicki

Miller said. Those who don’t already knit and want to will learn from other members.

Tammy said the CWA’s work to help others worldwide had surprised her. “It’s a lot more than I thought. They work to put together kits for women coming out of prison, for single mothers, for women in third world countries; helping women in whatever their situation.”

It’s not the first time the CWA has had a branch in Flowerdale – at least one long-time resident, Judy Baker, was a member of the branch in the 60s but says numbers dwindled.

“But it’s also not shouting about it – doing things quietly behind the scenes,” Lareesa said. The group is open to women of all ages and later this year they hope to begin mentoring young girls in the area. Building friendships, sharing

Diane sometimes dodges tanks and troop carriers on her journey into Elidon from her home on Puckapunyal Army Base, but said the drive won’t dampen her enthusiasm to stick around. “I was in between jobs, having a couple of months off and a friend let me know they were looking for someone here at Darlingford,” Diane explained. “I didn’t even know where it

It was a stroke of luck for Diane, who is pleased to be working for a vital piece of community infrastructure. “I liked the idea that it was run by a board – I’ve worked with boards of management before and had good

experiences, and I really like that it’s community-based,” she said. “Everyone was very kind and welcoming and that really sold me on the job. “I intend to stay now. I hope there’s no coming and going for a while. I’d like to be here a good few years.” The stability and support of Darlingford staff has been a boon in an industry where a transient workforce is common. It’s an asset Diane is keen to hang on to. “We don’t seem to have those staffing

“It astounds me – but it really is a home here. The community really feels ownership and it’s part of the town.” The Bed Rally was held for the first time last year, and wheels are currently being oiled in preparation for May, when the beds again will be rolling around town. “I think they raised $30,000 last year and because of that we were able to purchase a bariatric bed, bariatric scales, weigh scales for wheelchairs, shower chairs, and things like that. They make our lives a lot easier,” Diane said. “Where the funds will go from this coming years’ rally is being looked at, but there’s an outdoor area that could make a great walking track for our patients with dementia.

I have to have colour in my life somewhere.” Diane started in aged care more than 30 years ago but much of her nursing career has been in intensive care units, travelling the country with her military man. “While you’re young you tend to be a bit more gung-ho and want to be in that exciting environment saving lives,” she said. “When you’re with people in this age group, they’re ready to laugh – you can have fun, dance around with the patients and look like gooses, and it’s fun. I find it quite relaxing in that sense. Diane’s greatest concern is keeping Eildon’s only nursing home stable and viable into the future. “We’d love to see more volunteers getting involved – it doesn’t have to be in a huge way or take a lot of time. It could be just taking someone for a walk around the beautiful pondage, or taking them fishing,” she said. “The volunteers we’ve got are wonderful but we don’t have enough, particularly men. “Our biggest problem here is filling beds – operating to capacity. We’re a 51 bed facility but we’ve only got

31 residents, so we need to put the message out that we need the town and the wider community to keep making use of this wonderful resource.” To do that, Diane wants to promote the short-stay respite options for those in need of a break. “People can go on holidays and have a break while we can look after their parents or loved ones who need support,” she said. Diane said there can be a sense of apprehension when people first come to Darlingford and it’s important to prepare them well. “People outside the industry often think that when they need it they will just be able to walk straight in through the door, but there’s a lot of preparation that needs to be done,” she said. “We need to focus on education so people know what to do and can feel comfortable about coming in.” A solicitor will be brought in periodically to deliver information sessions at Darlingford, and Diane said she was booking herself out to speak at clubs in Eildon and surrounding towns. Aged care websites can

be a mine of information these days and Diane also welcomes calls and visits from those just looking to be well informed and reassured. “We have activities such as talking books, church group, bingo, one-on-one sessions, entertainers and we take people out on car trips for shopping or out to the pub for lunch.” Diane said there’s something about Darlingford’s country community setting that sets it apart – and it’s not just the ponies regularly welcomed inside to brighten the day. “It’s an old adage I suppose: ‘We care’ and it’s a bit overused. The tyre guy that works on your car says he cares, but we really do care about our residents, your loved-ones,” she said.

“I know we have to worry about budgets and all those other things, but it really does pale in significance compared to keeping that resident happy and focused. “I’ve seen it many times in my career - people who have been really struggling at their house, and then they come in and they just blossom. Helping them achieve that and have accomplishment and happiness in their life – that’s the reward.

