Dear guests 4

Nature puts on a fabulous display when springtime returns here in the Tirolean Alps. Trees reveal their vibrant new leaves, crocus, narcissus and tulip unfurl their petals in sunshine which melts the last of winter’s snow. Animals emerge from their winter burrows and you may glimpse them as you go hiking in the mountains. You are holding a piece of springtime in your hands with this edition of the Interalpen magazine, because it’s not just nature having a spring clean. We are preparing a bright bouquet of attractions to make your holiday with us unforgettable. Our Gault-Millau Guide awardwinning head chef Christoph Zangerl and his kitchen team are preparing to serve exquisite dishes right before your eyes at our kitchen party. Other special highlights of the summer include the Interalpen-Cabriolet rally, the Interalpen-Classic car days and our golf tournaments. Our spring cleaning this year includes a striking renovation of our 50 metre indoor pool. This new showpiece of our leisure facilities is being created during April and May this year and in the meantime you can already enjoy newly refurbished peace and relaxation areas. During work on the pool, our spacious Spa and Tirolean sauna village are of course open as usual.

The Alpine garden was planted just a few years ago and is already a favourite place. In the early morning, when dew is still sparkling on the flowers and grasses, or in the warm sunshine of a spring afternoon, our Alpine garden is a lovely place to stroll or just sit and relax. The garden’s beauty and its stunning views of the Tirolean Alps have a calming effect on its visitors. It’s peaceful here amongst the gingko trees and the borders of Alpine roses, edelweiss and gentian, with plenty of quiet corners to sit. People like to enjoy a cup of coffee here or settle down with a good book.

Welcome to the Ropferstub’m Discover its traditional Tirolean charm and delicious local treats.

Our gardener Stefan Mair is sometimes asked how he manages to grow so many varieties of plants here, and he is always ready to share his knowledge and experience. Orchids should not be planted in garden soil, but in a special substratum, while alchemillas need moisture above all else. Stefan pays great attention to setting out his plants in pleasing combinations so that the garden forms a harmonious whole. It’s clear that he puts not only a great deal of work, but creative energy into our Alpine garden.

The Ropferstub’m is an idyllic country inn, set between mountain and forest, and not far from the Interalpen-Hotel Tyrol. The Ropferhof was built in the 18th century and was a notorious smugglers’ inn at the turn of the 20th century. The family who now own the farmhouse have restored the building with much love and attention to detail: its original vaulted cellar, historic stone walls and simple decor make the Ropferstub’m one of the most attractive country inns in the region.

The Ropferhof was once a smugglers’ inn

The Ropferstub’m kitchen serves Tirolean and Austrian specialities, as well popular Italian dishes and most of the produce is supplied by the region’s farmers and market gardeners. This delicious food is served in the charming Stub’m or out on the sun terrace, which affords a magnificent view of Mieminger Plateau and the Inn Valley. Befitting such a popular destination for a day trip, the menu includes hearty platters for hikers and cyclists.

Tirolean Legends

Witches’ Dance “A farm boy in Seefeld fell in love with a beautiful maiden. He went to visit her every day, but he wasn’t allowed to call on a Thursday. The lad sat in his parlour and thought “My beloved must be seeing someone else.” So he crept into her house and hid in the kitchen. When the maiden came home, she took down a pot of ointment and smeared it on the soles of her feet. She then stood in the fireplace and disappeared up the chimney. The boy ran as fast has he could to the priest’s house. The priest told him to go back to the house the following Thursday and knock on the door. He warned that if the maiden invited him to go with her and he was given a book, he should write the names of Jesus, Mary and Joseph inside it. The maiden did indeed invite him in and they shot up the chimney together. They arrived in a magnificent hall, where a large number of women and girls were sitting down to a meal. Then a man appeared and asked him to sign his name in the Devil’s Protocol. The farm boy wrote the words as the priest had advised him. The hall suddenly disappeared and the young lad found himself alone in a meadow. He took the book to the priest, who turned the pages and realised that there were more witches than mortal women in Seefeld. From that day on the boy could not be seen again in the village after the evening Ave Maria bells had been rung, for the witches would have cast an evil spell on him.”

More peaceful, more comfortable, more relaxing. The Panorama pool has always been a great attraction, but after its current redesign, we are sure that even more guests will declare it their favourite place in the hotel. The new look will be achieved with natural materials, mainly wood and stone from the local region. So the swimming pool and its surroundings will be completely in harmony with the Tirolean scenery, which our guests can enjoy through the panorama windows. You can lie back in one of sev-

eral quiet rooms with a view of Alpine peaks, and feel as if you are floating on an idyllic mountain lake. The pool itself will be as large as ever, but with improved definition. The swimming lanes and the children’s pool will be more separate from the main pool, so that everyone can enjoy the pool as they wish: children can splash about in their own area, serious swimmers can concentrate on their lengths, and guests who just want a leisurely swim will have a large section just for them. For serious relaxation, you can retreat into the two new pool niches; the perfect hideaway.

A feast for the palate Savour the aromas, taste and admire – the kitchen party is a very sensory experience. Watch our master chefs at work and enjoy the exquisite result of their labours.

Every top chef creates a little magic – a pinch of special spice, an especially tasty ingredient or a clever technique. Every gourmet would love to know their secrets and this is what makes the kitchen party at the Interalpen-Hotel Tyrol such a wonderful occasion. Christoph Zangerl gives an exclusive insight into the culinary arts when our Gault-Millau 3-starred head chef and his team open their doors to hotel guests on 22 May 2011.

You can be at the heart of the action and peer into the saucepans as our kitchen professionals work. The atmosphere is enhanced by exotic and tempting aromas in this internationally acclaimed gourmet kitchen. The kitchen team will prepare hot and cold dishes at various stations – they will be frying, seasoning and garnishing right before your eyes.

While other boys dreamt of being a policeman or fireman, Andreas Pfingstl discovered his interest in gastronomy at an early age. He wanted to wear a chef’s toque and be a pastry chef: pleasures of the palate have always played an important part in his development.

Of course you will not just be watching and tasting, but dining on the dishes created. Guests are invited to sit at festively decorated tables right in the kitchen on what promises to be a night to remember! And even if our chefs don’t reveal every secret of their award-winning cuisine, you are certain to take at least a few inspirational tips home with you.

400 g of pike-perch fillet, scales and bones removed, cut into four portions, olive oil, and sea salt. Remove the skin from the flesh, spread the skin between two sheets of oiled parchment paper, and bake between two baking trays at 150°C for about 10 minutes until crisp. Place the pike-perch flesh on an oiled tray, season with sea salt, cover with foil and cook at 100°C until translucent.

Pommes soufflées 1 floury baking potato, 400 ml clarified butter, sea salt Peel the potato, slice 3 mm thick and use a 5 cm round cutter to produce neat circles. Heat 200 ml clarified butter to 110°C, add the potato slices and soften for about 10 minutes. Heat the remaining clarified butter to 160°C and fry the potato slices until crisp, season with sea salt.

Bon appétit!

After training at the School of Tourism in Bad Gleichenberg he ventured out into the world of gastronomy and joined MS Europa, one of the most acclaimed luxury cruise ships. He eventually returned to terra firma and took a position at the Interalpen-Hotel Tyrol. It was here that he developed a passion for wine and completed training in Innsbruck as a master sommelier. “Today I am very happy that I chose this path”, says Andreas Pfingstl. “I am proud to work with a young and enthusiastic service team and always delighted every time a guest asks me to discuss the wine list and chooses a bottle on my personal recommendation.”