Murrindindi Beanie Festival Victoria By Carolyn Weeks For years now I have wondered what art event for our shire would suit all ages and abilities. I was looking for a festival that would extend and encourage existing crafts. One that was easily accessible to the wider community. It was with this in mind that the Murrindindi Beanie Festival Victoria was born. Because of the support of like-minded community members and Made in Murrindindi, (a community based, not-for-profit group promoting products, arts and crafts produced locally), the festival is growing so come and join us! It’s all about making beanies which will be donated to the festival to be sold over the three days to raise money for local charities. You can knit,

crochet or felt your beanies or maybe you have another medium in mind. The Murrindindi Beanie Festival Victoria will be held from 17th to 19th July, at St John’s Church Hall in Downey Street Alexandra. Categories include: Murrindindi Madness: designed to let your creative juices run wild, dream up your most fantastical masterpiece in any medium. Keep in mind this year’s theme is Crazy Critters, and from a judging perspective, the more creative or outlandish in this category the better. Traditional Beanie: featuring the art of knitting or crochet while keeping the beanie tradition alive. Create your best winter beanie that we have all come to know and

love (made up of 90% yarn). Funky Fibre Fusion: representing your best felted beanie in either wet or dry technique (made up of 90% felt). The Most Down To Earth Beanie: which is an organic wonder that may include natural fibres/dyes, hand spun yarn or recycled materials. It could even be sewn. The only stipulation is that all beanies must be wearable, on your head of course. Each of the above categories includes a junior section. Anyone can enter and we even have our first overseas entry from the UK. Hopefully it will be the first of many to come. Please invite your friends to enter. There is nothing better than some good healthy competition!

On the Saturday the Beanie Festival’s Beanie Bazaar will be held – a market full of wonderful creations showcasing the best of Made in Murrindindi and other local community groups. It will include local food stalls, craft, produce and even knitting patterns to get you excited for next year’s festival. In the lead up to the Beanie Festival, keep an eye out for our learn how to knit workshops and classes that are going to be held in various locations within the Shire. We are still looking for volunteers to teach knitting, felting or crochet, especially in Kinglake and Flowerdale areas. Further Reflections Last days of this joint exhibition of photography by Cindy Ferguson and ceramics/mixed media by Peter Hook which explores their pasts, drawing on their life’s journeys, their places of origin, and the child within. The exhibition is current until Monday 9th March 2015.

This next exhibition, which opens on Friday 1st May arose out of the 100th anniversary celebrations of the Acheron Mechanics Institute in June 2014, and the launch of the local history book Acheron: a history of the district, which documents both settlers and visitors to Acheron over two hundred years.

Botanical by Design

Eugene von Guérard, one of Australia’s most renowned and prolific colonial artists, visited the Acheron valley in 1862, with sketchbooks in hand, to scientifically and artistically document the region.

An exhibition of textile designs and works on paper by botanical artist Patricia Weeks, inspired by the wildflowers of the Central Victorian Highlands and the Central Australian Desert which runs from 13th March until 27 April.

His paintings of the Cathedral Ranges, as well as the famous Waterfall, Strath Creek (Art Gallery of NSW Sydney) are superb examples of his geographic/scientific style and provide great insights into what the local and surrounding landscape

RUSTIC SIMPLICITY ALEXANDRA looked like 150 years ago. As part of last year’s Acheron celebrations, Dr Ruth Pullin, Melbourne-based independent art historian and expert on the life and works of Eugene von Guérard, visited the district to share her knowledge of his sketchbooks and the paintings he later completed back in his Melbourne studio. Von Guérard is famous for his panoramas, but he also sketched views of rivers and creeks, trees, farm dwellings and scenes that included the occasional person or animal or wisp of smoke. Dr Pullin’s visit inspired the notion of an art exhibition in von Guérard’s honour. So the idea of this exhibition is threefold: to further mark von Guerard’s trip to the beautiful Acheron Valley and surrounds; to recognise the valuable contribution he made historically and artistically; and to encourage contemporary artists to engage with the natural world around them creatively.

Botanical beauty . . .

Botanical by Design BORN and educated in Melbourne and now living in Alice Springs with her husband, Patricia (Pat) Weeks and Allan Weeks lived for many years in Alexandra and then later at Acheron with their family. Art has always been in Pat’s blood, with her first formal accolade coming as a teenager, when in 1956 she won a youth art competition with a map she drew, which was her artistic impression, depicting the First Royal Tour of Australia by Queen Elizabeth II and Prince Philip. The art work was selected to be sent to Buckingham Palace from the Youth of Australia. Pat went on to study art at RMIT, working as a commercial artist, first with Royco, an advertising firm

in South Melbourne, and then with Edments Art Department producing advertising art work, as well as silk screened posters for their Australia-wide stores. Pat met Allan at a Glen Miller Era Big Band Revival Dance at the Heidelberg Town Hall one fateful Saturday evening. Allan had studied photography as a trade with the RAAF and after leaving the Air Force, was employed as a photographer with Granger Studios in Toorak, which inspired Pat to study photographic colouring. Eventually, Allan started a photography business in Alexandra. For Pat, the move to Alexandra and starting a family meant putting her artistic career on hold; however, her decision

to study photographic colouring paid off and over the following decade, she hand coloured many hundreds of children’s and wedding photos from the Alexandra, Mansfield and Yea districts, until colour photography became the new medium. Once her youngest daughter Sarah started school, Pat felt that it was time to again pursue her passion – art. She began with a series of drawings of the better known historic buildings within what are now the Murrindindi and Mansfield Shires, which culminated in a card series. Paintings of the Alexandra district also sold regularly. Pat studied water colour with Melbourne based Dutch

artist Yolanda Calquoen, and that is where her interest in flora, and in particular botanical art, blossomed. Pat found this sparked a new awareness of the wild flowers that were growing right alongside her on the roadside at Acheron, and she felt passionately compelled to record them. Pat was then lured to visit Central Australia in 2000 after record rains produced a wild flower explosion, the likes of which occur about every 10-15 years. Pat was no stranger to Central Australia, having first travelled there over 50 years ago, captivated, and unable to resist the dramatic landscapes, she returned many times. Her notion of botanically

painting evolved after she showed some of her work to a gallery in Alice Springs and was encouraged to paint the desert flora, which they offered to sell on her behalf.

Allan does all the graphic art work using Pat’s paintings, and produces prints, cards, canvases and photographs using archival paper, canvas, card and inks.

Two years later this culminated in a much sought after poster of 47 of the more commonly seen Central Australian wild flowers, and her images were being reproduced in a series of cards and prints. Pat is now represented in local and international collections and she has won numerous awards and commendations.

Pat too has recently attended Charles Darwin University in Alice Springs, studying silk screening with the view to printing on fabric, using her images of desert flora as the design style. This has evolved into the successful sale of her unique designs to a textile manufacturer in Melbourne and the fabrics will soon be released for sale in Australia and the USA.

Allan recently returned to study at Charles Darwin University in Alice Springs to learn graphic arts to assist in the production of Pat’s prints and cards. These days

VEGETABLE gardens are often regarded as purely utilitarian, relegated to a back corner of the garden and separated from the ornamentals. Anyone who has seen the fractals in a Romanesco broccoli or the striking silver foliage of an artichoke plant, however, knows that a productive garden can also be a thing of beauty and the intermingling of ornamental with edible plants can create a unique sensory playground of colours, textures, smells and tastes. Murrindindini’s Grow Food Network hopes to expose more people to the wonders of the food garden with their inaugural Open Vegie Garden weekend on the 21st and 22nd March.

While open gardens are traditionally held in spring, when ornamental plants are at their most lush and vibrant, the Grow Food Network chose autumn for their Open Vegie Garden event as this is when the edible garden is at the peak of production, splashed with colour and brimming with delectable delights. The Grow Food Network formed about a year ago when a group of keen vegie gardeners got together and came up with the idea of opening their gardens to the public to share their passion for backyard food production. “The idea of the Open Vegie Gardens is to collect like minds together, to form friendships and to ‘normalise’ the importance of growing and eating our own Murrindindi Guide – AUTUMN 2015 – 41


produce,” says Di Robb of the Grow Food Network Inc. Members of the Network often have visits to each other’s gardens to garner ideas and inspiration. They also keep in touch regularly via Facebook, sharing recipes and tips as well as the availability of excess produce, seedlings and mulch. New members are always welcome and the hope is that the Open Vegie Garden event will further the group’s long term goal of fostering a contact base for those interested in fresh, organic, locally produced food. The idea of opening local vegie gardens to the public has been welcomed with enthusiasm by the community. The Shire of Murrindindi has provided financial support through grant funding, and both Alexandra & District Open Gardens and Marysville Open Gardens have given invaluable mentoring. School and community groups have also jumped at the chance to be involved, offering to showcase their productive gardens. Local

How to make an all-purpose beeswax salve By Emily Friedel We have a small backyard apiary of non-conventional beehives, so our best option for procuring liquid honey is to squish honeycomb through a strainer. This low-tech method of honey extraction is not only a great deal of fun (if a bit on the messy side), but leaves us with a lovely by-product: a lump of sticky beeswax. With a bit of work, this sticky beeswax is cleaned up to remove residual honey and other contaminants. The end result is solid block of pure golden beeswax with a delicate honey aroma. Beeswax has countless uses, from the better known candlemaking and as an ingredient in furniture polish, to more surprising ones such as glazing canelés (a French pastry) and Ukranian Easter egg decorating. One of our favourite uses for beeswax is in simple, allpurpose salve that solves a

range of skin problems from cracked lips to calloused hands. Beeswax forms a protective, but breathable, barrier over the skin that prevents moisture loss – perfect for soothing any dry skin. For us, homemade salve has the added benefit of furthering our efforts towards self-reliance and reducing consumption. Here is our recipe for a very basic beeswax salve: Ingredients • 25g beeswax • 75g olive oil Method 1. Gently melt the wax in a double boiler (we like to use a Pyrex jug in a saucepan of water). 2. Add the olive oil to the melted wax and stir until evenly combined. 3. Take the beeswax and olive oil mixture off the heat.

4. Let the mixture cool until you see it start to solidify around the edges, then stir with a fork as it continues to cool to prevent the beeswax and oil from separating.

a block of beeswax (as opposed to chips or beads of beeswax) you can break off smaller chunks to work with by hitting the block with a hammer or grating it with a cheese grater.

5. Spoon into your container of choice while the mixture is still warm and soft.

• This salve has a shelf life of at least 6-12 months. The cooler the temperature it’s stored at, the longer it will last so if you only use it sparingly you can keep it in the fridge (or make smaller batches).

6. Once the salve has cooled apply liberally to any dry skin in need of some TLC! Tips • Set aside equipment specifically for use with melted beeswax because it’s very difficult to clean off once it hardens - best to avoid using your favourite cooking utensils. • If you are working with

The smell instantly carried me from the tea plantations of India’s Western Ghats to hot summer evenings in Australia. It was mid-December and back home the excitement of Christmas had everybody under its spell. With a pang of envy I envisaged my family and friends come Christmas day, sitting down to a heavily laden table for Christmas lunch, the remnants of neatly wrapped presents strewn around the house as children play with newly opened toys. This year I wouldn’t be joining them, instead I would be spending Christmas in India having taken a job teaching English several months before. With a population comprising of mostly Hindus and Muslims, Christmas passed without so much as a ripple around much of the country. I was left feeling dismayed on Christmas day, forgetting to look at my own surroundings. Although there were no Santa hats or Christmas trees I was amidst the ruins of a centuries old civilisation in southern India, tucking into a bowl of curry and tearing apart pieces of warm bread for lunch. It wasn’t so bad after all; in fact it was pretty bloody good. A couple of days after Christmas a man came to sit next to me in a dusty bus station while I waited for my bus to arrive. He looked old; though I suspect the deep lines on his face collected through years of hard living betrayed his actual age. His smile was broad and he wore a mischievous look on his face. 48 – Murrindindi Guide – AUTUMN 2015

His eyes were glazed and his breath thick with the smell of booze, he had no shoes on either foot, his clothes were filthy and yet he was content. Perhaps it was the alcohol he’d drunk, but as I sat next to this man in a dirty bus station, reeking of urine and human excrement, I couldn’t help but marvel at his cheerfulness and again I found myself feeling rather lucky. Bunker down . . . By Tammy Lovett CONTEMPORARY Australian cuisine that pays homage to the finest locally grown ingredients is what diners at The Bunker Restaurant can expect. Since opening in August as a part of the reconstruction of Marysville Community Golf and Bowls Club, executive chef and restaurant manager Russell Cohen has barely had time to reflect on his new venture’s success.

“I’ve been overwhelmed at the response we have had,” he said.

“There is nothing like this in the district. It’s something new and really exciting for me, the staff and the area.” In its previous incarnation, the club’s food preparation area wasn’t much more than a domestic kitchen. “This is the first time the golf club has had anything approaching a commercial

With new facilities and a dedicated team behind him, Russ is now turning out modern classics with his own unique flare. “We try to have fun in the kitchen and not take ourselves too seriously and we believe that is reflected on the plate.” “We’re excited about changing our menu options to ensure the flavors reflect the current season, the availability of local produce and also the changing trends and ideas for great food.” Russ says the restaurant’s signature lunch dish is the rare beef sliders; Turkish bread with mixed lettuce, tomato, Brie cheese and rare cooked slices of sirloin steak, topped with horseradish cream and a balsamic vinegar reduction. But this isn’t to be outdone by his citrus herb crusted lamb rack on mustard seed mash with seasonal 50 – Murrindindi Guide – AUTUMN 2015

vegetables, topped with bush tomato chutney, which features on the dinner menu. “Our crowd favourite would probably be a toss up between our lemon and thyme marinated Buxton salmon, oven baked with chargrilled vegetables and sea-salt chat potatoes, or our pork fillet stir fry with Asian vegetables and Singapore noodles,” Russ said. “My philosophy is that since we live in such a great area for local produce, we should always try to use it on the menu; hopefully it will help set us apart from the rest.” With over 20 years experience in the industry, Russ says cooking is more than just his passion. “My dad is a chef, so I worked with him as a young kid.” “I tried uni for a while in Geelong but found myself spending more time in the surf than studying and realised that wasn’t for me.” Russ started cooking again at the Anglesea Hotel where he rediscovered his love of food. It was here he also met his wife Barb.


After several years in Anglesea the couple moved to Buxton, where Russ and his team quickly made a name for themselves at the Igloo restaurant, serving up burgers bigger than you could sink your teeth into and creating a haven for chicken parma lovers everywhere. “It’s almost as if cooking is in my blood; I just love the way a great dish comes together and there’s nothing more satisfying than planning and preparing great meals that make people happy,” Russ said. While many people know Russ from his days at the Igloo, he says The Bunker has opened up a whole new world for food lovers and promises something special. “While those hamburger heaven days were a lot of fun, there’s nothing quite like watching our very own well dressed, high quality restaurant meals go out over the pass to our Bunker customers.“ In the kitchen a strong team accompanies Russ, including chef Brodie Arnott and apprentice Kris Carlton. Brodie has worked in the

food industry for over 20 years, recently working in the mines in Western Australia, where he was responsible for feeding over 2500 people every day. “The food he cooks is out of this world,” Russ said. Kris Carlton is also no stranger to the pressures of a commercial kitchen, having worked with Russ during his time at the Igloo. The Bunker Restaurant is open for lunch Wednesday to Friday from 12-2pm, and on weekends from 12-3pm. Russ and his team will be serving up dinners from Wednesday to Sunday between 6 and 8pm.

Mountain Pepper (Tasmannia lanceolata) By Angus Stewart FOR those who enjoy a bit of spice in their cooking, the Mountain Pepper (Tasmannia lanceolata) is well worth growing. This is a plant that has been in cultivation for many years in Great Britain, where it is known as Cornish Pepper Leaf. Apparently, it was first introduced in the county of Cornwall where it is sometimes used to flavour Cornish pasties. The early British colonists also found it useful as a fresh herb to help combat scurvy. As well as having a culinary application, the Mountain Pepper is a rather beautiful ornamental shrub that features attractive glossy, dark green leaves and contrasting red stems along its branches. It grows to a height of around 2-3 metres and occurs from Tasmania through the mountain country of south eastern Australia up to Barrington Tops in NSW. Its natural habitat is in moist forest

conditions, where it can be found as an understorey plant along the creeks and rivers of the Great Dividing Range. Mountain pepper has separate male and female plants, with the spicy seed pods obviously only being borne on the females. However every plant is useful as the leaves of either sex can be used fresh or dried as a herb to provide their hot tang for savoury dishes. If you are particularly attached to the idea of having the peppery fruits then it is a good idea to put in at least three plants to ensure that one of them is a female or male as the latter will be essential to pollinate the mother plant. The ideal growing conditions are a well-drained, slightly acidic soil into which some well-rotted compost or manure should be added and dug through to boost the water and nutrient holding capacity. This helps

to mimic the sort of soil conditions it finds in its natural habitat along the alluvial banks of creeks and rivers. Given that the plants grow naturally in forested, spots along creek banks, it is important to give them a sheltered spot that will help prevent leaf scorch in drier climates. For the urban gardener Mountain Pepper is ideally suited to growing in a container on a patio or verandah, particularly in a spot where it will receive filtered sunlight for most of the day. The leaves can be harvested any time and either used fresh or dried, whilst the

fruits are harvested when they change colour from green to maroon or black and can also be dried for later use. Dried leaves and fruits can be crushed and used as a pepper substitute but be careful as the tang tends to come on slower than traditional pepper. Mountain pepper is brilliant for curries and as a flavouring for cheeses, and can be used as a substitute for cracked pepper. Watching birds ~ the sulphur crested cockatoo By Bob Tate THIS district has a wide variety of cockatoos and parrots, with possibly the best known cockatoo, the sulphur crested, or white cockatoo. Other varieties of cockatoos here are the gang gang, the yellow tailed black cockatoo, the galah, the little corella and the long billed corella. White cockys range from the Kimberleys in Western Australia, across the top and down the east coast of Australia, and from Tasmania to Port Augusta in SA. They form large flocks in the south often in company with corellas and gang gangs and these flocks seem to be getting bigger each year. They are less common in the north. They were introduced to the Perth area in 1935. The main flock feeds on the ground, whilst a “sentinel” couple of birds perch in trees and will screech a warning if intruders come too close. Hence the old term “Cockatoo” for someone watching outside for authorities in an illegal gaming joint. Night roosting spots are usually the same, and there is much screeching and noise as the birds jostle for spots, and this

does not die down until after sunset, only to start again in the morning as they fly off to feeding grounds. Those people with chooks will know of their arrival each feeding time, becoming a pest around the chook yard. Feeding is usually on the ground in the morning, where they will eat seeds, but also love onion grass, and here they will leave the ground as if it has been dug up. In the heat of the day they will roost in trees, often stripping bark and leaves, and leaving a horrible mess. They also eat insects and their larvae. Most people know only too well this bird for its noisy screech if nothing else. Its body and head are white, with a small yellow patch near the eye, on its cheek. The bill, feet and legs are blackish, and there is the very distinctive yellow crest. Cage reared they are very popular as a pet, and can often be easily handled, and will learn to “talk”, but are very difficult if not impossible to tame if caught in the wild and then caged. Nesting is in hollow trees, or in a hollow in a tree, particularly the old red gums, or in old dead standing trees.

Eildon fishing By Gaz from Eildon Bait and Tackle The natives this season have certainly been restless; cod and yellow belly have been taken in good sizes and numbers. Cod have been caught on nearly anything. Around the marinas they have taken bacon, cheese, chicken, ham, sausages and the more expected baits such as yabbies and scrub worms. Trolling or spinning

from the bank using purple spinnerbaits, jakalls, predateks , stump jumpers and later on in the evening surface poppers amongst the trees have worked well. The new cod regulations are now in use, as of the 1st December 2014. In Victoria and NSW the size limit is now the same 55cm-75cm. Anything smaller or larger needs to be returned to the water immediately. The only difference is the bag limits on the rivers which are one

Bushrodders bash . . .

New venue for bushrodders’ show ‘n shine On 15th March from 9am will see the fifth Bushrodders Rod and Custom Club’s annual picnic and show and shine. For the first time as a stand-alone event, it will be held at the expansive and picturesque Yea Racecourse incorporating market stalls, food stalls, kid’s entertainment as well as trade stands and car related stalls. This is a community event and everyone is welcome to this fantastic new venue to view over 300 cars of all types, makes and models, with a motorbike and trike display included for the first time. There will be a Rockabilly band playing all day and entry is free, although a gold coin donation would be appreciated.

Over $3,200 has been given to local community groups over the past five years. Approximately 22 categories/trophies will be available and if you wish to show off your pride and joy you can pre-enter or enter on the day, with goody bags for the first 100 preentrants. The Bushrodders are a small friendly family orientated club with about 28 members, many local, so bring your family and come along and join them for a great picnic day out! RSPCA MILLION PAWS WALK 2015 AUSTRALIA’S favourite canine event, the RSPCA Million Paws Walk, is set to be held on Sunday 17th May in Eildon.
